    <dcterms:abstract><![CDATA[Persistent extracellular tissue-dwelling pathogens face the challenge of antibody-dependent activation of the classical complement pathway (CCP). A prime example of this situation is the larva of the cestode Echinococcus granulosus sensu lato, causing cystic echinococcosis. This tissue-dwelling, bladder-like larva is bounded by a cellular layer protected by the outermost acellular &ldquo;laminated layer&rdquo; (LL), to which host antibodies bind. The LL is made up of a mucin meshwork and interspersed nano-deposits of calcium inositol hexakisphosphate (calcium InsP6). We previously reported that calcium InsP6 bound C1q, apparently initiating CCP activation. The present work dissects CCP activation on the LL. Most of the C1 binding activity in the LL corresponded to calcium InsP6, and this binding was enhanced by partial proteolysis of the mucin meshwork. The remaining C1 binding activity was attributable to host antibodies, which included CCP-activating IgG isotypes. Calcium InsP6 made only a weak contribution to early CCP activation on the LL, suggesting inefficient C1 complex activation as reported for other polyanions. CCP activation on calcium InsP6 gave rise to a dominant population of C3b deposited onto calcium InsP6 itself that appeared to be quickly inactivated. Apparently as a result of inefficient initiation plus C3b inactivation, calcium InsP6 made no net contribution to C5 activation. We propose that the LL protects the underlying parasite cells from CCP activation through the combined effects of inefficient permeation of C1 through the mucins and C1 retention on calcium InsP6. This mechanism does not result in C5 activation, which is known to drive parasite-damaging inflammation.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Direct ethanol fuel cells are based in ethanol electro-oxidation at low temperature and they constitute an alternative energy conversion system. However, they need catalysts in order to improve their efficiency, given that ethanol electro-oxidation is a slow-kinetic reaction. Among those catalysts platinum and platinum alloys play an important role in the increase of the ethanol cleavage kinetics for fuel cell application. However, to maximize the catalyst performance, support materials are needed in order to reduce the catalyst load considering its high cost. One of the more versatile catalyst supports is activated carbon. Recently, attention has focused on wood as carbon material precursor, because of its sustainability and also because the obtained carbons have excellent final properties. In the present work, activated carbon obtained by physical activation of Eucalyptus grandis wood (biocarbon) was tested as Pt and PtSn catalyst support, for ethanol electro-oxidation reaction. For comparison purposes, commercial activated carbon Vulcan XC72 was also tested. The catalyst supports were characterized by textural analysis, elemental analysis and infrared spectroscopy. The obtained catalysts were characterized regarding structure by XRD and their electrochemical behavior was evaluated by cyclic voltammetry. Biocarbon-supported PtSn electrocatalysts showed better electrochemical performance related to the commercial activated carbon (Vulcan XC72)-supported ones, since its developed current density and potential were the highest and its onset potential was the lowest. However, pure platinum showed better values for current density, potential and onset potential in Vulcan XC72-based activated carbons, being the untreated one the best support in this case.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>It is now well established that &beta;-glucosidases (BGLs) from non-Saccharomyces yeasts are key enzymes that hydrolyze grape-derived aroma precursors enhancing the flavour of wines. This work reports on the specificity for wine glycosides and the impact on wine aroma, of three native yeast &beta;-glucosidases. Volatile compounds were analyzed by gas-chromatography and mass spectroscopy (GC&ndash;MS) and wine aroma was studied by sensory analysis. Issatchenkia terricola &beta;-glucosidase stood out from the other &beta;-glucosidases studied. The I. terricola BGL<br />showed remarkable specificity for norisoprenoid aglycones such as: 3-oxo-7, 8-dihydro-alpha-ionol, 3-oxo- &alpha;-ionol, vomifoliol. This different specificity was perceived in the sensory tests. The judges described pleasant fruity, sweet, honey and raisin notes in both Tannat and Muscat wines treated with I. terricola BGL. These results are particularly remarkable for Tannat wines, since there are few reports concerning the application of &beta;-glucosidases to enhance its aroma of Tannat, and none with BGLs from native yeasts.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The aim of the present work was to study the influence of brand on consumers&rsquo; expectations and liking of orange-flavoured powdered drinks. Ten samples of orange-flavoured powdered drinks were evaluated by 108 consumers who scored their expected liking (looking at the pack only) and the overall liking under blind and informed-testing conditions (tasting the products). Consumers were also asked to answer a check-all-that-apply question with eight statements related to some products&rsquo; characteristics and usage occasions. Results showed that brand and package information had a large impact on consumers&rsquo; liking scores only for well-recognized brands. Hierarchical multiple factor analysis performed on liking scores for the three evaluation conditions showed that informed liking scores were closer to expected liking scores than to blind liking scores, suggesting that brand information was more important than hedonic reaction to the sensory characteristics in determining consumers&rsquo; liking scores for the samples on the informed condition]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Cognitive styles are characteristic and stable ways in which people acquire, organize and use information for solving problems and making decisions. Field dependence/independence is one of the most studied cognitive styles. Field independent subjects are characterized by having less difficulty in separating information from its contextual surroundings and being less likely to be influenced by external cues than field dependent individuals. The present work aimed at studying the influence of field dependence/independence cognitive style on consumers' visual processing and choice of yogurt labels. One hundred and thirty three consumers completed a choice conjoint task. They were asked to select their preferred yogurt label from each of 16 pairs of labels. While they completed the task their eye movements were recorded using an eye-tracker. Then, consumers were asked to complete the Group Embedded Figure Test to determine their cognitive style. Consumers were divided into two groups with different cognitive styles: 58% of the sample was characterized as field dependent and 42% as field independent. When making their choices, field dependent consumers tended to engage in less thoughtful information processing than field independent consumers and they made fewer fixations on traditional nutritional information. Besides, cognitive style significantly affected the relative importance of fat and sugar content on consumer choices and modulated the influence of the traffic light system. Field dependent consumers gave less importance to the nutritional composition of the yogurts than field independent consumers for selecting their preferred label. Results from this work suggest that studying the psychological underpinnings of consumers' decision making process when selecting food products has a great potential to contribute to a better understanding of how eating patterns and consumer preferences are shaped]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Projective mapping (PM), one of the most holistic product profiling methods in approach, is increasingly being used to uncover consumers' perception of products and packages. Assessors rely on a process of synthesis for evaluating product information, which would determine the relative importance of the perceived characteristics they use for mapping them. Individual differences are expected, as participants are not instructed on the characteristics to consider for evaluating the degree of difference among samples, generating different perceptual spaces. Individual differences in cognitive style can affect synthesis processes and thus their perception of similarities and differences among samples. In this study, the influence of the cognitive style in the results of PM was explored. Two consumer studies were performed, one aimed at describing intrinsic sensory characteristics of chocolate flavoured milk and the other one looking into extrinsic (package only) of blueberry yogurts. Consumers completed the wholistic-analytic module of the extended Verbal Imagery Cognitive Styles Test &amp; Extended Cognitive Style Analysis-Wholistic Analytic Test, to characterize their cognitive style. Differences between wholistic and analytic consumers in how they evaluated samples using projective mapping were found in both studies. Analytics separated the samples more in the PM perceptual space than wholistic consumers, showing more discriminating abilities. This may come from a deeper analysis of the samples, both from intrinsic and extrinsic point of views. From a sensory perspective (intrinsic), analytic consumers relied on more sensory characteristics, while wholistic mainly discriminated samples according to sweetness and bitterness/chocolate flavour. In the extrinsic study however, even if analytic consumers discriminated more between packs, they described the products using similar words in the descriptive step. One important recommendation coming from this study is the need to consider higher dimensions in the interpretation of projective mapping tasks, as the first dimensions could underestimate the complexity of the perceptual space; currently, most applications of PM consider two dimensions only, which may not uncover the perception of specific groups of consumers.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Context can be regarded as the situational and temporal conditions in which food choice occurs. Although context has a large effect on consumer perception and choice of food products, it has been mostly overlooked in research exploring the determinants of consumers' food choice. The aims of the present work were to study the influence of purchase and consumption context on motives underlying food choice and to evaluate if gender and age modulate this effect. One hundred and ninety-five consumers from Montevideo (Uruguay) participated in an online survey. They were asked to complete a free-listing task about all the things they take into account when selecting foods in four contexts: purchase, lunch, snacking and dinner. Consumer responses were qualitatively analyzed and grouped into categories and their cognitive salience was determined. Categories were grouped into 10 dimensions: price, health/nutrition, perceived quality, freshness, sensory characteristics, hedonics, convenience, context, variety and satiety. Context had a strong influence on the motives underlying consumer food choices. The dimensions with the highest cognitive salience in the purchase context were price, perceived quality and freshness, while convenience and variety were the most relevant dimensions for the consumption contexts. The effect of context on the salience of the elicited categories was not markedly affected by gender and age.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Beef is an important source of micronutrients, but little is known about how cooking processes affect the nutritional value. In this study, microwave-induced plasma optical emission spectrometry (MIP OES) was used to determine the contents of Cu, Fe, Mn, Ni, and Zn in three cuts of Uruguayan beef when cooked to two degrees of doneness (medium and well done). The content of minerals varied in the range: Cu (84.9&ndash;117.4), Fe (2288&ndash;2689), Mn (11.6&ndash;20.7), Ni (12.4&ndash;19.8), and Zn (4100&ndash;7471) &mu;g per 100 g portion for medium and Cu (76.3&ndash;97.0), Fe (1886&ndash;2689), Mn (9.7&ndash;15.4), Ni (12.7&ndash;26.8), and Zn (3187&ndash;6204) for well-done. No significant losses through leaching were observed up to a weight loss of 16 % (medium). However, when the weight loss was 28&ndash;35 % (well done), the micronutrients content decreased. Despite these losses, Uruguayan beef was confirmed to be a particularly good source of Zn and a good source of Cu and Fe. The daily contribution of Mn was not significant (1%) and the Ni content was far below the tolerable upper intake level. In addition, this work revealed MIP OES to be an economical and green method for the determination of trace elements in beef.

    <dcterms:abstract><![CDATA[Composition and antioxidant properties of sixteen pecan [Carya illinoinensis (Wangenh) K. Koch] cultivars grown simultaneously in a single experimental orchard in Uruguay were evaluated to characterize their nutritional properties and nutraceutical potential. The percentage of oil, moisture, ash, minerals, and proteins were determined and also the fatty acid profile. Total phenolic compounds [18&ndash;41 mg gallic acid equivalents (GAEs)/g], condensed tannin [2&ndash;12 mg catechin equivalents (CEs)/g], and tocopherols (110&ndash;163 &micro;g/g) contents were estimated in nut kernels. Total phenolic compounds (32&ndash;117 mg GAE/g), condensed tannins (130&ndash;357 mg CE/g), and total anthocyanins (1&ndash;3 mg 3-glucoside cyanidin/g) were also determined for pecan shells. The antioxidant activity in shells [57.15&ndash;578.88 &micro;mol Trolox equivalents (TEs)/g] was 5 times higher compared with the kernels (23.15&ndash;156.60 &micro;mol TEs/g) measured with hydrophilic ORAC. Bioactive compounds concentrations present statistically significant genetic variability between cultivars studied (p &lt; 0.05). The presence of phenolic compounds was related with high-antioxidant capacity in kernels and shells, and a strong correlation between content of total phenolic compounds and condensed tannins in pecan shells was found. Principal component analysis (PCA) and hierarchical cluster analysis (HCA) show association between cultivars and the observed variables. The nutritional profile in the different cultivars showed the trends described in other countries, but this work shows some significant differences that could be attributed to the specific edaphoclimatic conditions of cultivation in Uruguay.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The influence of the cultivation system and of the culture medium on the biotransformation of (+)-limonene by a strain of Aspergillus niger was investigated. Biooxidation products were obtained in all conditions tested. Using a laboratory bioreactor, six terpenes were identified in every medium, predominantly terpineols and carveols, whereas terpinen-4-ol and perillyl alcohol were the only terpenes found when flasks were used for culture. Perillyl alcohol and carveols predominated when the medium was tryptic soy broth (TSB), whereas the formation of terpineols was clearly favoured in malt broth (MB). Thus, there was a marked influence of the culture conditions on the results of the biotransformation. Changes in the conditions led to variations both in the type and relative amount of products obtained.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The purpose of the present work was to study the influence of cut (manual and using a sharp knife) and packaging film (bioriented polypropylene and polyolefin PD-961) on the sensory quality of fresh-cut butterhead lettuce stored under passive modified atmosphere at 5C. Results showed that lettuce cut by hand had a lower respiration rate and deterioration rate than those cut with a knife. This difference could be attributed to a difference in the level of wounding, which can be explained by the fact that cutting by hand caused the tear to follow the naturally weaker areas of the lettuce, leading to less tissue damage than that engendered by the use of a sharp knife.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Cytochrome P450 enzymes and efflux transporters, expressed in the intestine and/or in the liver, play important roles in drug clearance and oral bioavailability. The relative contribution of transporters and enzymes in drug metabolism is still controversial. Some antiepileptic drugs, such as carbamazepine, phenytoin and phenobarbital (phenobarbitone), show time-dependent and dose-dependent pharmacokinetics due to their inductive effect on both efflux transporters and enzymes. However, steady-state plasma drug concentrations for each antiepileptic drug do not relate to oral daily dose in the same way, with decreased or increased apparent clearance according to the drug. A multicompartment pharmacokinetic model was developed in order to explain these different behaviours using a single mechanism of inductive action. The key for solving these apparent dissimilarities was to consider in the model the unique physiological connection that intestine, liver and bloodstream have. Efflux transporters not only enhance enzymatic competition in relation to first-order processes, but also change the predominance of some elimination routes. For instance, the carbamazepine-10,11-epoxide formation increases at the expense of other carbamazepine metabolites, enhancing both the systemic and presystemic elimination of parent drug. Conversely, the major hepatic metabolism of phenytoin diminishes in favour of its minor intestinal elimination, decreasing the total drug clearance.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Consumers' increasing demand for fresh, safe and high quality products requires food companies to accurately estimate sensory shelf life and tolerance limits for sensory defects. Sensory shelf-life and acceptance limits for sensory defects have been estimated with consumers' rejection data using survival analysis without considering contextual variables, which could have a major influence on consumers' perception. The aim of the present study was to study how consumers' rejection is affected by different evoked contexts in a laboratory setting. Two studies were carried out to study the influence of evoked contexts on consumers' rejection. In the first study consumers' rejection for consumption at home and purchase at a supermarket was compared using orange juice samples with different storage times. In the second study, consumers' rejection for consumption at home and purchase at a supermarket for brands of different familiarities was compared using dulce de leche with different plastic flavour intensities as samples. Consumers' rejection data were analysed using survival analysis. The use of written scenarios to evoke different contexts affected consumers' rejection of products with different storage times and intensities of a sensory defect. Shelf lives that were estimated based on consumers' rejection to purchase were shorter than those estimated considering consumers' rejection to consume. In the second study, consumers' rejection under the consumption at home evoked context was similar to rejection to repeat purchase of a usual brand. However, a large difference existed between the evoked contexts that involved a usual and a new brand. Consumers were harsher when considering to repeat purchase of a new brand compared to their usual brand. These results suggest that the consideration of evoked contexts could contribute to increase the accuracy of sensory shelf life estimation and acceptance limits of sensory defects, leading to more informed business decisions.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[This research contributes new understanding of the role of consumption context. 12 studies involving 1727 consumers were conducted as central location tests (CLT). Using between-subjects experimental designs, the influence of evoked contexts relative to control condition for hedonic responses and sensory product characterization using check-all-that-apply (CATA) questions was evaluated. Contexts were evoked by asking consumers to think of the last time they ate/drank the focal product category or by imagining a specific consumption situation where product consumption would take place (e.g., breakfast on a weekend morning). In half of the studies, consumers were asked to provide a description of the consumption context they imagined. There was no consistent trend in the results regarding the influence of evoked context of hedonic responses. Effects were seen in a minority of studies, but not consistently showing differences in mean scores or changes in sample discrimination. The type of context that was evoked (last time ate/drank vs. specific situation) did not systematically influence the results, although the use of a description phase during context evocation was detrimental to hedonic sample discrimination. In all the studies where participants were asked to describe the context they imagined, hedonic discrimination was inferior to that achieved under no evoked context. Sensory responses to CATA questions were highly similar under evoked and no evoked context and suggested that product characterisations generated by consumers in a typical CLT provide a good proxy for sensory product experience in contextualised consumption situations.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The aim of the present work was to evaluate the influence of two evoked consumption contexts on consumers&rsquo; intention to purchase lamb meat cuts using rating-based conjoint analysis. Participants were randomly assigned to one of the evoked consumption contexts: a celebratory lunch with family over the weekend (n = 157), and a dinner at home after a day&rsquo;s work (n = 171). Rating-based conjoint analysis was used to evaluate the influence of four independent variables on consumers&rsquo; intention to purchase lamb meat in each of the two evoked consumption contexts: type of cut, presentation, seasoning and price. Intention to purchase scores were significantly affected by the evoked context. Consumers were more willing to purchase lamb meat when the celebratory weekend lunch context was considered, compared to the weekday dinner. In the two contexts, price was the most important variable affecting willingness to purchase lamb meat, followed by type of cut. However, at the aggregate level the utility values were similar for the two contexts: consumers expressed higher intention to purchase for leg cuts without seasoning at the highest price. In the two contexts different consumer segments were identified, which gave different relative importance to the variables included in the conjoint task. However, conclusions regarding consumers&rsquo; segmentation were affected by evoked consumption context. The findings suggest that evoked consumption contexts influence results from conjoint analysis, which suggests that they may be an interesting methodological alternative to increase the validity of conjoint tasks.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Communication of health benefits to the public is an essential element for the development and marketing of functional foods. In this context, the aim of the present work was to study the influence of different types of fibre enrichment declarations on consumers&rsquo; perception of functional chocolate milk desserts. A rating-based conjoint analysis with 135 consumers was carried out. Milk dessert concepts were designed using a full factorial design with two categorical factors: name of the ingredient (three levels: declared using a common name &ndash;fibre- or a specific source of fibre &ndash;wheat bran and resistant starch-), and claim (three levels: &lsquo;no claim&rsquo;, &lsquo;enhanced function&rsquo; claim or &lsquo;reduced disease risk&rsquo; claim). Consumers were asked to rate the familiarity, perceived healthiness, expected liking and willingness to purchase each of the desserts, and had to complete a questionnaire related to their attitudes towards health and nutrition. Two consumer groups with different attitude towards health and nutritional issues were identified; which significantly differed in their perception of the functional chocolate milk desserts. Participants more interested in health significantly increased their willingness to purchase when fibre-enriched desserts were considered; whereas participants less interested in health showed the opposite behaviour. Moreover, the higher willingness to purchase scores were found when the addition of fibre was declared using its common name and when health claims were included.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The effect of the addition of gelatin and starch on the rheological and sensory texture properties of sweetened plain stirred yogurt was studied. Six samples were prepared: two with gelatin (3 and 6 mg/g), three with starch (1, 5 and 10 mg/g) and a control sample without thickener. Rheological measurements were performed and flow curves were modelled according to the Herschel&ndash;Bulkley rheological model. Also, sensory evaluation was carried out using a trained panel. The addition of gelatin and starch significantly affected the instrumental texture parameters (Herschel&ndash;Bulkley's model parameters and syneresis) and the perceived sensory texture of yogurts. All sensory descriptors were well predicted by the partial least squares regression of the instrumental parameters. The addition of thickeners significantly reduced syneresis. Samples produced with 6 mg/g of gelatin did not show syneresis and showed the highest sensory viscosity, creaminess and mouth-feel. Therefore, the use of 6 mg/g of gelatin could be a reasonable concentration to use in the production of low-fat yogurts.<br /><br />]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The aims of the present study were to study the effect of different carriers and enrichments on the perceived healthiness and willingness to try functional foods; and to evaluate the effect of age, gender and motives underlying food choice. Participants had to evaluate different functional food concepts and had to answer a food choice questionnaire. Results showed that carrier products had the largest effect on consumers&rsquo; perception of healthiness and willingness to try of the evaluated functional foods concepts. The highest positive relative utilities were achieved when the enrichment was a functional ingredient inherent in the product. Furthermore, gender, age and motives underlying food choice affected the preference patterns for the evaluated functional foods concepts, but it depended on the carrier and enrichment considered, suggesting that functional foods might not be accepted by all the consumers and that they could be tailored for certain groups.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[A study of the influence of the use of images in a conjoint analysis combined with check-all-that apply (CATA) questions on jams was carried out. The relative importance of flavor and the information presented in the label in the willingness to purchase and the perception of how healthy the product is has been evaluated. Sixty consumers evaluated the stimuli presented only in text format (session 1), and another group of 60 consumers did so by receiving the stimuli in text format along with an image of the product (session 2). In addition, for each stimulus, consumers answered a CATA question consisting of 20 terms related to their involvement with the product. The perception of healthy increased when the texts were accompanied with images and also increased when the text included information. Willingness to purchase was only influenced by the flavor of the jams. The presence of images did not influence the CATA question's choice of terms, which were influenced by the information presented in the text. The use of a check-all-that-apply question in concepts provided an interesting possibility when they were combined with the results from the conjoint analysis, improving the comprehension of consumers' perception. Using CATA questions as an alternative way of evaluating consumer involvement seems to be beneficial and should be evaluated much further.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Consumer perception of food products is a very complex phenomenon that is influenced by a wide range of characteristics. In particular, consumer perception of the sensory characteristics of food products can be strongly affected by information and expectations. Thus, the comparison of product characterizations from blind and informed conditions can provide a valuable insight about the impact of information on consumer perception of food products. In this context, the aim of the present work was to present a case study in which the influence of information on results of product characterizations of milk desserts from two methodologies, check-all-that-apply (CATA) questions and sorting, was studied. Six commercial vanilla milk desserts were evaluated under blind and informed conditions by two groups of 50 consumers using CATA questions and sorting. Results showed that information had a small impact on overall liking scores and product characterizations, suggesting that consumers&rsquo; perception of the desserts was mainly determined by their sensory characteristics.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Objective: Tostudy the influence of 2 interpretational aids of front-of-package (FOP) nutrition labels (color code and text descriptors) on attentional capture and consumers&rsquo; understanding of nutritional information. Design: A full factorial design was used to assess the influence of color code and text descriptors using visual search and eye tracking. Participants: Ten trained assessors participated in the visual search study and 54 consumers completed the eye-tracking study. Main Outcome Measures: In the visual search study, assessors were asked to indicate whether there was a label high in fat within sets of mayonnaise labels with different FOP labels. In the eye-tracking study, assessors answered a set of questions about the nutritional content of labels. Analysis: The researchers used logistic regression to evaluate the influence of interpretational aids of FOP nutrition labels on the percentage of correct answers. Analyses of variance were used to evaluate the influence of the studied variables on attentional measures and participants&rsquo; response times. Results: Response times were significantly higher for monochromatic FOP labels compared with colorcoded ones (3,225 vs 964 ms; P &lt; .001), which suggests that color codes increase attentional capture. The highest number and duration of fixations and visits were recorded on labels that did not include color codes or text descriptors (P &lt; .05). The lowest percentage of incorrect answers was observed when the nutrient level was indicated using color code and text descriptors (P &lt; .05). Conclusions and Implications: The combination of color codes and text descriptors seems to be the most effective alternative to increase attentional capture and understanding of nutritional information.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The aim of the study was to evaluate the influence of intrinsic and extrinsic characteristics of the regular and probiotic version of two milk products on consumer overall liking and perceived wellbeing. In Study 1, consumers evaluated milk samples with different label design. In Study 2, consumers evaluated samples of chocolate flavored milk differing in sugar content and nutrition information. In both studies, consumers rated their overall liking and completed a check-all-thatapply question composed of expressions related to different dimensions of wellbeing. Overall liking scores were significantly affected by the sensory characteristics of samples but not by the characteristics of the labels. In Study 2, the highest average overall liking scores were found for samples with high sugar content (6.2 vs. 6.0). The frequency with which consumers used some of the wellbeing terms was influenced by both intrinsic and extrinsic variables. In Study 1, the term &ldquo;It is nutritious&rdquo; was significantly more used to described probiotic milk compared to regular milk. In Study 2, sugar content and the information included on the labels influenced the frequency of use of terms related to physical and psychological wellbeing, such as &ldquo;It is good for wellbeing&rdquo; and &ldquo;It makes me feel guilty.&rdquo; Practical applications Although hedonic aspects of food consumption are major determinants of consumer food choices, results from the present work showed that consumer perceived wellbeing enabled the discrimination of samples that did not significantly differ in their overall liking scores. This suggests that wellbeing measurements can provide complementary information about consumer perception of food products to overall liking scores.]]></dcterms:abstract>
