A summary of the resource.
The objectives of the present study were to identify adolescent classes based on perceptions of their family's eating habits and to determine whether these classes differ in terms of family meal frequency and source, parents and adolescent diet quality, nutritional status, satisfaction with life, family life and food-related life. Questionnaires were administered to a sample of 300 two-parent families with one child between 10 and 17 years in Chile. Questionnaires included the Satisfaction with Life Scale (SWLS), the Satisfaction with Food-related Life scale (SWFoL), the Satisfaction with Family Life scale (SWFaL) and the Adapted Healthy Eating Index (AHEI). Adolescents also answered the Family Eating Habits Questionnaire (FEHQ). Latent class (LC) analysis was used to estimate the number of classes associated with the adolescent's perceptions about their family's eating habits, based on the three factors detected in the FEHQ. The LC analysis yielded three classes: “medium cohesion around family meals/healthy food-related parenting practices” (Class 1, 50.4%), “high cohesion around family meals/healthy food-related parenting practices” (Class 2, 25.9%) and “high cohesion around family meals/unhealthy food-related parenting practices” (Class 3, 23.7%). Classes also differed in the adolescents AHEI score, frequency and source of family meals; body mass index, SWLS and SWFaL scores in mothers, fathers and adolescents, adolescent sex and household financial situation. These findings suggest that frequent and cohesive family meals improve the well-being in both parents and adolescents, but are not enough to achieve healthier diets and weight statuses in adolescents.

The objectives of the present study were to compare the diet quality, nutritional status and satisfaction with life, food related life and family life between mothers and adolescent children from single and dual-headed households. In Temuco, Chile, families composed of single mothers and married or cohabiting mothers with one child aged between 10 and 17 years answered a questionnaire that included the Adapted Healthy Eating Index (AHEI), Satisfaction with Life Scale (SWLS), Satisfaction with Food-related Life (SWFoL) scale and Satisfaction with Family Life (SWFaL) scale. Continuous variables were analyzed using a dyadic hierarchical multilevel mixed model for distinguishable dyads. To analyze nutritional status, the between-dyads independent variable procedure for categorical data was performed using a Mann-Withney U test. Mothers and adolescents from single-headed and dual-headed families did not significantly differ in their AHEI scores. The proportion of overweight and obese mothers and adolescent children was higher in dual-headed households. Type of household did not influence the SWLS, SWFoL, and SWFaL of mothers, whereas adolescents from dual-headed households had higher SWFaL. Strategies to improve diet quality should be developed and implemented regardless of the family structure, yet interventions to improve nutritional status should be targeted at dual-headed households. Also, special emphasis should be given to improving the satisfaction with family life in adolescents from single-headed households.

Nutritional warnings have emerged as a promising front-of-package nutrition labelling scheme to discourage consumption of products with high content of nutrients associated with non-communicable diseases. One of the objectives of this policy is to encourage the food industry to reformulate their products. However, information about consumers’ perception of reformulated products in the context of the implementation of this policy is still limited. The aim of this study was to assess the relative influence of different types of reformulation on consumers’ perceived healthfulness and purchase intention, using frankfurters as case study. A conjoint analysis was implemented considering a fractional factorial design involving 5 2-level variables: brand type (artisanal/industrial), sodium reduction (with/without), saturated fat reduction (with/without), fibre claim (with/without) and cholesterol claim (with/without). An online survey with 494 consumers was implemented one year after the implementation of nutritional warnings in Chile. Participants were randomly divided into two groups, one of which evaluated purchase intention (n = 249) and the other evaluated perceived healthfulness (n = 245). Data were analysed using analysis of variance and cluster analysis. Results showed that reformulated products without nutritional warnings for sodium and saturated fat were perceived as more healthful and had higher purchase intention scores than then regular counterparts. On the contrary, nutrient claims did not have a relevant effect on consumers’ perception. Heterogeneity in consumers’ reaction to the reformulated products was found and was mainly related to consumption frequency of the product category. Results provide insights for policy makers and food companies in countries considering the implementation of nutritional warnings.

Pese al cambio fundamental en salud que signific6 la introducci6n de la vacunaci6n, existen todavia un numero importante de pat6genos para los cuales no contamos con vacunas y las enfermedades infecciosas siguen siendo el principal problema de salud humana y animal en el mundo. En la busqueda de nuevos sistemas que permitan generar vacunas eficientes contra una diversidad de pat6genos, se ha demostrado el gran potencial que tiene el uso de bacterias vivas atenuadas, en particular Salmonella, como vectores de antigenos heter6logos para la construcci6n de vacunas multivalentes. Cepas de Salmonella atenuadas expresando antigenos derivados de bacterias, virus 6 panisitos pueden ser administradas por via oral, produciendo una infecci6n autolimitada y persistiendo en el individuo durante algunas semanas antes de ser eliminadas. Durante ese tiempo, estimulan la generaci6n de respuestas inmunes (humoral y celular) tanto contra antigenos de Salmonella como contra las proteinas heter6logos que expresan. Mas aun, se ha demostrado que la infecci6n con estas bacterias recombinantes puede estimular en el individuo, ademas de inmunidad protectiva contra Salmonella virulentas, una s6lida protecci6n contra el pat6geno del cual deriva el antigeno heter6logo. Debido a su caracteristicas particulares de su patogenesis, y a pesar de que es capaz de presentar antigenos en un contexto de MHC de clase I, Salmonella no constituye un buen sistema de inducci6n de respuestas citot6xicas contra antigenos heter6logos. Sin embargo, existen enfermedades contra los cuales es necesario desarrollar una respuesta que involucre celulas T CD8+, para 10 cual los antigenos deben ser presentados en el contexto del MHC de c1ase I. Los sistemas de secreci6n tipo III (SSTT) son "jeringas moleculares" que tienen la funci6n de inyectar factores de virulencia dentro del citosol de la celula hospedadora. Salmonella po see dos de estos transportadores de proteinas, los cuales cumplen un rol esencial en la virulencia de este pat6geno. Para mejorar la habilidad de Salmonella de presentar antigenos unidos a MHC de c1ase I se ha investigado la posibilidad de utilizar proteinas efectoras susceptibles de ser translocadas por los SSTT de Salmonella enterica serovar Typhimurium para el transporte de antigenos heter610gos expresados por Salmonella hacia el citosol de la celula infectada, expresando dichos antigenos como fusi6n de las proteinas efectoras. Trabajos recientes muestran que utilizando proteinas translocadas por el SSTT codificado en la isla de patogenicidad 1 de Salmonella (IPS 1, necesario para la invasi6n) como transpo11adores para los antigenos heter6logos se logra estimular una respuesta de celulas T CD8+. El otro SSTT, que se encuentra en la isla de patogenicidad 2 de Salmonella (IPS2, requerido par la supervivencia intracelular) ha sido menos estudiado y no ha sido utilizado aun para este tipo de aplicaciones. Es por eso que una parte del presente proyecto plantea estudiar el uso de SseA, proteina perteneciente al SSTT de IPS2, como transportador de antigenos heter6logos. La otra parte del proyecto explora el uso de Salmonella como vehiculo para vacunas a ADN. El hecho de que Salmonella infecta y sobrevive en celulas presentadoras de antigenos las vuelve candidatas ideales para este tipo de vacunaci6n, en la cual es la propia celulas hospedadora la encargada de expresar el antigeno, funcionando la bacteria s6lo como vehiculo de transporte del plasmido, que codifica el antigeno de interes bajo control de un promotor eucariota. Este tipo de aproximaci6n ha resultado exitosa en la generaci6n de respuestas inmunes protectoras contra pat6genos intracelulares (virus, Listeria). En este trabajo se plantea la evaluaci6n del uso de Salmonella vivas atenuadas como vehiculo de transPorte de una vacuna a ADN contra el tetanos, un sistema en el cual la generaci6n de anticuerpos es esencial para la protecci6n.

The di-2-pyridylketone ligand (dpk) exhibits several coordination modes and is a good candidate for preparation of a variety of metal complexes. In this work we present a potentiometric study (in water and in ethanol : water mixtures) of Ln-dpk and Cu(II)-dpk complexes. The thermodynamic stability of the species with La, Sm and Yb is compared to that of Cu(II). In addition, [Ln(NCS)3{(py)2C(OEt)(OH)}3] (Ln¼Pr, Sm, Gd) and [Cu(SCN)2{(py)2C(OEt)(OH)}]2 � 2EtOH have been prepared and characterized by X-ray diffraction.

Abstract
A summary of the resource.
Blood samples and questionnaire background data were collected from 96 children (age 2–14 years) living in urban, suburban, or rural areas with varying traffic intensity and industrial lead pollution in Uruguay. Spot samples of tap water were collected from the homes of 44 children, and samples of top soil were taken from seven areas. Samples of air-borne dust were collected in central and suburban Montevideo. Blood lead concentrations (B-Pb) in children ranged between 47 and 191 (mean 96) μg/L and exceeded in 36% of the children 100 μg/L, the intervention level adopted by the United States Centers for Disease Control. Lead in tap water ranged from 0.2 to 230 (mean 15) μg/L and exceeded in 39% of the samples the maximum level recommended by WHO, 10 μg/L. Lead pipes were used in parts of the water supply systems. Lead in air varied between different locations from 0.15 to 1.7 μg/m3, highest in the very center of Montevideo. The median soil lead ranged from 6 to 2100 μg/g and was highest in industrially polluted areas. At multiple regression analysis, B-Pb was significantly associated only with age (P= 0.032) and traffic intensity at school (P= 0.045). No significant impact on B-Pb of lead in water or soil could be established.

BACKGROUND: Piezodorus guildinii (Westwood, Hemiptera: Pentatomidae) causes economic losses in soybean crops by diminishing productivity, impacting grain size, oil content, and germination power. RNA interference (RNAi), a conserved gene regulation process initiated by double-stranded RNA (dsRNA), may be used as a safe technique in integrated pest management strategies. Conjugating dsRNA with cationic polymers, which protect dsRNA from degradation has shown to enhance this response. This study aims to assess the impact of dsRNA administration on the viability of P. guildinii and evaluate dsRNAchitosan nanocomplexes as a pest control strategy. RESULTS: Ten target genes were selected, dsRNAs were designed and synthesized. In injection assays, significant mortality exceeding 76% was observed, while mortality from ingestion also showed significant differences, reaching 49%. The dsRNA targeting Srp54k gene was selected and a chitosan-dsRNA nanocomplex was synthesized. These nanocomplexes demonstrated enhanced stability under RNase treatment in vitro, and, in in vivo assays, a cumulative corrected mortality rate of 66% was reported. Consistent with these findings, RT-qPCR analysis revealed that gene expression levels in treated insects were significantly reduced compared to control at 24, 48, and 72 h post treatment for targeted genes. CONCLUSION: In this work, we evaluated the effect of dsRNA administration by injection and ingestion on the viability of P. guildinii and determined its molecular silencing effects. Additionally, we synthesized and characterized chitosan-dsRNA nanoparticles, which demonstrated improved efficacy in terms of stability. These findings are promising for the development of new integrated management strategies for stink bugs control.

A set of force field parameters capable of reproducing the preferred conformations of the biologically important [1,4]-benzodiazepines was developed for AMBER and other molecular modeling programs that utilize the Weiner et al. force field. Equilibrium parameters were obtained from representative model compounds found in the Cambridge Structural Database, and bond stretching and torsion potential force constants were estimated using AM1 and PM3 semiempirical Hamiltonians. Parameters obtained with the two semiempirical methods and the existing linear interpolation method are compared. Molecular mechanics and dynamic simulations showed that AM1 derived parameters, together with MNDO ESP fitted atomic charges, predicted the X-ray structure of a number of representative [1,4]-benzodiazepines within 0.01 Å, 0.8°, and 5°, from observed bond lengths, bond angles, and bond torsions, respectively.

A summary of the resource.
The stability of polyphenols in muffins, enriched with strawberry, black currant, raspberry and sour cherry pomace (50 g/kg), baked in a conventional and halogen oven, at three different temperatures (140, 180 and 220 �C), was studied. The most unstable compounds were anthocyanins (36e97% lost), in contrast the flavonol glycosides were the most stable (0e21% lost). Over 100% recovery was observed for neochlorogenic acid and ellagic acid (95e120% and 341e823%, respectively). The increase of free ellagic acid content in muffins enriched with strawberry or raspberry was positively correlated with the baking time (r ¼ 0.879 and r ¼ 0.944, respectively) and was the result of thermal hydrolysis of ellagitannins and ellagic acid glycosides. The highest temperature combined with a short baking time had the best effect on the preservation of polyphenols, however, since the polyphenol composition can be expected to vary in different fruits, each case should be considered separately, in order to achieve the most favorable nutritional effect of baked products enriched with fruit pomace. The sensory evaluation showed that muffins enriched with 50 g/kg of fruit pomace were competitive with control muffins, with the added benefit of having a higher nutritional value.

The production of H2-rich gaseous mixtures from steam and oxidative steam reforming of crude glycerol was investigated on catalysts with general formula Ni(12 wt.%)-La2(Ce1-xZrx)2O7 (x = 0, 0.5, 1). The catalysts were prepared by the polymerized complex method based on the Pechini-type reaction route and characterized by a variety of physical and spectroscopic techniques. Samples were calcined in air at 850 °C for 4 h. All catalysts showed a well-defined NiO phase and a mixed oxide with a general formula A2B2O7 (A: La; B: Ce and/or Zr). NiO was completely reduced to metallic Ni on all catalysts under pure H2 at 650 °C. Ni reducibility is favored by the presence of Ce. Redox properties of Ce can also explain a synergetic effect leading to the higher basicity of the catalyst containing Ce and Zr (x = 0.5). Catalytic tests were performed at 650 °C by feeding the fixed-bed tubular reactor with a crude glycerol:water solution containing 30 wt% glycerol. The best results were achieved on the catalyst displaying the highest basicity (Ni-La2(Ce0.5Zr0.5)2O7 both under steam and oxidative reforming conditions. Removal of carbon and alkali metals by simple procedures allows to a significant recovery of the initial catalytic activity without changes in their chemical and phase structure.

The gas-phase acidity of CF3OH was calculated using density functional methods (B3LYP, B3PW91). The best value obtained, ΔHacid0 = 328.9 kcal mol−1, agrees with experiment (329.8 ± 2.0 kcal mol−1. This acidity was employed to determine the CF3OH bond strength, using the same thermodynamical cycle as in the experimental work. Both methods give lower values than the experimentally derived one. Comparison of the calculated values in the thermodynamical cycle with experiment shows that the B3PW91 results are within the error bars or slightly outside them for all the reactions except the thermal decomposition of CF3OOCF3. The results suggest that the experimental OO bond dissociation energy of CF3OOCF3 has been overestimated. Using the experimental value of the enthalpy of formation of H+, the B3PW91 OH bond strength, 118.0 ± 0.3 kcal/mol, agrees with the G2 value, 119.4 ± 0.9 kcal/mol, but is still lower than the experimentally derived one, 124.7 ± 3.6 kcal/mol. In this work, we study the competence between the reactions of hydrogen and methyl scission during thermal cracking and combustion of propane, the emergence of the two isomers of the propyl radical, n-propyl and i-propyl, and their subsequent b-scission reaction to ethene and methyl radical. The purpose of the study was to analyze the accuracy of density functional (DFT) methods as applied on this relatively well-known subset of the reactions implied in the production of propylene oxide from propane and propene. Conventional (B3LYP, B3PW91) and state-of-the-art (PBE0, M06, BMK) DFT methods were employed, and their accuracy checked against experimental data and calculations performed using model chemistries (complete basis set CBS-4M, QB3, and APNO, and G4 methods) and ab initio methods (MP2, CCSD(T) with a large 6-311 ??G(3df,2pd) basis set). The results obtained at the BMK level for the thermodynamics of the reactions are closer to experimental data than those afforded by any other DFT method and very similar actually to CBS or CCSD(T) results, even if a medium size basis set is used. Activation energies determined using twoand three-parameter Arrhenius equations are also very good, but the preexponential factors are incorrect. Tunneling and internal rotation corrections must be applied to obtain semiquantitative results.

Diffusion Monte Carlo (DMC) and Reptation Monte Carlo (RMC) methods, have been applied to study some properties of the NaK molecule. Hartree-Fock (HF), Density Functional (DFT) and single and double configuration interaction (SDCI) wavefunctions with a valence quadruple zeta atomic natural orbital (VQZ/ANO) basis set were used as trial wavefunctions. Values for the potential energy curve, dissociation energy and dipole moment were calculated for all methods and compared with experimental results and previous theoretical derivations. Quantum Monte Carlo (QMC) calculations were shown to be useful methods to recover correlation in NaK, essential to obtain a reasonable description of the molecule. The equilibrium distance—interpolated from the potential energy curves—yield a value of 3.5 Å, in agreement with the experimental value. The dissociation energy, however, is not as good. In this case, a conventional CCSD(T) calculation with an extended aug-pc-4 basis set gives a much better agreement to experiment. On the contrary, the CCSD(T), other MO and DFT methods are not able to reproduce correctly the large dipole moment of this molecule. Even DMC methods with a simple HF trial wavefunction are able to give a better agreement to experiment. RMC methods are even better, and the value obtained with a B3LYP trial wavefunction is very close to the experimental one.

La grasa vacuna (BT) es un material graso de alta disponibilidad y relativo bajo costa en Uruguay, motivo por el cual se ha destinado tradicionalmente a la industria alimentaria, pese a que su composici6n en acidos grasos Ie confiere algunas propiedades fisicoquimicas y nutricionales adversas. Numerosos antecedentes indican que entre los posibles metodos para el mejoramiento de las propiedades de este material graso, su interesterificaci6n con aceites de origen vegetal mediante catalisis enzimatica resulta una alternativa muy versatil y funcional para la obtenci6n de un producto mejorado. En esta tesis se estudiaron los para metros del proceso de interesterificaci6n enzimatica de mezclas de la BT con dos aceites vegetales de particular interes producidos en nuestro pais, se determinaron los cambios en la composici6n de los triacilgliceroles de la mezcla y en varias propiedades fisicoquimicas vinculadas a la funcionalidad de los productos obtenidos para diferente tipo de usos en la industria alimentaria. Para ello se identificaron dos aceites de producci6n creciente en nuestro medio como los mas atractivos para destinar a este proceso: el aceite de girasol de alto oleico (HOSFO) y el aceite de salvado de arroz (RBO) dado que, ademas de que no existen antecedentes sobre el uso de los mismos para este fin, poseen una composici6n y propiedades muy diferente entre si y muy particulares. EI HOSFO se ha ido introduciendo en forma creciente en la regi6n y constituye un aceite muy valorado desde el punta de vista nutricional por su alto contenido en acidos grasos monoinsaturados (-88% de ac. oleico), 10 que ademas Ie confiere una alta estabilidad oxidativa. EI RBO es un aceite producido tradicionalmente en nuestro pais como subproducto de la industria arrocera, es de los menos conocidos en la regi6n y posee varias caracteristica diferenciales, como su alto contenido de acidos grasos saturados (ac. palmitico -18%) y su elevado contenido de insaponificables, entre los que se destacan tocoferoles, tocotrienoles y los orizanoles, todos de elevado valor nutricional. Se utilizaron mezclas de BT con HOSFO 0 con RBO en diferentes proporciones (10 a 50% de aceite) y como catalizador para las interesterificaciones se utiliz6 la enzima comercial Lipozyme TL 1M (Themomices lanuginosus), adicionando un 10% en peso en relaci6n a la mezcla a interesterificar. Las incubaciones se realizaron en un agitador orbital a 200 rpm termostatizado a 60cC, durante un periodo de 24 h. Tanto las mezclas como los productos fueron caracterizados mediante diferentes analisis de rutina en el Lab. De Grasas y Aceites de la Facultad de Quimica (composici6n en acidos grasos por Ge, calorimetria diferencial de barrido (DSC), estabilidad oxidativa por Rancimat) y mediante metodos especificos que debieron ponerse a punto en el marco de esta tesis (analisis de triacilgliceroles por HPLC/ELSD, determinaci6n de los acidos grasos en la posici6n sn-2 por hidr6lisis con lipasa pancreatica, analisis de tocoles y orizanoles por HPLC, estudio de morfologia cristalina mediante microscopia de luz polarizada y analisis por difraccion de rayos X). Debe considerarse que solo la mezcla de los aceites con la BT presento varios aspectos ventajosos desde el punta de vista nutricional con respecto a la BT pura: mayor grade de insaturacion, menor concentracion de colesterol y presencia de componentes minoritarios valiosos como los antioxidantes naturales. La interesterificacion produjo cambios importantes en la composlclon de triacilgliceroles (TAG) de las mezclas, observandose para las mezclas con ambos aceites que en general disminuyo la concentracion de TAG tipo SSS (trisaturados) y se incremento la de los tipo SUU (monosaturado diinsaturado), dependiendo el grade de variacion de la proporcion y tipo de aceite en la mezcla. Estos cambios produjeron modificaciones en las caracteristicas de los termogramas de los productos obtenidos por DSC con respecto a los de las mezclas. Si bien en ambos casos los puntos de fusion total disminuyeron por efecto de la interesterificacion, los productos con HOSFO presentaron menor contenido de solidos que aquellos conteniendo el mismo porcentaje de RBO, como consecuencia del mayor aporte de acidos grasos saturados de este ultimo. T am bien en ambos casos, si bien con mas moderacion en aquellos conteniendo RBO, los rangos plasticos de los productos se desplazaron hacia temperaturas mas proximas a la ambiente, 10 que resulta interesante para su posible aplicacion como fases grasas para shortenings 0 margarinas. Las imagenes obtenidas por microscopia de luz polarizada mostraron que la BT cristaliza en una red cristalina densa de esferulitos y pequefias agujas de tamafio muy diverso. Si bien la adicion de aceite produjo la dilucion de esta microestructura y cierta reduccion en el tamafio de los cristales sin introducir cambios sustanciales en su morfologia, el proceso de interesterificacion modifico drasticamente sus caracteristicas. Los productos de interesterificacion, incluido el obtenido a partir de BT pura, presentaron cristales mas regulares y una cristalizacion mas homogenea que la de las mezclas originales. Los analisis de difraccion de Rayos-X mostraron tambien variaciones en la forma cristalina preferida por los productos, los que presentaron una mayor tendencia a cristalizar bajo la forma J3' que las mezclas. Esto tambien constituye un efecto favorable dado que la forma J3' es la deseable para grasas destinada a la industria alimentaria, dadas sus caracteristicas superiores de textura y f1uidez que las de la forma 13 (termodinamicamente mas estable), la cual suele conferir arenosidad y/o cerosidad a alimentos con alto contenido graso. Si bien el proceso de interesterificacion enzimatica en todos los casos repercutio negativamente sobre la estabilidad oxidativa de las mezclas estudiadas, mediante el estudio de diversos aditivos se identificaron algunos (como el acido citrico) capaces de corregir este efecto. Los resultados obtenidos en esta tesis permiten concluir que mediante la mezcla de BT con aceites como el HOSFO y el RBO producidos localmente y su posterior interesterificaci6n enzimatica es posible el mejoramiento de las caracteristicas fisicoquimicas y nutricionales de la BT de partida y sus mezclas. EI proceso estudiado presenta ademas una elevada versatilidad, pudiendo ajustarse las caracteristicas del producto en funci6n de los para metros del mismo, 10 que permite el disefio de fases grasas con diferentes propiedades segun el tipo de uso al que las mismas se destinen. Dado que esta alternativa no involucra el incremento del contenido de acidos grasos trans (TFA), a diferencia de la tradicional hidrogenaci6n de aceites, la misma resulta del mayor interes en un contexto donde la reducci6n en el contenido de TF A en las grasas comestibles es uno de los mayores desafios en la agenda de la industria alimentaria.

Major drawbacks for enzyme-catalyzed transesterification of vegetable oil triglycerides to produce biodiesel (esters of short chain alcohols) are the high concentration of alcohol in the reaction mixture and the deposition of the produced glycerol on the enzyme support. Although stepwise addition of alcohol to the reaction mixture solves the first problem, an effective way to remove glycerol from the reaction system is needed. In the present study the efficiency of three systems for removal of glycerol from the reaction mixture during the enzymatic synthesis of sunflower oil methyl esters was investigated. By coupling a single cold column to the reactor 87.6% of total glycerol produced by the reaction was removed, while 10.9% was still retained by the enzyme. The percentage of glycerol separated from the reaction system increased to 93.1% when a second separation column packed with Amberlite BD10DRY resin was included, reducing the percentage of glycerol retained by the enzyme to 5.8%. Finally, changing the geometry of cold separation column in which a conical decanter was used, the percentage of glycerol separated increased to 99.2%, while only 0.4% was retained by the enzyme. Results demonstrated that use of a convenient separation system such as those described before, glycerol produced during transesterification of sunflower oil can be efficiently removed from the reaction mixture. In this way the well-documented inhibitory effects of the glycerol product are controlled and enzymatic catalysis remains fully functional

Entre las principales ventajas del Testo 270 como método rápido para el control de aceites de fritura, se destacan el amplio rango de temperatura de empleo y la facilidad de manejo. Su principal desventaja radica en la necesidad de calibrarlo, por el usuario cada 30 días con un aceite de referencia con una vida útil de 60 días después de abierto su envase y por el proveedor anualmente, lo que conlleva costos adicionales que deben tenerse en cuenta. Para evaluar su eficiencia, se realizaron medidas con dicho dispositivo calibrado correctamente y con una o ambas calibraciones obsoletas. Se evaluaron aceites de descarte de fritura provenientes de diversos locales comerciales uruguayos y aceites termoxidados. Se concluye que para utilizar el Testo 270 para el control de aceites de fritura es muy importante realizar adecuadamente y con la frecuencia recomendada por el fabricante ambas calibraciones a los efectos de obtener valores confiables.

Extra virgin olive oil is recognized as a very stable oil because of its composition in fatty acids and its content in natural antioxidants (tocopherols and polyphenols). In the bibliography are works that address different aspects of this stability, from the duration of its useful life to its performance in the frying of foods. Some works also link their stability with the content of natural antioxidants. For example, Franco et al. (2014) studied the content of phenols and their antioxidant capacity in olive oils of seven different varieties. Baccouri et al. (2008) found a good correlation between the oxidative stability (measured in Rancimat) of the oils studied and the concentration of total phenols and tocopherols.

Abstract
A summary of the resource.
Three stages of post-harvest maturity were defined for a batch of Hass avocados: green, optimum and mature. Oil extraction was performed for each stage in an Abencor pilot plant used for extracting virgin olive oil. Peeled and removed the pit of the fruit by hand, and then the pulp was ground to obtain a paste. The malaxation of the paste was carried out at 40 °C for 6 hours, with addition of water in a ratio 5:1 paste:water at 4,5 hours of mixing. The paste was centrifuged at 3500 rpm for 2 minutes. The influence of the degree of maturity for a batch of Hass avocado on the recovery (%) and the quality of oil was studied. No differences were found between the values obtained (approximately 70%). However, it was established that the extraction should be performed on avocados in the optimal stage of maturity. The content of 18:1 n-9 increased and the amount of 16: 0 decreased as fruit maturity advanced. The acidity (%) and the oxidative deterioration of the oil measured as K232 increased with the degree of maturity of the fruit, while the K268 did not change.
