<dcterms:abstract><![CDATA[Bacterial immobilization is regarded as an enabling technology to improve the stability and reusability of biocatalysts. Natural polymers are often used as immobilization matrices but present certain drawbacks, such as biocatalyst leakage and loss of physical integrity upon utilization in bioprocesses. Herein, we prepared a hybrid polymeric matrix that included silica nanoparticles for the unprecedented immobilization of the industrially relevant Gluconobacter frateurii (Gfr). This biocatalyst can valorize glycerol, an abundant by-product of the biodiesel industry, into glyceric acid (GA) and dihydroxyacetone (DHA). Different concentrations of siliceous nanosized materials, such as biomimetic Si nanoparticles (SiNps) and montmorillonite (MT), were added to alginate. These hybrid materials were significantly more resistant by texture analysis and presented a more compact structure as seen by scanning electron microscopy. The preparation including 4% alginate with 4% SiNps proved to be the most resistant material, with a homogeneous distribution of the biocatalyst in the beads as seen by confocal microscopy using a fluorescent mutant of Gfr. It produced the highest amounts of GA and DHA and could be reused for up to eight consecutive 24 h reactions with no loss of physical integrity and negligible bacterial leakage. Overall, our results indicate a new approach to generating biocatalysts using hybrid biopolymer supports.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[Food donation has expanded globally and has become a common form of food assistance in emerging countries. However, research on food donation experiences in these settings is still scarce. Purpose In this context, the objectives of the present work were as follows: (i) to explore the views of Uruguayan stakehold ers on food donation as a strategy to reduce food waste, (ii) to identify barriers and enablers for food donation in Uruguay, and (iii) to explore the organizational characteristics of Uruguayan food banks. Methods A qualitative approach based on two data collection strategies was used: documentary content analysis of ofcial governmental documents and in-depth semi-structured interviews with key stakeholders related to food waste and food donations in Uruguay. Results Food donation emerged as a central strategy for food waste reduction in the view of Uruguayan stakeholders, mainly because it was perceived as an efcient strategy to reduce food insecurity. The complexity of food donation was acknowledged by Uruguayan stakeholders and who identifed several barriers for its implementation related to economic considerations, the characteristics of the donated products, legal and commercial considerations, and organizational characteristics of food banks. Conclusion Although most barriers were aligned with results from previous studies conducted in developed countries, some specifcities to the Uruguayan context were also identifed. Clear and detailed legal frameworks to ensure that the donated products reach the target population along with nutritional requirements for the foods to be donated were deemed necessary.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[The different combinations of molecular dynamics simulations with coarse-grained representations have ac quired considerable popularity among the scientific community. Especially in biocomputing, the significant speedup granted by simplified molecular models opened the possibility of increasing the diversity and complexity of macromolecular systems, providing realistic insights on large assemblies for more extended time windows. However, a holistic view of biological ensembles’ structural and dynamic features requires a self-consistent force field, namely, a set of equations and parameters that describe the intra and intermolecular interactions among moieties of diverse chemical nature (i.e., nucleic and amino acids, lipids, solvent, ions, etc.). Nevertheless, examples of such force fields are scarce in the literature at the fully atomistic and coarse-grained levels. More over, the number of force fields capable of handling simultaneously different scales is restricted to a handful. Among those, the SIRAH force field, developed in our group, furnishes a set of topologies and tools that facilitate the setting up and running of molecular dynamics simulations at the coarse-grained and multiscale levels. SIRAH uses the same classical pairwise Hamiltonian function implemented in the most popular molecular dynamics software. In particular, it runs natively in AMBER and Gromacs engines, and porting it to other simulation packages is straightforward. This review describes the underlying philosophy behind the development of SIRAH over the years and across families of biological molecules, discussing current limitations and future implementations.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[Carotenoids are a large group of health-promoting compounds used in many industrial sectors, such as foods, feeds, pharmaceuticals, cosmetics, nutraceuticals, and colorants. Considering the global population growth and environmental challenges, it is essential to find new sustainable sources of carotenoids beyond those obtained from agriculture. This review focuses on the potential use of marine archaea, bacteria, algae, and yeast as biological factories of carotenoids. A wide variety of carotenoids, including novel ones, were identified in these organisms. The role of carotenoids in marine organisms and their potential health-promoting actions have also been discussed. Marine organisms have a great capacity to synthesize a wide variety of carotenoids, which can be obtained in a renewable manner without depleting natural resources. Thus, it is concluded that they represent a key sustainable source of carotenoids that could help Europe achieve its Green Deal and Recovery Plan. Additionally, the lack of standards, clinical studies, and toxicity analysis reduces the use of marine organisms as sources of traditional and novel carotenoids. Therefore, further research on the processing of marine organisms, the biosynthetic pathways, extraction procedures, and examination of their content is needed to increase carotenoid productivity, document their safety, and decrease costs for their industrial implementation.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[Text highlighting was recently introduced as a method for exploring consumer attitudes and perceptions. It consists of asking participants to read a piece of text on a digital device while using highlighting functions to indicate those parts of the text that they ‘like’/feel positive about, as well as those parts they ‘dislike’/feel negative about. As with any new method, methodological research helps to develop recommendations for best practice in use. In this regard, the present research addressed three research questions (RQs) in three studies with participants from New Zealand, United Kingdom, Singapore and Malaysia (ntotal = 5381). In a qualitative approach, Study 1 (RQ1) validated the notion that the text highlighting task is not expected to induce bias. Study 2 addressed RQ2 and explored whether the process of completing the text highlighting task influence consumers’ topic- and product-related responses? There was minimal evidence of this, meaning that text highlighting can reasonably be used together with other types of consumer responses without much the risk of biasing the latter. RQ3 (Study 3) investigated whether the type of highlighting task performed influence text selection. To date the method has been implemented as a dual approach (i.e., selecting both ‘like’ and ‘dislike’ aspects of the text), however, this could tentatively bias either or both responses compared to a single response task where partic ipants select only ‘like’ highlights or only ‘dislike’ highlights. Study 3 found no effect for ‘like’ highlights when comparing dual- and single-response highlighting. However, for ‘dislike’ highlighting, significantly fewer words were selected in the dual-response approach (although the difference in frequency of selection was < 10%).The findings were established in case studies pertaining to kiwifruit and biodynamic agriculture but require confirmation in studies with different products, texts and participants.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[Food waste is an issue of global concern. Particularly troublesome is the amount of waste at the consumer level, and a need exists for interventions that draw on a deeper understanding of the underlying factors leading to food waste. The research aims were to (1) study the potential of an information-based strategy to reduce household food waste, (2) explore the impact of information on attitudes towards food waste, and (3) explore the reasons underlying perceived changes in household food waste. A controlled randomized trial was conducted, and participants were assigned to one of two groups (Informed, Control) with data collection at two time points (Baseline, Time 2). At both time points, all participants completed a standardized quantitative survey on food disposal in the past 7 days. At baseline, after the food disposal survey was completed, participants in the informed group read a text about food waste and completed a highlighting task. The key result was a significant reduction in household food waste approximately fifteen days after the Baseline, which was found for both experimental groups, albeit slightly larger in the Informed group. This was found despite the Control group having the same attitudes, on average, to engaging in food waste reduction behaviors. To successfully reduce food waste, participants bought less food, used leftover and suboptimal foods, reduced portion size, checked stored foods to use them before expiration, and planned meals. The main reason for not reducing food waste was related to the belief that household food waste was minimal or inexistent. Overall, the research further stresses the potential of information strategies to achieve food waste reductions at the household level and discusses cognitive dissonance as a possible underlying mechanism.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[The postharvest disease popularly known as gray mold is considered one of the most limiting factors strawberry fruit pro duction. The most efective way to control this disease is still the use of chemical fungicides. However, other alternative sources of control are being explored. Among these, psychrophilic yeasts adapted to extreme conditions, such as those found in the Antarctic region, may have great potential for use as biocontrol agents. Thus, the present study aimed to select psychrotolerant yeasts obtained from Antarctic region and to evaluate their potential for biocontrol under gray mold, caused by Botrytis cinerea in strawberries stored at low temperature. For this, 20 potential antagonist yeasts were evaluated in vitro (thermotolerance and enzymatic) assays. Debaryomyces hansenii, Rhodotorula mucilaginosa and Dioszegia hungarica were selected for growing in strawberry juice. However, only D. hansenii was selected for in vivo studies and showed a reduction in the incidence of gray mold by 82% for the tests performed on injury and 86% for the tests on non-injured fruits treated by immersion bath. Thus, demonstrating that the selection of this cold-adapted Antarctic yeast can be a promising strategy as a biocontrol agent used to curb the development of gray mold in strawberry fruits]]></dcterms:abstract>

<dcterms:abstract><![CDATA[This study compares the performance of Hanseniaspora vineae (Hv) under mixed culture fermentation with Saccharomyces cerevisiae, with a conventional control (Sc) for the production of base wine. Hv exhibited fermentation kinetics comparable to controls when its nutritional requirements were satisfied. Volatile acidity in Hv from one batch was significantly lower (–0.3 g/L) compared to the controls, while in the other two batches the levels were equal. Interestingly, Hv trials showed a significant degradation of malic acid (–0.9 g/L on average) without variations of pH. Even though the matrix influenced the volatile composition, the characteristic features of H. vineae remained intact, with 24-fold higher levels of 2-phenylethyl acetate. There was no higher production of 2-aminoacetophenone, albeit tryptophan (known as a 2-aminoacetophenone precursor) is a preferred amino acid for H. vineae. Results suggest the potential of H. vineae to produce base wine with a broad spectrum of aroma compounds that increase flavor complexity, if obtained from nutrient-balanced grape musts.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[Nutritional warnings have gained popularity, particularly in the region of the Americas, to facilitate the identification of products with excessive content of nutrients associated with non-communicable diseases and encourage healthier food choices. Although warnings have been shown to be effective, an in-depth understanding of the reasons why some consumers do not use them is still lacking. The aim of the present work was to explore self-reported use of nutritional warnings and to identify the reasons for not considering nutritional warnings for making food purchase decisions after policy implementation in Uruguay. A non-probabil istic sample of 858 Uruguayan participants was recruited using an advertisement on Facebook and Instagram. Through an online survey, self-reported use of nutritional warnings was asked using a closed-open ended questions. Participants who reported not considering warnings to make their purchase decisions were asked to explain the reasons why using an open-ended question. Responses were analysed using deductive coding, based on the Behavioural Drivers Model. Thirty seven percent of the partic ipants stated that the warnings had not influenced their purchase decisions. Motives for not being influenced by the warnings were related to lack of interest, attitudes, lack of perceived self-efficacy, cognitive biases and limited rationality when making purchase decisions. In addition, structural barriers, such as availability, cost and trust in the food industry also emerged from participants’ responses. Strategies to encourage the use of warnings should include communication campaigns and policies to address structural barriers related to the perceived availability and affordability of healthy foods.]]></dcterms:abstract>

The production of alcoholic beverages with improved flavor has been a matter of interest for industry since centuries. Saccharomyces cerevisiae is the main yeast species involved in alcoholic fermentation. However, in the last decades the search of new aroma for beverages has made the producers to focus on those non S. cerevisiae yests commonly named as non-conventional yeasts. Different products such as wine, beer or kombucha are examples of fermented beverages elaborated since ancient times which present diverse aromatic complexity that might be enhanced, attending to studies performed in the last decades, due to the use of these non-conventional yeasts.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[Volatile stimuli can be detected by specific protein receptors from olfactory epithelium and trans mitted to the brain where finally are interpreted as the sense of smell. The interpretation of odor response complexity provokes the continuous development of instrumental methods for objectively analyze them. Gas chromatography-olfactometry (GC-O) introduction was a milestone in the odor research of, coupling a resolution technique of volatiles mixtures (gas chromatography) with the selectivity and sensitivity of the human olfactory system. GC-O generates a list of the odor descriptor of each peak in a GC run (“aromagram”), indicating which GC peaks (chromatographic resolved components) have or not given aromas/odors associated. The GC-O technique has been profusely employed for the evaluation of aromas in food matrices, but its application to essential oil study is still scarce for the characterization of specific odor active compounds which contribute to the overall olfactory impression. In this chapter an overview of data able to be obtained applying different GC-O methodologies to essential oils are presented, including the procedures and fundaments involved. The information presented does not intend to be exhaustive, but provides examples available in the literature and references to further reading.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[β-Glucosidases (BGLs) are key enzymes for the hydrolysis of glycosidic aroma precursors of wines. However, BGLs produced by oenological yeasts are often inactive or unstable at typical wine pH values. In this work, different immobilization strategies on biomimetic NPs were tested to enhance the stability of Issatchenkia ori entalis BGL and compared with traditional methods on agarose and Eupergit. Immobilization to biomimetic silica NPs by ionic interactions proved to be the most efficient method to achieve enzyme stabilization in model wine at pH 4.0. In particular, the subsequent glutaraldehyde crosslinking, achieved a high immobilization efficiency (71%) with an outstanding stabilization factor of 240-fold with respect to the soluble enzyme. This enzyme derivative preserved practically all the activity (98%) after15 days in model wine supplemented with Muscat glycosides, making possible its application for the release of aroma compounds relevant to the typicity of wine.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[It is well established that proteins and peptides can release sulfur under alkaline treatment, mainly through the β-elimination of disulfides with the concomitant formation of persulfides and dehydroalanine derivatives. In this study, we evaluated the formation of glutathione persulfide (GSSH/GSS- ) by exposure of glutathione disulfide (GSSG) to alkaline conditions. The kinetics of the reaction between GSSG and HO- was investigated by UV–Vis absorbance, reaction with 5,5′-dithio-bis-(2-nitrobenzoic acid) (DTNB), and cold cyanolysis, obtaining an apparent second-order rate constant of ~10-3 M-1 s -1 at 25 ◦C. The formation of GSSH and the dehydroalanine derivative was confirmed by HPLC and/or mass spectrometry. However, the mixtures did not equilibrate in a timescale of hours, and additional species, including thiol and diverse sulfane sulfur compounds were also formed, probably through further reactions of the persulfide. Cold cyanolysis is frequently used to quantify persulfides, since it measures sulfane sulfur. This method involves a step in which the sample to be analyzed is incubated with cyanide at alkaline pH. When cold cyanolysis was applied to samples containing GSSG, sulfane sulfur products that were not present in the original sample were measured. Thus, our results reveal the risk of overestimating the amount of sulfane sulfur compounds in samples that contain disulfides due to their decay to persulfides and other sulfane sulfur compounds at alkaline pH. Overall, our study highlights that the β-elimi nation of disulfides is a potential source of persulfides, although we do not recommend the preparation of GSSH from incubation of GSSG in alkali. Our study also highlights the importance of being cautious when doing and interpreting cold cyanolysis experiments.]]></dcterms:abstract>

Their chemistry in aqueous solution was explored by UV/vis spectroscopy, conductivity, cyclic voltammetry, and electron paramagnetic resonance studies. Their DNA binding was analyzed by electronic spectroscopy (determining Kb values), circular dichroism, and viscosity methods. The cytotoxicity of the complexes was assessed on human cancer cell lines MDA-MB-231, MCF-7 (breast, the first triple negative), A549 (lung epithelial) and A2780cis (ovarian, Cisplatin-resistant), and non-tumor cell lines MRC-5 (lung) and MCF-10A (breast). <dcterms:abstract><![CDATA[Cystic echinococcosis is caused by the larval stages (hydatids) of ces tode parasites belonging to the species cluster Echinococcus granulosus sensu lato, with E. granulosus sensu stricto being the main infecting species. Hydatids are blad derlike structures that attain large sizes within various internal organs of livestock ungulates and humans. Hydatids are protected by the massive acellular laminated layer (LL), composed mainly of mucins. Parasite growth requires LL turnover, and abundant LL-derived particles are found at infection sites in infected humans, raising the question of how LL materials are dealt with by the hosts. In this article, we show that E. granulosus sensu stricto LL mucins injected into mice are taken up by Kupffer cells, the liver macrophages exposed to the vascular space. This uptake is largely de pendent on the intact mucin glycans and on Clec4F, a C-type lectin receptor which, in rodents, is selectively expressed in Kupffer cells. This uptake mechanism operates on mucins injected both in soluble form intravenously (i.v.) and in particulate form intraperitoneally (i.p.). In mice harboring intraperitoneal infections by the same spe cies, LL mucins were found essentially only at the infection site and in the liver, where they were taken up by Kupffer cells via Clec4F. Therefore, shed LL materials circulate in the host, and Kupffer cells can act as a sink for these materials, even when the parasite grows in sites other than the liver.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[Distortion of polyhedra is frequently used in the structure–property analysis of inorganic materials. The commonly used Baur distortion index (BDI) loses efficacy in dealing with equi-length polyhedra. This work provides an online calculator to characterize the polyhedral distortion on the basis of the best fitted idealized polyhedron (BFIP) method. This method can determine any subtle change between distorted and corresponding idealized polyhedra. It works by fitting an idealized oriented polyhedron of user-selected type to a collection of center and vertex coordinates on an orthonormal basis. The input only needs the coordinates of the center and ligand atoms. It can be accessed at http:// bfip.crystalstructure.cn. The function is demonstrated using a distorted MgO6 octahedron. Examples of the application and comparison with the BDI are given, including a tetrahedron, octahedron, eight-vertex triangular dodecahe dron/cube and cuboctahedron.]]></dcterms:abstract>

<dcterms:abstract><![CDATA[Photodynamic therapy has advantages over conventional cancer superfcial tumor therapies, such as insignifcant side efects, minimal cumulative toxicity, excellent functional and cosmetic results, precise target treatment minimizing damage to neigh boring normal tissues, and optimum long-term tumor regression. Upconversion nanoparticles have been proposed to extend photodynamic therapy for treating non-superfcial tumors. In particular, compounds with low phonon energy, like KMgF3, with an optimal synthesis design and a suitable doping system, could be used for this therapy application. This particular matrix allows the incorporation of dopants as transition metals ions (as Mn2+) besides rare-earth elements, minimizing the use of the former. To obtain nanoparticles of suitable size for nanomedicine, we used a factorial experimental design to determine statistical synthesis conditions that signifcantly afect particles’ size. With the proposed synthesis method, it was possible to obtain KMgF3 nanoparticles with sizes ranging from 13.46±0.30 nm to 32.18±0.60 nm, values estimated with the XRD technique and with size distribution suitable for photodynamic therapy. We proved the good correlation between the particle size estimated from transmission electron microscopy images and powder X-ray difraction measurements. According to the statistical analysis, the temperature and the interaction of temperature with MgCl2 concentration signifcantly afect the particle size (signifcance level of 0.05). The present work describes the infuence of solvothermal synthesis parameters on the KMgF3 nanoparticle size for the frst time. The results are particularly interesting for further doping the system and its functionalization, foreseeing the fnal application in cancer treatment.]]></dcterms:abstract>

The accuracy of the method was in the range of 95%–97%; the intra-assay precision was within the range of 1.8%–6.2% expressed as the relative standard deviation, and the interassay precision was within 6.9%–15%. The limits of detection and quantification were 1.8 and 5.4 μg L− 1 , respectively. The validated method resulted very helpful to assess the health risk of As exposure through drinking water and was successfully applied in urine samples collected from wood impregnation plant workers. The methodology can be postulated as a viable alternative to expensive techniques, such as liquid chromatography (HPLC) in combination with inductively coupled plasma mass spectrometry (ICP-MS), for biomonitoring studies.]]></dcterms:tableOfContents>
