For the first time a critical analysis of the influence that four different graphene oxide reduction methods have on the electrochemical properties of the resulting reduced graphene oxides (RGOs) is reported. Starting from the same graphene oxide, chemical (CRGO), hydrothermal (hTRGO), electrochemical (ERGO), and thermal (TRGO) reduced graphene oxide were produced. The materials were fully characterized and the topography and electroactivity of the resulting glassy carbon modified electrodes were also evaluated. An oligonucleotide molecule was used as a model of DNA electrochemical biosensing. The results allow for the conclusion that TRGO produced the RGOs with the best electrochemical performance for oligonucleotide electroanalysis. A clear shift in the guanine oxidation peak potential to lower values (~0.100 V) and an almost two-fold increase in the current intensity were observed compared with the other RGOs. Abstract
A summary of the resource.
By means of first-principles calculations, we investigate the reduction chemistry of monolayer boron nitride (2D BN) and graphene. The adsorption of alkali atoms dramatically increases the reactivity of 2D BN, Li being the most powerful agent and closely followed by K and Na. Interestingly, the reactivity enhancement in 2D BN is 3.6 times larger in comparison with graphene. On average, Li adsorption enhances the adsorption energies by 66.0 and 18.2 kcal/mol for 2D BN and graphene, respectively. The higher increment in adsorption energies observed for 2D BN can be attributed to the significant difference in alkali charge donation to pristine and functionalized 2D BN. In contrast, for graphene, this difference is much smaller. The increase of reactivity strongly depends on the functional group added as well as on the alkali used. The reduction chemistry facilitates the addition of functional groups to 2D BN which cannot be added without the presence of alkalis. We conclude that reduced 2D BN is more reactive than reduced graphene when alkalis act as reducing agents. We expect that this work will motivate new investigations to attain the covalent functionalization of 2D BN.

Food waste is an issue of global concern. Particularly troublesome is the amount of waste at the consumer level, and a need exists for interventions that draw on a deeper understanding of the underlying factors leading to food waste. The research aims were to (1) study the potential of an information-based strategy to reduce household food waste, (2) explore the impact of information on attitudes towards food waste, and (3) explore the reasons underlying perceived changes in household food waste. A controlled randomized trial was conducted, and participants were assigned to one of two groups (Informed, Control) with data collection at two time points (Baseline, Time 2). At both time points, all participants completed a standardized quantitative survey on food disposal in the past 7 days. At baseline, after the food disposal survey was completed, participants in the informed group read a text about food waste and completed a highlighting task. The key result was a significant reduction in household food waste approximately fifteen days after the Baseline, which was found for both experimental groups, albeit slightly larger in the Informed group. This was found despite the Control group having the same attitudes, on average, to engaging in food waste reduction behaviors. To successfully reduce food waste, participants bought less food, used leftover and suboptimal foods, reduced portion size, checked stored foods to use them before expiration, and planned meals. The main reason for not reducing food waste was related to the belief that household food waste was minimal or inexistent. Overall, the research further stresses the potential of information strategies to achieve food waste reductions at the household level and discusses cognitive dissonance as a possible underlying mechanism.

Abstract
A summary of the resource.
The reference interval for glycated haemoglobin in 174 apparently healthy individuals from Montevideo City(mean 94 |b SD 7umol fructose/10mg haemoglobin) was determined using the thiobarbituric acid spectrophotometric method. In diabetic patients (n=222) the mean was significantly higher than in the control group(mean 117 |b SD 19umol fructose/10 mg haemoglobin). The spectrophotometric method for the determination of glycated haemoglobin was compared to a microcolumn kit method (Boehringer |b Mannheim |b FRG). The correlation for glycated haemoglobins was acceptable (r= 0.85; n=44; P<0.001). The colorimetric reference interval for glycated haemoglobin was converted to an equivalent value in the chromatographic method |b expressed as per cent HbA (mean 8.7 |b SD 1.2) |b using the least squares regression line (y=0.603+0.0857x)

<p>As nutritional recommendations change, new marketing strategies are expected to appear on food labels to convey the idea that products are healthful and aligned with the recommendations. In this context, the objective of the study was to evaluate the effect of references to ‘home-made’, images of natural foods and nutritional warnings on consumers’ healthfulness perception and purchase intention of labels of ultra-processed products with excessive content of nutrients associated with non-communicable diseases (NCDs). The study was conducted with 790 Uruguayan Facebook users (65% female, 18–89 years old), diverse in terms of educational and<br />socio-economic levels. A choice experiment involving labels of four categories of ultra-processed products (burgers, cookies, instant soup and instant vanilla milk custard) was implemented. For each product category, eight sets of two labels differing in the presence of references to home-made, images of natural foods and nutritional warnings were designed. Half of the participants were asked to indicate the healthier product,<br />whereas the other half were asked to indicate the product they would purchase. Data were analyzed using mixed logit models. The inclusion of references to home-made and images of natural foods on the labels had a positive effect on purchase intention and tended to create the belief that products were healthful. Nutritional warnings decreased healthfulness perception and discouraged participants’ choice. In three of the product categories images of natural foods created a health halo that reduced the effect of nutritional warnings on product choice. Results from the present work suggest the need to develop stricter labelling regulations for ultra-processed<br />products with high content of nutrients associated with NCDs.</p>

Members of the Fusarium graminearum species complex (FGSC) are the primary cause of Fusarium head blight (FHB) of wheat, and frequently contaminate grain with trichothecene mycotoxins that pose a serious threat to food safety and animal health. The species identity and trichothecene toxin potential of 151 FGSC isolates collected from wheat in Uruguay were determined via multilocus genotyping. Although F. graminearum with the 15ADON trichothecene type accounted for 86% of the isolates examined, five different FGSC species and all three trichothecene types were identified in this collection. This is the first report of Fusarium asiaticum, Fusarium brasilicum, Fusarium cortaderiae, and Fusarium austroamericanum from Uruguay. In addition, we observed significant (P b 0.001) regional differences in the composition of FGSC species and trichothecene types within Uruguay. Isolates of F. graminearum with the 15ADON type were the most prevalent in western provinces (95%), while F. asiaticum (43%) and the NIV type (61%) predominated in the new wheat production zone in Cerro Largo along Uruguay's eastern border with Brazil. F. graminearum isolates (15ADON type) were significantly (P b 0.005) more aggressive on wheat than were isolates from the other species examined (NIV or 3ADON types). However, F. graminearum isolates (15ADON type) were significantly (P b 0.05) more sensitive to tebuconazole than isolates from other species (NIV type). These results document substantial heterogeneity among the pathogens responsible for FHB in Uruguay. In addition, the regional predominance of the NIV trichothecene type is of significant concern to food safety and indicates that additional monitoring of nivalenol levels in grain may be required

Ring-opening of epoxides with boron trifluoride yielding syn-fluorohydrins was investigated using density functional methods (PBE) and two different basis sets (6-31G(d) and 6-311++G(2df,2pd), both in gas phase and simulating the bulk solvent using the PCM method. The only mechanism previously suggested for the formation of fluorohydrins from epoxides is an SN1-like one. We propose in this work a new mechanism, in which bond breaking in the epoxide is coupled to fluorine transfer, yielding the fluorohydrine with retention of configuration through a single transition state

Introducción: el consumo de cafeína es un hábito extendido a nivel mundial, destacándose el mate en los países del cono sur como una fuente importante de ingesta.<br />Objetivos: valorar la ingesta de cafeína en el embarazo, el aporte de las diferentes fuentes de ingesta y su relación con el peso al nacer.<br />Metodología y población: se realizó un estudio observacional, analítico de corte transversal que incluyó 240 puérperas y sus recién nacidos sanos de 35 semanas de gestación o mayores.<br />Resultados: la media de edad materna fue de 24,96 (DE=6,01), Estaban casadas o convivían con su pareja 179 mujeres (74,58%). De ellas 67 (28,03%) eran primigestas. La media de controles del embarazo fue 7,31 (DE=3,32) y nacieron por cesárea 70 (29,17%). Las características de los recién nacidos reflejan los criterios de inclusión referidos: 35 semanas de gestación o mayores, vigorosos, internados junto a su madre luego del nacimiento. Durante todo el embarazo la fuente principal de cafeína fue la ingesta de mate. La media de consumo de cafeína fue de 273,99 mg/día; el consumo de mate es la principal fuente de cafeína con una media de 240 mg/día, aportando un 85% de la ingesta diaria de cafeína. Se observó consumo de cafeína mayor de 300 mg/día en 77 embarazadas, 32% de la muestra. La ingesta de cafeína mayor a 300 mg/día se asocia al nacimiento de un niño pequeño para la edad gestacional, la ingesta de 100 mg de cafeína por día disminuye el peso al nacer en 38 g, independientemente del índice de masa corporal y el hábito de fumar.<br />Conclusiones: el consumo de cafeína es elevado en las embarazadas en Uruguay, superando los 300 mg diarios en 32% de la muestra. La ingesta de mate es la fuente principal de cafeína en esta población. El consumo de cafeína mayor a 300 mg diarios se asocia a mayor riesgo de recién nacidos pequeños para la edad gestacional. En vistas a la evidencia científica actual debería implementarse una adecuada información para lograr un descenso del consumo de mate y cafeína durante la gestación.

El propóleos y el orujo de uvas son productos reconocidos por contener antioxidantes. Un extracto elaborado en base a ellos podría ser de gran aplicabilidad en las industrias alimenticia (alimentos funcionales, nutracéutico), farmacéutica (fitofármacos), y/o de aditivos preservantes de la oxidación. El trabajo de investigación presentado en esta Tesis de Doctorado fue basado en la necesidad de generar conocimiento en cuanto a las características fisicoquímicas, farmacológicas y biológicas de esos dos productos naturales uruguayos. Con el mismo se aportó nuevo conocimiento científico en la aplicación de metodología in silico al estudio de mezclas complejas de fenoles en propóleos y orujos de uvas que se complementó con las de laboratorio húmedo o in vitro. Los fenoles, moléculas antioxidantes detectadas en los propóleos y orujos de uvas, atrapan radicales libres modulando el estrés oxidativo celular. Presentan en su estructura grupos aromáticos hidroxilados e intervienen en los mecanismos redox de vegetales y animales, promoviendo un descenso de la cantidad de especies reactivas de oxigeno (ROS). En los propóleos se han identificado flavonoides (como flavonas y flavanonas), ácidos aromáticos y sus ésteres, aldehídos aromáticos, cumarinas y triglicéridos fenólicos. Los orujos de uvas contienen estilbenos, antocianinas, taninos, catequinas, flavanoles, flavonoles y flavonas. El perfil estructural es complementario de tal manera, que un “cóctel polifenólico” elaborado a partir de propóleos y orujos de uvas uruguayos, contendrá un amplio rango de estructuras fenólicas que sirvan para desarrollar un extracto patronizado en cuanto a sus capacidades como antioxidante y antiinflamatorio. Dado que es característica en los productos naturales la alta variabilidad en sus contenidos de fenoles, cualquier potencial aplicabilidad industrial implica la necesidad de analizarlos cualitativa y cuantitativamente así como su funcionalidad. Para lograrlo, se realizaron muestreos, se optimizaron los procesos extractivos, se analizaron los contenidos fenólicos totales, la capacidad antioxidante por los métodos DPPH y ABTS, se realizó la dilucidación de sus huellas dactilares de protón por resonancia magnética nuclear (RMN 1H), se estudió la reactividad de los grupos OH y la energía de disociación del enlace O-H de los polifenoles como formadores del radical libre mediante química cuántica DFT (M06-2X/6-311+G(3df,2p) y G4. Phenolic compounds play a major role in the intensity and characteristics of wine astringency. However, studies involving commercial wine samples are still scarce. The aim of the present work was to study the relationship between astringency and phenolic composition of commercial Uruguayan Tannat wines using boosted regression trees (BRT), a novel predictive method. Forty commercial Tannat wines were evaluated by a trained sensory panel (9 members), who assessed their total astringency intensity using time-intensity (TI) and described their astringency sub-qualities using a check-all-that-apply (CATA) question composed of sixteen terms. The polyphenolic profiles of the wines were determined by HPLC-MS and conventional oenological parameters were also obtained. Fifty BRT models with different partitions of the data in training and test sets were built for astringency maximum intensity (Imax) and for the frequency of use of the 16 astringency sub-qualities considered in the CATA question. As predictor variables, 84 phenolic compounds and oenological parameters were considered for all BRT models. Both strong and weak predictive models were obtained for each response variable. Predictive accuracy was much higher for astringency intensity than for the frequency of mention of astringency sub-qualities. Still, the BRT models allowed to point out to some compositional variables most likely involved in wine astringency perception. Total tannin concentration (chemically determined) was the most relevant explanatory variable for sensory astringency, while flavan-3-ols were the individual phenolic compounds with the highest contribution to astringency, particularly some dimers, trimers and the sum of non-galloylated tetramers. However, the effect of these predictors differed according to the astringency sub-quality considered as response. As expected, non-linear relationships between phenolic compounds and astringency were found. These results contribute to the understanding of the influence of phenolic composition on wine astringency and stress the potential of BRT models for identifying the compounds responsible for this complex sensory characteristic.

<p>Baccharis dracunculifolia DC. and Baccharis microdonta DC. (Asteraceae) are woody species morphologically similar growing in Uruguay, where not taxonomists people often confuse them in field conditions. As the essential oil of B. dracunculifolia (‘vassoura’ oil) is highly prized by the flavor and fragrance industry, the correct differentiation of the two species is a key factor in exploiting them profitably and reasonably. To differentiate both Baccharis species, in this work their volatile expression profiles were studied as an alternative tool to<br />determine authenticity and quality. Volatile organic compounds (VOCs) were monthly extracted during an entire year from aerial parts of wild populations by simultaneous distillation extraction (SDE), and studied by gas chromatography/mass spectrometry (GC/MS; identification) and conventional gas chromatography (GC-FID; component abundances determination). Enantioselective gas chromatography/mass spectrometry (Es-GC/MS) was applied in the search of parameters able to ensure genuineness of each species extract. Qualitative VOCs profiles were found to be similar for both species, being β-pinene, limonene, spathulenol, caryophyllene oxide, and viridiflorol the main components. However, the abundance of those VOCs were two to ten times higher in B.<br />dracunculifolia than in B. microdonta during the year of study. These Baccharis spp. showed species-specific patterns of VOCs expression according to the seasonality, and interestingly, oxygenated compounds (transpinocarveol and myrtenal) increased their abundances at full-flowering stages. The enantiomeric distribution of selected monoterpenes (α- and β-pinenes, limonene, linalool, terpinen-4-ol, and α-terpineol) presented differential values for both Baccharis spp., meaning that Es-GC might be a useful tool for differentiating chemically both species in Uruguay for genuineness determination purposes.</p>
