    <dcterms:abstract><![CDATA[The synthesis, crystal structures, and luminescence of two lanthanide polynuclear com plexes with the general formula [Ln2 (tda)3 (H2O)5 ]&middot;3H2O (Ln = Sm, Eu; tda = thiodiacetato anion) are reported. The compounds were obtained by direct reaction of H2 tda and lanthanide(III) chloride in an aqueous solution. The choice of the conditions of synthesis was based on speciation studies. The structure of the polymeric complexes contains Ln(III) ions in a tricapped trigonal prism geometry. The versatility of this ligand provides different coordination modes and provokes the formation of thick 2D sheets. Direct excitation of the Ln(III) ions gives place to the characteristic intra-configuration sharp luminescence emission of both complexes in the solid state.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The aim of this study was to deposit a Ni&ndash;La&ndash;Zr catalyst on a FeCrAl monolith by in situ growth of the catalyst on a metallic surface through immersion in a modified polymeric precursor solution. The prepared monolith was characterized by X-ray diffraction, atomic force microscopy, and scanning electron microscopy and was tested in a tri-reforming reaction of simulated biogas ( CH4/CO2 = 3) for synthesis gas production. The monolithic catalyst presented better stability than the powdered catalyst under the 50-h test. In contrast, the powdered catalyst showed more pronounced deactivation, which was associated with higher carbon deposition. This study provides valuable information on a simple deposition method for Ni-based catalysts on FeCrAl monoliths for biogas tri-reforming reactions, which could have implications for biogas upgrading.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The present work aimed at exploring the automatic mental associations raised by salt and the influence of socio-demographic and psychographic variables on such associations. For this purpose, an online study was conducted in Uruguay using a non-probabilistic sample of 581 participants. Participants were asked to write down the first words that came to their mind when thinking of salt and to answer a questionnaire about discretionary salt consumption patterns. Then, they completed the consideration of future consequences (CFC) scale adapted for eating behaviour, a regulatory focus scale and a perceived risk of sodium consumption scale. Additionally, sociodemographic data were collected. The most frequent associations elicited by salt were related to negative health outcomes (41%), providing evidence that participants were already aware of the negative health consequences of excessive salt consumption. Responses within the themes food and flavour were also mentioned by a relatively high percentage of participants (34% and 31%, respectively). Results revealed that participants with higher perceived risk severity were more likely to associate salt with negative health outcomes while those with higher perceived risk compensation were less likely to provide responses within this theme. In addition, participants who self-reported an adequate salt consumption (i.e., a salt intake that meets dietary recommendations) were less likely to associate salt with negative health outcomes than those with low salt consumption, whereas the latter were less likely to associate salt with flavour. Results from the present work contribute to the understanding of Uruguayan&rsquo;s perception, beliefs, and attitudes towards salt, providing valuable insights to inform the first steps in the development of communication strategies for reducing consumption of discretionary salt at the population level.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<span style="text-decoration: underline;">Background:</span> Labels are a key element of the marketing strategies of infant formula companies, and often include text or images that idealize their use, undermining efforts to promote breastfeeding. <span style="text-decoration: underline;">Research Aims:</span> To evaluate the prevalence of marketing cues that idealize infant formula on labels of products commercialized in Uruguay and to assess changes after a periodic monitoring of compliance with the International Code of Marketing of Breast-Milk Substitutes (IC). <span style="text-decoration: underline;">Method:</span> This study is a descriptive, observational, and longitudinal assessment of the information included on infant formula labels. The first data collection was in 2019, as part of a periodic assessment to monitor the marketing of human-milk substitutes. In 2021, the same products were purchased to evaluate changes in their labels. Thirty-eight products were identified in 2019, of which 33 were still available in 2021. All information available on the labels was analyzed through content analysis. <span style="text-decoration: underline;">Results:</span> Most products included at least one textual or visual marketing cue idealizing infant formula in both 2019 (n=30, 91%) and 2021 (n=29, 88%). This represents a violation of both the IC and national regulations. References to nutritional composition were the most frequent marketing cue, followed by references to child growth and development. No relevant changes were observed after the periodic assessment conducted by the Uruguayan government. <span style="text-decoration: underline;">Conclusions:</span> Monitoring compliance with the IC per se cannot be expected to trigger changes in the marketing strategies of infant formula companies. More explicit regulations and strong enforcement mechanisms are needed to end the inappropriate marketing practices on infant formula labels.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Increasing consumption of energy drinks has raised public health concerns worldwide. The present study intended to contribute to the literature on policies to discourage consumption of these beverages by exploring the effect of front-of-package caffeine warning labels on the purchase intention of young Uruguayan adults. A mixed methods approach was used to address the research objectives in an online survey with 225 participants aged between 18- and 30-years old. The quantitative component of the survey intended to evaluate the effect of caffeine warnings on purchase intention using choice-based conjoint analysis, whereas the qualitative component explored participants&rsquo; perceived efficacy of the warnings using an open-ended question. The conjoint task involved a series of choice sets composed of two cans differing in three 2-level variables: octagonal caffeine warning featuring the expression &rsquo;Contains caffeine&rsquo;, octagonal sugar warning, and brand. Results from the conjoint analysis showed that caffeine warnings increased choice likelihood, as did the brand conveying energy related associations. On the contrary, sugar warnings reduced choice likelihood. Responses to the open-ended question provided insights on the lack of efficacy of caffeine warnings and stressed the importance of raising awareness of the potential negative health consequences of energy drink consumption. Taken together results from the present work suggest the importance of designing effective front-of-package warning labels to discourage consumption of energy drinks among young adults.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Tissue transglutaminase (TG2) expressed in monocytes and macrophage is known to participate in processes during either early and resolution stages of inflammation. The alternative splicing of tissue transglutaminase gene is a mechanism that increases its functional diversity. Four spliced variants are known with truncated C terminal domains (TGM2_v2, TGM2_v3, TGM2_v4a, TGM2_v4b) but scarce information is available about its expression in human monocyte and macrophages. We studied the expression of canonical TG2 (TGM2_v1) and its short spliced variants by RT-PCR during dif ferentiation of TPH-1 derived macrophages (dTHP-1) using two protocols (condition I and II) that differ in Phorbol-12-myristate-13-acetate dose and time schedule. The production of TNF-&alpha; and IL-1&beta; in supernatant of dTHP-1, measured by ELISA in supernatants showed higher proinflammatory milieu in condition I. We found that the expression of all mRNA TG2 spliced variants were up-regulated during macrophage dif ferentiation and after IFN-&gamma; treatment of dTHP-1 cells in both conditions. Nevertheless, the relative fold increase or TGM2_v3 in relation with TGM2_v1 was higher only with the condition I. M1/M2-like THP-1 macrophages obtained with IFN-&gamma;/IL-4 treatments showed that the up-regulation of TGM2_v1 induced by IL-4 was higher in relation with any short spliced variants. The qualitative profile of relative contribution of spliced variants in M1/M2-like THP-1 cells showed a trend to higher expression of TGM2_v3 in the inflammatory functional phenotype. Our results contribute to the knowledge about TG2 spliced variants in the biology of monocyte/macrophage cells and show how the differentiation conditions can alter their expression and cell function.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Glutathione transferases (GSTs) perform catalytic and non-catalytic activities, mostly involved in stress-response and cell detoxification. Helminth parasites express several GSTs of multiple classes that are involved in the neutralization of potentially harmful oxidants, and in the inactivation or removal of xenobiotics. Additionally, GSTs participate in immunomodulatory processes that facilitate the parasite establishment and survival within its host. In Echinococcus granulosus sensu lato (s.l.) -the cestode parasite responsible for cystic echinococcosis- only one Mu-class GST has been reported. In the present work, by using bioinformatic and proteomic approaches we searched for novel Mu-class GSTs potentially involved in the parasite oxidative-stress metabolism. In the genome of E. granulosus s.l., 6 GST-related sequences were found to constitute a strongly conserved phylogenetical clade with Mu-class members. Among them, 5 displayed conserved gene structure (exon/intron), as well as specific residues and motifs characteristic of Mu-class enzymes. By proteomic analysis, 3 Mu-GSTs were identified to be expressed in the protoscolex parasite stage, 2 of them being firstly described as Mu-class GSTs here. The existence of more than one productive Mu-GST gene expands the parasite xenobiotic phase II metabolism, which might have beneficial roles on E. granulosus s.l. ability to successfully infect its host.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[CD6 is a lymphocyte-specific scavenger receptor expressed on adaptive (T) and innate (B1a, NK) immune cells, which is involved in both fine-tuning of lymphocyte activation/ differentiation and recognition of bacterial-associated molecular patterns (i.e., lipo polysaccharide). However, evidence on CD6&rsquo;s role in the physiological response to bacterial infection was missing. Our results show that induction of monobacterial and polymicrobial sepsis in Cd6 / mice results in lower survival rates and increased bacterial loads and pro-inflammatory cytokine levels. Steady state analyses ofCd6 / mice show decreased levels of natural polyreactive antibodies, concomitant with decreased cell counts of spleen B1a and marginal zone B cells. Adoptive transfer of wild-type B cells and mouse serum, as well as a polyreactive monoclonal antibody improveCd6 / mouse survival rates post-sepsis. These findings support a nonredun dant role forCD6 in the early response against bacterial infection, through homeostat ic expansion and functionality of innate-related immune cells.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Galactomannans are polysaccharides commonly extracted from the endosperm of various leguminous seeds, exhibiting variations in their man/gal ratio based on their botanical origin. These gums are highly valued for their biodegradability and excellent stability. However, their applications have been limited due to their high viscosity and molecular weight. In this study, enzymatic and ultrasound depolymerisation of galactomannans (guar gum, locust bean gum, and unconventional Neltuma ruscifolia seed gum) was carried out, resulting in hydrolysates, which were subsequently freeze-dried and charac terised. The hydrolysis process leads to a decrease in viscosity and molecular weight, accompanied by a noticeable increase in polydispersity through enzymatic treatment. Thin-layer chromatography (TLC) analysis indicates the generation of at least eight-membered subunits. Fourier-transform infrared (FT-IR) spectroscopy analysis demonstrates no significant changes in functional groups following ultrasound hydrolysis. Furthermore, in agreement with TLC results, enzymatic hydrolysates display partial reactivity towards non-enzymatic browning (NEB), yielding mostly intermediate products with limited brown ing development. This study diversifies potential applications of these gums in different industries.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Food reformulation is widely recognised as a cost-effective policy to reduce sodium intake and improve public health outcomes. The objectives of the study were to: i) assess the sodium content of food products available in the Uruguayan market, ii) evaluate progress in achieving regional sodium reduction benchmarks; and iii) compare maximum targets and gradual percentage reductions considering potential effectiveness and sensory perception thresholds. Information about sodium content was extracted from the food labels of 4,719 products available at nine supermarkets. The median sodium content of the products was 389.3 mg/100g. When comparing median sodium content to the targets set by the Pan American Health Organisation for 2021, 32 of the 62 subcategories exceeded the established benchmarks, while 30 subcategories fell below them. Adopting regional targets would necessitate sodium reductions exceeding the 15% difference threshold for salty taste for a large proportion of products, potentially leading to noticeable changes in taste. At the aggregate level, percentage reductions were significantly more effective in reducing sodium content compared to maximum target strategies based on the 50th or 70th percentile. Results from the present work underscore the need to adapt regional targets for the development of a sodium reduction program in Uruguay.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Biological glycans mediate several physiological processes, thus altered glycosylation patterns can lead to different diseases such as autoimmune, infectious, chronic anti-inflammatory diseases, or even cancer. In fact, alterations in fucosylation in either N- or O-glycans are among the most frequent changes in glycosylation patterns associated with cancer. Therefore, elucidation of the role of glycoconjugate glycans is essential for understanding the development of pathologies where they are involved. In this sense glycosidases are excellent tools, since they catalyse the selective removal of sugar residues, allowing the evaluation of changes in their biological role due to glycan removal. This work describes the purification and characterization of a &alpha;-fucosidase from the fungus Dichostereum sordulentum 1488. It is a homodimer with a molecular weight of 214 kDa and optimum pH and temperature of 4.0 and 70 ◦C respectively. It has a KM of 0.27 mM and VMax of 3.3 &mu;moles PNP/ min per mg for the substrate p-nitrophenyl-&alpha;-L-fucopyranoside, showing a substrate inhibition profile. It showed high specificity for the hydrolysis of fucose linked by &alpha;-(1,2) bonds. The identification, purification, and characterization of this new &alpha;-fucosidase is highly relevant for enlarging the availability of glycosidases for use as tools for glycan elucidation.]]></dcterms:abstract>

In this work, different immobilization strategies on biomimetic NPs were tested to enhance the stability of Issatchenkia ori entalis BGL and compared with traditional methods on agarose and Eupergit. Immobilization to biomimetic silica NPs by ionic interactions proved to be the most efficient method to achieve enzyme stabilization in model wine at pH 4.0. In particular, the subsequent glutaraldehyde crosslinking, achieved a high immobilization efficiency (71%) with an outstanding stabilization factor of 240-fold with respect to the soluble enzyme. This enzyme derivative preserved practically all the activity (98%) after15 days in model wine supplemented with Muscat glycosides, making possible its application for the release of aroma compounds relevant to the typicity of wine.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Even beer being the most consumed alcoholic beverage around the world, there is not enough information generated for craft beers produced in Latin America, for either volatile profiles or physicochemical studies. In this work, the chemical and volatile components of ten commercial Blond Ale and nine Indian Pale Ale (IPA) beers from the Uruguayan market were studied using GC&ndash;MS. Principal component analysis applied to the data allowed differentiation among the two groups of samples while the volatile compounds and physicochemical parameters responsible for these differences were identified. The physicochemical properties revealed a great diversity between all beer samples even within the same beer style. The main significant differences were ob tained for alcohol, polyphenols, bitterness, colour, and pH. Most Blond Ale beer samples were differentiated from IPA ones by raw fermentation aroma compounds such as 1-pentanol, 1-hexanol, hexanoic and isobutyric acids, 4- vinyl guaiacol, and 5,5-dimethyl-2(5H)-furanone. This is the first work that contributes to the knowledge of Uruguayan craft beers. The study also showed the ability of most of the Uruguayan microbreweries to brew Blond Ale and IPA craft beer styles that meet international standards for physicochemical quality.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The different combinations of molecular dynamics simulations with coarse-grained representations have ac quired considerable popularity among the scientific community. Especially in biocomputing, the significant speedup granted by simplified molecular models opened the possibility of increasing the diversity and complexity of macromolecular systems, providing realistic insights on large assemblies for more extended time windows. However, a holistic view of biological ensembles&rsquo; structural and dynamic features requires a self-consistent force field, namely, a set of equations and parameters that describe the intra and intermolecular interactions among moieties of diverse chemical nature (i.e., nucleic and amino acids, lipids, solvent, ions, etc.). Nevertheless, examples of such force fields are scarce in the literature at the fully atomistic and coarse-grained levels. More over, the number of force fields capable of handling simultaneously different scales is restricted to a handful. Among those, the SIRAH force field, developed in our group, furnishes a set of topologies and tools that facilitate the setting up and running of molecular dynamics simulations at the coarse-grained and multiscale levels. SIRAH uses the same classical pairwise Hamiltonian function implemented in the most popular molecular dynamics software. In particular, it runs natively in AMBER and Gromacs engines, and porting it to other simulation packages is straightforward. This review describes the underlying philosophy behind the development of SIRAH over the years and across families of biological molecules, discussing current limitations and future implementations.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Oxydiacetate, iminodiacetate, and thiodiacetate are flexible dicarboxilates which have been used as chelating agents towards d-metal ions for decades. They differ among each other only in the central connecting group X: O, NH, or S. The interaction of these ligands with lanthanide ions has also received significant attention in recent years. This review deals with various aspects of the coordination chemistry of Ln ions with these three ligands. It includes a critical analysis of the stability studies carried out in solution, shedding light on the influence of X in the thermodynamic stability of the resulting complexes. In the solid state, the discovery of new materials by combination of the diverse coordination modes offered by the two carboxylate groups (or the protonated forms of them) with the fluxional geometry of the central hinge X, is explored. Luminescent properties both in solution and in the solid state are also discussed, again with regard to the coordination abilities of these ligands. Finally, the most relevant applications are discussed, including the design of white-light emitters and other optic ma terials and the preparation of MOFs with one-dimensional channels that are currently assayed as catalysts in several organic processes.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[It is well established that proteins and peptides can release sulfur under alkaline treatment, mainly through the &beta;-elimination of disulfides with the concomitant formation of persulfides and dehydroalanine derivatives. In this study, we evaluated the formation of glutathione persulfide (GSSH/GSS- ) by exposure of glutathione disulfide (GSSG) to alkaline conditions. The kinetics of the reaction between GSSG and HO- was investigated by UV&ndash;Vis absorbance, reaction with 5,5&prime;-dithio-bis-(2-nitrobenzoic acid) (DTNB), and cold cyanolysis, obtaining an apparent second-order rate constant of ~10-3 M-1 s -1 at 25 ◦C. The formation of GSSH and the dehydroalanine derivative was confirmed by HPLC and/or mass spectrometry. However, the mixtures did not equilibrate in a timescale of hours, and additional species, including thiol and diverse sulfane sulfur compounds were also formed, probably through further reactions of the persulfide. Cold cyanolysis is frequently used to quantify persulfides, since it measures sulfane sulfur. This method involves a step in which the sample to be analyzed is incubated with cyanide at alkaline pH. When cold cyanolysis was applied to samples containing GSSG, sulfane sulfur products that were not present in the original sample were measured. Thus, our results reveal the risk of overestimating the amount of sulfane sulfur compounds in samples that contain disulfides due to their decay to persulfides and other sulfane sulfur compounds at alkaline pH. Overall, our study highlights that the &beta;-elimi nation of disulfides is a potential source of persulfides, although we do not recommend the preparation of GSSH from incubation of GSSG in alkali. Our study also highlights the importance of being cautious when doing and interpreting cold cyanolysis experiments.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Fungal decay, predominantly caused by Penicillium expansum, is the main cause of apple postharvest losses. To overcome this problem, synthetic fungicides are applied to fruit before storage. Public concern about this practice has raised interest in developing alternative biocontrol strategies for postharvest diseases. Debaryomyces hansenii F9D, a psychrotrophic Antarctic yeast, has been previously selected as a promising biocontrol agent due to its ability to reduce blue mold incidence in apples and pears. Previous in vitro studies indicated that the biocontrol mechanism of this yeast does not involve the production of antifungal metabolites or other inhibitory or competitive interactions with the pathogen. In this work, we conducted further studies in order to understand the interaction between Penicillium expansum and D. hansenii F9D within apple wounds. The growth of both mi croorganisms in apple wounds during cold storage was followed over time by q-PCR and viable cell counts. Scanning electron microscopy observations of co-inoculated and control wounds (inoculated only with the yeast or with the pathogen) were conducted to evaluate if the pathogen conidia could germinate in presence of the yeast and to determine the colonization patterns of P. expansum and the biocontrol yeast. Our results indicate that Debaryomyces hansenii F9D is able to prevent cold stored apples&rsquo; wounds rot by inhibiting the virulence factors produced by the pathogen without impeding its growth. These findings provide circumstantial evidence for a new biocontrol mechanism associated with the prevention of fungal decay in apples by biocontrol yeasts during cold storage of fruit.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Searching for new copper compounds which may be useful as antitumor drugs, a series of new [Cu(L-dipeptide)(batho)] (batho:4,7-diphenyl-1,10-phenanthroline, L-dipeptide: Gly-Val, Gly Phe, Ala-Gly, Ala-Ala, Ala-Phe, Phe-Ala, Phe-Val and Phe-Phe) complexes were synthesized and characterized. To interpret the experimental IR spectra, [Cu(ala-gly)(batho)] was modelled in the gas phase using DFT at the B3LYP/LANL2DZ level of theory and the calculated vibrational frequencies were analyzed. Solid-state characterization is in agreement with pentacoordinate complexes of the general formula [Cu(L-dipeptide)(batho)]&middot;x solvent, similar to other [Cu(L-dipeptide)(diimine)] complexes. In solution, the major species are heteroleptic, as in the solid state. The mode of binding to the DNA was evaluated by different techniques, to understand the role of the diimine and the dipeptide. To this end, studies were also performed with complexes [CuCl2 (diimine)], [Cu(L dipeptide)(diimine)] and free diimines, with phenanthroline, neocuproine and 3,4,7,8-tetramethyl phenanthroline. The cytotoxicity of the complexes was determined on human cancer cell lines MDA-MB-231, MCF-7 (breast, the first triple negative), and A549 (lung epithelial) and non-tumor cell lines MRC-5 (lung) and MCF-10A (breast). [Cu(L-dipeptide)(batho)] complexes are highly cytotoxic as compared to cisplatin and [Cu(L-dipeptide)(phenanthroline)] complexes, being potential candidates to study their in vivo activity in the treatments of aggressive tumors for which there is no curative pharmacological treatment.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The addition mechanism of the OH-initiated oxidation of allyl methyl sulfide (AMS) under atmospheric conditions was studied theoretically using both density functional theory (DFT) and the SVECV-f12 composite method. We found that the addition does not occur directly but rather through a pre-reactive complex that serves as a previous stage for addition at both the C1 and C2 positions. However, based on thermodynamics the addition at C2 possibly occurs by branching of the C1 addition mechanism. Once the addition proceeds, the reaction with O2 under atmospheric conditions produces RO2 radicals that can decompose in multiple ways. Complex mechanisms of intramolecular rearrangement and decomposition both in the absence and presence of NOx have been examined. The thermodynamically most favourable decomposition paths produce 2-hydroxy-acetaldehyde, 2-methyl-thio-acetaldehyde, formaldehyde, and the methyl thiomethyl peroxy (MSP) intermediate. This latter species is proposed as the main source of sulfur dioxide (SO2), which is the product found in the highest yield during the experimental determinations.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Existe una creciente preocupaci&oacute;n respecto al contenido de cadmio (Cd) en los productos derivados del cacao, como la cocoa en polvo; lo que ha llevado al establecimiento de valores de ingesta m&aacute;xima tolerable de este metal y a la disminuci&oacute;n de los niveles m&aacute;ximos (NM) aceptados. En este sentido, es necesario realizar un control sobre los niveles de Cd en estos alimentos, contando con m&eacute;todos anal&iacute;ticos confiables y amigables con el medio ambiente. Con ese objetivo se desarroll&oacute; y valid&oacute; un m&eacute;todo anal&iacute;tico para la determinaci&oacute;n de Cd en cocoas puras y en su preparaci&oacute;n con leche, la forma de consumo m&aacute;s popular en nuestro pa&iacute;s. El m&eacute;todo result&oacute; adecuado para el fin definido y present&oacute; como ventaja un menor consumo de &aacute;cidos concentrados que el m&eacute;todo de referencia de la AOAC International (2016b). Se aplic&oacute; para un sondeo del contenido de Cd en muestras disponibles en el mercado local de Montevideo, Uruguay. Si bien todas las muestras tuvieron concentraciones detectables de Cd, resultaron inferiores al NM establecido.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Yerba mate infusions are highly consumed and increasingly popular in the world. The evaluation of their chemi cal profiles representing the actual dietary intake may present analytical and interpretation challenges due to the diversity of available products, their drinking procedures, and transfer rates of the compounds into the infusions. There is a general interest in assessing the amounts of polyphenols in human diets to evaluate their potential health-promoting benefits. Thus, the objective of this work was to provide a fast and robust method for the analysis of infusions of yerba mate to evaluate teas with different particle sizes, degree of processing and type. A simple extraction using an espresso machine and ultra-high performance liquid chromatography with diode array detection (UHPLC-DAD) was developed and validated for the determination of theobromine, caffeine, caf feoylquinic and dicaffeoylquinic acids in yerba mate infusions. The chemical profiles of twenty-six yerba mate samples reflected their industrial processes. The dietary intake and the ratio of chlorogenic acids to caffeine of yerba mate was evaluated for different products (aged, green, and roasted yerba mate). The new method proved to be a fast, simple, and fit-for-purpose procedure for the aqueous extraction and determination of bioactive compounds in yerba mate products.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Copper (Cu), iron (Fe) and zinc (Zn) bioaccessibility was studied in beef, chicken, chickpeas, lentils, quinoa, soybeans, and tuna fish using an in vitro assay. Samples were cooked as usually consumed locally. Analytical determinations were performed by atomic absorption spectrometry. The samples that presented the highest bioaccessible fraction (BF) were soybeans (~87 %) (Cu), chickpeas (~78 %) (Fe), and quinoa (~92 %) (Zn), respectively. Zinc was the mineral that presented the highest BF value of all, being above 66 % in all food samples. The effect of garlic and onion on the BF was also evaluated, being the highest effects observed for quinoa with a percent increase of 26.9 % (Fe) promoted by garlic and 19.7 % (Zn) promoted by onion. The contribution of Cu, Fe and Zn to the recommended dietary allowance (RDA) for adults over 19 years was esti mated, considering a 200 g portion. Soybeans and lentils contributed between 56.7 % and 78.9 % (men and women) to Cu RDA, chickpeas, lentils, and soybeans contributed an average of 34.6 % (men) and 15.4 % (women) to Fe RDA, while beef contributed an average of 65.5 % (men) and 90.1 % (women) to Zn RDA. This information shows that beef is a major source of Zn to the diet.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Stilbenes belong to the group of non-flavonoid phenolic compounds. Resveratrol is the main stilbene present in grapes and wines. Many analytical methods have been reported for the determination of resveratrol in wine, which are primarily based on chromatographic techniques like high-performance liquid chromatography (HPLC), capillary electrophoresis (CE), and gas chromatography (GC). This chapter presents a liquid-liquid extraction method for stilbenes in grapes. The analytical methodology here presented, carried out by HPLC-MS, can be used both for grapes and wine.]]></dcterms:abstract>
