Food waste threatens the sustainability of global food systems, with fruits and vegetables representing the largest share. A significant share of this waste stems from fruit and vegetable parts perceived as inedible, where culturally sensitive barriers to their consumption arise. This study explored consumers' perception of edibility and self-reported consumption of various fruit and vegetable parts in Uruguay. An online study with 531 participants used images to assess perceived edibility; respondents indicated reasons for non-consumption or described typical preparation methods. Although most participants recognized parts such as peels, stems, and seeds as edible, a relevant proportion did not consume them regularly. Reported barriers included safety concerns, sensory characteristics, and ingrained habits. Food reformulation is widely recognised as a cost-effective policy to reduce sodium intake and improve public health outcomes. The objectives of the study were to: i) assess the sodium content of food products available in the Uruguayan market, ii) evaluate progress in achieving regional sodium reduction benchmarks; and iii) compare maximum targets and gradual percentage reductions considering potential effectiveness and sensory perception thresholds. Information about sodium content was extracted from the food labels of 4,719 products available at nine supermarkets. The median sodium content of the products was 389.3 mg/100g. When comparing median sodium content to the targets set by the Pan American Health Organisation for 2021, 32 of the 62 subcategories exceeded the established benchmarks, while 30 subcategories fell below them. Adopting regional targets would necessitate sodium reductions exceeding the 15% difference threshold for salty taste for a large proportion of products, potentially leading to noticeable changes in taste. At the aggregate level, percentage reductions were significantly more effective in reducing sodium content compared to maximum target strategies based on the 50th or 70th percentile. Results from the present work underscore the need to adapt regional targets for the development of a sodium reduction program in Uruguay. The World Health Organization (WHO) has recently published a guideline that recommends against the use of nonsugar sweeteners. Food labels are a key source of information for consumers, to enable them to make informed decisions regarding the consumption of food additives. However, discrepancies in the concepts and categorizations of sweeteners in labeling recommendations and regulations may influence the results of studies on the prevalence of sweeteners in foods. This study aimed to analyze the scientific literature related to the declaration of sweeteners on food labels. Focus was placed on methodological issues related to data collection and analysis, including the categorization of sweeteners, as well as on the reported prevalence of sweetener declaration on food labels. A scoping review was conducted based on a search for terms related to sweeteners, food labeling, and packaged foods. Nine studies, published between 2012 and 2022, were included. Variability among studies was observed in terms of data collection methods, approaches for identifying the sweeteners declared on food labels, the criteria for categorizing sweeteners, and the definitions underlying the categorization. Moreover, there was a lack of standardization in the bibliographic sources consulted in formulating the categorization, and failure to report specific sources, leading to heterogeneity in the substances regarded as sweeteners. The prevalence of the declaration of sweeteners in food labeling ranged from less than 1% to 43.6%. The findings of the present work emphasize the need to standardize the methodologies used for the identification of sweeteners declared on food labels and the criteria for their categorization. Kefir granules are a complex microbial consortia with numerous properties, among which their antifungal action has been reported. This study characterized the antifungal activity of water kefir granules and two microorganisms isolated from them, identified as Saccharomyces cerevisiae and Geotrichum candidum, against aflatoxigenic Aspergillus flavus. Experiments were carried out in vitro and under minisilo conditions designed to simulate the aerobic phase of commercial corn storage. In dual culture plate assays, A. flavus was inhibited in close contact with both antagonists, and mycelial weakening with lower conidia production was observed. Cell-free supernatants of both antagonists inhibited conidial germination by 92% (G. candidum) and 65% (S. cerevisiae). Non-contact assays between A. flavus and antagonists indicated that volatile organic compounds (VOCs) also contributed to inhibition, reducing mycelial growth by 29.1% (G. candidum) and 37.9% (S. cerevisiae). In corn minisilo trials water kefir granules and both antagonists showed strong antifungal activity by day 4, with qPCR of A. flavus DNA and aflatoxin measurements indicating near complete inhibition. As mixed consortia, water-kefir granules inherently include lactic acid bacteria whose rapid acidification and diffusible metabolites complement antifungal compounds produced by other components of the consortia, supporting a multi-mechanistic mode of action. Given the compositional heterogeneity of kefir granules, strain-level identification and verification of safety and regulatory status for the intended use are essential prior to food or feed applications. The demonstrated antifungal efficacy of kefirderived microorganisms in mini-silos underscores their scale-up potential for postharvest protection of corn. The biochemical composition of sediments, which depends on the origin of the organic matter (OM), is decisive in methane ( CH4) production. This study aimed to determine the CH4 produced under anaerobic conditions from different substrates: native reservoir sediments and sediments with the addition of complex OM from Microcystis spp. blooms and terrestrial plants (pasture), alongside the biochemical characterization of the substrates used. The biochemical composition of the sediments explained the differences in CH4 production rate (μmol/g OM/day). Positive correlations were found between CH4 production rate and proteins (PRT) (r = 0.695), lipids (LIP) (r = 0.582), TN (r = 0.605), and biopolymeric carbon (BPC) (r = 0.784). Principal component analysis showed an association of CH4 production rate with PRT, LIP, TN, and BPC concentrations, sharing the same direction of the vectors. The addition of Microcystis bloom and pasture to the sediments significantly increased the rate and production of CH4 compared to native sediments, with higher values for bloom addition. In the studied reservoirs, cyanobacteria biomass is a very important source of organic matter to the sediments and a support for methanogenesis. Nonetheless, OM from surrounding vegetation, mainly pastures, could also play a significant role during events that increase reservoir levels, generating important CH4 emission “hot spots” at the periphery of the reservoirs. Here, we present a proof-of-concept approach to study the effect of critical micelle concentration on alkyl sulfonate amphiphilic species response using organic electrochemical transistors (OECT) working in the accumulation mode. First of all, the drastic enhancement of the OECT response allows us to estimate the critical micelle concentration of alkyl sulfonate amphiphilic species yielding quite similar values compared to bulk solution conductivity experiments reported in the literature. Above the critical micelle concentration (i.e. 100 mM), the best responsive OECT devices yielded ON/OFF ratios of 30–60, maximum normalized transconductance of g max ¼ 1:99 1:39 mS cm 1 and threshold voltage of Vth = 0.39–0.55 V at Vg = 1.0 V. Our impedance spectroscopy studies performed at ON and OFF modes suggested that, in the presence of a sufficiently strong negative gate voltage (Vg = 1.0 V), not only the sodium counterions are ejected from the interface, but also the amphiphilic molecules from the monolayer probably reverse their orientation and get injected into the P3HT region. In this scenario, the sulfonate groups of the amphiphilic species synchronously induce doping of P3HT thus leading to a drastic enhancement of the channel current above the critical micelle concentration. Our results indicate that OECT devices represent a promising platform to estimate the critical micelle concentration of amphiphilic species but also to study the formation of amphiphilic monolayers of more complex systems of biological interest. Although tumor immunotherapy is a major advancement in cancer treatment, its effectiveness in pancreatic cancer remains limited, particularly owing to the unique characteristics of the tumor microenvironment. Nano-delivery systems offer a promising approach for overcoming the dense stromal barrier, which is crucial for enhancing the therapeutic efficacy. In this review, we systematically summarize key immunotherapeutic targets, including cancer-associated fibroblast (CAF), immune cells (tumor-associated macrophage (TAM), myeloid-derived suppressor cell (MDSC), regulatory T cells (Treg), tumor-associated neutrophil (TAN), CD4+T, CD8+T cells), extracellular matrix (ECM), and discussed regulatory strategies in pancreatic cancer based on its pathogenesis and recent clinical advances to guide target selection. We then detail the physicochemical properties of nano-delivery systems suitable for pancreatic cancer and outline how tumor microenvironment-responsive linkers can enable particle size or charge conversion. Furthermore, we review the latest research progress on various nano-delivery systems (Lipid-based nanoparticle, Hydrogel/microneedle, Inorganic nanoparticle, Cancer vaccine, Adoptive cell therapy, Exosome/vesicle, Bacteria/virus) to inform the design of pancreatic cancer nanocarriers.
