    <dcterms:abstract><![CDATA[Text highlighting is a new method for online sensory-consumer research where participants read a text while making use of highlighting functions to indicate content that they, respectively, &lsquo;like&rsquo; and &lsquo;dislike.&rsquo; In a recent series of papers, consumers have been found to approach the text highlighting task in a logical and systematic manner, and the results have been shown to deliver attitudinal insights about the focal topic that fit expectations. Building on the early successes of text highlighting, it was an obvious step to try to extend it to applications in product research which occupies a central role in sensory-consumer research. A case study with kiwifruit was performed with consumers in Singapore and Malaysia (n = 1140). Participants read a text (288 words, 19 sentences) which primarily described sensory, nutrition and health characteristics of green and gold kiwifruit. Focusing on 43 specific fruit characteristics, sentiment (difference between the frequency of &lsquo;like&rsquo; and &lsquo;dislike&rsquo; highlights) was higher for nutrition and health characteristics than for those describing sensory characteristics. Only the Chinese origin of kiwifruit and the hairy skin of green kiwifruit were negatively perceived overall. A novel use of penalty/lift analysis to identify the specific fruit characteristics that significantly influenced ex pected liking of kiwifruit confirmed the results based on sentiment scores. Moreover, a difference between the drivers of liking for gold and green kiwifruit was identified; the use of &lsquo;like&rsquo; highlighting for sensory properties positively contributed to expected liking for gold kiwifruit only. The case study also demonstrated the potential to meaningfully segment consumers based on their highlighting responses to product specific characteristics. The results are discussed in the context of future applications of text highlighting in product research.]]></dcterms:abstract>

<p>Satisfaction with food-related life (SWFRL) is one component of satisfaction with life. Although researchers have identified associations between satisfaction with food-related life and specific food behaviours, it is still not clear how consumers conceptualize this complex construct. The aims of the present study were to explore consumers&rsquo;<br />conceptualization of SWFRL, to compare how parents and adolescents in dual-headed households perceive SWFRL, and to identify aspects that would increase their SWFRL. One-hundred and sixty-four dual families<br />composed of mother, father, and at least one adolescent child between 10 and 17 years of age participated in the study. They completed a word association task with &ldquo;Being satisfied with my food-related life&rdquo; and completed<br />the sentence &ldquo;I would be more satisfied with my food-related life if&hellip;&rdquo;. Participants&rsquo; responses were aligned with the formal definition of SWFRL. References to specific foods and food characteristics were also mentioned in the<br />word association task. No significant differences were found between parents and adolescents in the frequency of mention of responses related to the identified categories and supra-categories, suggesting lack of differences in their conceptualization of SWFRL. Changes in eating behaviours and individuals&rsquo; resources for purchasing and preparing foods were regarded as the main factors that could increase SWFRL. Differences between family<br />members were found in some of the aspects associated with an increase in SWFRL. Results from this study can aid in the development of strategies for promoting changes in eating habits and increasing SWFRL, targeted at different family members.</p>

    <dcterms:abstract><![CDATA[CATA questions (check-all-that-apply) are popular for sensory product characterisation tasks with consumers. Lingering uncertainty over the meaning of term citation frequency was addressed in the present research, which directly compared CATA questions with intensity and applicability ratings obtained on 10 cm unstructured line scales. In three studies (n ~ 210 consumers per study), evidence fitting with expectations based on the extant literature was obtained to confirm that citation frequency reflects intensity. The two response types were strongly linearly related, meaning that it is possible to infer significant differences between samples for a given CATA term as representing differences in perceived intensity. This finding emphasises how, despite the simplicity of the CATA task and the fact that individual responses are not measures of intensity, the average citation frequencies do reflect perceived intensity. Therefore, across a group of consumers, there is no information loss relative to rating scales. A systematic difference between citation frequencies and intensity ratings was attenuation of scale use in the latter, which was between 15 and 80 on a 0 to 100 scale. Attenuation was less pronounced in CATA responses which spanned approx. 5 to 85%. In the second part of the research, which included six studies (n ~ 135 to 205 consumers per study) CATA questions were compared with applicability ratings obtained on 10 cm unstructured line scales. The results were highly similar to the comparison between CATA questions and intensity scales and further confirmed that average CATA term citation frequency can be interpreted as representing (but not directly measuring) consumers&rsquo; intensity perceptions. The attenuation in scale range was again observed. Collectively, the results contribute further support for the popularity of CATA questions for sensory characterization by consumers in product testing.

    <dcterms:abstract><![CDATA[The use of check-all-that-apply (CATA) questions in product-focused consumer research on foods and beverages is now common, and the method is known to provide valid sensory product characterisations. Extensive methodological research has been conducted and has supported uptake, but understanding of how consumers complete CATA questions is incomplete, particularly with regard to their decision to select or not a term to describe the sensory properties of products. The present research was situated within this gap, and using open-ended questions participants (n = 636) were asked to describe how they perceived a pair of samples with regard to an attribute and link this to CATA term selection. The results, obtained for taste (&lsquo;sweet&rsquo; and &lsquo;sour/acidic&rsquo;) and flavour (&lsquo;cinnamon&rsquo; and &lsquo;smoky&rsquo;) confirmed consumers&rsquo; ability to accurately perform sensory characterisation tasks. In particular, it was found that: i) the great majority of the consumers accurately used the CATA terms for describing the sensory characteristics they perceived in a sample, ii) when a term was not selected for describing samples, the majority of the consumers indicated that the corresponding sensory attribute was not perceived, iii) when a term was selected for describing only one of the samples in a pair, consumers reported to have perceived a difference in attribute intensity between the samples. Thus, CATA questions remain a desirable option for sensory product characterisation tasks with consumers, but should be selected with thought as they may not always be able to achieve desired sample discrimination due to the binary nature of the responses.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The high availability of products with high sugar content, particularly among those targeted as children, has been identified as one of the factors that contribute to the childhood obesity epidemic. For this reason, product reformulation has been recommended as one of the strategies that can be implemented to achieve short-term reductions in children&rsquo;s sugar intake. In this context, the objective of this study was to evaluate the feasibility of using cross-modal (taste-odor-texture) interactions as a strategy for reducing the sugar content of products targeted at children, using milk desserts as case study. A series of 5 vanilla milk desserts were formulated: a control sample with 12% added sugar and 4 sugar-reduced samples (7% added sugar) prepared following a 2 &times; 2 experimental design by varying vanilla (0.4% and 0.6% w/w) and starch (4.3% and 4.7% w/w) concentrations. A total of 112 children (8&ndash;12 years old) tasted the desserts and performed a dynamic sensory characterization task using either temporal check-all-that-apply or temporal dominance of sensations. In addition, they assessed the overall liking of all samples. Results showed that sugar-reduced samples did not significantly differ from the control sample in terms of their average overall liking scores. However, individual differences in children&rsquo;s hedonic reaction were found; three clusters of children with distinctive liking patterns were identified. The increase in vanilla and starch concentration led to an increase in overall liking for over 80% of the children. Sensory dynamic profiles revealed significant but subtle differences among samples. Results from the present work suggest that cross-modal interactions could contribute to minimizing the sensory changes caused by sugar reduction, which could enable to achieve larger reductions if implemented in the context of gradual sugar reduction programs.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The aim of the present work was to explore the effect of the inclusion of nutritional warnings on consumer associations with labels of ultra-processed products. The study was conducted in Uruguay at two points in time, before and after the compulsory implementation of nutritional warnings. A total of 163 participants evaluated three labels of ultra-processed products using a word association task. In the first evaluation (T1), performed 9 months before the entry into force of nutritional warnings, labels were presented without warnings. Nine months later (15 days after the entry into force of the policy), participants evaluated the labels with warnings again (T2). Data were analyzed using content analysis. At T1, when labels were presented without nutritional warnings, responses to the word association task were related to a description of the product category, expected sensory characteristics of the products, brand names, liking and eating occasions. However, when the labels were presented with the warnings at T2, a significant increase in the frequency of mention of responses was observed within the categories Excessive content of sugar/fat/sodium, Not healthy, Diseases and negative health conditions, Rejection to consume, and Unexpected information. Results from the present work suggest that immediately after their implementation, nutritional warnings cause a salience bias that make excessive nutrient content and its negative health consequences more salient in consumers&rsquo; minds, especially in the case of products with a particular health-related connotation.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[A primary cause of food waste in households is a lack of food capabilities. Yet, the antecedents of food capabilities and its relationship with causes of food waste across different situational contexts remain poorly understood. We apply self‐efficacy theory in combination with convenience orientation and good provider identity in a mixed‐methods study. Findings reveal that the sequential structure of self‐efficacy explains how capabilities contribute to food waste avoidance. A good provider identity, however, increases food waste, and also turns out to further convenience orientation. Food capabilities, in turn, reduce convenience orientation. Qualitative insights shed light on consumer's own accounts of their abilities. The findings contribute to a theory‐based understanding of how consumers manage the complex issue of food waste. Findings imply that public policy and marketing should aim to strengthen consumers' self‐efficacy beliefs and redefine the good provider identity, in particular in social contexts, to reverse its effect on waste.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Sensory scientists have adapted several sensory methods to fit children&rsquo;s cognitive abilities according to their different developmental stages. Although children have been reported to be able to use sensory methods to describe foods and beverages, published applications are limited to static characterizations. In this context, the<br />objective of the study was to evaluate the feasibility of using two dynamic methods (temporal check-all-thatapply -TCATA- and Temporal dominance of sensations -TDS-) for sensory characterization with children. A video<br />featuring colored circles (varying in size, appearing and disappearing) was used to convey the idea of temporal perception and to familiarize children with the methods. A series of six vanilla milk desserts was used in the tasting session. A total of 102 children (8 to 12 years old) recruited from two Uruguayan schools participated in<br />the study. They were randomly divided in two groups, each of which used one of the methods. Results showed that TCATA and TDS allowed capturing the dynamics in the video. However, TCATA provided a more detailed<br />description of how the colored circles evolved with time than TDS. In the case of the milk desserts samples, both methodologies showed similar results regarding the most relevant sensory characteristics. However, children<br />mostly used them as static methods. In the TDS task, children dithered for long before selecting a new attribute, which points towards difficulties in evaluating dominance. Results from the present work suggest that refinements are needed to make TCATA and TDS methods applicable with children for characterizing food stimuli.

    <dcterms:abstract><![CDATA[Objective: To assess the effects of nutritional warnings during the first month after the date of full compliance by the food industry in Uruguay in terms of citizen awareness, self-reported use and ability to understand nutritional information. Design: The present work encompassed two online studies, conducted before (Study 1) and during the first month after the date of full compliance by the food industry (Study 2). An after-only design was used to assess awareness of the policy, exposure to nutritional warnings on food packages and self-reported use of warnings for making purchase decisions in Study 2. An after-only with control group experimental design was used to assess the effect of nutritional warnings on understanding of nutrition information in Studies 1 and 2. Setting: Uruguay, one of the Latin American countries, that has recently implemented nutritional warnings. Participants: A non-probabilistic sample of 1772 participants was recruited using Facebook advertisements targeted at Uruguayan adult users. Results: High awareness and self-reported use of nutritional warnings during the first month after the date of full compliance in Uruguay were observed. In addition, the before and after comparison showed that the implementation of warnings increased citizens&rsquo; ability to use nutritional information to compare products and to identify products with excessive content of sugar, fat, saturated fat and sodium. Conclusions: The current study confirms results from experimental studies and provides additional evidence to support the implementation of nutritional warnings as one of the public policies that can contribute to tackle obesity and non-communicable diseases.

    <dcterms:abstract><![CDATA[The social distancing measures implemented to contain the coronavirus (COVID-19) pandemic worldwide have created a series of emotional and economic challenges. The aim of the present work was to explore the experiences of families with children and adolescents during the coronavirus (COVID-19) pandemic in Uruguay. An online study was conducted in March 2020 with 1725 parents with children under 18 years old. A series of closed and open-ended questions about their family life since the implementation of social distancing measures were asked, addressing the following topics: how they had felt, changes they had experienced in their daily life, children&rsquo;s daily routine, changes implemented in relation to child-care, changes they had perceived in children&rsquo;s eating patterns, changes in their relationship with their children, changes in their children&rsquo;s mood and behavior, and their reaction to those changes. Results showed that the coronavirus pandemic elicited negative feelings in the majority of participants, mainly related to worry, fear, anxiety and uncertainty. Social distancing measures caused a major disruption in daily habits, which were mostly attributed to changes in work-related activities and the closure of educational institutions. Changes in children&rsquo;s mood and behavior were perceived by the majority of the participants, who mainly referred to boredom, agitation and restlessness. Although some participants reported difficulties to cope with children&rsquo;s behavior during social distancing, others valued the opportunity of spending more time with their children. In terms of children&rsquo;s eating patterns, changes related to both an increase and a decrease in the consumption of healthy foods were observed. Results from the present work have relevant implications for public health policy and practice by highlighting the importance of providing emotional and psychological support to people during social distancing measures and providing insights for the design of communication campaigns and interventions.

    <dcterms:abstract><![CDATA[Neuroscience has the potential to allow us to more fully understand eating behavior by providing information that is inaccessible by conventional methods. However, it cannot be expected to solve all the problems sensory and consumer researchers face when trying to understand consumer food-related decisions. In the present work, we provide a commentary on the opinion paper by Niedziela &amp; Ambroze. We urge sensory and consumer researchers to get familiar with neuroscience methods, their potential and limitations, as well as to engage in more interdisciplinary research to validate the application of neuroscience tools in the field.

    <dcterms:abstract><![CDATA[<p>Objective: The aim of this study was to explore and analyse the actions implemented by civil society to contribute to food security in the context of the COVID-19 outbreak in Uruguay, a high-income country in South America.<br />Design: An exploratory systematic approach was used to identify the contributions of civil society to food security through reports in news websites and Facebook<br />posts. Data were analysed based on content analysis following a deductive&ndash;inductive approach.<br />Setting: Uruguay, Latin America.<br />Results: A total of 1220 civil society organisations were identified, which developed two main actions to increase access to food among the Uruguayan population: food baskets and &lsquo;community pots&rsquo; (also known as &lsquo;common pots&rsquo;). Most of the<br />initiatives targeted citizens under socioeconomic vulnerability in the face of COVID-19, without specifying any specific requirement or population segment.<br />Actions were mainly led by spontaneously organised community groups, and, to a lesser extent, by consolidated organisations. Interactions between organisations were identified. The foods provided by the organisations were mostly aligned with national dietary guidelines. Social media posts evidenced that the main challenge faced by organisations was related to the lack of funds or supplies.<br />Conclusions: Results from this work suggest that the lack of funds or supplies poses challenges to the medium- and long-term contributions of civil society to food security and stresses the need for comprehensive governmental measures to guarantee food security amongst Uruguayan citizens.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>Objective: To explore adolescents&rsquo; views about the foods they consume and to identify their ideas about strategies to encourage healthier eating habits.<br />Design: Individual questionnaires based on open-ended questions and group discussions (6&ndash;8 participants) were used to address the objectives. Data were analysed using content analysis based on deductive-inductive coding.<br />Setting: Montevideo and its metropolitan area (Uruguay, Latin America).<br />Participants: Totally, 102 adolescents (aged between 11 and 15 years, 52 %female) recruited at two educational institutions.<br />Results: Adolescents reported frequently consuming ultra-processed products and fast food although they were perceived as bad for their health, whereas they reported an infrequent consumption of fruits and vegetables. Multifaceted strategies<br />to promote healthy eating habits emerged from adolescents&rsquo; accounts, including public awareness campaigns, nutrition education programmes, nutrition label standards and regulations, and changes in food availability and affordability.<br />Conclusions: Results from the present work suggest that co-creation with adolescents may be an effective way to inform the development of strategies to promote healthier eating habits. The strategies suggested by adolescents were mainly focused on behaviour change communication, who emphasised the importance of social media and the involvement of celebrities and influencers. The need for educational and communication strategies to raise awareness of the social and environmental drivers of eating patterns among adolescents was identified.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Nutritional warnings have gained popularity, particularly in the region of the Americas, to facilitate the identification of products with excessive content of nutrients associated with non-communicable diseases and encourage healthier food choices. Although warnings have been shown to be effective, an in-depth understanding of the reasons why some consumers do not use them is still lacking. The aim of the present work was to explore self-reported use of nutritional warnings and to identify the reasons for not considering nutritional warnings for making food purchase decisions after policy implementation in Uruguay. A non-probabil istic sample of 858 Uruguayan participants was recruited using an advertisement on Facebook and Instagram. Through an online survey, self-reported use of nutritional warnings was asked using a closed-open ended questions. Participants who reported not considering warnings to make their purchase decisions were asked to explain the reasons why using an open-ended question. Responses were analysed using deductive coding, based on the Behavioural Drivers Model. Thirty seven percent of the partic ipants stated that the warnings had not influenced their purchase decisions. Motives for not being influenced by the warnings were related to lack of interest, attitudes, lack of perceived self-efficacy, cognitive biases and limited rationality when making purchase decisions. In addition, structural barriers, such as availability, cost and trust in the food industry also emerged from participants&rsquo; responses. Strategies to encourage the use of warnings should include communication campaigns and policies to address structural barriers related to the perceived availability and affordability of healthy foods.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The aim of the present work was to explore children&rsquo;s reaction to sugar reduction in the context of the imple mentation of nutritional warnings in Uruguay. The study was composed of two sessions involving three evalu ation conditions: tasting without package information, package evaluation without tasting, and tasting with package information. A total of 122 children, ages ranging between 6 and 13 years old (47% girls) were involved in the study. In the first session, children&rsquo;s hedonic and emotional response to a regular and a sugar-reduced chocolate dairy dessert (without other sweeteners) was evaluated. In the second session, children first evalu ated their expected liking, emotional associations and choice of packages differing in the presence of warning labels for excessive sugar content and cartoon character (2x2 design). Finally, they tasted the selected sample in the presence of the package and evaluated their liking, emotional associations, and intention to re-taste it. Although sugar reduction led to a significant reduction in overall liking, the dessert with 40% sugar reduction showed a mean overall score of 6.5 in a 9-point hedonic scale and was described using positive emoji ( , , ). When the desserts were tasted with package information, no significant differences in the expected overall liking of the regular and sugar-reduced dessert were found. Regarding the effect of packaging elements, the presence of a warning label highlighting excessive content of sugar did not have a significant effect on children&rsquo;s choice. Instead, children&rsquo;s choices were defined by the presence of a cartoon character. Results from the present work provide additional evidence about the feasibility of reducing the sugar content and sweetness of dairy products targeted at children and stress the need to regulate the use of cartoon characters on products with an unfavorable nutritional profile.Methodological recommendations for sensory and consumer research with children are also discussed.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Purpose The current research aimed to examine the prevalence of Instagram posts featuring ultra-processed products targeted at adolescents in Uruguay and hence investigate the frequency of such posts among a vulnerable consumer segment in a country that cannot be classified as WEIRD (i.e. Western, educated, industrialized, rich and democratic). Design/methodology/approach The study relied on a cross-sectional content analysis. A total of 2,014 Instagram posts promoting ultraprocessed products or brands commercializing such products, generated by 118 Instagram accounts between August 15th, 2020, and February 15th, 2021, were analyzed. Nine indicators of food marketing targeted at adolescents were selected to identify posts targeted at this age segment. Inductive coding was used to describe the content of the posts. Descriptive statistics and generalized linear models were used to analyze the data. Findings In total, 17.6% of the posts were identified as targeted at adolescents. Graphic design and adolescent language were the most prevalent indicators of marketing targeted at adolescents, followed by explicit references to adolescents or young adults and memes. Posts identified as targeted at adolescents mainly promoted snacks and discretionary foods. Differences in the content of posts identified as targeted and not targeted at adolescents were observed. Research limitations/implications The analysis was restricted to one social media platform in one country during a limited period of time, which limits the generalizability of the findings to other media platforms, samples and settings. Social implications Results stress the need to implement digital food marketing regulations to reduce exposure of adolescents to the deleterious effects of stemming from marketing of unhealthy foods and provide empirical evidence to inform their development.     <dcterms:abstract><![CDATA[Although fruits and vegetables are an essential component of a healthy diet from sustainable food systems, their consumption remains below recommended levels worldwide. In this context, the aim of the present work was to explore factors influencing fruit and vegetable consumption among Uruguayan adults. A telephone survey with 505 adults, living in Montevideo and involved in food purchasing for the household, was conducted by a specialized company in May 2024. Participants were asked to indicate the number of days they consumed fruit in a typical week and the number of servings they ate in each of those days. They were also asked to indicate whether they regarded their fruit and vegetable consumption as sufficient or not. Those answering negatively were asked to indicate the reasons underlying their insufficient consumption. Participants also answered a series of socio-demographic questions. Results showed that only 12.4% of the participants consumed at least 5 servings of fruit and vegetables per day. Gender and socio-economic status were identified as the main socio-demographic predictors of fruit and vegetable consumption. Fruit and vegetable intake was frequently perceived as sufficient, even if it was below national recommendations. A wide range of factors emerged as motives underlying insufficient consumption of fruits and vegetables, including lack of habits, cost, dislike, and perceived difficulty for preparing or cooking vegetables. These results stress the need to implement multicomponent strategies to address deficiencies in fruit and vegetable consumption in the country.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[We present a joint study of confocal Raman spectroscopy, supported by the oretical simulations, together with resistivity and X-ray diffraction measurements on the high temperature superconductor (HTSC) YBa2Cu3O7 family doped with Pr atoms. The samples are grown using two different synthesis routes: sol&ndash;gel and solid-state<br />reaction. Samples produced by both methods present similar structural and morphological&nbsp; properties but small differences are observed in their superconductive properties and vibrational response. The latter is correlated with ab-initio simulations for different concentrations of Pr. We find that as the Pr concentration increases, the<br />presence of a forbidden
