    <dcterms:abstract><![CDATA[Projective mapping (PM), one of the most holistic product profiling methods in approach, is increasingly being used to uncover consumers' perception of products and packages. Assessors rely on a process of synthesis for evaluating product information, which would determine the relative importance of the perceived characteristics they use for mapping them. Individual differences are expected, as participants are not instructed on the characteristics to consider for evaluating the degree of difference among samples, generating different perceptual spaces. Individual differences in cognitive style can affect synthesis processes and thus their perception of similarities and differences among samples. In this study, the influence of the cognitive style in the results of PM was explored. Two consumer studies were performed, one aimed at describing intrinsic sensory characteristics of chocolate flavoured milk and the other one looking into extrinsic (package only) of blueberry yogurts. Consumers completed the wholistic-analytic module of the extended Verbal Imagery Cognitive Styles Test &amp; Extended Cognitive Style Analysis-Wholistic Analytic Test, to characterize their cognitive style. Differences between wholistic and analytic consumers in how they evaluated samples using projective mapping were found in both studies. Analytics separated the samples more in the PM perceptual space than wholistic consumers, showing more discriminating abilities. This may come from a deeper analysis of the samples, both from intrinsic and extrinsic point of views. From a sensory perspective (intrinsic), analytic consumers relied on more sensory characteristics, while wholistic mainly discriminated samples according to sweetness and bitterness/chocolate flavour. In the extrinsic study however, even if analytic consumers discriminated more between packs, they described the products using similar words in the descriptive step. One important recommendation coming from this study is the need to consider higher dimensions in the interpretation of projective mapping tasks, as the first dimensions could underestimate the complexity of the perceptual space; currently, most applications of PM consider two dimensions only, which may not uncover the perception of specific groups of consumers.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[TDS describes the evolution of the dominant sensory attributes during consumption. Dominance can be assessed as the sensation that captures the attention, the most striking, or the new sensation that pops up, but not necessarily the most intense. This wide definition implies that individual assessors within a panel might assess dominance differently, and even the same assessor could be using different strategies for determining the dominant attribute the same product evaluation. In this context, the aim of the present work was to explore how trained assessors and consumers conceptualize dominance and how the different interpretations and definitions of dominance might influence results of a TDS test. Two studies were performed, one study with a highly trained panel of 10 assessors and another study with 108 consumers. Trained assessors evaluated three bread samples via TDS and their conceptualization of dominance was explored through an immediate retrospective verbalization task. Consumers evaluated their temporal perception of a commercial milk chocolate sample and answered a series of open-ended questions. Results showed that dominance is a complex construct that is not related to a single aspect of sensory perception, and that different conceptualizations of dominance within a panel can hinder an accurate interpretation of results from TDS studies. Various aspects of dominance are highlighted and discussed: how attributes are selected, which are the drivers of transitions between dominant attributes, how the competitive effects of attributes and modalities are manifested, how some phenomena like dumping or dithering could happen at some stages and why. Practitioners are advised to ensure that their interpretation of TDS data is made within the context of the dominance definition they instructed assessors to use. Implications of the results for the application of TDS with trained assessors and consumers are discussed.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>Sugar intake among children has raised concern worldwide as it exceeds nutritional recommendations.<br />Sugar contributes to the daily energy intake, without providing additional nutritional value and is associated with several negative health outcomes. Sugars added to foods during industrial processing have been identified as the main source of sugar in children's diets. The present work critically discusses the role of the food industry in contributing to children's excessive sugar intake worldwide, and the strategies that have<br />been encouraged or implemented to reduce the sugar content in products targeted at children. The risk of the current sugar reduction practices in products targeted at children is discussed based on recent scientific evidence. Children's heightened preference for sweetness may not justify the availability of highly sugary products for children. Although research suggests that children readily accept less sweet products, there is still<br />some wariness in the food industry to reduce sweetness intensity. This has strengthened the use of non-nutritive sweeteners (NNS), focusing on maintaining the sweetness level.<br />However, emerging evidence suggests that this may not be the best approach.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>The objective of the present studywas to evaluate children's hedonic sensitivity to sugar reduction in three dairy products: vanilla milk desserts, chocolate-flavoured milk, and vanilla yoghurt. For each product, a regular sample and five samples with different reduction in added-sugar content were formulated. The regular sample contained the sugar content of commercial products available in the marketplace. The<br />reduction in added-sugar content ranged between 10.0 and 41.0%. A total of 126 children (8e13 years old) participated in the study. An A-not A test was used to evaluate children's hedonic sensitivity to sugar reduction. Sugar reductions up to 27% in chocolate flavoured milk and vanilla yoghurt, and up to 19% in vanilla milk desserts, did not cause significant changes in children's hedonic reaction. These results confirm that sugar-reduction strategies can be easily implemented in the dairy industry without significant risk of affecting sample appreciation and market share.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>Children&rsquo;s involvement in new product development may contribute to ensure that healthy alternatives meet their wants and needs. Co-creation is a potential approach to bridge the world of the child and the grown-up product developer. In this context, the objective of the present work was to explore the potential of a cocreation approach with children to develop a healthy dairy product. A total of 52 school-aged children (54%<br />girls, 6&ndash;13 year old) recruited from an after-school club in Montevideo (Uruguay) participated in co-creation workshops. Two sessions were carried out. In the first session, children developed a dairy product using a set of ingredients and proposed strategies to promote their product. Children showed a high level of engagement during the activity and provided actionable ideas for product development. Three key factors drove the product formulation (familiarity, hedonics, and healthiness), whereas common communication strategies were proposed by the participants to promote their products. In the second session, children evaluated four products developed<br />by the researchers based on children&rsquo;s ideas. The products showed high overall liking scores (5.9 to 7.9) despite the inclusion of novel and healthy ingredients and the lower sugar content compared to similar commercial products available in the Uruguayan marketplace. These results show the potential of involving children in the co-creation of healthy dairy products. Considering the lack of published studies regarding the use of co-creation approaches with children in the food domain, the present work provides useful insights for the implementation of<br />co-creation to develop innovative products with and for children.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The study aimed to assess the application of the Approach avoidance task (AAT) with children to measure implicit motivational tendencies towards foods differing in sweetness and calorie content and to explore the relationship between approach bias and explicit measurements of expected liking, attitudes, and hunger state and their relation to paired-preference tasks. The simplicity and game-like procedure of the AAT, where participants use a joystick to pull or push pictures, seems particularly suitable to measure implicit motivational biases in children. However, to our knowledge, this approach has not been used with children in a food related context.<br />Children aged 9&ndash;11 participated in the study (n = 114). Their implicit bias towards pictures of snacks was measured via AAT. The test instruction was based on pushing or pulling the joystick according to picture category, food vs. non-food: food (18 snack pictures varying in sweetness and calorie) vs. non-food (18 pictures visually similar to the respective food stimuli). Further, children rated their expected liking of the snack pictures, answered an attitude questionnaire related to health and sugar consumption, and completed two paired preference tests tasting real samples under blind condition and choosing between a sugar and no-sugar added chocolate milk take-home pack.<br />The percentage of non-valid AAT responses was relatively high, leading to low testing power. There was a significant difference in approach bias between food pictures and non-food pictures; approach bias was positive for food and slightly negative for non-food. Within food pictures, no significant effect of sweetness nor calorie was found. Nevertheless, children&rsquo;s approach biases were linked to their expected liking ratings, which revealed a clear preference towards high sweetness and high calorie snacks. Individual differences in children&rsquo;s approach bias to pictures differing in sweetness and calorie content were related to their hunger state but not to their attitudes or preference towards chocolate milk, indicating relevance for situational food choices. In the present study, questionnaire-based measurements (affective and cognitive attitude towards sugar, sugar craving and using food as reward) were however associated with children&rsquo;s preference towards chocolate milk (blind and/or informed). Higher scores in the measured attitude subscales craving for sweet food, using food as reward, affective attitude towards sweet food and cognitive attitude towards sweet food were associated with higher odds to choose the sugar added chocolate milk. Methodological considerations and recommendations with regards to the use of approachavoidance testing with children are critically discussed.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>To tackle current nutritional issues like obesity, it could be valuable to involve children in the development of healthy food products that they will actively chose and enjoy. The aims of the present exploratory study were (i) to assess a methodology for early-stage idea generation through co-creation, for the development of healthy snacks with pre-adolescents, and (ii) to compare two settings, creative focus groups (CFG) and an online community (ONL). Three steps were defined to allow the gradual exploration of the topic and mutual learning<br />throughout the process: (1) Show &amp;Tell: photo taking and -elicitation to understand what children ate; (2) Reflect: a sorting task of the pictures to discuss and reflect on snacking practices (3) Create: an idea generation step, in which a newspaper article describing an idea for a new healthy snack was created. To increase engagement and creativity, gamification strategies were used. Our results demonstrated that children (preadolescents) can create new food product ideas with the proposed process, using enabling and creative techniques. In the CFG the trained moderator could steer the group to the co-creation goal. The setting facilitated teamwork and group learning, collaborative ideas considering preferences of peers and produced a few detailed and mostly actionable ideas. In the ONL less control over the process was possible. The setting produced many ideas varying in the degree of<br />detail and actionability focusing on individual preferences. The feedback and observations from our study, particularly in the CFG setting, implied that the creative approach was highly engaging for participants. Further research is necessary to assess the potential of initial ideas developed by pre- adolescents.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Food losses, defined as a reduction in the quantity and quality of food during production and storage, impact food safety and security. Losses caused by plant pathogens are among the most significant. Chemical pesticides have been extensively used to prevent microbial diseases. Their toxicity and reduced efficacy, however, have encouraged investigators to develop alternatives. Alternatives based on microbial biopesticides tend to be safer and more environmentally benign than conventional pesticides. In recent years, formulations based on biopesticides have progressively increased in number and diversity and have attracted commercial interest. Understanding the mechanisms by which biopesticides control the disease is fundamental to achieving optimal disease control. Biocontrol mechanisms can be divided into two main categories: those related to the ability to inhibit pathogens or their virulence factors, and those that enhance host plant fitness and induce disease resistance. Here, the first type of strategy is reviewed, which is directly mediated by physical contact between biocontrol agents and pathogens or indirectly by exposure of a pathogen to antimicrobial or microbial-inhibiting compounds produced by the microbial antagonist. Mechanisms involving physical contact include mycophagy, destruction of pathogenic bacteria by bacteriophages or predation, and disease inhibition by topical applications of specific dsRNA. Indirect mechanisms that do not involve direct contact with a pathogen include the production of antimicrobial compounds, competition, and virulence factor suppression by quorum quenching.     <dcterms:abstract><![CDATA[Contextual and individual variables have been shown to play a key role in shifting consumers' emotional reaction to food products. Socio-economic status (SES) influences consumer past and present experiences with food products, as well as the social and personal meanings attached to foods, which can strongly affect their emotional associations. In this context, the aim of the present work was to explore differences in food-related emotional associations with foods of Brazilian consumers from low and middle/high SES. A total of 300 Brazilian participants of different SES were asked to complete four free-listing tasks related to the emotions they associated with the foods they liked the most/least and the foods they associated with positive/negative emotions. Participants elicited a wide range of associations, most of which were related to moods and emotions. The identified moods and emotions have been included in word-based emotion questionnaires. Although similar terms were elicited by both SES groups, differences in their frequency of mention were found. In addition, SES groups also differed in the foods they associated with positive and negative emotions, which could be explained by differences in their eating patterns. Results stress the need to further study the influence of SES on food-related emotional associations.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Plant growth-promoting bacteria of the genus Azospirillum are present in the rhizosphere and as endophytes of many crops. In this research we studied 40 Azospirillum strains isolated from different plants and geographic regions. They were first characterized by 16S rDNA restriction analysis, and their phylogenetic position was established by sequencing the genes 16S rDNA, ipdC, hisC1, and hisC2. The latter three genes are involved in the indole-3-pyruvic acid (IPyA) biosynthesis pathway of indole-3-acetic acid (IAA). Furthermore, the suitability of the 16S-23S rDNA intergenic spacer sequence (IGS) for the differentiation of closely related Azospirillum taxa and development of PCR protocols allows for specific detection of strains. The IGS-RFLP analysis enabled intraspecies differentiation, particularly of Azospirillum brasilense and Azospirillum lipoferum strains. Results demonstrated that the ipdC, hisC1, and hisC2 genes are highly conserved in all the assessed A. brasilense isolates, suggesting that these genes can be used as an alternative phylogenetic marker. In addition, IAA production determined by HPLC ranged from 0.17 to 98.2 &mu;g mg(-1) protein. Southern hybridization with the A. brasilense ipdC gene probe did not show, a hybridization signal with A. lipoferum, Azospirillum amazonense, Azospirillum halopreferans and Azospirillum irakense genomic DNA. This suggests that these species produce IAA by other pathways. Because IAA is mainly synthesized via the IPyA pathway in A. brasilense strains, a species that is used worldwide in agriculture, the identification of ipdC, hisC1, and hisC2 genes by PCR may be suitable for selecting exploitable strains]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Azocasein, diffused into gels after polyacrylamide gel electrophoresis, provides a useful substrate for simple and rapid protease detection. After electrophoresis, the gels are incubated in an azocasein solution, immersed in trichloroacetic acid and then treated with NaOH. Proteolytic zones appear as uncolored bands on an orange background. The gels can be stored in trichloroacetic acid for months. This technique gives good results with serine proteases, acid proteases and metalloproteases. The method can be used under nondenaturing conditions and in the presence of sodium dodecyl sulfate. The sensitivity of this method is at the submicrogram protein level for trypsin.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Highly variable drugs have been defined as drugs with a residual variability of more than 30% in terms of the ANOVA coefficient of variation. Different approaches have been proposed during the last years to deal with this problem but the topic remains controversial. Itraconazole, a highly variable drug, has low bioavailability with a high CYP3A4 presystemic biotransformation. Also, it has a very poor aqueous solubility which is very dependent on the pH of the dissolution medium. The pregnane X receptor (PXR) has been shown to mediate the genomic effects of progesterone and estradiol in the expression of the cytochrome P-450 gene family, which plays an important role in the metabolism of hormones and xenobiotics. During the menstrual cycle both hormone concentrations vary, providing a rationale for the more variable CYP3A4 activity in women. The analysis of the data of an itraconazole bioequivalence study involving 24 healthy volunteers (12 men and 12 women) carried out by other investigators enables us to conclude that women have less oral bioavailability and more variable AUC than men. Low bioavailability seems to be related with the higher stomach pH observed in women and variability with the aforementioned menstrual cycle incidence on both pH and CYP3A4 expression. The lower variability observed in men made it possible to discriminate differences in AUC&rsquo;s variability displayed by each brand.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The formation of selenium species in some biological processes involves the generation of ionic and radical intermediates such as RSe●, RSe&minus;, RSeO●, and RSeO&minus;, among others. We performed a theoretical study of the possible mechanisms for the reaction of the two simplest Se radicals&mdash;the hydroselenyl (HSe●) and selenenic (HSeO●) radicals, in which the possible products, intermediates, and transition-state structures were investigated. Density functional theory (DFT) was applied at the B3LYP/6&ndash;311++G(3df,3pd) level and the Ahlrichs Coulomb fitting basis sets were employed with an effective core potential (ECP) for both Se atoms. The same procedure was used to calculate the electronic density. All calculations were also performed using the M06-2X functional, which describes weaker bonds better than B3LYP does. In the reaction of interest, the so-called CR complex (HSe&middot;&middot;&middot;&middot;SeOH) is formed initially. After passing through the transition state TS1, cis-HSeSeOH is obtained as a product. If a low barrier is then overcome (passing through the transition state TS32), the trans-HSeSeOH species is obtained. The CR complex can also rearrange into the intermediate INT after overcoming the barrier presented by the transition state TS2. Additionally, the decomposition of INT to H2O and 1Se2 is possible through another transition state. This reaction is not included in this study. We also observed a second possible route for the conversion of INT to one of the HSeSeOH species; this route occurs through two pathways (with transition states TS31 and TS32). A comparison of some of the results with those obtained for sulfur analogs along the same pathways is also presented in this work.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The coloration of Citrus fruits is related with the concentration of carotenoids, isoprenoid pigments of 40 carbon atoms (C40). Rodrigo et al. and Ma et al. reported a CCD4-type citrus dioxygenase responsible for the generation of C30 apocarotenoids providing a reddish-orange pigmentation to the peel of many mandarins and oranges. Among them, CCD4b was the first case described of a dioxygenase that cleaves carotenoids C40 in the double bond 7', 8' or 7, 8, generating &beta;-citraurin or 8-&beta;-apocarotenal. Here we report the three-dimensional structures of CCD4a and CCD4b, modeled by sequence homology (2BIW) and validated by molecular dynamics (MD). Docking calculations were performed in CCD4a and CCD4b structures with thousands of rotated initial carotenoid conformations and all the possible poses in the active site were found. The interaction energy was measured by means of ASE scoring, Amber99 refinement and London &Delta;G rescoring. For the case of CCD4a model, the results showed London &Delta;G score of -19, -17 and -15&thinsp;kcal/mol for zeaxanthin, &beta;-cryptoxanthin and &beta;-carotene, respectively. The same sequence in the estimated interaction strength for the three ligands was obtained using MD. The interaction energy of CCD4b indicated that, in agreement with experimental data, zeaxanthin and &beta;-cryptoxanthin could be cleaved by the enzyme, &beta;- and &alpha;-carotene have chances to be oxidized and lycopene has not good interaction energy to be predicted as substrate. <p>Las biomol&eacute;culas obtenidas por fosforilaci&oacute;n del is&oacute;mero myo del inositol constituyen un grupo de m&aacute;s de 25 especies presentes en todas las c&eacute;lulas eucariotas: los myo‐inositol fosfatos (InsP). Presentan entre s&iacute; una estrecha relaci&oacute;n metab&oacute;lica, encontr&aacute;ndose en concentraciones variables en los distintos compartimentos biol&oacute;gicos. Si bien las funciones biol&oacute;gicas de los InsP est&aacute;n lejos de ser elucidadas, las nuevas ideas sobre el tema destacan la importancia de la interacci&oacute;n de estas mol&eacute;culas con los iones met&aacute;licos. Es as&iacute; que el estudio de la especiaci&oacute;n y estructura qu&iacute;mica de este tipo de sistemas brindar&aacute; informaci&oacute;n de gran valor en la gesti&oacute;n racional de los experimentos in vitro con este tipo de biomol&eacute;culas, as&iacute; como en la dilucidaci&oacute;n de su funci&oacute;n biol&oacute;gica, y en la generaci&oacute;n de estrategias de s&iacute;ntesis de agonistas y antagonistas con valor terap&eacute;utico. En este marco, este trabajo ha estudiado el patr&oacute;n de reactividad qu&iacute;mica frente a cationes met&aacute;licos de los tres inositol fosfatos m&aacute;s relevantes en medios biol&oacute;gicos: InsP6, Ins(1,3,4,5,6)P5 e Ins(1,2,3)P3. A partir de estudios por potenciometr&iacute;a de alta resoluci&oacute;n se lograron determinar las constantes de equilibrio de protonaci&oacute;n y complejaci&oacute;n en soluci&oacute;n para los sistemas conteniendo cada uno de los tres inositol fosfatos mencionados, en ausencia y presencia de cationes met&aacute;licos mono o multivalentes. Los resultados indican la existencia, adem&aacute;s de las formas libres de ligando y metal, de dos tipos de especies met&aacute;licas claramente diferenciadas: complejos 1:1 metal:InsP y complejos polinucleares. La predominancia relativa de cada tipo de compuesto result&oacute; dependiente de algunas caracter&iacute;sticas del sistema, como la relaci&oacute;n metal:ligando, la naturaleza del metal e inositol fosfato, y el pH. Asimismo, para algunos sistemas conteniendo InsP6 e Ins(1,3,4,5,6)P5, se caracterizaron las fases s&oacute;lidas obtenidas en condiciones de exceso de ion met&aacute;lico y se determin&oacute; su solubilidad. Esto permiti&oacute; incluir de forma expl&iacute;cita los equilibrios de precipitaci&oacute;n respectivos y describir, de forma completa, el comportamiento qu&iacute;mico de estos InsP frente a los iones m&aacute;s relevantes desde el punto de vista biol&oacute;gico. 12 Resumen Tomando en consideraci&oacute;n el vac&iacute;o estructural existente en este campo, este trabajo se ha centrado en las caracter&iacute;sticas estructurales m&aacute;s importantes de algunas de las especies en soluci&oacute;n y al estado s&oacute;lido. Las t&eacute;cnicas aplicadas incluyeron RMN de 31P en soluci&oacute;n, voltamperometr&iacute;a c&iacute;clica, c&aacute;lculos computacionales, espectroscop&iacute;a UV‐visible, infrarroja y Raman, y RMN de 13C al estado s&oacute;lido. El tratamiento de los datos recabados permiti&oacute; analizar la secuencia de protonaci&oacute;n de los ligandos y su influencia en los procesos de complejaci&oacute;n. Por otra parte, un an&aacute;lisis computacional de las preferencias conformacionales de los distintos InsP revel&oacute; que mientras que en soluci&oacute;n puede operar un cambio conformacional gatillado por el pH y la relaci&oacute;n metal:ligando, al estado s&oacute;lido el InsP6 parece existir en una mezcla de estados conformacionales o en una conformaci&oacute;n distorsionada intermedia. Los resultados obtenidos fueron finalmente aplicados al modelado del comportamiento qu&iacute;mico de los tres inositol fosfatos en medios que simulan el ambiente intra o extracelular, as&iacute; como en los procesos de digesti&oacute;n.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Glycerol is a side product of biodiesel production which is available in the world market at relatively low cost and could be used to obtain other valuable products. H2 and H2-CO mixtures can be obtained from glycerol by steam reforming using Ni based catalysts. NiLaZr catalysts prepared by a coprecipitation technique were tested in the steam reforming of pure glycerol. The tests were performed at 500 and 650 &deg;C and at glycerol:water molar ratios 1:6 and 1:12. Glycerol conversion to gas phase products and H2 yields were greatly improved with the increase of Ni loading from 5 to 15 %. The addition of 0.5 % of Rh is also very effective at low temperature to attain almost total glycerol conversions and high H2 yields. The catalyst containing 15 % of Ni and the NiO and La2Zr2O7 phases showed the best catalytic performance with glycerol conversion above 99 % and a H2 yield close to the thermodynamic value at 650 &deg;C. This catalyst also showed the best results in term of stability and low carbon formation. Fast deactivation of the Rh impregnated catalyst is ascribed to its ability to yield carbon by dissociation of C&ndash;C and C&ndash;H bonds in glycerol and other C1&ndash;C3 intermediates. Carbon morphology is greatly influenced by Ni interactions with the rest of the catalyst structure.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The biodiesel industry generates crude glycerol (CG) at the rate of 10% of the amount of biodiesel produced. With the production of this biofuel increasing, a large amount of CG is produced each year. This results in low price for it and its final disposal becomes a significant problem. Herein, steam reforming represents a viable route to valorize this biodiesel by-product into hydrogen. The performance of Ni&ndash;La&ndash;Zr catalysts (15 wt%) for steam reforming of a CG without any purification treatment has been investigated at atmospheric pressure and at 500 &deg;C and 650 &deg;C. These materials were prepared using a coprecipitation method with oxalic acid. At 650 &deg;C, the catalyst calcined at 850 &deg;C presents higher catalytic activity and stability and displays better resistance to deactivation by carbon formation than the catalyst calcined at 700 &deg;C. This behavior can be attributed to several causes: higher surface nickel content, higher catalyst reducibility and the presence of oxygen vacancies formed as a consequence of the partial substitution of nickel atoms into the pyrochlore structure during the formation of the biphasic system, which is related to mechanisms that act in the removal of carbon deposits on the catalyst.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The effect of partial substitution of lanthanum by magnesium on the catalytic activity of the Ni-La2Zr2O7 catalyst in the biogas tri-reforming reaction was studied. Four catalysts, Ni-La2-xMgxZr2O7-δ (x = 0.25, 0.5, 0.75, and 1), were prepared using a modified polymeric precursor method, characterized using several techniques, and evaluated at 800 ◦C with a sub-stoichiometric molar feed composition of CH4/CO2/H2O/O2 = 1/0.33/0.33/0.08. The catalyst with x = 0.5 showed the best performance, which is attributed to its optimum properties of nickel particle size, metal-support interactions, and basicity. A stability test was performed with this catalyst using a molar feed composition of CH4/CO2/H2O/O2 = 1/0.33/0.67/0.08, previously optimized to obtain a synthesis gas with a H2/CO ≈ 2 molar ratio for 100 h, and compared with a commercial steam reforming catalyst. The catalyst with x = 0.5 exhibited higher CH4 and CO2 conversions, a lower amount of carbon deposited, and a lower degree of nickel particle sintering.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Children&rsquo;s sugar intake has raised concern worldwide as it exceeds nutritional recommendations. Although sugars are naturally present in food, sugars added to foods during industrial processing are currently the main source of sugar in children's diets. In particular, dairy products, which are generally recommended to be part of children diets, have drawn attention due to their high content of sugar. In this context, the main objective of this thesis was to explore different sugar reduction strategies in dairy products targeted at children. Results showed that sugar reduction of dairy products targeted at children available in the Uruguayan marketplace is possible. A direct sugar reduction up to 25% did not have a significant impact on children hedonic perception in three dairy products. Meanwhile the use of taste-odor-texture cross-modal interactions allowed to minimize the impact of sugar reduction on the sensory characteristics of dairy desserts. Co-creation with children was identified as a feasible approach to develop innovative healthy dairy products with high acceptance among children. Finally, package information influenced parent&rsquo;s healthiness perception and choice of snacks for their children, stressing that packaging regulations should play a key role as part of the comprehensive set of strategies that should be implemented to reduce children's sugar intake. Overall, results from this work provide useful insights to food scientists for the development of sugar reduced products targeted at children, as well as valuable information for policy makers to design programs to reduce children&rsquo;s sugar intake at population level.]]></dcterms:abstract>
