<dcterms:abstract>To examine the influence of front-of-pack nutrition information on the perception of healthfulness of ultra-processed products across 2 income levels. DESIGN: A between-participants design was used to compare healthfulness perception of ultra-processed products featuring different front-of-pack nutrition information schemes (guideline daily amount system, traffic light system, and monochromatic traffic light system). PARTICIPANTS: A total of 300 people (aged 18-70 years, 75% female) from Montevideo, Uruguay, participated in the study; half were middle- or high-income people and the other half were low-income people. MAIN OUTCOME MEASURES: Participants were shown the labels of each product and asked to rate their perceived healthfulness and the frequency with which each product should be consumed. ANALYSIS: Results were analyzed using analysis of variance for statistical significance (P < .05). RESULTS: Low-income participants perceived ultra-processed products to be significantly (P < .05) more healthful than did middle- and high-income participants. The lowest perceived healthfulness scores for low-income participants were obtained for products featuring the colored and monochromatic traffic light system whereas no significant differences (P > .05) among schemes were found for middle- and high-income participants. CONCLUSIONS AND IMPLICATIONS: Nutrition education programs aimed at increasing low-income people's knowledge of the nutritional composition of these products and their potential negative effects on health seem to be necessary. Although the inclusion of semidirective front-of-pack nutrition information decreased the perceived healthfulness of low-income people, it seemed unlikely to influence how they perceive these products. <dcterms:abstract>The inclusion of more attention-grabbing and easily interpretable front-of-pack (FOP) nutrition information is one of the public policies that can be implemented to empower consumers to identify unhealthful food products and to make more informed food choices. The aim of the present work was to evaluate the influence of two FOP nutrition labelling schemes - the traffic light labelling and the warning scheme - on consumer food purchases when facing a health goal. The study was conducted with 1182 people from Montevideo (Uruguay), recruited using a Facebook advertisement. Participants were randomly allocated to one of three between-subjects experimental conditions: (i) a control condition with no FOP nutrition information, (ii) FOP nutrition information using a modified version of the traffic light system including information about calorie, saturated fat, sugars and sodium content per portion, and (iii) FOP nutrition information using the Chilean warning system including separate signs for high calorie, saturated fat, sugars and sodium content. Respondents were asked to imagine that they had to purchase food in order to prepare a healthy dinner for themselves and their family, using the website of an online grocery store. Results showed that FOP nutrition information effectively improved the average healthfulness of participants' choices compared to the control condition, both in terms of the average nutritional composition of the purchased products and expenditure in specific product categories. No relevant differences between the effect of the traffic light and the warning system were found.</dcterms:abstract>

DESIGN: Following a between-subjects design, participants completed a simulated weekly food purchase in an online grocery store under one of three experimental conditions: (i) a control condition with no nutrition information, (ii) a traffic-light system and (iii) the Chilean warning system. Information about energy (calories), sugar, saturated fats and salt content was included in the nutrition information schemes. SETTING: Participants were recruited from a consumer database and a Facebook advertisement. SUBJECTS: People from Montevideo (Uruguay), aged 18-77 years (n 437; 75 % female), participated in the study. All participants were in charge of food purchase in the household, at least occasionally. RESULTS: No significant differences between experimental conditions were found in the mean share of ultra-processed foods purchased by participants, both in terms of number of products and expenditure, or in the mean energy, sugar, saturated fat and salt content of the purchased items. However, the Chilean warning system decreased intended purchase of sweets and desserts. CONCLUSIONS: Results from this online simulation provided little evidence to suggest that the traffic-light system or the Chilean warning system in isolation could be effective in reducing purchase of ultra-processed foods or improving the nutritional composition of the purchased products.</dcterms:abstract>

DESIGN: Images of front-of-pack (FOP) nutrition labels (the traffic light labeling system with different numbers of nutrients with low content, and warnings) were evaluated in study 1, whereas product labels featuring the different FOP nutrition labels were evaluated in study 2. SETTING: Online studies conducted in Montevideo, Uruguay. PARTICIPANTS: A total of 1,228 Uruguayan Facebook users. MAIN OUTCOME MEASURES: Perception of healthfulness. ANALYSIS: The researchers used ANOVA to evaluate the influence of FOP nutrition labels on perceived healthfulness. RESULTS: The inclusion of information about low nutrient content in the traffic light system statistically significantly increased the perception of the healthfulness of products with high nutrient content. Nutritional warnings showed healthfulness ratings similar to those of the simplified version of the traffic light system. CONCLUSIONS AND IMPLICATIONS: Information about low nutrient content in the traffic light system might be used to infer health, and thus could raise the perception of healthfulness and decrease the traffic light system's efficacy in discouraging the consumption of unhealthful products. A simplified version of the traffic light highlighting only high-nutrient content or nutritional warnings seems to overcome this problem.</dcterms:abstract>

    <dcterms:abstract>Nutritional warnings have been recently introduced as a new front-of-pack nutrition labelling scheme. Its particular goal is to facilitate the identification of products with excessive content of nutrients, given these are associated with non-communicable diseases. The aim of the present study was to evaluate the influence of nutritional warnings on consumers’ choice of a snack in a choice experiment involving real products. A total of 199 participants were asked to evaluate a series of bread images on a computer screen using eye-tracking glasses. Once they finished the task, they were invited to help themselves a snack from a shelf as a compensation for their participation in the study. A total of 15 snack products with different nutritional composition were included on the shelf. Participants were randomly divided into groups: one that made their choice from a shelf containing products that did not include front-of-package nutritional information, whereas the other chose among products that featured nutritional warnings. Participants in both experiments invested an average of 14 s to select their product. When products were presented with warnings, 50% of the participants fixated their gaze on the warnings during the choice task. Significant differences in the frequency of selection of the products (p = 0.002) were found between the groups. When the warnings were present, participants chose products with fewer warnings and lower average sodium, saturated fat, and sugar content (p < 0.001). These findings confirm the potential of nutritional warnings to encourage more healthful food choices.</dcterms:abstract>

    <dcterms:abstract>Nutritional warnings highlighting products with high content of nutrients associated with non-communicable diseases have emerged as a potentially efficient alternative to discourage consumption of unhealthful products. However, the relative influence of this front-of-pack nutrition information scheme compared to other label features is still under researched. In this context, the aim of the present work was to study the influence of nutritional warnings and other information commonly displayed on food labels to convey health associations on consumers' choice and visual attention. A choice-conjoint study using labels of cookies and crackers was implemented considering the following three variables: front-of-pack nutrition information (nutritional warnings vs. facts up front panel), nutrient claim (present vs. absent) and type of product (conveying health vs. hedonic associations). A total of 124 people completed the task using the monitor of an eye-tracker. Participants were asked to select the label they would prefer to buy if they were in a supermarket. Nutritional warnings were efficient in attracting consumers' attention and required less time and fewer fixations to process than the facts up front panel. In addition, their inclusion on the labels significantly discouraged consumers' choice of labels. However, type of product was the most important variable influencing the choice of both cookies and crackers. Results from the present work confirm the potential of nutritional warnings as directive front-of-pack nutrition labelling scheme and stress that they cannot be expected to cause radical changes in consumers' eating habits due to their competition with other product features. Instead, they are expected to encourage consumers to select the most healthful option within a product category.</dcterms:abstract>

    <dcterms:abstract>Nutritional warning labels are gaining relevance in the region of the Americas as a policy tool to reduce in formation asymmetry and encourage healthier food choices. However, empirical evidence about consumer ex periences with warning labels after implementation is still scarce. In this context, the aim of the present work was to explore the use of nutritional warning labels after policy implementation in Uruguay, using a combination of eye-tracking and self-reported data. The study was conducted in three supermarkets, in two regional capitals, 19 months after the entry into force of the policy. A total of 224 participants were intercepted while entering the facilities of the supermarket and asked to wear a mobile eye-tracker while making their food purchases. Then, they were asked a series of questions about their awareness and use of warning labels. Although participants reported high awareness and understanding of the labels, active search and use at the point of purchase was low. Only 6% of the consumers declared having actively searched for the warning labels and 7% fixated their gaze on the labels. The majority of the participants (72%) who declared having seen the warnings on a product, pur chased it anyway. However, 56% declared having changed their food choice decisions as a consequence of the implementation of the policy. Participants’ accounts about reasons for (not) taking into account the warning labels provide relevant insights for the development of strategies to encourage citizens to increase policy effectiveness and encourage healthier food choices.</dcterms:abstract>

    <dcterms:abstract>An in-depth understanding of how citizens make their food choices is necessary to develop targeted strategies to promote healthier dietary habits. However, studies with vulnerable populations in non-WEIRD (Western- Educated-Industrialized-Rich-Democratic) societies are still scarce. In this context, the present study aimed at exploring the food purchase decisions of adults in charge of children and adolescents living in households experiencing food insecurity in Uruguay, an emerging Latin American country. Semi-structured interviews were conducted with beneficiaries of food assistance programs from both the state and civil society in four Uruguayan cities. The transcripts were analyzed using content analysis based on inductive coding. Three main themes related to food purchase decisions were identified: frequency of food purchasing, food purchase locations, and motives underlying food choice. Income was identified as the key determinant of food choice. Participants reported experiencing challenges for managing their limited household budget, struggling to purchase food throughout the month. They relied on an intricate set of multiple strategies to maximize the quantity of foods they can purchase with their limited household budget. Despite extreme focus on the immediate lack of money, food purchase decisions seemed to be highly rational, instead of driven by automatic or impulsive processes. Results have relevant implications for the development of strategies to promote healthier eating patterns among socioeconomically vulnerable sectors of the population in Uruguay and similar settings.</dcterms:abstract>

The new complexes [VVO2(L1)], [VVO2(L2)], [VIVO(L1-H)(phen))] and [GaIII(L2)2](NO3) were synthesized and characterized by using different techniques. The stability of the vanadium complexes in solution was investigated by EPR and 51V NMR spectroscopies and that of the gallium compound by UV–Vis spectroscopy, 1H NMR and conductivity measurements. While the vanadium complexes show high stability in DMSO, the gallium complex shows very good stability in DMSO and moderate stability in aqueous – DMSO medium.

The cytotoxicity on human tumor cell lines (ovarian A2780, breast MCF7 and prostate PC3 cell lines) that show different sensitivity to cisplatin was evaluated. All the compounds evidenced antiproliferative activity in the micromolar range. The highest cytotoxic activity, in molar units, is shown by [GaIII(L2)2](NO3) (IC50: 1.7 μM) and [VIVO(L1-H)(phen)] (IC50: 2.7 μM) against the ovarian cancer cells. With the exception of [VVO2(L1)], the cytotoxic activity of the ligands and complexes is similar to that of cisplatin in A2780 cells and surpass cisplatin in the other tumor cells. Regarding the activity on T. cruzi, [VIVO(L1-H)(phen)] showed a 10-fold decrease of IC50 with respect to HL1 and an IC50 value (10.7 μM) in the same order of that of the antitrypanosomal drug Nifurtimox (IC50: 6.0 μM). HL2 showed significant growth inhibitory effect on the parasite (IC50: 23.5 μM) and its coordination to Ga(III) lead to a 2-fold increase in activity in molar units (IC50: 14.2 μM). In order to explain the high inhibitory activity of [VIVO(L1-H)(phen)] against the parasite and the tumor cells, the interaction of this compound with plasmid DNA was preliminarily evaluated by AFM. The corresponding images suggest that DNA may be considered as a potential target.</dcterms:abstract>

Attempts to crystallize [Ga(III)(mpo)3] in CH2Cl2 led to single crystals of the reaction product [GaCl(mpo)2], where the gallium(III) ion is in a square basis pyramidal environment, trans-coordinated at the basis to two pyridine-2-thiolato 1-oxide anions acting as bidentate ligands through their oxygen and sulfur atoms. An atypical coordination mode of these potentially tridentate ligands through only the carbonylic oxygen and the azomethine nitrogen (the so-called N,O fashion) was demonstrated by IR spectroscopy and supported by theoretical calculations. <dcterms:abstract>New and environmentally friendly procedures for the determination of nutritious and harmful elements in highly consumed foodstuffs such as vegetables are needed. Three accurate and efficient methods for the extraction of As, Cd, Cu, Ni, Pb and Zn in globe artichoke were optimized and validated. The sample preparation methodologies developed consisted of extraction with diluted acid assisted by either an ultrasonic probe or an ultrasonic bath, and an ozone-based treatment of the acid solution. The elements were determined by flame atomic absorption spectrometry, electrothermal atomic absorption spectrometry and hydride generation atomic absorption spectrometry. Experimental conditions were optimized by means of multivariate experiments. A comparative study using Student's t-test to establish whether there was a difference between using ultrasound (probe and bath) or ozone was performed. The results showed that the three methods were adequate for the extraction of As, Cd, Cu, Ni, Pb and Zn in globe artichoke. Trueness was verified by analysis (n = 6) of a certified reference material and by performing a total digestion with a microwave-assisted procedure. At the 95% significance level, results were statistically equivalent to the certified values and to those obtained by total digestion for all the elements. Analytical precision expressed as relative standard deviation (RSD (%), n = 6) was less than 10% in all cases. Samples of globe artichoke from a Uruguayan family farmer were analyzed. Results showed that globe artichoke fruits and leaves are a promising source of Cu and Ni and particularly they are a good source of Zn.</dcterms:abstract>

    <dcterms:abstract>A study to evaluate nutritional properties of raw edible globe artichoke heads as a source of minerals was performed. To perform a properly approach on this issue the determination of total concentration of minerals is not sufficient, it is necessary to know about the bioaccessibility of each element. Due to the widespread pollution problems, food is not only a source of essential minerals but also contributes to the intake of toxic elements by human beings. To asses both, nutritional properties and food safety of raw edible globe artichoke heads, the concentrations of total arsenic (As), cadmium (Cd), copper (Cu), iron (Fe), nickel (Ni), lead (Pb) and zinc (Zn) were determined in 10 samples from Uruguayan markets. Analytical determinations were performed using flame and electrothermal atomic absorption spectrometry. In all samples, the decreasing sequence of the mean total concentrations was: Fe > Zn > Cu > Ni with values ranges between 35.8 and 57.8 mg kg− 1 (Fe), 27.7 to 42.2 mg kg− 1 (Zn), 5.4 to 7.5 mg kg− 1 (Cu) and 1.9 to 3.4 mg kg− 1 (Ni). In vitro bioaccessibility assays showed that the decreasing sequence of bioaccessibility for these elements was Cu > Zn > Ni > Fe with bioaccessibility factors percentages ranged between 71.3 and 82.3% (Cu), 51.2–64.2% (Zn), 41.3–54.7% (Ni) and 39.5–49.7% (Fe). Total concentrations of As, Cd and Pb were far below the maximum limits established by regional regulations in all samples, presenting negligible bioaccessibility. Results demonstrate that raw edible artichoke heads are a good source mainly of Cu, Zn with an interesting contribution to the daily intake of these essential elements. This novel information provides a starting point for more complex and in-depth evaluations from the nutritional point of view, including the establishment of a recommended daily dietary intake for a non-traditional food.</dcterms:abstract>

Trueness and precision were determined at 0.2 mg kg−1 for the three methods. The modified QuEChERS showed the best performance. The scope of the method was enlarged to 35 GC and 63 LC amenable pesticides, its overall performance was evaluated and validated to artichoke leaves and fruits according to DG-SANTE Guidelines. Different matrix effects were observed for most of the pesticides which were higher for leaves than fruits. Difenoconazole and flutriafol suffered signal suppression in leaves extracts but showed positive matrix effects in fruits. All pesticides were analyzed at or below their Maximum Residue Levels fixed for globe artichoke by the European Union. <dcterms:abstract>A simple, fast, and environmentally friendly method for sample preparation and subsequent determination of Cu, Fe, Mn, and Zn in wheat flour using total reflection X-ray fluorescence (TXRF) was developed and validated. Furthermore, TXRF and two other analytical techniques currently used for elemental analysis in foodstuffs, namely flame atomic absorption spectrometry (FAAS) and electrothermal atomic absorption spectrometry (ETAAS), were compared to confirm the suitability of TXRF for routine and screening analyses of metallic elements in wheat flour. The TXRF sample preparation procedure takes around 6 min and does not require a mineralization step. Although the detection limits of the TXRF technique were higher than those of FAAS and ETAAS, they were suitable for the proposed purpose. The advantages of the proposed method are also discussed. The TXRF method was applied to the analysis of five commercial wheat flour samples representing all brands available in Montevideo, Uruguay. TXRF proved to be suitable for the determination of Cu, Fe, Mn, and Zn in wheat flour, and is a promising technique for routine and screening analyses of bakery foodstuffs.</dcterms:abstract>

    <dcterms:abstract>A new procedure combining dispersive liquid-liquid microextraction and electrothermal atomic absorption spectrometry was proposed for the determination of molybdenum in plants and animal tissue. The optimized conditions for the microextraction procedure were: 150 μL of 0.3 mol L−1 potassium ethyl xanthate (pH 1.4) and 1000 μL of acetonitrile and 50 μL of carbon tetrachloride as dispersive and extractant solvent, respectively. A limit of detection of 0.03 μg kg−1 and a limit of quantification of 0.11 μg kg−1, as well as an enrichment factor of 200, were achieved employing this procedure. Standard reference materials were used for trueness and precision evaluation. No significant differences were found at the 95% confidence level between certified and obtained values, and the precision expressed as repeatability (sr %) was 4.1% for animal tissue and 4.7% for plant material. The method was successfully applied for the determination of Mo in bovine meat and pasture samples from different livestock establishments.

    <dcterms:abstract>Hair is good bioindicator of exposure, due to its ability to store and retain trace elements for long periods of time. But it can be especially useful when hair dyes are used since they may contain potentially toxic salts in their composition. In this context, analytical methods for the determination of bismuth, cadmium, lead, and silver in scalp human hair by electrothermal atomic absorption spectrometry were successfully validated. A total of 60 samples obtained from women between 18 and 60 years were analyzed: 34 dyed hairs and 26 untreated hairs (control). Average results expressed in dry weight (dyed/ control) for each element were 2.34/0.49 μg g− 1 (silver), 0.142/0.139 μg g− 1 (bismuth), 0.055/0.054 μg g− 1 (cadmium), and 2.09/0.99 μg g− 1 (lead), respectively. These results agreed with those previously reported for non-exposed populations. A statistically significant higher Ag concentration in dyed hairs was observed, suggesting the bioaccumulation of this element. The associations between metal concentration and variables of interest (age, education, smoking habit, dye brand, use of dietary supplements) were investigated. A strong Pearson correlation was found for the pair Ag/Pb (r = 0.494, p < 0.05). Also, strong associations between lead levels and all the selected variables were observed (p < 0.05), while strong associations between silver levels with age and dye brand and association between cadmium levels and smoking habit were found. Furthermore, several commercial hair dye brands were analyzed to verify compliance with cosmetic regulations. This constitutes the first study of such characteristics performed in Uruguay, with worldwide relevance.</dcterms:abstract>

    <dcterms:abstract>Moringa stenopetala is considered a superfood due to the many bioactive compounds that it provides to the diet. However, like all edible plants, it is mandatory to guarantee food safety. Thus it is necessary to develop analytical methods that can rapidly and accurately determine hazardous pollutants, to evaluate compliance with food regulations. In this regard, two multi-component procedures were developed trying to cover some of the main organic and inorganic potential contaminants. A microwave-assisted digestion followed by electrothermal atomic absorption spectrometry was used for arsenic, cadmium, and lead determination, while a modification of the QuEChERS protocol followed by gas chromatographytandem mass spectrometry was employed for the determination of 55 pesticides from different families. Both analytical methods were thoroughly validated according to international guidelines. The analyzed samples obtained from the Uruguayan market showed compliance with both, national and international, food regulations. The holistic approach employed in this research is not commonly presented in the literature, thus constituting a novel way to face food safety.</dcterms:abstract>

    <dcterms:abstract>
In May 2020, Uruguay was one of the few Latin American countries that had managed to control the outbreak of
COVID-19 without mandatory curfews or quarantines. However, several social distancing measures created a major disruption in different aspects of the daily life of Uruguayan citizens. In this context, the objectives of the present work were i) to identify changes in eating habits perceived by Uruguayan citizens as a consequence of the COVID-19 pandemic, and ii) to explore factors associated with different perceived changes on eating habits. A cross-sectional online study was conducted with 891 participants, recruited using an advertisement on Facebook
and Instagram. Fifty-one percent of the participants indicated that their eating habits had changed since the detection of the first cases of COVID-19 in Uruguay. Large heterogeneity in the categorization of the changes existed: 45% of the participants regarded the changes as positive, 32% as negative and 23% as neither positive nor negative. A multinomial logistic regression analysis was used to study the influence of explanatory variables in the likelihood of belonging to groups who reported different changes in eating habits (no changes, positive,
negative, or neither positive nor negative changes). Household income and reliance on instrumental and emotional support increased the likelihood of reporting positive changes in eating habits, whereas negative changes were associated with a reduction in household income due to COVID-19 and the coping strategies selfdistraction and self-blaming. Insights for policy making to reinforce positive effects and minimize threats to
healthy eating are discussed.
</dcterms:abstract>

    <dcterms:abstract>A Gram-stain-positive, alkaliphilic, moderately halophilic, cocci-shaped actinobacterium (strain M8T) was isolated from a sample of soda lake sediment (Lake Magadi, Tanzania). The isolate was heterotrophic, strictly aerobic, catalase-positive, oxidase-negative and formed orange-pigmented colonies in solid media. It utilized various sugars and organic acids as sole carbon sources. The organism grew at 10-38 °C, at pH 7.5-12.0 and in the presence of 1-12 % (w/v) NaCl, with optimal growth occurring at 30 °C, at pH 10 and in the presence of 5 % (w/v) NaCl. Comparative 16S rRNA gene sequence analysis showed that strain M8T belonged to the genus Nesterenkonia, sharing the closest similarities to Nesterenkoniahalobia DSM 20541T, Nesterenkoniahalophila YIM 70179T and Nesterenkoniaaethiopica DSM 17733T (97.5, 97.5 and 97.1 %, respectively). The characteristic diamino acid of strain M8T was found to be lysine and the polar lipids detected were diphosphatidylglycerol, phosphatidylglycerol, phosphatidylinositol, two unidentified glycolipids and two unidentified phospholipids. The DNA G+C content was 61.8 mol% (genome). The strain contained MK-7, MK-9 and MK-10 as the respiratory quinones, and the major fatty acids (>10 %) comprised anteiso-C17 : 0 and anteiso-C15 : 0. On the basis of phylogenetic analyses and phenotypic data, strain M8T is considered to represent a novel species, for which the name Nesterenkonianatronophila sp. nov. is proposed. The type strain is M8T (=JCM 32100T=CGMCC 1.16706T=MCC 3367T).</dcterms:abstract>

Two enantiomers of the benzazepinoquinoline molecule and one molecule of heptane form the asymmetric unit of this centrosymmetric triclinic ( P \overline{1}) crystal. All the molecules in the crystal present disorder. Substitutional disorder is observed for the benzazepine molecules, where a minority conformer of the R enantiomer replaces the main conformer of the S enantiomer and vice versa . Positional disorder is found for the heptane solvent molecule, which occupies a void left by the independent enantiomers of both conformers.</dcterms:abstract>
