<p>Thione S-methylide, parent species of the thiocarbonyl ylide family, is a 1,3-dipolar species on the [C2SH4] potential energy surface, not so much studied as its isomers, thiirane, vinyl thiol, and thioacetaldehyde. The conrotatory ring-closure reaction toward thiirane was studied in the 90s, but no complete analysis of the potential energy surface is available. In this paper, we report a computational study of the reaction scheme linking all species. We employed several computational methods (density functional theory, CCSD(T) composite schemes, and CASSCF/CASPT2 multireference procedures) to find the best description of thione S-methylide, its isomers, and transition states. The barrier from thiirane to thione Smethylide amounts to 52.2 kcal mol−1 (against 17.6 kcal mol−1 for the direct one), explaining why thiocarbonyl ylides cannot be prepared from thiiranes. Conversion of thiirane to vinyl thiol implies a large barrier, supporting why the reaction has been observed only at high temperatures.<br />Fragmentations of thiirane to S(3P) or S(1D) and ethylene as well as decomposition to hydrogen sulfide plus acetylene were also explored. Triplet and singlet open-shell species were identified as intermediates in the fragmentations, with energies lower than the transition state between thiirane and vinyl thiol, explaining the preference of the latter at low temperatures.</p>

<p>The genus Echinococcus of cestode parasites includes important pathogens of humans and livestock animals.<br />Transcriptomic and genomic studies on E. granulosus and E. multilocularis uncovered striking expansion of monodomain Kunitz proteins. This expansion is accompanied by the specialization of some family members away from the ancestral protease inhibition function to fulfill cation channel blockade functions. Since cation channels are involved in immune processes, we tested the effects on macrophage physiology of two E. granulosus Kunitztype inhibitors of voltage-activated cation channels (Kv) that are close paralogs. Both inhibitors, EgKU-1 and EgKU-4, inhibited production of the Th1/Th17 cytokine subunit IL-12/23p40 by macrophages stimulated with<br />the TLR4 agonist LPS. In addition, EgKU-4 but not EgKU-1 inhibited production of the inflammatory cytokine IL-<br />6. These activities were not displayed by EgKU-3, a family member that is a protease inhibitor without known<br />activity on cation channels. EgKU-4 potently inhibited macrophage proliferation in response to M-CSF, whereas EgKU-1 displayed similar activity but with much lower potency, similar to EgKU-3. We discuss structural differences, including a heavily cationic C-terminal extension present in EgKU-4 but not in EgKU-1, that may explain the differential activities of the two close paralogs.</p>

Muchas industrias generan un gran volumen de aguas residuales que contienen col-orantes, los cuales son compuestos tóxicos y recalcitrantes. El objetivo principal de este estudiofue examinar la capacidad bioadsortiva de la biomasa de la levadura antártica Debaryomyceshansenii F39A, en presencia de los colorantes azul reactivo 19 y rojo reactivo 141. Se estudiaronalgunas variables del proceso, incluyendo el pH, la concentración de colorante y de adsorbenteutilizada y el tiempo de contacto. La capacidad de adsorción se incrementó al aumentar laconcentración del adsorbato hasta 350 mg/L. Los datos de las isotermas obtenidas experimen-talmente se ajustaron con el modelo de Langmuir, donde la capacidad máxima de adsorción(Qmáx) para ambos colorantes se encuentra dentro del rango 0,0676-0,169 mmol/g de biomasa.A una concentración inicial de 100 mg/L de adsorbato en presencia de 2 g/L de adsorbente a20 ? 1 ?C y un valor de pH = 6, D. hansenii F39A fue capaz de adsorber aproximadamente un 90%del rojo reactivo 141 y un 50% del azul reactivo 19. Cuando la concentración de biomasa seincrementó (6 g/L), la remoción del azul reactivo 19 alcanzó el 90%. El proceso de adsorciónpara cada colorante sigue una cinética de pseudo segundo orden. D. hansenii tiene el potencialde remover eficientemente los colorantes estudiados, a través de un proceso de bioadsorcióny puede considerarse una alternativa a otros materiales adsorbentes de mayor costo.

<p>The “River Disease” (RD), a disorder impacting honeybee colonies located close to waterways with abundant riparian<br />vegetation (including Sebastiania schottiana, Euphorbiaceae), kills newly hatched larvae. Forager bees from RD-affected<br />colonies collect honeydew excretions from Epormenis cestri (Hemiptera: Flatidae), a planthopper feeding on trees of S.<br />schottiana. First-instar honeybee larvae fed with this honeydew died. Thus, we postulated that the nectars of RD-affected<br />colonies had a natural toxin coming from either E. cestri or S. schottiana. An untargeted metabolomics characterization of<br />fresh nectars extracts from colonies with and without RD allowed to pinpoint xanthoxylin as one of the chemicals present in higher amounts in nectar from RD-affected colonies than in nectars from healthy colonies. Besides, xanthoxylin was also<br />found in the aerial parts of S. schottiana and the honeydew excreted by E. cestri feeding on this tree. A larva feeding assay<br />where xanthoxylin-enriched diets were offered to 1st<br />instar larvae showed that larvae died in the same proportion as larvae did when offered enriched diets with nectars from RD-colonies. These findings demonstrate that a xenobiotic can mimic the RD syndrome in honeybee larvae and provide evidence of an interspecific flow of xanthoxylin among three trophic levels. Further, our results give information that can be considered when implementing measures to control this honeybee disease.</p>

<p>Recent reports are focusing on the structural evolution from the<br />atomic-scale and also at the expenses of alkyl zinc alkoxide<br />precursors towards (ZnO)n clusters and nanostructures with<br />different interesting motifs, but still not much is known about<br />their electronic properties. In this manuscript, we present a<br />theoretical study using DFT and TD-DFT methodologies on the<br />hydrolysis and condensation of zinc dimethoxide precursor in<br />its monomeric, dimeric and trimeric forms towards thermodynamically stable hydroxyl-terminated (ZnO)n clusters with novel chain- and graphene-like fashions. For all cases, distinct vibrational and optical spectra features were assigned evidencing a global monotonic decrease in the opto-electronic gap with increasing oligomerization and cyclization stages. In addition, the electron-affinity of all clusters was also observed to be enhanced with increasing oligomerization and cyclization<br />stages and the electronic charge localization in -e charged<br />clusters was observed to be strongly related to the presence of<br />zinc-oxo subunits and other particular structural features. Our<br />calculations also indicate that the stabilization through hydroxyl<br />termination of both chain- and graphene-like ZnO clusters not<br />only could be a promising driving force to obtain larger atomicscale 1D and 2D nanostructures but also envisage interesting properties, particularly as electronic acceptor materials for energy applications.</p>

A summary of the resource.
<p>This study presents a novel application of the heterogeneous solar photo-Fenton process using an iron-pillared clay (Fe-PILC) as a photocatalyst under natural sunlight. The Fe-PILC is characterized by thermogravimetric analysis, EDXRF, SEM and nitrogen adsorption–desorption isotherms. The solar photo-reactor consists of a tubular borosilicate tube with a compound parabolic collector (CPC) and two different materials as reflective material for performance comparison. Phenol is used as model pollutant. The catalytic tests are monitored by the<br />concentration of the pollutant, intermediates and the iron leaching, as well as the accumulated energy during the reaction time. Complementary catalytic tests allowed to establish the influence of parallel processes that could contribute to phenol removal. Experimental data proved that the Fe-PILC is active as heterogenous catalyst in photo-Fenton like processes promoted by natural solar radiation. The catalyst showed good stability in the process and allowed a 99%+ removal of the pollutant and its intermediates. Fenton, photolysis and adsorption do not contribute significantly to phenol removal. Finally, when comparing different reflective materials in the CPC, the aluminium sheet proved to be more efficient than the polyester film metallized with aluminium.</p>

<p>In the search for a more effective chemotherapy for the treatment of Human African Trypanosomiasis, a disease caused by the parasite Trypanosoma brucei, the development of ferrocenyl compounds has arisen as a promising strategy. In this work, five new Pd–Fe heterobimetallic [PdII(L)(dppf)](PF6) compounds, including 8-hydroxyquinolyl derivatives HL1–HL5 as bioactive ligands and dppf = 1,1’-bis(diphenylphosphino)<br />ferrocene as the organometallic co-ligand, were synthesized and fully characterized in the solid state and in solution. Molecular structures of three compounds were solved by single crystal X-ray diffraction methods. The compounds displayed submicromolar or micromolar IC50 values against bloodstream<br />T. brucei (IC50: 0.33–1.2 μM), and good selectivity towards the pathogen (SI: 4–102) with respect to mammalian macrophages (cell line J774). The new Pd complexes proved to be 2-fold to 45-fold more potent than the drug nifurtimox but most of them are less active than their Pt analogues. Potential molecular<br />targets were studied. The complexes interact with DNA but they do not alter the intracellular thiolredox homeostasis of the parasite. In order to understand and predict the main structural determinants on the anti-T. brucei activity, a search of quantitative structure–activity relationships (QSAR) was performed including all the [M(L)(dppf)](PF6) complexes, where M = Pd(II) or Pt(II), currently and previously<br />developed by us. The correlation obtained shows the relevance of the electronic effects, the lipophilicity and the type of metal. According to the QSAR study, compounds with electron-withdrawing ligands, higher lipophilicity and harboring Pt would result in higher T. brucei cytotoxicity. From the whole series of<br />[M(L)(dppf)](PF6) compounds developed, where M = Pt(II) or Pd(II) and HL = 8-hydroxyquinolyl derivatives, Pt-dppf-L4 (IC50 = 0.14 μM, SI = 48) was selected to perform an exploratory pre-clinical study in infected mice. This hit compound lacks acute toxicity when applied to animals in the dose/regimen described and exerts an anti-proliferative effect on parasites, which extends animal survival but is not curative.</p>

<p>Biocatalytic cascades afford the development of economically sustainable and green processes. Herein we examined the unprecedented coupling of co-immobilised Gluconobacter oxydans and an isolated transaminase to synthesise serinol from glycerol.<br />Through this approach, we manufactured up to 36 mM serinol, the<br />highest titer ever reported for a non-fermentative biosynthesis.<br />More importantly, similar productivities are obtained starting from<br />the industrial by-product crude glycerol, demonstrating the possibilities of this hybrid heterogenenous biocatalyst for valorising<br />bio-based raw materials.</p>

A summary of the resource.
<p>Industrial biotechnology faces the challenge of providing significant<br />economic advantages using sustainable processes either to establish new processes, to displace established processes or valorize industrial waste. Crude glycerol obtained as a by-product of biodiesel production has very low market value but can be valorized via microbial bioconversions. This work revises efforts made by the scientific community to optimize the crude glycerol microbial biotransformation into dihydroxyacetone, one of the most valuable compounds obtained from this feedstock. Attention to the many aspects of process optimization to increase productivity has been addressed that are also transversal to other glycerol biotransformations to obtain improved yields.</p>

<p>ICTAC recently published a series of recommendations for analyzing thermogravimetric experiments, one of which was the deconvolution of the DrTGA; however, it has received little use for processing fuel blends. In the present work, Lorentz distribution was used to deconvolve multi-stage processes in the co-combustion of oil shales and Eucalyptus grandis sawdust from Uruguay. The activation energies values were obtained using an isoconversional-iterative procedure and the maximum value were obtained for the oil shales (401 kJ mol- 1), which is correlated with its low combustibility. The activation energies values were used to calculate the preexponential Arrhenius factors and global orders. The thermogravimetric curves were rebuilt at different heating rates (5, 10, 20, 30, 40 and 50 K min- 1). Results indicated a good agreement between the theoretically calculated values and the experimental data, obtaining a maximum average error smaller than 3%.</p>

<p>The association of autoimmune diseases with particular allellic products of the class-II major histocompatibility complex<br />(MHCII) region implicates the presentation of the offending self-antigens to T cells. Because antigen-presenting cells are<br />tolerogenic when they encounter an antigen under non-inflammatory conditions, the manipulation of antigen presentation may induce antigen-specific tolerance. Here, we show that, in mouse models of experimental autoimmune encephalomyelitis, type 1 diabetes and rheumatoid arthritis, the systemic administration of a single dose of nanobodies that recognize MHCII molecules and conjugated to the relevant self-antigen under non-inflammatory conditions confers long-lasting protection against these diseases. Moreover, co-administration of a nanobody–antigen adduct and the glucocorticoid dexamethasone, conjugated to the nanobody via a cleavable linker, halted the progression of established experimental autoimmune encephalomyelitis in symptomatic mice and alleviated their symptoms. This approach may represent a means of treating autoimmune conditions.</p>

<p>Natural fibres constitute interesting, low cost and environmentally friendly precursors of carbon fibres. However,<br />they are prone to fuse and degrade upon thermal treatment, affecting the properties of the products unless a stabilization step was included. Aiming to reach a better understanding of the stabilization mechanism of wool as a potential precursor for the preparation of carbon fibres, in this study we have analysed the chemical, structural and morphological transformations during its oxidative stabilization in air. Below 400 ◦C, both the structure and morphology of the fibres were preserved. The chemical composition changed with the stabilization temperature; main changes include the loss of secondary protein structure, cleavage of sulphur bridges, dehydration, oxidative crosslinking and rearrangements of N-groups through the formation of carbodiimides. Oxidation of the wool at 300 ◦C rendered materials with a fibrous morphology and high carbon yield (ca. 36 wt%), yielding carbon fibres upon carbonization at high temperatures.</p>

<p>Bi2S3 is a promising solid lubricant for demanding applications, such as oil extraction, heavy mining, and aerospace components. However, its tribological behavior has not been studied in depth. Burnished Bi2S3 soft coatings were evaluated utilizing reciprocating sliding tests under different levels of relative humidity level, normal load, and sliding speed and the results were benchmarked against MoS2 coatings. In addition, ab initio calculations using density functional theory modeling were employed for studying the interaction between the sulfides and the steel substrates and the effect of water intercalation at an atomic level. It was found that Bi2S3 coatings present excellent environmental adaptability and substrate protection over a wide range of testing conditions, thanks to their characteristic crystal structure.</p>

<p>Here, we report a joint experimental and theoretical study using molecular dynamics calculations focusing on short- and long-range structure correlations with ionic transport near the glass transition for lithium-ion polyacrylonitrile-<br />based electrolytes using DMSO as plasticizer. The presence of subtle modifications of the polymeric structural features near the glass transition (Tg) is rarely reported in the literature and could be relevant to study free volume in polymer-based electrolytes. Our in-situ small angle X-ray scattering (SAXS) analysis at different temperatures evidence an increment of free volume and partial loss of long-range coherence between polyacrylonitrile neighbor chains just above Tg in strong correlation with an Arrhenius behavior crossover observed<br />for the ionic transport in these polyacrylonitrile-based electrolytes. Advancing the understanding of lithium-ion<br />conductivity Arrhenius behavior for polymeric electrolytes with Tg slightly above room temperature could be of great relevance due to the overlap with the operating temperature range of lithium-ion batteries.</p>

A summary of the resource.
This work presents a study based on numerical simulations to describe the local structural evolution of Cu-Zr-Al amorphous alloys when moderate stresses are applied and removed. In particular, it will seek to recognize the formation of clusters with some degree of symmetry in the amorphous matrix and how these are altered depending on the mechanical stress experienced by them. The selected technique is classical molecular dynamics, using the ‘Embedded-atom method’ (EAM) and some other studies trying to identify local crystalline order<br />(Common Neighbor Analysis, atomic centro-symmetry parameter, radial distribution functions and the reciprocal<br />space pattern). The simulations confirm the local order/disorder mechanism based on the existence of<br />ordered regions, which depends on the nature of the applied stress. Particularly, this work focused on performing simulations in time and stress regimes close to anelastic experimental conditions, which makes it different to other related computational reports that focus on regimes close to plastic deformation. The atomistic simulations provide strong evidence of the local ordering occurrence, in good concordance with early ultrasound assisted experiments on Cu-Zr-Al amorphous alloys, thus providing strong evidence of the local ordering occurrence in an elastic regime when uniaxial stress is applied. The reversibility of the system, when stress is removed, was also shown. The application of uniaxial stress favors the presence of different kind of local order structures, when<br />compared with the situation of hydrostatic pressure.

Using first-principles calculations we predict that the electronic properties of graphene buffer layer (BL)<br />on silicon carbide (SiC) can be modified by defect-induced itinerant states. Band structures and effective<br />masses of single vacancy (SV), divacancy (DV) and Stone-Wales (SW) defective BL were calculated.<br />Structural reconstruction at the vicinity of defects as well as spin polarization of silicon dangling bonds in the top bilayer SiC and nearby carbons from the BL, give rise to energetically degenerate magnetic states displaying electronic properties completely apart. This is particularly true for the SW and SV defective models where as many as three different magnetic states, turned out to be degenerate, either displaying a semiconductor nature or becoming half-metallic or even metallic. This is in contrast with previously reported results for the perfect BL (PBL) which suggested that most stable degenerate magnetic configurations share a semiconductor nature. On the other hand, for the DV system, the introduction of two<br />vacancies in the BL causes loss of magnetism whereas a band gap of 0.54 eV is opened. Hole effective masses decay upon removal of one and two carbon atoms in the SV and DV systems where an increase in<br />mobility is conceivable, provided current direction is carefully selected.

Adsorption and dissociation of molecular oxygen on a defective graphene buffer layer (BL) grown on Siterminated<br />SiC(0001) are herein studied by means of periodic DFT calculations coupled with the nudged elastic band method. We considered a single vacancy (SV) and a divacancy (DV) defective BL on SiC, with or without the uppermost epitaxial monolayer graphene (EG). The adsorption energy of O2 on SV and DV surfaces, producing SV-O and DV-O oxidized systems, is between 2 and 3 times as strong as that on a defect-free BL surface and lacks an energy barrier. In addition, we demonstrate that the n-doping measured in the EG layer of SiC-BL-EG systems, which stems from the charge transfer in the SiC-BL interface, can be fully compensated by oxidizing the DV defective BL. The DV-O-EG interface forms a p-type Schottky contact with a small Schottky barrier height.<br />Instead, a p-type Ohmic contact was measured at the SV-O-EG interface.

The visual appearance and olfactory cues of liquid soap can trigger powerful expectations and associations in consumers' mind, which largely influence purchase decisions and shape product experience. In this context, the aims of the present work were: (a) to study the effect of appearance (color and transparency) and fragrance on conceptual associations and expectations of liquid hand soap and (b) to evaluate if preference<br />patterns moderate such effect. Eight samples of liquid hand soap were obtained following a full factorial design with three 2-level variables: fragrance (herbal vs. fruity), color (green vs. orange), and transparency (transparent vs. pearly).<br />Samples were evaluated by 104 female participants, who rated their liking and used a<br />check-all-that-apply question to describe the samples in terms of sensory characteristics,<br />expected functional aspects of the product, and conceptual associations. Results showed that appearance and transparency did not influence consumer liking. However, fragrance had a significant effect on consumer liking, expectations and conceptual associations of liquid hand soap. The effect of fragrance on expectations and<br />conceptual associations depended on consumer liking of the fragrance. In addition, pearly appearance did not influence liking but had a significant effect on consumer expectations regarding functional aspects of the liquid hand soap.

Semiconductor nanoparticle-mediated photocatalysis is an attractive option for water decontamination, being the semiconductors as SnS2 with a bandgap in the visible region, the most promising materials. In the present work, we evaluated the influence of important parameters in the photocatalytic application of SnS2 nanoparticles. Our results show that the presence of citric acid (used as a capping agent) restricts the formation of hexagonal nanoparticles. We also demonstrated that using thioacetamide as a sulfur source results in smaller nanoparticles than thiourea, 24.0 nm and 616 nm respectively. Moreover, small hexagonal nanoparticles play a key role in the photocatalytic activity of SnS2 nanoparticles. Compared with TiO2 performance, SnS2<br />nanoparticles exhibited faster kinetics for methyl orange (MO) degradation, Kapp = 0.0102 min−1, and 0.029 min−1, respectively. We proved that SnS2 is capable of breaking the azo bond of methyl orange by direct reduction. Furthermore, our analyses indicate that SnS2 nanoparticles do not degrade atrazine and imazapic, but the photocatalytic route of metribuzin competed with photolysis, resulting in a particular transformation product that was not obtained with light irradiation only. We demonstrated that SnS2 nanoparticles have high bond selectivity for azo breaking. Furthermore, they represent an advance for the development of designed materials (such as heterostructures), where the properties of SnS2 can be tuned.

Renewable hydrogen produced from biomass as an energy vector appears as one of the most promising alternatives to solve, partially at least, the actual environmental and energetic problems. In this sense, a novel series of Ni catalysts supported on rare-earth zirconates (La and Y) for hydrogen production through bioethanol steam reforming were prepared by sol-gel technique and subsequently calcined at 700 and 950 ◦C. The catalysts were characterized by X-ray diffraction, N2 adsorption-desorption isotherms, scanning electron microscopy, temperature programmed reduction, temperature programmed desorption of CO2 and thermogravimetric analysis and tested in the range of 450–650 ◦C. All the catalysts showed high activity to produce a H2-CO2 rich gas mixture, with low quantities of secondary products. The catalysts containing Y in their structure showed better performance than their homologous with La, behavior attributable to a higher number of oxygen vacancies in their structure as well as better metal-support interactions. On the other hand, La containing catalysts showed better resistance toward carbonaceous residues formation.

<p>Baccharis dracunculifolia DC. and Baccharis microdonta DC. (Asteraceae) are woody species morphologically similar growing in Uruguay, where not taxonomists people often confuse them in field conditions. As the essential oil of B. dracunculifolia (‘vassoura’ oil) is highly prized by the flavor and fragrance industry, the correct differentiation of the two species is a key factor in exploiting them profitably and reasonably. To differentiate both Baccharis species, in this work their volatile expression profiles were studied as an alternative tool to<br />determine authenticity and quality. Volatile organic compounds (VOCs) were monthly extracted during an entire year from aerial parts of wild populations by simultaneous distillation extraction (SDE), and studied by gas chromatography/mass spectrometry (GC/MS; identification) and conventional gas chromatography (GC-FID; component abundances determination). Enantioselective gas chromatography/mass spectrometry (Es-GC/MS) was applied in the search of parameters able to ensure genuineness of each species extract. Qualitative VOCs profiles were found to be similar for both species, being β-pinene, limonene, spathulenol, caryophyllene oxide, and viridiflorol the main components. However, the abundance of those VOCs were two to ten times higher in B.<br />dracunculifolia than in B. microdonta during the year of study. These Baccharis spp. showed species-specific patterns of VOCs expression according to the seasonality, and interestingly, oxygenated compounds (transpinocarveol and myrtenal) increased their abundances at full-flowering stages. The enantiomeric distribution of selected monoterpenes (α- and β-pinenes, limonene, linalool, terpinen-4-ol, and α-terpineol) presented differential values for both Baccharis spp., meaning that Es-GC might be a useful tool for differentiating chemically both species in Uruguay for genuineness determination purposes.</p>

<p>Cystic echinococcosis is a globally distributed zoonosis caused by cestodes of the Echinococcus granulosus sensu lato (s.l.) complex, with Echinococcus ortleppi mainly involved in cattle infection. Protoscoleces show high developmental plasticity, being able to differentiate into either adult worms or metacestodes within definitive or intermediate hosts, respectively. Their outermost cellular layer is called the tegument, which is important in determining the infection outcome through its immunomodulating activities. Herein, we<br />report an in-depth characterization of the tegument of E. ortleppi protoscoleces performed through a combination of scanning and transmission electron microscopy techniques. Using electron tomography, a three-dimensional reconstruction of the tegumental cellular territories was obtained, revealing a novel structure termed the ‘tegumental vesicular body’ (TVB). Vesicle-like structures, possibly involved in endocytic/exocytic routes, were found within the TVB as well as in the parasite glycocalyx, distal cytoplasm and close inner structures. Furthermore, parasite antigens (GST-1 and AgB) were unevenly localised within tegumental structures, with both being detected in vesicles found within the TBV. Finally, the presence of host (bovine) IgG was also assessed, suggesting a possible endocytic route in protoscoleces. Our data forms the basis for a better understanding of E. ortleppi and E. granulosus s.l. structural biology.</p>

<p>Arthrospira platensis has stood out, especially due to its high protein content and its potential for food application. However,<br />the exploration of protein concentration techniques of this microalgae still presents a great challenge. Thus, the objective<br />of this study was to evaluate the purification of A. platensis proteins by applying two different aqueous two-phase systems<br />(ATS) composed of potassium phosphate and ethanol, and sodium citrate and ethanol, in addition to the association with<br />membrane separation process (MSP), and the characterization of the fractions obtained. ATS under the optimised conditions<br />(19% potassium phosphate and 30% ethanol, and 19.5% sodium citrate and 29% ethanol) resulted in 1.27 and 1.31 purity, and 77.45% and 78% recovery, respectively. The sodium citrate and ethanol ATS showed significantly greater purity; thus, the upper phase was submitted to MSP. The association of ATS and MSP increased the recovery (~ 87%) and the purity (1.5). The top phase of ATS showed higher protein content (61%) than the bottom (5.9%), confirming the protein preference to the top. When the MSP was evaluated, the protein was increased about 8.0%, and antioxidant activity was kept (42 and 40% to top phase and ATS/MSP concentrate, respectively). Emulsions formed by ATS top phase showed a lower droplet size (33.69 μm D4.3 and 6.02 μm D3.2), and a significantly lower degree of overall destabilization (0.04 × 10–<br />6 s−1 kh and 3.54 × 10–3 s−1 ks) than those stabilized with bottom phase and MSP/ATS concentrate. ATS associated with membrane process showed efficiency in the concentration A. platensis protein, being able to be an alternative to be used in industrial systems.</p>

A summary of the resource.
<p>The aim of the present study was to develop a mixed tropical fruit juice of cashew apple, acerola and melon with low added-sugar content considering sensory and nutritional aspects. Five formulations were developed varying the concentration of the different fruits. A total of 172 consumers rated their overall liking using a 9-point hedonic scale and described their sensory characteristics using a Check-all-that-apply question. In addition, the functional properties of the juices were evaluated by analyzing vitamin C, total phenolic compounds and antioxidant capacity. Results showed that the addition of sugar and fruit composition affected the sensory characteristics and consumer liking of the formulations. Samples without added sugar and with higher melon concentration showed lower liking scores (p<0.05). In addition, the highest concentration of acerola had a positive effect on nutritional characteristics. The formulation with 50% of fruit pulp (60% of cashew apple,<br />30% of acerola and 10% of melon), 47% of water, and 3% of added sugar achieved the best results. The effect of aroma on sweetness perception was investigated by adding identical to natural aromas of melon, apple and pineapple to the selected formulation. However, aroma did not significantly modify sweetness perception, evaluated using a rate-all-that-apply question.</p>

<p>This study on raw ground beef patties evaluated: resistance of STEC strains inoculated at 6 log CFU/g (O157:H7, O26, O45, O103, O111, O121, and O145) subjected to 350, 450 and 600 MPa, for 5 min at 10 ◦C; effectiveness of pressure for initial loads (2, 3 and 4 log CFU/g) of O157:H7; and general impact of high hydrostatic pressure (HHP) on raw patties. For 600 MPa treatments and 6 log CFU/g load of STEC, ~5 log CFU/g reductions were obtained with all strains. For 450 MPa, differences in baroresistance among strains became evident. When inoculating O157:H7 at different loads, counts after 600 MPa fell below quantification limits, though virulence genes were detected for the two highest loads. Additionally, HHP reduced native aerobic microbiota to <1 log CFU/g and slightly affected a* and b* color values. Montecarlo simulation was used to estimate potential initial counts of STEC that allow compliance with existing regulatory limits after applying HHP, showing that absence of STEC studied can be achieved in 65 g of patties provided initial loads are ~2 log CFU/g. Finally, HHP<br />treatments at 600 MPa and mild temperatures can be considered a valid non-thermal processing technology to<br />achieve 5 log CFU/g reductions.</p>
