<dcterms:abstract>By means of coupled cluster theory and correlation consistent basis sets we investigated the thermochemistry of dimethyl sulphide (DMS), dimethyl disulphide (DMDS) and four closely related sulphur-containing molecules: CH3SS, CH3S, CH3SH and CH3CH2SH. For the four closed-shell molecules studied, their enthalpies of formation (EOFs) were derived using bomb calorimetry. We found that the deviation of the EOF with respect to experiment was 0.96, 0.65, 1.24 and 1.29 kcal/mol, for CH3SH, CH3CH2SH, DMS and DMDS, respectively, when ΔHf,0 = 65.6 kcal/mol was utilised (JANAF value). However, if the recently proposed ΔHf,0 = 66.2 kcal/mol was used to estimate EOF, the errors dropped to 0.36, 0.05, 0.64 and 0.09 kcal/mol, respectively. In contrast, for the CH3SS radical, a better agreement with experiment was obtained if the 65.6 kcal/mol value was used. To compare with experiment avoiding the problem of the ΔHf,0 (S), we determined the CH3–S and CH3–SS bond dissociation energies (BDEs) in CH3S and CH3SS. At the coupled cluster with singles doubles and perturbative triples correction level of theory, these values are 48.0 and 71.4 kcal/mol, respectively. The latter BDEs are 1.5 and 1.2 kcal/mol larger than the experimental values. The agreement can be considered to be acceptable if we take into consideration that these two radicals present important challenges when determining their EOFs. It is our hope that this work stimulates new studies which help elucidate the problem of the EOF of atomic sulphur.</dcterms:abstract>

    <dcterms:abstract>Herein, we have employed dispersion corrected density functional theory to study the performance of modified subphthalocyanines and dibenzo[a,g]corannulenes as fullerene receptors. Analysis of the interaction energies and structures of the catchers revealed that subphthalocyanines display excellent ball–socket interactions with C60 and C70. However, dibenzo[a,g]corannulene showed an excellent fit only with C70, as indicated by recent experimental results. Functionalization of subphthalocyanines with long thioalkyl chains increases the interaction energies between receptors and fullerenes. Yet, the effect on the association constant is negligible, and in some cases it can be even harmful, because the long alkyl chains introduce large entropic penalties, which are translated into a small improvement of the free energy changes. We propose a new subphthalocyanine based receptor which bears three 1,4-dithino groups at the peripheral region. The new host has a strong affinity towards C60 and C70, as indicated by theoretical calculations, which showed a large change in free energy when the above-mentioned modification is considered. In spite of the fact that long alkyl chains seem not to be useful in improving the binding affinity of several receptors, we have found that the addition of small ethyl chains to dibenzo[a,g]corannulene increases the affinity of the bowl towards fullerenes. Nevertheless, new functional groups must be attached in places where the stacking interaction between the host and the guest is barely affected; otherwise the loss of π stacking should be compensated by the new functional groups.</dcterms:abstract>

    <dcterms:abstract>By means of first principle calculations, we have performed a theoretical characterization of the stability and electronic properties of sheets and nanoribbons that were recently synthesized employing octafunctionalized biphenylenes as building blocks. We found that the biphenylene sheet has a strong metallic character that is difficult to inhibit employing low levels of functionalization. Hydrogenation at full coverage induces a metal to insulator transition, but the band gap opened is very large, i.e., 6.6 eV. When other functional groups such as fluorine or chlorine are attached, the band gap can be regulated. The most effective chemical modification, in terms of gap opening, is the combination of hydrogen/chlorine or fluorine/chlorine. For the latter functional groups, band gaps similar to those of rutile were calculated at the HSEH1PBE/6-31G* level of theory. The biphenylene sheet functionalized on one side with fluorine and with chlorine on the other presented a CC bond length equal to 1.76 Å, one of the longest reported up to date. In contrast with recent claims, we found that, for armchair biphenylene nanoribbons, the twist induced by the functionalization of the edges does not increase the band gaps of the nanoribbons. Moreover, in some cases the gaps were reduced as we observed when the edges where saturated with hydrogen atoms. Finally, the high reactivity of the sheet indicated that it is may have promising applications in catalysis.</dcterms:abstract>

    <dcterms:abstract>By means of coupled cluster and density functional M06-2X calculations we have studied the directionality and energetics of the hydrogen bond (HB) between halides and the following H donors: methane, ethylene, and acetylene. The largest interaction energy was obtained for acetylene, the molecule in which the hydrogen atoms present the largest positive charge. For the complex [XHCCH]-, fluoride presented a different behavior since acetylene donates a hydrogen to fluoride and the [HFCCH]- complex was formed. We found that for ethylene there is a strong competition between the monodentate- and bidentate-like structures. Because of its small size, fluoride leads to a monodentate complex with C2H4. However, as we move down in the periodic table, the bidentate-like structure becomes more stable. In effect, for chloride and bromide they are nearly isoenergetic, while for iodide the bidentate-like complex is formed. These present results question previous investigations about the directionality of the HB in halide–ethylene complexes</dcterms:abstract>

Ga- and As-doped graphene display a reactivity that is larger than that corresponding to a double vacancy. They can decompose H2 and O2 easily. Variation of the type and concentration of dopant makes the adjustment of the interlayer interaction possible. In general, doping of monolayer graphene opens a band gap. At some concentrations, Ga doping induces a half metallic behavior. As is the element that offers the widest range of gap tuning. Heyd–Scuseria–Ernzerhof calculations indicate that it can be varied from 1.3 to 0.3 eV. For bilayer graphene, the doped sheet induces charge redistribution in the perfect underneath sheet, which opens a gap in the range of 0.05–0.4 eV. This value is useful for developing graphene-based electronics, as the carrier mobility of the undoped sheet is not expected to alter.</dcterms:abstract>

    <dcterms:abstract>We have employed density functional theory to study and characterize a new family of belt shaped molecules which use the norbornadiene tether and aromatic molecules as linkers. Our results indicated that the inclusion of the norbornadiene unit eliminates the strain commonly associated with the synthesis of belt-shaped molecules. Polymerization of the latter proved to be an effective method towards the bottom-up synthesis of organic nanotubes with uniform properties. The band gap of the infinite nanotubes proposed can be engineered by changing the molecule which links the norbornadiene tethers. In effect, the gap of the pyrene/norbornadiene and coronene/norbornadiene based nanotubes were 2.9 eV and 0.9 eV, respectively, as indicated by HSE calculations. Among the six belts assayed, two can be used to separate the magic fullerenes C180 and C240, given that large interaction energies were found upon complexation</dcterms:abstract>

    <dcterms:abstract>We have investigated the polyoxides HOOH, HOOOH, HOOOOH, and HOOO employing the CCSD(T) methodology, and the correlation consistent basis sets. For all molecules, we have computed fundamental vibrational frequencies, structural parameters, rotational constants, and rotation-vibration corrections. For HOOOH, we have obtained a good agreement between our results and microwave and infrared spectra measurements, although for the symmetric OO stretch some important differences were found. Heats of formation were computed using atomization energies, and our recommendation is as follows: ΔHo f,298(HOOOH) ) -21.50 kcal/mol and ΔHo f,298(HOOOOH) ) -10.61 kcal/mol. In the case of HOOO, to estimate the heat of formation, we have constructed three isodesmic reactions to cancel high order correlation effects. The results obtained confirmed that the latter effects are very important for HOOO. The new ΔHo f,298(HOOO) obtained is 5.5 kcal/mol. We have also calculated the zero-point energies of DO and DOOO to correct the experimental lower limit determined for the ΔHo f,298(HOOO). The Δ(ΔZPE) decreases the binding energy of HOOO by 0.56 kcal/mol. Employing the latter value, the new experimental lower limit for ΔHo f,298(HOOO) is 3.07 kcal/mol, just 2.4 kcal/mol lower than our determination. We expect that the fundamental vibrational frequencies and rotational constants determined for HOOOOH and DOOOOD contribute to its identification in the gas phase. The vibrational spectrum of HOOOOH shows some overlapping with that of HOOOH thus indicating that one may encounter some difficulties in its characterization. We discuss the consequences of the thermochemical properties determined in this work, and suggest that the amount of HOOO present in the atmosphere is smaller than that proposed recently in this journal</dcterms:abstract>

    <dcterms:abstract>Herein, we investigate the chemisorption of hydrogen on double wall carbon nanotubes DWCNT employing density functional theory and periodic boundary conditions. In agreement with recent investigations based on Lennard-Jones potentials, we found that the n,m@n+9,m combination is favored for tubes with small diameters. The C–H binding energies determined for the 16,0 single wall carbon nanotubes SWCNT are nearly identical to those computed for the 7,0@16,0 and 8,0@16,0 DWCNTs. For both of the latter we found that interlayer interaction modifies the band structure of the inner tube. In the case of hydrogenated DWCNTs, the electronic structure of the inner tube experiences very small changes at high coverages 50%. However, at lower hydrogen coverages 3%–25% changes are observed in the electronic structure of the inner tube. In agreement with recent experimental results we conclude that, for heavily functionalized DWCNTs, the electronic properties of the inner tube remain unchanged. For zigzag SWCNTs, the band gap becomes larger upon increase in hydrogen coverage; at 50% of coverage the hydrogenated 16,0 SWCNT has a band gap of 3.38 eV. Finally, based on the fact that high coverages significantly elongate C–H bond distances, we propose that the hydrogenation coverage may be determined measuring the C–H vibrational modes</dcterms:abstract>

    <dcterms:abstract>The addition of SH and OH groups to single-wall carbon nanotubes (SWCNTs) was investigated employing first principles calculations. In the case of the semiconducting (10, 0) SWCNT the SWCNT-SH binding energy is weak, 2–4 kcal/mol. However, for the metallic (5, 5) SWCNT it is larger, 7–9 kcal/mol. Thus metallic SWCNTs seem to be more reactive to SH than the semiconducting ones. Indeed, the (6, 6) SWCNT is more reactive to SH than the (10, 0) SWCNT, by 2–3 kcal/mol, something that can be explained only considering the electronic structure of the tube, because the (6, 6) has a larger diameter. The binding energies are larger for the addition of the OH group, 25 and 30 kcal/mol for the (10, 0) and (5, 5) SWCNTs, respectively. When a single OH or SH group is attached to the metallic SWCNTs, we observe important changes in the DOS at the Fermi level. However, when multiple SH groups are attached, the changes in the electronic and magnetic properties depend on the position of the SH groups. The small binding energy found for the SH addition indicates that the successful functionalization of SWCNTs with SH, SCH3, and S(CH2)nSH groups is mostly due to the presence of defects created after acid treatment and to a minor extent by the metallic tubes present in the samples. Perfect semiconducting SWCNTs showed very low reactivity against the SH group.</dcterms:abstract>

    <dcterms:abstract>Employing first-principle calculations, we have investigated the interaction between graphene and the thioepoxide and thiol groups. The SH radical cannot be chemisorbed on perfect graphene, although it is physisorbed. The chemisorption energy can be increased to 0.4 eV if multiple SH groups are bonded to the sheet or if they are attached to Stones-Wales defects. However, when free-energy corrections are considered, the addition of SH groups to perfect graphene is not spontaneous. In the case of the SW defects, the addition is favorable if two SH groups are attached to the shortest CC bond and in opposite sites of the sheet. The single vacancy defect site has the highest affinity for the SH radical, which is dissociatively attached. Finally, employing nanoribbons, we have simulated the reactivity of bare and hydrogen-terminated edges of graphene. The SH group is dissociatively bonded to bare edges. However, hydrogen-terminated zigzag edges prefer to bind the SH group. Considering the different reactivities observed, the defect sites and edges of graphene can be labeled by employing SH radicals. The sites containing sulfur can be used to attach gold nanoparticles or create vertical arrays of graphene sheets on Au surfaces. Finally, for thioepoxidated graphene, we have determined that the binding energy per S atom is 0.49 eV, larger than that determined for the thiol group but very small to be achieved experimentally because the free-energy change is expected to be close to 0 for this process. These results confirm the experimental evidence, which indicated that the sulfur-containing groups present in sulfur-graphite nanocomposites are attached to the edges of graphite, although vacancy defect sites must be considered. The electronic properties of the functionalized and defective graphene sheets are discussed. As a byproduct, we have found that the free-energy term may turn the attachment of a single HO group to graphene to be not spontaneous. Thus, the OH groups observed in graphene oxide are present at defect sites or agglomerated, to have their binding energy increased due to cooperative effects, confirming earlier experimental results.</dcterms:abstract>

    <dcterms:abstract>Polarized sensory positioning (PSP) is a novel methodology for sensory characterization which is based on the comparison among samples and a set of reference products, called poles. Its main advantage over other holistic methodologies is that results from different sessions can be compared. This is particularly useful when working with samples with persistent flavours, when evaluating a large number of samples over a long period of time, or during quality control. Although the key step of this methodology is the selection of the products to be considered as poles, no studies have been published addressing this issue. In this context, the aim of the present work was to contribute to bridging this gap by studying the influence of the poles on results from sensory characterization of two widely different products (make-up foundations and orange-flavoured powdered drinks) using Polarized Sensory Positioning with consumers. Results from both studies provided preliminary evidence about the stability of sensory spaces obtained with different set of poles (RV coefficients higher than 0.908). However, differences in conclusions regarding similarities and differences among samples were identified between the sets of poles in both studies, suggesting the need to carefully select stable poles for PSP tasks.</dcterms:abstract>

    <dcterms:abstract>Interest in methodologies for sensory product characterization by consumers is increasing, and check-allthat- apply questions (CATA or checklists) have gained some popularity. This research studied bias pertaining to: (i) the order in which sensory attributes are placed within a CATA question, and (ii) the order of a sensory CATA question within an extended product assessment ballot (including product-elicited emotions, purchase intention and overall liking). In three studies including 335 consumers and using fresh fruit as samples, evidence of attribute order bias was established. In each study, two ballot versions were used in a between-subjects design. Primacy effects linked to attribute salience could explain some of the results. For example, differences in frequency of use of an attribute would be higher on the ballot version where it was placed nearer to the top of the list. However, this type of bias was not sufficient to explain all observed effects. It was found that a random ordering of sensory attributes in a CATA question reduced the total frequency of usage of terms compared with when attributes were grouped with similar terms (e.g. flavour/taste terms grouped together and texture terms grouped together). Some evidence was obtained to suggest that listing sensory attributes in the order that approximate the time when they would be perceived during the course of consuming the sample is necessary unless consumers are given explicit instructions to recall all sensory perceptions and evaluate attributes on the list from that point of reference. It was also found that conclusions regarding differences between samples depended on which ballot version was used. Few order effects were uncovered when the sensory CATA question was prior to or subsequent to other product evaluations (product-elicited emotions and purchase intention). There was no significant effect on hedonic scores of the tested products linked to the attribute order within the sensory CATA question. This research can help to inform best practices in the design of CATA questions for sensory product characterization</dcterms:abstract>

    <dcterms:abstract>Research into sensory product characterizations by consumers using CATA (check-all-that-apply) methodology is entering the stage where better understanding is required of ways that CATA question implementation influences sensory profiles and product discrimination. With this aim, five studies were conducted. Focusing on strategies that have been suggested as ways to reduce primacy and order bias in CATA data, this research explored the effect of these initiatives on the elicited sensory product profiles and conclusions drawn with regards to sample differences. The use of within-subjects randomization of CATA terms did not significantly affect frequency of use of CATA terms but significantly affected conclusions regarding differences among samples, compared to the evaluation of multiple samples with CATA ballots where terms are presented in the same order. The use of multiple shorter CATA questions defined by sensory modality also yielded results that significantly differed from when single longer CATA questions with terms from multiple sensory modalities were used. CATA question length and the use of single/ mixed sensory modalities both appeared to be contributing factors to these differences. ‘Dynamics of sensory perception’, which refers to effects on CATA results arising when CATA terms are assessed in the sensory evaluation process (during/after sample consumption) was confirmed as a source of bias. A key learning from this research was that sensory product characterization and differences among samples are subject to multiple minor biases related to how the question is formulated and that the exact experimental conditions under which CATA data are generated should be reported.</dcterms:abstract>

    <dcterms:abstract>
BACKGROUND: The aims of the present study were to study the influence of information about the source of two functional ingredients (antioxidants and fibre) on consumer perception of functional milk dessert concepts and to evaluate whether this influence depends on consumer attitudes towards health and hedonic characteristics of foods.

RESULTS: Scores for expected liking decreased when information about the source of fibre or antioxidants was incorporated, which could be explained considering that when consumers knew the source of the functional ingredient they imagine the flavour of the source in the milk concept. This decrease in expected liking led to a decrease in consumer willingness to purchase, showing the importance of hedonic expectations on the acceptance of functional foods. Consumers with different attitudes towards health and hedonic characteristics of foods reacted differently towards information about the source of functional ingredients.

CONCLUSION: Providing information about the source of functional ingredients would not be recommended as it might create negative taste expectations to consumers and a concomitant decrease in their willingness to purchase. These show that consumers would not compromise on the taste of milk desserts for health. Thus, the development of functional foods that taste worse than conventional ones may be a risky option.
</dcterms:abstract>

    <dcterms:abstract>The aims of the present work were to study the crystallization of lactose in dulce de leche and to evaluate the influence of temperature on this process. Samples of approximately 1 g were placed in plastic containers and stored at –5, 5, 20 and 35°C for 25 days. Lactose crystal and lactose crystal agglomerate numbers and size were measured by using an optical microscope. Results suggested that stirring and placing a small sample of dulce de leche in a small container induced lactose crystallization. Lower storage temperatures resulted in an increase of crystal and agglomerate number but in a decrease of crystal and agglomerate size. The effect of temperature on crystal and agglomerate growth rates could be attributed to the effect of temperature on viscosity, as lower temperatures resulted in decreased crystal mobility in dulce de leche and therefore reduced crystal and agglomerate growth rate.</dcterms:abstract>

    <dcterms:abstract>ABSTRACT

Sandiness, one of the most common defects of dulce de leche, is caused by lactose crystallization. In order to study consumer reaction to the presence of different levels of this defect, survival analysis statistics was applied to the consumer acceptance/rejection data of the samples. Limits for this defect were estimated by working with 10% and 25% consumer rejection probabilities. The consumers were also asked to score the sample sandiness according to their perception, using a 9-point scale. Cluster analysis and correspondence analysis performed showed the heterogeneity of the consumer responses toward sandiness in dulce de leche.

Significant correlations were established between consumer sandiness and the number of crystals and sandiness as measured by a panel of trained assessors, the latter being the best indicator of sandiness as perceived by the consumers. It could be established that the consumers' and assessors' sandiness perception is clearly influenced by the presence of agglomerates, their size distribution and number.

PRACTICAL APPLICATIONS

Sandiness is an important defect for a segment of consumers who rejected samples with high levels of sandiness, suggesting the importance of avoiding the occurrence of this defect. Survival analysis methodology was used to estimate the maximum level of sandiness in dulce de leche before consumers reject it. As sandiness is a sensory defect that often limits the shelf life of dulce de leche, the calculated sensory limits could be used in future studies to estimate the sensory shelf life of dulce de leche.

</dcterms:abstract>

    <dcterms:abstract>One of the most important steps of new product development process is product optimization, which aims at identifying consumers’ ideal products and directions for product reformulation. The present work proposes the application of a penalty analysis based on consumer responses to CATA questions to identify drivers of liking and directions for product reformulation. Two studies were conducted in which 74 and 119 consumers evaluated a set of samples (5 apples and 8 yogurts) using a check-all-that-apply question related to sensory characteristics and were also asked to check all the terms they considered appropriate to describe their ideal product. Data were analyzed by counting the number of consumers who did not check an attribute as they did for their ideal product, and its associated mean drop. A dummy variable transformation approach was proposed to make linear regression models between CATA terms and overall liking scores using Partial Least Squares (PLS). Juiciness, sweetness, apple flavor, firmness and crispiness were the most relevant attributes for consumers in the apple study. Meanwhile, in the yogurt study smoothness, homogeneity and creaminess were the main drivers of liking and were responsible for the highest penalization on overall liking (more than 1 in the 9-point hedonic scale). PLS regression enabled the identification of the attributes which deviation from the ideal caused a significant decrease in overall liking. Penalty analysis on CATA questions proved to be a simple and useful approach to identify drivers of liking and directions for improving the products in both studies. Advantages and disadvantages of this approach are discussed, as well as directions for further research</dcterms:abstract>

    <dcterms:abstract>
As the use of check-all-that-apply (CATA) questions for consumers to aid sensory product characterization
gains popularity the need for developing guidelines regarding best practice increases. An important
issue in the design of studies including CATA questions is the number of consumers that are necessary to
obtain stable results. In this context, the aim of the present work was to study the stability of sample and
descriptor configurations obtained using CATA questions with consumers, by means of a bootstrapping
resampling approach. Data from 13 consumer studies were analyzed, differing in number of consumers,
product category, number of samples, degree of difference among samples and number and type of
descriptors in the CATA question. For each study, 1000 random subsets of different number of consumers
were generated from the original data set. For each consumer virtual panel, sample and descriptor configurations
were obtained using Correspondence Analysis and the concordance between them and the
reference configurations (obtained with all the consumers) were computed using the regression vector
(RV) coefficient. The RV coefficients of sample and descriptor configurations increased with the number
of consumers, suggesting an increase in the stability of the configurations. Results showed that the number
of consumers necessary to yield fully stable configurations depended on the degree of difference
among samples, the complexity of the sensory space and the type of descriptors included in the CATA
question. Across the 13 data sets analysed, results suggested that when working with widely different
samples, 60–80 consumers can be regarded as a reasonable compromise to get stable sample and descriptor
configurations. However, it is recommended to check, a posteriori, the stability of sample and descriptor
configurations using a stability index based on bootstrapping.
</dcterms:abstract>
