    <dcterms:abstract><![CDATA[<p>The reduction of the environmental impact represents an important challenge<br />for the winemaking industry. Red grape by-products are composed of several<br />health-promoting components such as polyphenols and dietary fiber, which may<br />be employed as sustainable food ingredients. Although the bioactive properties<br />of red grape pomace, one of the most abundant byproducts of the winemaking<br />industry worldwide, have been extensively documented by in vitro studies,<br />there is a lack of information on the bioaccessibility, bioavailability and food<br />applications that will subsequently affect the contribution of grape byproduct<br />bioactive compounds to these properties. Therefore, the present chapter aimed<br />to present some of the latest grape byproducts in vitro bioactive properties,<br />as well as novel and updated knowledge related to its bioaccessibility,<br />bioavailability and food applications.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[A recent screen of 67,012 compounds identified a new family of compounds with excellent nematicidal activity: the ortho-substituted benzamide families Wact-11 and Wact-12. These com pounds are active against Caenorhabditis elegans and parasitic nematodes by selectively inhibiting nematode complex II, and they display low toxicity in mammalian cells and vertebrate organisms. Although a big number of benzamides were tested against C. elegans in high-throughput screens, bioisosteres of the amide moiety were not represented in the chemical space examined. We thus iden tified an opportunity for the design, synthesis and evaluation of novel compounds, using bioisosteric replacements of the amide group present in benzamides. The compound Wact-11 was used as the reference scaffold to prepare a set of bioisosteres to be evaluated against C. elegans. Eight types of amide replacement were selected, including ester, thioamide, selenoamide, sulfonamide, alkyl thio and oxo-amides, urea and triazole. The results allowed us to perform a structure&ndash;activity relationship, highlighting the relevance of the amide group for nematicide activity. Experimental evidence was complemented with in silico structural studies over a C. elegans complex II model as a molecular target of benzamides. Importantly, compound Wact-11 was active against the flatworm Echinococcus granulosus, suggesting a previously unreported pan-anthelmintic potential for benzamides.]]></dcterms:abstract>

The synthesis of these monomers starting from bromobenzene features an enzymatic dihydroxylation and the regio- and stereoselective installation of the azide and alkyne functionalities. Optimization of the click reaction was accomplished using dimerization as the model reaction.     <dcterms:abstract><![CDATA[<p>Echinococcus granulosus sensu lato (s.l.) is the helminth parasite responsible for cystic echinococcosis, a neglected<br />tropical disease currently affecting millions of people worldwide. Incomplete knowledge on the parasite biochemistry contributes, at least partially, to the limited development of useful biotechnological advances for the infection control. In this sense, little information is available regarding post-translational modifications (PTMs) occurring in E. granulosus s.l. proteins, which ultimately may affect the performance of biotechnological products to be developed. Therefore, we report here a proteomic analysis of the parasite PTMs identified through FindMod software applied to a set of tegumental proteins previously characterized by mass spectrometry<br />(MALDI-TOF/TOF) analysis of protein spots from a 2D electrophoresis gel. Manual searches for already annotated<br />proteins exhibiting such PTMs were also performed within proteome databases of E. granulosus s.l. and other platyhelminthes. In addition, key enzymes involved in PTMs modifications were searched for within E. granulosus s.l. proteome. Finally, the presence of selected PTMs was further confirmed by a high-resolution proteomic approach (nanoLC-MS/MS). A set of 22 different PTMs most likely to be present in the parasite was suggested, 9 of them with high confidence as they were identified in the same m/z fragment by both proteomic techniques (acetylation, deamidation, deamidation followed by methylation, mono- and dihydroxylation,<br />mono- and di-methylation, S-nitrosylation and phosphorylation). Interestingly, 5 PTMs were herein identified for the first time in E. granulosus s.l. proteins. Our results expand the scarcely studied topic of PTMs in platyhelminthes.</p>]]></dcterms:abstract>

To improve FBZ water solubility and dissolution rate, novel self-dispersible nanocrystals (SDNCs) of FBZ were recently described. In this work, the pharmacokinetic behavior of the SDNCs of FBZ and Poloxamer 188 was compared against a physical mixture (PM) of its components. The experiment was<br />conducted following a crossover design with two different experimental phases. In phase I, sheep were treated with the SDNC (n = 3) or the PM (n = 3) formulations by the intraruminal route at the same dose rate (5 mg/kg). The treatment groups were reversed after a 7-days washout period. A non-compartmental analysis of the concentration in plasma versus time results showed that the calculated Cmax and AUC0-T were significantly higher (p &lt; 0.05) for FBZ and its metabolites after the SDNC treatment compared to the PM (for FBZ: Cmax 0.346 &mu;g/mL and AUC0-T 10.1 &mu;g.h/mL after the SDNC vs Cmax 0.157 &mu;g/mL and AUC0-T 5.1 &mu;g.h/mL after the PM treatment). Additionally, population pharmacokinetic parameters of FBZ were estimated for the first time in sheep. In conclusion, the formulation of FBZ as SDNCs is a promising approach to improve FBZ dissolution reaching a higher drug plasma exposure in ruminants.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>Galectins, soluble lectins widely expressed intra- and extracellularly in different cell types, play major roles in<br />deciphering the cellular glycocode. Galectin-1 (Gal-1), a prototype member of this family, presents a carbohydrate<br />recognition domain (CRD) with specific affinity for &beta;-galactosides such as N-acetyllactosamine (&beta;-D-Galp-(1<br />&rarr; 4)-D-GlcpNAc), and mediate numerous physiological and pathological processes.<br />In this work, Gal-1 binding affinity for &beta;-(1 &rarr; 6) galactosides, including &beta;-D-Galp-(1 &rarr; 6)-&beta;-D-GlcpNAc-(1 &rarr; 4)-<br />D-GlcpNAc was evaluated, and their performance was compared to that of &beta;-(1 &rarr; 4) and &beta;-(1 &rarr; 3) galactosides.<br />To this end, the trisaccharide &beta;-D-Galp-(1 &rarr; 6)-&beta;-D-GlcpNAc-(1 &rarr; 4)-D-GlcpNAc was enzymatically synthesized, purified and structurally characterized.<br />To evaluate the affinity of Gal-1 for the galactosides, competitive solid phase assays (SPA) and isothermal titration calorimetry (ITC) studies were carried out. The experimental dissociation constants and binding energies obtained were compared to those calculated by molecular docking. These analyses evidenced the critical role of the glycosidic linkage between the terminal galactopyranoside residue and the adjacent monosaccharide, as galactosides bearing &beta;-(1 &rarr; 6) glycosidic linkages showed dissociation constants six- and seven-fold higher than those involving &beta;-(1 &rarr; 4) and &beta;-(1 &rarr; 3) linkages, respectively. Moreover, docking experiments revealed the presence of hydrogen bond interactions between the N-acetyl group of the glucosaminopyranose moiety of the evaluated galactosides and specific amino acid residues of Gal 1, relevant for galectin-glycan affinity. Noticeably, the binding free energies (&Delta;Gcbainlcd) derived from the molecular docking were in good agreement with experimental values determined by ITC measurements (&Delta;Gebxinpd), evidencing a good correlation between theoretical and experimental approaches, which validates the in silico simulations and constitutes an important tool for the rational design of future optimized ligands.</p>]]></dcterms:abstract>

Actualmente, existe una tendencia a explorar y utilizar el potencial de la microbiota silvestre nativa en el proceso de elaboraci&oacute;n de vinos, para aportar atributos que contribuyan a la calidad del producto.     <dcterms:abstract><![CDATA[This work presents a study based on numerical simulations to describe the local structural evolution of Cu-Zr-Al amorphous alloys when moderate stresses are applied and removed. In particular, it will seek to recognize the formation of clusters with some degree of symmetry in the amorphous matrix and how these are altered depending on the mechanical stress experienced by them. The selected technique is classical molecular dynamics, using the &lsquo;Embedded-atom method&rsquo; (EAM) and some other studies trying to identify local crystalline order<br />(Common Neighbor Analysis, atomic centro-symmetry parameter, radial distribution functions and the reciprocal<br />space pattern). The simulations confirm the local order/disorder mechanism based on the existence of<br />ordered regions, which depends on the nature of the applied stress. Particularly, this work focused on performing simulations in time and stress regimes close to anelastic experimental conditions, which makes it different to other related computational reports that focus on regimes close to plastic deformation. The atomistic simulations provide strong evidence of the local ordering occurrence, in good concordance with early ultrasound assisted experiments on Cu-Zr-Al amorphous alloys, thus providing strong evidence of the local ordering occurrence in an elastic regime when uniaxial stress is applied. The reversibility of the system, when stress is removed, was also shown. The application of uniaxial stress favors the presence of different kind of local order structures, when<br />compared with the situation of hydrostatic pressure.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>It is widely accepted that the use of alkyl zinc and alkyl zinc alkoxide precursors are usually preferred instead of the popularly used zinc acetate precursor to obtaining better control on the synthesis of different zinc-oxo clusters and nanostructures. However, there are very few reports about zinc dialkoxides precursors and not many ones studying these precursors in a typical hydrolysiscondensation route. In the present report, we focus on the study of zinc dimethoxide structural features and their Raman spectroscopy signatures in the absence and presence of tetrahydrofuran (THF) adduct. Our theoretical calculations using Density Functional Theory (DFT) reveal that monomeric, dimeric and trimeric zinc dimethoxide exhibit distinctive Raman signatures, particularly at the low frequency region. In addition, some particular vibrational modes of zinc dimethoxide also evidenced some characteristic shifting and splitting in the presence of explicit THF coordination molecules. Our experimental approach using<br />surface-enhanced Raman spectroscopy (SERS) reveals a quite complex combination of Raman signatures associated to zinc<br />dimethoxide clusters corroborating tetrahydrofuran coordination and further early hydrolysis-condensation scenario. We aim to<br />shed some light on the chemical structure of this particular zinc dimethoxide precursor and some of its early hydrolysis condensation products employing a powerful, popular and versatile technique such as Raman spectroscopy as it can be a<br />promising candidate to access and simultaneously monitor the formation of novel zinc-oxo clusters and nanostructures.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>A new RuII&ndash;ReII complex salt, -cyanido-2C:N-bis[(5-cyclopentadienyl)bis- (3,5,7 triazaphosphaadamantane -P)ruthenium(II)]tetrabromido(ethanol/methanol-O)nitrosylrhenate(II), [Ru(CN)(C5H5)2(C6H12N3P)4][ReBr4(NO)-<br />(CH4O)0.5(C2H6O)0.5] or [RuCp(PTA)2&ndash;-CN&ndash;1C:22N-RuCp(PTA)2]-[Re(NO)Br4(EtOH)0.5(MeOH)0.5] (PTA = 3,5,7-triazaphosphaadamantane) was obtained and characterized by single-crystal X-ray diffraction, elemental analysis and infrared spectroscopy. The title salt was obtained by liquid&ndash;liquid<br />diffusion of methanol/DMSO solutions of (NBu4)[Re(NO)Br4(EtOH)] and[(PTA)2CpRu&ndash;-CN&ndash;1C:22N-RuCp(PTA)2](CF3SO3). The RuII and ReII independent moieties correspond to a binuclear and mononuclear complex ion, respectively. A deep geometrical parameter analysis was performed, and no significant differences were found with earlier reports containing similar molecules. The magnetic properties were investigated in the temperature range 2.0&ndash;300 K, and the complex behaves as a quasi-magnetically isolated spin doublet with weak antiferromagnetic interactions.</p>]]></dcterms:abstract>

This work reports on the specificity for wine glycosides and the impact on wine aroma, of three native yeast &beta;-glucosidases. Volatile compounds were analyzed by gas-chromatography and mass spectroscopy (GC&ndash;MS) and wine aroma was studied by sensory analysis. Issatchenkia terricola &beta;-glucosidase stood out from the other &beta;-glucosidases studied. The I. terricola BGL<br />showed remarkable specificity for norisoprenoid aglycones such as: 3-oxo-7, 8-dihydro-alpha-ionol, 3-oxo- &alpha;-ionol, vomifoliol. This different specificity was perceived in the sensory tests. The judges described pleasant fruity, sweet, honey and raisin notes in both Tannat and Muscat wines treated with I. terricola BGL. These results are particularly remarkable for Tannat wines, since there are few reports concerning the application of &beta;-glucosidases to enhance its aroma of Tannat, and none with BGLs from native yeasts.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The development of the biodiesel industry with the concomitant production of glycerol as the major byproduct has had a negative impact on the glycerol market. The application of circular economy concepts has led to progress in production processes that use this residue as starting material. Propylene glycol has been identified as a potential destiny of glycerol surplus; however, the possibility of increasing this valorization from the existence of a stereogenic center has been scarcely explored. Using metabolic engineering in E. coli, a set of biocatalysts capable of biotransforming glycerol to (R)-1,2-propanediol has been designed, built, and evaluated. The simultaneous expression of a methylglyoxal reductase (Gre2p) and an aldehyde reductase (Ypr1p) both from S. cerevisiae origin, along with the overexpression of E. coli methylglyoxal synthase (mgsA), resulted in an E. coli strain capable of producing enantiomerically pure (e.e.&gt; 99%) (R)-1,2-propanediol from glycerol, in a concentration of 209 &plusmn; 9mg.L-1. The developed biocatalysts presented a satisfactory performance when crude glycerin obtained from biodiesel production process was used in place of glycerol.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The subfamily Cerambycinae, one of the most diverse in longhorn beetles, is well known for its remarkable chemical parsi mony in male-emitted pheromones. Conserved shared structural motifs have been reported in numerous species, sometimes working in combination with plant volatile kairomones. Among other compounds, the most ubiquitous male pheromone in cerambycine species is 3-hydroxyhexan-2-one. We conducted feld trials using intercept traps baited with 3-hydroxyhexan- 2-one and observed abundant captures of several Neotropical cerambycine species. These were Retrachydes thoracicus thoracicus (Olivier), Megacyllene acuta (Germar), Compsocerus violaceus (White), and Cotyclytus curvatus (Germar) in high numbers, as well as Chydarteres striatus striatus (Fabricius) and Odontocroton favicauda (Bates) in smaller numbers. When ethanol was added to the traps, a remarkable increase in the attractiveness of 3-hydroxyhexan-2-one was observed for R. thoracicus thoracicus and M. acuta. Adding ethanol also resulted in the capture of Chrysoprasis aurigena (Germar). Finally, incidental catches in pheromone-baited traps of Trachelissa maculicollis (Audinet-Serville), Neoclytus pusillus (Laporte &amp; Gory), Achryson unicolor (Bruch, 1908) and Achryson surinamum (Linnaeus), Megacyllene mellyi (Chevrolat) and Thelgetra adustus (Burmeister) were also observed. Pheromone chemistry has been reported for C. curvatus, M. acuta and N. pusillus, all three producing 3-hydroxyhexan-2-one, and for C. aurigena and A. surinamum, which produce other compounds. Our fndings suggest that the captured species probably produce 3-hydroxyhexan-2-one for their pheromone communication system. Alternatively, they might be &ldquo;eavesdropping&rdquo; on the pheromones of other cerambycine species. The probable synergistic efect of ethanol is likely explained from its kairomonal role as a volatile cue for plant stress or ripeness.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>Iboga alkaloids are a group of monoterpenoid indole alkaloids with promising and intriguing biological activities. Ibogaine is the representative member of the series and has become widely known as a potent atypical psychedelic with promising effects to treat substance use disorder. Nowadays, an efficient and scalable enantioselective total synthesis of ibogaine and related iboga alkaloids is still lacking, so direct extraction from natural sources or semi-synthetic schemes are the methods of choice to obtain them in a preparative scale. In particular, ibogaine can be obtained either by a low yielding direct isolation from Tabernanthe iboga or using a semi-synthetic procedure from voacangine, an iboga alkaloid occurring in a higher yield in the root bark of Voacanga africana. In this work, we describe an optimized process to obtain voacangine from V. africana root bark as a precursor of the iboga scaffold. Using a direct acetone-based extraction procedure (0.5 kg of root bark), voacangine was isolated in &sim;0.8% of root bark dried weight, while the major alkaloids isolated from the bark were identified as iboga-vobasinyl dimers (&sim;3.7%) such as voacamine and voacamidine. Since these alkaloids contain the voacangine moiety in their structure, the cleavage of the dimers was further optimized, affording an extra amount of voacangine in &sim;50% isolated molar yield. In this manner, the total amount of voacangine obtained by application of the whole procedure to the plant material (extraction and dimer cleavage) could almost duplicate the content originally found in the root bark.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>A new crystal structure for complex [Cu2Cl2(bipy)2(&mu;-Cl)(&mu;-CH3O)] was obtained. X-ray diffraction data showed dinuclear complexes with metal-ions seated on two symmetrically related pentacoordinated environment, in which, a trigonal bipyramidal<br />(TBPY-5) coordination polyhedra was observed. While chloride was detected as monodentate and as a bridging-ligand,<br />the diimine unit and a bridging oxygen from methoxide occupied the remaining positions. The crystal structure accounted for dinuclear complexes interacting to each other via H-bonds involving C&ndash;H groups of bipy and monodentate chloride anions of an adjacent molecule. Theoretical studies were conducted by DFT methods employing B3LYP in combination with 6-31G(d). Larger basis sets (6-311G(d) and cc-pVDZ) were taken into account to assess the performance of B3LYP/6-31G(d) in dealing with equilibrium geometry and population analysis. This standard methodology showed to be a reasonable performer to reproduce geometric parameters keeping the computational cost very low.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>The objective of this study was to test the effect of the combined application of lactic acid (0&ndash;5%) (LA) and UV-C light (0&ndash;330 mJ/cm2) to reduce Listeria monocytogenes and lactic acid bacteria (LAB) on beef without major meat color (L *, a *, b *) change and its impact over time. A two-factor central composite design with five central points and response surface methodology (RSM) were used to optimize LA concentration and UV-C dose using 21 meat pieces (10 g) inoculated with<br />L. monocytogenes (LM100A1). The optimal conditions were analyzed over 8 weeks. A quadratic model was obtained that predicted the L. monocytogenes log reduction in vacuum-packed beef treated with LA and UV-C. The maximum log reduction for L. monocytogenes (1.55&nbsp;<span>&plusmn;</span> 0.41 log CFU/g) and<br />LAB (1.55&nbsp;<span>&plusmn;</span>&nbsp;1.15 log CFU/g) with minimal impact on meat color was achieved with 2.6% LA and 330 mJ/cm2 UV-C. These conditions impaired L. monocytogenes growth and delayed LAB growth by 2 weeks in vacuum-packed meat samples throughout 8 weeks at 4&deg; C. This strategy might contribute to improving the safety and shelf life of vacuum-packed beef with a low impact on meat color.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Onion is among the most consumed vegetables in Uruguay, grown in the northwestern and southern regions of the country. The onion supply presents interannual variations associated with significant postharvest losses, mainly caused by bacterial rots. Besides bulb rotting, onion leaf lesions as well as infections on seed-stalks during seed production may be devastating for some varieties under conducive conditions. This research aimed to identify the causal agents of bulb rots and leaf blight of onion crops in Uruguay. Symptomatic bulbs, seeds-stalks, and leaves were collected from commercial fields from 2015 to 2020. Bacterial colonies were isolated and identified at genera level using physiological tests and 16S rRNA gene sequence analysis. A collection of 59 <em>Pantoea</em> spp. isolates was obtained (11 from bulbs and 48 from leaves and seeds-stalks). Multilocus sequence analysis using four housekeeping genes (<em>rpoB</em>, <em>gyrB</em>, <em>leuS</em>, and <em>fusA</em>) allowed the assignment of the isolates to five <em>Pantoea</em> species: <em>P. ananatis</em>, <em>P.&nbsp;agglomerans</em>, <em>P. allii</em>, <em>P. eucalypti</em>, and <em>P. vagans.</em> The last two species were not previously reported as onion pathogens elsewhere. The ability to cause disease symptoms was tested by leaf inoculation and red onion scale assays. <em>P. ananatis</em> isolates showed the highest aggressiveness in both assays. Specific isolates from <em>P. allii</em> (MAI 6022), <em>P. eucalypti</em> (MAI 6036), <em>P. vagans</em> (MAI 6050), and <em>Pantoea</em> sp. (MAI 6049) ranked second in aggressiveness on onion leaves, whereas only three isolates belonging to <em>P. eucalypti</em> (MAI 6036 and MAI 6058) and <em>P. agglomerans</em> (MAI 6045) exhibited the same scale-clearing phenotype as <em>P. ananatis</em>. Leaf inoculation assays were also performed on a set of eight onion cultivars and breeding lines. Overall, <em>P. ananatis</em> MAI 6032 showed the highest aggressiveness in all tested cultivars, followed by <em>P. eucalypti</em> MAI 6036. The presence of new reported bacterial species leads to complex disease management and highlights the need for further studies on virulence factors and the epidemiology of these pathogens.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>Pantoea ananatis is a gram-negative bacterium and the primary causal agent of center rot of onions in Georgia. Previous genomic studies identified two virulence gene clusters, HiVir and alt, associated with center rot. The HiVir gene cluster is required to induce necrosis on onion tissues via synthesis of pantaphos, (2-hydroxy[phosphonomethyl) maleate), a phosphonate phytotoxin. The alt gene cluster aids in tolerance<br />to thiosulfinates generated during onion tissue damage. Whole genome sequencing of other Pantoea species suggests that these gene clusters are present outside of P. ananatis. To assess the distribution of these gene clusters, two PCR primer sets were designed to detect the presence of HiVir and alt. Two hundred fifty-two strains of Pantoea spp. were phenotyped using the red onion scale necrosis (RSN) assay and were genotyped using PCR for the presence of these virulence genes. A diverse panel of strains from three distinct culture collections comprised of 24 Pantoea species, 41 isolation sources, and 23 countries, collected from 1946&ndash;2019, was tested. There is a<br />significant association between the alt PCR assay and Pantoea strains recovered from symptomatic onion (P &lt; 0.001). There is also a significant association of a positive HiVir PCR and RSN assay among P. ananatis strains but not among Pantoea spp.,<br />congeners. This may indicate a divergent HiVir cluster or different pathogenicity and virulence mechanisms.     <dcterms:abstract><![CDATA[In this work, several immobilization strategies for Gluconobacter oxydans NBRC 14819 (Gox) were tested in the bioconversion of crude glycerol to dihydroxyacetone (DHA). Agar, agarose and polyacrylamide were evaluated as immobilization matrixes. Glutaraldehyde crosslinked versions of the agar and agarose preparations were also<br />tested. Agar immobilized Gox proved to be the best heterogeneous biocatalyst in the bioconversion of crude glycerol reaching a quantitative production of 50 g/L glycerol into DHA solely in water. Immobilization allowed<br />reutilization for at least eight cycles, reaching four times more DHA than the amount obtained by a single batch of free cells which cannot be reutilized. An increase in scale of 34 times had no impact on DHA productivity. The results obtained herein constitute a contribution to the microbiological production of DHA as they not only attain<br />unprecedented productivities for the reaction with immobilized biocatalysts but also proved that it is feasible to do it in a clean background of solely water that alleviates the cost of downstream processing.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>ICTAC recently published a series of recommendations for analyzing thermogravimetric experiments, one of which was the deconvolution of the DrTGA; however, it has received little use for processing fuel blends. In the present work, Lorentz distribution was used to deconvolve multi-stage processes in the co-combustion of oil shales and Eucalyptus grandis sawdust from Uruguay. The activation energies values were obtained using an isoconversional-iterative procedure and the maximum value were obtained for the oil shales (401 kJ mol- 1), which is correlated with its low combustibility. The activation energies values were used to calculate the preexponential Arrhenius factors and global orders. The thermogravimetric curves were rebuilt at different heating rates (5, 10, 20, 30, 40 and 50 K min- 1). Results indicated a good agreement between the theoretically calculated values and the experimental data, obtaining a maximum average error smaller than 3%.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>Recently, the increase in microbreweries and the consequent production of craft beers have reached exponential growth. The interest in non-conventional yeasts for innovation and a unique selling feature in beer fermentation is increasing. This work studied the autochthonous Saccharomyces and non Saccharomyces yeasts, isolated from various food sources, with the ability to modify and improve the fermentative and aromatic profiles during alcoholic fermentation. The ability to ferment maltose and produce desirable aroma compounds were considered as the key characters for the screening selection. A synthetic beer wort was developed for this purpose, to simulate beer wort composition.</p>
<p>A total of forty-seven yeast strains belonging to different genera were analysed according to their fermentation profile, volatile compounds production and sensory analysis. Three native strains of Saccharomyces cerevisiae, Zygoascus meyerae and Pichia anomala were selected to evaluate their aromatic profile in single and mixed fermentations. The strains produced 4-vinylguaiacol, &beta;-phenylethyl alcohol, and isoamyl alcohol at levels significantly above the sensory threshold, making them interesting for wheat and blond craft beer styles. The native Hanseniaspora vineae was also included in a co-fermentation treatment, resulting in a promising yeast to produce fruity beers.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Objective: To explore Uruguayan paediatricians&rsquo; personal recommendations about complementary feeding and to assess if they are aligned with current guidelines and scientific evidence. Design: A questionnaire composed of open-ended questions was used to explore foods recommended to start complementary feeding, foods regarded as the most important during the first meals, recommendations for delayed introduction of foods and foods that should be avoided. Reasons underlying the recommendations were also explored. Setting: Montevideo, the capital city of Uruguay (Latin America). Participants: A total of 212 paediatricians were recruited during a National Pediatrics Conference, organised by the Uruguayan Society of Pediatrics. Results: The recommendations about complementary feeding provided by paediatricians to parents and caregivers in Uruguay seemed not to be fully aligned with the guidelines provided by the Ministry of Health. Paediatricians recommend a rigid food introduction sequence, characterised by the early introduction of soft pureed vegetables and fruits, followed by meat and the delayed introduction of allergenic foods. Food diversity and the concept of ultra-processed were not frequently identified in the responses. Conclusions: Results stress the importance of developing educational and communication approaches targeted at paediatricians to contribute to the uptake of updated recommendations regarding complementary feeding.
