<dcterms:abstract>
Zero-trans edible fats attractive to be used for shortenings or margarines were designed solely from rice bran oil (RBO). For this purpose, RBO was fully hydrogenated, blended with the original oil at different percentages, and finally, blends were interesterified by an enzyme-catalyzed process. The
interesterification process reduced the concentration of trisaturated and triunsaturated triglycerides and increased the concentration of medium saturation degree molecules, thus increasing their compatibility and causing the moderation of the melting point, as compared with blends. Conversely to blends, products showed a high tendency to crystallize under the b’ polymorph, which is the preferred one for products destined for many edible applications. Results demonstrated that the proper combination of different technologies (total hydrogenation, blending and interesterification) is a versatile and useful technology for designing zero-trans fats from RBO, attractive for the confection of shortenings or margarines for different
applications depending on the proportion of each component in the starting blend. This strategy offers an attractive alternative for the diversification of RBO utilization, a valuable vegetable oil still underexploited, providing attractive fats useful for structuring different type of foods.
</dcterms:abstract>

    <dcterms:abstract>
Five heteroleptic compounds, [VVO(IN-2H)(L-H)], where L are 8-hydroxyquinoline derivatives and IN is a Schiff base ligand, were synthesized and characterized in both the solid and solution state. The compounds were evaluated on epimastigotes and trypomastigotes of Trypanosoma cruzi as well as on VERO cells, as a mammalian cell model. Compounds showed activity against trypomastigotes with IC50 values of 0.29–3.02 M. IN ligand and the new [VVO2(IN-H)] complex showed negligible activity. The most active compound [VVO(IN-2H)(L2-H)], with L2 = 5-chloro-7-iodo- 8-hydroxyquinoline, showed good selectivity towards the parasite and was selected to carry out further biological studies. Stability studies suggested a partial decomposition in solution. [VVO(IN-2H)(L2-H)] affects the infection potential of cell-derived trypomastigotes. Low total vanadium uptake by parasites and preferential accumulation in the soluble proteins fraction were determined. A trypanocide effect was observed when incubating epimastigotes with 10 IC50 values of [VVO(IN-2H)(L2-H)] and the generation of ROS after treatments was suggested. Fluorescence competition measurements with DNA:ethidium bromide adduct showed a moderate DNA interaction of the complexes. In vivo toxicity study on C. elegans model showed no toxicity up to a 100 M concentration of [VVO(IN-2H)(L2-H)]. This compound could be considered a prospective anti-T. cruzi agent that deserves further research.
</dcterms:abstract>

    <dcterms:abstract>
It is widely accepted that the use of alkyl zinc and alkyl zinc alkoxide precursors are usually preferred instead of the popularly used zinc acetate precursor to obtaining better control on the synthesis of different zinc-oxo clusters and nanostructures. However, there are very few reports about zinc dialkoxides precursors and not many ones studying these precursors in a typical hydrolysiscondensation route. In the present report, we focus on the study of zinc dimethoxide structural features and their Raman spectroscopy signatures in the absence and presence of tetrahydrofuran (THF) adduct. Our theoretical calculations using Density Functional Theory (DFT) reveal that monomeric, dimeric and trimeric zinc dimethoxide exhibit distinctive Raman signatures, particularly at the low frequency region. In addition, some particular vibrational modes of zinc dimethoxide also evidenced some characteristic shifting and splitting in the presence of explicit THF coordination molecules. Our experimental approach using
surface-enhanced Raman spectroscopy (SERS) reveals a quite complex combination of Raman signatures associated to zinc
dimethoxide clusters corroborating tetrahydrofuran coordination and further early hydrolysis-condensation scenario. We aim to
shed some light on the chemical structure of this particular zinc dimethoxide precursor and some of its early hydrolysis condensation products employing a powerful, popular and versatile technique such as Raman spectroscopy as it can be a
promising candidate to access and simultaneously monitor the formation of novel zinc-oxo clusters and nanostructures.
</dcterms:abstract>

    <dcterms:abstract>
Tissue engineering (TE) and regenerative medicine offer strategies to improve damaged tissues by using scaffolds and cells. The use of collagen-based biomaterials in the field of TE has been intensively growing over the past decades. Mesenchymal stromal cells (MSCs) and dental pulp stem cells (DPSCs) are promising cell candidates for development of clinical composites. In this study, we proposed the development
of a bovine collagen type I: chondroitin-6-sulphate (CG) scaffold, obtained from Uruguayan raw material (certified as free bovine spongiform encephalopathy), with CG crosslinking enhancement using different gamma radiation doses. Structural, biomechanical and chemical characteristics of the
scaffolds were assessed by Scanning Electron Microscopy,
axial tensile tests, FT-IR and Raman Spectroscopy,
respectively. Once we selected the most appropriate scaffold for future use as a TE product, we studied the behavior of MSCs and DPSCs cultured on the scaffold by cytotoxicity, proliferation and differentiation assays. Among the diverse porous scaffolds
obtained, the one with the most adequate properties was the one exposed to 15 kGy of gamma radiation.
</dcterms:abstract>

Each rhenium(II) ion in 1 is six-coordinate with four bromide ligands in the equatorial positions and a nitrosyl group and one pyridyl-nitrogen atom from an H2pydc ligand filling the axial sites. 2 is a neutral heterobimetallic compound where the [Re(NO)Br4(Hpydc)]2- complex anion acts as a monodentate ligand towards the [Cu(4,4′ -dmbipy)2]2+ complex cation through one carboxylate–oxygen atom. The rhenium(II) ion is six-coordinate in a somewhat distorted octahedral surrounding similar to that in 1. The copper(II) ion in 2 is five-coordinate with four nitrogen atoms from two bidentate 4,4′ -dmbipy ligands and one carboxylate–oxygen atom, describing a surrounding intermediate between square pyramidal and trigonal bipyramidal. Compound 1 behaves as a quasimagnetically
isolated spin doublet with weak antiferromagnetic interactions through space Br⋯Br contacts, ligand field, spin–orbit coupling, tetragonal distortion, and covalence effects considered as variable parameters in a successful simulation of the magnetic data. Compounds 2–4 exhibit also weak intramolecular antiferromagnetic interactions (J) covering the range - 0.60(1) to - 1.50(1) cm- 1 with the Hamiltonian being defined as
H = -JSReSM, M = Cu (2), Ni (3) and Co (4).
</dcterms:abstract>

    <dcterms:abstract>
The rod-shaped and Gram-stain-negative bacterial strain 16FT, isolated from an air sample collected at King George Island, maritime Antarctica, was investigated to determine its taxonomic status.
Strain 16FT is strictly aerobic, catalase positive, oxidase positive and non-motile. Strain 16FT hydrolyses casein, lecithin, Tween 20, 60 and 80, but not aesculin, gelatin and starch. Growth of strain 16FT is observed at 0–20 C (optimum 10 C), pH 5.0–8.0 (optimum pH 6.0), and in the presence of 0–2.0% NaCl (optimum 0.5%). The predominant menaquinone is MK-6, and the major fatty acids comprise anteiso-C15:0 and iso-C15:0. The major polar lipids are
phosphatidylethanolamine, ornithine lipid OL2, unidentified phospholipid PL1 and the unidentified lipids L3 and L6 lacking functional groups. The DNA G ? C content based on the draft genome sequence is 32.3 mol%. Sequence analysis of the 16S rRNA gene indicates the highest similarity to Kaistella palustris
3A10T (95.4%), Kaistella chaponensis Sa 1147-06 T
(95.2%), Kaistella antarctica AT1013T (95.1%), Kaistella carnis NCTC 13525 T (95.1%) and below 95.0% to other species with validly published names. Phylogenetic analysis based on 16S rRNA gene and whole-genome sequences places strain 16FT in a distinct branch, indicating a separate lineage within the family Weeksellaceae. Based on the data from our polyphasic approach, 16FT represents a novel species of a new genus, for which the name Frigoriflavimonas asaccharolytica gen. nov, sp. nov. is proposed. The type strain is 16FT (= CCM 8975 T = CGMCC No.1.16844 T).
</dcterms:abstract>

The results obtained showed that the PdSn/V
electrocatalyst presented much higher catalytic performance than the PdSn/aBC. These results can be associated with the
fact that the catalyst particles in the PdSn/V electrocatalyst presented a higher SnO2 concentration compared to PdSn/aBC. The presence of SnO2 has an electronic effect that accelerates the adsorption of ethanol on the surface of Pd, thus enhancing the ethanol oxidation kinetics and contributing to a significant improvement in the PdSn/V catalytic activity. However, nosignificant differences were observed in the EOR mechanism.
</dcterms:abstract>

    <dcterms:abstract>
Metallo-β-lactamase (MBL) production in Gram-negative
bacteria is an important contributor to β-lactam antibiotic
resistance. Combining β-lactams with β-lactamase inhibitors (BLIs) is a validated route to overcoming resistance, but MBL inhibitors are not available in the clinic. On the basis of zinc utilization and sequence, MBLs are divided into three subclasses, B1, B2, and B3, whose differing active-site architectures hinder development of BLIs capable of “crossclass” MBL inhibition. We previously described 2-mercaptomethyl thiazolidines (MMTZs) as B1 MBL inhibitors (e.g., NDM-1) and here show that inhibition extends to the clinically relevant B2 (Sfh-I) and B3 (L1) enzymes. MMTZs inhibit purified MBLs in vitro (e.g., Sfh-I, Ki 0.16 μM) and potentiate β-lactam activity against producer strains. X-ray crystallography reveals that inhibition involves direct
interaction of the MMTZ thiol with the mono- or dizinc centers of Sfh-I/L1, respectively. This is further enhanced by sulfur-π
interactions with a conserved active site tryptophan. Computational studies reveal that the stereochemistry at chiral centers is critical, showing less potent MMTZ stereoisomers (up to 800-fold) as unable to replicate sulfur-π interactions in Sfh-I, largely through steric constraints in a compact active site. Furthermore, in silico replacement of the thiazolidine sulfur with oxygen (forming an oxazolidine) resulted in less favorable aromatic interactions with B2 MBLs, though the effect is less than that previously observed for the subclass B1 enzyme NDM-1. In the B3 enzyme L1, these effects are offset by additional MMTZ interactions with the protein main chain. MMTZs can therefore inhibit all MBL classes by maintaining conserved binding modes through different routes.
</dcterms:abstract>

    <dcterms:abstract>
One of the biggest problems worldwide is the pollution of natural water bodies by dyes coming from effluents used in the textile industry. In the quest for novel effluent treatment alternatives, the aim of this work was to immobilize Fe(III) complexes in molecularly imprinted polymers (MIPs) to produce efficient Fenton-like heterogeneous catalysts for the green oxidative degradation of the methyl orange (MO) dye pollutant. Different metal complexes bearing commercial and low-cost
ligands were assayed and their catalytic activity levels towards the discoloration of MO by H2O2 were assessed. The best candidates were Fe(III)-BMPA (BMPA = di-(2-picolyl)amine) and Fe(III)-NTP (NTP = 3,30,3”-nitrilotripropionic acid), displaying above 70% MO degradation in 3 h. Fe(III)-BMPA
caused the oxidative degradation through two first-order stages, related to the formation of BMPAFe- OOH and the generation of reactive oxygen species. Only the first of these stages was detected for Fe(III)-NTP. Both complexes were then employed to imprint catalytic cavities into MIPs. The polymers showed catalytic profiles that were highly dependent on the crosslinking agent employed, with N,N-methylenebisacrylamide (MBAA) being the crosslinker that rendered polymers with optimal oxidative performance (>95% conversion). The obtained ion-imprinted polymers constitute cheap and robust solid matrices, with the potential to be coupled to dye-containing effluent treatment systems with synchronous H2O2 injection.
</dcterms:abstract>

    <dcterms:abstract>
Antibiotic resistance is a major threat to global public health. β-lactamases, which catalyze breakdown of β-lactam antibiotics, are a principal cause. Metallo β-lactamases (MBLs) represent a particular challenge because they hydrolyze almost all β-lactams and to date no MBL inhibitor has been approved for clinical use. Molecular simulations can aid drug discovery, for example, predicting inhibitor complexes, but empirical
molecular mechanics (MM) methods often perform poorly for metalloproteins. Here we present a multiscale approach to model thiol inhibitor binding to IMP-1, a clinically important MBL containing two catalytic zinc ions, and predict the binding
mode of a 2-mercaptomethyl thiazolidine (MMTZ) inhibitor. Inhibitors were first docked into the IMP-1 active site, testing different docking programs and scoring functions on multiple crystal structures. Complexes were then subjected to molecular
dynamics (MD) simulations and subsequently refined through QM/MM optimization with a density functional theory (DFT) method, B3LYP/6-31G(d), increasing the accuracy of the method with successive steps. This workflow was tested on two IMP-1: MMTZ complexes, for which it reproduced crystallographically observed binding, and applied to predict the binding mode of a third MMTZ inhibitor for which a complex
structure was crystallographically intractable. We also tested a 12-6-4 nonbonded interaction model in MD simulations and optimization with a SCC-DFTB QM/MM approach. The results show the limitations of empirical models for treating these systems and indicate the need for higher level calculations, for example, DFT/MM, for reliable structural predictions. This study demonstrates a reliable computational pipeline that can be applied to inhibitor design for MBLs and other zinc-metalloenzyme systems.
</dcterms:abstract>

Most of these derivatives are highly active against epimastigote forms (IC50 < 1.0 μM) compared to the reference drug benznidazole (Bzn). Then these were evaluated on trypomastigotes, which is showing better potency results than Bzn for compounds 3b and 3g. In addition, the cytotoxicity of these compounds was determined on the murine macrophage cell line J774. 3b and 3i were the most selective compounds
against NINOA trypomastigote and INC-5 epimastigote forms, respectively. Further these compounds also have good oral bioavailability according to theoretical predictions. Finally, we were able to determine optimal substitution patterns using pharmacophoric models. All these results are provided very useful structural information to continue our designing of naphthoquinone derivatives against T. cruzi.
</dcterms:abstract>

    <dcterms:abstract>
Classic acetyl thioester protection/deprotection methodologies are widely used in organic synthesis, but deprotection step usually requires harsh conditions not suitable for labile substrates. In this work, a new method for thioester deprotection using a thiotransesterification approach is described. Firstly, thioglycolic acid (TGA) was identified as a good deprotecting reagent in solution. In order to develop a thiol polymer-supported reagent, TGA was anchored to a PEG-based resin through an amide bond (TG-NCOSH).
Both homogeneous and heterogeneous approaches were conveniently carried out at room temperature, in aqueous buffer at pH 8. The mild conditions were suitable for alkyl and phenyl thioesters. Moreover labile thioesters containing thiazolidine and oxazolidine scaffolds, bearing amine, ester and
acetal functionalities were also deprotected. The polymer-supported TGA gave better deprotection yields compared to TGA in solution, yields ranging from 61 to 90%. The feasibility of the recovery and reuse of TG-NCO-SH reagent was explored, showing it can be reused at least five times without lossing the
activity.
</dcterms:abstract>

    <dcterms:abstract>
CATA (check-all-that-apply) questions enjoy high popularity for sensory product characterization with consumers. Amidst extensive methodological characterization, the meaning of term citation frequency has received modest attention only,
possibly hindering further uptake. The present research performed a more detailed exploration of the relationship between CATA responses and perceived intensity of sensory attributes. In addition, the following question was addressed:
How many consumers are necessary to interpret differences in CATA citation proportions as a proxy of differences in perceived intensity? The present research includes new empirical data from four consumer studies conducted in New Zealand and China under central location test conditions and a re-analysis of
one consumer study. When dealing with samples with clear differences, the percentage of consumers selecting a sensory term for describing samples tended to be linearly correlated to average intensity ratings. A median of 15 consumers was
needed for CATA to show good linear correlations with average intensity ratings, and the minimum number of consumers needed to reach the threshold for a good correlation was generally lower than 30.
</dcterms:abstract>

    <dcterms:abstract>Global warming is causing serious problems, especially, in warm regions, where musts with excess sugars and high pH produce wines with decreased freshness and unstable evolution. This study aimed to determine biocompatibility between yeast species, the capacity for microbiological acidification, and the aromatic profile produced in ternary fermentations in which Lachancea thermotolerans has been co-inoculated with Hanseniaspora vineae, Torulaspora delbrueckii, or Metschnikowia pulcherrima, and the fermentation process is subsequently completed with sequential inoculation of Saccharomyces cerevisiae. For this purpose, different cell culture media and instruments were used such as infrared spectroscopy, enzymatic autoanalyzer, chromatograph coupled with a flame ionization detector, spectrophotometric analysis, among others. The behavior of these yeasts was evaluated alone and in co-inoculation, always finishing the fermentation with sequential inoculation of S. cerevisiae, at a stable temperature of 16°C and with a low level of sulfites (25 mg/L) in white must. Significant results were obtained in terms of biocompatibility using population counts (CFU/ml) in differential plating media that permitted monitoring. Quantification of the five species was studied. Concerning acidification by L. thermotolerans in co-inoculations, we showed some metabolic interactions, such as the inhibition of acidification when H. vineae/L. thermotolerans were used, generating just over 0.13 g/L of lactic acid and, conversely, a synergistic effect when M. pulcherrima/L. thermotolerans were used, achieving 3.2 g/L of lactic acid and a reduction in pH of up to 0.33. A diminution in alcohol content higher than 0.6% v/v was observed in co-inoculation with the L. thermotolerans/M. pulcherrima yeasts, with total sugar consumption and very slow completion of fermentation in the inoculations with H. vineae and T. delbrueckii. The aromatic composition of the wines obtained was analyzed and a sensory evaluation conducted, and it was found that both L. thermotolerans and co-inoculations retained more aromatic esters over time and had a lower evolution toward the yellow tones typical of oxidation and that the best sensory evaluation was that of the Lt + Mp co-inoculation. Lachancea thermotolerans and co-inoculations produced wines with low levels of volatile acidity (<0.4 g/L). This work shows that good consortia strategies with binary and ternary fermentations of yeast strains can be a powerful bio-tool for producing more complex wines.</dcterms:abstract>

We find that, when internal strains induced by the high lattice mismatch between the SiC3 and hBN layers are reduced, a very small and non-tunable gap is induced in a hybrid bilayer heterostructure. However, the
picture becomes quite different when structures with higher internal strains are considered. In this scenario, the
compressive strain induces a buckling in the SiC3 sheet, resulting in larger band gaps. Additionally, in many configurations, the gaps are found to be quite tunable by the application of external strains or an electrical field. Such tunability is absent in graphene/hBN heterostructures, thus giving SiC3/hBN heterostructures a clear edge. The origin of this gap and its tunability are discussed in terms of the buckling in the SiC3 layer and the interlayer charge transfer. Finally, the optical properties of these heterostructures were also investigated. Strong absorption peaks in both visible and deep UV regions were found, which could be explored for applications in future optoelectronic devices.
</dcterms:abstract>

    <dcterms:abstract>

    <dcterms:abstract>Children’s sugar intake has raised concern worldwide as it exceeds nutritional recommendations. Although sugars are naturally present in food, sugars added to foods during industrial processing are currently the main source of sugar in children's diets. In particular, dairy products, which are generally recommended to be part of children diets, have drawn attention due to their high content of sugar. In this context, the main objective of this thesis was to explore different sugar reduction strategies in dairy products targeted at children. Results showed that sugar reduction of dairy products targeted at children available in the Uruguayan marketplace is possible. A direct sugar reduction up to 25% did not have a significant impact on children hedonic perception in three dairy products. Meanwhile the use of taste-odor-texture cross-modal interactions allowed to minimize the impact of sugar reduction on the sensory characteristics of dairy desserts. Co-creation with children was identified as a feasible approach to develop innovative healthy dairy products with high acceptance among children. Finally, package information influenced parent’s healthiness perception and choice of snacks for their children, stressing that packaging regulations should play a key role as part of the comprehensive set of strategies that should be implemented to reduce children's sugar intake. Overall, results from this work provide useful insights to food scientists for the development of sugar reduced products targeted at children, as well as valuable information for policy makers to design programs to reduce children’s sugar intake at population level.</dcterms:abstract>

    <dcterms:abstract>
Ralstonia pseudosolanacearum GMI1000 (Rpso GMI1000) is a soil-borne vascular phytopathogen that infects host plants through the root system causing wilting disease in a wide range of agroeconomic interest crops, producing economical losses. Several features contribute to the full bacterial virulence. In this work we study the participation of light, an important environmental factor, in the regulation of the physiological attributes and infectivity of Rpso GMI1000. In silico analysis of the Rpso genome revealed the presence of a Rsp0254 gene, which encodes a putative blue light LOV-type photoreceptor. We constructed a mutant strain of Rpso lacking the LOV protein and found that the loss of this protein and light, influenced characteristics involved in the pathogenicity process such as
motility, adhesion and the biofilms development, which allows the successful host plant colonization, rendering bacterial wilt. This protein could be involved in the adaptive responses to environmental changes. We demonstrated that light sensing and the LOV protein, would be used as a location signal in the host plant, to regulate the expression of several virulence factors, in a time and tissue dependent way. Consequently, bacteria could use an external signal and Rpsolov gene to know their location within plant tissue during the colonization process.
</dcterms:abstract>

    <dcterms:abstract>
</dcterms:abstract>
