The aim of the present work was twofold: (i) to evaluate the effect of nutritional warnings and health-related packaging cues (nutrient claim and images of natural foods) on consumers’ food choices, and (ii) to evaluate the influence of two types of messages (gain-framed and loss-framed) aimed at encouraging the use of such warnings and packaging cues on food choices. A total of 510 participants were recruited using an advertisement on Facebook and Instagram targeted at Uruguayan adult users. Participants were randomly allocated to one of three experimental groups: control (n = 167), loss-framed messages (n = 177) and gain-framed messages (n = 166). Then, they completed a choice-conjoint task involving packages of crackers differing in three variables: nutritional warnings (present vs. absent), nutrient claim (present vs. absent) and images of seeds and wheat (present vs. absent). Warnings were the most relevant package element driving choices, even when participants were not exposed to any type of message. Exposure to loss-framed messages led to changes in the relative importance attached to the package characteristics, whereas gain-framed messages did not. Graphic pieces conveying messages encouraging the use of nutritional warnings by stressing the negative consequences of excessive consumption of sugar, fat, and sodium increased the relative importance attached to nutritional warnings and decreased the relative importance attached to health-related cues (nutrient claims and images of seeds and wheat). These results suggest that public awareness campaigns aimed at encouraging citizens to use nutritional warnings should emphasize the negative health consequences of excessive intake of sugar, fat, and sodium. We examined cross-sectional associations of blood lead (BLL) with growth indices (Z scores of body mass index for age, BAZ, and height for age, HAZ) in Uruguayan urban school children (n = 259; ~7 y). Potential differences in these associations in children with lower vs. higher urinary inorganic arsenic metabolites (U–As), urinary cadmium (U–Cd), sex (42% girls), iron deficiency (ID, 39% children), or intake of dairy foods below recommended levels were examined. BLL was measured using AAS, U–As using HPLC-HGICP-MS, and U–Cd using ICP-MS. Dietary information was obtained by two 24-h recalls completed by caregivers. Biocontrol agents such as parasitic wasps use long-range volatiles and host-associated cues from lower trophic levels to find their hosts. However, this chemical landscape may be altered by the invasion of exotic insect species. The spotted-wing drosophila (SWD), Drosophila suzukii (Diptera: Drosophilidae), is a highly polyphagous fruit pest native to eastern Asia and recently arrived in South America. Our study aimed to characterize the effect of SWD attack on the volatile organic compounds (VOCs) of blueberries, a common host fruit, and to correlate these odor changes with the olfactory-mediated behavioral response of resident populations of Trichopria anastrephae parasitoids, here reported for the first time in Uruguay. Using fruit VOC chemical characterization followed by multivariate analyses of the odor blends of blueberries attacked by SWD, we showed that the development of SWD immature stages inside the fruit generates a different odor profile to that from control fruits (physically damaged and free of damage). These differences can be explained by the diversity, frequency, and amounts of fruit VOCs. The behavioral response of T. anastrephae in Y-tube bioassays showed that female wasps were significantly attracted to volatiles from SWD-attacked blueberries when tested against both clean air and undamaged blueberries. Therefore, T. anastrephae females can use chemical cues from SWD-infested fruits, which may lead to a successful location of their insect host. Since resident parasitoids are able to locate this novel potential host, biological control programs using local populations may be plausible as a strategy for control of SWD. Goat`s milk and its dairy products have been commonly related to important nutritional and health benefits. In fact, fat fraction is one of the most important components of goat’s milk regarding its value, as lipids are involved in cheese yield, firmness, color and flavor of goat dairy products. The aim of this study was to evaluate the modification in the lipid and sensory profile of cheeses elaborated with goat milk, through diet inclusion of sunflower oil (SFO). The main objective was to elaborate Danbo Type cheeses with increased content of conjugated linoleic acid (CLA) and transvaccenic acid (TVA), and at the same time decrease the proportion of saturated fat, and evaluate these values during the shelf life of the cheeses. The study was conducted with 60 Saanen goats separated into two homogeneous groups and supplemented for 18 days with one of two concentrates: without added oil (control, C) or enriched with sunflower oil (SFO). Cheeses were elaborated using goat milk, collected after desirable changes in its lipid profile were achieved. Physicochemical, microbiological, and fatty acid composition together with the sensory profile were evaluated. In SFO cheeses fat content increased, without affecting protein content, microbiological, sensory profile and consumer acceptability. Also, the content of TVA increased from 2.4 to 4.4 % (p < 0.01), while CLA presented an increase from 0.8 to 1.3 % (p < 0.01). A decrease in the saturated/unsaturated ratio was observed resulting in a decrease in the atherogenic index. Therefore, inclusion of SFO in the diet of goats could be a viable alternative to increase the contribution of fatty acids with beneficial effects for health in cheeses. The demand for modern materials, especially glasses, used in different applications, such as radiation sensors and spectral converters, requires a detailed study of their properties. The incorporation of fluoride compounds in borate glasses and their crystallization at the nanometric scale allows the properties of these materials to be further enhanced. Although many works showed improvements in some of these properties, some critical aspects, such as the crystallization mechanism and the role of the fluorine phase, need more investigation. We worked with xNaF (100 - x)BaO.2B2O3 glasses with x = 0, 5, 10, 15, 20, 25, 30, and 35% (in mol) to increase the knowledge in this field. The structural modifications and the thermally stimulated luminescence of the glasses were studied, and their crystallization was analyzed by thermal analysis and X-ray diffraction. A continuous trap distribution was found, which was responsible for its very good luminescent signal, especially in glasses with 20% NaF. By selecting a suitable amount of NaF, it is possible to obtain nanocrystals of BaF2. These promising results we reached show the applicability of these materials. The aim of this work was to evaluate the physicochemical and biological properties of docetaxel (DCX) loaded chitosan nanocapsules (CS Nc) functionalized with the monoclonal antibody Chi-Tn (CS-PEG-ChiTn mAb Nc) as a potential improvement treatment for cancer therapy. The Tn antigen is highly specific for carcinomas, and this is the first time that such structure is targeted for drug delivery. The nanocapsules (Ncs), formed as a polymeric shell around an oily core, allowed a 99.9% encapsulation efficiency of DCX with a monodispersity particle size in the range of 200 nm and a high positive surface charge that provide substantial stability to the nanosystems. Release profile of DCX from Ncs showed a sustained and pH dependent behavior with a faster release at acidic pH, which could be favorable in the intracellular drug delivery.We have designed PEGylated CS Nc modified with amonoclonal antibody which recognize Tn antigen, one of themost specific tumor associated antigen. A biotin-avidin approach achieved the successful attachment of the antibody to the nanocapsules. Uptake studies and viability assay conducted in A549 human lung cancer cell line in vitro demonstrate that ChiTn mAb enhance nanoparticles internalization and cell viability reduction. Consequently, these ChiTn functionalized nanocapsules are promising carriers for the active targeting of DCX to Tn expressing carcinomas. In vivo receptor targeting with radiolabelled peptide-based probes is an attractive approach for the development of novel radiotracers for molecular imaging. This work presents the development and characterization of two novel neuropeptide Y analogues labelled with a positron emitter 68Ga, for potential use in breast cancer imaging. Both analogues share the same amino acid sequence and were derivatized with NOTA through either a lysine linker (L1) or an acetylated lysine (L2). In both cases, a single product with radiochemical purity higher than 95% was obtained. The two complexes were hydrophilic, showed remarkable in vitro stability, good cellular uptake, binding affinity in the nanomolar range and high cellular internalization rate. Biodistribution studies revealed low blood uptake and elimination through the urinary tract. The addition of an acetyl group in the spacer increased the lipophilicity of C2 and modified the reactivity of the ε-amino group of the lysine which resulted in lower protein binding and lower percentage of injected dose in bladder and urine. The tumour versus muscle ratio was (3.8 ± 0.4) for 68Ga-L1 and (4.7 ± 0.4) for 68Ga-L2. These results encourage performing further studies in order to complete the evaluation of both tracers as potential radiopharmaceutical for breast cancer imaging. Temperature variation can promote physico-chemical and microbial changes in the water transported through distribution systems and influence the dynamics of biofilms attached to pipes, thus contributing to the release of pathogens into the bulk drinking water. An experimental real-scale chlorinated DWDS was used to study the effect of increasing temperature from 16 to 24�C on specific pathogens, bacterialfungal communities (biofilm and water samples) and determine the risk of material accumulation and mobilisation from the pipes into the bulk water. Biofilm was developed for 30 days at both temperatures in the pipe walls, and after this growth phase, a flushing was performed applying 4 gradual steps by increasing the shear stress. The fungal-bacterial community characterised by Illumina MiSeq sequencing, and specific pathogens were studied using qPCR: Mycobacterium spp., Mycobacterium avium complex, Acanthamoeba spp., Pseudomonas aeruginosa, Legionella pneumophilia, and Stenotrophomonas maltophilia. Sequencing data showed that temperature variation significantly modified the structure of biofilm microbial communities from the early stages of biofilm development. Regarding bacteria, Pseudomonas increased its relative abundance in biofilms developed at 24�C, while fungal communities showed loss of diversity and richness, and the increase in dominance of Fusarium genus. After the mobilisation phase, Pseudomonas continued being the most abundant genus at 24° C, followed by Sphingobium and Sphingomonas. For biofilm fungal communities after the mobilisation phase, Helotiales incertae sedis and Fusarium were the most abundant taxa. Results from qPCR showed a higher relative abundance of Mycobacterium spp. on day 30 and M. avium complex throughout the growth phase within the biofilms at higher temperatures. The temperature impacts were not only microbial, with physical mobilisation showing higher discolouration response and metals release due to the increased temperature. While material accumulation was accelerated by temperature, it was not preferentially to either stronger or weaker biofilm layers, as turbidity results during the flushing steps showed. This research yields new understanding on microbial challenges that chlorinated DWDS will undergo as global temperature rises, this information is needed in order to protect drinking water quality and safety while travelling through distribution systems. Objective: The aim of this study was to explore and analyse the actions implemented by civil society to contribute to food security in the context of the COVID-19 outbreak in Uruguay, a high-income country in South America. Design: An exploratory systematic approach was used to identify the contributions of civil society to food security through reports in news websites and Facebook posts. Data were analysed based on content analysis following a deductive–inductive approach. Setting: Uruguay, Latin America. Results: A total of 1220 civil society organisations were identified, which developed two main actions to increase access to food among the Uruguayan population: food baskets and ‘community pots’ (also known as ‘common pots’). Most of the initiatives targeted citizens under socioeconomic vulnerability in the face of COVID-19, without specifying any specific requirement or population segment. Actions were mainly led by spontaneously organised community groups, and, to a lesser extent, by consolidated organisations. Interactions between organisations were identified. The foods provided by the organisations were mostly aligned with national dietary guidelines. Social media posts evidenced that the main challenge faced by organisations was related to the lack of funds or supplies. Conclusions: Results from this work suggest that the lack of funds or supplies poses challenges to the medium- and long-term contributions of civil society to food security and stresses the need for comprehensive governmental measures to guarantee food security amongst Uruguayan citizens. The objective of this study was to test the effect of the combined application of lactic acid (0–5%) (LA) and UV-C light (0–330 mJ/cm2) to reduce Listeria monocytogenes and lactic acid bacteria (LAB) on beef without major meat color (L *, a *, b *) change and its impact over time. A two-factor central composite design with five central points and response surface methodology (RSM) were used to optimize LA concentration and UV-C dose using 21 meat pieces (10 g) inoculated with L. monocytogenes (LM100A1). The optimal conditions were analyzed over 8 weeks. A quadratic model was obtained that predicted the L. monocytogenes log reduction in vacuum-packed beef treated with LA and UV-C. The maximum log reduction for L. monocytogenes (1.55 ± 0.41 log CFU/g) and LAB (1.55 ± 1.15 log CFU/g) with minimal impact on meat color was achieved with 2.6% LA and 330 mJ/cm2 UV-C. These conditions impaired L. monocytogenes growth and delayed LAB growth by 2 weeks in vacuum-packed meat samples throughout 8 weeks at 4° C. This strategy might contribute to improving the safety and shelf life of vacuum-packed beef with a low impact on meat color. Free-range livestock can be exposed to toxic cyanobacteria by drinking water from eutrophic natural sources. This study reports on the analysis of livestock drinking water sources from ranches in an eutrophic subtropical basin of South America (33ºS, 57°W), where frequent Microcystis spp. blooms and occasionally dense scums were found. To minimise monitoring costs, microcystins (MCs) were determined in serum and water with an in-house developed enzyme linked immunosorbent assay (ELISA). The water results were compared with those of liquid chromatography – tandem mass spectrometry (LC-MS/MS) for the most common congeners (MC-LR, MC-RR; MC-YR, MC-LA). Both methods were strongly correlated along a broad range of concentrations. The concentrations of MCs in the livestock drinking water were up to 3,700 μg/L. This is about 1,000 times higher than the Australian and New Zealand livestock MCs guidance values (cattle = 4.2; sheep = 3.9 μg/L) as well as the California-EPA sub-chronic action level (3 μg/L) and implies a high risk of poisoning. The animals exposed to MCs concentrations 70–100 times higher than these guidelines showed no significant alterations in liver enzymes. Nevertheless, serum concentrations of up to 0.11 μg/L MCs were recorded by ELISA. These results reveal the potential of MCs-ELISA in serum as a sensitive, minimally invasive method for risk assessment in integrated environmental monitoring strategies. Rice (Oryza sativa) is one of the most frequently produced cereals in the world. Rice bran (RB) is obtained as a by-product in the rice milling process. A part of the RB is used for oil extraction, obtaining defatted rice bran as a second by-product. The aim of this work was to analyze the emulsifying properties of soluble proteins fraction present in defatted rice bran concentrate (DRBC) in acidic and neutral conditions. Fine emulsions (prepared by high-speed and ultrasound homogenization) stabilized with soluble proteins obtained from DRBC showed a mean particle size lower than coarse emulsions (prepared by only high-speed homogenization) and a significantly lower degree of overall destabilization. Coarse emulsions showed sigmoidal destabilization profiles at pH 4.5 and 7.0, related to the existence of two populations with different particle sizes. In fine emulsions, both pH provided lower particle sizes and greater stability. After 24 h of quiescent storage, the coarse emulsions showed an increase of particle size that was not observed in fine emulsions. Both types of emulsions showed a Newtonian-type behavior. Fine emulsions showed higher viscosity values and higher lightness than coarse emulsions, consistent with the reduction of particle size and increase in the number of particles. The soluble proteins obtained from a waste of the rice industry can be used to obtain stable fine oil-in-water emulsions in acidic and neutral conditions. This result is of interest since it could be used as a food ingredient, increasing the added value of this important by-product. In this study, we assessed the capacity of Pedobacter sp. 3.14.7 —a novel Antarctic keratinolytic bacterium— of producing a feather protein hydrolysate (FPH) with high antioxidant activity. This strain was able to degrade raw feather into protein hydrolysate under optimal conditions of 30 g l- 1 of feather concentration, pH 6.0, and 20 ◦C. Maximum enzymatic activity was detected after a 192-h cultivation period (125.67 ± 3.06 U ml- 1). Quenching of the ABTS radical (2,20-azino-bis-(3-ethylbenzothiazoline)-6-sulfonic acid) by the hydrolysate reached a value of approximately 95%, with a 50% Inhibitory Concentration (IC50) value of 0.57 ± 0.01 g l- 1. An interesting reducing power of the FPH towards Fe+3 was also detected (2.19 Abs700 units in the presence of 2.03 g - 1 protein). The hydrolysate also displayed a moderate nitric oxide-scavenging activity, with an IC50 of 0.53 ± 0.01 g l- 1. This FPH’s free amino acid content is high (almost 5 g l- 1). Results indicate that this hydrolysate may be useful as supplementary protein and antioxidant in animal feed formulations. Glutathione transferases (GSTs) belong to a diverse superfamily of multifunctional proteins involved in metabolic detoxification. In helminth parasite, GSTs are particularly relevant since they are also involved in host immunomodulation. Echinococcus granulosus sensu lato (s.l.) is a cestode parasite known to express at least three phylogenetically distant cytosolic GSTs: EgGST1 and EgGST2 previously grouped within Mu and Sigma classes, respectively; and EgGST3 related to both Omega and Sigma classes. To better characterize E. granulosus s.l. GSTs, herein their expression and distribution were assessed in the pre-adult protoscolex (PSC) parasite stage. Potential transcriptional regulatory mechanisms of the corresponding EgGST genes were also explored. Firstly, the transcription of the three EgGSTs was significantly induced during the early stages of the murine model of infection, suggesting a potential role during parasite establishment. EgGST1 was detected in the parenchyma of PSCs and its expression increased after H2O2 exposure, supporting its role in detoxification. EgGST2 was mainly detected on the PSCs tegument, strategically localized for potential immunoregulation functions due to its Sigma-class characteristics. In addition, its expression increased after anthelmintic treatment, suggesting a role in chemotherapy resistance. Finally, the Omega-related EgGST3 was localized throughout the entire PSC body, including suckers and tegument, and since its expression also increased after H2O2 treatment, a potential role in oxidative stress response could also be ascribed. On the other hand, known cis-acting regulatory motifs were detected in EgGST genes, suggesting similar transcription processes to other eukaryotes. The results herein reported provide additional data regarding the roles of EgGSTs in E. granulosus s.l. biology, contributing to a better understanding of its host-parasite interaction. The Hirshfeld surface analysis and the 2D fingerprint plots were performed. The 1 H NMR spectra of the compounds revealed the signals of the ligands and the main feature is the absence of the N H signal of the protonated ligands TztH and BzoxtH supporting the coordi- nation in their anionic forms, which is also evidenced by the vibrational spectroscopy and molar conduc- tivity studies. The 31 P{ 1 H} NMR spectra present only one singlet indicating the chemical equivalence of both phosphorus nuclei and in a region compatible with phosphorus cis -positioned for the P( p -tol) 3 and for the potentially trans -spanning dppf and DPEPhos, whereas for the other diphosphines (dppe, dppp and dppb) only the cis -configuration is expected. The molecular structure revealed the Ru center is sited on a distorted octahedral geometry mainly as a consequence of the formation of four-membered chelate rings involving the N–S −ligand. The coordination sphere is completed with two phosphorus atoms po- sitioned in a cis -fashion while trans to the nitrogen atoms of the tzt −ligand, and the remaining sulfur donors (thiolate) of tzt −ligand positioned trans to each other. The cyclic voltammograms of the com- plexes presented one monoelectronic and reversible process attributed to the Ru 3 + /Ru 2 + couple, and for the complexes with dppf an additional redox process is observed due to the Fe 3 + /Fe 2 + couple. Invasive fungal diseases represent an unmet clinical need that could benefit from novel immunotherapeutic approaches. Host pattern recognition receptors (e.g., Toll-like receptors, C-type lectins, or scavenger receptors) that sense conserved fungal cell wall constituents may provide suitable immunotherapeutic antifungal agents. Thus, we explored the therapeutic potential of the lymphocyte class I scavenger receptor CD5, a nonredundant component of the antifungal host immune response that binds to fungal �-glucans. Antifungal properties of the soluble ectodomain of human CD5 (shCD5) were assessed in vivo in experimental models of systemic fungal infection induced by pathogenic species (Candida albicans and Cryptococcus neoformans). In vitro mechanistic studies were performed by means of fungus-spleen cell cocultures. shCD5-induced survival of lethally infected mice was dose and time dependent and concomitant with reduced fungal load and increased leukocyte infiltration in the primary target organ. Additive effects were observed in vivo after shCD5 was combined with suboptimal doses of fluconazole. Ex vivo addition of shCD5 to fungus-spleen cell cocultures increased the release of proinflammatory cytokines involved in antifungal defense (tumor necrosis factor alpha and gamma interferon) and reduced the number of viable C. albicans organisms. The results prompt further exploration of the adjunctive therapeutic potential of shCD5 in severe invasive fungal diseases. Serratia marcescens can be a plant growth promoting bacteria (PGPB) and an opportunistic human andplant pathogen. We have identified and characterized strains of related species of Serratia and evaluatedtheir biological control of damping-off of tomato seeds caused by Pythium cryptoirregulare. Serratia ure-ilytica, S. bockelmannii and S. nevei were identified by phylogenetic analysis of partial gyrB gene sequenceand average nucleotide identity (ANI). Tomato seeds inoculated with S. ureilytica ILBB 145 showed highergermination percentage and reduced damping-off in greenhouse experiment resembling a commercialoperation, and volatiles produced by this strain caused the nearly complete inhibition in vitro of P. cryp-toirregulare. Analysis of volatile organic compounds (VOCs) showed that ILBB 145 produced dimethyldisulfide (DMDS), which can partially account for this inhibition. Serratia bockelmannii ILBB 162 perfor-mance against damping-off was intermediate and the inhibition of P. cryptoirregulare in vitro was lowerand explained by volatile and diffusible metabolites. Both strains augmented DMDS production in thepresence of P. cryptoirregulare, suggesting this compound may play a role in the context of interspecificcompetition. Serratia nevei ILBB 219 showed the lowest inhibition of P. cryptoirregulare in vitro, no DMDSproduction, and no biocontrol in planta. Draft genomes of the three strains were annotated and individ-ual genes and biosynthesis gene clusters were identified in relation with the observed phenotypes. Wereport S. ureilytica – a low risk species- with activity as a biological control agent and DMDS produced bythis bacterial species putatively involved in seed and seedling protection against P. cryptoirregulare. The objective of the present studywas to evaluate children's hedonic sensitivity to sugar reduction in three dairy products: vanilla milk desserts, chocolate-flavoured milk, and vanilla yoghurt. For each product, a regular sample and five samples with different reduction in added-sugar content were formulated. The regular sample contained the sugar content of commercial products available in the marketplace. The reduction in added-sugar content ranged between 10.0 and 41.0%. A total of 126 children (8e13 years old) participated in the study. An A-not A test was used to evaluate children's hedonic sensitivity to sugar reduction. Sugar reductions up to 27% in chocolate flavoured milk and vanilla yoghurt, and up to 19% in vanilla milk desserts, did not cause significant changes in children's hedonic reaction. These results confirm that sugar-reduction strategies can be easily implemented in the dairy industry without significant risk of affecting sample appreciation and market share. Pantoea ananatis is a gram-negative bacterium and the primary causal agent of center rot of onions in Georgia. Previous genomic studies identified two virulence gene clusters, HiVir and alt, associated with center rot. The HiVir gene cluster is required to induce necrosis on onion tissues via synthesis of pantaphos, (2-hydroxy[phosphonomethyl) maleate), a phosphonate phytotoxin. The alt gene cluster aids in tolerance to thiosulfinates generated during onion tissue damage. Whole genome sequencing of other Pantoea species suggests that these gene clusters are present outside of P. ananatis. To assess the distribution of these gene clusters, two PCR primer sets were designed to detect the presence of HiVir and alt. Two hundred fifty-two strains of Pantoea spp. were phenotyped using the red onion scale necrosis (RSN) assay and were genotyped using PCR for the presence of these virulence genes. A diverse panel of strains from three distinct culture collections comprised of 24 Pantoea species, 41 isolation sources, and 23 countries, collected from 1946–2019, was tested. There is a significant association between the alt PCR assay and Pantoea strains recovered from symptomatic onion (P < 0.001). There is also a significant association of a positive HiVir PCR and RSN assay among P. ananatis strains but not among Pantoea spp., congeners. This may indicate a divergent HiVir cluster or different pathogenicity and virulence mechanisms. The epitaxial graphene layer (EG) grown on silicon carbide (SiC) is severely affected by the presence of the underlying graphene buffer layer (BL). However, little information is available on the alteration of the magnetic and electronic properties of the top layer when the BL presents structural defects. Herein, by means of first-principle density functional calculations, we investigate the electronic and magnetic properties of the SiC–BL–EG system, with a single vacancy, divacancy or a Stone–Wales defective buffer layer. Our results indicate that new highly stable magnetic states are observed in the SiC–BL–EG nondefective and defective systems, as compared to the SiC–BL models. In addition, the energy differences among the degenerate magnetic states originally found in the SiC-defective systems are further reduced upon inclusion of the EG layer. Interestingly, for the single-vacancy system, a p-type doping is noticed in the spin down channel of the M = 4 lB configuration. This is in sharp contrast with the n-type doping generally measured for EG. Moreover, charge neutrality was observed in two cases namely, the half-semimetal ferromagnetic configurations of the non-defective and the single-vacancy systems. This result may open new avenues to control the electronic doping of the epitaxial graphene layer via defect engineering. The aim of this study was to assess the risk of exposure to polycyclic aromatic hydrocarbons (PAH) from yerba mate infusions in Uruguay using the margin of exposure approach (MOE) and a probabilistic method (Monte Carlo simulation). Servings/day, portion size, weekly frequency of mate consumption and body weight were the factors considered. The amount in infusions of benz[a]pyrene (B[a]P), PAH2 (sum of chrysene and B[a]P), and PAH4 (sum of benz[a]anthracene, chrysene, benz[b]fluoranthene and B[a]P) were used as markers of PAH exposure. Total content of PAH in infusions had large inter-brand variability (48–54 %) with significant differences among brands. PAH content in infusions prepared as habitually consumed was about 40 % of total content. The probability of occurrence of MOE < 10,000 varied according to the infusion preparation and the marker of exposure used, being higher for infusions prepared for total content and when B[a]P was used as marker of exposure. When the average B[a]P amount in infusion as habitually consumed was used in the simulation model, the probability of MOE < 10,000 was 9 %. The main factors contributing to B[a]P MOE variance were B[a]P amount (28.4 %), servings/day (17.3 %), and portion size (9.6 %). Heavy drinkers of yerba mate with high B[a]P content are those at risk to PAH exposure from mate infusions.
