    <dcterms:abstract><![CDATA[&ldquo;Antifungal effect of Schinus molle L., Anacardiaceae, and Schinus terebinthifolius Raddi, Anacardiaceae, essential oils of Rio Grande do Sul&rdquo;. One of the alternatives to reduce the use of pesticides may be the use of essential oils to control diseases and pests that affect agricultural production. The purpose of this study was to evaluate the fungicide effect of essential oils of Schinus molle L. and Schinus terebinthifolius Raddi, native species widely distributed in the region. The oils were extracted by hydro distillation and analyzed by gas chromatography. The phytopathogenic fungi Alternaria spp., Botrytis spp., Colletotrichum spp. and Fusarium spp., were isolated from &ldquo;gerberas&rdquo; and roses with symptoms of disease and antifungal activity of the tests were carried out by the technique of spreading disk. The data was analyzed by Tukey and Duncan tests to 5%. In general, the essential oil of S. molle was effective for the four fungi tested, for the four dilutions used and for all the times evaluated. The essential oil of S. terebinthifolius presents more pronounced fungicide effect against Botrytis spp., from in vitro tests.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Chagas disease is a neglected tropical disease caused by the protozoan parasite Trypanosoma cruzi. It is estimated that 6 million people are infected in Latin America. Current treatment is not effective due to the severe side effects and the limited efficacy towards the chronic phase of the disease. Considering the growing need for specific anti-Trypanosoma cruzi drugs, organometallic Pt and Pd based compounds were previously synthesized. Although the Pt-based compound effects on T. cruzi death have been reported, no mechanism of action has been proposed for the Pd-based analogous compound. In this work, we determined excellent to very good values of IC50 and SI. To analyze the compound mode of action, we measured Pd uptake and its association to the macromolecules of the parasite by electrothermal atomic absorption spectrometry. We found a poor uptake, which reaches only 16% after 24 h of incubation using 10&times; IC50, being the scarce incorporated metal preferentially associated to DNA. However, this compound has a trypanocidal effect, leading to morphological changes such as shortening of the parasite cell body and inducing necrosis after 24 h of treatment. Furthermore, this compound impairs the parasite development in the host both at the trypomastigote infection process and the intracellular amastigotes replication. In conclusion, our findings support that Pd-dppf-mpo compound constitutes a promising anti-T. cruzi compound effective against the chronic phase of the disease.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Soybean glycinin [11S] was modified by an acidic pH treatment to improve its emulsifying properties. Glycinin was obtained by isoelectric precipitation (11Sn) and then treated with acid (11St). The oil&ndash;water interfacial tension and rheology were measured. The rate constants of adsorption (ka) and rearrangement (kr) of proteins at the interface and the dilational (E), elastic (Ed), and viscous modulus (Ev) of the protein interfacial film were determined. Particle size distribution (PSD), interfacial protein concentration (&Gamma;), and the creaming destabilization rate constants ks (for the smaller droplets) and kl (for the larger droplets) were analyzed in oil‐in‐water emulsions (25% v/v of oil and 75% v/v of 1 mg/mL protein solution in 10 mM sodium phosphate buffers, pH 7.0 and 2.5, respectively). Compared to the native protein, the acid treatment caused irreversible denaturation of 11S and significantly increased Г, ka, E, Ed, and Ev (P &le; 0.05), resulting in a greater rate of protein adsorption to the interface and a stronger interfacial film. PSD showed a bimodal distribution with peaks above and below 4 &mu;m. Smaller droplets moved toward smaller diameters for 11St. It also showed lower values of creaming destabilization constants ks (d &le; 4 &mu;m) and kl (d &ge; 4 &mu;m) than 11Sn. In conclusion, acid treatment of 11S enhances the creaming stability of its emulsions by improving the interfacial properties and reducing the droplet size.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The goal of the present work was to study the effects of acid treatment on the foaming properties of a soybean protein isolate (SPI) and its fractions, glycinin (11S) and &beta;-conglycinin (7S). The structural characteristics, interfacial properties, foaming capacity and stability of the treated proteins were studied. Results from surface hydrophobicity and differential scanning calorimetry (DSC) showed that the acid treatment caused the complete denaturation of 11S and a partial denaturation of 7S. This protein unfolding affected their interfacial properties, which led to an improvement in the foaming properties of both protein fractions and isolate. Treated 7S showed the best behavior in the rearrangement process, probably due to its smaller size and its modified structural characteristics. All treated proteins showed stronger interfacial films. The foams of treated proteins were destabilized mostly due to gravitational drainage rather than Ostwald ripening.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[BACKGROUND: The global beef market demands the meat industry to ensure product quality and safety in markets that are often very distant. The present study aimed to evaluate the effects of chilled (CH, 120 d) and chilled-then-frozen (CHF, 28 d + 92 d) storage conditions of beef vacuum packaged (VP) and vacuum packaged with antimicrobial (VPAM) on meat quality, oxidative status and microbial loads. Treatments resulted from the combination of storage condition and packaging type: VP + CH, VP + CHF, VPAM + CH and VPAM + CHF. RESULTS: Warner&ndash;Bratzler shear force values decreased in all treatments after 28 d of chilling. Except for VP + CH, L* values (lightness) of meat color did not differ in each treatment as the storage time increased. Meat from VP + CH had greater a* values than CHF treatments on day 120 of storage. A consumer panel did not detect differences in tenderness, flavor and overall liking between VP and VPAM beef, but they preferred CHF steaks rather than CH beef. TBARS values did not differ between VP and VPAM and between CH and CHF at any time during the storage period. At the end of storage time, all treatments except VP + CHF presented a greater concentration of thiols than at 48 h post-mortem. On day 120 of storage, VP + CH had greater cat alase enzyme activity than CHF treatments while VP + CH and VP + CHF showed a greater superoxide dismutase activity than VPAM + CHF. Storage condition (CH or CHF) had a greater impact on microbial counts than the type of packaging. CONCLUSION: Freezing meat after an ageing period represents a suitable strategy to extend beef storage life without a detri mental impact on its quality.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The objective of this work was to obtain water-in-oil (w/o) emulsions with polyglycerol polyricinoleate (PGPR) as emulsifier and to study the effect of the addition of calcium in the dispersed aqueous phase on the stability of these systems. Emulsions were formulated with 0.2, 0.5 and 1.0% w/w PGPR and 10% w/w water containing calcium chloride at varied concentrations or other salts (calcium lactate or carbonate; sodium, magnesium or potassium chloride). The stability of these systems was studied with a vertical scan analyzer during 15 days; coalescence and sedimentation were observed as simultaneous destabilization processes. The increase of PGPR concentration and/or calcium chloride content gave more stable emulsions. The stabilizing effect of calcium salt was attributed to the diminution of the water droplets size, the decrease of the attractive force between water droplets and the increase of the adsorption density of the emulsifier. The viscoelastic parameters of the interfacial film were decreased with increasing calcium and PGPR concentrations. Calcium chloride produced a higher increase of stability than calcium salts with lower dissociation degree. The presence of any assayed salt in the aqueous phase also allowed the stabilization of w/o emulsions with higher water contents.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Nowadays a rational design of solid oxide fuel cells (SOFCs) cathodes is possible thanks to first-principles calculations based on density functional theory (DFT). We study the effect of Cu-doping in the bulk properties for the perovskite Ba0.5Sr0.5Fe1-xCuxO3-&delta; (with x = 0, 0.25 and 0.50) and correlate the results with previous experimental characterization. Bulk properties such as geometric structure, charge analysis, thermodynamic stability, vacancy formation energy, oxygen diffusion and electronic structure where studied in detail to provide an explanation of the oxygen reduction reaction (ORR) activity enhancement with Cu-doping. The results obtained here, using GGA+U, demonstrate the first-principles approach gives useful information that allows the prediction and explanation of experimental characterizations.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>Biocontrol agents such as parasitic wasps use long-range volatiles and host-associated cues from lower trophic levels to<br />find their hosts. However, this chemical landscape may be altered by the invasion of exotic insect species. The spotted-wing drosophila (SWD), Drosophila suzukii (Diptera: Drosophilidae), is a highly polyphagous fruit pest native to eastern Asia and recently arrived in South America. Our study aimed to characterize the effect of SWD attack on the volatile organic compounds (VOCs) of blueberries, a common host fruit, and to correlate these odor changes with the olfactory-mediated behavioral response of resident populations of Trichopria anastrephae parasitoids, here reported for the first time in Uruguay. Using fruit VOC chemical characterization followed by multivariate analyses of the odor blends of blueberries attacked by SWD, we showed that the development of SWD immature stages inside the fruit generates a different odor profile to that from control fruits (physically damaged and free of damage). These differences can be explained by the diversity, frequency, and amounts of fruit VOCs. The behavioral response of T. anastrephae in Y-tube bioassays showed that female wasps were significantly attracted to volatiles from SWD-attacked blueberries when tested against both clean air and undamaged blueberries. Therefore, T. anastrephae females can use chemical cues from SWD-infested fruits, which may lead to a successful location of their insect host. Since resident parasitoids are able to locate this novel potential host, biological control programs using local populations may be plausible as a strategy for control of SWD.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[We report a study on the preparation and characterization of polyaniline-graphene oxide (PANI-GO-X) nanocomposites focusing in the study of its structure, microstructure, and correlations with electrical transport properties under low applied electric fields. X-ray diffraction analysis showed evidence of graphene oxide (GO) blending between polyaniline fibers, and according to small angle X-ray scattering, the fractal dimensionality was quasi-one dimensional for all nanocomposites. Confocal Raman spectroscopy revealed that the addition of GO leads to a notorious decrease of the polaron population of polyaniline. A significant increase in resistivity was observed for PANI-GO-X nanocomposites with respect to pure polyaniline, in agreement with the decrease in the polaron population. The electrical transport mechanism could be explained by an Arrhenius behavior at high temperatures (T&thinsp;&gt;&thinsp;255&thinsp;K) and a broad transition with a logarithmic dependence of the activation energy with temperature for the low temperature regime (T&thinsp;&lt;&thinsp;255&thinsp;K). Additionally, an increase in the hopping transport dimensionality from quasi-1D to quasi-3D was observed for X&thinsp;=&thinsp;7% GO nanocomposites. The transport properties, studied after the polarization using low applied electric fields, revealed the modification of the electrical transport at low temperatures. In addition, the electrical transport of PANI-GO-X nanocomposites followed a typical ln(&sigma;) vs E1/2 Poole-Frenkel type dependence in the presence of low applied electric fields. At low temperatures, X&thinsp;=&thinsp;7% GO nanocomposites showed a notorious increase in the Poole-Frenkel slope at low applied electric fields with respect to pure polyaniline. The enhancement on the electric response using low applied electric fields (E&thinsp;&sim;&thinsp;2&thinsp;V/cm) could be of great interest for the development of new organic electronic devices.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The action of HCS and HCG on cell-mediated immunity has been investigated. Full-thickness skin homografts were performed in 40 whole adult female Wistar rats. Brown rats of the A X C strain were selected as donors. The animals were divided into four groups injected with HCS, HCG, HCS + HCG, and saline. The graft rejection time and the wet and dry weight of thymus and spleen were evaluated. No hormonal treatment showed any effect on skin graft survival. Thymus weight, both wet and dry, decreased significantly by treatment with HCP or HCS + HCG. No modification was observed in spleen weight. These results do not agree with the theory that HCS and HCG modify immunological competence of maternal lymphocytes and thus may contribute to prevent rejection of the fetus.<br /><br />]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The effect of increasing concentration of co-solvents on the stability of both soluble and immobilized E. coli -galactosidase was studied. The enzyme was immobilized on to glutaraldehyde-agarose and the co-solvents tested were: N,N-dimethylformamide (DMF), ethanol, acetone, and dioxane (6&ndash;36% v/v). Deactivation kinetics were analyzed according to the two-step deactivation model proposed by Henley and Sadana. A multi-temperature study revealed that the immobilized derivative is considerably more stable than the soluble enzyme, even at high temperature where the half life of the soluble enzyme is less than 1 h. Enzyme immobilization did achieve thermal and solvent stabilization at low concentrations, but this task proved more difficult with increasing co-solvent concentrations. In the case of ethanol and acetone, with the increase in co-solvent concentration, the immobilized derivative became less stable than the soluble enzyme. Immobilization may impose certain constraints on the protein structure which have the effect of sensitizing it to denaturation at high co-solvent concentrations. Complementary stabilization strategies are, therefore, being studied.]]></dcterms:abstract>

In 2011, nitrogen treatment involved both foliar urea sprayings and soil application at two different levels, with two controls - irrigated without nitrogen and no irrigation nor nitrogen. In 2012, the same grapevines received either soil or foliar nitrogen using the same controls. Results showed that foliar application increased the amino acid content to a greater extent than soil application, but that a combination of both was the most effective. For the first time, significantly elevated proline levels in response to drought were demonstrated for the grapevine. Increased contents of aromatic compounds and glycosylated precursors closely mirrored the applied nitrogen dose. Wines produced from N-fertilized Syrah grapes in 2011 showed a statistically significant effect of irrigation and fertilization on positive sensorial perception.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Descriptive sensory profiles of Uruguayan Tannat wines following malolactic fermentation (MLF) with Oenococcus oeni were compared with control wines where MLF was prevented. MLF led to a significant decrease (P &lt; 0.05) in secondary descriptors such as &lsquo;berry fruit&rsquo; and &lsquo;fresh vegetative&rsquo;, as well as a decrease in related tertiary descriptors such as &lsquo;blackcurrant&rsquo;, &lsquo;apricot&rsquo;, &lsquo;cut green grass&rsquo; and &lsquo;green pepper&rsquo;. The main differences in the chemical composition of Tannat wine aromas following MLF were (1) an increase of the lactates (mainly ethyl lactate) over the sensory threshold; (2) a significant decrease in ethyl esters and acetates, depending on the bacteria strain utilised (the most significant change was found in hexyl acetate), and (3) a small increase of 4-vinylguaiacol and 4-vinylphenol with one of the MLF strains (this change was below the threshold of human perception). We also observed an increase of compounds related to &alpha;-ketoglutarate metabolism, namely: ethyl 4-hidroxibutanoate and &gamma;-butyro-lactone. Differences in chemical composition due to MLF are discussed in relation to variation in sensory profiles.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Suitable conditions of temperature and humidity are required to maintain wheat grains quality, but during processing and storage, the grains can be exposed to adverse environmental conditions and presence of infectious fungi. Fusarium graminearum, the main causal agent of Fusarium head blight on wheat, affects crop yields and grain quality by alteration of their biochemical components and mycotoxin contamination, which reduces the possibilities of wheat end use and compromises food safety. Lipid degradation by hydrolytic, oxidative and microbial deterioration is the predominant cause of the loss of sensory acceptability, nutritional value and baking quality. The aim of this research was to determine the influence of adverse environmental conditions &ndash;as the increasing moisture &ndash; on lipid patterns of whole wheat flours contaminated with F. graminearum in relation to the infection degree. In vitro cultures of F. graminearum were carried out on wheat grains under different degrees of relative humidity (11, 50, 75 and 100%) throughout 45 days of incubation at 28 &deg;C. The fungal biomass measured by q-PCR increased proportionally with the humidity. A decrease in the signals of saturated (palmitic and estearic) and unsaturated (oleic, linoleic and linolenic) fatty acids, analyzed as fatty acid methyl esters (FAMEs) by GC&ndash;MS, was observed in relation with the humidity and infection degree. The degradation rate of the lipids was high during the first 15 days of incubation, reaching the fatty acids content, values around 20&ndash;40% of those found in the control. From that moment on, the rate of degradation was slower or even null. It was observed that in all treatments, the linolenic acid reached the highest degradation ratio in comparison with the other fatty acids, which may be caused by the action of lipoxygenases. The lipase activity and the content of deoxynivalenol were also determinate on the flours. The lipase activity increased until day 25 of incubation reaching twice the initial value. The deoxynivalenol content also increased along incubation while fatty acids decreased. Our results demonstrated that the magnitude in the signal of fatty acids in whole wheat flours varied in relation to the degree of humidity and fungal infection of the grains from which they were obtained. Otherwise, lipids and their oxidation products are related with the pathogenesis and production of mycotoxins. These observations highlight the importance of an adequate manipulation of wheat grains on the processing chain to prevent quality changes and mycotoxins contamination.]]></dcterms:abstract>

The production of alcoholic beverages with improved flavor has been a matter of interest for industry since centuries. Saccharomyces cerevisiae is the main yeast species involved in alcoholic fermentation. However, in the last decades the search of new aroma for beverages has made the producers to focus on those non S. cerevisiae yests commonly named as non-conventional yeasts.     <dcterms:abstract><![CDATA[Effect of a combined power ultrasound (US) and chlorine disinfection treatment on quality of fresh-cut ready-to-eat lettuce (cv. Vera) was evaluated. Fresh-cut lettuce was disinfected using 100 mg L&minus;1 NaOCl solution alone and in combination with ultrasound (130 W, 42 kHz) for different times (0&ndash;30 min). Lettuce samples (80 g) were then packaged in polypropylene (PP) film and stored at 5 &deg;C for 8 d. Application of US improved microbial reduction on processing day: an additional reduction in the range of 0.5&ndash;2.5 log cfu g&minus;1 was obtained with respect to NaOCl treatment alone. Combined US-NaOCl application did not cause visual changes to lettuce neither on processing day nor when samples were stored under refrigerated conditions in passive modified atmosphere. Confocal images evidenced that US application could affect lettuce surface wax layer, removing its natural defense against microorganisms. This resulted in higher microbial growth throughout storage in samples treated with combined US-NaOCl treatment. US appears as a promising technique for fresh-cut produce disinfection, but further studies are needed to optimize US treatment to allow important microbial reductions throughout all storage time without compromising lettuce shelf life during refrigerated storage.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The effect of praziquantel (PZQ) on the strobilar development of the cyclophyllidean cestode Mesocestoides corti was explored. Mesocestoides corti larvae were cultivated under conditions reported to favour their differentiation to the adult stage. Parasites were exposed to 0.1 microg ml(-1) PZQ for 16 h and subsequently transferred to drug-free medium. The ocurrence of segmentation--an early event of the larval somatic differentiation to the adult worm-- was considered as quantitative data. This phenomenon was evidenced earlier in worms transiently exposed to PZQ with respect to control cultures. Moreover, the rate of segmentation of drug-treated worms at the end of the experiment almost doubled that of control worms. To date, no similar effect on any cestode developmental process has been reported for an anthelmintic drug. In the light of the existing knowledge and understanding of PZQ mechanisms of action, the proposed experimental approach could contribute to the elucidation of pathways and mechanisms involved in cestode strobilar development.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[A study on the effect of the addition of 1 at-% noble elements such as Pt, Pd, Ag and Au on the oxidation resistance of Fe3Al intermetallic alloy has been carried out at 900, 1000 and 1100&deg;C during 100 h. For comparison, the same tests were performed on a Ni-base alloy type Inconel 600. At all the tested temperatures, parabolic growth rate was observed for the different alloys. The effect of the different noble elements was not unique at the different tested temperature. Thus, at 900&deg;C, addition of Ag increased the mass gain, whereas Pd decreased it; at 1000&deg;C, however, the opposite was true. At 1100&deg;C, the mass gain was decreased by adding Pt, but Pd was very detrimental. In most of the cases, the scales were predominantly formed by Al2O3 with minor amounts of Fe2O3. Scale spallation was found when the noble elements were randomly distributed on the surface, but when they were finely distributed, the scale did not spall. In all cases, the mass gain for Fe3Al alloy was lower than Inconel 600 type alloy.]]></dcterms:abstract>
