Text highlighting is an alternative method where participants use highlighter functions to indicate content that they ’ike’ and ’dislike’ as they read a text. Jaeger et al. (2022) [Food Qual Prefer, 95, 104356] introduced this approach and the present research investigated it methodologically to further assess its potential for attitude measurement. There were two research questions (RQ) that asked whether: 1) highlighting responses are independent of text characteristics (length, content); and 2) consumers’ attitudes are altered by the process of completing the highlighting task. Data were collected in an online survey on vertical farming (VF) where 1466 UK consumers took part. For RQ1, results showed that word highlighting frequency was altered by textual context and decreased for longer texts. The sentiment scores for sentences were also altered, but the characteristics about VF that consumers responded positively and negatively to were minimally influenced by text length and content. For RQ2, results showed that completion of the text highlighting task did not influence attitudes to VF, meaning that the task of highlighting did not introduce response bias. Collectively, the findings of the present research further support that text highlighting has potential for attitude measurement. Product-focused emotion research has been in ascendency for more than a decade, but methodological research into questionnaires, the most popular tool for measuring emotional associations is still needed. The present research was situated in this context and pertained to the valence × arousal circumplex-inspired emotion questionnaire (CEQ) which includes 12 pairs of emotion words. Variants of the CEQ that pertained to response options (single vs. multiple) and layout (circular vs. list) were compared in four consumer studies with a total of 1857 participants. In Studies 1 to 3, the CEQ variant that featured a circular layout and single response format (C&S) was compared to a list variant with multiple response format (L&M) (i.e., a check-all-that-apply question). Selection of CEQ emotion word pairs and degree of sample discrimination was contingent on CEQ variant, meaning that conclusions about sample similarities and differences depended on the CEQ variant that was used. This was also the result in Study 4 where two circular CEQ variants were compared, with single and multiple response formats, respectively. A further important finding was that stimuli format – tasted samples in Studies 1–2 and written stimuli in Studies 3–4 – as well as degree of sample differences influenced the extent to which the results from the CEQ variants differed. Our recommendations at this stage are to be aware that conclusions about sample profiles and discrimination is CEQ variant dependent and avoid directly comparing results from studies that use different CEQ variants. Implementing the CEQ as a multi-response variant is supported since it improves sample discrimination relative to single response data, particularly for pairs of emotion words that primarily relate to the dimension of arousal. Text highlighting is a novel method for measuring consumer attitudes where participants read information about a focal topic and use highlighting functions to select aspects of the text that they like and dislike. The present research contributed methodological knowledge about text highlighting by investigating how responses are influenced by two aspects of the texts — length and degree of reading difficulty. A case study pertaining to biodynamic agriculture was used to assess the research questions and empirical data were collected from 3718 consumers across four countries (United Kingdom, Australia, Germany, and Singapore). Results showed that both text length and reading difficulty influenced responses — overall frequency of highlighting, frequency of ‘like’ highlighting, frequency of ‘dislike’ highlighting, and sentiment scores — leading to recommendations about future implementations of the methodology. Specifically, a single highlighting task on a longer text is less recommended than consecutive highlighting tasks on shorter texts. Implementation of the latter increases highlighting frequency and is expected to be associated with greater participant task engagement. Text length also influenced sentiment scores but did so in a manner that was topic and content specific. Regarding text difficulty, significant differences were established for all types of highlighting responses, although the differences were smaller than found for text length. The recommendation is to use simple and familiar language that is suited to the groups of participants taking part in the study. Clostridium sordelli veterinary vaccine is made by cultivating the microorganism in large industrial bioreactors and purifying the toxin from culture supernatants. The harvesting time is currently established as a function of bacterial growth, but this time is not always associated with the maximum concentration of toxin present in the supernatant. As a result, it is simple to determine the total amount of toxin produced from batch to batch. Furthermore, the toxin concentration is currently measured using in vivo LD50 methods, and results can be obtained only after 72 hours, when the bioreactor has already been stopped. Moreover, the method is time-consuming and necessitates the use of a large number of experimental animals. The development and application of a latex agglutination reagent for semi-quantification of Clostridium sordelli lethal toxin (TcsL) in industrial bioreactors are described. The reagent was developed and characterised in our laboratory, with a detection limit of 8ng of toxin per ml of culture supernatant, and then validated in actual industrial conditions. The use of such a speedy (i.e., in minutes) and simple reagent will allow for real-time monitoring of the culture, standardising the optimal end-point for harvesting in terms of toxin quantity. As a result, the efficiency of TcsL industrial production may be improved immediately. (Asteraceae) contains more than 440 species of exclusively American distribution, from USA to Argentina, concentrated mostly in the highland areas of southern Brazil and throughout the Andes. Besides its ethnopharmacological/ medicinal importance, Baccharis volatile fractions (VFs) are important sources of bioactive compounds for flavor and fragrance industry, mainly the species B. dracunculifolia DC. and in a lesser extention B. trimera (Less.), whose essential oils (vassoura and carqueja oil, respectively) are in commerce. However, research and valorization of other Baccharis species as aroma sources remains scarce to date. In this chapter we discuss the relevance of B. uncinella DC., the species more closely related genetically to B. dracunculifolia. Focusing our study on the different techniques and protocols applied to obtain B. uncinella VFs, namely steam distillation (SD, at both, laboratory- and pilot-scales to obtain the “other vassoura essential oil”), simultaneous distillation- extraction (SDE), and supercritical fluid extraction (SFE). The chemical identification and quantitation of VFs was carried out by conventional gas chromatography (GC-FID) and gas chromatography-mass spectrometry (quadrupole analyzer) (GC-qMS). A close look at the data indicated that the chemical composition of B. uncinella VFs largely depended on the extraction technique, thus significantly affecting their aromatic potential. Only SDE allowed the recovery of lighter volatile compounds as C6 components (i.e., “green leaf volatiles”), pilot-scale SD concentrated more hydrocarbons and fewer oxygenated compounds compared to laboratory-scale SD, and SFE recovered several oxygenated monoterpenes and polyquinane sesquitepenes (tentative identification) not obtained by the other techniques. The main components found in the VFs were α-pinene, β-pinene, limonene, (E)-caryophyllene, germacrene D, bicyclogermacrene, spathulenol, and caryophyllene oxide; most of them olfactorily relevant compounds according to previous studies. Therefore, the importance of B. uncinella, its VFs and the “other vassoura oil” as potential sources of aromatic compounds in the flavor and fragrance industry is highlighted. In a search for new antitumoral agents, a series of homoleptic copper(II) complexes with amino acids and dipeptides, as well as heteroleptic complexes containing both dipeptides and 1,10-phenanthroline, were studied. Furthermore, a single-crystal structure containing alanyl-leucinato ([Cu3(AlaLeu)3 (H2O)3(CO3)]�PF6�H2O), which is the first homotrinuclear carbonato-bridged copper(II) complex with a dipeptide moiety, is presented. To assess possible antitumor action mechanisms, we focused on the comparative analysis of pro- and antioxidant behaviors. Pro-oxidant activity, in which the reactive oxygen species (ROS) formed by the reaction of the complexes with H2O2 produce oxidative damage to 2-deoxy-D-ribose, was evaluated using the TBARS method. Additionally, the antioxidant action was quantified through the superoxide dismutase (SOD)-like activity, using a protocol based on the inhibitory effect of SOD on the reduction of nitrobluetetrazolium (NBT) by the superoxide anion generated by the xanthine/ xanthine oxidase system. Our findings show that Cu–amino acid complexes are strong ROS producers and moderate SOD mimics. Conversely, Cu–dipeptide–phen complexes are good SOD mimics but poor ROS producers. The activity of Cu–dipeptide complexes was strongly dependent on the dipeptide. A DFT computational analysis revealed that complexes with high SOD-like activity tend to display a large dipole moment and condensed-to-copper charge, softness and LUMO contribution. Moreover, good ROS producers have higher global hardness and copper electrophilicity, lower copper softness and flexible and freely accessible coordination polyhedra. Galectins, soluble lectins widely expressed intra- and extracellularly in different cell types, play major roles in deciphering the cellular glycocode. Galectin-1 (Gal-1), a prototype member of this family, presents a carbohydrate recognition domain (CRD) with specific affinity for β-galactosides such as N-acetyllactosamine (β-D-Galp-(1 → 4)-D-GlcpNAc), and mediate numerous physiological and pathological processes. In this work, Gal-1 binding affinity for β-(1 → 6) galactosides, including β-D-Galp-(1 → 6)-β-D-GlcpNAc-(1 → 4)- D-GlcpNAc was evaluated, and their performance was compared to that of β-(1 → 4) and β-(1 → 3) galactosides. To this end, the trisaccharide β-D-Galp-(1 → 6)-β-D-GlcpNAc-(1 → 4)-D-GlcpNAc was enzymatically synthesized, purified and structurally characterized. To evaluate the affinity of Gal-1 for the galactosides, competitive solid phase assays (SPA) and isothermal titration calorimetry (ITC) studies were carried out. The experimental dissociation constants and binding energies obtained were compared to those calculated by molecular docking. These analyses evidenced the critical role of the glycosidic linkage between the terminal galactopyranoside residue and the adjacent monosaccharide, as galactosides bearing β-(1 → 6) glycosidic linkages showed dissociation constants six- and seven-fold higher than those involving β-(1 → 4) and β-(1 → 3) linkages, respectively. Moreover, docking experiments revealed the presence of hydrogen bond interactions between the N-acetyl group of the glucosaminopyranose moiety of the evaluated galactosides and specific amino acid residues of Gal 1, relevant for galectin-glycan affinity. Noticeably, the binding free energies (ΔGcbainlcd) derived from the molecular docking were in good agreement with experimental values determined by ITC measurements (ΔGebxinpd), evidencing a good correlation between theoretical and experimental approaches, which validates the in silico simulations and constitutes an important tool for the rational design of future optimized ligands. Synchrotron X-ray thermodiffraction in air shows a phase transition from orthorhombic Pmmm to tetragonal P4/mmm space groups at ~ 425°C. The chemical compatibility with Ce0.9Gd0.1O1.95 (GDC) electrolyte was investigated in air where certain reactivity was observed above 800 °C. However, the main phase is Ba(Ce1-xYx)O3, a good ionic conductor. Although the sensory characterization of mandarins has usually been performed by trained assessors, in recent years, the methodologies that depict sensory descriptions from the perception of consumers, such as the checkall- that-apply (CATA) questionnaires have become very popular. In this work, an exploratory study was first carried out using a focus group (FG) technique to determine attributes and aspects that influence the decision to purchase mandarins. Secondly, the consumer panel recruited 100 regular mandarin consumers that were randomly divided into two groups. Group “A” received segments of 15 mandarins. Group “B”, instead of receiving the same mandarins in segments, they received them as a whole fruit having to peel them by themselves. Both groups evaluated the total acceptability with a 9-point hedonic scale and answered a CATA questionnaire composed of 38 terms for Group “A” and 52 terms for Group “B”. Although the consumers in the FG described an "ideal" mandarin as easy-to-peel, no significant difference (p > 0.05) was found in the acceptability between groups “A” and “B”. Characteristics such as sweet, very sweet, fresh smell, sweet smell, bright, fruity taste, fresh flavor, typical flavor, balanced taste and nice flavor were strongly and positively correlated with overall consumers’ acceptance. Nutraceutical properties of mandarins are of great interest to promote their consumption. The occurrence of free amino acids in foods is relevant to assess the nutritional value of it. To learn more about the amino acids’ occurrence and variability between species, a targeted metabolomics study in ‘Ellendale’, ‘Willowleaf’ and ‘Page’ varieties was performed through ion exchange liquid chromatography coupled to tandem mass spectrometry. The studied amino acids were asparagine, glutamic acid, glutamine, histidine, methionine, phenylalanine, proline, threonine and tyrosine. The difference between two consecutive seasons was evaluated, as well as the influence of fruit maturity of ‘Page’ collected in two periods of 2015. The analytical methodology was validated. The concentration of the compounds through principal component analysis, separated well apart the three cultivars in both harvests, showing a particular profile for each of them. When comparing mature and immature cultivar ‘Page’, the amino acids with higher levels in mature samples were histidine, asparagine, glutamine and glutamic acid. The profiles were different due to genetic diversity, and the climatic conditions. These results add value to citric production. El conocimiento de las floraciones es útil para predecir el comportamiento de las colonias de Apis mellifera (abeja de la miel). El objetivo fue determinar las características florísticas desde el punto de vista apícola de un bosque serrano en Uruguay. Realizamos ocho visitas en tres sitios aledaños a la colmena: a 10-20 m, 500 m y 1500 m de distancia. En la primera visita determinamos especies, familias, origen (nativo o exótico) y frecuencia de cada taxón. En visitas posteriores, censamos cuáles estaban florecidas (presencia o ausencia). Asignamos a cada especie un valor de uno a cinco para la abundancia (A) y la duración de la floración (P), durante dos años. Utilizamos el índice de Shannon para medir la diversidad florística. Se utilizó un modelo lineal generali-zado para analizar la floración a través de las variables respuesta: presencia de floración en invierno, primavera, verano y otoño, así como duración de la floración. Calculamos un índice de Shannon de 3,6, lo que indica una alta biodiversidad. Luego correlacionamos los hallazgos de la prospección con datos de la literatura sobre la ocurrencia de cada especie en estudios melisopalinológicos en mieles maduras e inmaduras. Por último, defi-nimos el término flora convertible para identificar los recursos florales cuyo polen se almacena cuando no hay ninguna flora disponible. Estas fueron Lithraea brasiliensis, Baccharis articulata, Baccharis trimera, Blepharo-calyx salicifolius, Eugenia uniflora, Colletia Paradoxa, Oxalis sp., Scutia buxifolia, Jodina rhombifolia, Aloysia gratissima, para las temporadas de primavera y otoño (P<0.05). El término flora de soporte (P<0.05) lo defini-mos para clasificar aquellos recursos que se encuentran en la miel inmadura y están casi ausentes en la miel madura, y se utilizan como nutrientes durante la expansión de la colonia: Schinus engleri, Maytenus ilicifolia, Eryngium pandanifolium, Baccharis punctulata, Abutilon pauciflorum, Daphnopsis racemosa, Allophylus edulis y Celtis tala. Objective: To explore adolescents’ views about the foods they consume and to identify their ideas about strategies to encourage healthier eating habits. Design: Individual questionnaires based on open-ended questions and group discussions (6–8 participants) were used to address the objectives. Data were analysed using content analysis based on deductive-inductive coding. Setting: Montevideo and its metropolitan area (Uruguay, Latin America). Participants: Totally, 102 adolescents (aged between 11 and 15 years, 52 %female) recruited at two educational institutions. Results: Adolescents reported frequently consuming ultra-processed products and fast food although they were perceived as bad for their health, whereas they reported an infrequent consumption of fruits and vegetables. Multifaceted strategies to promote healthy eating habits emerged from adolescents’ accounts, including public awareness campaigns, nutrition education programmes, nutrition label standards and regulations, and changes in food availability and affordability. Conclusions: Results from the present work suggest that co-creation with adolescents may be an effective way to inform the development of strategies to promote healthier eating habits. The strategies suggested by adolescents were mainly focused on behaviour change communication, who emphasised the importance of social media and the involvement of celebrities and influencers. The need for educational and communication strategies to raise awareness of the social and environmental drivers of eating patterns among adolescents was identified. Major changes are needed both with regard to what we eat and how food is produced. The latter is the focus of the present research, specifically the rise of controlled environment agriculture. In this context, empirical research is presented on consumer attitudes to vertical farming (VF) (i.e., indoor plant factory with artificial lighting), conducted in four countries (USA, UK, Singapore, and China) using online surveys (637–683 participants per country with matched gender and age group distributions). A multi-method research approach was used, including a novel methodology of text highlighting, which requires that participants read a descriptive text about VF with mentions of pros and cons and use highlighter functions to select aspects of the text that they ‘like’ and ‘dislike’. Based on the information provided in the text, attitudes towards VF were largely positive in the four  countries. The characteristics of VF that aligned with the United Nations Sustainable Development Goals were identified as key drivers of positive attitudes (i.e., higher yield, reduction of carbon emissions, and securing access to food). On the other hand, high energy use and premium prices contributed to negative attitudes about VF. Although the majority of participants responded to the text with an overall positive attitude towards VF, there were smaller groups of participants in every country who expressed a negative or neutral/ambivalent attitude. These between-segment differences were larger than cross-cultural differences, although the latter did exist, particularly for selected aspects of VF. For example, Chinese participants tended to be the least negative about the use of robots to help planting and harvesting. Future research is needed to understand consumer responses to aspects VF not covered in the text (e.g., powering VF with renewable energy, product range), and consumer insights about VF should be sought in other countries. Whey is an abundantand sustainable source of bioactive peptides obtained from cheese making process. Whey proteins such as α-lactalbumin can be biologically active when the bioactive peptides encrypted in the amino acid sequence of the native protein are released by enzymatic hydrolysis. In the present work, the identification, sequence analysis, and antioxidant activity of bioaccessible peptides from α-lactalbumin alcalase-hydrolysate was assessed. Antioxidant activity (ABTS, ORAC, andHORAC) of α-lactalbumin showed a significant increase (p < 0.05) after the enzymatic treatment with alcalase and this capacity increased even more after the simulation of the gastrointestinal digestion process. Peptides contained in the gastrointestinal digest of α-lactalbumin hydrolysate were separated by preparative RP-HPLC (55 fractions), and three peptides were identified by LC-MS/MS analysis from selected fractions: IWCKDDQNPH (MW: 1254.54 Da) f(59-68), KFLDDDLTDDIM (MW: 1439.64 Da) f(79-90), DKFLDDDLTDDIM (MW: 1554.67 Da) f(78-90). Among the chemically synthesized peptides, IWCKDDQNPH showed the highest antioxidant capacity determined byORAC,ABTS, andHORAC assays (IC50 0.015± 0.002, 0.45 ± 0.02, and 1.30 ± 0.05 mg/ml, respectively) and this activitymay be related to the amino acid sequence. This is the first report where these bioaccessible peptides from α- lactalbumin hydrolysate were identified. The α-lactalbumin hydrolysate could be employed as a functional antioxidant ingredient. This abolishes the advantage of isolating ready-to-use affinity binders and creates the risk of affecting the polypeptide activity. To circumvent this problem, we optimized the phage display system to produce phage particles that express the affinity binder on pIII and a polyglycine short peptide fused to pVIII that allows the covalent attachment of tracer molecules employing sortase A. Using a llama heavy chain only variable domain (VHH) against the herbicide 2,4-D on pIII as the model, we showed that the phage can be extensively decorated with a rhodamine-LPETGG peptide conjugate or the protein nanoluciferase (Nluc) equipped with a C-terminal LPETGG peptide. The maximum labeling amounts of rhodamine-LPETGG and Nluc-LPETGG were 1238 ± 63 and 102 ± 16 per phage, respectively. The Nluc-labeled dual display phage was employed to develop a phage bioluminescent immunoassay (P-BLEIA) for the detection of 2,4-D. The limit of detection and 50% inhibition concentration of P-BLEIA were 0.491 and 2.15 ng mL−1, respectively, which represent 16-fold and 8-fold improvement compared to the phage enzyme-linked immunosorbent assay. In addition, the P-BLEIA showed good accuracy for the detection of 2,4-D in spiked samples. The effect on color of the initial pH employed in dulce de leche (DL) production was evaluated through physicochemical and spectroscopical characterization of the melanoidins formed in the process. Melanoidins originated at pH values of 6.5, 7.0, and 7.5, and they were released by the enzymatic hydrolysis of the protein backbone and purified by gel filtration. They showed a significant degree of polydispersity, in general, with molecular weights (MWs) below 1,800 Da. The metabolic alterations associated with the increase in milk production make the transition period critical to the health of dairy cows, usually leading to a higher incidence of disease in periparturient animals. In this manuscript, we describe the use of NMR-based untargeted metabolomics to follow how these changes impact the serum metabolome in a group of 28 transition dairy cows with no initial clinical diseases. Principal component analysis (PCA) of serum 1H NMR data from four weeks before calving to 8 weeks after parturition allowed us to clearly identify four stages during the transition period. Pairwise comparisons using orthogonal partial least square discriminant analysis (OPLS-DA) and univariate data analysis led to the identification of 18 metabolites that varied significantly through these stages. Species such as acetate, betaine, and creatine are observed early after calving, while other markers of metabolic stress, including acetone, �-hydroxybutyrate (BHB), and choline, accumulate significantly at the height of milk production. Furthermore, marked variations in the levels of lactate, allantoin, alanine, and other amino acids reveal the activation of different gluconeogenic pathways following parturition. Concomitant with a return to homeostasis, a gradual normalization of the serum metabolome occurs 8 weeks after calving. Correlations of metabolite levels with dietary and metabolic adaptations based on animal parity could also be identified. Overall, these results show that NMR-based chemometric methods are ideally suited to monitor manifestations of metabolic diseases throughout the transition period and to assess the impact of nutritional management schemes on the metabolism of dairy cows. Objective: To analyse the process for the development and implementation of mandatory nutritional warning labels inUruguay, in order to inform future nutrition policy making and strategic engagement by public health actors. Design: The study design drew on policy analysis methodology  and case study research methodology. Two main sources of information were selected and analysed for the current study: eighteen official documents from the Uruguayan government and 259 news reports, published between June 2017 and February 2021. Setting: Uruguay, Latin America. Results: The Uruguayan Ministry of Public Health led a cross-sectoral working group composed of diverse governmental stakeholders, international organisations and the academia to develop the front-of-package nutrition labelling policy. A robust evidence-based approach, based on rigorous scientific knowledge generated in the country, was followed. However, changes in the systemic governing coalition as a consequence of a change in government led to a delay in the entry into force and changes in the regulation. The food industry was the main opponent to the warning label regulation and relied on widely reported corporate political activities to influence the policy process: information and messaging, legal action, policy substitution, opposition, fragmentation and destabilisation. Conclusions: Key insights to inform future policy action in Uruguay and other jurisdictions were derived. Results stressed the importance of an evidence-based approach for policy design and the early engagement with actors from all the political system. Glutaric acid and adipic acid are dicarboxylic acids (DCAs) that are commonly found in atmospheric aerosols and cloud droplets. Within this study, the temperature- and pH-dependent rate constants of aqueous-phase OH radical reactions of these two DCAs were determined through the competition kinetics method. The following Arrhenius expressions were derived for the temperature dependency of the OH radical reaction with glutaric acid: k(T, H2A) = (3.9 ± 0.1) × 1010 × exp[(−1270 ± 200 K)/T], k(T, HA−) = (2.3 ± 0.1) × 1011 × exp[(−1660 ± 190 K)/T], k(T, A2−) = (1.4 ± 0.1) × 1011 × exp[(−1400 ± 170 K)/T]. Similarly, for adipic acid: k(T, H2A) = (7.5 ± 0.2) × 1010 × exp[(−1210 ± 170 K)/T], k(T, HA−) = (9.5 ± 0.3) × 1010 × exp[(−1200 ± 200 K)/T], k(T, A2−) = (8.7 ± 0.2) × 1010 × exp[(−1100 ± 170 K)/T] (in units of L mol−1 s−1). Density functional theory (DFT) calculations were performed to calculate the energy barrier of the H atom abstraction. The calculation results show that the energy barriers at the Cβ-atoms of the two DCAs are much lower than those at the Cα-atoms, indicating that the H atom abstractions predominantly occur at the Cβ-atoms. The increased ·OH rate constant in the case of the deprotonated form can be explained by the reduction of energy barrier, which is predominately caused by the variation of the inductive effect of the carboxyl group. As an important sink in the atmosphere, the degradation of glutaric acid and adipic acid by ·OH under atmospheric conditions can be accurately described by the Arrhenius expressions obtained. In May 2020, Uruguay was one of the few Latin American countries that had managed to control the outbreak of COVID-19 without mandatory curfews or quarantines. However, several social distancing measures created a major disruption in different aspects of the daily life of Uruguayan citizens. In this context, the objectives of the present work were i) to identify changes in eating habits perceived by Uruguayan citizens as a consequence of the COVID-19 pandemic, and ii) to explore factors associated with different perceived changes on eating habits. A cross-sectional online study was conducted with 891 participants, recruited using an advertisement on Facebook and Instagram. Fifty-one percent of the participants indicated that their eating habits had changed since the detection of the first cases of COVID-19 in Uruguay. Large heterogeneity in the categorization of the changes existed: 45% of the participants regarded the changes as positive, 32% as negative and 23% as neither positive nor negative. A multinomial logistic regression analysis was used to study the influence of explanatory variables in the likelihood of belonging to groups who reported different changes in eating habits (no changes, positive, negative, or neither positive nor negative changes). Household income and reliance on instrumental and emotional support increased the likelihood of reporting positive changes in eating habits, whereas negative changes were associated with a reduction in household income due to COVID-19 and the coping strategies selfdistraction and self-blaming. Insights for policy making to reinforce positive effects and minimize threats to healthy eating are discussed. In the search of antimicrobial agents a novel bisthiazole ligand containing a methylamine linker (ethyl 2-((2-methylthiazole-4-yl)methylamino)thiazole-4-carboxylate (BTa) and its copper(II) complex [CuCl2BTa]⋅2H2O were synthetized. Both compounds were characterized by analytical and spectroscopic methods. Single crystal Xray diffraction of copper complex evidence a pentacoordinated copper(II) center of intermediate geometry forming 5 and 7 membered chelate rings with BTa acting as a tridentate ligand leaving the amine N–H group in the thiazole linker available for participation in intermolecular interactions. Structure packing was analyzed by means of Hirshfeld surfaces, 2D fingerprint plots and lattice interaction energies were assessed. In order to deepen the understanding of the coordination to the flexible ligand DFT studies were carried out at the B3LYP/LANL2DZ level of theory. Calculated FTIR frequencies were used to perform a Vibrational Energy Distribution Analysis (VEDA) where potential energy distribution of vibrational was determined. Minimum inhibitory concentrations for BTa and CuBTa on E. coli ATCC 25922, S. aureus ATCC 25923, P. aeruginosa ATCC 9027 and C. albicans ATCC 10231 were determined.
