Here, we present a proof-of-concept approach to study the effect of critical micelle concentration on alkyl sulfonate amphiphilic species response using organic electrochemical transistors (OECT) working in the accumulation mode. First of all, the drastic enhancement of the OECT response allows us to estimate the critical micelle concentration of alkyl sulfonate amphiphilic species yielding quite similar values compared to bulk solution conductivity experiments reported in the literature. Above the critical micelle concentration (i.e. 100 mM), the best responsive OECT devices yielded ON/OFF ratios of 30–60, maximum normalized transconductance of g max ¼ 1:99 1:39 mS cm 1 and threshold voltage of Vth = 0.39–0.55 V at Vg = 1.0 V. Our impedance spectroscopy studies performed at ON and OFF modes suggested that, in the presence of a sufficiently strong negative gate voltage (Vg = 1.0 V), not only the sodium counterions are ejected from the interface, but also the amphiphilic molecules from the monolayer probably reverse their orientation and get injected into the P3HT region. In this scenario, the sulfonate groups of the amphiphilic species synchronously induce doping of P3HT thus leading to a drastic enhancement of the channel current above the critical micelle concentration. Our results indicate that OECT devices represent a promising platform to estimate the critical micelle concentration of amphiphilic species but also to study the formation of amphiphilic monolayers of more complex systems of biological interest.

The usage of alternative synonymous codons in the completely sequenced, extremely A+T-rich parasite Plasmodium falciparum was studied. Confirming previous studies obtained with less than 3% of the total genes recently described, we found that A- and U-ending triplets predominate but translational selection increases the frequency of a subset of codons in highly expressed genes. However, some new results come from the analysis of the complete sequence. First, there is more variation in GC3 than previously described; second, the effect of natural selection acting at the level of translation has been analysed with real expression data at 4 different stages and third, we found that highly expressed proteins increment the frequency of energetically less expensive amino acids. The implications of these results are discussed.

The goal of the present work was to evaluate whether the Maillard reaction, with glucose and lactose as substrates, improves the foaming properties of b-lactoglobulin. Lactose led to the lowest degree of modification without significant differences by reaction time and by protein:sugar molar ratio. However, in the case of glucose, the degree of glycation increases with reaction time and molar ratio. The results obtained by UV fluorescence, surface hydrophobicity and differential scanning calorimetry clearly showed differences in the degree of folding of b-lactoglobulin upon modification with different sugars or thermal treatment, with changes in the foaming capacity of b-lactoglobulin. All the modified samples exhibited a significant increase (a 6 0.05) in draining stability (Kg) as compared to the non-thermally treated sample. In addition, foams formed by lactose-glycated samples were more stable than those formed by glucose-glycated ones. A significant increase (a 6 0.05) of foam stability with reaction time was also detected, particularly in glucose-glycated samples.

<p>The creaming, flocculation and coalescence processes of destabilization of emulsions prepared with glycated b-lactoglobulin was analyzed. The glycation process was carried out with glucose and lactose in different reaction conditions (reaction time and protein:carbohydrate molar ratio) The glycation of blactoglobulin with both with glucose and lactose causes an increase in the stability of oilewater emulsions. It was found that the process of creaming had a sigmoid behavior which fit to an equation with two parameters, one with hyperbolic and other with sigmoidal kinetics and is directly related to particle size of the dispersed phase of the emulsion. b-lactoglobulin glycated with lactose emulsions showed greater stability to creaming than those prepared with b-lactoglobulin glycated with glucose, which was related to the decrease in the particle size of the dispersed phase and the increased concentration of protein at the interface of the emulsions. Flocculation and coalescence were not influenced by the glycation.</p>

Sugar reduction in beverages can contribute to reduce consumption of this nutrient and to improve the health status of the population. However, such reduction can negatively affect consumer perception. Label information can be an effective tool to increase consumer interest in sugar-reduced products. In this context, the aim of the present work was to study the influence of health/hedonic claims on consumer hedonic and sensory perception of sugar reduction in orange/passionfruit nectars under expected and informed conditions. Sugar-reduced orange/passionfruit nectars (20% and 40% reduced in added sugar) featuring different claims (none, health claim or hedonic claim) were evaluated, together with a control product without reduction. Following a between-subjects experimental design, 206 participants evaluated the nectars under two experimental conditions: (a) expected, looking at the packages, and (b) informed, looking at the packages and tasting the nectars. In each experimental condition, participants evaluated their overall liking using a 9-point hedonic scale and answered a check-all-that-apply questions related to the sensory characteristics of the nectars. Results showed that although consumers did not have negative expectations about sugar-reduced nectars, the sensory characteristics of the products were the main determinants of consumers' hedonic reaction towards the nectars. The influence of claims on consumers' perception was modulated by their hedonic sensitivity towards sugar-reduction. The hedonic claim increased overall liking of those consumers with low hedonic sensitivity towards sugar reduction, whereas it had the opposite effect on the most sensitive consumers. Results from the present work suggest that although hedonic claims hold potential for a consumer segment, care must be taken to avoid the generation of unrealistic expectations about the sensory characteristics of sugar-reduced products.

In this report, we studied the effect of the addition of manganite nanoparticles on the microstructure and magnetotransport properties of polyaniline polymers. We showed experimental results on the fractal dimension of the polyaniline–manganite nanocomposites by means of small angle X-ray scattering measurements. A decrease in the number of polarons is observed for the composite with a concentration of 20% manganite nanoparticles. On the other hand, for the same concentration, the presence of a low magnetic field increases the number of polarons, in relation to an enhancement of the negative low field magnetoresistance (LFMR). This enhancement was observed for a critical amount of manganite nanoparticle addition in the whole temperature regime analyzed, as envisaged from the low magnetic field dependence in the polyaniline polaron formation observed using confocal Raman spectroscopy at room temperature.

Herein, we report on the structural, chemical reactivity and electronic properties of dual-doped bilayer graphene (DDBG). Only one of the layers was doped with a pair of 3p–2p elements. Aluminum was the only dopant which prefers to interact with the undoped layer. The interlayer interaction energies of DDBG are smaller than those determined for bilayer graphene, except for AlN and AlO DDBG. This effect is due to the presence of weak Al–C interlayer bonds. The dopants increase the reactivity of both the doped and undoped layers. Interestingly, we found that hydrogenation is a method that can be used to switch on/off the interlayer bonding, as it controlled the X–C interlayer distance (X = Al, Si, P, S). The magnetic moment of the systems can be adjusted by the position of the 3p dopant. In effect, when X interacts with the doped layer, the magnetic moment is reduced, while it is maintained when X fails to interact. Finally, we found that the doped layer is able to break the symmetry of the undoped sheet and small gaps can be opened in the band structure of the undoped layer. As observed for single doped monolayer graphene, the most effective element for such purposes is P, which opened gaps close to 0.2 eV. For SiN DDBG, the spin filtering properties are enhanced with respect to the monolayered structure.

ETHNOPHARMACOLOGICAL RELEVANCE: Ophidian accidents are a serious public health problem in Argentina; the Bothrops species is responsible for 97% of these accidents, and in particular, B. diporus is responsible for 80% of them. In the northeast of the country (Corrientes Provinces), Cissampelos pareira L. (Menispermaceae) is commonly used against the venom of B. diporus; its use is described in almost all ethnobotanical literature from countries where the plant grows. AIM OF THE STUDY: In this study, the in vitro and in vivo antivenom activities of C. pareira extracts were evaluated against B. diporus venom, with a particular focus on the local effects associated with envenoming. The seasonal influence on the chemical composition of the active extracts was also studied, in order determine the associated range of variability and its influence on the antivenom activity. MATERIALS AND METHODS: This research was conducted using aerial parts (leaves, flowers, tender stems) and roots of Cissampelos pareira collected from two different phytogeographic regions of Corrientes (Argentina); Paso de la Patria and Lomas de Vallejos. In addition, to perform a seasonal analysis and to evaluate the metabolic stability, material was collected at three different growth stages. In vivo and in vitro anti-snake venom activities were tested, and a bio-guided chromatographic separation was performed in order to determine the active chemicals involved. The fractions obtained were analyzed by sodium dodecyl sulfate polyacrylamide gel electrophoresis (SDS-PAGE) and the chemical profile of the most active constituent was analyzed by ultra high-performance liquid chromatography coupled to quadrupole/high-resolution mass spectrometry (Q-Orbitrap). (UHPLC-MS). RESULTS: The alcoholic extract was found to be the most active The bio-guided fractionation allowed selection one fraction to be analyzed by UHPLC-MS in order to identify the components responsible for the activities found; this identified five possible flavonoids. CONCLUSIONS: Our studies of the activity of C. pareira against the venom of B. diporus have confirmed that this species possesses inhibitory effects in both in vitro and in vivo models. Moreover, the present data demonstrate that certain flavonoids may mitigate some of the venom-induced local tissue damage.

The electronic spectrum of the benzofurazan-N-oxide and its —OR, —NH2 and —Cl 5- substituted derivatives has been calculated on the assumption that their structure should be on a chargetransfer ion pair (benzofurazane)+ -O− . The agreement with the observed spectrum is very satisfactory; the first absorption band is assigned to an internal charge-transfer transition and the second band to a π → π* transition.<br />The prediction of the more stable isomeric structure, based on the π-electron energy difference between 1-oxo- and 3-oxo-5-substituted benzofurazans, gives results opposite to the observations reported for —OMe and —Cl derivatives. Possible reasons of this failure are discussed.<br /><br />

Although the traditional wine industry of Uruguay is virtually unknown in the international wine market, wine sales are now increasing in some of the most important markets of Europe and North America. Because of strong domestic consumption and a quiescent R&D situation in recent decades, the pioneer vision of high quality that was bom in the 1880s was not realised. The strategy of promoting the typical grape Tannat (Harriague), best known for making high‐quality Madiran reds in southwest France, is starting to result in successful competitive reds which are only found in Uruguay. This paper presents a summary of the history of the Uruguayan wine industry, beginning with the first Tannat vines planted in the 1870s by the Frenchman Harriague, who with a British family developed the most technically advanced winery of those days, including a bacteriological laboratory. With the programme of training for winemakers and the recently started R&D projects in the University of the Republic, it is hoped that the Uruguayan wine industry, based on quality wines at a good price, will continue opening markets and reach its target of 300 000 cases by the year 2000. The country could occupy an interesting position within the quality wines of the Mew World in the near future.

The enthalpy of formation of the HSO and SOH radicals has been determined employing the CCSD(T) methodology with the aug-cc-pV(X+d)Z basis sets X = D,T,Q,5. Our best estimations are View the MathML sourceΔHf,2980(HSO)=-5.2±0.5andΔHf,2980(SOH)=-1.6±0.5kcal/mol. The procedure employed to determine those values involves, extrapolation to the CBS limit, a correction for core-valence and relativistic effects. This result is in reasonable agreement with our previous estimations [Int. J. Quant. Chem. 80 (2000) 439] −6.6 and −1.6 kcal/mol for HSO and SOH, respectively. However, it is larger than the lower bound recently estimated by Balucani et al. [JPC. 120 (2004) 9571] −3.0 kcal/mol at 0 K (−3.7 kcal/mol at 298 K).

Aims: New drugs are needed to treat flatworm infections that cause severe human diseases such as schistosomiasis. The unique flatworm enzyme thioredoxin glutathione reductase (TGR), structurally different from the human enzyme, is a key drug target. Structural studies of the flatworm Echinococcus granulosus TGR, free and complexed with AuI-MPO, a novel gold inhibitor, together with inhibition assays were performed. Results: AuI-MPO is a potent TGR inhibitor that achieves 75% inhibition at a 1:1 TGR:Au ratio and efficiently kills E. granulosus in vitro. The structures revealed salient insights: (i) unique monomer–monomer interactions, (ii) distinct binding sites for thioredoxin and the glutaredoxin (Grx) domain, (iii) a single glutathione disulfide reduction site in the Grx domain, (iv) rotation of the Grx domain toward the Sec-containing redox active site, and (v) a single gold atom bound to Cys519 and Cys573 in the AuI-TGR complex. Structural modeling suggests that these residues are involved in the stabilization of the Sec-containing C-terminus. Consistently, Cys→Ser mutations in these residues decreased TGR activities. Mass spectroscopy confirmed these cysteines are the primary binding site. Innovation: The identification of a primary site for gold binding and the structural model provide a basis for gold compound optimization through scaffold adjustments. Conclusions: The structural study revealed that TGR functions are achieved not only through a mobile Sec-containing redox center but also by rotation of the Grx domain and distinct binding sites for Grx domain and thioredoxin. The conserved Cys519 and Cys573 residues targeted by gold assist catalysis through stabilization of the Sec-containing redox center. Antioxid. Redox Signal. 27, 1491–1504.

Abstract

The social distancing measures implemented to contain the coronavirus (COVID-19) pandemic worldwide have created a series of emotional and economic challenges. The aim of the present work was to explore the experiences of families with children and adolescents during the coronavirus (COVID-19) pandemic in Uruguay. An online study was conducted in March 2020 with 1725 parents with children under 18 years old. A series of closed and open-ended questions about their family life since the implementation of social distancing measures were asked, addressing the following topics: how they had felt, changes they had experienced in their daily life, children’s daily routine, changes implemented in relation to child-care, changes they had perceived in children’s eating patterns, changes in their relationship with their children, changes in their children’s mood and behavior, and their reaction to those changes. Results showed that the coronavirus pandemic elicited negative feelings in the majority of participants, mainly related to worry, fear, anxiety and uncertainty. Social distancing measures caused a major disruption in daily habits, which were mostly attributed to changes in work-related activities and the closure of educational institutions. Changes in children’s mood and behavior were perceived by the majority of the participants, who mainly referred to boredom, agitation and restlessness. Although some participants reported difficulties to cope with children’s behavior during social distancing, others valued the opportunity of spending more time with their children. In terms of children’s eating patterns, changes related to both an increase and a decrease in the consumption of healthy foods were observed. Results from the present work have relevant implications for public health policy and practice by highlighting the importance of providing emotional and psychological support to people during social distancing measures and providing insights for the design of communication campaigns and interventions.

Speciosins constitute a group of natural compounds that have never been synthesized enantioselectively. We propose to introduce chirality by the use of enantiopure 3-halo-cis-1,2-cyclohexadienediols of microbial origin. The introduction of the alkynylic side chain by Sonogashira's methodology was successful, thus confirming a valuable strategy for the asymmetric preparation of speciosins.

We have added the {ReIVX5}@ (X=Br, Cl) synthon to a pocket-based ligand to provide supramolecular design using halogen···halogen interactions within an FeIII system that has the potential to undergo spin crossover (SCO). By removing the solvent from the crystal lattice, we “switch on” halogen···halogen interactions between neighboring molecules, providing a supramolecular cooperative pathway for SCO. Furthermore, changes to the halogen-based interaction allow us to modify the temperature and nature of the SCO event.

A summary of the resource.
The structure, heat of reaction and heat of formation of the FO2 radical in its X2A″ ground state has been calculated using the three-parameter exchange functional of Becke and the Lee-Yang-Parr functional for correlation energy (B3LYP method). B3LYP geometrical parameters of FO2 and FO are nearer to experiment than those obtained with conventional ab initio calculations. The calculated ΔHr,00 for F + O2 → FO2 at this level (−11.1 kcal/mol) is nearer to experiment (−11.68 kcal/mol) than that afforded by any other calculation, including QCISD(T), MP4(SDTQ) or G1 ab initio models. Calculation of the heat of reaction for previously considered isodesmic and isogyric reactions involving the FO2 radical shows that the agreement is consistent. The root mean square error for the sixteen reactions considered, involving FO, FO2, FOH and FOOF, with heats of reaction varying from -149 to +56 kcal/mol, is 0.5 kcal/mol at the B3LYP level. The similar rms error for MP4(SDTQ)/6-311+ +G(2d, 2p) calculations is 5.2 kcal/mol. It is concluded that the B3LYP method is faster and more accurate than conventional ab initio methods for the study of reactions involving F-O bonds.

A summary of the resource.
Tapeworms (Cestoda) cause neglected diseases that can be fatal and are difficult to treat, owing to inefficient drugs. Here we present an analysis of tapeworm genome sequences using the human-infective species Echinococcus multilocularis, E. granulosus, Taenia solium and the laboratory model Hymenolepis microstoma as examples. The 115- to 141-megabase genomes offer insights into the evolution of parasitism. Synteny is maintained with distantly related blood flukes but we find extreme losses of genes and pathways that are ubiquitous in other animals, including 34 homeobox families and several determinants of stem cell fate. Tapeworms have specialized detoxification pathways, metabolism that is finely tuned to rely on nutrients scavenged from their hosts, and species-specific expansions of non-canonical heat shock proteins and families of known antigens. We identify new potential drug targets, including some on which existing pharmaceuticals may act. The genomes provide a rich resource to underpin the development of urgently needed treatments and control.

Abstract
A summary of the resource.
Objective: To explore the conceptualisation of healthy food by citizens and how they judge the healthiness of ultra-processed foods.<br />Design: Four focus groups were conducted using a semi-structured discussion guide. Focus group discussions were held about the concept of healthy food, what characterise a healthy product and healthiness perception of ultra-processed products.<br />Transcripts of the focus groups were analysed following an inductive coding approach.<br />Setting: Uruguay, one of the Latin American countries with the highest prevalence of overweight and obesity.<br />Participants: Fifty-two adult Uruguayan participants, diverse in terms of gender, age, educational level and socio-economic status.<br />Results: In agreement with previous studies on lay perceptions of healthy eating, the conceptualisation of healthy food was mainly focused on food characteristics.<br />Although participants regarded lack of processing as a cue for healthiness, they did not categorise all ultra-processed products as unhealthy. Albeit some product categories were automatically regarded as unhealthy, participants considered that<br />other categories could include healthy and unhealthy products. In such cases, they<br />explicitly referred to several simplified cognitive strategies to judge whether an ultra-processed product is healthy or not. Results showed that participants tended to rely on simple cues, such as label design, nutrient claims, brand, price and country of origin as indicators of product healthiness.<br />Conclusions: Healthiness perception of ultra-processed products seems to be largely influenced by heuristics, which stresses the need to implement policies that make the potential negative effects of ultra-processed products salient.

The grapevine (Vitis vinifera) cultivar Tannat is cultivated mainly in Uruguay for the production of high-quality red wines. Tannat berries have unusually high levels of polyphenolic compounds, producing wines with an intense purple color and remarkable antioxidant properties. We investigated the genetic basis of these important characteristics by sequencing the genome of the Uruguayan Tannat clone UY11 using Illumina technology, followed by a mixture of de novo assembly and iterative mapping onto the PN40024 reference genome. RNA sequencing data for genome reannotation were processed using a combination of reference-guided annotation and de novo transcript assembly, allowing 5901 previously unannotated or unassembled genes to be defined and resulting in the discovery of 1873 genes that were not shared with PN40024. Expression analysis showed that these cultivar-specific genes contributed substantially (up to 81.24%) to the overall expression of enzymes involved in the synthesis of phenolic and polyphenolic compounds that contribute to the unique characteristics of the Tannat berries. The characterization of the Tannat genome therefore indicated that the grapevine reference genome lacks many genes that appear to be relevant for the varietal phenotype.

A summary of the resource.
Objective: The information displayed on the packages of feeding bottles and teats commercialised in Montevideo (Uruguay) was analysed using content analysis with the goal of identifying key marketing practices that may discourage breast-feeding. Design: The study was conducted as part of the periodic assessment performed by the Uruguayan government to monitor the marketing of breast milk substitutes. All the feeding bottles and teats sold in forty-four retail outlets selling breast milk substitutes were purchased. The information available on the packages was analysed using content analysis and descriptive statistics. Setting: Montevideo, Uruguay. Results: A total of 197 feeding bottles and 71 teats were found. The majority of the packages included information to enable caregivers to adequately use the products, including recommended age, instructions on how to use the products and instructions on the use of hygienic practices. However, the packages frequently included information that implied that bottle feeding was equivalent to breast-feeding, particularly from a physiological perspective, or that idealised product use. Idealisations included ability to reduce colic, improvements in the feeding experience and improvements in children’s health, well-being and development. Statements on the superiority of breast-feeding were infrequent. Conclusions: The results from the present work showed the high prevalence of marketing practices on the packages of feeding bottles and teats that may discourage breast-feeding. Stricter and more detailed regulations seem necessary to enable caregivers to make informed feeding decisions for infants.

<span style="text-decoration: underline;">Background:</span> Labels are a key element of the marketing strategies of infant formula companies, and often include text or images that idealize their use, undermining efforts to promote breastfeeding. <span style="text-decoration: underline;">Research Aims:</span> To evaluate the prevalence of marketing cues that idealize infant formula on labels of products commercialized in Uruguay and to assess changes after a periodic monitoring of compliance with the International Code of Marketing of Breast-Milk Substitutes (IC). <span style="text-decoration: underline;">Method:</span> This study is a descriptive, observational, and longitudinal assessment of the information included on infant formula labels. The first data collection was in 2019, as part of a periodic assessment to monitor the marketing of human-milk substitutes. In 2021, the same products were purchased to evaluate changes in their labels. Thirty-eight products were identified in 2019, of which 33 were still available in 2021. All information available on the labels was analyzed through content analysis. <span style="text-decoration: underline;">Results:</span> Most products included at least one textual or visual marketing cue idealizing infant formula in both 2019 (n=30, 91%) and 2021 (n=29, 88%). This represents a violation of both the IC and national regulations. References to nutritional composition were the most frequent marketing cue, followed by references to child growth and development. No relevant changes were observed after the periodic assessment conducted by the Uruguayan government. <span style="text-decoration: underline;">Conclusions:</span> Monitoring compliance with the IC per se cannot be expected to trigger changes in the marketing strategies of infant formula companies. More explicit regulations and strong enforcement mechanisms are needed to end the inappropriate marketing practices on infant formula labels.

Since its early introduction as a marker for the immunodiagnosis of hydatid disease, antigen 5 (Ag5) has been regarded as one of the more relevant antigens of Echinococcus granulosus, and it is still widely used in different confirmation techniques. In this work we prepared 2 recombinant forms of the antigen, namely, rAg5 (corresponding to the unprocessed polypeptide chain of the antigen) and rAg5-38s (corresponding to its 38 kDa subunit). Their antigenicities were compared to that of the native antigen using a human serum collection. There was a major drop in the reactivity of the sera, particularly against rAg5-38s, which was confirmed by analysis of the cross-reactivity of 2 panels of monoclonal antibodies specific for rAg5-38s and the native antigen. Using the chemically deglycosylated native antigen, we demonstrated that the reduced antigenicity of the recombinants is due to the loss of the sugar determinants, and not to their misfolding. Inhibition experiments using phosphorylcholine confirmed that this moiety also contributes to the reactivity of the antigen, but to a much lesser extent. The presence of immunodominant highly cross-reactive glycan moieties in the Ag5 molecule may involve a parasite evasion mechanism.
