Nutritional warnings have gained popularity, particularly in the region of the Americas, to facilitate the identification of products with excessive content of nutrients associated with non-communicable diseases and encourage healthier food choices. Although warnings have been shown to be effective, an in-depth understanding of the reasons why some consumers do not use them is still lacking. The aim of the present work was to explore self-reported use of nutritional warnings and to identify the reasons for not considering nutritional warnings for making food purchase decisions after policy implementation in Uruguay. A non-probabil istic sample of 858 Uruguayan participants was recruited using an advertisement on Facebook and Instagram. Through an online survey, self-reported use of nutritional warnings was asked using a closed-open ended questions. Participants who reported not considering warnings to make their purchase decisions were asked to explain the reasons why using an open-ended question. Responses were analysed using deductive coding, based on the Behavioural Drivers Model. Thirty seven percent of the partic ipants stated that the warnings had not influenced their purchase decisions. Motives for not being influenced by the warnings were related to lack of interest, attitudes, lack of perceived self-efficacy, cognitive biases and limited rationality when making purchase decisions. In addition, structural barriers, such as availability, cost and trust in the food industry also emerged from participants’ responses. Strategies to encourage the use of warnings should include communication campaigns and policies to address structural barriers related to the perceived availability and affordability of healthy foods.

Fermentation is an ancient process that contributes to conservation of food and beverges but also to the formation of new aromas and flavor. The production of alcoholic beverages with improved flavor has been a matter of interest for industry since centuries. Saccharomyces cerevisiae is the main yeast species involved in alcoholic fermentation. However, in the last decades the search of new aroma for beverages has made the producers to focus on those non S. cerevisiae yests commonly named as non-conventional yeasts. Different products such as wine, beer or kombucha are examples of fermented beverages elaborated since ancient times which present diverse aromatic complexity that might be enhanced, attending to studies performed in the last decades, due to the use of these non-conventional yeasts.

Abstract
A summary of the resource.
Volatile stimuli can be detected by specific protein receptors from olfactory epithelium and trans mitted to the brain where finally are interpreted as the sense of smell. The interpretation of odor response complexity provokes the continuous development of instrumental methods for objectively analyze them. Gas chromatography-olfactometry (GC-O) introduction was a milestone in the odor research of, coupling a resolution technique of volatiles mixtures (gas chromatography) with the selectivity and sensitivity of the human olfactory system. GC-O generates a list of the odor descriptor of each peak in a GC run (“aromagram”), indicating which GC peaks (chromatographic resolved components) have or not given aromas/odors associated. The GC-O technique has been profusely employed for the evaluation of aromas in food matrices, but its application to essential oil study is still scarce for the characterization of specific odor active compounds which contribute to the overall olfactory impression. In this chapter an overview of data able to be obtained applying different GC-O methodologies to essential oils are presented, including the procedures and fundaments involved. The information presented does not intend to be exhaustive, but provides examples available in the literature and references to further reading.

Stilbenes belong to the group of non-flavonoid phenolic compounds. Resveratrol is the main stilbene present in grapes and wines. Many analytical methods have been reported for the determination of resveratrol in wine, which are primarily based on chromatographic techniques like high-performance liquid chromatography (HPLC), capillary electrophoresis (CE), and gas chromatography (GC). This chapter presents a liquid-liquid extraction method for stilbenes in grapes. The analytical methodology here presented, carried out by HPLC-MS, can be used both for grapes and wine.

β-Glucosidases (BGLs) are key enzymes for the hydrolysis of glycosidic aroma precursors of wines. However, BGLs produced by oenological yeasts are often inactive or unstable at typical wine pH values. In this work, different immobilization strategies on biomimetic NPs were tested to enhance the stability of Issatchenkia ori entalis BGL and compared with traditional methods on agarose and Eupergit. Immobilization to biomimetic silica NPs by ionic interactions proved to be the most efficient method to achieve enzyme stabilization in model wine at pH 4.0. In particular, the subsequent glutaraldehyde crosslinking, achieved a high immobilization efficiency (71%) with an outstanding stabilization factor of 240-fold with respect to the soluble enzyme. This enzyme derivative preserved practically all the activity (98%) after15 days in model wine supplemented with Muscat glycosides, making possible its application for the release of aroma compounds relevant to the typicity of wine.

It is well established that proteins and peptides can release sulfur under alkaline treatment, mainly through the β-elimination of disulfides with the concomitant formation of persulfides and dehydroalanine derivatives. In this study, we evaluated the formation of glutathione persulfide (GSSH/GSS- ) by exposure of glutathione disulfide (GSSG) to alkaline conditions. The kinetics of the reaction between GSSG and HO- was investigated by UV–Vis absorbance, reaction with 5,5′-dithio-bis-(2-nitrobenzoic acid) (DTNB), and cold cyanolysis, obtaining an apparent second-order rate constant of ~10-3 M-1 s -1 at 25 ◦C. The formation of GSSH and the dehydroalanine derivative was confirmed by HPLC and/or mass spectrometry. However, the mixtures did not equilibrate in a timescale of hours, and additional species, including thiol and diverse sulfane sulfur compounds were also formed, probably through further reactions of the persulfide. Cold cyanolysis is frequently used to quantify persulfides, since it measures sulfane sulfur. This method involves a step in which the sample to be analyzed is incubated with cyanide at alkaline pH. When cold cyanolysis was applied to samples containing GSSG, sulfane sulfur products that were not present in the original sample were measured. Thus, our results reveal the risk of overestimating the amount of sulfane sulfur compounds in samples that contain disulfides due to their decay to persulfides and other sulfane sulfur compounds at alkaline pH. Overall, our study highlights that the β-elimi nation of disulfides is a potential source of persulfides, although we do not recommend the preparation of GSSH from incubation of GSSG in alkali. Our study also highlights the importance of being cautious when doing and interpreting cold cyanolysis experiments.

A summary of the resource.
Gas-phase kinetics of the overall reactions of • OH and • Cl radicals with dihydrofuran-3(2H)-one (oxolan-3-one) and dihydro-2-methyl-3(2H)-furanone (2MTHF-3-one) were studied at 298 K and atmospheric pressure. The rate coefficients were determined using the relative method in a 480 L multipass glass reactor coupled to an FT-IR detection system. The rate coefficients found for oxolan 3-one and 2MTHF-one with • OH radicals (k1 and k2) and with • Cl atoms (k3 and k4) at 298 K and atmospheric pressure (in cm3 molecule− 1 s − 1 ) were: k1 = (1.86 ± 0.29) × 10− 11, k2 = (2.64 ± 0.47) × 10− 11, k3= (1.15 ± 0.28) × 10 − 10, and k4 = (1.33 ± 0.32) × 10− 10, respectively. Reactivity trends were developed by comparison with other similar structures and Fukui indices employed to determine the reactivity of different sites on the ring. The singularity of the reaction with • OH was assessed by computational studies which showed the formation of several stable hydrogen bonded complexes, explaining the difference with the reaction with the • Cl atom. SAR estimations of the rate coefficients were calculated and compared to the experimental values.

Coordination complexes may act as anticancer agents. Among others, the formation of the complex may facilitate the ligand uptake by the cell. Searching for new copper compounds with cytotoxic activity, the complex Cu-dipicolinate was studied as a neutral scaffold to form ternary complexes with diimines. A series of [Cu(dipicolinate)(diimine)] complexes (where diimine: Phenan throline, phen, 5-NO2 -phenanthroline, 4-methyl-phenanthroline, neocuproine, 3,4,7,8-tetramethyl phenanthroline, tmp, bathophenanthroline, bipyridine, dimethyl-bipyridine, as well as the ligand 2,2-dipyridil-amine, bam) were synthesized and characterized both in the solid state, including a new crystal structure of [Cu2 (dipicolinate)2 (tmp)2 ]·7H2O. Their chemistry in aqueous solution was explored by UV/vis spectroscopy, conductivity, cyclic voltammetry, and electron paramagnetic resonance studies. Their DNA binding was analyzed by electronic spectroscopy (determining Kb values), circular dichroism, and viscosity methods. The cytotoxicity of the complexes was assessed on human cancer cell lines MDA-MB-231, MCF-7 (breast, the first triple negative), A549 (lung epithelial) and A2780cis (ovarian, Cisplatin-resistant), and non-tumor cell lines MRC-5 (lung) and MCF-10A (breast). The major species are ternary, in solution and solid state. Complexes are highly cytotoxic as compared to Cisplatin. Complexes containing bam and phen are interesting candidates to study their in vivo activity in triple-negative breast cancer treatment.

Cystic echinococcosis is caused by the larval stages (hydatids) of ces tode parasites belonging to the species cluster Echinococcus granulosus sensu lato, with E. granulosus sensu stricto being the main infecting species. Hydatids are blad derlike structures that attain large sizes within various internal organs of livestock ungulates and humans. Hydatids are protected by the massive acellular laminated layer (LL), composed mainly of mucins. Parasite growth requires LL turnover, and abundant LL-derived particles are found at infection sites in infected humans, raising the question of how LL materials are dealt with by the hosts. In this article, we show that E. granulosus sensu stricto LL mucins injected into mice are taken up by Kupffer cells, the liver macrophages exposed to the vascular space. This uptake is largely de pendent on the intact mucin glycans and on Clec4F, a C-type lectin receptor which, in rodents, is selectively expressed in Kupffer cells. This uptake mechanism operates on mucins injected both in soluble form intravenously (i.v.) and in particulate form intraperitoneally (i.p.). In mice harboring intraperitoneal infections by the same spe cies, LL mucins were found essentially only at the infection site and in the liver, where they were taken up by Kupffer cells via Clec4F. Therefore, shed LL materials circulate in the host, and Kupffer cells can act as a sink for these materials, even when the parasite grows in sites other than the liver.

Distortion of polyhedra is frequently used in the structure–property analysis of inorganic materials. The commonly used Baur distortion index (BDI) loses efficacy in dealing with equi-length polyhedra. This work provides an online calculator to characterize the polyhedral distortion on the basis of the best fitted idealized polyhedron (BFIP) method. This method can determine any subtle change between distorted and corresponding idealized polyhedra. It works by fitting an idealized oriented polyhedron of user-selected type to a collection of center and vertex coordinates on an orthonormal basis. The input only needs the coordinates of the center and ligand atoms. It can be accessed at http:// bfip.crystalstructure.cn. The function is demonstrated using a distorted MgO6 octahedron. Examples of the application and comparison with the BDI are given, including a tetrahedron, octahedron, eight-vertex triangular dodecahe dron/cube and cuboctahedron.

Photodynamic therapy has advantages over conventional cancer superfcial tumor therapies, such as insignifcant side efects, minimal cumulative toxicity, excellent functional and cosmetic results, precise target treatment minimizing damage to neigh boring normal tissues, and optimum long-term tumor regression. Upconversion nanoparticles have been proposed to extend photodynamic therapy for treating non-superfcial tumors. In particular, compounds with low phonon energy, like KMgF3, with an optimal synthesis design and a suitable doping system, could be used for this therapy application. This particular matrix allows the incorporation of dopants as transition metals ions (as Mn2+) besides rare-earth elements, minimizing the use of the former. To obtain nanoparticles of suitable size for nanomedicine, we used a factorial experimental design to determine statistical synthesis conditions that signifcantly afect particles’ size. With the proposed synthesis method, it was possible to obtain KMgF3 nanoparticles with sizes ranging from 13.46±0.30 nm to 32.18±0.60 nm, values estimated with the XRD technique and with size distribution suitable for photodynamic therapy. We proved the good correlation between the particle size estimated from transmission electron microscopy images and powder X-ray difraction measurements. According to the statistical analysis, the temperature and the interaction of temperature with MgCl2 concentration signifcantly afect the particle size (signifcance level of 0.05). The present work describes the infuence of solvothermal synthesis parameters on the KMgF3 nanoparticle size for the frst time. The results are particularly interesting for further doping the system and its functionalization, foreseeing the fnal application in cancer treatment.

This analytical note presents a simple and economic analytical method for quantifying toxicologically relevant arsenic species in urine—the sum of As (III), As (V), monomethylarsonic acid, and dimethylarsinic acid—by hydride generation microwave-induced plasma atomic emission spectrometry (HG-MIP-AES). The accuracy of the method was in the range of 95%–97%; the intra-assay precision was within the range of 1.8%–6.2% expressed as the relative standard deviation, and the interassay precision was within 6.9%–15%. The limits of detection and quantification were 1.8 and 5.4 μg L− 1 , respectively. The validated method resulted very helpful to assess the health risk of As exposure through drinking water and was successfully applied in urine samples collected from wood impregnation plant workers. The methodology can be postulated as a viable alternative to expensive techniques, such as liquid chromatography (HPLC) in combination with inductively coupled plasma mass spectrometry (ICP-MS), for biomonitoring studies.

The local crystal structure of Y3NbO7 was probed using neutron total scattering. Five different structural models were fit to the experimental pair distribution function of this material up to 15 Å. Fits of defect fluorite (Fm3m), pyrochlore (Fd3m), and orthorhombic C weberite models (C2221) were attempted based on prior structural investigations of Y3NbO7 and related fluorite-based materials. Orthorhombic P weberite (P2221) and monoclinic weberite models (P1121) were derived via symmetry reduction of the orthorhombic C weberite structure. All models except monoclinic weberite failed to reproduce the experimental pair distribution function. Misfits were clearly visible for peaks arising from atom pairs within the first coordination shell (defect fluorite and pyrochlore) and beyond (orthorhombic C and P weberite). By contrast, monoclinic weberite (γ ≈ 91.8◦) provided an excellent fit, with no major misfits observed. This unit cell features distorted YO8 dodecahedra, YO7 monocapped octahedra, and NbO6 octahedra as building blocks. Comparison between the topologies of the cationic and anionic substructures in monoclinic weberite and its parent orthorhombic C structure revealed displacements of the metal atoms along the [100] direction and a less compact spatial distribution of oxygen atoms along the a axis. The monoclinic weberite model presented herein may serve as a starting point to revisit structural modeling of fluorite-based materials with challenging local structures

In this work, we present the synthesis of nanoscale heterostructures of sodium titanate nanotubes Na2Ti2O5.H2O (NaNT) decorated with N- and S- co-doped graphene quantum dots (NS-GQD) for quantum dots sensitized solar cells (QDSSC). The study was mainly focused on the structural, microstructural, electrical and optical characterization of these nanoscale heterostructures by means of X ray diffraction, transmission electron microscopy, atomic force microscopy, Raman, UV–vis and impedance spectroscopies. Our nanoscale heterostructures yielded a significant enhancement in the electric conductivity interpreted in terms of favorable interactions between the NS-GQD and the NaNT acting as proper connectors. Finally, our QDSSC prototype exhibits promising values for diffusion coefficient and recombination times as evidenced by means of impedance modulated photocurrent and photovoltage spectroscopies. Also, we consider that these materials could be further explored for electron transport layers applications in order to exploit the advantages regarding electron transport properties.

There is scarce information on the vibrational and thermal properties of small Ni clusters. Here, the outcomes of ab initio spin-polarized density functional theory calculations on the size and geometry effects upon the vibrational and thermal properties of Nin (n = 13 and 55) clusters, are discussed. For theses clusters a comparison is presented between the closed shell symmetric octahedral (Oh) and the icosahedral (Ih) geometries. The results indicate that the Ih isomers are lower in energy. Besides, ab initio molecular dynamics runs at T = 300K show that Ni13 and Ni55 clusters transform from their initial Oh geometries towards the corresponding Ih ones. For Ni13, we also consider the lowest energy less symmetric layered 1-3-6-3 structure, and the cuboid, recently observed experimentally for Pt13, which is competitive in energy but is unstable, as phonon analysis reveals. We calculate their vibrational density of states (νDOS) and heat capacity, and compare with the Ni FCC bulk counterpart. The characteristic features of the νDOS curves of these clusters are interpreted in terms of the clusters’ sizes, the interatomic distance contractions, the bond order values as well as the internal pressure and strains of the clusters. We find that the softest possible frequency of the clusters is size and structure-dependent, being the smallest for the Oh ones. We identify mostly shear, tangential type displacements involving mainly surface atoms for the lowest frequency of the spectra of both Ih and Oh isomers. For the maximum frequencies of these clusters the central atom shows anti-phase movements against groups of nearest neighbor atoms. An excess of heat capacity at low temperatures with respect to the bulk is found, while at high temperatures a constant limiting value, close but lower to the Dulong and Petit value, is determined.

Crystal structures can strongly deviate from bulk states when confined into nanodomains. These deviations may deeply affect properties and reactivity and then call for a close examination. In this work, we address the case where extended crystal defects spread through a whole solid and then yield an aperiodic structure and specific reactivity. We focus on iron boride, α-FeB, whose structure has not been elucidated yet, thus hindering the understanding of its properties. We synthesize the two known phases, α-FeB and β-FeB, in molten salts at 600 and 1100 °C, respectively. The experimental X-ray diffraction (XRD) data cannot be satisfactorily accounted for by a periodic crystal structure. We then model the compound as a stochastic assembly of layers of two structure types. Refinement of the powder XRD pattern by considering the explicit scattering interference of the different layers allows quantitative evaluation of the size of these domains and of the stacking faults between them. We, therefore, demonstrate that α-FeB is an intergrowth of nanometer-thick slabs of two structure types, β-FeB and CrB-type structures, in similar proportions. We finally discuss the implications of this novel structure on the reactivity of the material and its ability to perform insertion reactions by comparing the reactivities of α-FeB and β FeB as reagents in the synthesis of a model layered material: Fe2AlB2. Using synchrotron-based in situ X-ray diffraction, we elucidate the mechanisms of the formation of Fe2AlB2. We highlight the higher reactivity of the intergrowth α-FeB in agreement with structural relationships.

<span style="text-decoration: underline;">Background:</span> Labels are a key element of the marketing strategies of infant formula companies, and often include text or images that idealize their use, undermining efforts to promote breastfeeding. <span style="text-decoration: underline;">Research Aims:</span> To evaluate the prevalence of marketing cues that idealize infant formula on labels of products commercialized in Uruguay and to assess changes after a periodic monitoring of compliance with the International Code of Marketing of Breast-Milk Substitutes (IC). <span style="text-decoration: underline;">Method:</span> This study is a descriptive, observational, and longitudinal assessment of the information included on infant formula labels. The first data collection was in 2019, as part of a periodic assessment to monitor the marketing of human-milk substitutes. In 2021, the same products were purchased to evaluate changes in their labels. Thirty-eight products were identified in 2019, of which 33 were still available in 2021. All information available on the labels was analyzed through content analysis. <span style="text-decoration: underline;">Results:</span> Most products included at least one textual or visual marketing cue idealizing infant formula in both 2019 (n=30, 91%) and 2021 (n=29, 88%). This represents a violation of both the IC and national regulations. References to nutritional composition were the most frequent marketing cue, followed by references to child growth and development. No relevant changes were observed after the periodic assessment conducted by the Uruguayan government. <span style="text-decoration: underline;">Conclusions:</span> Monitoring compliance with the IC per se cannot be expected to trigger changes in the marketing strategies of infant formula companies. More explicit regulations and strong enforcement mechanisms are needed to end the inappropriate marketing practices on infant formula labels.

Biorsorbents can be used to pack minicolumns for the preconcentration of trace elements and thus improve the detection limits of some techniques. A biosorbent is efficient when presents binding sites as carbonyls, amines, and carboxylic groups, among others. Thus, natural materials as the sisal fiber (Agave sisalana) may be a good candidate. Sisal fiber demonstrated good performance for Cu preconcentration when it was impregnated with alizarine fluorine blue (AFB). However, very good results were reported for the first time by our group with this column, without the use of additional reagents for both, Mn and Cu determinations in water samples by using microwave plasma atomic emission spectroscopy (MP AES). In this paper a comparison of the sisal fiber preparation with and without impregnation with AFB is presented and discussed in terms of the figures of merit, including precision, trueness, limits of detection and quantification. In addition to that, the number of determinations without the need of replacement of the solid phase was evaluated. Results demonstrated that the impregnation of sisal fiber with AFB does not leads to an improvement in the analytical performance. Analytical Greenness Metric Approach (AGREE) was used to evaluate the greenness of both methods and results obtained were similar. Despite this, the method without impregnation of the fiber has some remarkable advantages, that contributes to Green Analytical Chemistry (GAC), related to the lifetime of the sorbent, not considered in the AGREE tool.

Even beer being the most consumed alcoholic beverage around the world, there is not enough information generated for craft beers produced in Latin America, for either volatile profiles or physicochemical studies. In this work, the chemical and volatile components of ten commercial Blond Ale and nine Indian Pale Ale (IPA) beers from the Uruguayan market were studied using GC–MS. Principal component analysis applied to the data allowed differentiation among the two groups of samples while the volatile compounds and physicochemical parameters responsible for these differences were identified. The physicochemical properties revealed a great diversity between all beer samples even within the same beer style. The main significant differences were ob tained for alcohol, polyphenols, bitterness, colour, and pH. Most Blond Ale beer samples were differentiated from IPA ones by raw fermentation aroma compounds such as 1-pentanol, 1-hexanol, hexanoic and isobutyric acids, 4- vinyl guaiacol, and 5,5-dimethyl-2(5H)-furanone. This is the first work that contributes to the knowledge of Uruguayan craft beers. The study also showed the ability of most of the Uruguayan microbreweries to brew Blond Ale and IPA craft beer styles that meet international standards for physicochemical quality.

Nitrile hydratase activity has been reported as an exciting alternative for the industrial production of a variety of compounds overwhelming its chemical counterpart; despite this, until now, a few enzymes have been thoroughly studied. Efficient expression of nitrile hydratase enzymes has been the bottleneck to explore this activity. Here, we report the cloning and expression of Rhodococcus erythropolis ATCC 4277 nitrile hydratase (α- and β-subunits) and the correspondent activator gene. Furthermore, substrate scope with whole cells of recombinant E. coli demonstrates that this Fe-type NHase could hydrate a wide range of aliphatic and aromatic nitrile with high conversion rates and moderate enantiomeric excess.

Biogenic silver nanoparticles are synthesized through silver(I) reduction, which is promoted by biomolecules available in the biological world and mostly obtained from plant extracts, fungal bioproduction, and some bacteria. The exact mechanisms accounting for such oxidoreduction processes are not fully known. However, some studies have already mentioned oxidoreductases, cofactors (nicotinamide adenine dinucelotide hydrogen (NADH), dihydroflavine-adenine dinucleotid (FADH2)), and phenolic compounds, as the main reductive species engaged in the formation of silver(0) and silver nanoparticles (silver NPs) synthesis. Biosynthesis is a one-pot process that leads to stable silver NP colloids that, regarding their size, shape, and uniformity, can be successfully controlled; and show great stability when one takes into account their surface capping by some biomolecules that as well take part in their synthesis. Although great efforts have been made to feature capping biomolecules and their interactions with silver NP surfaces, knowledge of the quantity (exact number per cm2 ) and type of biomolecules that cap or surround silver NPs remains limited. The literature provides detailed information on protein capping, but it still shows gaps regarding many aspects of fine biophysical protein featuring. The reason why certain proteins prefer to interact with silver NP surface and form chemical bonds, whereas others rather have intermolecular interaction with the first layer of proteins remains unknown. Assessing capping proteins’ involvement in the bioactivity of biogenic silver NPs is another relevant research field. Certain proteins enhance bioactivity of silver NPs and lower toxicity; however, the way antimicrobial processes benefit from protein capping is yet to be discovered.Finally, biogenic silver NPs can be found both in the environment and in water; moreover, their additional activity and behavior must be known or, at least, hypothesized.
