Food packaging plays a major role in attracting consumer attention and generating sensory and hedonic expectations; which could affect their product perception and purchase decisions. In the present study word association and conjoint analysis were used to study the influence of package shape and colour on consumer expectations of milk desserts. Six images of milk dessert packages with different colour and shape were presented to 105 consumers, who were asked to complete a word association task and to score their expected liking and willingness to purchase the desserts. Both package shape and colour affected consumers expected liking scores and their sensory expectations regarding the desserts. Consumers associations were mainly related to sensory characteristics. Both methodologies provided an interesting insight on the consumer’s expectations generated by the packages and could be useful in order to design packages which create appropriate expectations regarding the product.

The proliferation of extra virgin olive oil produced in Uruguay makes necessary the study of Uruguayan consumers’ needs and expectations for olive oils. In this context, the aims of the present work were to gather information about consumers’ perception of olive oil and to compare those perceptions with those of common vegetable oils commonly found in Uruguayan market. A total of 168 consumers completed a word association task about five types of vegetable oil: olive oil, corn oil, sunflower oil, soybean oil and rice bran oil. Consumers were asked to write down the first four images, associations, thoughts or feelings that came to their minds when thinking of each of the oils. The different associations were grouped into eighteen categories and the frequency of mention of each of them was determined for each of the evaluated oils. The evaluated vegetable oils raised clearly different associations in consumers’ mind, suggesting that the personal constructs behind their consumption might differ. Olive oil was perceived as clearly different from the other oils and was described using categories such as Dressing, Good quality, Positive effect on health, and Positive feelings. On the other hand, soybean oil showed the opposite profile, being associated with the categories Bad quality, Price, Negative feelings. The other three oils were perceived as multipurpose common oils and were associated with categories such as Frying, Ingredient in food products, Nutritional content, Consumption occasions, Packaging material, Raw material, Appearance and Texture. Consumption frequency of olive oil strongly affected consumers’ associations of this product, suggesting the importance of familiarity and previous experiences with the product in determining consumers’ perception. The findings of this qualitative study provide a valuable insight for developing marketing strategies for promoting the consumption of olive oil among Uruguayan consumers.

When developing new products to be used in honeybee colonies, further than acute toxicity, it is imperative to perform an assessment of risks, including various sublethal effects. The long-term sublethal effects of xenobiotics on honeybees, more specifically of acaricides used in honeybee hives, have been scarcely studied, particularly so in the case of essential oils and their components. In this work, chronic effects of the ingestion of Eupatorium buniifolium (Asteraceae) essential oil were studied on nurse honeybees using laboratory assays. Survival, food consumption, and the effect on the composition of cuticular hydrocarbons (CHC) were assessed. CHC were chosen due to their key role as pheromones involved in honeybee social recognition. While food consumption and survival were not affected by the consumption of the essential oil, CHC amounts and profiles showed dose-dependent changes. All groups of CHC (linear and branched alkanes, alkenes and alkadienes) were altered when honeybees were fed with the highest essential oil dose tested (6000 ppm). The compounds that significantly varied include n-docosane, n-tricosane, n-tetracosane, ntriacontane, n-tritriacontane, 9-tricosene, 7-pentacosene, 9-pentacosene, 9-heptacosene, tritriacontene, pentacosadiene, hentriacontadiene, tritriacontadiene and all methyl alkanes. All of them but pentacosadiene were up-regulated. On the other hand, CHC profiles were similar in healthy and Nosema-infected honeybees when diets included the essential oil at 300 and 3000 ppm. Our results show that the ingestion of an essential oil can impact CHC and that the effect is dose-dependent. Changes in CHC could affect the signaling process mediated by these pheromonal compounds. To our knowledge this is the first report of changes in honeybee cuticular hydrocarbons as a result of essential oil ingestion

Food waste is a major barrier to a sustainable society. Cleaner production is most effectively approached by amongst others avoiding waste. A lot of food waste is due to consumer perception of sub-optimality of foods, and supermarkets can offer ‘imperfect’ products to consumers at a reduced price in order to fight food waste. However, little is known about how this is perceived by consumers and whether it backfires as negative associations about the store, this is particularly under-researched for consumers in the global south. An online experimental survey was conducted in Uruguay to qualitatively explore consumer’s associations with stores selling suboptimal food, and to quantitatively compare the associations generated by three types of sub-optimality. Findings revealed that associations were related to four main dimensions. Consumers majorly thought of which retail practices and personnel behaviour cause the sub-optimality and the relationship between consumers and company, as well as which signal the products send, and whether or not they consider choiceof the item. Few positive associations were mentioned. However, they emerged more often for fresh produce suboptimal in appearance, particularly when price is reduced, and among deal prone consumers. Associations on relationship and signal were primarily negative and in reaction to food with package damage. Associations on choice were more frequent for products nearing expiration date. Price reduction appeared to send a mixed signal to consumers. Results suggest that retailers should improve their overall image and communicate their precise reason for offering suboptimal food, in order to avoid a negative impact on store image.

We have employed density functional theory to study new subphthalocyanine based receptors which feature the 1,4-dithiino and norbornadiene linkages. The latter linkage significantly improves the host binding capabilities with respect to subphthalocyanine based receptors. Moreover, the interaction energy of the new subphthalocyanine–norbornadiene receptor is larger than that computed for the C60H28 buckycatcher. The dimerization of the new receptor forms a hydrogen-bonded capsule. Through a combination of non-bonded interactions, this capsule can bind C60 with an unprecedented affinity. Due to the exceptional stability of this capsule, it is our hope that it can be used for other guests besides fullerenes.

The Pechini sol-gel method has been employed for the synthesis of pure and (181Hf→)181Ta-doped Y2O3 nanopowders. We performed a structural characterization from the micro to the subnanoscopic scale by means of scanning electron microscopy, energy dispersive x-ray spectroscopy, x-ray diffraction, and time-differential perturbed γ–γ angular correlation (PAC) spectroscopy. The results show the formation of the cubic bixbyite structure after a thermal treatment at 1473 K. For the synthesized 181Ta-doped Y2O3, the PAC experiments demonstrate that the impurities are mainly located at both substitutional cationic sites of the bixbyite structure. The experimental investigation was complemented by performing first-principles electronic structure calculations for Ta atoms localized at the two cationic sites of the Y2O3 semiconductor structure, which allow the study of the structural and electronic modifications induced in the host system when the impurities are introduced. These calculations confirm that the measured electric-field gradients for the synthesized 181Ta-doped Y2O3 correspond to double-ionized impurities located at substitutional defect-free cationic sites of the bixbyite host structure and indicate the site occupancy preference for 181Hf(→181Ta) doping. The behaviour of the site preference of 181Ta impurities with temperature is also discussed. In addition to an extensive structural and electronic characterization of pure and Ta-doped Y2O3 semiconductor, our results demonstrate that the Pechini sol-gel process is an affordable and effective way to successfully synthesize these PAC substitutional doped samples.

The infl uence of key parameters in the kinetics of the transglycosylation system catalyzed by Aspergillus oryzae β -galactosidase when applied to the synthesis of galactosyl-ethylene glycol and galactosyl-glycerol has been studied. It was found that both acceptors were inhibitors of the enzyme, causing a decrease of 9 and 68 fold in enzyme catalytic effi ciency in the presence of 4.0 M ethylene glycol and glycerol, respectively. The effect was characterized as “ substrate-like inhibition ” , suggesting the formation of a nonproductive enzyme-acceptor complex. Inhibition constants for both acceptors were determined as 618 mM for ethylene glycol and 244 mM for glycerol.

A succinate dehydrogenase mutant strain of Rhizobium meliloti was isolated after nitrosoguanidine mutagenesis. It failed to grow on succinate, glutamate, acetate, pyruvate, or arabinose but grew on glucose, sucrose, fructose, and other carbohydrates. The mutant strain showed delayed nodulation of lucerne plants, and the nodules were white and ineffective. A spontaneous revertant strain of normal growth phenotype induced red and effective nodules.

Sugar sweetened beverages are one of the main sources of added sugar in the diet. Therefore, sugar reduction in these products could contribute to the prevention of various negative health conditions, such as obesity, diabetes and cardiovascular diseases. In this context, the present work aimed to study consumer sensory and hedonic perception towards sugar reduction in fruit nectars. Five sequential difference thresholds for added sugar in three fruit nectars (passion fruit, orange/passion fruit and orange/pomegranate) were determined based on consumer perception. In each test, difference thresholds were estimated using survival analysis based on the responses of 50 consumers to six paired-comparison tests. Each pair was composed of two samples, a control nectar and a sample that was reduced in added sugar from the control. Consumers were asked to try each of the samples in each pair and to indicate which was sweeter. Then, consumers' sensory and hedonic perception of nectar samples was evaluated for each nectar using a 9-point hedonic scale and a check-all-that-apply question. Difference thresholds were estimated in 4.20%–8.14% of the added sugar concentration of the nectars. No significant differences in overall liking were detected for fruit nectars with 20% sugar reduction. However, large heterogeneity in consumer hedonic reaction towards sugar reduction was found, which should be taken into account in the design of sugar reduction programs. Consumer hedonic reaction towards sugar reduction was product dependent. Results from the present work reinforce the idea that gradual sugar reduction in sugar sweetened beverages is a feasible strategy that could contribute to reduce the sugar intake of the population.

Reducing the sugar content of processed products has been claimed to be one of the most efficient strategies for decreasing sugar intake. The present work aimed at studying the influence of sugar reduction on the dynamic sensory profile and consumers' liking of probiotic chocolate-flavored milks using a novel temporal methodology, and to evaluate two alternatives (vanilla flavor and thaumatin) to attenuate the sensory changes caused by sugar reduction. Probiotic chocolate-flavored milks were formulated with different reductions in added sugar (0, 20, 40 and 60%). Vanilla flavor and thaumatin were added to the sugar-reduced samples at two concentrations. Samples were evaluated by trained assessors using Temporal check-all-that-apply (TCATA). Additionally, consumers evaluated the dynamic sensory profile of a subset of the samples using TCATA and indicated their overall liking using a 9-point hedonic scale. Results from the present work showed that the main effect of sugar reduction on the dynamic sensory profile of the probiotic chocolate-flavored milks was related to changes in sweetness, bitterness and thickness. A reduction in added sugar of 20% led to changes in sweetness intensity, which were perceived by both trained assessors and consumers. However, consumers' liking was not significantly affected by sugar reduction up to 40%. The addition of vanilla flavor at suprathreshold concentrations was not efficient in increasing sweetness perception in chocolate-flavored milks with the lowest sugar reduction percentage, suggesting that it may not be a feasible alternative for reducing sugar in this product category. These results suggest that in many situations sugar content of food products could be decreased without a relevant impact on consumers' sensory and hedonic perception.

<p>Sugar intake among children has raised concern worldwide as it exceeds nutritional recommendations.<br />Sugar contributes to the daily energy intake, without providing additional nutritional value and is associated with several negative health outcomes. Sugars added to foods during industrial processing have been identified as the main source of sugar in children's diets. The present work critically discusses the role of the food industry in contributing to children's excessive sugar intake worldwide, and the strategies that have<br />been encouraged or implemented to reduce the sugar content in products targeted at children. The risk of the current sugar reduction practices in products targeted at children is discussed based on recent scientific evidence. Children's heightened preference for sweetness may not justify the availability of highly sugary products for children. Although research suggests that children readily accept less sweet products, there is still<br />some wariness in the food industry to reduce sweetness intensity. This has strengthened the use of non-nutritive sweeteners (NNS), focusing on maintaining the sweetness level.<br />However, emerging evidence suggests that this may not be the best approach.</p>

A summary of the resource.
The conformational, magnetic and electronic study of one and two sulfur atoms doping on multivacancy graphene systems, using first principles calculations is presented. The location for the addition of the sulfur atoms is ruled by the presence of pentagonal figures in the optimized multivacancy graphene system or, in case of the absence of such figures, by the concave four membered structures in the vacancy. The electronic structure and the magnetism in these systems are strongly affected by the cancellation of dangling bonds due to the inclusion of sulfur atoms. Finally, it was possible to demonstrate that the inclusion of one and even a second sulfur atoms in the multivacancy graphene systems is favorable.

Semiconductor nanoparticle-mediated photocatalysis is an attractive option for water decontamination, being the semiconductors as SnS2 with a bandgap in the visible region, the most promising materials. In the present work, we evaluated the influence of important parameters in the photocatalytic application of SnS2 nanoparticles. Our results show that the presence of citric acid (used as a capping agent) restricts the formation of hexagonal nanoparticles. We also demonstrated that using thioacetamide as a sulfur source results in smaller nanoparticles than thiourea, 24.0 nm and 616 nm respectively. Moreover, small hexagonal nanoparticles play a key role in the photocatalytic activity of SnS2 nanoparticles. Compared with TiO2 performance, SnS2<br />nanoparticles exhibited faster kinetics for methyl orange (MO) degradation, Kapp = 0.0102 min−1, and 0.029 min−1, respectively. We proved that SnS2 is capable of breaking the azo bond of methyl orange by direct reduction. Furthermore, our analyses indicate that SnS2 nanoparticles do not degrade atrazine and imazapic, but the photocatalytic route of metribuzin competed with photolysis, resulting in a particular transformation product that was not obtained with light irradiation only. We demonstrated that SnS2 nanoparticles have high bond selectivity for azo breaking. Furthermore, they represent an advance for the development of designed materials (such as heterostructures), where the properties of SnS2 can be tuned.

En esta tesis se prepararon y caracterizaron diferentes materiales de carbono para ser usados como electrodos de supercondensadores. Los supercondensadores son un tipo de condensador eléctrico con una capacidad eléctrica muy superior a cualquier otro tipo de condensador. En su constitución básica, están formados por dos electrodos (separados por un aislante eléctrico) y un electrolito iónico. Los desafíos actuales en el desarrollo de supercondensadores se focalizan en aumentar la densidad de energía del dispositivo. Por el lado de los materiales de electrodo, esto se puede lograr con el desarrollo de materiales que tengan una elevada capacidad eléctrica específica. El trabajo experimental de esta tesis se focalizó en la preparación y caracterización de carbones en polvo activados, y monolitos de carbón obtenidos a partir de diferentes cortes (longitudinal al eje de crecimiento del tronco del árbol y transversal al eje del tronco) de madera Eucaliptus Grandis. Los materiales fueron preparados mediantes diferentes métodos y condiciones de activación (generación de porosidad) y fueron caracterizados mediante análisis textural, análisis elemental, Desorción Térmica Programada (TPD), difracción de rayos X (DRX), microscopía electrónica de barrido (SEM), medidas de conductividad eléctrica y electroquímicas. Las caracterizaciones electroquímicas (curvas galvanostáticas de carga y descarga, voltametría cíclica e impedancia electroquímica) se llevaron a cabo utilizando una celda de laboratorio simétrica tipo Swagelok usando dos tipos de electrolitos: (i) solución acuosa H2SO4 2M (electrolito ácido) y (ii) Et4NBF4 disuelto en acetonitrilo 1M (electrolito orgánico). IV Los resultados obtenidos para los carbones en polvo indican que estos tienen áreas superficiales que varían en un amplio rango dependiendo del método y condiciones de preparación. De acuerdo con los resultados del TPD, el contenido de grupos funcionales oxigenados superficiales de los carbones varía también según el método y condiciones de preparación. La conductividad eléctrica de los materiales depende marcadamente de la temperatura máxima de preparación siendo prácticamente independiente del método o agente activante utilizado. Se determinó la existencia de una correlación directa de la capacidad eléctrica específica de los materiales con el área superficial y el contenido de grupos funcionales oxigenados superficiales determinados mediante TPD. Los mejores resultados en cuanto a capacidad eléctrica específica en electrolito ácido se determinó para el carbón activado con ZnCl2 a 900 °C seguido de una posterior oxidación con ácido nítrico. Se comprobó que la energía acumulada para un mismo carbón es mayor en el electrolito orgánico que en el electrolito ácido. El análisis de los monolitos demuestra que existe una incidencia directa de la anisotropía de la madera en las propiedades texturales, eléctricas y electroquímicas de los monolitos de carbón obtenidos. Los monolitos obtenidos a partir del corte transversal presentaron una estructura más abierta con mayor desarrollo de porosidad (la más alta obtenida para los activados con CO2), mayor capacidad eléctrica específica gravimétrica, mayor energía gravimétrica y mayor conductividad eléctrica. Sin embargo no se encontraron diferencias sustanciales en la capacidad y energía volumétrica para los dos tipos de monolitos estudiados. Los mejores resultados de capacidad eléctrica y energía acumulada obtenidos para los materiales de carbón preparados en esta tesis fueron mejores a los obtenidos para un carbón comercial de referencia y otros materiales similares reportados en la bibliografía.

The genus Cannabis contains specific substances called cannabinoids that are found in high concentrations in the flowers of non-pollinated female plants. Cannabidiol (CBD) and Δ9-tetrahydrocannabinol (Δ9-THC) are the two main bioactive substances in this group with medicinal potential. However, these substances are found in low concentrations in fresh flowers. The decarboxylation technique can be applied to fresh flowers to promote an increase in the levels of these substances. Extracts with high levels of cannabinoids and without organic solvent residues have high medicinal and cosmetic potential. The purpose of this work was to present the results of cannabinoid extraction using pressurized fluids from two varieties of flowers of the genus Cannabis. The extractions were conducted using pure supercritical carbon dioxide (scCO2) and with ethanol as a co-solvent, comparing the use of decarboxylation and winterization techniques. The chemical profiles of cannabinoids (CBD, Δ9-THC and cannabinol (CBN)) and the essential oils in the extracts and in fresh flowers were analyzed using different chromatographic techniques. The decarboxylation technique employed maximized the levels of the cannabinoids of interest. The Sovová model used in the adjustment of the experimental kinetic extraction curves was adequate and satisfactory.

Abstract
A summary of the resource.
The production manufacture of juices generates a large amount of waste consisting mainly of fruit peels. The peels are source of molecules such as coumarins and flavonoids. In this study, the peels of Citrus limonia, Citrus deliciosa, Citrus latifolia and Citrus sinensis were the raw material for supercritical fluid extraction. The Box- Behnken design was used to optimize the global yield in function of process variables. The chemical analysis of the extract was carried out by LC-MS and GC-MS. CFD was applied to the mass and momentum conservation equations in the study of supercritical extraction using citrus peels, which allowed the determination of unknown parameters of the bidimensional mathematical model. The flavonoids, nobiletin, sinensetin and tangeretin, as well as the coumarin, citropten, were identified in all species investigated. The maximum global yield obtained were 3.93 % for Citrus limonia, 4.18 % for Citrus deliciosa, 3.48 % for Citrus latifolia and 5.32 % for Citrus sinensis.

Chia (Salvia hispanica L) is recognized mainly by its oil quality and secondly by the mucilaginous fibre. In the last years, it has become a non-conventional protein source. Besides their nutritional quality, chia proteins show technofunctional properties that encourage their use in food industry. Among the functionality reported previously, superficial properties of chia proteins resulted particularly appropriate and comparable to those for amaranth protein isolates. The pH of the media used for chia proteins extraction from the chia seed flour affects their structural characteristics and profoundly influence their interfacial properties. This chapter deals with the study of both emulsion and foaming capacity of chia proteins isolated by alkaline extraction (at two different pH) followed by isoelectric precipitation at pH 4.5 and the description of the applied methodology. In addition, theory about the protein behaviour at interfaces and also colloidal destabilization process as well as mathematical models used for their characterization is deeply detailed. Since the highest solubility of chia proteins is achieved in alkali, both emulsifying and foaming activities were assayed at pH 8.5. In order to study formation and stabilization of these colloidal systems, chia protein concentration was low enough to allow the destabilization processes to be evaluated in a reasonable period of time.
