Los inhibidores peptídicos de la enzima convertidora de angiotensina-I (ECA-I) son muy interesantes por ser compuestos naturales con efecto antihipertensivo. Muchos péptidos bioactivos han sido obtenidos por hidrólisis enzimática de proteínas alimentarias y las proteínas lácteas han tenido un papel destacado. Sin embargo, las peptidasas empleadas han sido fundamentalmente enzimas comerciales de origen animal o microbiano. El uso de peptidasas de plantas, obtenidas de fuentes menos convencionales, podría liberar nuevos péptidos inhibidores de ECA-I o aquellos que se sabe forman parte de la secuencia de las proteínas del LS pero que aún no han sido liberados con las enzimas clásicas. Las peptidasas de una especie de Bromeliácea autóctona, recientemente caracterizadas por nuestro grupo de investigación, presentan características interesantes para la hidrólisis del LS y aún no han sido utilizadas para la preparación in vitro de hidrolizados de proteínas. En este sentido, se estudió el potencial de las peptidasas de Bromelia antiacantha Bertol., para hidrolizar el LS y evaluar la actividad inhibidora de la ECA-I. Demostramos que las peptidasas de B. antiacantha fueron capaces de hidrolizar a las proteínas del LS con un importante efecto del pH de reacción para modificar la susceptibilidad de hidrólisis de α-lactalbumina (ALA) y β-lactoglobulina (BLG), las proteínas mayoritarias del LS. Se obtuvieron hidrolizados de LS, ALA y BLG con potente actividad inhibitoria de ECA-I. En todos los casos, la fracción peptídica de tamaño menor a 2 kDa presentó una actividad inhibitoria de ECA-I potente y esta fue resistente a un proceso de digestión gastrointestinal simulado in vitro. A partir del hidrolizado de ALA se capturaron por cromatografía de afinidad y posteriormente se identificaron por espectrofotometría de masas dos nuevos péptidos derivados de ALA con actividad inhibitoria de ECA-I. A partir de estudios de cinética de inhibición de ECA-I fue posible establecer que el péptido Thr-Thr-Phe-His-Thr-Ser-Gly-Tyr (TTFHTSGY) se comportó como un inhibidor total, mientras que el péptido Gly-Tyr-Asp-Thr-Gln-Ala-Ile-Val-Gln (GYDTQAIVQ) fue capaz de inhibir parcialmente a ECA-I y a concentraciones elevadas de inhibidor por lo que no se continuó su caracterización. Sin embargo, hay dos secuencias con actividad inhibitoria de ECA-I reportada encriptadas en el péptido GYDTQAIVQ (GY e IVQ) que podrían ser liberadas durante su digestión gastrointestinal, convirtiéndolo en productos potencialmente más activos in vivo. TTFHTSGY mostró una cinética de inhibición compatible con un inhibidor competitivo. Los valores de las constantes de inhibición hallados indicaron que se trataría de inhibidores reversibles competitivos clásicos

BACKGROUND: Sweet potato breeding programs need to integrate sensory characterization and hedonic perception in order to provide global markets with widely accepted products. The present work aimed at characterizing a series of purple skin<br />sweet potatoes differing in flesh coloration (from pale yellow to slight orange) from a sensory and physicochemical perspective. In addition, Uruguayan consumers' perception of the genotypes was explored. Special focus was placed on the influence of flesh color on consumers' expectations and hedonic perception of purple skin sweet<br />potatoes.<br />RESULTS: Sensory characterization based on projective mapping showed that the evaluated genotypes largely differed in their sensory characteristics, both in terms of flavour, texture and colour. Soluble solids and the concentration of individual sugars were not good predictors of sensory quality. In the appearance evaluation, consumers associated orange flesh with positive expected sensory characteristics and higher liking.<br />Flavour (sweetness and typical flavour) and texture (creaminess) were identified as key characteristics influencing consumers liking and description of sweet potato samples.<br />Among purple skin (“criollo or boniato” type) genotypes, INIA Cambará was identified as the closest to the ideal sweet potato and described with the terms sweet, tasty, creamy and characteristic flavour.<br />CONCLUSION: Flesh colour was identified as a key driver of consumers' sensory and hedonic expectations. Results showed that Uruguayan consumers positively value traditional purple skin sweet potatoes with orange flesh, as it drives positive sensory expectations. However, after tasting, flesh colour does not seem to have a relevant influence on consumer liking.

The association of molybdenum(VI) oxyanions with metal cations was investigated in solutions of low ionic strength, such as those prevailing in most natural waters. Potentiometric titrations were carried out for the systems containing molybdenum(VI) anions and divalent metal cations (M = Mg, Ca, Sr, Ba, Mn, Fe, Co, Ni, Cu, Zn, Cd, Hg and Pb). This selection includes the major cations and some other cations of high environmental relevance. The interaction of iron(III) with Mo(VI) anions was also studied. At neutral and basic pH values and for those systems where the solubility of the molybdate salt is high enough, ionic species pairs such as [M(MoO4)] predominate. At acidic pH values, [M(HMoO4)]+ and [M(Mo7O24)]4– are formed, the latter species are only relevant for total molybdenum concentrations higher than 1 mmol·L−1. These results provide the basis for molybdenum speciation in natural aquatic systems, on which the environmental fate, bioavailability and toxicity of the element depend.

During a search of photographs and documentation on the Belgian photographer Benjamin Couprie, who took the well-known pictures of the Solvay Conferences during the first half of the twentieth century, Santiago Alvarez [1] came across an image in “La Digithèque des Bibliothèques de l’Université Libre de Bruxelles” with the title “Réception de l’Union Internationale de Chimie Pure et Appliquée, photographie de groupe” (Figure 1) [2]. It is a high-resolution copy of a very sharp photograph of a group of 86 people. On the frame of that photo one can read two inscriptions noted in pencil above and below the photograph, respectively: “Union Internationale de la Chimie pure et appliquée,” and “Reception au chateau de La Hulpe le 29 Juin 1921.” Moreover, just under the photograph there are two inscriptions in smaller letters: “Bruxelles 1913,“ on the left, and the signature of “Benj. Couprie” on the right, both in the same handwriting. Two questions arise: (1) Which is the correct date for that photograph? (2) Who are the persons that appear in the photo?

<p>To tackle current nutritional issues like obesity, it could be valuable to involve children in the development of healthy food products that they will actively chose and enjoy. The aims of the present exploratory study were (i) to assess a methodology for early-stage idea generation through co-creation, for the development of healthy snacks with pre-adolescents, and (ii) to compare two settings, creative focus groups (CFG) and an online community (ONL). Three steps were defined to allow the gradual exploration of the topic and mutual learning<br />throughout the process: (1) Show &Tell: photo taking and -elicitation to understand what children ate; (2) Reflect: a sorting task of the pictures to discuss and reflect on snacking practices (3) Create: an idea generation step, in which a newspaper article describing an idea for a new healthy snack was created. To increase engagement and creativity, gamification strategies were used. Our results demonstrated that children (preadolescents) can create new food product ideas with the proposed process, using enabling and creative techniques. In the CFG the trained moderator could steer the group to the co-creation goal. The setting facilitated teamwork and group learning, collaborative ideas considering preferences of peers and produced a few detailed and mostly actionable ideas. In the ONL less control over the process was possible. The setting produced many ideas varying in the degree of<br />detail and actionability focusing on individual preferences. The feedback and observations from our study, particularly in the CFG setting, implied that the creative approach was highly engaging for participants. Further research is necessary to assess the potential of initial ideas developed by pre- adolescents.</p>

The ionic salts of rhenium(IV) of formula (Cat)2[ReI6] with Cat ) Li+ (1), Na+ (2), K+ (3), Rb+ (4), Cs+ (5), NH4 + (6), and AsPh4 + (7) [AsPh4 + ) tetraphenylarsonium cation] have been synthesized, and the structures of two of them (namely, 3 and 6) were determined by single-crystal X-ray diffraction. 3 crystallizes in the monoclinic system, space group Pn, with a ) 7.815(1) Å, b ) 7.874(1) Å, c ) 11.335(1) Å, â ) 90.38(1)°, and Z ) 2 whereas 6 crystallizes in the tetragonal system, space group P4/mnc, with a ) 7.881(1) Å, b ) 7.881(1) Å, c ) 11.474(2) Å, and Z ) 2. The structures of 3 and 6 are made up of discrete [ReI6]2- anions and K+ (3) or NH4 + (6) cations held together by electrostatic forces (3 and 6) and N-HâââI hydrogen bonds (6). The rhenium(IV) cation in 3 and 6 is surrounded by six iodide ligands in an octahedral environment with the Re-I bond lengths varying in a very narrow range [2.704(3)-2.738(3) and 2.716(1)-2.722(2) Å for 3 and 6, respectively]. The [ReI6]2- anions in 6 describe a tetragonally distorted body-centered cubic structure. In 3, the arrangement of these units is similar but more distorted. The different arrangement of the anions in 3 and 6 accounts for the centrosymmetric (6) and non-centrosymmetric (3) structures observed. The magnetic properties of 1-7 were investigated in the temperature range 2.0-300 K. The magnetic behavior of 7 is that of a magnetically diluted Re(IV) complex with a large value of the zero-field splitting of the ground level (j2Dj ) 49.8 cm-1) whereas those of 1, 2, and 4-6 are typical of antiferromagnetically coupled systems with susceptibility maxima at 28 (1), 27 (2), 21 (4), 16 (5), and 20 K (6). In the case of compound 3, its magnetic behavior in the high-temperature range is parallel to that observed in the parent salts but below 24 K it is a weak ferromagnet with a canting angle of ca. 1.2°.

A summary of the resource.
A novel automated method for the determination of boron based on the use of pulsed flows was developed and applied to the determination of this element in samples of tap water, ocean water and eye drops.
The method was implemented by means of a multi-pumping system consisting of three solenoid micropumps and a photometric detector and exploits the reaction of azomethine-H in the presence of boron. The system runs under control of an open-source microcontroller. The main operational parameters were optimized. Given the particular kinetics of the reaction, a stopped-flow period (1 or 5 min) was included to allow for color development.
The method presents linearity in the range 0.35–3.0 mg L−1, good precision (sr<3%), and detection and quantification limits of 0.10 and 0.35 mg L−1 respectively. Samples of tap water or eye drops could be successfully analyzed employing a 1-minute stop time, providing a maximum sampling frequency of 32 samples h-1. In order to overcome matrix effect caused by the high saline concentration, ocean water samples required stop times of 5 min, providing a sampling frequency of 10 samples h-1.
Recoveries of 102% (eye drops), 94% (drinking water) and 93% (ocean water) were obtained. The method was considered accurate and fit for the purpose.

Dispersion-corrected density functional theory is utilized to study the addition of aryl radicals to perfect and defective graphene. Although the perfect sheet shows a low reactivity against aryl diazonium salts, the agglomeration of these groups and the addition onto defect sites improves the feasibility of the reaction by increasing binding energies per aryl group up to 27 kcal mol−1. It is found that if a single phenyl radical interacts with graphene, the covalent and noncovalent additions have similar binding energies, but in the particular case of the nitrophenyl group, the adsorption is stronger than the chemisorption. The single vacancy shows the largest reactivity, increasing the binding energy per aryl group by about 80 kcal mol−1. The zigzag edge ranks second, enhancing the reactivity 5.4 times with respect to the perfect sheet. The less reactive defect site is the Stone–Wales type, but even in this case the addition of an isolated aryl radical is exergonic. The arylation process is favored if the groups are attached nearby and on different sublattices. This is particularly true for the ortho and para positions. However, the enhancement of the binding energies decreases quickly if the distance between the two aryl radicals is increased, thereby making the addition on the perfect sheet difficult. A bandgap of 1–2 eV can be opened on functionalization of the graphene sheets with aryl radicals, but for certain configurations the sheet can maintain its semimetallic character even if there is one aryl radical per eight carbon atoms. At the highest level of functionalization achieved, that is, one aryl group per five carbon atoms, the bandgap is 1.9 eV. Regarding the effect of using aryl groups with different substituents, it is found that they all induce the same bandgap and thus the presence of NO2, H, or Br is not relevant for the alteration of the electronic properties. Finally, it is observed that the presence of tetrafluoroborate can induce metallic character in graphene.<br /><br />

Rate-All-That-Apply (RATA) is a variation of the more widely used CATA question format. For a prespecified list of terms, consumers indicate whether they apply to a given product, and if they do so, to rate their intensity. For example, a 3-pt scale may be used with anchors ‘low’, ‘medium’ and ‘high’ or a 5-pt scale anchored at 1 = ‘slightly applicable’ and 5 = ‘very applicable.’ Given the hierarchical nature of the task and the non-normal distribution of the intensity data, it is not obvious how to analyze RATA data appropriately. In the present work we suggest interpreting RATA data as 4- or 6-point scales, considering a missing check for any attribute as a score of 0. Based on that, randomization tests were applied to investigate potential product differences. We show that the null distribution of these tests for RATA data coincides in practice with the one from classical parametric tests derived from an ANOVA context. Consequently, using the common F- and t-tests provides a valid and easy analysis of RATA data. In four consumer studies, tests for product difference usually gave the same results when RATA data were analyzed with ANOVA and Cochran’s Q test. Graphical display of the data was found to be very similar based on Correspondence Analysis (CA) (treating RATA as CATA data) and Principal Component Analysis (PCA) (treating RATA as continuous data).

Phenolic Profiling and Antioxidant Capacity of Eugenia uniflora L. (Pitanga) Samples Collected in Different Uruguayan Locations
Abstract
A summary of the resource.
The use of nutrient-rich foods to enhance the wellness, health and lifestyle habits of consumers is globally encouraged. Native fruits are of great interest as they are grown and consumed locally and take part of the ethnobotanic knowledge of the population. Pitanga is an example of a native fruit from Uruguay, consumed as a jelly or an alcoholic beverage. Pitanga has a red-violet pigmentation, which is a common trait for foods that are a good source of antioxidants. Hence, fruits from different Uruguayan regions were analyzed via miniaturized sample preparation method, HPLC-DAD-ESI/MSn and RP-HPLC-DAD techniques to identify and quantify phenolic compounds, respectively. The antioxidant capacity was evaluated via DPPH and ORAC (Oxygen Radical Absorbance Capacity) assays. A multivariate linear regression was applied to correlate the observed antioxidant capacity with the phenolic content. Furthermore, Principal Components Analysis was performed to highlight characteristics between the various samples studied. The main results indicated differences between northern and southern Uruguayan samples. Delphinidin-3-hexoside was present in southern samples (mean of 293.16 µmol/100 g dry weight (DW)) and absent in the sample collected in the north (sample 3). All the samples contain high levels of cyanidin-3-hexoside, but a noticeable difference was found between the northern sample (150.45 µmol/100 g DW) and the southern sample (1121.98 µmol/100 g DW). The antioxidant capacity (mean ORAC of 56370 µmol Trolox®/100 g DW) were high in all the samples compared to the Food and Drug Administration (FDA) database of similar berry-fruits. The results of this study highlight the nutraceutical value of a native fruit that has not been exploited until now.

A summary of the resource.
The kinetics of reversible 3D aggregation processes was studied for different interparticle potentials by means of simulations. In previous work (Phys. ReV. E 2002, 65, 031405),1 freely diffusing particles were considered that aggregate whenever a collision occurs but disintegrate only with a single given breakup probability. The DLVO theory, however, predicts also interparticle potentials showing two minima of different depths separated by an energetic barrier. Hence, two different kind of bonds, primary and secondary ones, can be formed and should be treated separately. In the present work, this behavior was implemented by considering bonds with different breakup probabilities. The data obtained from simulations were compared with the stochastic solutions of the corresponding master equation. For this purpose, the Brownian kernel was employed together with novel fragmentation kernels. The agreement between the simulations and the kinetic description was found to be quite satisfactory. Moreover, studying the time evolution of the bond population showed that cluster aging appears as a natural consequence of the employed model.

A partir de 1887, con los trabajos de Heinrich Hertz, se habían descubierto algunos hechos sorprendentes que se denominaban efecto fotoeléctrico y que hasta la publicación de este artículo nadie había podido explicar: la emisión de electrones por un metal cuando sobre él incidía radiación luminosa, ya sea en el visible o en el ultravioleta, la fotoconductividad o aumento de la conductividad eléctrica de un material cuando se produce la incidencia de esta radiación, y, también, el denominado efecto fotovoltáico, por el que parte de la energía de la luz incidente se convertía en energía eléctrica.

The variable VHH domains of camelid single chain antibodies have been useful in numerous biotechnology applications due to their simplicity, biophysical properties, and abilities to bind to their cognate antigens with high affinities and specificity. Their interactions with proteins have been well-studied, but considerably less work has been done to characterize their ability to bind haptens. A high-resolution structural study of three nanobodies (T4, T9, and T10) which have been shown to bind triclocarban (TCC, 3-(4-chlorophenyl)-1-(3,4-dichlorophenyl)urea) with near-nanomolar affinity shows that binding occurs in a tunnel largely formed by CDR1 rather than a surface or lateral binding mode seen in other nanobody-hapten interactions. Additional significant interactions are formed with a non-hypervariable loop, sometimes dubbed "CDR4". A comparison of apo and holo forms of T9 and T10 shows that the binding site undergoes little conformational change upon binding of TCC. Structures of three nanobody-TCC complexes demonstrated there was not a standard binding mode. T4 and T9 have a high degree of sequence identity and bind the hapten in a nearly identical manner, while the more divergent T10 binds TCC in a slightly displaced orientation with the urea moiety rotated approximately 180° along the long axis of the molecule. In addition to methotrexate, this is the second report of haptens binding in a tunnel formed by CDR1, suggesting that compounds with similar hydrophobicity and shape could be recognized by nanobodies in analogous fashion. Structure-guided mutations failed to improve binding affinity for T4 and T9 underscoring the high degree of natural optimization.
