    <dcterms:abstract><![CDATA[The transformation of the first-food systems and the widespread availability and marketing of breastmilk substitutes undermine efforts to promote adequate breastfeeding practices. The objective of the present research was to explore mothers’ perspectives on infant formula use in Montevideo, the capital of Uruguay. A generic qualitative design was used to explore mothers’ perspectives on the factors that act as enablers or barriers for infant formula use. Semi-structured interviews with thirty-four mothers of 0–23 months old children, aged between 25- and 40-years old, were conducted. The interview transcripts were analyzed using content analysis based on inductive-deductive coding considering the framework of the Capability, Opportunity, Motivation, and Behavior (COM-B) model. The discourse of the interviewees enabled the identification of a wide range of barriers and enablers for the use of infant formula, which were related to the three components of the model: capabilities, opportunity, and motivation. The health system emerged as the key determinant of infant formula use. Most of the participants who used infant formula referred to medical indication when explaining the reasons underlying their infant feeding decisions. The working status of the mother and emotional aspects of the child feeding experience were also identified as key enablers of infant formula use, whereas knowledge about health benefits and breastfeeding techniques, support from families and health-professionals, and motivation to breastfeed were key barriers. Taken together, these results suggest that strategies to reduce the use of infant formula in Uruguay should mainly focus on providing opportunities to breastfeed by improving the quality of the support and guidance provided to families in the health system and facilitating greater balance between breastfeeding and work.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Objective: To explore parents&rsquo; accounts of the goals they seek when choosing foods for their young children through the lens of goal-systems theory. Design: In-depth interviews with parents of children aged from 6 months to 5 years. Setting: Montevideo, Uruguay. Participants: Forty-two parents (aged 19&minus;44 years, 90% female). Phenomenon of Interest: Parents&rsquo; personal experiences, feelings, and opinions related to how they choose foods for their children. Analysis: Content analysis based on deductive-inductive coding. Results: Parents&rsquo; accounts confirmed they intended to pursue different goals when choosing foods for their children. Health-related goals mainly motivated the selection of healthy foods, but they also drove the selection of some ultra-processed products because of misconceptions about their healthiness. Pleasure and enjoyment motivated the selection of ultra-processed products, whereas stress avoidance was associated with selecting convenient foods. The selection of unhealthy foods raised conflicts between goals, which were solved using goal shielding, changes in risk perception and/or compensatory health beliefs. Conclusions and Implications: Results point to the need for communication campaigns and community- based interventions to introduce changes in how ultra-processed products are conceptualized and increase the associations between healthy foods and children&rsquo;s pleasure and enjoyment to promote healthier eating patterns during infancy and early childhood.]]></dcterms:abstract>

The rotational barrier for the methyl group is calculated and its value, 1.07 kcal/mol (CNDO/2) and 1.08 kcal/mol (STO-3G), is in agreement with experiment. Dipole moments are also calculated but are smaller than the experimental values. Finally it is shown how the isomers can be identified using electronic spectra.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[One hundred and fifty-four yeast strains were isolated from grapes and musts of Uruguayan vineyards and wineries. Only thirty strains showed b-glucosidase activity in Esculin Glycerol Agar (EGA) solid medium. Twenty-one were non-Saccharomyces and nine were Saccharomyces cerevisiae strains. The objective of this study was to evaluate the suitability of Esculin Glycerol Agar (EGA) solid medium for screening b-glucosidase activity in native yeasts strains. Halo sizes measured in the EGA solid medium were correlated to the Glycosyl-Glucose (GG) indexes measured after fermentation of grape musts with each strain. The two S. cerevisiae strains with the best performance were selected for further fermentations on a Muscat Miel grape must, rich in bound monoterpenes. The levels of free linalool, hodiol I and geraniol increased significantly as compared to fermentation with a commercial wine yeast strain. These results show the suitability of this simple and economic medium to identify S. cerevisiae glucosidase producers with a potential impact on real winemaking conditions. On the other hand, great variability was found for the non-Saccharomyces strains, and this would demand further studies for each species. In conclusion, the use of EGA solid medium shows that the screening method is suitable for exploring the glucosidase activity of native strains of S. cerevisiae and shows good correlation with its real]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Quillaja brasiliensis (Quillajaceae) is a saponin producing species native from southern Brazil and Uruguay. Its saponins are remarkably similar to those of Q. saponaria, which provides most of the saponins used as immunoadjuvants in vaccines. The immunostimulating capacities of aqueous extract (AE) and purified saponin fraction (QB-90) obtained from leaves of Q. brasiliensis were favorably comparable to those of a commercial saponin-based adjuvant preparation (Quil-A&reg;) in experimental vaccines against bovine herpesvirus type 1 and 5, poliovirus and bovine viral diarrhea virus in mice model. Herein, the immunogenicity and protection efficacy of rabies vaccines adjuvanted with Q. brasiliensis AE and its saponin fractions were compared with vaccines adjuvanted with either commercial Quil-A or Alum. Mice were vaccinated with one or two doses (on days 0 and 14) of one of the different vaccines and serum levels of total IgG, IgG1 and IgG2a were quantified over time. A challenge experiment with a lethal dose of rabies virus was carried out with the formulations. Viral RNA detection in the brain of mice was performed by qPCR, and RNA copy-numbers were quantified using a standard curve of in vitro transcribed RNA. All Q. brasiliensis saponin-adjuvanted vaccines significantly enhanced levels of specific IgG isotypes when compared with the no adjuvant group (P &le; 0.05). Overall, one or two doses of saponin-based vaccine were efficient to protect against the lethal rabies exposure. Both AE and saponin fractions from Q. brasiliensis leaves proved potent immunological adjuvants in vaccines against a lethal challenge with a major livestock pathogen, hence confirming their value as competitiv]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Antioxidant systems are fundamental components of host&ndash;parasite interactions, and often play a key role in parasite survival. Here, we report the cloning, heterologous expression, and characterization of a thioredoxin glutathione reductase (TGR) from Fasciola hepatica. The deduced polypeptide sequence of the cloned open reading frame (ORF) confirmed the experimental N-terminus previously determined for a native F. hepatica TGR showing thioredoxin reductase (TR) activity. The sequence revealed the presence of a fusion between a glutaredoxin (Grx) and a TR domain, similar to that previously reported in Schistosoma mansoni and Echinococcus granulosus. The F. hepatica TGR sequence included an additional redox active center (ACUG; U being selenocysteine) located at the C-terminus. The addition of a recombinant selenocysteine insertion sequence (SECIS) element in the Escherichia coli expression vector, or the substitution of the native selenocysteine by a cysteine, indicated the relevance of this unusual amino acid residue for the activity of F. hepatica TGR. Rabbit vaccination with recombinant F. hepatica TGR reduced the worm burden by 96.7% following experimental infection, further supporting the relevance of TGR as a promising target for anti Fasciola treatments.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Biocatalytic approaches to the synthesis of optically pure chiral amines, starting from simple achiral building blocks, are highly desirable because such motifs are present in a wide variety of important natural products and pharmaceutical compounds. Herein, a novel one-pot &omega;-transaminase (TA)/monoamine oxidase (MAO-N) cascade process for the synthesis of chiral 2,5-disubstituted pyrrolidines is reported. The reactions proceeded with excellent enantio- and diastereoselectivity (&gt;94&thinsp;% ee; &gt;98&thinsp;% de) and can be performed on a preparative scale. This methodology exploits the complementary regio- and stereoselectivity displayed by both enzymes, which ensures that the stereogenic center established by the transaminase is not affected by the monoamine oxidase, and highlights the potential of this multienzyme cascade for the efficient synthesis of chiral building blocks.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[This work reports density functional and composite model chemistry calculations performed on the reactions of toluene with the hydroxyl radical. Both the experimentally observed H-abstraction from the methyl group and possible OH-additions to the phenyl ring were investigated. Reaction enthalpies and barrier heights suggest that H-abstraction is more favorable than OH-addition to the ring. The calculated reaction rates at room temperature and the radical-intermediate product fractions support this view. At first sight, this might seem to disagree with the fact that, under most experimental conditions, cresols are observed in a larger concentration than benzaldehyde. Since the accepted mechanism for benzaldehyde formation involves H-abstraction, a contradiction arises that calls for a more elaborate explanation. In this first exploratory study, we provide evidence that support the preference of H-abstraction over OH-addition and present an alternative mechanism which shows that cresols can be actually produced also through H-abstraction and not only from OH-addition, thus justifying the larger proportion of cresols than benzaldehyde among the products.

    <dcterms:abstract><![CDATA[In a previous work, we have investigated the initial steps of the reaction of toluene with the hydroxyl radical using several quantum chemical approaches including density functional and composite post-Hartree-Fock models. Comparison of H-abstraction from the methyl group and additions at different positions of the phenyl showed that the former reaction channel is favored at room temperature. This conclusion appears at first sight incompatible with the experimental observation of a lower abundance of the product issuing from abstraction (benzaldehyde) with respect to those originating from addition (cresols). Further reactions of the intermediate radicals with oxygen, water and additional OH radicals are explored in this paper through theoretical calculations on more than 120 species on the corresponding potential energy surface. The study of the addition reactions, to obtain the cresols through hydroxy methylcyclodienyl intermediate radicals, showed that only in the case of o-cresol the reaction proceeds by addition of O2 to the ring, internal H-transfer and hydroperoxyl abstraction, and not through direct H abstraction. Both for p- and m-cresol instead the reaction occurs through a higher energy direct H-abstraction, thus explaining in part the observed larger concentration of the ortho isomer in the final products. It was also found that the benzyl radical, formed by H-abstraction from the methyl group, is able to react further if additional OH is present. Two reaction paths leading to o-cresol, two leading to pcresol and one leading to m-cresol were determined. Moreover, in this situation, benzyl radical is predicted to produce benzyl alcohol, as was found in some experiments. The commonly accepted route to benzaldehyde was found to be not the energetically favored one. Instead, a route leading to benzoyl radical (and ultimately to benzoic acid) with the participation of one water molecule was clearly more favorable, both thermodynamically and kinetically.

    <dcterms:abstract><![CDATA[Multiple tandem copies of an immunogenic epitope comprising amino acids 8&ndash;23 of glycoprotein D of herpes simplex virus (HSV) were expressed as C-terminal fusions to tetanus toxin fragment C (TetC) in different Salmonella typhimurium live vaccine strains. Expression of the longer fusions was best in strains harbouring a lesion in htrA, a stress protein gene. SL3261, an aroA strain, did not effectively express the longer fusions. Mice immunised with an S. typhimurium C5 htrA mutant expressing fusions with two or four copies of the peptide made an antibody response to both the peptide and TetC, whereas constructs expressing one copy of the peptide only elicited antibody to TetC. A non-immunogenic octameric fusion underwent rearrangements in vivo resulting in a predominantly monomeric fusion. In contrast, the S. typhimurium SL3261 aroA vaccine expressing the TetC-tetrameric fusion did not elicit antibody to the peptide. Sera from mice immunised with a single dose of the dimer and tetramer fusions in the htrA strain neutralised HSV in vitro, and the mice were protected from HSV infection as measured by a reduction in virus load in the ear pinna. We have previously shown that mice vaccinated with salmonella expressing TetC are protected against tetanus toxin and virulent salmonella challenge. These results suggest that it may be possible to develop a multivalent vaccine against salmonellosis, tetanus and HSV.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Extended Hueckel molecular orbital calculations for the adsorption of H-atoms in a simulated aqueous electrochemical environment on Pt(111) and Pt(100) clusters were made. Different adsorbate configurations were considered. H-atom adsorption on hollow sites coadsorbed with an on top OH-species for Pt(111), and H-atom adsorption on bridge sites for Pt(100) are favoured. At potentials lower than the hydrogen electrode equilibrium potential, H-adatom configurations involving subsurface Pt atoms can also be formed. For both Pt(111) and Pt(100), these structures are probably related to species involved in the H-atom electrosorption and hydrogen evolution reaction.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[An AM1 and MNDO&ndash;PM3 semiempirical study of the reaction mechanism of glyoxalase I is presented. According to some authors, this enzyme serves as a detoxifying agent, transforming ketoaldehydes to hydroxiacids. According to others, however, the enzyme serves as a growth-control agent, destroying 2-oxopropanal (MG), which might be involved in some, mostly unknown, biological pathways. Following a previous study on the conformation of the hemimercaptal of MG and glutathione (HSG) done using molecular mechanics, we study here the possible reaction path of this substrate at a model reaction site in the enzyme. First, the active center of the enzyme was modeled using a Zn2+ cation with several ligands. Second, its complex with the hemimercaptal of MG and HSG (SAG) was calculated using semiempirical methods. The reaction proceeds from the substrate to the enediol intermediate in two steps: In the first one, a proton from the activated carbon in SAG is captured by a base&ndash;which we model in this work by HO&minus;, CH3COO&minus;, and imidazole anion. Our calculations show that the likeliness of the reaction is enhanced if imidazole is used as the base instead of an acid conjugate base or a free hydroxide anion. Moreover, we found a stable intermediate carbanion&ndash;described for the first time as an intermediate in this mechanism&ndash;whose existence is supported by some of the available experimental evidence. In the second step of the mechanism, a proton is transferred from a Zn-bound water to the intermediate carbanion, giving the enediol species, originally postulated as the intermediate in this mechanism, and leaving a hydroxide anion bound to the Zn2+ complex. Comparing this reaction with the same process when no metal complex is present&ndash;as if the reaction occurred in aqueous solution&ndash;it is shown that the metal ion activates water, facilitating the proton transfer. Our calculations point out the existence of two potential energy barriers to be overcome in the process: the need of the metal center to be coordinated to water as a prerequisite for the second proton transfer to take place, and the fine tuning caused in the first proton transfer by the very nature of the base that initially captures the proton. No significant differences in the qualitative characteristics of the reaction were found in using AM1 or PM3 as the method of calculation.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Background Humanity's current use of resources is not in line with the goal of sustainable development. Climate change impact scenarios appear worryingly pessimistic. The agricultural and food production accounts for a particularly high share of the impact, and this also holds for consumption of food. Transforming food consumption plays a crucial role in tackling the challenges, and sensory consumer science can contribute to this. Scope and approach This commentary examines what is required of the agricultural and food sector in order to sustainably transform, and outlines the current research streams in sensory consumer science from a sustainability perspective. Based on a comparison of the requirements and research, we suggest a categorization of the contributions that sensory consumer science can make to sustainable development. Key findings and conclusions Six necessary transformations to which sensory consumer science can make a contribution are derived and outlined: 1) promotion of a dietary shift towards more sustainable foods and diets, 2) increase of food diversity, 3) food waste reduction, 4) enhancement of the circularity of the food system, 5) heightening and prioritising food-related well-being, and 6) coping with the effects of climate change. So far, sensory consumer science studies have focused on foods regarded as sustainable (e.g. organic, sustainably claimed, insects and meat alternatives) as well as issues that contribute to sustainability (e.g. shelf-life, fruit and vegetable consumption, unfamiliar food). The conclusion for further future research is that designing sensory consumer science research to explicitly target the six required transformations can increase the discipline's contribution to sustainable development.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[In the course of our studies on 3H-1,2-dithiole-3-thione synthesis, a serendipitous reactivity with &alpha;-haloketones, in the presence of excess of potassium iodide, has been observed. Instead of the expected reaction of the nucleophile in a remote point of the molecule, we have obtained a product resulted from the electrophile character of the thiocarbonyl moiety on the 3-position of the 1,2-dithiole. In order to obtain an efficient protocol in terms of energy efficiency, this methodology was studied under conventional and microwave heating with similar or better results in the latter conditions. Simplicity and great efficiency in this one-step transformation are some of the advantages of this reaction. Moreover, the results can be explained according to the Pearson's hard and soft acid base theory.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Several recombinant clones expressing antigens from Echinococcus granulosus were isolated previously from a parasite cDNA library using cystic hydatid disease (CHD) patients&rsquo; sera or rabbit hyperimmune antiserum against a lipoproteic fraction from bovine cyst fluid. Six of these antigens were expressed in Escherichia coli and the purified recombinant proteins were tested in enzyme-linked immunosorbent assay (ELISA) for specific IgG with a panel of sera from patients with surgically confirmed ( n = 58) or immunologically diagnosed ( n = 71) CHD. Sera from clinically normal individuals ( n = 203) and sera from individuals with other helminthic infections ( n = 65) were assayed for the assessment of specificity. A cut-off value was determined by receiver-operating-characteristic plots for each antigen. A recombinant antigen B subunit (AgB8/2) presented the highest sensitivity (93&middot;1%), considering the group of sera from patients with CHD surgically confirmed, and specificity (99&middot;5%) and is proposed as the basis for an immunodiagnostic test. The other recombinant antigens tested presented sensitivities between 58&middot;6% and 89&middot;7%, and three of them were considered of complementary value. In subclass-specific ELISA, different IgG isotypes showed dominance in the response for each of the recombinant antigens. There was a clear predominance of IgG4 response for all antigens tested, indicating that this would be the subclass of choice to be assessed for these recombinant proteins.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Ultrasound‐assisted extraction (UAE) methods for food analysis are recognized as being in accordance with the principles of green analytical chemistry (GAC). Reference standard methods generally use microwave‐assisted extraction (MAE) for sample digestion; however, the use of ultrasonication processes has many advantages. Herein, a simple, and economical method for the determination of Cd and Pb in fruits and vegetables for food safety monitoring is reported. This method was optimized using a standard reference material (SRM, spinach leaves) through a multivariate experimental design (optimal conditions: 0.5 g of sample, 15 min of sonication, and 20.00 mL of 2.5 mol L&minus;1 HNO3) and subsequently validated. The limits of detection obtained were one or two orders of magnitude lower than those achieved with MAE, making this a promising technique for contaminants monitoring. The UAE method was then tested on vegetable samples (apples, carrots, tomatoes, and lettuce) obtained from commercial sources in Uruguay and a comparison was made with samples treated by MAE. Both processes yielded comparable results, and the levels of Cd and Pb in all samples were below the maximum allowed concentration (MAC) established by the World Health Organization (WHO). In addition, to provide insight into the mechanism by which the ultrasonic process aids extraction, confocal optical images of the surface of the SRM were obtained. The leaves were examined after treatment at different sonication times (5&ndash;20 min). The confocal microscopy images show the effects of the ultrasonic treatment on the plant tissue, including desaturation, erosion, and abrasion, which increased with increasing sonication time. In conclusion, the UAE method meets and overcome the requirements of a standard method for food safety assurance.

    <dcterms:abstract><![CDATA[A simple and fast ultrasound-assisted procedure for the determination of iron and zinc in infant formulas is presented. The analytical determinations were carried out by flame atomic absorption spectrometry. Multivariate experiments were performed for optimization; in addition, a comparative study was carried out using two ultrasonic devices. A method using an ultrasonic bath was selected because several samples can be prepared simultaneously, and there is less contamination risk. Analytical precision (sr(%)) was 3.3% and 4.1% for iron and zinc, respectively. Trueness was assessed using a reference material and by comparison of the results obtained analyzing commercial samples using a reference method. The results were statistically equivalent to the certified values and in good agreement with those obtained using the reference method. The proposed method can be easily implemented in laboratories for routine analysis with the advantage of being rapid and in agreement with green chemistry.]]></dcterms:abstract>
