The globe artichoke (Cynara cardunculus L. subsp. cardunculus) is a perennial plant cultivated in the Mediterranean region and Americas for its edible young flower heads and as an interesting source of bioactive compounds. The present study was undertaken to evaluate scavenging capacity against the most physiologically relevant reactive oxygen species (ROS) and reactive nitrogen species (RNS) of three different extracts from artichoke leaves (infusion, decoction and hydroalcoholic) using different solvents, commonly accepted for human consumption (water and a mixture of ethanol/water). Additionally, the phenolic compounds in each extract were identified and quantified by high performance liquid chromatography coupled to diode array and mass spectrometer detectors (HPLC–DAD–MS/MS). Chlorogenic acid was the major phenolic compound identified in all extracts, followed by 1,3-dicaffeoylquinic acid (cynarin), luteolin-7-rutinoside and the infusion extract presented the highest phenolic content (108 mg/g extract, dry basis). In general, the extracts of artichoke leaves presented a remarkable capacity to scavenge ROS and RNS with IC50 values in a low μg/mL range (3.4–43 μg/mL). These findings suggest that artichoke could be a potential source of natural antioxidants and has an undeniable nutraceutical value.

Muchos de los procesos en los cuales seria conveniente el uso de enzimas requieren condiciones de trabajo que general mente son adversas para la estabilidad de las mismas. Ademas el alto costa y la dificultad para regenerarlas condicionan sus posibilidades de aplicaci6n. Los estudios realizados en esta tesis se orientaron hacia la busqueda y caracterizaci6n de estrategias de estabilizaci6n de enzimas mediante procesos de ingenieria enzimMica en fase s6lida. En particular se estudi6 la influencia de los siguientes factores: i) inmovilizaci6n de la enzima; ii) modificaci6n post¬inmovilizaci6n de la superficie del soporte; iii) recubrimiento de la enzima inmovilizada con polimeros hidrofilicos. Se determinaron los parametros de inmovilizaci6n de todos los derivados obtenidos, y se hicieron estudios de estabilidad termica y estabilidad en presencia de sistemas de co¬solventes organicos, con cada uno de ellos. Como enzimas modelo se utilizaron tres f3-galactosidasas de diferentes origenes (E. coli, K lactis y A. oryzae). Se estudiaron dos quimicas de inmovilizaci6n distintas: en glutaraldehido (Glut)-agarosa, elegida como metodo de referencia por ser convencional y ampliamente estudiado; y en tiolsulfinato (TSI)¬agarosa, que es un metoda relativamente nuevo, desarrollado y estudiado en nuestro laboratorio, que utiliza condiciones de inmovilizaci6n suaves. En general, los derivados obtenidos con la quimica del TSI tuvieron rendimientos de inmovilizaci6n mayores, y sus KM fueron menos afectadas que las de los derivados obtenidos con la quimica del glutaraldehido. Sin embargo, estos ultimos exhibieron mejores propiedades de estabilidad termica y frente a solventes, 10 que los hace mas adecuados para biocataIisis bajo condiciones agresivas. Estos resultados demostraron la relevancia de la quimica de inmovilizaci6n en el disefio del biocatalizador. Para modificar las caracteristicas de la superficie del soporte TSI-agarosa, luego de la inmovilizaci6n de la enzima se hizo reaccionar el exceso de grupos TSI con cuatro tiol¬compuestos. De esta manera se consigui6 construir en el entomo de la enzima, cinco nano¬ambientes con caracteristicas diferentes. El comportamiento diferencial de los derivados obtenidos en los estudios de estabilidad termica y frente a solventes organicos, sugiere que cada nano¬ambiente contribuye de forma distinta a la estabilidad de la enzima, dependiendo de las condiciones de desnaturalizaci6n. Es decir que resulta posible modelar las caracteristicas de la superficie del soporte, con el fin de maximizar la estabilidad de la enzima para usarla en una aplicaci6n en particular. La inmovilizaci6n en Glut-agarosa demostr6 ser efectiva para alcanzar estabilizaci6n termica, aun a altas temperaturas; sin embargo no siempre result6 efectiva frente al aumento de la concentraci6n de los co-solventes. La hidrofilizaci6n de los derivados inmovilizados en Glut-agarosa con polimeros de polialdehido-dextrano y poliamina-dextrano, permiti6 una importante estabilizaci6n frente a concentraciones altas de co-solventes; no obstante, la estabilizaci6n alcanzada frente al aumento de la temperatura fue menor. Uno de los resultados mas destacables fue el aumento de la vida media del derivado hiper-hidrofilizado de la enzima de A. oryzae, en presencia de 50% v/v de acetona, en un factor de 25 respecto al derivado sin modificar. Los resultados obtenidos muestran el potencial de esta estrategia de hidrofilizaci6n como una herramienta uti! para alcanzar estabilizaci6n adicional de las enzimas inmovilizadas, frente a condiciones drasticas de concentraci6n de co¬solventes. Los estudios realizados en esta tesis permiten afirmar que es posible el disefio orientado de biocatalizadores en funci6n de sus aplicaciones, mediante diversos procesos de ingenieria de la enzima en fase solida.

A summary of the resource.
Seven cobalt(II) complexes of pyrazole derivatives and dinitrobenzoate ligands were synthesized and characterized. The single-crystal X-ray diffraction structure was determined for one of the ligands and one of the complexes. The analysis and spectral data showed that all the cobalt complexes had octahedral geometries, which was supported by DFT calculations. The complexes and their free ligands were evaluated against fungal strains of Candida albicans and emerging non-albicans species and epimastigotes of Trypanosoma cruzi. We obtained antifungal activity with a minimum inhibitory concentration (MIC) ranging from 31.3 to 250 µg mL-1. The complexes were more active against C. krusei, showing MIC values between 31.25 and 62.5 µg mL-1. In addition, some ligands (L1-L6) and complexes (5 and Co(OAc)2 · 4H2O) significantly reduced the yeast to hypha transition of C. albicans at 500 µg mL-1 (inhibition ranging from 30 to 54%). Finally, the complexes and ligands did not present trypanocidal activity and were not toxic to Vero cells. Our results suggest that complexes of cobalt(II) with ligands derived from pyrazoles and dinitrobenzoate may be an attractive alternative for the treatment of diseases caused by fungi, especially because they target one of the most important virulence factors of C. albicans.

Berberine is an isoquinoline alkaloid with multiple pharmacological actions, including an anti-inflammatory activity. The effects of berberine on in-vitro cellular proliferation of human peripheral lymphocytes stimulated with phytohaemagglutinin, concanavalin A and pokeweed mitogen were studied. Mononuclear cells were cultured in flat-bottomed 96-well microplates at 37°C for 96–144 h in the presence of one mitogen at different concentrations and the alkaloid at doses of 2.5 to 20 μgmL−1. The mitogen-induced response of lymphocytes was evaluated from the extent of the incorporation of [3H]thymidine into cells in-vitro. A consistent and progressive inhibitory influence of berberine with increasing concentrations in culture was identified with all mitogens and was more pronounced with pokeweed mitogen. The effect of berberine was observed in phytohaemagglutinin (PHA)- and concanavalin A-activated lymphocytes when the drug was added during the first 24 h of culture, whereas the same effect occurred throughout the incubation period in pokeweed mitogen-stimulated cells. The viability of lymphocytes following treatment with the drug, as assessed by the trypan blue exclusion test, revealed no change when compared with the same untreated lymphocytes, indicating no lymphocytotoxic activity. We conclude that some effects of berberine, especially its anti-inflammatory action, may arise in part from the inhibition of DNA-synthesis in activated lymphocytes.

<p>The genus Echinococcus of cestode parasites includes important pathogens of humans and livestock animals.<br />Transcriptomic and genomic studies on E. granulosus and E. multilocularis uncovered striking expansion of monodomain Kunitz proteins. This expansion is accompanied by the specialization of some family members away from the ancestral protease inhibition function to fulfill cation channel blockade functions. Since cation channels are involved in immune processes, we tested the effects on macrophage physiology of two E. granulosus Kunitztype inhibitors of voltage-activated cation channels (Kv) that are close paralogs. Both inhibitors, EgKU-1 and EgKU-4, inhibited production of the Th1/Th17 cytokine subunit IL-12/23p40 by macrophages stimulated with<br />the TLR4 agonist LPS. In addition, EgKU-4 but not EgKU-1 inhibited production of the inflammatory cytokine IL-<br />6. These activities were not displayed by EgKU-3, a family member that is a protease inhibitor without known<br />activity on cation channels. EgKU-4 potently inhibited macrophage proliferation in response to M-CSF, whereas EgKU-1 displayed similar activity but with much lower potency, similar to EgKU-3. We discuss structural differences, including a heavily cationic C-terminal extension present in EgKU-4 but not in EgKU-1, that may explain the differential activities of the two close paralogs.</p>

(5-Nitro-2-furfurylidene)amino compounds bearing triazol-4-yl, benzimidazol-1-yl, pyrazol-1-yl, triazin-4-yl or related groups (a) stimulated superoxide anion radical generated by rat liver microsomes in the presence of NADPH and oxygen; (b) inhibited the NADPH-dependent, iron-catalyzed microsomal lipid peroxidation; (c) prevented the NADPH-dependent destruction of cytochrome P-450; (d) inhibited the NADPH-dependent microsomal aniline 4-hydroxylase activity; (e) failed to inhibit either the cumenyl hydroperoxide-dependent lipid peroxidation or the aniline-4-hydroxylase activity, except for the benzimidazol-1-yl and the substituted triazol-4-yl derivatives, which produced minor inhibitions. Reducing equivalents enhanced the benzimidazol-1-yl derivative inhibition of the cumenyl hydroperoxide-induced lipid peroxidation. The ESR spectrum of the benzimidazol-1-yl derivative, reduced anaerobically by NADPH-supplemented microsomes, showed characteristic spin couplings. Compounds bearing unsaturated nitrogen heterocycles were always more active than those bearing other groups, such as nifurtimox or nitrofurazone. The energy level of the lowest unoccupied molecular orbital was in fair agreement with the capability of nitrofurans for redox-cycling and related actions. It is concluded that nitrofuran inhibition of microsomal lipid peroxidation and cytochrome P-450-catalyzed reactions was mostly due to diversion of reducing equivalents from NADPH to dioxygen. Trapping of free radicals involved in propagating lipid peroxidation might contribute to the overall effect of the benzimidazol-1-yl and substituted triazol-4-yl derivatives.

Parasitic flatworms cause serious infectious diseases that affect humans and livestock in vast regions of the world, yet there are few effective drugs to treat them. Thioredoxin glutathione reductase (TGR) is an essential enzyme for redox homeostasis in flatworm parasites and a promising pharmacological target. We purified to homogeneity and characterized the TGR from the tapeworm Mesocestoides vogae (syn. M. corti). This purification revealed absence of conventional TR and GR. The glutathione reductase activity of the purified TGR exhibits a hysteretic behavior typical of flatworm TGRs. Consistently, M. vogae genome analysis revealed the presence of a selenocysteine-containing TGR and absence of conventional TR and GR. M. vogae thioredoxin and glutathione reductase activities were inhibited by 3,4-bis(phenylsulfonyl)-1,2,5-oxadiazole N2-oxide (VL16E), an oxadiazole N-oxide previously identified as an inhibitor of fluke and tapeworm TGRs. Finally, we show that mice experimentally infected with M. vogae tetrathyridia and treated with either praziquantel, the reference drug for flatworm infections, or VL16E exhibited a 28% reduction of intraperitoneal larvae numbers compared to vehicle treated mice. Our results show that oxadiazole N-oxide is a promising chemotype in vivo and highlights the convenience of M. vogae as a model for rapid assessment of tapeworm infections in vivo.

The Ilex paraguariensis St. Hil. (yerba mate) saponins effectively inhibit the passive diffusion of cholic acid through dialysis membranes. The formation of large macromolecular mixed micelles between cholic acid and yerba mate saponins could explain this effect. The observed inhibition of the passive diffusion of cholic acid used as a model of bile acids, could have an antihypercholesterolaemic effect in vivo due to an increased sterols excretion.

Chagas disease, endemic in 21 countries across Latin America, kills more people in the region each year than any other parasite-borne disease. Therapeutic options have problems ranging from toxicity, poor efficacy, drug resistance and high cost. Thus, cheaper and less toxic treatments are necessary. From our in-house chemical library of agents against Trypanosoma cruzi the most relevant N-oxide-containing heterocycles were selected for mode of action and type of death studies. Also included in these studies were two active nitrofuranes. Epimastigotes of T. cruzi were used as the biological model in this study. The metabolic profile was studied by 1H NMR in association with the MTT assay. Excreted catabolites data, using 1H NMR spectroscopy, showed that most of the studied N-oxides were capable of decreasing both the release of succinate and acetate shedding, the compounds therefore possibly acting on mitochondria. Only quinoxalines and the nitrofurane Nf1 showed significant mitochondrial dehydrogenase inhibitions, but with different dose-time profiles. In the particular case of quinoxaline Qx2 the glucose uptake study revealed that the integrity of some pathways into the glycosome could be affected. Optic, fluorescence (TUNEL and propidium iodide) and transmission electron microscopy (TEM) were employed for type of death studies. These studies were complemented with 1H NMR to visualize mobile lipids. At low concentrations none of the selected compounds showed a positive TUNEL assay. However, both quinoxalines, one furoxan and one benzofuroxan showed a necrotic effect at high concentrations. Curiously, one furoxan, Fx1, one benzofuroxan, Bfx1, and one nitrofurane, Nf1, caused a particular phenotype, with a big cytoplasmatic vacuole being observed while the parasite was still alive. Studies of TEM and employing a protease inhibitor (3-methyladenine) suggested an autophagic phenotype for Bfx1 and Nf1 and a 'BigEye' phenotype for Fx1.

La utilización de péptidos anti-inmunocomplejos para la detección no competitiva de pequeñas moléculas ha mostrado ser una alternativa ventajosa respecto a los formatos competitivos, dado que comúnmente aumentan la sensibilidad y especificidad, y generan una señal proporcional y por tanto intuitiva. Inicialmente, este principio fue demostrado en formato PHAIA (Phage anti-immunocomplex assay) utilizando péptidos expresados en la superficie de partículas virales. Posteriormente, con el fin de generar reactivos más atractivos para la industria de inmunoensayos, se montaron ensayos de igual desempeño, pero sustituyendo los fagos por péptidos anti-inmunocomplejos biotinilados unidos a la estreptavidina, que llamamos nanopeptámeros. Este trabajo de tesis transcurrió dentro de este marco de antecedentes, teniendo como principales objetivos simplificar la producción de los reactivos utilizados en los ensayos no competitivos y explorar variantes de estos ensayos para potenciar aún más su desempeño como herramientas para monitoreo de analitos pequeños. La primera parte de esta tesis se centró en la producción de nanopeptámeros en forma recombinante, realizando la expresión en E. coli de péptidos fusionados a proteínas multiméricas, como estreptavidina y la verotoxina. Todos los nanopeptámeros producidos fueron funcionales y permitieron la detección de los analitos modelo, clomazone y molinato, alcanzando límites de detección equivalentes a los obtenidos con PHAIA, y con el potencial de ser aplicados en formatos de tiras de diagnóstico para detección rápida e in-situ. Como resultado de lo anterior se estableció una plataforma tecnológica dedicada a la detección de pequeñas moléculas y que consiste en una instancia de selección de péptidos anti-inmunocomplejos con evaluación de su desempeño en PHAIA, seguido de la generación de nanopeptámeros, y finalmente montaje y validación de los inmunoensayos al analizar muestras reales. Dicha plataforma fue transferida como tal a la industria, para lo cual, en la segunda etapa de esta tesis se realizó una prueba de concepto que no se describe aquí debido a acuerdos de confidencialidad. Como alternativa al formato heterogéneo en placa de ELISA, la tercera parte de este trabajo consistió en el montaje de los ensayos no competitivos en formatos homogéneos (mix-and-read). La tecnología de ensayos homogéneos, AlphaLisa, basada en la generación de luminiscencia mediante canalización de oxígeno (LOCI), fue la elegida para ser acoplada a los ensayos no competitivos. Con el herbicida atrazina como modelo se montó el inmunoensayo NanoAlphaLisa. En este sistema, el analito es reconocido por el anticuerpo inmovilizado en las microesferas (beads) aceptoras, y el inmunocomplejo así formado estabiliza su unión a las beads dadoras cubiertas con los correspondientes nanopeptámeros anti-inmunocomplejo. De esta forma al irradiar las beads dadoras el oxígeno singlete liberado induce la generación de luminiscencia en las beads aceptoras dando lugar a un ensayo con señal proporcional a la concentración del analito, que fue validado con muestras de aguas superficiales. En la última instancia de esta tesis se apuntó a complementar la tecnología de nanopeptámeros utilizando fragmentos de anticuerpos recombinantes, como alternativa a los anticuerpos convencionales aplicados en los ensayos anteriores. Utilizando cocaína como analito modelo, se realizaron construcciones de bibliotecas de Fab quiméricos pollo/humano y se aisló un Fab anti-cocaína. La reactividad de este Fab se caracterizó en un formato competitivo, alcanzando un límite de detección inferior a los valores guía para el control de consumo, y con reactividad despreciable por su metabolito principal, benzoilecgonina, lo cual tiene relevancia para detectar consumo reciente. Además de su potencial para el desarrollo de un test de detección de cocaína en muestras de saliva, este Fab podrá utilizarse para la selección de péptidos anti-inmunocomplejos y la consecuente generación de los nanopeptámeros respectivos. Generar ensayos no competitivos con fragmentos de anticuerpos abriría nuevas oportunidades de innovación, como por ejemplo el desarrollo de ensayos homogéneos FRET como una alternativa de menor costo del NanoAlphaLisa.

Chronic stress deteriorates the immune function of fish, thereby increasing their vulnerability to infections. However, the molecular and cellular mechanisms underlying stress-mediated immunosuppression and infection susceptibility in fish remain largely unknown. Understanding these mechanisms will contribute to improving fish welfare and their farm production. Herein, we review the challenges of sturgeon aquaculture in subtropical countries, where current climate change has giving rise to significant temperature increments during summer. This leads to the exposure of fish to stressful conditions during these months. Chronic heat stress deserves attention considering the rapid warming rate of the planet. It is already affecting wild fish populations, with disastrous consequences for sturgeons, which are one of the most endangered fish species in the world. In this context, we discuss the most recent advances through the studies on the effects of chronic heat stress on the innate immune components of sturgeons. To this end, we summarise the findings of studies focusing on the aquaculture of Russian sturgeons and observations made on other Acipenser species. Special attention is given to acute-phase proteins, as they might be valuable biomarkers of heat stress and infection, with applicability in monitoring the fish health status in farms.

Este trabajo busca localizar e investigar focos de innovación didáctica en la enseñanza de la Química en Uruguay. Se pretende así contribuir a visibilizar acciones que producen quienes están en las aulas, en el ejercicio directo de la profesión y que derivan de su compromiso con la misma. Se analiza y comparte “lo bueno” que se hace en las instituciones educativas de forma que las experiencias investigadas puedan ser resignificadas por otros colegas, contribuyendo así a la mejora de la enseñanza de la asignatura. La investigación tiene un enfoque cualitativo de tipo etnográfico, basado en entrevistas reflexivas que se caracterizan como “encuentros dialógicos”. En la primera etapa se mantuvieron encuentros con cinco informantes calificados, conocedores de los diversos aspectos de la realidad de la enseñanza secundaria en el país. Se indagaron sus concepciones acerca de la innovación didáctica y se les solicitó que indicaran nombres de profesores y profesoras que, a su juicio, pudieran ser considerados innovadores. De los veintinueve docentes mencionados por los informantes calificados, se seleccionaron y entrevistaron seis, que conforman un grupo diverso en cuanto a género, edad, contexto de trabajo, formación y experiencia docente. A partir de los datos se recogidos se caracterizan innovaciones didácticas y situaciones innovadoras según Tejada (2008). Se analizan las dimensiones de la innovación y las relaciones entre las acciones que llevan adelante los profesores considerados innovadores y las perspectivas del curriculum según Grundy (1991). Se concluye que solo unas pocas de las situaciones analizadas en esta investigación tienen un sentido integrado e institucionalizado que implica formas de interacción, colaboración y participación activa de los estudiantes en la construcción del conocimiento así como el establecimiento de nuevas relaciones entre la ciudadanía y el mundo científico y pueden, por tanto, ser consideradas innovaciones didácticas de acuerdo a Tejada (2008). Innovación didáctica en la enseñanza de la Química en el nivel de educación media en el Uruguay Gabriela Meroni 6 Existe otro variado grupo de situaciones didácticas que constituyen experiencias interesantes y novedosas realizadas por docentes preocupados y ocupados en mejorar sus prácticas pero que, debido a su carácter esporádico y al bajo impacto en las instituciones en que se realizan, no tienen cabida en el concepto de innovaciones didácticas y constituyen experiencias innovadoras. Por otra parte, la mayoría de las dimensiones de la innovación didáctica que plantea Tejada (2008) aparecen en los relatos de los profesores y profesoras que participaron de esta investigación. La contextualización de actividades, que hemos denominado “Química en contexto”, es la de mayor presencia y más argumentación por parte de todos los entrevistados. Por último, las acciones que llevan adelante los profesores que han sido caracterizados como innovadores parecerían estar orientadas por el interés práctico de acuerdo a Grundy (1991) aunque hay algunos elementos que permiten pensar que podrían evolucionar, en algunos aspectos, al interés emancipado

Advances across the chemical and biological (life) sciences are increasingly enabled by ideas and tools from sectors outside these disciplines, with information and communication technologies playing a key role across 21 st century scientific development. In the face of rapid technological change, the Organisation for the Prohibition of Chemical Weapons (OPCW), the implementing body of the Chemical Weapons Convention (“the Convention”), seeks technological opportunities to strengthen capabilities in the field of chemical disarmament. The OPCW Scientific Advisory Board (SAB) in its review of developments in science and technology examined the potential uses of emerging technologies for the implementation of the Convention at a workshop entitled “Innovative Technologies for Chemical Security”, held from 3 to 5 July 2017, in Rio de Janeiro, Brazil. The event, organized in cooperation with the International Union of Pure and Applied Chemistry (IUPAC), the National Academies of Science, Engineering and Medicine of the United States of America, the Brazilian Academy of Sciences, and the Brazilian Chemical Society, was attended by 45 scientists and engineers from 22 countries. Their insights into the use of innovative technological tools and how they might benefit chemical disarmament and non-proliferation informed the SAB’s report on developments in science and technology for the Fourth Review Conference of the Convention (to be held in November 2018), and are described herein, as are recommendations that the SAB submitted to the OPCW Director-General and the States Parties of the Convention. It is concluded that technologies exist or are under development that could be used for investigations, contingency, assistance and protection, reducing risks to inspectors, and enhancing sampling and analysis.

<p>Rice is the third largest global food crop. Traditional practice to achieve maximum yields of rice is associated with the availability of mineral nitrogen and fertilization. This can lead to pollution of waterways. This can be particularly important in paddy rice production in north-eastern Argentina. Biofertilization or inoculation with plant growth-promoting bacteria (PGPB) is a sustainable alternative for agro-ecosystems. Inoculation of wheat, maize, and soybean is a widespread agricultural practice that has proved to be efficient in increasing production and promoting nutrition of these crops. This work measures the response of three rice cultivars to PGPB inoculation under field conditions with a commercial formulation containing strains of Pseudomonas fluorescens and Azospirillum brasilense. The experiment was performed in a farm plot located near Villa Clara, Entre Ríos. A factorial complete block design with four replicates was applied. Samples were taken at tillering and physiological maturity. Aerial biomass, grain yield, and its components were determined. Culturable microorganisms were analyzed in rhizosphere samples. Counts of most probable number of microaerophilic, nitrogen-fixing microorganisms and community-level physiological profiles of carbon-source utilization were evaluated at physiological maturity. Also, DNA extraction, nifH gene amplification, and terminal restriction fragment length polymorphism (T-RFLP) analysis were performed to analyze molecular diversity of diazotrophic communities associated with rice roots. Data showed differences between rice genotypes. Inoculation with PGPB did not have significant impact on culturable microbial communities and patterns of T-RFLP. Some fragments obtained by restriction with enzymes HaeIII and HhaI differentiated between inoculation treatments and rice genotypes. PGPB inoculation increased aerial biomass production, harvest index, and grain yield of the Supremo 13 cultivar by 4.7%, 16%, and 20.2%, respectively. Inoculation of the Yeruá cultivar increased aerial biomass by 1.9% and grain yield by 11%. On the other hand, control plants of the Cambá INTA cultivar produced 8.7% and 7.3% more aerial biomass and grain yield than inoculated plants, respectively. Inoculation reduced the percentage of chaffy grains of the three rice cultivars. The results indicate that the combined inoculation with P. fluorescens and A. brasilense has significant potential when applied to rice</p>

Los vegetales son una fuente rica en macro y micronutrientes. En particular, la papa y el boniato se consumen amplia mente, siendo de los cultivos más importantes a nivel mundial. Por tanto, la contaminación de estos productos debido a la presencia de contaminantes inorgánicos es de gran preocupación. Considerando la creciente tendencia de consumo saludable de estos tubérculos y raíces con su cáscara, rica en fibra y otros nutrientes, el análisis del alimento entero podría brindar información valiosa con relación a su seguridad. Debido a esto, se estudió la presencia de As, Cd y Pb en papas y boniatos pelados y enteros. Para ello, se optimizaron y validaron métodos analíticos según los requerimientos de la Association of Official Analytical Collaboration International (AOAC) para análisis de alimentos. A pesar de que el contenido de arsénico (As), cadmio (Cd) y plomo (Pb) fue en la mayoría de los casos menor a un tercio de los valores máximos permitidos para estos contaminantes, la presencia de Cd se detectó en todos los boniatos enteros y no así en los pelados. El mismo comportamiento se observó para la presencia de Pb en la mayoría de las muestras de boniato analizadas. Esto señala la necesidad de generar información sobre el contenido de estos contaminantes en el alimento entero y disponer de metodologías analíticas para ello, de manera de poder realizar una evaluación de riesgo de acuerdo con los hábitos de consumo.
