Abstract
A summary of the resource.
Treatment of [Ag((CF3)2pz)]or [Ag(tBu,C3F7)pz)]3 (pz = pyrazolate) with various stable N-heterocyclic carbenes (NHC) afforded silver(I) complexes containing pyrazolate and NHC ligands in 10–81% crystalline yields. These complexes were analyzed by spectral and analytical techniques and by X-ray crystal structure determinations. The solid state structures showed monomeric, dimeric, or tetrameric formulations, depending upon the pyrazolate and NHC substituents. To evaluate their potential as thin film growth precursors, [Ag(( CF3)2pz)][Ag(tBu,C3F7)pz)3,and the new complexes were evaluated by thermogravimetric]3, analyses, sublimation studies, thermal decomposition temperatures, and solution reduction experiments with potential reducing agents. The decomposition temperatures were higher for complexes containing (CF3)2pz ligands (203 to 293o.C) than for those containing (tBu,C3F7) pz ligands (160 to 200o.C). The complexes sublimed between 110 and 140 �C at 0.2 Torr. Solution reactions of several complexes with aqueous hydrazine, 1,1-dimethylhydrazine, formic acid, and tBuNH2 led to the formation of silver metal. Several of the new complexes have promising precursor properties for use in thin film growth by the atomic layer deposition and chemical vapor deposition techniques.

Tannat is a red variety of Vitis vinifera that has becomethe major variety for the production of premiumred wines in Uruguay. Due to its small cultivation around theworld, research on the viticulture and enology of this variety is still necessary to improvewine quality. In this context, the aimof the presentworkwas to characterize the aroma profile of Uruguayan Tannat wines using chemical and sensory methodologies. The volatile composition of ten Uruguayan Tannat wines, sold in the international market, was studied by gas-chromatography (GC–MS). Sixty two volatile compounds were identified using GC–MS, being alcohols and esters the most abundant compounds. Only few volatile compounds were found at concentrations higher than their odor threshold in all samples. Sensory characterization of wine aroma was characterized by a panel of wine professionals using projective mapping. Red fruits, fruity, dry fruits, and woody were the main descriptors used for describing similarities and differences in the aroma profile of the wines. Projective mapping sorted samples into four main groups. Partial least square regression (PLSR) enabled to explain many of the most important sensory descriptors (woody, earthy, phenolic, sulfur, chemical and microbiological) through volatile composition.

<p>Chemical bioprospecting is an important tool for generating knowledge regarding local human-threatened floras and for conservation management. For Baccharis L. (Asteraceae), several volatile components have been reported for Brazil, Argentina, Bolivia, and Chile as a result of bioprospection, but not for Uruguayan flora, which is composed of more than 50 native species. In this work, through collection of aerial parts of different species and volatile simultaneous-distillation extraction and gas chromatography-mass spectrometry analyses, twelve native species of Baccharis were studied (B. articulata, B. cultrata, B. genistifolia, B. gibertii, B. gnaphalioides, B. ochracea, B. phyteumoides, B. punctulata, B. crispa, B. dracunculifolia, B. linearifolia subsp. linearifolia, and B. spicata). A detailed analysis of the male and female volatile composition was conducted for the last four species. The profiles of B. cultrata, B. genistifolia, B. gibertii, and B. gnaphalioides are reported for the first time. Because half of the species analyzed in this work are in Uruguay and are threatened or potentially threatened by human economic activities, the importance of their conservation as natural, sustainable resources is highlighted</p>

A summary of the resource.
Microbial agents exert their biocontrol effects through different mechanisms of action. Clavispora lusitaniae AgL21, a yeast capable of controlling postharvest diseases in lemon, produces volatile organic compounds (VOCs) impairing phytopathogenic fungi. Here we elucidate the nature of such compounds and check individual effects on mycelial growth of citrus fungal pathogens: Penicillium digitatum, Penicillium italicum, and Geotrichum citri-aurantii. VOCs characterization was carried out deploying solid-phase microextraction/gas chromatography mass spectrum techniques. Among the compounds produced by C. lusitaniae AgL21, ethyl acetate, isoamyl ac etate, 3-methyl butanol, and phenethyl alcohol displayed the highest relative abundance. Synthetic ethyl acetate, tested in vitro on P. digitatum, had no discernable effect on mycelial growth, whereas isoamyl acetate and both of the above alcohols exhibited fungistatic and fungicidal effects, respectively. The data provided in this study prove for the first time, that VOCs released by C. lusitaniae AgL21 are able to take part in antagonistic activities against citrus postharvest fungal pathogens.

A summary of the resource.
In this study the strategy of isolating psychrotrophic, non-pectinolytic yeasts able to grow in apple juice as potential biocontrol agents was a successful approach. Thirty-four yeasts isolated from Antarctic were able to maintain rot incidence caused by P. expansum and B. cinerea under 25% on apples stored at 0–1 °C. Two of the isolates, identified as Candida sake, produced antifungal volatile organic compounds (VOCs) which inhibited the growth of five pathogens of apple (P. expansum, B. cinerea, A. alternata, A. tenuissima, and A. arborescens). This is the first report of VOCs produced by C. sake, as well as the first study of the inhibitory activity of VOCs produced by yeasts against species of Alternaria that cause postharvest apple rot. In vitro studies were performed on Apple Juice Agar at 0 °C and 25 °C due to the importance of evaluating antifungal activity in similar conditions to where the biocontrol agent are intended to be used. The VOCs produced by Candida sake strain 41E were also effective on in vivo assays to control P. expansum in Red Delicious apples.

La generación de especies volátiles consiste en la transferencia de un elemento en forma de ion o compuesto orgánico, desde la fase condensada (líquida generalmente) a la gaseosa mediante una reacción de reducción que resulta en la formación de un derivado que se desprende de la solución y se transporta mediante un gas inerte a una celda de atomización para determinarse por espectrometría atómica. Inherentemente el analito es preconcentrado, por lo que se mejoran los límites de detección y de cuantificación. Al separarse de la matriz, la interacción con la misma se limita disminuyendo y controlando las potenciales interferencias. Como no todas las especies de los elementos son capaces de ser volatilizadas, posibilita la especiación química. La formación de derivados volátiles puede realizarse química, fotoquímica y electroquímicamente. La primera es la más utilizada en los laboratorios de Química Analítica; emplea tetrahidroborato de sodio como agente reductor, genera hidruros volátiles y la determinación se realiza por espectrometría de absorción atómica. El presente trabajo propone el uso de fotones y electrones como alternativa limpia al tetrahidroborato, que es un reactivo ecotóxico, de elevado precio dada la elevada pureza en la que debe emplearse, inestable en solución acuosa y hoy por hoy cada vez más difícil de conseguir su importación. Esta estrategia representa un desafío tanto analítico como operativo ya que no hay experiencia de su uso en nuestro laboratorio, requiriéndose además el diseño y construcción de reactores adecuados. Dentro de los procedimientos experimentales implementados destaca en lo referente a la generación química, el desarrollo de un sistema en flujo para la determinación de selenio por espectrometría de absorción atómica mediante generación de hidruros por inyección secuencial y la determinación de plomo con espectrometría de emisión atómica en plasma inducido por microondas como sistema de detección. Si bien se diseñó y construyó una celda electroquímica los resultados obtenidos no fueron los esperados. Para la generación fotoquímica se construyó un reactor “in-house” y se empleó uno comercial, siendo el último el de mejor desempeño. Se desarrollaron metodologías para la determinación de mercurio y de selenio a niveles traza, elaborándose también una estrategia para la eliminación de nitrato que es uno de los principales limitantes al empleo de la técnica. En todos los casos se evaluaron las variables de influencia que afectan la formación del derivado volátil y se realizó un estudio de los principales interferentes. Las metodologías fueron optimizadas y caracterizadas, corroborándose su aplicabilidad con materiales de referencia certificados o muestras aditivadas. Los resultados obtenidos aportaron nuevos conocimientos a nuestra área, iniciando una línea de investigación en la que se va a continuar trabajando.

In the present work, the voltammetric profiles of Au-pc in 1 mM solutions of K[ReVOCl2(L)] (L = dianions of H2hida or H2eida; hida, n-(2,6-dimethylphenyl carbamoylmethyl)imino diacetic acid, and eida, 2,6-diethyl ida) complexes were evaluated. The obtained electrochemical response was the result of the contributions coming from the [ReO]3+ core (Epa at ca. 0.2 V vs. Ag/AgNO3) and the carboxylic group of the ligand. There where also observed redox contributions ascribed to the presence of perrhenate coming from the decomposition of the complex with the lost of ligands, in agreement with the low stability of the studied complexes.

The electrochemical behavior of trans-[Re(V)O2(en)2]I and trans-[Re(V)O2 (en)2]ClO4 (en=ethylenediamine) complexes was studied by cyclic voltammetry on Au electrodes. Experiments were performed in aqueous solutions at pH 7.0 and at room temperature. The complex voltammogram was characterized by Re-containing species, assigned to the [Re(V)O2(en)2]+/[Re(IV)O2(en)2] couple, and I-containing species. To overcome I interference, the electrochemical response of Re complexes was segregated by performing a reductive desorption of adsorbed I from Au.

A reliable method based on electrochemical measurements for the evaluation of protein interaction with small electroactive coordination compounds is proposed. Protein binding capacity of five different cationic Re(V) complexes was evaluated by means of voltammetric techniques in the absence and the presence of bovine serum albumin. The percentage of interaction between the complex and the protein was estimated from the quantitative decrease of the diffusion coefficient for the sole complex due to the addition of the protein, and therefore the formation of the protein–complex molecular ensemble. The proposed methodology was checked using cisplatin as a molecular complex probe.

A summary of the resource.
Front-of-package (FOP) nutrition labeling policies based on warning labels have become increasingly popular, particularly in the region of the Americas. Nutritional warning labels aim at highlighting products with excessive content of nutrients associated with noncommunicable diseases. The aim of the present narrative review is to summarize the evidence about the effects of nutritional warning labels on consumer perception and behavior, both before and after policy implementation. The existing evidence suggests that this FOP nutrition labeling increases consumer ability to interpret nutritional information and discourages the choice of unhealthy products. Further research is needed to better understand the effect of warning label policies on food choices and long-term population health as well as product reformulation.

Warnings have recently been proposed as a new type of directive front-of-pack (FOP) nutrition labelling scheme to flag products with high content of key nutrients. In the present work, this system was compared with the two most common FOP nutrition labelling schemes (Guideline Daily Amounts (GDA) and traffic-light system) in terms of goal-directed attention, influence on perceived healthfulness and ability to differentiate between products. Goal-directed attention to FOP labels was evaluated using a visual search task in which participants were presented with labels on a computer screen and were asked to indicate whether labels with high sodium content were present or absent. A survey with 387 participants was also carried out, in which the influence of FOP labels on perceived healthfulness and ability to identify the healthful alternative were evaluated. Warnings improved consumers’ ability to correctly identify a product with high content of a key nutrient within a set of labels compared with GDA and received the highest goal-directed attention. In addition, products with high energy, saturated fat, sugar and/or sodium content that featured warnings on the label were perceived as less healthful than those featuring the GDA or traffic-light system. Warnings and the traffic-light system performed equally well in the identification of the most healthful product. Results from the present work suggest that warnings have potential as directive FOP nutrition labels to improve consumer ability to identify unhealthful products and highlight advantages compared with the traffic-light system.

SARS-CoV-2 surveillance of viral populations in wastewater samples is recognized as a useful tool for monitoring epidemic waves and boosting health preparedness. Next genera tion sequencing of viral RNA isolated from wastewater is a convenient and cost-effective strategy to understand the molecular epidemiology of SARS-CoV-2 and provide insights on the population dynamics of viral variants at the community level. However, in low- and mid dle-income countries, isolated groups have performed wastewater monitoring and data has not been extensively shared in the scientific community. Here we report the results of moni toring the co-circulation and abundance of variants of concern (VOCs) of SARS-CoV-2 in Uruguay, a small country in Latin America, between November 2020—July 2021 using wastewater surveillance. RNA isolated from wastewater was characterized by targeted sequencing of the Receptor Binding Domain region within the spike gene. Two computa tional approaches were used to track the viral variants. The results of the wastewater analy sis showed the transition in the overall predominance of viral variants in wastewater from No-VOCs to successive VOCs, in agreement with clinical surveillance from sequencing of nasal swabs. The mutations K417T, E484K and N501Y, that characterize the Gamma VOC, were detected as early as December 2020, several weeks before the first clinical case was reported. Interestingly, a non-synonymous mutation described in the Delta VOC, L452R, was detected at a very low frequency since April 2021 when using a recently described sequence analysis tool (SAM Refiner). Wastewater NGS-based surveillance of SARS-CoV-2 is a reliable and complementary tool for monitoring the introduction and preva lence of VOCs at a community level allowing early public health decisions.This approach allows the tracking of symptomatic and asymptomatic individuals, who are generally under reported in countries with limited clinical testing capacity. Our results suggests that waste water-based epidemiology can contribute to improving public health responses in low- and middle-income countries.

Parasitic illnesses are major causes of human disease and misery worldwide. Among them, both amebiasis and Chagas disease, caused by the protozoan parasites, Entamoeba histolytica and Trypanosoma cruzi, are responsible for thousands of annual deaths. The lack of safe and effective chemotherapy and/or the appearance of current drug resistance make the development of novel pharmacological tools for their treatment relevant. In this sense, within the framework of the medicinal inorganic chemistry, metal-based drugs appear to be a good alternative to find a pharmacological answer to parasitic diseases. In this work, novel ruthenium complexes [RuCl2(HL)(HPTA)2]Cl2 with HL=bioactive 5-nitrofuryl containing thiosemicarbazones and PTA=1,3,5-triaza-7-phosphaadamantane have been synthesized and fully characterized. PTA was included as co-ligand in order to modulate complexes aqueous solubility. In fact, obtained complexes were water soluble. Their activity against T. cruzi and E. histolytica was evaluated in vitro. [RuCl2(HL4)(HPTA)2]Cl2 complex, with HL4=N-phenyl-5-nitrofuryl-thiosemicarbazone, was the most active compound against both parasites. In particular, it showed an excellent activity against E. histolytica (half maximal inhibitory concentration (IC50)=5.2 μM), even higher than that of the reference drug metronidazole. In addition, this complex turns out to be selective for E. histolytica (selectivity index (SI)>38). The potential mechanism of antiparasitic action of the obtained ruthenium complexes could involve oxidative stress for both parasites. Additionally, complexes could interact with DNA as second potential target by an intercalative-like mode. Obtained results could be considered a contribution in the search for metal compounds that could be active against multiple parasites.

TDS describes the evolution of the dominant sensory attributes during consumption. Dominance can be assessed as the sensation that captures the attention, the most striking, or the new sensation that pops up, but not necessarily the most intense. This wide definition implies that individual assessors within a panel might assess dominance differently, and even the same assessor could be using different strategies for determining the dominant attribute the same product evaluation. In this context, the aim of the present work was to explore how trained assessors and consumers conceptualize dominance and how the different interpretations and definitions of dominance might influence results of a TDS test. Two studies were performed, one study with a highly trained panel of 10 assessors and another study with 108 consumers. Trained assessors evaluated three bread samples via TDS and their conceptualization of dominance was explored through an immediate retrospective verbalization task. Consumers evaluated their temporal perception of a commercial milk chocolate sample and answered a series of open-ended questions. Results showed that dominance is a complex construct that is not related to a single aspect of sensory perception, and that different conceptualizations of dominance within a panel can hinder an accurate interpretation of results from TDS studies. Various aspects of dominance are highlighted and discussed: how attributes are selected, which are the drivers of transitions between dominant attributes, how the competitive effects of attributes and modalities are manifested, how some phenomena like dumping or dithering could happen at some stages and why. Practitioners are advised to ensure that their interpretation of TDS data is made within the context of the dominance definition they instructed assessors to use. Implications of the results for the application of TDS with trained assessors and consumers are discussed.

A summary of the resource.
The behaviour of wheat β-amylase from crude extracts in chromatography on agarose gels substituted with different ligand types was investigated. The enzyme displayed high salt promoted adsorption onto thiophilic gels provided with sulfone-thioether and 2-thiopyridine ligands. Quantitative recovery of the enzyme was easily accomplished by elution with buffer in the absence of Na2SO4. The 3-(2-pyridylthio)-2-hydroxypropylagarose (PyS-gel) also allowed elimination of pigments present in the wheat extract. These pigments showed no adsorption onto the gel, thus regeneration is easily achieved, allowing its re-use. The enzyme also displayed strong salt-dependent adsorption onto adsorbents provided with pyridyldisulfide moieties, but in this case enzyme binding was due to its thiol content since elution was achieved mainly through reduction with DTT. When the enzyme was chromatographed on a series of hydrophobic alkyl ligands in the presence of 0.5 M sodium sulphate, it was partially adsorbed on pentylagarose and quantitatively adsorbed on hexyl-agarose, elution being easily performed by sodium sulphate-free buffer. This behaviour was markedly different from that towards phenyl-Sepharose, to which the enzyme was strongly adsorbed and which required much more drastic elution conditions.

<p>Wheat (Triticum aestivum L.) flour is able to form dough with unique rheological properties that allow bread making. It is well known that wheat protein content affects dough rheological properties, but there is not enough evidence about the role of other minor flour constituents. One such minor constituent is non-starch flour polysaccharides, which are mainly pentosans formed by a xylopyranosyl linear chain branched with arabinofuranosyl residues. Their spatial distribution and branching pattern can affect their relationship with gluten forming proteins and thus influence their functional properties, the dough rheological properties, and thereby the flour baking quality. In this study the content and structural characteristics of non-starch polysaccharides were investigated, as well as their influence on some dough physicochemical parameters. Five different wheat flours samples milled from Uruguayan wheat varieties with diverse rheological and breadmaking properties were used in this study. Water soluble flour polysaccharides were extracted and the amount of pentosans was determined by the orcinol–HCl method. The pentoses composition was determined before and after acidic hydrolysis of the water soluble polysaccharide fractions by GC. No free pentoses were detected in any of the assayed flour samples, so the pentoses composition found in the hydrolyzed samples was attributed to the non-starch water soluble polysaccharides.Water unextractable non-starch polysaccharides were determined by difference between the total and the soluble non-starch polysaccharides flour content. <br />An improved method for the quantification of water extractable and non-extractable non-starch<br />polysaccharides, using baker’s yeast, was developed. Using this method, total and soluble non-starch polysaccharides content could reliably be determined both in whole flour and in pentosans enriched fractions. Free monosaccharide content was in the range from 0.03% to 0.06% (w/w), while the arabinose/xylose (Ara/Xyl) ratios varied from 0.8 to 1.4 in soluble non-starch polysaccharides and from 0.7 to 0.9 in total non-starch polysaccharides. The different Ara/Xyl ratios found for water extractable and unextractable arabinoxylans clearly indicates different substitution degrees in the polymers. Analysis of the dough rheological parameters in relation to the water soluble and non-soluble non-starch polysaccharides and the Ara/Xyl ratios from different wheat varieties was performed. A clear relation between some of these parameters could be inferred, since a direct relationship between total unextractable (AXi) content and resistance of dough to extension (P), as well an inverse relationship between the same parameter<br />and dough extensibility (L) were observed. These results suggest that the flour non-starch polysaccharide content, as well the Ara/Xyl ratios may be used as additional parameters to estimate some of the wheat flours dough properties.</p>

<p>The “River Disease” (RD), a disorder impacting honeybee colonies located close to waterways with abundant riparian<br />vegetation (including Sebastiania schottiana, Euphorbiaceae), kills newly hatched larvae. Forager bees from RD-affected<br />colonies collect honeydew excretions from Epormenis cestri (Hemiptera: Flatidae), a planthopper feeding on trees of S.<br />schottiana. First-instar honeybee larvae fed with this honeydew died. Thus, we postulated that the nectars of RD-affected<br />colonies had a natural toxin coming from either E. cestri or S. schottiana. An untargeted metabolomics characterization of<br />fresh nectars extracts from colonies with and without RD allowed to pinpoint xanthoxylin as one of the chemicals present in higher amounts in nectar from RD-affected colonies than in nectars from healthy colonies. Besides, xanthoxylin was also<br />found in the aerial parts of S. schottiana and the honeydew excreted by E. cestri feeding on this tree. A larva feeding assay<br />where xanthoxylin-enriched diets were offered to 1st<br />instar larvae showed that larvae died in the same proportion as larvae did when offered enriched diets with nectars from RD-colonies. These findings demonstrate that a xenobiotic can mimic the RD syndrome in honeybee larvae and provide evidence of an interspecific flow of xanthoxylin among three trophic levels. Further, our results give information that can be considered when implementing measures to control this honeybee disease.</p>

A summary of the resource.
Herein, we investigate bilayer graphene doped with second-row atoms using the LDA, M06-L, and VDWDF functionals. For 2–3 at.% or lower Al and P dopings the structure with a short interlayer distance and without a covalent bond between the heteroatoms is more stable than that with a covalent bond and longer interlayer separation. However, for Si the linked structure is more stable. Doped bilayer-graphene is prone to the attachment of more heteroatoms, as reflected by the large adsorption energies, which decrease in the following order Al > Si > P. We show that it is feasible to tune the electronic properties, and the interlayer-interaction energy varying the type or amount of second row atoms.

This paper aim to evaluate the ultrafiltration (UF) process for constituents recovery from whey. Sequences of factorial designs were performed by varying temperature (5 to 40°C) and pressure (1 to 3 bar), to maximize the proteins concentration using membrane of 100kDa in dead end system. Based on the best result new experiments were performed with membrane of 50kDa and 10kDa. With the membrane of 50 the protein retention was about 3 times higher than the membrane of 100kDa. The concentrated obtained by UF membrane of 10kDa, 10°C and 2 bar in laboratory scale showed a mean protein retention of 80 %, greater protein solubility, emulsion stability and the identification of β-lactoglobulins (18.3 kDa) and α-lactalbumin fractions (14.2kDa). Therefore, the use of membrane of 100 and 50kDa are became a industrially recommendable alternatives to concentration of whey proteins, and/or as a previous step to the fractionation of whey constituents using membrane ≤10kDa, aiming at future applications in different areas (food, pharmaceutical, chemical, etc.).

La inclusión de TIC en educación no implica en sí misma innovación ya que las tecnologías pueden usarse para la permanencia de modelos educativos inmutables y por tanto la adecuación y los alcances de la incorporación deben ser analizados. Con el objetivo de aportar elementos para la reflexión sobre las posibilidades de incorporar herramientas que permitan apoyar los procesos de enseñanza y de aprendizaje, se analizan los resultados obtenidos a partir de una experiencia realizada dentro del Departamento de Química Orgánica de la Facultad de Química, Universidad de la República. El presente trabajo analiza el uso de la herramienta wiki como parte del curso Laboratorio de Química Orgánica correspondiente a tercer año de todas las carreras de la Facultad de Química (Universidad de la República) a través de los informes elaborados, los registros de la plataforma y de las opiniones vertidas por los participantes de la experiencia.
