    <dcterms:abstract><![CDATA[Existe una creciente preocupaci&oacute;n respecto al contenido de cadmio (Cd) en los productos derivados del cacao, como la cocoa en polvo; lo que ha llevado al establecimiento de valores de ingesta m&aacute;xima tolerable de este metal y a la disminuci&oacute;n de los niveles m&aacute;ximos (NM) aceptados. En este sentido, es necesario realizar un control sobre los niveles de Cd en estos alimentos, contando con m&eacute;todos anal&iacute;ticos confiables y amigables con el medio ambiente. Con ese objetivo se desarroll&oacute; y valid&oacute; un m&eacute;todo anal&iacute;tico para la determinaci&oacute;n de Cd en cocoas puras y en su preparaci&oacute;n con leche, la forma de consumo m&aacute;s popular en nuestro pa&iacute;s. El m&eacute;todo result&oacute; adecuado para el fin definido y present&oacute; como ventaja un menor consumo de &aacute;cidos concentrados que el m&eacute;todo de referencia de la AOAC International (2016b). Se aplic&oacute; para un sondeo del contenido de Cd en muestras disponibles en el mercado local de Montevideo, Uruguay. Si bien todas las muestras tuvieron concentraciones detectables de Cd, resultaron inferiores al NM establecido.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The &beta;-lactoglobulin protein from cow&rsquo;s milk is a common allergen present in human milk that leads to serious allergic reactions in susceptible infants. This creates a serious safety issue in Human Milk Banks, and the best practice to assure the safety of susceptible newborns would be to classify the donated human milk according to its content of &beta;-lactoglobulin. To provide a simple and fast assay to detect this molecule in human milk we developed a nanobody-based sandwich ELISA. The capture and detection nanobodies were isolated by phage display from a llama immunized with the antigen using a sequential selection strategy for antibody pair iden tification. This allowed to attain a highly sensitive test with a limit of quantitation of 40 pg/mL and extended lineal range of up to 3000 pg/mL, showing an excellent performance with human milk. For these characteristics, the ELISA developed might be useful for the classification of donated human milk according to their &beta;-lacto globulin content, improving the quality of milk destined to susceptible newborns.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[A pilot annual monitoring survey (April 2018&ndash;March 2019) was conducted to investigate the presence of pesticides in superficial water and fish in Laguna del Cisne, one of the most critical drinking water sources in Uruguay. A total of 25 pesticide residues were detected in superficial water (89.3 % of the samples). Pesticide's temporal distribution was as sociated with crops and livestock practices, with higher occurrences in spring and summer than in autumn and winter. The most frequent compounds in superficial water were the insecticide chlorantraniliprole, and the herbicides glyph osate (including its metabolite AMPA) and metolachlor. The levels of Organochlorine pesticide, p,p&prime;-DDT, was in some cases two order of magnitude above the international water quality guidelines for Ambient Water Criteria. In fishes, eight different pesticides were detected, at concentrations from 1000 to 453,000 ng&middot;kg&minus;1 . The most frequent pesticides found were propiconazole, chlorpyrifos, and p,p&prime;-DDE. The widespread occurrence of pesticides in fish suggests poten tial exposure effects on fish populations and the aquatic ecosystem. The sampling approach of this work allowed mon itoring the continuous concentrations of several pesticides in surface waters and fishes to establish the influence from past and current agriculture practices in Laguna del Cisne basin. For safety measures, continuous monitoring programs must be performed in this system to prevent toxicity impacts on aquatic organisms and human health.]]></dcterms:abstract>

This ability, as well as its capacity to release the resulting products into the reaction media, place Gluconobacter as a privileged member of a non-model microorganism class that may boost industrial biotechnology. Knowledge of new technologies applied to Gluconobacter has been piling up in recent years. Advancements in its genetic modifi cation, application of immobilisation tools and careful designs of the transformations, have improved pro ductivities and stabilities of Gluconobacter strains or enabled new bioconversions for the production of valuable marketable chemicals. In this work, the latest advancements applied to Gluconobacter-catalysed bio transformations are summarised with a special focus on recent available tools to improve them. From genetic and metabolic engineering to bioreactor design, the most recent works on the topic are analysed in depth to provide a comprehensive resource not only for scientists and technologists working on/with Gluconobacter, but for the general biotechnologist.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Penicillium digitatum is the main species responsible for postharvest losses in citrus fruit and, therefore, rapid and accurate methods are needed for its early detection. For this purpose, a new procedure based on real-time quantitative PCR (qPCR) was developed to detect and quantify P. digitatum in lemons. The procedure included a rapid extraction of fungal DNA using the commercial Quick-DNA Fungal/Bacterial Miniprep Kit; the design of a specific primers pair by selecting the conserved region of the calmodulin A (cmdA) gene; and the design and evaluation of a qPCR system based on SYBR-Green dye detection chemistry. The functionality of the developed method was demonstrated by the high linear correlation of the standard curve constructed over the entire range of fungal DNA concentrations used (R2 &gt; 0.99), indicating precision and accuracy of the qPCR. The protocol was developed aiming to evaluate the biotechnological potential of the biocontrol yeast Clavispora lusitaniae AgL21, by quantifying the fungus P. digitatum in lemon wounds. The yeast was shown to restrict the pathogen growth, reaching fungal DNA concentrations of up to 0.038 ng/wound after 4 days of incubation, compared to 173.06 ng/wound when the fungus was alone. No inhibition of qPCR due to food matrices was observed. The developed qPCR protocol could be considered as a suitable tool to detect P. digitatum in food products and can be used to specifically test the ability of new biological control microorganisms against green mold in lemons.]]></dcterms:abstract>

    <dcterms:rights><![CDATA[<span>This study compares the performance of Hanseniaspora vineae (Hv) under mixed culture fermentation with Saccharomyces cerevisiae, with a conventional control (Sc) for the production of base wine. Hv exhibited fermentation kinetics comparable to controls when its nutritional requirements were satisfied. Volatile acidity in Hv from one batch was significantly lower (&ndash;0.3 g/L) compared to the controls, while in the other two batches the levels were equal. Interestingly, Hv trials showed a significant degradation of malic acid (&ndash;0.9 g/L on average) without variations of pH. Even though the matrix influenced the volatile composition, the characteristic features of H. vineae remained intact, with 24-fold higher levels of 2-phenylethyl acetate. There was no higher production of 2-aminoacetophenone, albeit tryptophan (known as a 2-aminoacetophenone precursor) is a preferred amino acid for H. vineae. Results suggest the potential of H. vineae to produce base wine with a broad spectrum of aroma compounds that increase flavor complexity, if obtained from nutrient-balanced grape musts.</span>]]></dcterms:rights>

Dihydroxyacetone appears as the main product of the photooxidation tests with a 28.6 % of the initial glycerol in solution converted into this product under UV light.     <dcterms:abstract><![CDATA[Kefir is a fermented probiotic drink obtained by placing kefir granules in a suitable substrate. The kefir granules are a consortium of bacteria and yeasts embedded in a exopolysaccharide matrix. The aim of this research was the isolation and identification of yeasts from kefir of different origin, the evaluation of their antifungal capacity against Aspergillus spp. and the characterization of virulence related traits. Using RFLP of ITS1/ITS4 region, D1/D2 region sequencing and RAPD techniques, 20 kefir isolates were identified as Geotrichum candidum, Pichia kudriavzevii, P. membranifaciens, Saccharomyces cerevisiae and Candida ethanolica. Their antifungal capacity was evaluated by their conidia germination reduction, which allowed the selection of eight isolates with high to moderate conidia germination reduction against A. flavus and A. parasiticus. Furthermore, these selected isolates showed growth inhibition on contact in the dual culture assay for both Aspergillus species and 3 of them ‒belonging to S. cerevisiae and P. kudriavzevii species‒ generated volatile organic compounds which significantly affected the growth of both fungi. For the evaluation of virulence related traits, growth at high temperatures, enzymatic activities and the adhesion to Caco-2 cells were analyzed. The isolates did not present more than one positive virulence-related trait simultaneously. In particular, it is important to highlight that the adhesion capacity to the model of intestinal barrier was extremely low for all of them. According to the results obtained, further studies would be of interest for the possible use of these promising yeasts as biocontrol agents against fungi in food.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Cold tolerance at germination and seedling stage is one of the most seeked traits in Southern Brazilian rice (Oryza sativa L.) cultivars, thus, the availability of improved methods for germplasm assessment is of high importance for breeding programs. The aim of this study was to validate an optimized Average Tolerance Index (ATI) for rice germplasm assessment under cold at germination and early seedling stage. A diverse panel composed by 124 rice accessions was assayed. Four genotypes with known performance under cold were used as controls (two tolerant and two sensitive). The genotypes were sown in roll papers, and evaluated at 13 &deg;C for 28 days (cold stress) and 25 &deg;C for seven days (control). Four traits were measured, germination percentage, coleoptile length, root length and shoot length, which were converted in terms of relative perfor‑ mance (cold/control). A PCA analysis was carried out. The ATI was calculated as a linear combination of all trait&rsquo;s relative performance, weighted by the importance of each trait in explaining the genetic variability in the set, through including the PC1 vectors as trait coefcients. K means was applied for genotype classifcation. The panel showed expressive genetic variability for performance under low temperature. The ATI successfully distinguished the controls regarding their cold tolerance and allowed the formation of four classes of genotypes, sensitive, moderately sensitive, moderately tolerant and tolerant.     <dcterms:abstract><![CDATA[Glutathione transferase enzymes (GSTs) are believed to be a major detoxification system in helminth parasites and have been associated with immunomodulation of the host response. Echinococcus granulosus sensu lato (s.l.) is a cestode parasite known to express at least five different GSTs, but no Omega-class enzymes have been reported in this parasite or in any other cestode. Herein we report the identification of a new member of the GST su perfamily in E. granulosus s.l., which is phylogenetically related to the Omega-class: EgrGSTO. Through mass spectrometry, we showed that the 237 amino acids protein EgrGSTO is expressed by the parasite. Moreover, we identified homologues of EgrGSTO in other eight members of the Taeniidae family, including E. canadensis, E. multilocularis, E. oligarthrus, Hydatigera taeniaeformis, Taenia asiatica, T. multiceps, T. saginata and T. solium. A manual sequence inspection and rational modification yielded eight Taeniidae&rsquo;s GSTO sequences, each one encoding for a 237 aa polypeptide showing 80.2% overall identity. To the best of our knowledge, this is the first description of genes encoding for Omega-class GSTs in worms belonging to the Taeniidae family -that at least in E. granulosus s.l. is expressed as a protein- suggesting the gene encodes for a functional protein.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Vaccines are among the most important advances in medicine throughout the human history. However, conventional vaccines exhibit several drawbacks in terms of design and production costs. Peptide-based vaccines are attractive alternatives, since they can be designed mainly in silico, can be produced cheaply and safely, and are able to induce immune responses exclusively towards protective epitopes. Yet, a proper peptide design is needed, not only to generate peptide-specific immune responses, but also for them to recognize the native protein in the occurrence of a natural infection. Herein, we propose a rational workflow for developing peptide-based vaccines including novel steps that assure the cross-recognition of native proteins. In this regard, we increased the probability of generating efficient antibodies through the selection of linear B-cell epitopes free of posttranslational modifications followed by analyzing the 3D-structure similarity between the peptide in-solution vs. within its parental native protein. As a proof of concept, this workflow was applied to a set of seven previously suggested potential protective antigens against the infection by Echinococcus granulosus sensu lato. Finally, two peptides were obtained showing the capacity to induce specific antibodies able to exert anti-parasite activities in different in vitro settings, as well as to provide significant protection in the murine model of secondary echinococcosis.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Almond is a high-market value crop that benefits from honeybee pollination services, even for self compatible varieties. Besides, it has been recently shown that the offering of food scented with floral mimic odors specific to different crops biased honeybee foraging preferences towards sunflowers, pear, or apple trees. Herein, we analyzed the floral volatiles of two almond self-compatible varieties to propose potential mimic odors. The mixture which bees discriminated the least from the natural floral scent in olfactory conditioning assays was chosen as almond mimic (AM). In the field, colonies fed AM-scented sucrose solution increased their foraging activity and amounts of stored pollen compared with colonies fed unscented food. Our results support the conditioning of honeybees to a floral mimic odor as a potential tool to bias their foraging prefer ences in almond, even applicable to self-compatible varieties. Future studies should address its effect on yield.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Quality control of essential oils is fundamental for verifying their authenticity and confor mity with quality standards, ensuring their safety and regulatory compliance, and monitoring their consistency. Companies that produce or market essential oils routinely evaluate the quality and au thenticity of their products. However, they also must deal with increasing attention to environmental sustainability as well as practical considerations such as productivity, cost, and simplicity of methods. In this study, enantioselective gas chromatography (GC) was adopted to evaluate the quality of sweet and bitter orange essential oils, used as a case study. The analytical conditions were optimized and translated to fast GC to evaluate the impact of this approach on the environmental footprint of the analyses. The greenness of fast GC, compared with conventional GC, was quantitatively evaluated using a dedicated metric tool (AGREE), and important improvements have been calculated. The developed methods were applied to a set of commercial essential oils, and the data about the enantiomeric composition and relative percentage abundance were elaborated through multivariate statistics (principal component analysis). The results showed that fast chiral gas chromatography enables the classification of citrus essential oil samples and can be considered an environmentally friendly and sustainable approach for evaluating their quality.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Sodium titanates represent a promising alternative for the construction of anodes for sodium-ion batteries. To study the electrical response of nanostructured sodium titanate samples under plausible temperature conditions, we evaluate the electrical impedance in the range of temperatures from &minus;30 ◦C to 50 ◦C, and the effect of consecutive temperature cycling. Strong changes in electrical properties are observed during the first temperature cycle, followed by a stabilization in the consecutive cycles. This behavior is reversible when the sample is exposed to external conditions and room temperature for less than an hour. Probably a structural and surface water removal and a surface water reabsorption occur, affecting the charge carriers and with it the impedance. Structurally, no differences are detected before and after the cycles, nor when evaluating only the vacuum process. However, when the optical properties are evaluated we find non-reversible changes after the temperature cycles. The optical behavior after the temperature cycling becomes uniform, the same type of electronic defects become predominant and similar direct and indirect band gap values are obtained, regardless of the starting synthesis condition. These results have significant implications for potential technological applications of these materials.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Food losses and waste (FLW) is a global problem. Because household FLW is one of the biggest contributors to total FLW, strategies are being implemented to reduce per capita FLW in many countries. The present research contributed to this goal by investigating individual factors influencing self-reported household food waste in Australia. Using a web survey, data were obtained from 847 consumers. The average per capita food waste corresponded to 339 g/week and the median to 180 g/week. The most frequently wasted food categories were fresh vegetables and salads, fresh fruit, and bread. The percentage of participants reporting having disposed of these categories ranged between 45.9% and 65.9%. Although socio-demographic charac teristics have been identified as relevant influencers of household food waste, the evidence is still inconclusive about the strength of their effects. Results from the pre sent work identified significant effects of age and household size. For the former, the amount of per capita household food wasted tended to reduce with participants' age. Regarding the effect of household size, per capita food waste decreased with the number of people in the household. The present research also explored the effect of a series of psychological factors on the amount of food waste and five hypotheses derived based on the postulates of theories of consumer behavior were supported.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Bacterial immobilization is regarded as an enabling technology to improve the stability and reusability of biocatalysts. Natural polymers are often used as immobilization matrices but present certain drawbacks, such as biocatalyst leakage and loss of physical integrity upon utilization in bioprocesses. Herein, we prepared a hybrid polymeric matrix that included silica nanoparticles for the unprecedented immobilization of the industrially relevant Gluconobacter frateurii (Gfr). This biocatalyst can valorize glycerol, an abundant by-product of the biodiesel industry, into glyceric acid (GA) and dihydroxyacetone (DHA). Different concentrations of siliceous nanosized materials, such as biomimetic Si nanoparticles (SiNps) and montmorillonite (MT), were added to alginate. These hybrid materials were significantly more resistant by texture analysis and presented a more compact structure as seen by scanning electron microscopy. The preparation including 4% alginate with 4% SiNps proved to be the most resistant material, with a homogeneous distribution of the biocatalyst in the beads as seen by confocal microscopy using a fluorescent mutant of Gfr. It produced the highest amounts of GA and DHA and could be reused for up to eight consecutive 24 h reactions with no loss of physical integrity and negligible bacterial leakage. Overall, our results indicate a new approach to generating biocatalysts using hybrid biopolymer supports.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The different combinations of molecular dynamics simulations with coarse-grained representations have ac quired considerable popularity among the scientific community. Especially in biocomputing, the significant speedup granted by simplified molecular models opened the possibility of increasing the diversity and complexity of macromolecular systems, providing realistic insights on large assemblies for more extended time windows. However, a holistic view of biological ensembles&rsquo; structural and dynamic features requires a self-consistent force field, namely, a set of equations and parameters that describe the intra and intermolecular interactions among moieties of diverse chemical nature (i.e., nucleic and amino acids, lipids, solvent, ions, etc.). Nevertheless, examples of such force fields are scarce in the literature at the fully atomistic and coarse-grained levels. More over, the number of force fields capable of handling simultaneously different scales is restricted to a handful. Among those, the SIRAH force field, developed in our group, furnishes a set of topologies and tools that facilitate the setting up and running of molecular dynamics simulations at the coarse-grained and multiscale levels. SIRAH uses the same classical pairwise Hamiltonian function implemented in the most popular molecular dynamics software. In particular, it runs natively in AMBER and Gromacs engines, and porting it to other simulation packages is straightforward. This review describes the underlying philosophy behind the development of SIRAH over the years and across families of biological molecules, discussing current limitations and future implementations.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Carotenoids are a large group of health-promoting compounds used in many industrial sectors, such as foods, feeds, pharmaceuticals, cosmetics, nutraceuticals, and colorants. Considering the global population growth and environmental challenges, it is essential to find new sustainable sources of carotenoids beyond those obtained from agriculture. This review focuses on the potential use of marine archaea, bacteria, algae, and yeast as biological factories of carotenoids. A wide variety of carotenoids, including novel ones, were identified in these organisms. The role of carotenoids in marine organisms and their potential health-promoting actions have also been discussed. Marine organisms have a great capacity to synthesize a wide variety of carotenoids, which can be obtained in a renewable manner without depleting natural resources. Thus, it is concluded that they represent a key sustainable source of carotenoids that could help Europe achieve its Green Deal and Recovery Plan. Additionally, the lack of standards, clinical studies, and toxicity analysis reduces the use of marine organisms as sources of traditional and novel carotenoids. Therefore, further research on the processing of marine organisms, the biosynthetic pathways, extraction procedures, and examination of their content is needed to increase carotenoid productivity, document their safety, and decrease costs for their industrial implementation.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Text highlighting was recently introduced as a method for exploring consumer attitudes and perceptions. It consists of asking participants to read a piece of text on a digital device while using highlighting functions to indicate those parts of the text that they &lsquo;like&rsquo;/feel positive about, as well as those parts they &lsquo;dislike&rsquo;/feel negative about. As with any new method, methodological research helps to develop recommendations for best practice in use. In this regard, the present research addressed three research questions (RQs) in three studies with participants from New Zealand, United Kingdom, Singapore and Malaysia (ntotal = 5381). In a qualitative approach, Study 1 (RQ1) validated the notion that the text highlighting task is not expected to induce bias. Study 2 addressed RQ2 and explored whether the process of completing the text highlighting task influence consumers&rsquo; topic- and product-related responses? There was minimal evidence of this, meaning that text highlighting can reasonably be used together with other types of consumer responses without much the risk of biasing the latter. RQ3 (Study 3) investigated whether the type of highlighting task performed influence text selection. To date the method has been implemented as a dual approach (i.e., selecting both &lsquo;like&rsquo; and &lsquo;dislike&rsquo; aspects of the text), however, this could tentatively bias either or both responses compared to a single response task where partic ipants select only &lsquo;like&rsquo; highlights or only &lsquo;dislike&rsquo; highlights. Study 3 found no effect for &lsquo;like&rsquo; highlights when comparing dual- and single-response highlighting. However, for &lsquo;dislike&rsquo; highlighting, significantly fewer words were selected in the dual-response approach (although the difference in frequency of selection was &lt; 10%).The findings were established in case studies pertaining to kiwifruit and biodynamic agriculture but require confirmation in studies with different products, texts and participants.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Co-free REBa2Cu3O6+ẟ (RE= La, Nd, Sm, Gd and Y) triple perovskite ceramics prepared by auto-combustion were systematically studied as cathodes for intermediate-temperature solid oxide fuel cells. The orthorhombic to tetragonal phase transition typical of these compounds was studied, and its relation with electrochemical per formance due to oxygen vacancy ordering variations was assessed as neutral. The model that best fits the electrochemical impedance spectroscopy data obtained for symmetrical cells prepared on 10% gadolinia-doped ceria (GDC, Gd0.1Ce0.9O1.95) electrolyte pellets indicates an oxygen diffusion/incorporation co&ndash;limited process is the rate-limiting step of the oxygen reduction reaction (ORR). A maximum power density of 425 mW.cm&minus; 2 was obtained for the YBa2Cu3O6+ẟ material deposited by screen-printing on a commercial half-cell with 8YSZ-Ni anode and 8YSZ electrolyte coated with a GDC barrier layer. A clear correlation is observed between the power density and ionic radii of the RE cation of these triple perovskites.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Food waste is an issue of global concern. Particularly troublesome is the amount of waste at the consumer level, and a need exists for interventions that draw on a deeper understanding of the underlying factors leading to food waste. The research aims were to (1) study the potential of an information-based strategy to reduce household food waste, (2) explore the impact of information on attitudes towards food waste, and (3) explore the reasons underlying perceived changes in household food waste. A controlled randomized trial was conducted, and participants were assigned to one of two groups (Informed, Control) with data collection at two time points (Baseline, Time 2). At both time points, all participants completed a standardized quantitative survey on food disposal in the past 7 days. At baseline, after the food disposal survey was completed, participants in the informed group read a text about food waste and completed a highlighting task. The key result was a significant reduction in household food waste approximately fifteen days after the Baseline, which was found for both experimental groups, albeit slightly larger in the Informed group. This was found despite the Control group having the same attitudes, on average, to engaging in food waste reduction behaviors. To successfully reduce food waste, participants bought less food, used leftover and suboptimal foods, reduced portion size, checked stored foods to use them before expiration, and planned meals. The main reason for not reducing food waste was related to the belief that household food waste was minimal or inexistent. Overall, the research further stresses the potential of information strategies to achieve food waste reductions at the household level and discusses cognitive dissonance as a possible underlying mechanism.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The postharvest disease popularly known as gray mold is considered one of the most limiting factors strawberry fruit pro duction. The most efective way to control this disease is still the use of chemical fungicides. However, other alternative sources of control are being explored. Among these, psychrophilic yeasts adapted to extreme conditions, such as those found in the Antarctic region, may have great potential for use as biocontrol agents. Thus, the present study aimed to select psychrotolerant yeasts obtained from Antarctic region and to evaluate their potential for biocontrol under gray mold, caused by Botrytis cinerea in strawberries stored at low temperature. For this, 20 potential antagonist yeasts were evaluated in vitro (thermotolerance and enzymatic) assays. Debaryomyces hansenii, Rhodotorula mucilaginosa and Dioszegia hungarica were selected for growing in strawberry juice. However, only D. hansenii was selected for in vivo studies and showed a reduction in the incidence of gray mold by 82% for the tests performed on injury and 86% for the tests on non-injured fruits treated by immersion bath. Thus, demonstrating that the selection of this cold-adapted Antarctic yeast can be a promising strategy as a biocontrol agent used to curb the development of gray mold in strawberry fruits]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[This study compares the performance of Hanseniaspora vineae (Hv) under mixed culture fermentation with Saccharomyces cerevisiae, with a conventional control (Sc) for the production of base wine. Hv exhibited fermentation kinetics comparable to controls when its nutritional requirements were satisfied. Volatile acidity in Hv from one batch was significantly lower (&ndash;0.3 g/L) compared to the controls, while in the other two batches the levels were equal. Interestingly, Hv trials showed a significant degradation of malic acid (&ndash;0.9 g/L on average) without variations of pH. Even though the matrix influenced the volatile composition, the characteristic features of H. vineae remained intact, with 24-fold higher levels of 2-phenylethyl acetate. There was no higher production of 2-aminoacetophenone, albeit tryptophan (known as a 2-aminoacetophenone precursor) is a preferred amino acid for H. vineae. Results suggest the potential of H. vineae to produce base wine with a broad spectrum of aroma compounds that increase flavor complexity, if obtained from nutrient-balanced grape musts.]]></dcterms:abstract>
