<dcterms:abstract>The stability of polyphenols in muffins, enriched with strawberry, black currant, raspberry and sour cherry pomace (50 g/kg), baked in a conventional and halogen oven, at three different temperatures (140, 180 and 220 C), was studied. The most unstable compounds were anthocyanins (36e97% lost), in contrast the flavonol glycosides were the most stable (0e21% lost). Over 100% recovery was observed for neochlorogenic acid and ellagic acid (95e120% and 341e823%, respectively). The increase of free ellagic acid content in muffins enriched with strawberry or raspberry was positively correlated with the baking time (r ¼ 0.879 and r ¼ 0.944, respectively) and was the result of thermal hydrolysis of ellagitannins and ellagic acid glycosides. The highest temperature combined with a short baking time had the best effect on the preservation of polyphenols, however, since the polyphenol composition can be expected to vary in different fruits, each case should be considered separately, in order to achieve the most favorable nutritional effect of baked products enriched with fruit pomace. The sensory evaluation showed that muffins enriched with 50 g/kg of fruit pomace were competitive with control muffins, with the added benefit of having a higher nutritional value.</dcterms:abstract>

    <dcterms:abstract>
Hanseniaspora vineae is a non-Saccharomyces yeast that has a powerful impact on the sensory profile of wines. Its effect on the aromatic profile of non-aromatic grape varieties, such as Albillo Mayor (Vitis vinifera, L.), during vinification is a useful biotechnology to improve sensory complexity. Fermentation in steel barrels using Hanseniaspora vineae and sequential inoculation with Saccharomyces cerevisiae have been used to study the formation of terpenes and cell lysis in the production of Albillo white wines. The GC-MS analysis profile shows a significant effect of H. vineae fermentation on the contents of terpenes (3), mainly in linalool (>3), -citronellol (>4), geraniol (>2) and-terpineol (2). The contents of several polyoxygenated terpenes and some volatile phenols with a spicy aroma were increased during fermentation. In summary, Hanseniaspora vineae releases a large number of cell wall polysaccharides during fermentation that affect wine palatability and structure.
Hanseniaspora vineae is a powerful bio-tool to enhance the fruitiness, floral notes and freshness in non-aromatic white varieties.
</dcterms:abstract>

    <dcterms:abstract>Governments worldwide are increasingly mandating the inclusion of graphic and textual warnings on the packages and advertisements of processed products with high content of nutrients associated with noncommunicable diseases (NCDs). The aim of the present study was to assess the impact of nutritional warnings on the mental associations raised by advertisements featuring ultra-processed products. An online experiment was performed with a convenience sample of 380 Uruguayan participants. Participants were exposed to either
control advertisements or advertisements featuring black octagonal nutritional warnings. Right after watching the advertisements, they were asked to complete a word association task. Responses were grouped into 20 categories following inductive coding. A generalized linear model was used to assess the effect of experimental condition on the likelihood of providing responses within each of the identified categories. Participants exposed to the advertisements with (vs. without) warnings were more likely to provide responses related to NCDs or nutritional warnings. Meanwhile, no significant differences were found in the frequency of mention of categories related to sensory, hedonic, emotional, or social aspects linked to consuming the products between participants
exposed to advertisements with and without warnings. These results suggest that nutritional warnings may be a promising strategy to make consumers aware of the nutritional characteristics of ultra-processed products without affecting the ability of advertisements to convey their intended message.</dcterms:abstract>

    <dcterms:abstract>
Although the sensory characterization of mandarins has usually been performed by trained assessors, in recent years, the methodologies that depict sensory descriptions from the perception of consumers, such as the checkall- that-apply (CATA) questionnaires have become very popular. In this work, an exploratory study was first carried out using a focus group (FG) technique to determine attributes and aspects that influence the decision to purchase mandarins. Secondly, the consumer panel recruited 100 regular mandarin consumers that were randomly divided into two groups. Group “A” received segments of 15 mandarins. Group “B”, instead of receiving the same mandarins in segments, they received them as a whole fruit having to peel them by themselves. Both groups evaluated the total acceptability with a 9-point hedonic scale and answered a CATA questionnaire composed of 38 terms for Group “A” and 52 terms for Group “B”. Although the consumers in the FG described an "ideal" mandarin as easy-to-peel, no significant difference (p > 0.05) was found in the acceptability
between groups “A” and “B”. Characteristics such as sweet, very sweet, fresh smell, sweet smell, bright, fruity taste, fresh flavor, typical flavor, balanced taste and nice flavor were strongly and positively correlated with overall consumers’ acceptance.
</dcterms:abstract>

    <dcterms:abstract>Purpose Solid dispersions (SDs) of a poorly water-soluble drug were prepared, and their physicochemical properties were compared to those of control physical mixtures (PMs). Among the multiple techniques used to characterize the solid state of preparations, confocal micro Raman spectroscopy (CMRS) was used as a non-destructive tool to qualitatively probe content uniformity and distribution of drug and carrier. Methods SDs and PMs of drug (fenbendazole, FBZ) were prepared containing two different carriers (poloxamer P188 or P407) with different drug polymer ratios. The preparations were characterized by powder X-ray diffractometry, Fourier transform infrared spectroscopy, thermal analysis, scanning electron microscopy, and in vitro dissolution assay. In addition, CMRS technique and principal component analysis (PCA) were used in order to statistically define the content uniformity and distribution of the drug within the polymeric matrix. Results In vitro dissolution results exhibited a marked improvement when the drug was formulated as SD compared to control PM and to pure drug. The solid state of these preparations characterized by X-ray powder diffraction and Fourier transform infrared spectroscopy showed no changes in the crystalline state of the drug and no chemical interactions between the components. Raman studies showed a better content uniformity of the drug within the polymeric matrix when subjected to SD process, correlating with the improved dissolution profile. Conclusion This study provides evidence of the potential of the confocal Raman imaging technique, providing a fast and powerful method to characterize solid dispersions which could be incorporated towards the use of quality by design (QbD) approaches in pharmaceutical development.</dcterms:abstract>

    <dcterms:abstract>Severe infections with potentially fatal outcomes are caused by parasites from the genera Trypanosoma and Leishmania (class Kinetoplastea). The diseases affect people of remote areas in the tropics and subtropics with limited access to adequate health care. Besides insufficient diagnostics, treatment options are limited, with tenuous developments in recent years. Therefore, new antitrypanosomal antiinfectives are required to fight these maladies. In the presented approach, new compounds were developed and tested on the target trypa nothione synthetase (TryS). This enzyme is crucial to the kinetoplastids’ unique trypa nothione-based thiol redox metabolism and thus for pathogen survival. Preceding studies have shown that N5 -substituted paullones display antitrypanosomal activity as well as TryS inhibition. Herein, this compound class was further examined regarding the structure-activity relationships (SAR). Diverse benzazepinone derivatives were designed and tested in cell based assays on bloodstream Trypanosoma brucei brucei (T. b. brucei) and intracellular amastigotes of Leishmania infantum (L. infantum) as well as in enzyme-based assays on L. infantum TryS (LiTryS) and T. b. brucei TryS (TbTryS). While an exchange of just the sub stituent in the 9-position of paullones led to potent inhibitors on LiTryS and T. b. brucei para sites, new compounds lacking the indole moiety showed a total loss of activity in both assays. Conclusively, the indole as part of the paullone structure is pivotal for keeping the TryS inhibitory and antitrypanosomal activity of this substance class.</dcterms:abstract>

    <dcterms:abstract>Labels have been reported to influence children’s perception and choice of foods. However, the influence of label information on parents’ food choices for their children has not received as much attention in the literature yet. In this context, the objectives of the present study were: i) to evaluate the impact of label information on parents’ healthiness perception and choice of two popular snack products, and ii) to explore individual differences in how label design influences parents’ healthiness perception and their choice of snack products for their children. A total of 1213 Uruguayan mothers participated in an online survey. A choice-based conjoint test was performed to study the influence of cartoon characters, nutritional claims and nutrient content information on the choice and healthiness perception of chocolate milk and sponge cake labels. Half of the parents were asked to indicate which of the products they would choose as a snack for their children and the other half were asked which of the products was healthier. Data was analyzed by means of a Mixed Logit Model followed by multivariate approaches to explore individual differences (Hierarchical Cluster Analysis and Principal Component Analysis). Results showed that, regardless of the product, nutrient claim had the strongest effect, increasing healthiness perception and encouraging mothers’ choice. For both choice and healthiness perception, two groups of mothers who differed in the relative importance attached to cartoon characters and nutrient content were identified, highlighting the need to investigate individual differences. Results stress the need to regulate the use of nutritional claims, cartoon characters, and other persuasive elements in products of poor nutritional quality targeted at children.

The incorporation of the bpy ligand in place of cyano ligands within the coordination sphere raises the MIII/II redox potential significantly relative to the hexacyanometalate analogswe have reported previously. However, the metal-to-metal (MII to CoIII) charge-transfer transitions are shifted to lower energies in accordance with Hush theory as a result of a decreased reorganizational energy component, which result in them overlapping with more intense MLCT (MII to bpy) transitions.</dcterms:abstract>

The interaction of these molecules with Ni was followed by the anodic stripping of adsorbed residues. The Ni electrodissolution inhibitory effect caused by the different adsorbates increases in the following order: ethylene < carbon monoxide < acetylene. Anodic stripping curves were simulated by applying a numerical method, such as Runge-Kutta's, and the different voltammetric contributions calculated by numeric deconvolution. These analyses provide a further insight into the mechanism of the Ni electrodissolution in acid containing carbon monoxide, ethylene or acetylene.</dcterms:abstract>

    <dcterms:abstract>Plant growth-promoting bacteria of the genus Azospirillum are present in the rhizosphere and as endophytes of many crops. In this research we studied 40 Azospirillum strains isolated from different plants and geographic regions. They were first characterized by 16S rDNA restriction analysis, and their phylogenetic position was established by sequencing the genes 16S rDNA, ipdC, hisC1, and hisC2. The latter three genes are involved in the indole-3-pyruvic acid (IPyA) biosynthesis pathway of indole-3-acetic acid (IAA). Furthermore, the suitability of the 16S-23S rDNA intergenic spacer sequence (IGS) for the differentiation of closely related Azospirillum taxa and development of PCR protocols allows for specific detection of strains. The IGS-RFLP analysis enabled intraspecies differentiation, particularly of Azospirillum brasilense and Azospirillum lipoferum strains. Results demonstrated that the ipdC, hisC1, and hisC2 genes are highly conserved in all the assessed A. brasilense isolates, suggesting that these genes can be used as an alternative phylogenetic marker. In addition, IAA production determined by HPLC ranged from 0.17 to 98.2 μg mg(-1) protein. Southern hybridization with the A. brasilense ipdC gene probe did not show, a hybridization signal with A. lipoferum, Azospirillum amazonense, Azospirillum halopreferans and Azospirillum irakense genomic DNA. This suggests that these species produce IAA by other pathways. Because IAA is mainly synthesized via the IPyA pathway in A. brasilense strains, a species that is used worldwide in agriculture, the identification of ipdC, hisC1, and hisC2 genes by PCR may be suitable for selecting exploitable strains</dcterms:abstract>

    <dcterms:abstract>Contextual factors influence consumers’ food choice and consumption decisions. The measurement of perceived situational appropriateness provides information on these influences and is easily implemented in product test situations, especially when done using the item-by-use (IBU) method. The research presents a methodological characterisation of the IBU approach when implemented as check-all-that-apply (CATA) questions. Across 14 consumer studies (33–206 people per study), four research questions (RQ) were addressed. It was found that: 1) Co-elicitation of IBU responses did not bias hedonic responses, and hedonic responses were not modulated by the type of IBU terms used (descriptive vs. emotive) (RQ1); 2) IBU responses may be modulated by co-elicitation with hedonic responses, but not by sample set composition (RQ2); 3) IBU responses were repeatable following assessments of within- and between-study responses (RQ3); and 4) For sample sizes typical in product testing research with consumers (100+), IBU responses are likely to be stable, and if differences between samples are large, they may be stable when obtained from fewer people (30+) (RQ4). An underpinning assumption of the research, that IBU responses provide product insights beyond hedonic responses (RA1) was also empirically confirmed. In summary, the findings from the present research supports the use of the CATA questions to obtain IBU sample characterisations and enhance product testing.</dcterms:abstract>

    <dcterms:abstract>A key metabolic adaptation of some species that face hypoxia as part of their life cycle involves an alternative electron transport chain in which rhodoquinone (RQ) is required for fumarate reduction and ATP production. RQ biosynthesis in bacteria and protists requires ubiquinone (Q) as a precursor. In contrast, Q is not a precursor for RQ biosynthesis in animals such as parasitic helminths, and most details of this pathway have remained elusive. Here, we used Caenorhabditis elegans as a model animal to elucidate key steps in RQ biosynthesis. Using RNAi and a series of C. elegans mutants, we found that arylamine metabolites from the kynurenine pathway are essential precursors for RQ biosynthesis de novo. Deletion of kynu-1, encoding a kynureninase that converts l-kynurenine (KYN) to anthranilic acid (AA) and 3-hydroxykynurenine (3HKYN) to 3-hydroxyanthranilic acid (3HAA), completely abolished RQ biosynthesis but did not affect Q levels. Deletion of kmo-1, which encodes a kynurenine 3-monooxygenase that converts KYN to 3HKYN, drastically reduced RQ but not Q levels. Knockdown of the Q biosynthetic genes coq-5 and coq-6 affected both Q and RQ levels, indicating that both biosynthetic pathways share common enzymes. Our study reveals that two pathways for RQ biosynthesis have independently evolved. Unlike in bacteria, where amination is the last step in RQ biosynthesis, in worms the pathway begins with the arylamine precursor AA or 3HAA. Because RQ is absent in mammalian hosts of helminths, inhibition of RQ biosynthesis may have potential utility for targeting parasitic infections that cause important neglected tropical diseases.</dcterms:abstract>

    <dcterms:abstract>The laminated layer is the unique mucin-based extracellular matrix that protects Echinococcus larvae, and thus to an important extent, shapes host–parasite relationships in the larval echinococcoses. In 2011, we published twin reviews summarizing what was known about this structure. Since then, important advances have been made. Complete genomes and some RNAseq data are now available for E. multilocularis and E. granulosus, leading to the inference that the E. multilocularis LL is probably formed by a single type of mucin backbone, while a second apomucin subfamily additionally contributes to the E. granulosus LL. Previously suspected differences between E. granulosus and E. multilocularis in mucin glycan size have been confirmed and pinned down to the virtual absence of Galβ1–3 chains in E. multilocularis. The LL carbohydrates from both species have been found to interact selectively with the Kupffer cell receptor expressed in rodent liver macrophages, highlighting the ancestral adaptations to rodents as intermediate hosts and to the liver as infection site. Finally, LL particles have been shown to possess carbohydrate-independent mechanisms profoundly conditioning non-liver-specific dendritic cells and macrophages. These advances are discussed in an integrated way, and in the context of the newly determined phylogeny of Echinococcus and its taenid relatives.

</dcterms:abstract>

To the best of our knowledge, up to now, there are no reports in the literature that deal directly with lithium-ion transport and charge transfer on ultrathin 2D ZnO exhibiting graphene-like and Wurtzite structures working as anode materials for lithium-ion batteries. Here, we present a DFT study on the lithiation of ultrathin 2D ZnO nanostructures including graphene-like (monolayer and bilayer) and Wurtzite (trilayer) structures. We focus on the ionic-electronic transport properties addressing the ionic transport through the different surfaces as well as charge transfer, equilibrium voltages, and work function variations due to lithiation for all systems. We reveal interesting features regarding how deep the reduction of Zn ions is still observed allowing more efficient charge transfer for graphene-like and Wurtzite systems working as anode material for a lithium-ion battery.</dcterms:abstract>

    <dcterms:abstract>Background: Invasive fungal diseases represent an unmet clinical need that could 29 benefit from novel immunotherapeutic approaches. Host pattern-recognition receptors 30 (e.g., Toll-like receptors, C-type lectins or Scavenger receptors) that sense conserved 31 fungal cell wall constituents may provide suitable immunotherapeutic antifungal agents. 32 Thus, we explored the therapeutic potential of the lymphocyte class I scavenger receptor 33 CD5, a non-redundant component of the antifungal host immune response that binds to 34 fungal β-glucans. 35 Methods: antifungal properties of the soluble ectodomain of human CD5 (shCD5) were 36 assessed in vivo in experimental models of systemic fungal infection induced by 37 pathogenic species (Candida albicans and Cryptococcus neoformans). In vitro 38 mechanistic studies were performed by means of fungal-spleen cell co-cultures. 39 Results: shCD5-induced survival of lethally infected mice was dose and time-dependent 40 and concomitant with reduced fungal load and increased leukocyte infiltration in 41 primary target organ. Additive effects were observed in vivo after shCD5 was combined 42 with sub-optimal doses of fluconazole. Ex vivo addition of shCD5 to fungal-spleen cell 43 co-cultures increased release of pro-inflammatory cytokines involved in antifungal 44 defence (TNF-α and IFN-γ) and reduced the number of viable C. albicans. 45 Conclusions: The results prompt further exploration of the adjunctive therapeutic 46 potential of shCD5 in severe invasive fungal diseases.

    <dcterms:abstract>
Invasive fungal diseases represent an unmet clinical need that could benefit from novel immunotherapeutic approaches. Host pattern recognition receptors (e.g., Toll-like receptors, C-type lectins, or scavenger receptors) that sense conserved fungal cell wall constituents may provide suitable immunotherapeutic antifungal agents. Thus, we explored the therapeutic potential of the lymphocyte class I scavenger receptor CD5, a nonredundant component of the antifungal host immune
response that binds to fungal -glucans. Antifungal properties of the soluble ectodomain of human CD5 (shCD5) were assessed in vivo in experimental models of systemic fungal infection induced by pathogenic species (Candida albicans and Cryptococcus neoformans). In vitro mechanistic studies were performed by means of fungus-spleen cell cocultures. shCD5-induced survival of lethally infected mice was dose and time dependent and concomitant with reduced fungal load and increased leukocyte infiltration in the primary target organ. Additive effects were observed in vivo after shCD5 was combined with suboptimal doses of fluconazole. Ex vivo addition of shCD5 to fungus-spleen cell cocultures increased the release of proinflammatory cytokines involved in antifungal defense (tumor necrosis factor alpha and gamma interferon) and reduced the number of viable C. albicans organisms. The results prompt further exploration of the adjunctive therapeutic potential of shCD5 in severe invasive fungal diseases.
</dcterms:abstract>

    <dcterms:abstract>The cestodes constitute important but understudied human and veterinary parasites. Their surfaces are rich in carbohydrates, on which very little structural information is available. The tissue-dwelling larva (hydatid cyst) of the cestode Echinococcus granulosus is outwardly protected by a massive layer of carbohydrate-rich extracellular matrix, termed the laminated layer. The monosaccharide composition of this layer suggests that its major carbohydrate components are exclusively mucin-type O-glycans. We have purified these glycans after their release from the crude laminated layer and obtained by MS and NMR the complete structure of 10 of the most abundant components. The structures, between two and six residues in length, encompass a limited number of biosynthetic motifs. The mucin cores 1 and 2 are either nondecorated or elongated by a chain of Galpβ1-3 residues. This chain can be capped by a single GalpR1-4 residue, such capping becoming more dominant with increasing chain size. In addition, the core 2 N-acetylglucosamine residue is in cases substituted with the disaccharide GalpR1-4Galpβ1-4, giving rise to the blood P1-antigen motif. Larger, also related, glycans exist, reaching at least 18 residues in size. The glycans described are related but larger than those previously described from an Echinococcus multilocularis mucin [Hulsmeier, A. J., et al. (2002) J. Biol. Chem. 277, 5742-5748]. Our results reveal that the E. granulosus cyst exposes to the host only a few different major carbohydrate motifs. These motifs are composed essentially of galactose units and include the elongation by (Galpβ1-3)n and the capping by GalpR1-4, novel in animal mucin-type O-glycans</dcterms:abstract>
