La globalización del comercio de alimentos ha crecido sustancialmente durante las últimas décadas, y continuará creciendo en décadas futuras. Esto conlleva importantes beneficios sociales y económicos, pero también implica que las empresas de la cadena alimentaria tengan cada vez más exigencias sobre los niveles de calidad e inocuidad que esperan los consumidores de los productos que se ofrecen. En el comercio del vino, el cliente o consumidor generalmente es más exigente respecto a atributos de calidad que de inocuidad o el aporte nutricional que pueda darle el vino; estos atributos son: presencia de los parámetros sensoriales que le son de su agrado, ausencia de defectos, precio, presentación e imagen país. Incluso respecto a la información que pueda tener la etiqueta sobre el vino. En este sentido, en muchos países del “Nuevo Mundo”, aún esta en discusión cuáles serían los mecanismos y metodologías que habría que seguir, para poder construir una imagen que consolide la reputación de las diferentes regiones vitícolas, en este mercado tan competitivo. Por otra parte, la tecnología disponible para la producción, manufactura, envasado y distribución de alimentos ha evolucionado a escalas sorprendentes en estos últimos años. Esta evolución tecnológica trajo aparejado el desarrollo de técnicas de control sobre prácticas de procesamiento e higiene que contribuyen a dar garantía al consumidor sobre la oferta de productos constantemente inocuos y con la calidad requerida. Muchas técnicas de control son voluntarias y el productor las elige como forma de “comunicarle” al consumidor que sus productos cuentan con atributos diferenciadores asociados al sistema de control dado. Estas técnicas o sistemas de control son ejecutadas por organismos independientes a las empresas productoras o elaboradoras, llamados organismos de evaluación de la conformidad. Estos verifican que el producto o el proceso cumple los atributos referidos en un documento dado, y dicho cumplimiento el elaborador puede comunicarlo con la presentación de un sello o marca de conformidad, generalmente incluida en la etiqueta del producto o material promocional del mismo, dependiendo del caso. Elaboración de un protocolo que defina atributos diferenciales para vinos Tannat uruguayos de exportación 7 En el mundo del vino, la denominación de origen ha sido una herramienta comercial utilizada por los productores vitivinícolas del “Viejo Mundo” como forma de diferenciar sus productos. Se trata de la indicación geográfica o el origen geográfico de un vino, cuyos atributos se deben principalmente al medio geográfico en el cual se produjo la materia prima, se transformó y finalmente se obtuvo el vino. Los productores que se apegan a la denominación de origen deben cumplir con los requisitos especificados y mantener los métodos tradicionales de producción asociados a cada región en cuestión. La ventaja que obtiene el consumidor al adquirir un producto con denominación de origen definida, es contar con cierta garantía que el producto cumple con determinados atributos, de forma relativamente constante lote a lote. Esto facilita que los vinos elaborados en dichas regiones, accedan a mercados exigentes locales e internacionales. La variedad Tannat para Uruguay es la variedad insignia en un mercado internacional exigente para vinos de alta gamma. Esta variedad representa actualmente la cuarta parte del total de las plantaciones del país, y en Uruguay existen viñedos en cantidades aun mayores que en su tierra originaria (suroeste de Francia). Con el correr de los años, las bodegas uruguayas han sabido elaborar vinos Tannat de reserva, con crianza en barricas de roble, logrando una mejor expresión de la variedad. Sin embargo, la competitividad internacional de los productores vitivinícolas uruguayos ha sido históricamente difícil de lograr, debido fundamentalmente a su estrategia de producir vinos destinados al mercado interno, a pesar de contar con una capacidad de producción suficiente como para poder cumplir las exigencias de ambos destinos. Este trabajo busca caracterizar los vinos que hoy en día se comercializan en mercados exigentes, de modo de entender cuales son los atributos del producto preferidos por los consumidores del vino Tannat, y así focalizar esfuerzos en producir vinos orientados a dichos atributos. Los mercados destino cuyas exigencias fueron consideradas son EE.UU. y Brasil, países destino del vino Tannat uruguayo de exportación por excelencia. Elaboración de un protocolo que defina atributos diferenciales para vinos Tannat uruguayos de exportación 8 Se tomaron muestras de 10 vinos Tannat uruguayos de exportación, pertenecientes a distintas bodegas uruguayas exportadoras (algunas referentes por la calidad de sus vinos Tannat y los volúmenes exportados, y otras emergentes en materia de exportación de vinos Tannat), y se estudiaron los aspectos químicos y sensoriales que caracterizan a estos vinos exportados. El perfil de componentes volátiles se analizó mediante extracción en fase sólida y análisis por cromatografía gaseosa acoplada a masa (GC-MS). A través de este análisis se identificaron y cuantificaron componentes aromáticos de origen varietal, pre fermentativo, fermentativo, y derivados de la crianza en barrica. Conjuntamente se realizó una evaluación sensorial con consumidores a través de un mapeo proyectivo, del cual se logró obtener también una serie de descriptores aromáticos planteados por el panel, característicos de la variedad Tannat. Asimismo, se realizó una serie de análisis fisicoquímicos clásicos (índice de polifenoles totales, antocianos totales, intensidad colorante y matiz). Con esta información obtenida y antecedentes nacionales e internacionales del sector en cuanto al proceso de elaboración de vinos finos, se propone un “Protocolo de calidad” que define atributos de un vino uruguayo Tannat, de calidad superior, su proceso de elaboración y su proceso de envasado. El objetivo de este protocolo propuesto es brindarles a los bodegueros exportadores de vinos finos Tannat una herramienta adicional para la obtención de productos de calidad diferencial, y asegurar un constante cumplimiento de la conformidad del producto en sucesivas producciones. Asimismo, se propone una metodología de evaluación de dichos protocolos. Las ventajas de la aplicación de esta herramienta son discutidas en las conclusiones de este trabajo. <p>Goat`s milk and its dairy products have been commonly related to important nutritional and health benefits. In fact, fat fraction is one of the most important components of goat’s milk regarding its value, as lipids are involved in cheese yield, firmness, color and flavor of goat dairy products. The aim of this study was to evaluate the modification in the lipid and sensory profile of cheeses elaborated with goat milk, through diet inclusion of sunflower oil (SFO). The main objective was to elaborate Danbo Type cheeses with increased content of conjugated linoleic acid (CLA) and transvaccenic acid (TVA), and at the same time decrease the proportion of saturated fat, and evaluate these values during the shelf life of the cheeses. The study was conducted with 60 Saanen goats separated into two homogeneous groups and supplemented for 18 days with one of two concentrates: without added oil (control, C) or enriched with sunflower oil (SFO). Cheeses were elaborated using goat milk, collected after desirable changes in its lipid profile were achieved. Physicochemical, microbiological, and<br />fatty acid composition together with the sensory profile were evaluated. In SFO cheeses fat content increased, without affecting protein content, microbiological, sensory profile and consumer acceptability. Also, the content of TVA increased from 2.4 to 4.4 % (p < 0.01), while CLA presented an increase from 0.8 to 1.3 % (p < 0.01). A decrease in the saturated/unsaturated ratio was observed resulting in a decrease in the atherogenic index. Therefore, inclusion of SFO in the diet of goats could be a viable alternative to increase the contribution of fatty acids with beneficial effects for health in cheeses.</p>

In this work we present the study of the elastic properties of polycrystalline samples of superconducting YBa2Cu3O7�d prepared by the sol–gel method. The quality of all samples was checked by X-ray diffraction and scanning electronic microscopy while their physical properties were verified by transport and magnetic measurements. The elastic study was performed using the standard pulse–echo technique through measuring the phase velocity and the attenuation of ultrasonic waves (in the range of a few MHz) as a function of temperature. We have focused this study on the low temperatures interval (T < 200 K). The obtained results show a strong hysteretic behavior in the ultrasonic attenuation (in addition to usually observed hysteretic behavior for the velocity) which strongly supports the existence of a martensitic-like phase above the superconducting critical temperature Tc. We argue that this peculiar behavior can be attributed to the granularity present in the samples.

A summary of the resource.
This work presents a study based on numerical simulations to describe the local structural evolution of Cu-Zr-Al amorphous alloys when moderate stresses are applied and removed. In particular, it will seek to recognize the formation of clusters with some degree of symmetry in the amorphous matrix and how these are altered depending on the mechanical stress experienced by them. The selected technique is classical molecular dynamics, using the ‘Embedded-atom method’ (EAM) and some other studies trying to identify local crystalline order<br />(Common Neighbor Analysis, atomic centro-symmetry parameter, radial distribution functions and the reciprocal<br />space pattern). The simulations confirm the local order/disorder mechanism based on the existence of<br />ordered regions, which depends on the nature of the applied stress. Particularly, this work focused on performing simulations in time and stress regimes close to anelastic experimental conditions, which makes it different to other related computational reports that focus on regimes close to plastic deformation. The atomistic simulations provide strong evidence of the local ordering occurrence, in good concordance with early ultrasound assisted experiments on Cu-Zr-Al amorphous alloys, thus providing strong evidence of the local ordering occurrence in an elastic regime when uniaxial stress is applied. The reversibility of the system, when stress is removed, was also shown. The application of uniaxial stress favors the presence of different kind of local order structures, when<br />compared with the situation of hydrostatic pressure.

A summary of the resource.
We present a complete all-electron density functional theory/ab initio study of structural and electronic properties at pure In(111) and Cd-doped In(111) surfaces, enabling a deep analysis of the electric field gradient (EFG) in these systems. We explained, from first-principles, results of previously performed key time-differential perturbed γ-γ angular correlations experiments [W. Körner et al., Phys. Rev. Lett. 49, 1735 (1982)] on In111 isotopes (which decay to Cd111 impurity probe-atoms) deposited onto the In(111) surface of thin films under ultrahigh vacuum, adding inactive indium layer by layer, carefully designed to determine the EFG at different depths from the surface. We confirmed the existence of only two hyperfine interactions, one related with Cd111 probes localized at the two more superficial In sites (HFIS), and the other related with probes localized in any of the other inequivalent In sites existing from the surface towards the bulk (HFIB). In the case of HFIS, V33 is oriented normal to the (111) surface, and for HFIB we found a V33 orientation parallel to the [001] axis and coincident with the orientation predicted for both the pure and Cd-doped In bulk (not determined experimentally at present), enabling us to confirm the experimental assignment of HFIB. The axial symmetry that the EFG has in pure and Cd-doped In bulk systems is broken when the surface is generated and is recovered as the probe (In or Cd, respectively) goes deeper from the surface into the bulk. We separated the structural and electronic effects and their sources in the pure and Cd-doped In(111) surface. For the Cd-doped systems we confirm the experimental ratio |V33S/V33B|≈4, showing that light structural modifications have in important impact on the Cd p-states distribution, which governs the V33 behavior. Finally, from the combination of the predicted V33 for the Cd-doped systems as a function of the depth of the Cd localization from the surface with the experimental fractions of HFIS and HFIB, we demonstrated that a single 3-Å active monolayer was enough to explain the origin of these fractions (in discrepancy with the previous interpretation of the experiments), proposing a deposition rate for the inactive In layers, in agreement with the experimental fraction evolution as a function of inactive In deposition.

Cyclic voltammetry and electron spin resonance (ESR) techniques were used in the investigation of several potential antiprotozoal thiosemicarbazones nitrofurane derivatives. A self-protonation process involving the protonation of the nitro group due to the presence of an acidic proton in the thiosemicarbazone moiety was observed in the first step of a CEErev reduction mechanism of these derivatives. ESR spectra of the free radicals obtained by electrolytic reduction were characterized and analyzed. AM1 methodology was used to obtain the optimized geometries and UB3LYP calculations were performed to obtain the theoretical hyperfine coupling constants. The theoretical study exhibited an unusual assignment of the spin densities showing a free radical centered in the thiosemicarbazone moiety rather than the nitro which are in agreement with the experimental hyperfine pattern.

The effects of partial replacement of chromium by molybdenum was studied on the structure and electrochemical kinetic properties of ZrCr1-xNiMox(x = 0.0, 0.3 and 0.6) metal hydride alloys. The arc-melting prepared alloys were metallurgically characterized by X-ray diffraction and energy dispersive spectroscopy microanalysis, which showed AB2 (with hexagonal C14 structure) and ZrxNiy (Zr7Ni10, Zr9Ni11) phases. After a partial substitution of chromium by molybdenum, secondary phases monotonically increase with the C14 unit cell volume indicating that most of molybdenum atoms locate in the B-site.<br /><br />The alloys were electrochemically characterized using charge/discharge cycling, electrochemical impedance spectroscopy and rate capability experiments that allowed the determination of hydriding reaction kinetic parameters. The presence of molybdenum produces a positive effect for hydrogen diffusion in the alloy lattice, and ZrCr0.7NiMo0.3 alloy depicts the better kinetics associated with a fast activation, lower charge transfer resistance and the best high rate discharge behavior. This fact would be related to a lower diffusion time constant and a bigger value of the product between exchange density current and surface active area. There is a trade-off in the amounts of secondary phase and Laves phases in order to improve the kinetic performance.<br /><br />

The electron spin resonance (ESR) spectra of free radicals obtained by electrolytic or microsomal reduction of several potential antiprotozoal 1,2,5-oxadiazoles were characterized and analyzed. Ab initio molecular orbital calculations were performed to obtain the optimized geometries and the theoretical hyperfine constant was carried out using ZINDO semiempirical methodology. Density functional theory was used to rationalize the reduction potentials of these compounds.

This paper presents the study of a simple and fast method to prepare an activated hydrothermal carbon supported nickel electrocatalyst (Ni/aHC) for ethanol oxidation reaction (EOR) in alkaline medium. The cyclic voltammogram obtained for the Ni/aHC sample in a 1.0 mol L−1 NaOH solution shows an anodic and a cathodic peak. These redox couple reaction peaks can be related to the reversible formation of (NiO)OH. The catalytic activity of the Ni/aHC sample regarding the EOR is clearly evident from the cyclic voltammogram obtained in presence of ethanol, where a significant increase in the current density from 0.55 V vs. Hg/HgO is observed. This potential value, related with the onset potential (Eonset) of the EOR, is very close to the corresponding (NiO)OH formation potential, confirming that this species is directly involved in the EOR on the Ni/aHC electrocatalyst. The in-situ Attenuated Total Reflectance FTIR (in-situ ATR-FTIRS) spectra of this sample show two intense peaks related with acetate ion formation. Based on the ATR-FTIRS and electrochemical analyses, and in the literature information, a reaction pathway of the EOR on Ni/aHC in alkaline medium is proposed.

A summary of the resource.
The electroadsorption of 3-buten-2-one was studied on polycrystalline and faceted Pt electrodes in aqueous 0.5 M H(2)SO(4) between 20 and 70 degrees C using voltammetric and transient techniques. The largest values of anodic charge densities in stripping experiments were observed at the potential of zero charge of the Pt/acid interface (ca. 0.20 V), that is, 550, 680, and 720 µC cm(-2), on polycrystalline and (111)- and (100)-faceted electrodes, respectively. The anodic and cathodic strippings of 3-buten-2-one showed the formation of at least two residues with different electrochemical behavior. For comparison cyclic voltammetries and current transients of 2-butanone on Pt were also studied. To get a deeper insight into the adsorption configurations of 3-buten-2-one and 2-butanone, the extended Hückel molecular orbital methodology was used to predict adsorption geometries and binding energies on simulated Pt(100) and Pt(111) single-crystal surfaces. At equilibrium potentials, two types of adsorbed species were recognized, a planar 3-buten-2-one formed by the interaction of carbonyl and alkene groups and adsorbates coming from the single interaction of the >C&dbond;O moiety for both 3-buten-2-one and 2-butanone. At simulated positive potentials, 3-buten-2-one adsorption occurred on Pt(111) and Pt(100) clusters through the pi-orbitals of the >C&dbond;C< moiety, whereas at negative potentials 3-buten-2-one was adsorbed via µ-bridging or di-varsigma configuration(s)

A summary of the resource.
The actual state of the art in the reduction of perrhenate ions on noble metals is reviewed and discussed. Also, with the aim of contributing to better knowledge of this process, results of several experiments are presented. For the first time, spectroscopic evidence on the nature of the deposited rhenium layer on Pt and Rh and the detection of an intermediate in the reduction pathway toward metallic rhenium is provided. The role of the substrate in the electroreduction of perrhenate ions in aqueous acid media is emphasized, because it is directly associated with the formation of different H-containing species as reducing agents. Thus, those metals capable of adsorbing H atoms are able to reduce ReO− 4 to ReO2 by Had at potentials more positive than that of the hydrogen evolution reaction. Moreover, Had reacts with the ReO2 layer previously deposited, resulting in the formation of Re(III)-soluble species, which subsequently undergo disproportionation to Re and ReO2. For metals that are not capable of adsorbing H, i.e., Au, molecular hydrogen is the reducing agent, leading to the formation of metallic Re. In addition, ReO− 4 is chemically reduced to metallic Re by hydride

<p>We report the preparation of carbon-coated cobalt-doped olivine nanoparticles (LiFe1-xCoxPO4/C) by the citrate gel precursor combustion method at different calcination temperatures. This work reveals side effects of cobalt doping, and temperature calcination in the structure, carbon coating characteristics and electrochemical performance of olivine nanoparticles. First, we report the effects of active material/carbon ratio and surface load of active material on the<br />electrochemical properties by evaluating discharge capacity values, reversibility and faradaic efficiency. Once cathode preparation conditions were optimised, information on relevant parameters such as diffusion coefficient of lithium<br />ions can be obtained from the analysis of electrochemical results. Values of diffusion kinetic parameters determined from cyclic voltammetry were compared with those obtained from electrochemical impedance spectroscopy. Optimal<br />electrochemical responses were observed from electrodes prepared with a 75% of active material and surface loads of 2 mg. cm−2. Since all samples presents a similar crystalline size domain, we can conclude that differences in electrochemical<br />performance can be attributed to the amount and structural features of the carbonaceous coating of the olivine crystals, despite of the fact that we are dealing we a very complex system when considering the cathode preparation.</p>

Complexes with general formula [RuCl(η6-p-cymene)(P-NR-P)]X (R = CH2Py (Py = pyridine)-[1a]+, CH2Ph (Ph = phenyl)-[1b]+, Ph-[1c] and p-tol (p-tol = p-tolyl)-[1d]+; X = PF6- or BF4-) were evaluated as cytotoxic agents against two cancer cell lines (HeLa and MDA-MB-231). All metal complexes are active in the range of concentrations tested (up to 100 μmol L-1). The IC50 (μmol L-1) values for the metal complexes are lower than that found for cisplatin. The activities are up to 6- and 15-fold higher than cisplatin for HeLa and MDA-MB-231 cancer cell lines, respectively. Studies of DNA binding and DNA cleavage were performed. DNA binding studies revealed a modest hypochromic shift in the metal complexes electronic spectra, indicating a weak interaction with Kb values in the range of 1.7 × 103-1.6 × 104. Although the cleavage tests revealed that in the dark DNA is not a biological target for these metal complexes, upon blue light irradiation they are activated causing DNA cleavage. Electrochemical studies showed the presence of two independent redox processes, one attributed to the oxidation process of Ru2+ → Ru3+ (EC process) and the other one to the reduction of Ru2+ → Ru1+, which is further reduced to Ru0 (ECE mechanism). In both processes, coupled chemical reactions were observed. DFT calculations were performed to support the electrochemical/chemical behavior of the complexes. The reactivity of complex [1b]BF4 with CH3CN was evaluated and two complexes were isolated [2b]BF4 and [3b]BF4. The complex mer-[RuCl(CH3CN)3(P-NCH2Ph-P)]BF4 ([2b]BF4) was isolated after refluxing the precursor [1b]BF4 in CH3CN. Isomerization of [2b]BF4 in CH3CN resulted in the formation of fac-[RuCl(CH3CN)3(P-NCH2Ph-P)]BF4. An attempt to isolate the fac-isomer by adding diethyl ether was unsuccessful, and the complex [3b]BF4 was observed as the major component. The complex [Ru2(μ-Cl3)(CH3CN)2(P-NCH2Ph-P)2]BF4 ([3b]BF4) proved to be very stable and can be obtained from both the mer- and the fac-isomers. The molecular structures of [1b]BF4 and [3b]BF4 were solved by single-crystal X-ray diffraction.

For understanding the electrical and optical properties of electrodeposited Cl-doped Cu2O thin films, we have studied layers with increasing thickness and Cl concentrations of 0.8 and 1.2 at. %. The deposits were characterized by measuring the charge transport, the optical reflectance, and the photoluminescence. No significant decrease of electrical resistivity was observed in doped samples compared to undoped ones. A decrease of about five orders of magnitude was measured and ascribed to the presence of pinholes, as confirmed by scanning electron microscopy analyses. From optical measurements, we concluded that the Cl atoms are incorporated into substitutional sites of Cu2O lattices in agreement with photoluminescence results showing a strong reduction in the peak intensity of VO+2 defects in comparison to undoped layers. Computational calculation using density functional theory has pointed out high formation energy for single Cl related defects, but low formation energy for Cl-defect complexes, such as ClO + VCu, that strongly compensate the carriers generated by the Cl doping.

A metastable phase of Bi2Se3 with orthorhombic structure has been obtained by potentiostatic electrodeposition onto Si(100) substrate. The ideal stoichiometry and single orthorhombic phase could be obtained only within a restricted potential window, where mutual underpotential co-deposition is assumed to occur. Optical and electrical characterization indicates a bandgap of 1.25 eV, close to the maximum efficiency in the Shockley–Queisser limit, and n-type semiconducting behavior with moderate electrical resistivity. Theoretical calculations using density functional theory were used to support the structural and optical results. Due to the favorable set of properties with respect to isomorphic compounds such as Bi2S3, Sb2S3, and Sb2Se3, this material could lead to efficient and low-cost new thin film-based photovoltaic device

CuInSe2 polycrystalline thin films were potentiostatically electrodeposited on titanium and conducting glass substrates from an aqueous solution containing CuCl2, InCl3, SeO2 in a glycine acid medium, pH around 2 adjusted with HCl. The effect of adding EDTA as a complexing agent was also studied. These films were then submitted to different post-deposition treatments: annealing at temperatures up to about 400°C in an Ar flowing stream, chemical etching in a 0.5 M KCN solution and in some cases room temperature air oxidation. The as-grown and treated layers were characterized by X-ray energy dispersive analysis, X-ray diffraction, scanning electron microscopy and photoelectrochemical studies. Annealing improves the crystallinity of electrodeposited films and the effective grain size increased, resulting in the formation of CuInSe2 chalcopyrite structure. Photoelectrochemical measurements of the films revealed p-type behaviour, and better photoresponse was observed for the films obtained from EDTA based solutions. Room temperature air oxidation of the CuInSe2 films improves the photocurrent response.
