<dcterms:abstract>It is well established that proteins and peptides can release sulfur under alkaline treatment, mainly through the β-elimination of disulfides with the concomitant formation of persulfides and dehydroalanine derivatives. In this study, we evaluated the formation of glutathione persulfide (GSSH/GSS- ) by exposure of glutathione disulfide (GSSG) to alkaline conditions. The kinetics of the reaction between GSSG and HO- was investigated by UV–Vis absorbance, reaction with 5,5′-dithio-bis-(2-nitrobenzoic acid) (DTNB), and cold cyanolysis, obtaining an apparent second-order rate constant of ~10-3 M-1 s -1 at 25 ◦C. The formation of GSSH and the dehydroalanine derivative was confirmed by HPLC and/or mass spectrometry. However, the mixtures did not equilibrate in a timescale of hours, and additional species, including thiol and diverse sulfane sulfur compounds were also formed, probably through further reactions of the persulfide. Cold cyanolysis is frequently used to quantify persulfides, since it measures sulfane sulfur. This method involves a step in which the sample to be analyzed is incubated with cyanide at alkaline pH. When cold cyanolysis was applied to samples containing GSSG, sulfane sulfur products that were not present in the original sample were measured. Thus, our results reveal the risk of overestimating the amount of sulfane sulfur compounds in samples that contain disulfides due to their decay to persulfides and other sulfane sulfur compounds at alkaline pH. Overall, our study highlights that the β-elimi nation of disulfides is a potential source of persulfides, although we do not recommend the preparation of GSSH from incubation of GSSG in alkali. Our study also highlights the importance of being cautious when doing and interpreting cold cyanolysis experiments.</dcterms:abstract>

    <dcterms:abstract>Global warming has a strong impact on polar regions. Particularly, the Antarctic Peninsula and nearby islands have experienced a marked warming trend in the past 50 years. Therefore, higher methane (CH4) emissions from this area could be expected in the future. Since mitigation of these emissions can be carried out by microbial oxidation, understanding this biological process is crucial since to our knowledge,no related studies have been performed in this area before. In this work, the aerobic CH4 oxidation potential of five freshwater lake sediments of Fildes Peninsula (King George Island, South Shetland Islands) was determined with values from 0.07 to 10 mmol CH4 gdw-1 day-1 and revealed up to 100-fold increase in temperature gradients (5, 10, 15, and 20C). The structure and diversity of the bacterial community in the sediments were analyzed by next-generation sequencing (Illumina MiSeq) of 16S rRNA and pmoA genes. A total of 4,836 ASVs were identified being Proteobacteria, Actinobacteriota, Acidobacteriota, and Bacteroidota the most abundant phyla. The analysis of the pmoA gene identified 200 ASVs of methanotrophs, being Methylobacter Clade 2 (Type I, family Methylococcaceae) the main responsible of the aerobic CH4 oxidation. Moreover, both approaches revealed the presence of methanotrophs of the classes Gammaproteobacteria (families Methylococcaceae and Crenotrichaceae), Alphaproteobacteria (family Methylocystaceae), Verrucomicrobia (family Methylacidiphilaceae), and the candidate phylum of anaerobic methanotrophs Methylomirabilota. In addition, bacterial phospholipid fatty acids (PLFA) biomarkers were studied as a proxy for aerobic methane-oxidizing bacteria and confirmed these results. Methanotrophic bacterial diversity was significantly correlated with pH. In conclusion, our findings suggest that aerobic methanotrophs could mitigate in situ CH4 emissionsin a future scenario with higher temperatures in this climate-sensitive area. This study provides new insights into the diversity of methanotrophs, as well as the influence of
temperature on the CH4 oxidation potential in sediments of freshwater lakes in polar regions of the southern hemisphere.</dcterms:abstract>

    <dcterms:abstract>In the search for drugs with anti-trypanosome activity, we had previously synthesized two series of platinum and palladium analogous compounds of the formula [MIICl2(HL)], where HL were bioactive 5-nitrofuryl or 5- nitroacroleine thiosemicarbazone derivatives. In this work, we thoroughly characterized [MIICl2(HL)] complexes interaction with DNA by using different techniques: gel electrophoresis, DNA viscosity measurements, circular dichroism (CD) and atomic force microscopy (AFM). Electrophoresis results showed that all complexes induced a withdrawal of DNA superhelicity demonstrated by a decrease in electrophoretic mobility of supercoiled DNA form. This effect on migration was dependent on dose but also on the nature of both the metal and the ligand. In general, the effect produced by palladium complexes was significantly more intense than that observed for the corresponding platinum analogs. Differences between palladium and platinum complexes were also observed in CD experiments. While palladium complexes induce evident calf thymus (CT)-DNA profile changes compatible with B-DNA to Z-DNA conformational transition, no clear effect was observed for platinum ones. Additionally, AFM studies showed that changes in the shape of plasmid DNA, like supercoiling, kinks and thickness increase resulted more intense for the former. In addition, either Pd or Pt complexes increased the viscosity of CT DNA solutions in a concentration dependent manner. Although the nature of DNA interaction of both series of analogous palladium and platinum complexes seemed to be similar, an explanation for the observed differential intensity of the effect could be related to the known kinetic stability differences between palladium and platinum compounds</dcterms:abstract>

    <dcterms:abstract>Metal complexes that establish interactions with DNA are being studied not only because of their potential use as therapeutic agents but also as tools for biochemistry and molecular biology. Searching for drugs with anti-trypanosome activity, we previously synthesized a series of ruthenium mixed ligand dimethyl sulfoxide complexes of the type [RuIICl2(DMSO)2L], where L is 5-nitrofurylsemicarbazone derivatives and DMSO is dimethyl sulfoxide. Though they present the ability to bind DNA, no activity against parasites in cell culture was observed. Considering their potential application as molecular tools we further analyzed the interactions with DNA through an electrophoretic approach. Non covalent withdrawal of superhelicity and a rapid nicking activity upon covalent interaction was observed. Inhibition of both effects was observed in the presence of distamycin suggesting the involvement of the DNA minor groove in the interaction with the nitrofurylsemicarbazone ruthenium complexes. In addition cleavage inhibition by dimethyl sulfoxide suggests an oxidative mechanism of action.</dcterms:abstract>

    <dcterms:abstract>Contextual and individual variables have been shown to play a key role in shifting consumers' emotional reaction to food products. Socio-economic status (SES) influences consumer past and present experiences with food products, as well as the social and personal meanings attached to foods, which can strongly affect their emotional associations. In this context, the aim of the present work was to explore differences in food-related emotional associations with foods of Brazilian consumers from low and middle/high SES. A total of 300 Brazilian participants of different SES were asked to complete four free-listing tasks related to the emotions they associated with the foods they liked the most/least and the foods they associated with positive/negative emotions. Participants elicited a wide range of associations, most of which were related to moods and emotions. The identified moods and emotions have been included in word-based emotion questionnaires. Although similar terms were elicited by both SES groups, differences in their frequency of mention were found. In addition, SES groups also differed in the foods they associated with positive and negative emotions, which could be explained by differences in their eating patterns. Results stress the need to further study the influence of SES on food-related emotional associations.</dcterms:abstract>

    <dcterms:abstract>CATA questions are gaining prominence as a quick and easy method for obtaining consumer-derived sensory product characterizations. The present research contributes further methodological understanding by exploring individual differences in visual attention to CATA questions and investigating the relationship between visual attention throughout the task and consumers’ ability to discriminate among samples.
A consumer study was carried out in which 113 participants were asked to evaluate six plain crackers and to answer a check-all-that-apply question composed of 20 sensory terms, which was presented on a computer screen. While consumers completed the CATA tasks their eye movements were recorded using a remote eye-tracker. Considerable heterogeneity among participants existed with regard to the number
of fixations made when completing the CATA questions. Three groups of consumers who differed in their degree of visual processing (more thorough to less thorough) were identified. These groups also differed in their responses to the CATA question. Consumers who performed the most thorough visual processing of the CATA question, used, on average, a significantly larger number of CATA terms to describe the products
than consumers in the other two groups. Meanwhile, consumers who engaged in the least detailed visual processing showed lesser discriminative ability. However, sensory spaces from the three consumer groups were highly similar, suggesting that consumers identified the same similarities and differences
among samples despite differing in the degree of visual attention directed to the CATA question</dcterms:abstract>

    <dcterms:abstract>Nutritional warnings have been recently introduced as a new front-of-pack nutrition labelling scheme. Its particular goal is to facilitate the identification of products with excessive content of nutrients, given these are associated with non-communicable diseases. The aim of the present study was to evaluate the influence of nutritional warnings on consumers’ choice of a snack in a choice experiment involving real products. A total of 199 participants were asked to evaluate a series of bread images on a computer screen using eye-tracking glasses. Once they finished the task, they were invited to help themselves a snack from a shelf as a compensation for their participation in the study. A total of 15 snack products with different nutritional composition were included on the shelf. Participants were randomly divided into groups: one that made their choice from a shelf containing products that did not include front-of-package nutritional information, whereas the other chose among products that featured nutritional warnings. Participants in both experiments invested an average of 14 s to select their product. When products were presented with warnings, 50% of the participants fixated their gaze on the warnings during the choice task. Significant differences in the frequency of selection of the products (p = 0.002) were found between the groups. When the warnings were present, participants chose products with fewer warnings and lower average sodium, saturated fat, and sugar content (p < 0.001). These findings confirm the potential of nutritional warnings to encourage more healthful food choices.</dcterms:abstract>

    <dcterms:abstract>
Objective: To evaluate if the inclusion of nutritional warnings in food ordering web-sites can discourage consumers from purchasing foods with excessive content of nutrients associated with non-communicable diseases (NCD).

Design: Participants were randomly assigned to one of the two experimental conditions: control (n 225) or nutritional warnings (n 222). Nutritional warnings corresponded to separate black octagonal signs containing the word ‘Excess’ followed by the corresponding nutrient: total fat, saturated fat, sugars and sodium.

Participants were asked to purchase a lunch for themselves using a simulated food ordering website.

Setting: Online study in Uruguay.

Participants: Convenience sample of 447 Uruguayan participants, recruited using social media.

Results: In the control condition, 76 % of the participants selected a dish or a beverage with excessive content of at least one nutrient in the simulated food ordering website. When nutritional warnings were included, this percentage significantly decreased to 62 % (P = 0·002). In addition, nutritional warnings caused a significant reduction in the percentage of participants who selected dishes with excessive content of total fat: 50 % v. 62 % (P = 0·012).

Conclusions: Results from the present work provide preliminary evidence that the inclusion of nutritional warnings in food ordering websites could discourage consumers from selecting dishes and beverages with excessive content of nutrients associated with NCD.
</dcterms:abstract>

    <dcterms:abstract>Interest in measuring consumers’ perceived wellbeing in a food-related context has grown in the last
decade. Considering that wellbeing is one of the most important goals that people pursue to achieve a
good life, studying the influence of food on this construct can contribute to our understanding of how eating
behavior patterns are shaped. The conceptualization of wellbeing and the influence of specific food
products on different aspects of this construct are expected to vary with consumers’ cultural background.
The present work aimed to investigate cross-cultural differences in perceived wellbeing of food products
and to link those differences to product-specific consumer evaluations. A web-based study was carried
out with 1332 participants in seven countries on four continents: Brazil, China, France, Portugal, Spain,
Uruguay and USA. Nine food concepts (apple, beef, beer, broccoli, chocolate cake, coffee, fish, French fries
and milk) were presented to participants by means of an incomplete balanced design. For each concept,
participants gave their degree of agreement with 31 statements of a new wellbeing questionnaire, using a
7-point scale. The scores of the 31 items of the scale were significantly affected by country and food
concept, as well as through their interaction. The largest differences among products were found for
items related to physical and intellectual aspects of wellbeing, whereas the largest differences among
countries were found for items related to emotional and spiritual aspects. Results from this research provide
insights for measuring consumers’ perception of the influence of foods on wellbeing and highlight
the importance of taking into account cultural differences in the conceptualization of this construct</dcterms:abstract>

    <dcterms:abstract>
The aim of this work was to evaluate the physicochemical and biological properties of docetaxel (DCX) loaded chitosan nanocapsules (CS Nc) functionalized with the monoclonal antibody Chi-Tn (CS-PEG-ChiTn mAb Nc) as a potential improvement treatment for cancer therapy. The Tn antigen is highly specific for carcinomas, and this is the first time that such structure is targeted for drug delivery. The nanocapsules (Ncs), formed as a polymeric shell around an oily core, allowed a 99.9% encapsulation efficiency of DCX with a monodispersity particle size in the range of 200 nm and a high positive surface charge that provide substantial stability to the nanosystems. Release profile of DCX from Ncs showed a sustained and pH dependent behavior with a faster release at acidic pH, which could be favorable in the intracellular drug delivery.We have designed PEGylated CS Nc modified with amonoclonal antibody which recognize Tn antigen, one of themost specific tumor associated antigen. A biotin-avidin approach achieved the successful attachment of the antibody to the nanocapsules. Uptake studies and viability assay conducted in A549 human lung cancer cell line in vitro demonstrate that ChiTn mAb enhance nanoparticles internalization and cell viability reduction. Consequently, these ChiTn functionalized nanocapsules are promising carriers for the active targeting of DCX to Tn expressing carcinomas.
</dcterms:abstract>

    <dcterms:abstract>Temporal Check-All-That-Apply (TCATA) is a multi-attribute temporal approach that extends CATA questions. It is based on continuous selection of the sensory attributes that are perceived as applicable for describing a focal sample during consumption. Compared to CATA, TCATA is a relatively intense and demanding task for consumers who have to focus their attention on the evolution of the sensory characteristics of samples during consumption. The present work evaluated a short familiarization step (7–10 min) where participants became acquainted with the list of sensory terms and applied these to a practice sample using a CATA task and also completed a TCATA task using a warm-up sample. All participants, including those who did not take part in the familiarization step, watched a demonstration video that explained how to use the TCATA software and to complete the task. Three consumer studies, each involving ∼100 participants, were conducted using dried apricots, peanuts, and milk chocolate. The TCATA curves when data were collected with and without the familiarization step were not systematically different. However, a small increase in sample discrimination was established and on this basis familiarization should be considered when using TCATA with consumers. A need to explore other familiarization protocols than the one used here exist in order to develop guidelines for implementation.</dcterms:abstract>

    <dcterms:abstract>People do not usually process all the available information on packages for making their food choices and rely on heuristics for making their decisions, particularly when having limited time. However, in most consumer studies encourage participants to invest a lot of time for making their choices. Therefore, imposing a time-constraint in consumer studies may increase their ecological validity. In this context, the aim of the present work was to evaluate the influence of a time-constraint on consumer evaluation of pomegranate/orange juice bottles using rating-based conjoint task. A consumer study with 100 participants was carried out, in which they had to evaluate 16 pomegranate/orange fruit juice bottles, differing in bottle design, front-of-pack nutritional information, nutrition claim and processing claim, and to rate their intention to purchase. Half of the participants evaluated the bottle images without time constraint and the other half had a time-constraint of 3 s for evaluating each image. Eye-movements were recorded during the evaluation. Results showed that time-constraint when evaluating intention to purchase did not largely modify the way in which consumers visually processed bottle images. Regardless of the experimental condition (with or without time constraint), they tended to evaluate the same product characteristics and to give them the same relative importance. However, a trend towards a more superficial evaluation of the bottles that skipped complex information was observed. Regarding the influence of product characteristics on consumer intention to purchase, bottle design was the variable with the largest relative importance in both conditions, overriding the influence of nutritional or processing characteristics, which stresses the importance of graphic design in shaping consumer perception.</dcterms:abstract>

The aim of the present work was to evaluate the influence of two FOP nutrition labelling schemes - the traffic light labelling and the warning scheme - on consumer food purchases when facing a health goal. The study was conducted with 1182 people from Montevideo (Uruguay), recruited using a Facebook advertisement. Participants were randomly allocated to one of three between-subjects experimental conditions: (i) a control condition with no FOP nutrition information, (ii) FOP nutrition information using a modified version of the traffic light system including information about calorie, saturated fat, sugars and sodium content per portion, and (iii) FOP nutrition information using the Chilean warning system including separate signs for high calorie, saturated fat, sugars and sodium content. Respondents were asked to imagine that they had to purchase food in order to prepare a healthy dinner for themselves and their family, using the website of an online grocery store. Results showed that FOP nutrition information effectively improved the average healthfulness of participants' choices compared to the control condition, both in terms of the average nutritional composition of the purchased products and expenditure in specific product categories. No relevant differences between the effect of the traffic light and the warning system were found.</dcterms:abstract>

    <dcterms:abstract>
BACKGROUND: The aims of the present study were to study the influence of information about the source of two functional ingredients (antioxidants and fibre) on consumer perception of functional milk dessert concepts and to evaluate whether this influence depends on consumer attitudes towards health and hedonic characteristics of foods.

RESULTS: Scores for expected liking decreased when information about the source of fibre or antioxidants was incorporated, which could be explained considering that when consumers knew the source of the functional ingredient they imagine the flavour of the source in the milk concept. This decrease in expected liking led to a decrease in consumer willingness to purchase, showing the importance of hedonic expectations on the acceptance of functional foods. Consumers with different attitudes towards health and hedonic characteristics of foods reacted differently towards information about the source of functional ingredients.

CONCLUSION: Providing information about the source of functional ingredients would not be recommended as it might create negative taste expectations to consumers and a concomitant decrease in their willingness to purchase. These show that consumers would not compromise on the taste of milk desserts for health. Thus, the development of functional foods that taste worse than conventional ones may be a risky option.
</dcterms:abstract>

    <dcterms:abstract>OBJECTIVE: To evaluate the impact of message framing on attitudes towards messages aimed at promoting the use of nutritional warnings, behavioural intention and actual behaviour, evaluated through visual attention to nutritional warnings and the choice of a snack product during a real choice task. DESIGN: Following a between-subjects design, participants were exposed to loss-framed nutrition messages, gain-framed nutrition messages or non-nutrition-related messages (control group). After evaluating the messages, participants were asked to select a snack product as a compensation for their participation. The experiment was conducted using an eye tracker. SETTING: Montevideo (Uruguay). PARTICIPANTS: Convenience sample of 201 people (18-51 years old, 58 % female). RESULTS: The average percentage of participants who fixated their gaze on the nutritional warnings during the choice task was slightly but significantly higher for participants who attended to nutrition messages (regardless of their framing) compared with the control group. Participants who attended to loss-framed messages fixated their gaze on the warnings for the longest period of time. In addition, the healthfulness of the snack choices was higher for participants exposed to nutrition-related messages compared with the control group. CONCLUSIONS: Results from the present work suggest that nutrition messages aimed at increasing awareness of nutritional warnings may increase consumers' visual attention and encourage more heathful choices. The framing of the messages only had a minor effect on their efficacy.</dcterms:abstract>

    <dcterms:abstract>Emoji are increasingly popular in computer-mediated communications, and people often use them spontaneously. This indicates a potential to harness emoji for use in consumer research. However, little is known about how consumers interpret emoji and what meanings are associated to different emoji. In a study of 33 facial emoji, conducted with Chinese consumers (n = 1084), the present research begins to close this knowledge gap. Data were collected in an online survey that asked participants to select words they perceived as being applicable for describing the emotional meaning of the emoji (CATA question with 39 terms). The studied emoji spanned a broad range of emotions, which varied in valence (e.g., smiling face vs. angry face) and arousal (e.g., sleepy face and face with stuck out tongue and winking eye). A strong association with one emotion/mood was established for 15 emoji, and associations of lesser strength with several but related emotions/moods was established for 10 emoji. The remaining eight emoji were associated with different moods and emotions, indicating multiple and unrelated meanings. Emoji with similar facial expression had largely similar meanings (e.g., neutral face and expressionless face; and the different smiling face emoji). For most emoji, consumers’ interpretations corresponded to meanings listed in internet resources, and there was also concordance between the empirical results and the internet meanings with regard to multiple words being applicable to describing every emoji. Validation of the established meanings is required, and in the future consideration should be given to agreement/disagreement among consumers in emoji meaning. Extension of the research to other consumer populations and emoji is needed.</dcterms:abstract>

    <dcterms:abstract>
Undoped and Ce and Eu doped glasses and glass ceramic materials with nominal composition 33 % PbO 67 % B203 (% in mol), were obtained by melting/quenching technique. Glass ceramics were obtained by subsequent crystallization of glass samples. Glass samples were characterized by Inductively Coupled Plasma (ICP), Differential Thermal Analysis (DTA), Fourier Transform Infrared Spectrometry (FTIR) and UV-Vis spectrometry. Glass-ceramics were characterized by X-Ray Powder Diffraction, and by measuring their therluminescence response as a function of 90Sr irradiation dose. from a lead borate glass intended for thermoluminescence dosimetry, as far as to study the effects that crystallization and Eu and Ce doping produce on their thermoluminescence response. PbB407 was found as the only crystalline phase in doped and undoped glassceramics. Ce-doping was found to give a narrower bandgap than Eu one, and also introduces new electronical states. Crystallization clearly increases the thermoluminescence response, while undoped material gives higher response up to 20 Gy, although Ce-doping gives linearity up to 35 Gy and a higher response above 20 Gy. Among the studied samples, lead borate glass-ceramics, Ce-doped and undoped, present the best performance and they are then promising materials for thermoluminescence dosimetric applications
</dcterms:abstract>
