In the present work, new kinetics to describe the creaming stability of oil-in-water emulsions determined by backscattering measurements (BS) is proposed. The emulsions assayed exhibited a different backscattering profiles regarding creaming destabilization, hyperbolic and sigmoid one. Hyperbolic behavior can be described by a second order kinetics, where kh could be equaled to a rate constant that describes the creaming process and its values would indicate the stability of emulsions. While for the sigmoid BS pattern, kinetics with two terms, is adequate to describe the creaming process in contrast to kinetics previously reported in the literature. The kh value has the same meaning as before, and ks indicates the delaying effect on the creaming rate.

La técnica de asociación de palabras fue utilizada para realizar un estudio preliminar de la percepción sobre los tipos de carnes picadas comercializadas en Montevideo. 60 consumidores recibieron cinco tarjetas con las palabras: Carne Picada Común, Magra, Premium, de Ternera y Especial y se les solicitó que escribieran las cuatro primeras imágenes, asociaciones, pensamientos o sentimientos que vinieran a su mente al leer cada tarjeta. Posteriormente, evaluaron cuán saludable consideraban que era cada tipo de carne picada. Las respuestas fueron agrupadas en 16 categorías. La Carne Picada Común fue percibida como un alimento con alto contenido de grasa y evaluada como poco saludable. Las carnes picadas Magra y Premium fueron percibidas como productos con bajo contenido graso, nutritivas, saludables y de precio elevado. La tipo Premium fue considerada, además, como un producto de calidad. La carne picada de Ternera fue percibida principalmente como un producto con una textura tierna, suave y blanda, mientras que en la carne picada Especial se encontraron contradicciones en las palabras utilizadas por los consumidores para su descripción (cara-económica, con poca grasa- con mucha grasa). Por medio de esta técnica se identificaron los atributos más relevantes en el proceso de selección y toma de decisiones de compra de este tipo de producto.

In this paper a general framework is proposed for understanding and analysing more than two consensus components in projective mapping (also known as Napping®) studies. Focus is on how two models, multiple factor analysis (MFA) and individual differences scaling (INDSCAL) based on the weighted Euclidean model (WEM), relate to each other and to the general framework. The stability of the consensus configurations of both methods are compared. The relations between the results of the two methods are investigated using the RV coefficient and an alternative index called SMI which gives equal weight to the axes regardless of the relative size of the singular values. The methods are tested and compared using three datasets and simulations.

A summary of the resource.
The beehive as a quantitative monitor of pesticide residues applied over a soybean crop was studied through a semi field experiment of controlled exposure of honey bees to pesticides in macro tunnels. The distribution within exposed beehives of pesticides commonly used in soybean plantation, was assessed. Residue levels of insecticides in soybean leaves, honey bees, wax, honey and pollen were analyzed. The transference from pesticides present in the environment into the beehive was evidenced. The obtained results allow relating pesticide concentrations present in the environment with traces found in foraging bees. Therefore, pesticide transference ratios could be calculated for each detected compound (acetamiprid, imidacloprid and thiamethoxam) which showed a linear inverse trend with their 1-octanol/water partition coefficient (Kow). The least transferred pesticide to the hive (acetamiprid) has the highest vapor pressure (Vp). This study gives new insights on the usefulness of monitoring the environment through beehives aiming to evaluate if agroecosystems remain sustainable. It also contributes to generate valuable information for model building aiming to predict environmental quality through beehive's analysis.

The Latin American flora contains one of the greatest biodiversities in the world. Thus renewable natural resources found in this region acquire an outstanding importance in the search for new useful raw materials for the fragrance and flavor industry. Many chemical and pharmacological studies have been carried on these aromatic resources. However, aromatic quality evaluations are quite scarce. Actually, several analytical technologies are applied to profiling aromatic. These are key issues that influence the development of new agrobusiness ventures. Sensory profiling by different analytical techniques in addition to the chemical characterization can contribute to a better knowledge of these native aromatic plant resources and encourage their potential industrial purposes. Such has been the case of Adesmia boronioides of Patagonia, its essential oils has been used to launch a perfume for a major international cosmetics company in its “Aromas de América” campaign. Actually we have studied other aromatic species of South America, Mulinum spinosum, motivated by previous literature proposing this plant as a surrogate of galbanum, a raw material highly appreciated in perfumery. Chemical analysis was applied by GC-FID-MS and sensory characteristics of the essential oil of this species were evaluated by GC-O and descriptive analysis and compared with that of a commercial sample of galbanum. An experienced panel of reviewers smelled the effluent gas chromatograph using an olfactometer, identifying and describing significant aromas related to chromatographic peaks. The aromagrams obtained from both samples differed significantly, however showed the same descriptors, derivatives of 2-methoxypyrazines were identified as responsible for the characteristic scent note in both products giving the olfactory similarity. Despite this, the overall flavor profile of both products differs substantially, giving Mulinum spinosum own olfactory and promising features. Objetivo: realizar una actividad de difusión a la población sobre el uso racional de medicamentos, mediante la inserción de los estudiantes en el equipo de salud y analizar los datos farmacoterapéuticos obtenidos de esta actividad educativa. Métodos: en la vía pública se instaló una carpa de Atención Farmacéutica durante<br />tres días donde participaron químicos farmacéuticos y médicos, quienes impartieron<br />charlas sobre diferentes temas de salud preponderantes en la población uruguaya.<br />Asimismo, los alumnos de Atención Farmacéutica, como parte de su formación práctica, participaron de esta actividad mediante la realización de entrevistas a los transeúntes, llenado de fichas de perfiles farmacoterapéuticos y de consumo de<br />plantas medicinales, elaboradas para este fin, y la entrega de folletos informativos.<br />A partir de las fichas farmacoterapéuticas se desarrolló un trabajo de investigación.<br />Resultados: los alumnos del curso participaron de forma activa en el llenado de las fichas farmacoterapéuticas y mantuvieron una comunicación fluida con los asistentes a la carpa y con los profesionales de la salud. Se completaron 117 fichas farmacoterapéuticas (90 mujeres y 27 hombres). El 60 % de los entrevistados<br />consumía plantas medicinales. Sesenta personas recibían cuatro o más especialidades farmacéuticas. Las drogas antihipertensivas resultaron las más utilizadas. Veintitrés personas presentaban hipotiroidismo y dos personas de este<br />grupo recibían litio para trastorno bipolar. Entre el grupo de mujeres: 18 tomaban<br />ansiolíticos, 12 antidepresivos, 7 hipnóticos y 2 antisicóticos. Diecinueve personas<br />manifestaron tener colesterol alto y 14 recibían medicación. A summary of the resource.
The aim of the present work was to screen probiotic cultures for the development of non-fermented probiotic milk that keeps its sensory, microbiological and physicochemical characteristics during storage. The study was conducted in three steps. Initially, five probiotic cultures (Bifidobacterium animalis, B. longum, Lactobacillus acidophilus, L. casei, and L. rhamnosus) were screened using sensory, microbiological and physicochemical techniques. Two cultures were selected for a more detailed evaluation based on their ability to maintain viability during storage without altering the sensory characteristics of the product: L. acidophilus and B. animalis. The milk with L. acidophilus showed a better sensory performance throughout storage. Finally, the shelf life of the probiotic milk obtained with L. acidophilus culture was estimated in 21.8 days from a sensory and microbiological point of view. L. acidophilus culture could be used by dairy companies as an innovative option to add health functionality to regular milk without any major change in its sensory characteristics.

With the aim of controlling the first steps in HgI2 film growth onto amorphous substrates, we employed HgI2 nanoparticles for nucleation. Hg(NO3)2 and NaI were used for obtaining HgI2 in water with and without citric or oxalic acid as capping agents. These samples were then subjected to a hydrothermal treatment at a constant temperature of 120 ºC during 2 h. All samples were washed, centrifuged and dried. This method presents a facile route for obtaining HgI2 nanoparticles and is easily scalable. HgI2 tetragonal phase was confirmed by powder X-ray diffraction. Nanoparticles were characterized in their size and morphology by transmission electron microscopy and the capping agent presence was studied by infrared spectroscopy. HgI2 nanoparticles synthesized in octadecene, previously reported, as well as nanoparticles obtained in the present work, were used for nucleation onto amorphous substrates. They were deposited onto floating silica glass by spin coating and the morphology of the layer was studied by atomic force microscopy. The results we obtained are the first involving HgI2 nucleation by spin coating, and are very promising for improving the film growth orientation and therefore the current applications of this material, as well as for opening new ones.

A summary of the resource.
The synthesis, crystal structures and luminescence of a novel family of lanthanide polymer complexes with general formula [Ln2(Hmidp)3(H2O)3](ClO4)3·6H2O (Ln = Nd, Sm, Eu, Gd, Dy, Ho, Tm; H2midp = N-methyliminodipropionic acid) are reported. The compounds were obtained by direct reaction of H2midp and lanthanide(III) perchlorate in aqueous solution. The choice of the conditions of synthesis were selected from speciation studies. The structure of the polymer complexes contains bimetallic cationic units [Ln2(Hmidp)3(H2O)3]3+ in which one of the Ln ions is eight-coordinated and the other nine-coordinated, linked by carboxylate bridges. This is expanded to a 2D network through carboxylate linkers. The solid state luminescence of the Eu complex was observed and an average lifetime value of 0.5 ms was verified for the red emitting 5D0 excited state.

Temporal Check-All-That-Apply (TCATA) has been recently introduced as a method for temporal sensory product characterization. Building on the standard Check-All-That-Apply (CATA) question format, assessors select all the terms they consider applicable for describing the sensations they perceive, and they do so at each moment of the evaluation process. This research further investigates the TCATA method, through its application to products of varying complexity (yogurt, salami, cheese, orange juice, French bread, and marinated mussels) using consumers and trained panellists as assessors. More importantly, to deliver new methodological insights we compare TCATA to Temporal Dominance of Sensations (TDS). This comparison will aid researchers to select the temporal method best suited to their needs. Across three countries, six studies were conducted. Within-subjects experimental designs were used in Studies 1–3 and involved trained panellists using both TCATA and TDS on the same set of products. In Studies 4–6, between-subjects experimental designs were used, and the assessors, who were consumers, evaluated samples using either TCATA or TDS. The results confirmed that TCATA is suitable for measuring the temporal sensory characteristics of products. By enabling identification of several sensory characteristics that are concurrently perceived in products, the results from this research also suggest that TCATA may provide a more detailed description of the dynamics of the sensory characteristics of products. The TDS concept of dominance appears to decrease detailed description and discrimination of attributes that are simultaneously perceived, particularly when dealing with multiple sensory modalities. The practical implications of these differences are discussed

Browning and gelation kinetics of a sheep milk and sucrose model system with 70% total solids (simulating dulce de leche) and the influence of temperature and sucrose content on this process were studied. The Kubelka–Munk index and subjective heat stability tests were used to monitor nonenzymatic browning and to determine gelation time. Browning and gelation processes showed different kinetics where gelation was shown to occur much faster than browning. Both independent variables (temperature and sucrose content) had a significant influence in both processes, where temperature had the higher impact.

Herein, we report the tuning of the structural and organic magnetoresistance response of poly(9-vinyl carbazole) (PVK) with magnetic nanoparticle addition under exposure to low applied magnetic fields. X-ray diffraction analysis showed evidence of PVK conformational changes by either adding magnetic nanoparticles or by applying an external magnetic field. Molecular dynamics simulations suggested that the loss of aromaticity could lead to slight but detectable modifications in the PVK structure. Confocal Raman spectroscopy under low applied magnetic field evidenced modifications in PVK singlet and triplet populations followed by theoretical simulation to assign the vibrational modes in PVK different multiplicities. Both the addition of magnetic nanoparticles and the presence of an applied magnetic field showed an increase in the PVK triplet-to-singlet ratio. PVK nanocomposites showed negative low field magnetoresistance (MR) reaching maximum values of MR (2 kOe) = −1.1 and −9.0% for T = 280 and 20 K, respectively. The MR dependence with low applied magnetic fields showed a typical behavior in agreement with the electron–hole recombination mechanism. This latter effect could be experimentally associated with the change in the PVK triplet-to-singlet ratio, as observed by Raman analysis. In addition, the PVK magnetoresistance effect could also be ascribed to conformational changes induced by the presence of magnetic nanoparticles and an applied magnetic field, as evidenced by X-ray diffraction analysis.

To examine the influence of front-of-pack nutrition information on the perception of healthfulness of ultra-processed products across 2 income levels. DESIGN: A between-participants design was used to compare healthfulness perception of ultra-processed products featuring different front-of-pack nutrition information schemes (guideline daily amount system, traffic light system, and monochromatic traffic light system). PARTICIPANTS: A total of 300 people (aged 18-70 years, 75% female) from Montevideo, Uruguay, participated in the study; half were middle- or high-income people and the other half were low-income people. MAIN OUTCOME MEASURES: Participants were shown the labels of each product and asked to rate their perceived healthfulness and the frequency with which each product should be consumed. ANALYSIS: Results were analyzed using analysis of variance for statistical significance (P < .05). RESULTS: Low-income participants perceived ultra-processed products to be significantly (P < .05) more healthful than did middle- and high-income participants. The lowest perceived healthfulness scores for low-income participants were obtained for products featuring the colored and monochromatic traffic light system whereas no significant differences (P > .05) among schemes were found for middle- and high-income participants. CONCLUSIONS AND IMPLICATIONS: Nutrition education programs aimed at increasing low-income people's knowledge of the nutritional composition of these products and their potential negative effects on health seem to be necessary. Although the inclusion of semidirective front-of-pack nutrition information decreased the perceived healthfulness of low-income people, it seemed unlikely to influence how they perceive these products. A summary of the resource.
The synthesis of new oxazolidinylthiazolidines bicycles, oxygen analogues of bisthiazolidines, also known as metallo-β-lactamase inhibitors is described. The reaction of β-aminoalcohols and 2,5-dihydroxy-1,4-dithiane led to oxazolidinylthiazolidines and/or dithioazabicycles as the main products. The distribution pattern depends mainly on the aminoalcohol substituents. In a one-pot reaction, four new bonds are formed in good yields and with high atom efficiency. When the oxazolidinylthiazolidines are formed, two stereogenic centres are generated with high enantiospecificity. The reaction mechanism is discussed based on crystallographic data and interconversion studies. Two oxazolidinylthiazolidines were evaluated as inhibitors of the potent lactamase NDM-1 and compound 4f displayed competitive inhibition with Ki = 1.6 ± 0.6 μM.

A summary of the resource.
Extra virgin olive oil is recognized as a very stable oil because of its composition in fatty acids and its content in natural antioxidants (tocopherols and polyphenols). In the bibliography are works that address different aspects of this stability, from the duration of its useful life to its performance in the frying of foods. Some works also link their stability with the content of natural antioxidants. For example, Franco et al. (2014) studied the content of phenols and their antioxidant capacity in olive oils of seven different varieties. Baccouri et al. (2008) found a good correlation between the oxidative stability (measured in Rancimat) of the oils studied and the concentration of total phenols and tocopherols.

A summary of the resource.
Composition of tocochromanols in kernels recovered from 16 different apricot varieties (Prunus armeniaca L.) was studied. Three tocopherol (T) homologues, namely α, γ and δ, were quantified in all tested samples by an RP-HPLC/FLD method. The γ-T was the main tocopherol homologue identified in apricot kernels and constituted approximately 93% of total detected tocopherols. The RP-UPLC-ESI/MSn method detected trace amounts of two tocotrienol homologues α and γ in the apricot kernels. The concentration of individual tocopherol homologues in kernels of different apricots varieties, expressed in mg/100 g dwb, was in the following range: 1.38–4.41 (α-T), 42.48–73.27 (γ-T) and 0.77–2.09 (δ-T). Moreover, the ratio between individual tocopherol homologues α:γ:δ was nearly constant in all varieties and amounted to approximately 2:39:1.

A summary of the resource.
Seven countries in Latin America and the Caribbean report on (2010 and 2011) the susceptibility of 2235 isolates of Neisseria gonorrhoeae to 6 antibiotics. Thirteen isolates had ceftriaxone minimum inhibitory concentrations (MICs) of 0.125 to ≥ 0.25 mg/L. The percentage of resistant isolates to the following antibiotics was: azithromycin, 1.0% to 1.7%; ciprofloxacin, 42.1% to 36.2%; penicillin, 31% to 35%; tetracycline, 21.8% to 22.6%.

Baccharis is a widespread genus belonging to the Asteraceae family that includes almost 400 species exclusively from the Americas. Even when studied in detail, the taxonomic classification among species from this genus is not yet fully defined. Within the framework of our study of the volatile composition of the Baccharis genus, four species (B. trimera, B. milleflora, B. tridentata, and B. uncinella) were collected from the ‘Campos de Cima da Serra’ highlands of the Brazilian state of Rio Grande do Sul. The aerial parts were dried and extracted by the simultaneous distillation extraction (SDE) procedure. This is the first time that SDE has been applied to obtain and compare the volatile-extract composition in the Baccharis genus. Characterization of the volatile extracts allowed the identification of 180 peaks with many coeluting components; these latter being detailed for the first time for this genus. The multivariate statistical analyses allowed separating the volatile extracts of the four populations of Baccharis into two separate groups. The first one included the B. milleflora, B. trimera, and B. uncinella volatile extracts. The three species showed a high degree of similarity in their volatile composition, which was characterized by the presence of high contents of sesquiterpene compounds, in particular of spathulenol. The second group comprised the extract of B. tridentata, which contained α-pinene, β-pinene, limonene, and (E)-β-ocimene in high amounts.

Temporal Check-All-That-Apply (TCATA) Fading is a variant of TCATA where selected terms gradually and automatically become unselected over a predefined period of time and assessors are asked to re-select the terms if they still apply. Gaps in the temporal profile for a TCATA term may arise if assessors do not immediately re-select a fully faded term, making it difficult to ascertain whether a term did apply continuously over a broken interval or if it did not apply for a period of time. In this context, the aim of the present work was to evaluate the influence of using data imputation to fill the gaps on results from TCATA fading. Eight studies were conducted with consumers or trained assessors using different product categories. Gaps were identified in all of the studies, lasting 0.1–72.2 s and representing 1–9% of the raw data. Imputation of gaps from an unselected to a selected state occurred in two ways: imputation of 75% of the gaps with the shortest duration, or imputation of all gaps. Compared to the analysis of the raw data, data imputation provided smoother TCATA curves and slightly increased the duration of the significant differences among samples. Furthermore, the results were more coherent from a sensory point of view, as the evolution of the sensory characteristics during the evaluation period fitted expectations. The present work suggests that data imputation should be considered in the analysis of TCATA Fading data, but further research is required to optimise imputation approaches.

The Raigón aquifer is an important groundwater system in southern Uruguay. The increasing use of groundwater resources in the last decades has provoked changes in the concentration of many elements which are strongly related to anthropogenic pollution sources. Concentration levels are useful to detect changes in reservoir status but it is also necessary to analyze their chemical significance in order to make an accurate assessment of the sources of contamination and the causes of changes. In this work we use the available thermodynamic data to calculate chemical speciation on these groundwater samples. Trace elements present as anions, in particular Se and Mo, are especially focused to show the chemical modeling possibilities. Both elements form anionic species, predominantly MoO42- and SeO42-. Results show that these anions interact in solution and are greatly influenced by the concentration of the abundant calcium ion. Localized changes in pH can strongly affect the situation. The same is observed with the pE parameter, but only in the case of Se. Chemical speciation of trace elements is in general highly dependent on pH, pE and concentration of major elements. In consequence, for a fixed analytical total concentration, these parameters can markedly change the situation, affecting the mobility, the bioavailability and environmental fate of these elements. The strategy employed in this work can also be extended to the study of many other environmental water scenarios.

The species of genus Baccharis spp. (Compositae) are an important natural resource in the search for new bioactive compounds. This article presents an investigation of volatile compounds of two species of Baccharis that are native to southern Brazil (Baccharis dentata (Vell.) G.M. Barroso and Baccharis uncinella DC) collected in summer and autumn of 2011. The essential oils were extracted by steam distillation and analyzed by gas chromatography-mass spectrometry (GC-MS), olfactometry analysis (GC-O) and qualitative assessment of the antimicrobial potential using the indirect bioautography method against Staphylococcus aureus, Salmonella enterica subspecie enterica serovar Choleraesuis, Pseudomonas aeruginosa, Candida albicans, Aspergillus niger, Candida parapsilosis, Cryptococcus neoformans, Rhizopus stolonifer, Fusarium solani and Aspergillus oryzae. The results demonstrated that the harvest period has an influence on the composition of the essential oils, but little influence on extraction yield. It can also be observed that the joint analysis of GC-MS and GC-O resulted in complementary information about the essential oils studied because the intensities of volatile compounds detected by both methods are significantly different. Regarding antimicrobial assays, it was found that the essential oil of B. dentata was effective against S. aureus, A. niger, C. parapsilosis and R. stolonifer, whereas the essential oil of B. uncinella was effective against S. aureus, S. Choleraesuis, C. albicans, A. niger, C. parapsilosis, R. stolonifer and F. solani.

Searching for prospective vanadium-based drugs for cancer treatment, a new series of structurally related [VIVO(L − 2H)(NN)] compounds (1–8) was developed. They include a double deprotonated salicylaldimine Schiff base ligand (L-2H) and different NN-polypyridyl co-ligands having DNA intercalating capacity. Compounds were characterized in solid state and in solution. EPR spectroscopy suggests that the NN ligands act as bidentate and bind through both nitrogen donor atoms in an axial-equatorial mode. The cytotoxicity was evaluated in human tumoral cells (ovarian A2780, breast MCF7, prostate PC3). The cytotoxic activity was dependent on type of cell and incubation time. At 24 h PC3 cells presented low sensitivity, but at 72 h all complexes showed high cytotoxic activity in all cells. Human kidney HEK293 and ovarian cisplatin resistant A2780cisR cells were also included to evaluate selectivity towards cancer cells and potency to overcome cisplatin resistance, respectively. Most complexes showed no detectable interaction with plasmid DNA, except 2 and 7 which depicted low ability to induce single strand breaks in supercoiled DNA. Based on the overall cytotoxic profile, complexes with 2,2´-bipyridine and 1,10-phenanthroline ligands (1 and 2) were selected for further studies, which consisted on cellular distribution and ultrastructural analyses. In the A2780 cells both depicted different distribution profiles; the former accumulates mostly at the membrane and the latter in the cytoskeleton. Morphology of treated cells showed nuclear atypia and membrane alterations, more severe for 1. Complexes induce different cell death pathways, predominantly necrosis for 1 and apoptosis for 2. Complexes alternative mode of cell death motivates the possibility for further developments.
