A summary of the resource.
The use of H/D isotope effects on nuclear shielding (IENS) as a tool to investigate interionic hydrogen bonds (H-bonds) in ionic liquids (ILs) is showcased. Results obtained with deuterated isotopologues of 1-n-butyl-3-methylimidazolium chloride ([C4mim]Cl), hexafluorofosphate ([C4mim]PF6), and tetrafluroborate ([C4mim]BF4) indicate that the H/D IENS on the 35/37Cl and 19F resonances of the anions, or Δ35/37Cl(H,D) and Δ19F(H,D), allow to identify and differentiate H-bonds between the anion and the different aromatic protons on the cation. H/D IENS for sequentially deuterated [C4mim]BF4 and [C4mim]PF6 isotopologues also reveal the formation of aliphatic C-H⋅⋅⋅X hydrogen bonds between the fluorinated anions and protons along the sidechains, and indicate that the interactions between the anions and hydrogens on the N-alkyl C-1’ and C-1” positions are, in some cases, stronger than those involving protons on the aromatic ring. Preliminary studies aimed at determining the effects of sidechain length and structure on intrerionic H-bonds in ILs are also discussed.

A summary of the resource.
Elucidation of the oxidation mechanism of naturally emitted reduced sulfur compounds, especially dimethyl sulfide, plays a central role in understanding background acid precipitation in the natural environment. Most frequently, theoretical studies of the addition and H-elimination reactions of dimethyl sulfide with hydroxyl radicals are studied considering the presence of oxygen that further reacts with the radicals formed in the initial steps. Although the reaction of intermediate species with additional hydroxyl radicals has been considered as part of the global mechanism of oxidation, little if any attention has been dedicated to the possibility of reactions of the initial radicals with a second •OH molecule. In this work, we performed a computational study using quantum-chemical methods, of the mechanism of H-abstraction from dimethyl sulfide under normal atmospheric conditions and in reaction chambers at different O2 partial pressure, including complete absence of oxygen. Additionally, important rate coefficients were computed using canonical and variational transition state theory. The rate coefficient for abstraction affords a 4.72 × 10–12 cm3 molecule–1 s–1 value, very close to the most recent experimental one (4.13 × 10–12 cm3 molecule–1 s–1). According to our best results, the initial methyl thiomethyl radical was obtained at −25.2 kcal/mol (experimentally −22.4 kcal/mol), and four important paths were identified on the potential energy surface. From the interplay of thermochemical and kinetic arguments, it was possible to demonstrate that the preferred product of the reaction of dimethyl sulfide with two hydroxyl radicals is actually dimethyl sulfoxide.

Lipid content and composition of raw and cooked Southwest Atlantic hake (Merluccius hubbsi) roe were studied. Raw hake roe was high in lipids (6.6 per cent on a dry weight basis). The major lipids were waxes (27.6 per cent) |b triacylglycerols (42.0 per cent) |b cholesterol (5.7 per cent) and phospholipids (14.0 per cent). Cooking roes in water does not change these values significantly. The fatty acid composition is characteristic of marine oils with a total amount of 45 per cent of polyunsaturated fatty acids (PUFA). Hake roes constitute a valid alternative to enrich PUFA in the normal diet

A Gram-negative, halophilic, heterotrophic, rod-shaped, non-spore-forming bacterium (SV525T) was isolated from the sediment of a hypersaline lake located at 4600 m above sea level (Laguna Vilama, Argentina). Strain SV525T was strictly aerobic and formed pink-to-magenta colonies. Growth occurred at 10–35 °C (optimum 25–30 °C), at pH levels 6.0–8.5 (optimum 7.0) and at NaCl concentrations of 7.5–25 % (w/v) with an optimum at 10–15 % (w/v). The strain required sodium and magnesium but not potassium ions for growth. Grows with tryptone, or Bacto Peptone as sole carbon and energy source and requires yeast extract for growth. It produced catalase and oxidase. The predominant ubiquinone was Q-8 and the major fatty acids comprised C18:1 ω7c, C16:0 and C18:0. The DNA G+C content was 60.4 mol% and its polar lipids consisted of diphosphatidylglycerol, phosphatidylglycerol, phosphatidylethanolamine and a phosphoglycolipid. Phylogenetic analysis based on 16S rRNA gene indicated that strain SV525T belongs to the family Ectothiorhodospiraceae within the class Gammaproteobacteria. On the basis of phylogenetic and phenotypic data, SV525T represents a novel genus and species, for which the name Halopeptonella vilamensis gen. nov., sp. nov. is proposed. The type strain is SV525T (=DSM 21056T =JCM 16388T =NCIMB 14596T).

A comparison of Roothaan-Hartree-Fock methods (both restricted and unrestricted) with density functional ones (LCAO-Xalfa and cellular MS-XalfaBeta)is made using as test case the molecular ion. It is shown the analogy that exists between RHF and symmetry- adapted LCAO-Xalfa ones. The influence of symmetry adaptation on the overall behavior of the potential energy curve is also discussed.Finally |b the difference in the behavior of the LCAO-Xalfa and cellular MS-Xalfabeta calculations is explained as an artifact of the space partitioning in the latter technique. It es concluded that LCAO-Xalfa method is superior to cellular MS-Xalfabeta because it requires less effort to reach the same results and that the general behavior is similar to UHF |b although the former affords a better equilibrium bond distance and a worse energy barrier than the latter.

<p>The aim of the present work was twofold: (i) to evaluate the effect of nutritional warnings and health-related packaging cues (nutrient claim and images of natural foods) on consumers’ food choices, and (ii) to evaluate the influence of two types of messages (gain-framed and loss-framed) aimed at encouraging the use of such warnings and packaging cues on food choices. A total of 510 participants were recruited using an advertisement on Facebook and Instagram targeted at Uruguayan adult users. Participants were randomly allocated to one of three experimental groups: control (n = 167), loss-framed messages (n = 177) and gain-framed messages (n = 166). Then, they completed a choice-conjoint task involving packages of crackers differing in three variables: nutritional warnings (present vs. absent), nutrient claim (present vs. absent) and images of seeds and wheat (present vs. absent). Warnings were the most relevant package element driving choices, even when participants were not exposed to any type of message. Exposure to loss-framed messages led to changes in the relative importance attached to the package characteristics, whereas gain-framed messages did not. Graphic pieces conveying messages encouraging the use of nutritional warnings by stressing the negative consequences of excessive consumption of sugar, fat, and sodium increased the relative importance attached to nutritional warnings and decreased the relative importance attached to health-related cues (nutrient claims and images of seeds and wheat). These results suggest that public awareness campaigns aimed at encouraging citizens to use nutritional warnings should emphasize the negative health consequences of excessive intake of sugar, fat, and<br />sodium.</p>

The information included on food packages has a crucial role in influencing consumer product associations and purchase decisions. In particular, visual and textual cues on processed and ultra-processed products can convey health-related associations that influence consumer healthiness perception and purchase decisions. In this context, the present work aimed to explore the use of health-related cues on the packages of processed and ultra processed products sold in Uruguay to provide insights for policy making. A total of 3813 products from 34 different food categories found in four of the most important supermarket chains in Uruguay were surveyed. The textual and visual information included on the packages as well as the nutritional composition of the products were analyzed. Results showed that 67% of the products included at least one health-related cue. Pictures of culinary ingredients, natural and minimally processed foods were the most frequent health-related cue, followed by references to naturalness and claims related to critical nutrients. The prevalence of health-related cues largely differed across product categories, ranging from 100% to 17%. The relationship between the presence of health-related cues on the packages and the excessive content of nutrients associated with non-communicable diseases was assessed using a gradient boosting model, which showed limited predictive ability. This suggests that the inclusion of health-related cues on food packages was not strongly related to the nutritional composition of products and therefore cannot be regarded as a healthiness indicator. These results stress the need of develop stricter labeling regulations to protect consumers from misleading information.

Objective: To evaluate the prevalence of health-related cues as part of the digital marketing of ultrapro cessed foods on Instagram among food companies in Uruguay. Methods: Cross-sectional exploratory study. All content posted by 118 Instagram accounts of companies promoting ultraprocessed foods in Uruguay over 6 months (from August 2020 to February 2021) was retrieved. The content of 1,893 Instagram posts was coded considering visual and textual cues conveying health-related associations. The number and percentage of posts, including cues within each category and theme, were calculated. Results: More than half of all posts contained at least 1 visual or textual cue conveying health-related asso ciations. Three main themes emerged: i) product composition, ii) healthy lifestyle, and iii) health and health benefits. The prevalence of health-related cues differed dramatically across product categories, ranging from 100% to 1.5%. Conclusions and Implications: Health-washing constitutes an integral part of the digital marketing of ultraprocessed foods on Instagram in Uruguay. The inclusion of health-related cues can potentially under mine public health efforts targeted at reducing consumption of these foods. These findings suggest that strict and comprehensive regulations on the digital marketing of such products are needed in policies pro moting healthy eating habits globally.

Abstract

Healthy and sustainable diets are necessary for global development goals, but people struggle to modify their eating behaviours which are often habitual and resistant to change. However, disruption can provide the impetus for change, and in the present research we view the Covid-19 pandemic as a potential catalytic disruption with the potential to induce positive behaviour change. Data were obtained from ~900 USA adults, of which 44% selfreported to have made positive dietary change/s. Those who did so tended to be younger rather than older and with higher educational attainment. They also were less food neophobic than people who did not make positive change/s and placed greater importance on health as a motive of daily decisions about what to eat and drink. The contribution of psychographic variables in differentiating between groups of people who did / did not make positive changes once again show their importance in uncovering and explaining the complex factors that motivate food-related consumer behaviour. It seems this holds also when daily lives are disrupted by unforeseen events.

Focus groups were used to explore attitudes to vegetable consumption among children aged between 9 and 12. Group meetings were used to gather data concerning habitually consumed foods (both in the home and at school), preferred meals, most consumed vegetables, motives for vegetable consumption and non-consumption, the perceptions of vegetable-eating and non-vegetable-eating children, and children’s suggested vegetable-based products. Major vegetable consumption drivers and barriers were analysed from the children’s perspective. The focus group data showed that certain sensory factors (taste, appearance and texture) are powerful consumption drivers. The identity and the creativity of the person who prepares the meals as well as vegetable consumption habits in the home were also found to have a major impact on attitudes towards consuming vegetable among these children.

Abstract

The present review aims to give dietary recommendations to reduce the occurrence of the Maillard reaction in foods and in vivo to reduce the body’s advanced glycation/lipoxidation end products (AGE/ALE) pool. A healthy diet, food reformulation and good culinary practices may be feasible for achieving the goal. A varied diet rich in fresh vegetables and fruits, non-added sugar beverages containing inhibitors of the Maillard reaction, and foods prepared by steaming and poaching as culinary techniques is recommended. Intake of supplements and novel foods with low sugars, low fats, enriched in bioactive compounds from food and waste able to modulate carbohydrate metabolism and reduce body’s AGE/ALE pool is also recommended. In conclusion, the recommendations made for healthy eating by the Spanish Society of Community Nutrition (SENC) and Harvard University seem to be adequate to reduce dietary AGE/ALE, the body’s AGE/ALE pool and to achieve sustainable nutrition and health.

Snacks consumed at school are an important source of energy and nutrients in children’s diets. Understanding the factors that underlie children and mothers’ choices of school snacks can contribute to the development of strategies to promote healthier eating patterns. In this context, the aims of the present work were: i) to explore children’s conceptualization of school snacking, and ii) to identify children and mothers’ perceived barriers and facilitators to healthy snacking in the school environment. Two studies with 518 children and 1183 mothers were carried out. In Study 1, children (n = 255) were asked to draw a child eating a snack at school. In Study 2, five incomplete dialogues about school snacks were presented to participants (263 children and 1183 mothers), who had to complete them using their own words. Data were analyzed using content analysis. The drawings showed that school snacking frequently occurs during the recess while children do other activities, such as playing football or other games. Fruit, sandwiches, cookies and juices were the foods and beverages most frequently included in the drawings. Responses to the dialogues enabled the identification of barriers to healthy snacking in the school environment, which were related to children’s positive hedonic reaction towards unhealthy foods, the sales of unhealthy products in the school canteen, lack of time to prepare home-made snacks and mothers’ perception that children can eat unhealthy snacks once in a while. In addition, the existence of a school snacking policy was mentioned as a facilitator for healthy snacking. Potential additional actions to promote healthy snacking habits in the school environment were identified.

Total atomization energies and heats of formation of silole, its radicals, cation and protonated forms were calculated using G4 and CCSD(T)/CBS (cc-pV(n+ d )Z, n = 2–6) methods. Experimental data for silole are not available. Using D H o f (Si,298 K) = 107.9 kcal/mol, D H f o (298 K) are predicted (±2 kcal/mol): silole: 44, rad- ical cation: 249, Si-radical: 79, C-protonated: 218 and C a –H radical: 47. Both homolytic and heterolytic dissociations of silole take place at Si. Both C-protonation and hydrogen atom addition preferentially occur at the C a -site. Thermochemical parameters of silole are: PA = 190 kcal/mol, IE = 8.9 eV, BDE (Si–H) = 86 kcal/mol and deprotonation energy DPE = 362 kcal/mol.

The EDLCs demonstrated nearly ideal capacitive behavior even at very high charging/discharging currents (10 A g −1 ) and cell potential scan rates (500 mV s −1 ). The EDLCs completed from SgTiC-CDC materials and EtMeImBF 4 and Et 3 MeNBF 4 + AN show good energy efficiencies (varying from 93% to 95% at current 1 A g −1 ) and coulombic efficiency values exceeded 99%. Thus, the EDLCs completed are very promising devices for extremely high power/energy density applications. 1-ethyl-3-methylimidazolium tetrafluoroborate (EtMeImBF 4 ) ionic liquid was chosen due to the wide potential region of electrochemical stability, good conductivity (13.6 mS cm −1 ) and moderate viscosity ( 4 in AN has lower viscosity (0.41 mPa s) and higher electrical conductivity (50.2 mS cm −1 ) and this electrolyte is also electrochemically stable within a very wide region of cell potentials. Carbon materials were synthesized from specially designed titanium carbide that had been synthesized via sol-gel method.Data in Figs. 4e and 4f show that for SgTiC-CDC two-electrode symmetrical cell no quick faradaic reactions occur up to 3.8 V in EtMeImBF 4 The calculated specific capacitance values are given in Table II. It is clearly visible that the capacitance values depend on the CNT additions in the SgTiC-CDC

A summary of the resource.
CdTe crystals doped with several heavy metals (Hg, Tl, Pb, and Bi) in the concentration range of 1017-1018 at/cm3 have been grown by the vertical Bridgman method. The structural quality and uniformity of the crystals was verified by chemical determination of etch pits density and by X-ray rocking curves. Inductively coupled plasma-mass spectroscopy (ICP-MS) was employed for evaluating the dopant concentration and foreign impurities. Low-temperature photoluminescence (PL) measurements were performed on the crystals in the 1.2-1.6 eV energy range. The crystals electrical properties were studied by Hall and I-V measurements. (D-X) and (DAP) lines dominate the PL spectra for CdTe crystals, suggesting n-type conductivity and the presence of a compensation mechanism due to the heavy metal dopant incorporation. Investigating the 1.4 eV band, we obtained the Huang-Rhys parameter, the principal energy of zero phonon line and the energy of longitudinal optical phonon for each dopant. A particular PL line at 1.473 eV, correlated to MTe (M=heavy metal) defect centers, was found. It was found that the heavy metal-doped CdTe crystals have resistivity values in the range 108-1010 Ω·cm, with maximum values for Bi- and Hg-doped materials. Also, these materials show a higher dark current stability than the ones doped with the other heavy metals. Only detectors made from Hg-doped crystals gave response to X and γ radiation.

Methodologies that identify ways products differ from consumers’ ideal are commonly used to guide innovation. In this research the use of CATA questions for this purpose was compared to JAR scales, which are well established for use in product optimization efforts. Two CATA variants were considered: (i) CATA questions including terms with hedonic-intensity connotations (e.g., not enough sweet, much too sweet), and (ii) CATA questions pertaining to both the tasted and the ideal products. In six consumer studies (n = 939), spanning multiple product categories and consumer populations (Uruguay, New Zealand and USA), it was found that CATA questions and JAR scales provided similar insights regarding the most relevant deviations from ideal. However, several differences were also identified. In particular, CATA questions tended to identify fewer deviations than did JAR scales, especially when terms with hedonic-intensity connotations were used and when differences between samples were small. This difference is likely linked to facets of the two methodologies: only applicable terms are selected when using CATA questions, whereas responses must be provided for each JAR scale included in a study. Besides, the fact that only the extreme anchors of the JAR scale were included in the CATA question could have encouraged consumers not to indicate deviations from the ideal. Penalty analysis, performed using Partial-Least Squares (PLS) regression identified several significant deviations from the ideal. While the two methodologies established the same main differences, JAR scales identified more significant deviations from the ideal than CATA questions. Although results confirmed the potential for the use of CATA questions in product optimization research, careful consideration of purpose of the research and attention to terms included in the CATA questions is recommended.

Herein, we investigated the adsorption of helicenes over graphene, boron nitride, graphane, and fluorographane utilizing density functional calculations. Our results indicated that helicenes experience significant structural distortions when adsorbed on the title monolayer. The strong interaction with the surfaces can partially over come the steric repulsions of helicenes. Although the characteristics of the surfaces considered are very different, the adsorption energies computed for graphene, BN, and graphane are comparable. However, over fluo rographane, they were slightly weaker. In the case of bilayer graphene, helicene[4], and helicene[5], when intercalated, their height can be reduced up to 0.3 and 0.4 Å, respectively.
