    <dcterms:abstract><![CDATA[<p>Se fundamenta y detalla la construcci&oacute;n de un accesorio de reflexi&oacute;n total atenuada (ATR) para el espectro-fot&oacute;metro Beckman DU, seg&uacute;n dise&ntilde;o del Prof. T. Hirschfeld.</p>
<p>Junto con los datos y las constantes del aparato se exponen los primers resultados obtenidos, que indican que funciona en forma satisfactoria.</p>
<p>Se ve que los espectros del nitrato de amonio s&oacute;lido se obtienen adecuadamente.</p>]]></dcterms:abstract>

We prepared a biologically active recombinant streptolysin-O with higher yield and a simpler purification process. An enzyme-linked immunosorbent assay developed with this recombinant showed good correlation with a commercial test, suggesting that it could be suitable for immunoassays.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Two studies, one in Uruguay using Uruguayan white pan bread (WPB) and another in Spain using Spanish WPB, were carried out with trained judges and consumers from the country in question. The objectives were to correlate the consumer panel acceptability, trained sensory panel scores, and instrumental measurements of defects likely to appear during WPB storage, to compare the acceptability prediction models obtained in each country, and to apply survival analysis methodology to estimate the shelf life of the product. Logistic regression was used to predict the acceptance percentage and multiple regression was used to predict acceptability. Sensory variables (strange odor) showed a greater prediction capacity for Uruguayan WPB acceptability and acceptance percentage. For the Spanish WPB, instrumental cohesiveness and moisture content variables showed a greater prediction capacity for the acceptance percentage, whereas sensory (cohesiveness and color) and moisture content variables showed a greater prediction capacity for acceptability. Uruguayan WPB shelf life was 15 d for a 50% probability of consumer rejection and 13 d for a 25% probability of consumer rejection, whereas for Spanish WPB it was 23 d for a 50% probability of consumer rejection and 16 d for a 25% probability of consumer rejection.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p><em>The aims of the present work were to study consumer attitudes toward shelf-life labeling and to evaluate if shelf-life information affects consumer acceptability, rejection to consume and rejection to repeat purchase. Six samples of dulce de leche with different plastic flavor intensities were presented to a panel of 50 consumers, who scored their overall acceptability and indicated their intention to consume and to repeat purchase of the samples. They also answered a multiple-choice questionnaire regarding their attitude toward shelf-life labeling.</em></p>
<p><em>Knowing that the samples were near the end of their shelf life did not affect acceptability scores or consumer rejection to consume. Thus, consumer perception of the product was not affected by knowing that it was close to expiration. This is in agreement with the fact that most consumers (75%) first try an expired product before deciding what to do.</em></p>
<h4>PRACTICAL APPLICATIONS</h4>
<p>Ninety-five and seventy-nine percent of the consumers stated that they read shelf-life information at purchase and consumption stage, respectively, which suggests the importance of proper shelf-life labeling.</p>
<p>Consumer rejection to repeat purchase was higher than rejection to consume. Thus, consumers seemed to consume a product although they might not actually like it or buy it again. Thus rejection to purchase or repeat purchase could be a more conservative criterion than rejection to consume in order to estimate sensory shelf lives or acceptance limits for sensory defects.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>Major changes are needed both with regard to what we eat and how food is produced. The latter is the focus of the present research, specifically the rise of controlled environment agriculture. In this context, empirical research is presented on consumer attitudes to vertical farming (VF) (i.e., indoor plant factory with artificial lighting), conducted in four countries (USA, UK, Singapore, and China) using online surveys (637&ndash;683 participants per country with matched gender and age group distributions). A multi-method research approach was<br />used, including a novel methodology of text highlighting, which requires that participants read a descriptive text about VF with mentions of pros and cons and use highlighter functions to select aspects of the text that they &lsquo;like&rsquo; and &lsquo;dislike&rsquo;. Based on the information provided in the text, attitudes towards VF were largely positive in the four&nbsp; countries. The characteristics of VF that aligned with the United Nations Sustainable Development Goals were identified as key drivers of positive attitudes (i.e., higher yield, reduction of carbon emissions, and securing<br />access to food). On the other hand, high energy use and premium prices contributed to negative attitudes about VF. Although the majority of participants responded to the text with an overall positive attitude towards VF, there were smaller groups of participants in every country who expressed a negative or neutral/ambivalent attitude. These between-segment differences were larger than cross-cultural differences, although the latter did exist, particularly for selected aspects of VF.     <dcterms:abstract><![CDATA[Strategies to increase vegetable consumption that go beyond their health benefits and the recommendation to consume a specific number of portions a day are necessary. In this sense, a more in-depth understanding of what consumers consider as &ldquo;vegetables&rdquo; is of interest, as it can highlight possible mismatches between guidelines and everyday experiences and contribute to the design of public campaigns and interventions. In this context, the aim of the study were: to explore how the plant-based dish category is represented for consumers, to evaluate differences among consumers with different familiarity towards vegetables, to identify the sensory properties that drive typicality and expected liking, and to investigate the relationship between typicality of the dishes and their expected liking and sensory characteristics. One hundred and twenty three consumers were considered for the study. Consumers were characterized for their level of familiarity toward vegetables and pulses and through two psycho-attitudinal questionnaires: Food Neophobia Scale and Health and Taste Attitudes Questionnaire. A total of 80 pictures of plant-based dishes were evaluated to assess the expected liking, healthiness and preparation level of each dish. Consumers were asked to rate and the typicality of the dishes by rating their agreement with the sentence &ldquo;This is a plant-based dish&rdquo;. In addition, the sensory properties characterizing each dish were evaluated using Check-All-That-Apply question. Results indicated a graded structure of the plant-based dish category, with some category members more typical than others. Specific recipe typologies, such as salads and boiled vegetables, were perceived as more typical than others, such as soups and fried vegetables. Expected sensory attributes were found to influence the typicality of a dish. The attributes Bitter, Green, Not very intense flavor, Orange, Sour and Watery positively influenced typicality, while Brown and Creamy negatively influenced it. Typicality affected expected liking for the dishes but its influence depended on consumers&rsquo; level of familiarity toward vegetables and pulses. In fact, among consumers with a low level of familiarity, the lower the typicality, the higher the expected liking. A less strong association was found among consumers with a high level of familiarity. These results stress that promotion of vegetable consumption targeted to vegetables dislikers should therefore consider their representation of the category, in order to limit the exposure to features with a negative hedonic value.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>Perceived (or subjective) wellbeing is regarded as key to understanding consumer food choices and the devel opment of strategies to promote desirable eating habits. Yet, in-depth understanding of the specific factors that contribute to people&rsquo;s perceived wellbeing across cultures is lacking. These factors motivated the present research that used word associations to conduct an exploratory analysis of consumer conceptualisations of food related wellbeing (WB). Adults (n = 4945) living in the United Kingdom, Australia, Singapore or Germany, and speaking respectively, English or German, took part in the study. Health, pleasure, food quality, positive emo tions and social aspects of food consumption were the main associations with food-related wellbeing. Absence hereof was associated with unhealthiness, disgust, negative emotions and poor mental health. The differences in these main associations emphasised the importance of exploring wellbeing, as well as lack hereof. Not doing so leads to an incomplete understanding of this multidimensional construct. The research was conducted with four terms related to wellbeing (each in their positive and negative versions): &lsquo;sense of wellbeing&rsquo; and &lsquo;lack of wellbeing&rsquo;, &lsquo;feeling good&rsquo; and &lsquo;feeling bad/unhappy&rsquo;, &lsquo;satisfied with life&rsquo; and &lsquo;dissatisfied with life&rsquo; and &lsquo;fulfilled in life&rsquo; and &lsquo;unfulfilled in life&rsquo;. Because these different terms gave rise to different wellbeing associations, re searchers in this area must choose their empirical approach with care. The terms &lsquo;sense of wellbeing&rsquo; and &lsquo;feeling good&rsquo; tended to more frequently give rise to health-related associations. Conversely, &lsquo;satisfied with life&rsquo; and &lsquo;fulfilled in life&rsquo; tended to more frequently give rise to positive spiritual and emotional associations of food related wellbeing.&nbsp;The main conceptualisations of food-related wellbeing were cross-culturally similar, but extension of the present research to other Asian countries was recommended based on several differences be tween Singaporean participants and those from other countries. In ethnically diverse countries like Singapore, further within-country investigations of different cultures will also have merit.</p>

Seventy-five consumers participated in the study and were asked to complete a word association task before the evaluation. Then, consumers tried six milk desserts with different polyphenolic concentration, scored their overall liking and willingness to purchase and provided up to four words to describe each of the samples. Cluster analysis performed on consumer-elicited terms in the word association task allowed the identification of three consumer segments with different expectations and motivations toward chocolate milk desserts enriched with antioxidants. These groups also differed in their evaluation of the desserts when tasting them, showing different overall liking, willingness to purchase and sensory description of the samples. This suggests that consumers&rsquo; prior expectations and motivations significantly affected their response when tasting the desserts.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Food not purchased due to its perceived sub-optimality is often wasted in the store, which contributes to the problem of food waste. One way to avoid this factor causing disposal of edible food is to offer such foods at reduced prices in the store. However, it remains under researched under which circumstances consumers most likely choose such food. The current study aimed to analyse choice likelihood in dependence of food category and communication of the offer, and to explore dimensions of perceived food quality and ascriptions to the buyer of sub-optimal products. An online between-subjects experimental study (4 &times; 2) with 746 Uruguayan consumers was conducted, comparing price reduced suboptimal food of four categories and communicating either economic saving or food waste avoidance. The foods were also assessed on a range of quality characteristics, and ascriptions matching a person buying either the optimal or the suboptimal food chosen. Findings show that suboptimal foods offered at reduced price were well accepted. However, likelihood of choice of suboptimal food depended on food category and was higher in the presence of communication on food waste avoidance, with differences in gender and socioeconomic status. Perceived quality and ascriptions to the buyers varied between food categories. It is concluded that communicating food waste avoidance can heighten acceptance and improve perceived quality, in particular for fresh produce. The findings allow deriving recommendations for approaches to improve value perception of suboptimal food, targeted to food category and consumer group.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Agricultural systems that classify as &lsquo;beyond organic&rsquo; have the potential to advance sustainability efforts. The present research considers these emerging systems from a consumer insights perspective. Using biodynamic (BD) agriculture as an exemplar, public opinions were explored in a multi-method and multi-national study with samples of consumers in the United Kingdom (UK), Australia, Singapore, and Germany. Across 1237 participants, the empirical findings pointed to largely positive attitudes. Between-country differences were minor, whereas consumer segmentation identified pan-national groups of people with attitudes that were, respectively, BD Positive (71%), BD Neutral (20%) or BD Negative (9%). In the BD Positive segment, consumers responded positively to the environmental and social aspects of BD agriculture, and it mattered to them that BD agriculture was a balanced and integrated approach to farming/food production. That is, they were not averse to the holistic/ spiritual aspects that are unique to BD. Biodiversity, but also other aspects of environmental sustainability mattered more to consumers than social sustainability, notably worker welfare and community resilience. The research provides new consumer insights about biodynamics by being generic to BD agriculture rather than product specific (e.g., BD wine), and advances extant consumer research by jointly exploring environmental and social sustainability. Several practical implications emerge from the results.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Current lifestyle, which seeks to optimize time, has led the industry to offer elaborated meals with minimal consumer involvement. The industry has been forced to offer new alternatives to produce novel products. One technique already known in the realm of haute cuisine and restaurants is sous vide cooking. Although there are ready-to-heat products prepared with sous vide cooking in some markets, they have not been disseminated worldwide. In this paper the perception of Uruguayan consumers of a product with sous vide cooking was explored. Six Focus Groups (n = 40) were used to explore the generic knowledge of the participants on the different convenience foods and the objective product (sous vide cooking), complemented by the projective technique of completing text in a figure. A relative ignorance of the cooking technique by the consumer &ndash; and therefore of its advantages &ndash; was determined, with a negative opinion towards keeping/containing food in a bag and a distrust in terms of/distrust regarding the possible use of additives. The sous vide product was associated with a superior or premium quality. In this study, useful information was obtained regarding the introduction of a sous vide cooking product into the market.]]></dcterms:abstract>

The present study aimed to evaluate the influence of process parameters on consumer choice of two products from sheep meat under different evoked contexts, considering product concepts. A total of 375 Brazilian participants completed a choice-based conjoint task with three 2-level variables for each product: maturation time, smoking, and sodium reduction for dry-cured sheep ham, and natural antioxidant, smoking, and sodium reduction for sheep meat coppa. A between-subjects experimental design was used to evaluate the influence of consumption context on consumer choices. All the process parameters significantly influenced consumer choice. However, their relative importance was affected by evoked context.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The word association technique was used to study the perception of Uruguayan consumers with regards to goat cheese and compare it with the perception of other cheeses sold in this market. For this, 149 subjects were presented with five different questionnaires to complete with their perceptions of the following cheeses Colonia, Parmesan, Camembert, goat and sheep cheese. The instructions were as follows: “Please, write down all the words, descriptions, associations, thoughts or feelings that come to your mind in connection with these products”. Afterwards, these words were grouped into 16 categories: animal, color, like, dislike, eyes (of the cheese), feelings, flavor, knowledge/consumption, meals and food, occasions, origin, price, quality, rind, smell and texture. Goat cheese was highly associated with factors related to flavor (51.7%) and texture (34.2%). Participants used a wide range of terms, many contradictory (sour, bitter, strong, tasty, mild, bland, creamy, pasty, soft and hard) to describe this cheese. Such diversity in responses may reflect the difference among brands in Uruguay or lack of knowledge on goat cheese. There was also variation in perception in color categories (27.5%), dislike (17.4%) and smell (21.5%). The dislike for this cheese reflected in the choice of words such as “stinky” and “smelly” is mainly associated with negative connotations for smell (fetid and malodorous). Three groups of consumers were identified based on the frequency of consumption of goat cheese. When frequency of consumption decreased, the percentage of mention of the categories like, meals and food and flavor also decreased, whereas the frequency of mention of the categories animal, knowledge/consumption and dislike increased. These results suggest that word association might be an interesting, easy and quick qualitative technique to gather useful information about consumer perceptions of cheese products.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Salt-reduction in processed products has been proposed as a high-impact intervention for reducing the sodium intake at population level. A major limitation for this approach is its potential negative impact on the sensory characteristics of products. The current practice in sensory and consumer science involves single sip/bite evaluations, which may not properly reflect the sensory experience that occurs during product consumption. In this context, the aim of the present work was to compare single and two bite evaluations of consumer sensory and hedonic perception of salt-reduced breads. Five studies with a total of 499 consumers were carried out, in which overall-liking scores of five salt-reduced bread samples were collected after the first and the second bite evaluation. In one of the studies consumers also answered a CATA (check-all-that-apply) question after the first and the second bite. Neither bite nor the interaction between samples and bite had a significant effect on hedonic scores. However, when hedonic scores were analysed separately for each bite, the overall liking scores from the second bite evaluation better reflected differences among samples according to their salt content in two of the five studies. The sensory characterization of the samples did not largely vary between the first and the second bite. Results suggest that consumers' perception of salt reduced bread samples did not largely vary between a single and a two bites evaluation. Further research is warranted in this regard, in particular considering more complex products.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<strong>ABSTRACT</strong><br /><br />Sandiness, one of the most common defects of dulce de leche, is caused by lactose crystallization. In order to study consumer reaction to the presence of different levels of this defect, survival analysis statistics was applied to the consumer acceptance/rejection data of the samples. Limits for this defect were estimated by working with 10% and 25% consumer rejection probabilities. The consumers were also asked to score the sample sandiness according to their perception, using a 9-point scale. Cluster analysis and correspondence analysis performed showed the heterogeneity of the consumer responses toward sandiness in dulce de leche.<br /><br />Significant correlations were established between consumer sandiness and the number of crystals and sandiness as measured by a panel of trained assessors, the latter being the best indicator of sandiness as perceived by the consumers. It could be established that the consumers' and assessors' sandiness perception is clearly influenced by the presence of agglomerates, their size distribution and number.<br /><br /><strong>PRACTICAL APPLICATIONS</strong><br /><br />Sandiness is an important defect for a segment of consumers who rejected samples with high levels of sandiness, suggesting the importance of avoiding the occurrence of this defect. Survival analysis methodology was used to estimate the maximum level of sandiness in dulce de leche before consumers reject it. As sandiness is a sensory defect that often limits the shelf life of dulce de leche, the calculated sensory limits could be used in future studies to estimate the sensory shelf life of dulce de leche.<br /><br />]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[To examine the influence of front-of-pack nutrition information on the perception of healthfulness of ultra-processed products across 2 income levels. DESIGN: A between-participants design was used to compare healthfulness perception of ultra-processed products featuring different front-of-pack nutrition information schemes (guideline daily amount system, traffic light system, and monochromatic traffic light system). PARTICIPANTS: A total of 300 people (aged 18-70 years, 75% female) from Montevideo, Uruguay, participated in the study; half were middle- or high-income people and the other half were low-income people. MAIN OUTCOME MEASURES: Participants were shown the labels of each product and asked to rate their perceived healthfulness and the frequency with which each product should be consumed. ANALYSIS: Results were analyzed using analysis of variance for statistical significance (P &lt; .05). RESULTS: Low-income participants perceived ultra-processed products to be significantly (P &lt; .05) more healthful than did middle- and high-income participants. The lowest perceived healthfulness scores for low-income participants were obtained for products featuring the colored and monochromatic traffic light system whereas no significant differences (P &gt; .05) among schemes were found for middle- and high-income participants. CONCLUSIONS AND IMPLICATIONS: Nutrition education programs aimed at increasing low-income people's knowledge of the nutritional composition of these products and their potential negative effects on health seem to be necessary. Although the inclusion of semidirective front-of-pack nutrition information decreased the perceived healthfulness of low-income people, it seemed unlikely to influence how they perceive these products.     <dcterms:abstract><![CDATA[Previous research has shownthat consumers' sensory and hedonic perceptions could be greatly influenced by the messages highlighted on the front of the packaging, particularly nutrition and health claims for reduced-calorie or functional foods. In food products designed for hunger control, mentioning satiating effects or meal replacement could potentially influence the expected satiety or other perceptions, including those associated with a filling effect. This study investigated the effect of packaging information on consumer perceptions of eleven commercial chocolate-flavoured satiating and meal replacement bars. Projective mapping (Napping&reg;) with a descriptive step was used to profile the expectations elicited by the eleven bars, based on their extrinsic characteristics (without tasting them), with two different groups of consumers in two different scenarios: mapping the samples' packaging and mapping cards with an identical design showing the most important information displayed on the packaging (product name, nutrition information panel and nutrition and health messages or claims). The terms and comments obtained in the two scenarios were analysed and perceptual spaces were generated from the sample location and attributes obtained in the Napping&reg; exercises, using multi factor analysis (MFA). The results showed that when evaluating the real packaging, the consumers mainly focused on the meal replacement- or satiation-related messages and on the images to build up their perception, attaching less or no importance to the nutritional information that was also displayed on the box. When examining the packaging, sensory expectations &ndash; which probably emerged from the images of the bars &ndash; were also a very important factor in placing the samples in the perceptual space.When looking only at the cards, the consumers' grouping and attribute generation focused in great detail on the nutritional information. The calorie content also became a much more important factor in their perceptions of the bars. Interestingly for the product category analysed, messages about &ldquo;satiating&rdquo; and &ldquo;meal replacement&rdquo; effects were clearly distinct and negatively correlated in the consumers' minds.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<div>El presente trabajo tuvo como objetivo evaluar la percepci&oacute;n de los consumidores uruguayos en relaci&oacute;n a la implementaci&oacute;n de advertencias nutricionales en cuatro puntos de venta de comida y generar ideas sobre c&oacute;mo podr&iacute;a implementarse esta medida. Se realiz&oacute; un estudio online con una muestra no probabil&iacute;stica de 547 participantes, reclutados utilizando publicidad en redes sociales. Los participantes indicaron su grado de acuerdo con la implementaci&oacute;n de advertencias nutricionales en panader&iacute;as, rotiser&iacute;as, lugares de venta de comida r&aacute;pida y sitios de pedidos online, y proporcionaron ideas sobre c&oacute;mo incluir esta inforamci&oacute;n en cada punto de venta. Los resultados sugieren que la poblaci&oacute;n tiene una perecpeci&oacute;n positiva sobre la inclusi&oacute;n de advertencias nutricionales en puntos de venta de comida. Los participantes destacaron la importancia de incluir esta informaci&oacute;n en un lugar visible al momento de elegir los productos, de forma que pueda ser tenida en cuenta al tomar las decisiones. En particular, las vitrinas y la carteler&iacute;a/pizarras fueron identificados como lugaresestat&eacute;gicos para la inclusi&oacute;n de advertencias nutricionales en panader&iacute;as/rotiser&iacute;as y puntos de venta de comida r&aacute;pida, respectivamente.     <dcterms:abstract><![CDATA[<p>The universal use of computer-mediated communication has allowed emoji to rise to prominence for emotional expression. This motivates their inclusion in emotion-focused product research, and in less than a decade applications and methodological research have emerged. This chapter summarizes that body of research. Topics covered include the meaning of emoji and the uses of emoji questionnaires in consumer product emotion research. For the latter, practical considerations, emoji selection, and questionnaire variants are considered. Individual differences in emoji use are covered and the chapter also includes a section on other uses of emoji in consumer research. Finally, some suggestions for future research are presented.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The effect of lactose hydrolysis on the sensory profile of dulce de leche and consumer reaction to this process using overall acceptability data and survival analysis calculations was examined. Lactose hydrolysis caused marked changes in the sensory profile of dulce de leche, particularly for flavor and texture, leading to a decrease in consumer overall acceptability and intent to purchase the product. Survival analysis methodology was used to estimate the consumer rejection percentage to purchase dulce de leche as a function of lactose hydrolysis percentage. Using a Weibull distribution, lactose hydrolysis percentage corresponding to a 10% consumer rejection was calculated as 4.6 &plusmn; 0.4%, in agreement with calculations from least significant difference in overall acceptability, suggesting that both methodologies might provide similar results. Survival analysis could be used to estimate limits for ingredient replacement or changes in manufacturing processes that cause complex sensory changes in the product, leading to consumer rejection.<br /><br />]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Product-focused emotion research remains popular and continues to advance, both with respect to product in sights and methods for obtaining these. The present research primarily contributes to the latter by showcasing consumer segmentation based on product-elicited emotional associations obtained using the circumplex-inspired valence &times; arousal single-response emotion word questionnaire (CEQ). This gives rise to three-way data, where responses from each consumer can be represented by a matrix of p products &times; 12 emotion word pairs. A multi study (n = 6) strategy was pursued in the present research, with 197 to 1014 people per study. Four of the six studies used tasted products and two studies used written stimuli (i.e., names of foods and beverages). For each study two or three emotion-based clusters were retained, and the differences between these could be classified into three patterns: i) differences in the emotional associations with specific sensory characteristics (tasted products); ii) differences in the emotional associations of the category (tasted products); and iii) differences mainly driven by liking (written stimuli). Fitting expectations, differences between emotion-based clusters within a study extended beyond the insights gained from liking scores. Taken together, the results from the six case studies suggest that consumer segmentation based on emotional responses deserves further exploration.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The development of air-dried cured sheep meat products represents an interesting option to add value to the meat of adult animals. In this context, the aim of the present study was to evaluate consumer sensory and hedonic perception of sheep meat coppa, an innovative product. Four sheep meat coppa samples were formulated by varying smoking (smoked vs. non-smoked) and salt content (4.5% vs. 3.4%), and compared with two commercial samples of regular pork meat coppa. Samples were evaluated under blind or informed conditions by 202 consumers, who had to rate their liking and to answer a check-all-that-apply question. Sheep and pork meat coppa samples did not largely differ in their overall liking in both experimental conditions. Smoking and high salt content significantly increased consumers' hedonic perception of sheep meat coppa. The information included in the labels did not modify consumer hedonic perception but influenced their sensory description, particularly for the terms related to the type of meat used in their manufacture.     <dcterms:abstract><![CDATA[Food labels play a key role in attracting consumers&rsquo; attention and providing information that could largely influence their purchase decisions. The aim of the present work was to evaluate how consumers acquire information from food labels using eye-tracking measures. Fifty-three consumers completed two tasks in which they evaluated perceived healthfulness of the products and willingness to purchase by looking at three unknown labels of three different products (mayonnaise, pan bread and yogurt). Participants&rsquo; eye movements were recorded using an eye tracker while evaluating the labels. Results showed that in order to evaluate their willingness to purchase and perceived healthfulness of unknown food labels, consumers directed their attention to selected areas, searching for specific information such as brand, ingredients, nutritional information and the image on the label, regardless of type of product and label design]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Sensory characterization is one of the most powerful and widely used tools in sensory science, in both industrial and academic settings. For decades, descriptive analysis with trained assessors has been regarded as the gold standard for describing the sensory characteristics of products. However, the development of several alternative and flexible methods has demonstrated that consumers can provide accurate and reliable information. In this context, the aim of this chapter is to provide a brief description of some of the most popular methodologies for sensory characterization with consumers and to provide recommendations for practitioners on how to implement them.]]></dcterms:abstract>
