Sugar sweetened beverages are one of the main sources of added sugar in the diet. Therefore, sugar reduction in these products could contribute to the prevention of various negative health conditions, such as obesity, diabetes and cardiovascular diseases. In this context, the present work aimed to study consumer sensory and hedonic perception towards sugar reduction in fruit nectars. Five sequential difference thresholds for added sugar in three fruit nectars (passion fruit, orange/passion fruit and orange/pomegranate) were determined based on consumer perception. In each test, difference thresholds were estimated using survival analysis based on the responses of 50 consumers to six paired-comparison tests. Each pair was composed of two samples, a control nectar and a sample that was reduced in added sugar from the control. Consumers were asked to try each of the samples in each pair and to indicate which was sweeter. Then, consumers' sensory and hedonic perception of nectar samples was evaluated for each nectar using a 9-point hedonic scale and a check-all-that-apply question. Difference thresholds were estimated in 4.20%&ndash;8.14% of the added sugar concentration of the nectars. No significant differences in overall liking were detected for fruit nectars with 20% sugar reduction. However, large heterogeneity in consumer hedonic reaction towards sugar reduction was found, which should be taken into account in the design of sugar reduction programs. Consumer hedonic reaction towards sugar reduction was product dependent. Results from the present work reinforce the idea that gradual sugar reduction in sugar sweetened beverages is a feasible strategy that could contribute to reduce the sugar intake of the population. Reducing the sugar content of processed products has been claimed to be one of the most efficient strategies for decreasing sugar intake. The present work aimed at studying the influence of sugar reduction on the dynamic sensory profile and consumers' liking of probiotic chocolate-flavored milks using a novel temporal methodology, and to evaluate two alternatives (vanilla flavor and thaumatin) to attenuate the sensory changes caused by sugar reduction. Probiotic chocolate-flavored milks were formulated with different reductions in added sugar (0, 20, 40 and 60%). Vanilla flavor and thaumatin were added to the sugar-reduced samples at two concentrations. Samples were evaluated by trained assessors using Temporal check-all-that-apply (TCATA). Additionally, consumers evaluated the dynamic sensory profile of a subset of the samples using TCATA and indicated their overall liking using a 9-point hedonic scale. Results from the present work showed that the main effect of sugar reduction on the dynamic sensory profile of the probiotic chocolate-flavored milks was related to changes in sweetness, bitterness and thickness. A reduction in added sugar of 20% led to changes in sweetness intensity, which were perceived by both trained assessors and consumers. However, consumers' liking was not significantly affected by sugar reduction up to 40%. The addition of vanilla flavor at suprathreshold concentrations was not efficient in increasing sweetness perception in chocolate-flavored milks with the lowest sugar reduction percentage, suggesting that it may not be a feasible alternative for reducing sugar in this product category. These results suggest that in many situations sugar content of food products could be decreased without a relevant impact on consumers' sensory and hedonic perception. Semiconductor nanoparticle-mediated photocatalysis is an attractive option for water decontamination, being the semiconductors as SnS2 with a bandgap in the visible region, the most promising materials. In the present work, we evaluated the influence of important parameters in the photocatalytic application of SnS2 nanoparticles. Our results show that the presence of citric acid (used as a capping agent) restricts the formation of hexagonal nanoparticles. We also demonstrated that using thioacetamide as a sulfur source results in smaller nanoparticles than thiourea, 24.0 nm and 616 nm respectively. Moreover, small hexagonal nanoparticles play a key role in the photocatalytic activity of SnS2 nanoparticles. Compared with TiO2 performance, SnS2<br />nanoparticles exhibited faster kinetics for methyl orange (MO) degradation, Kapp = 0.0102 min&minus;1, and 0.029 min&minus;1, respectively. We proved that SnS2 is capable of breaking the azo bond of methyl orange by direct reduction. Furthermore, our analyses indicate that SnS2 nanoparticles do not degrade atrazine and imazapic, but the photocatalytic route of metribuzin competed with photolysis, resulting in a particular transformation product that was not obtained with light irradiation only. We demonstrated that SnS2 nanoparticles have high bond selectivity for azo breaking. Furthermore, they represent an advance for the development of designed materials (such as heterostructures), where the properties of SnS2 can be tuned. En esta tesis se prepararon y caracterizaron diferentes materiales de carbono para ser usados como electrodos de supercondensadores. Los supercondensadores son un tipo de condensador el&eacute;ctrico con una capacidad el&eacute;ctrica muy superior a cualquier otro tipo de condensador. En su constituci&oacute;n b&aacute;sica, est&aacute;n formados por dos electrodos (separados por un aislante el&eacute;ctrico) y un electrolito i&oacute;nico. Los desaf&iacute;os actuales en el desarrollo de supercondensadores se focalizan en aumentar la densidad de energ&iacute;a del dispositivo. Por el lado de los materiales de electrodo, esto se puede lograr con el desarrollo de materiales que tengan una elevada capacidad el&eacute;ctrica espec&iacute;fica. El trabajo experimental de esta tesis se focaliz&oacute; en la preparaci&oacute;n y caracterizaci&oacute;n de carbones en polvo activados, y monolitos de carb&oacute;n obtenidos a partir de diferentes cortes (longitudinal al eje de crecimiento del tronco del &aacute;rbol y transversal al eje del tronco) de madera Eucaliptus Grandis. Los materiales fueron preparados mediantes diferentes m&eacute;todos y condiciones de activaci&oacute;n (generaci&oacute;n de porosidad) y fueron caracterizados mediante an&aacute;lisis textural, an&aacute;lisis elemental, Desorci&oacute;n T&eacute;rmica Programada (TPD), difracci&oacute;n de rayos X (DRX), microscop&iacute;a electr&oacute;nica de barrido (SEM), medidas de conductividad el&eacute;ctrica y electroqu&iacute;micas. Las caracterizaciones electroqu&iacute;micas (curvas galvanost&aacute;ticas de carga y descarga, voltametr&iacute;a c&iacute;clica e impedancia electroqu&iacute;mica) se llevaron a cabo utilizando una celda de laboratorio sim&eacute;trica tipo Swagelok usando dos tipos de electrolitos: (i) soluci&oacute;n acuosa H2SO4 2M (electrolito &aacute;cido) y (ii) Et4NBF4 disuelto en acetonitrilo 1M (electrolito org&aacute;nico). IV Los resultados obtenidos para los carbones en polvo indican que estos tienen &aacute;reas superficiales que var&iacute;an en un amplio rango dependiendo del m&eacute;todo y condiciones de preparaci&oacute;n. De acuerdo con los resultados del TPD, el contenido de grupos funcionales oxigenados superficiales de los carbones var&iacute;a tambi&eacute;n seg&uacute;n el m&eacute;todo y condiciones de preparaci&oacute;n. La conductividad el&eacute;ctrica de los materiales depende marcadamente de la temperatura m&aacute;xima de preparaci&oacute;n siendo pr&aacute;cticamente independiente del m&eacute;todo o agente activante utilizado. Se determin&oacute; la existencia de una correlaci&oacute;n directa de la capacidad el&eacute;ctrica espec&iacute;fica de los materiales con el &aacute;rea superficial y el contenido de grupos funcionales oxigenados superficiales determinados mediante TPD. Los mejores resultados en cuanto a capacidad el&eacute;ctrica espec&iacute;fica en electrolito &aacute;cido se determin&oacute; para el carb&oacute;n activado con ZnCl2 a 900 &deg;C seguido de una posterior oxidaci&oacute;n con &aacute;cido n&iacute;trico. Se comprob&oacute; que la energ&iacute;a acumulada para un mismo carb&oacute;n es mayor en el electrolito org&aacute;nico que en el electrolito &aacute;cido. El an&aacute;lisis de los monolitos demuestra que existe una incidencia directa de la anisotrop&iacute;a de la madera en las propiedades texturales, el&eacute;ctricas y electroqu&iacute;micas de los monolitos de carb&oacute;n obtenidos. Los monolitos obtenidos a partir del corte transversal presentaron una estructura m&aacute;s abierta con mayor desarrollo de porosidad (la m&aacute;s alta obtenida para los activados con CO2), mayor capacidad el&eacute;ctrica espec&iacute;fica gravim&eacute;trica, mayor energ&iacute;a gravim&eacute;trica y mayor conductividad el&eacute;ctrica. Sin embargo no se encontraron diferencias sustanciales en la capacidad y energ&iacute;a volum&eacute;trica para los dos tipos de monolitos estudiados. Los mejores resultados de capacidad el&eacute;ctrica y energ&iacute;a acumulada obtenidos para los materiales de carb&oacute;n preparados en esta tesis fueron mejores a los obtenidos para un carb&oacute;n comercial de referencia y otros materiales similares reportados en la bibliograf&iacute;a. The genus Cannabis contains specific substances called cannabinoids that are found in high concentrations in the flowers of non-pollinated female plants. Cannabidiol (CBD) and &Delta;9-tetrahydrocannabinol (&Delta;9-THC) are the two main bioactive substances in this group with medicinal potential. However, these substances are found in low concentrations in fresh flowers. The decarboxylation technique can be applied to fresh flowers to promote an increase in the levels of these substances. Extracts with high levels of cannabinoids and without organic solvent residues have high medicinal and cosmetic potential. The purpose of this work was to present the results of cannabinoid extraction using pressurized fluids from two varieties of flowers of the genus Cannabis. The extractions were conducted using pure supercritical carbon dioxide (scCO2) and with ethanol as a co-solvent, comparing the use of decarboxylation and winterization techniques. The chemical profiles of cannabinoids (CBD, &Delta;9-THC and cannabinol (CBN)) and the essential oils in the extracts and in fresh flowers were analyzed using different chromatographic techniques. The decarboxylation technique employed maximized the levels of the cannabinoids of interest. The production manufacture of juices generates a large amount of waste consisting mainly of fruit peels. The peels are source of molecules such as coumarins and flavonoids. In this study, the peels of Citrus limonia, Citrus deliciosa, Citrus latifolia and Citrus sinensis were the raw material for supercritical fluid extraction. The Box- Behnken design was used to optimize the global yield in function of process variables. The chemical analysis of the extract was carried out by LC-MS and GC-MS. CFD was applied to the mass and momentum conservation equations in the study of supercritical extraction using citrus peels, which allowed the determination of unknown parameters of the bidimensional mathematical model. The flavonoids, nobiletin, sinensetin and tangeretin, as well as the coumarin, citropten, were identified in all species investigated. The maximum global yield obtained were 3.93 % for Citrus limonia, 4.18 % for Citrus deliciosa, 3.48 % for Citrus latifolia and 5.32 % for Citrus sinensis. Chia (Salvia hispanica L) is recognized mainly by its oil quality and secondly by the mucilaginous fibre. In the last years, it has become a non-conventional protein source. Besides their nutritional quality, chia proteins show technofunctional properties that encourage their use in food industry. Among the functionality reported previously, superficial properties of chia proteins resulted particularly appropriate and comparable to those for amaranth protein isolates. The pH of the media used for chia proteins extraction from the chia seed flour affects their structural characteristics and profoundly influence their interfacial properties. This chapter deals with the study of both emulsion and foaming capacity of chia proteins isolated by alkaline extraction (at two different pH) followed by isoelectric precipitation at pH 4.5 and the description of the applied methodology. In addition, theory about the protein behaviour at interfaces and also colloidal destabilization process as well as mathematical models used for their characterization is deeply detailed. Since the highest solubility of chia proteins is achieved in alkali, both emulsifying and foaming activities were assayed at pH 8.5. The most abundant member of this family in nature is InsP6 (H12L1 ), which interacts strongly with inorganic and organic cations. This interaction is essential for determining the possible functions of this biomolecule. A few crystal structures containing InsP6, and a divalent cation, have been reported showing a great versatility of this bioligand. Ins(1,2,3)P3 (H6L2 ) is another important member of the group, usually thought as a safe cellular iron ligand. No crystal structures showing the interaction of L2 with metal ions can be found in the literature. In this work we characterized by X-ray diffraction two polynuclear complexes, [Cu3(H6L1) (phen)5] (phen = 1,10-phenanthroline) (1) and [Cu2(H2L2 )(H2O)(terpy)2] (terpy = 2,2&prime;:6&prime;,2&Prime;-terpyridine) (2). The crystal structure of 2 furnishes, for the first time, a picture of the coordination ability of Ins(1,2,3)P3 against a divalent metal ion. Two novel multicomponent crystal forms of the prodrug 5-fluorocytosine (5-FC), an ionic cocrystal and a monohydrate salt, with 2,4,6-trinitrophenol (picric acid, PA) and 3,5-dinitrosalicylic acid (DNSA), respectively, were rationally designed and synthesized. Nitro compounds are used to treat many diseases, such as cancer, one of the 5-FC targets via gene-directed prodrug therapy. In addition, within the wide range of applications for nitro compounds is the formation of charge-transfer complexes with organic molecules. Among all 5-FC crystalline structures depicted, only two contain nitro compounds: a salt with PA and a dihydrate cocrystal with 5-nitrouracil. Therefore, the two new single translucent pale gold prism crystals of 5FC-PA and 5FC-DNSA were successfully obtained by slow evaporation from aqueous solution and characterized by X-ray diffraction (single crystal and powder), Fourier Transform Infrared (FT-IR), and Raman (FT-Raman) spectroscopies. In both crystal structures, the 5-FC pyrimidine ring is protonated at the N3 atom and the respective packings are mainly stabilized by N&ndash;H⋯O H-bonds. For the 5FC-PA ionic cocrystal, the formation of triple H-bonds (two N&ndash;H⋯O and one charge assisted N&ndash;H+⋯N H-bonds) among the 5-FC molecules was observed. This is consistent with the expected stability of the duplex structure, which is considered the strongest association between two species. In addition to the structural study, Hirshfeld surface analysis was carried out based on the single crystal X-ray diffraction data. Thermal stability was assessed through thermogravimetric analysis (TGA), differential scanning calorimetry (DSC), and hot-stage microscopy (HSM), indicating that these compounds are stable up to approximately 200 &deg;C. The results contribute to the diversity of new 5-FC solid forms and introduce two novel compounds, with possible application in fungal/cancer medicine formulations or to better understand the behavior of cytosine in DNA/RNA base pairing. The role of &alpha;‐ and &beta;‐d‐glucose, and d‐gluconate anion, acting as capping agent, on silver nanoparticles (AgNPs) was evaluated using both Raman and density functional theory studies. The particles were synthetized employing glucose, as reducing and blocking agent, in alkaline conditions. Capping agents were characterized through surface enhancement Raman spectroscopy together with modeling performed using silver clusters. Several geometries were optimized, and its energies and wavenumbers were calculated for each of them. Vibration normal modes from d‐glucose isomers and d‐gluconate were obtained and compared with those reported in bibliography, showing a satisfactory correlation. Comparison between experimental and calculated frequencies reveals a preference for d‐gluconate anion acting as capping agent under the necessary presence of d‐glucose on the surface of the AgNPs. The study of energies shows a greater affinity of d‐gluconate for the silver atoms (above &minus;1.3 eV for both geometries) than for other configurations of the glucose molecule (about &minus;0.66 eV in the case of &alpha;‐d‐glucose). Shelf life was estimated as the time necessary to reach a fixed percentage of consumers disliking the product, that is, the percentage of consumers scoring the product's overall acceptability below 6 in a 9-point hedonic scale. In the present work, this methodology was applied to estimate the sensory shelf life of whole pan bread and alfajores. Shelf lives estimated considering 50% of the consumers disliking the product were shorter than those estimated considering consumers' rejection to consume. These results suggest that a proportion of consumers might dislike the sample but still answer &ldquo;yes&rdquo; when asked if they would consume the product at their homes. This could be attributed to the fact that when consumers are asked whether they would consume the product, they might think about consuming it after being stored at their homes. In this situation, consumers might be more tolerant toward sensory defects because they do not want to discard the product.<br />PRACTICAL APPLICATIONS<br /><br />Sensory shelf life can be estimated using survival analysis considering the percentage of consumers disliking the product.
