Abstract
A summary of the resource.
Terpenoids, which are typical components of the essential oils of flowers and fruits, are also present as free and glycosylated conjugates amongst the secondary metabolites of wine grape varieties of Vitis vinifera. Hence, when these compounds are present in wine, they are considered to originate from the grapes and not from fermentation. However, the biosynthesis of monoterpenes by Saccharomyces cerevisiae in the absence of grape derived precursors was shown recently to be of de novo origin in wine yeast strains. The contribution of yeast and bacterial fermentation metabolites to the aromatic profile of wine is well documented. However, the biotechnological application of this knowledge is still rather limited and often contradictory. Redox conditions, size of inoculums, temperatures of fermentation, osmotic pressure and the medium nutritional content can profoundly affect the profile of yeast and bacterial metabolites produced or their biotransformation capacity in wine. Results obtained in the last decades in relation to microbial micrometabolism of aroma compounds measured with more sophisticated GC-MS methods are discussed in relation to the known terpenoid biosynthetic pathways and wine composition. Further development of metabolic footprinting techniques for the discrimination of wine quality must be one of the main challenges for wine biotechnologists in the near future.

Background: The sudden changes (increase in capillar permeability, edema formation, vasodilation and hypotension) observed in septic patients and the measurements taken in order to revert this situation make vancomycin concentrations difficult to interpret. Therapeutic drug monitoring (TDM) of vancomycin is routinely performed at steady state, target concentrations are peaks between 20 and 40 mg/l and troughs of 5 – 10 mg/l. Lately, continuous infusion of vancomycin (CIV) has been used as an alternative mode of administration mainly in critically ill patients with sepsis or septic shock. Despite this novel mode of administration, the need of drug monitoring in this population is under discussion. Objective: The aim of our study was to test the usefulness of a multi-compartment model in order to understand the rapid changes that occur in critically ill patients. Materials and methods: A prospective, cohort study was carried out in the intensive care unit of the University Hospital. 25 intensive care unit adults patients with severe sepsis or septic shock receiving vancomycin in CIV modality for documented gram-positive infections were included in the study. Once the infusion was started, blood samples were drawn periodically and analized by fluorescence polarisation immunoassay (FPIA, TDx, Abbott Laboratories, Chicago, IL, USA). A multi-compartment model was used to predict vancomycin level evolution throughout the treatment of patients with sepsis. Results: High doses of vancomycin were administered in order to rescue patients from septic shock. Plasma drug concentration dropped while clinical condition of patients worsened. Conversely, drug levels increased spontaneously once the infection was reverted. The theoretical model provided greater insight into pharmacokinetic features related with the use of vancomycin in septic patients. Conclusions: There was consistency between the model based prediction and the experimental data so dose adjustment was performed in order to reach target concentrations above 20 mg/l and an initial dose of 3 grams of vancomycin per day was recommended to reach these levels.

Melia azedarach L. (Meliaceae) es nativa de Asia pero ha sido naturalizada en muchas partes del planeta. Variados compuestos bioactivos estructuralmente complejos fueron aislados de especímenes asiáticos. Este estudio tuvo como objetivo determinar la actividad anti-insecto de extractos orgánicos de frutos de M. azedarach de especímenes uruguayos y elucidar las estructuras de los compuestos activos. El fraccionamiento sistemático de extractos etanólicos llevó a la obtención de una fracción rica en limonoides con actividad contra diferentes insectos modelo. Mostró fuerte deterrencia frente a larvas de Spodoptera littoralis (Lepidoptera: Noctuidae) y adultos de Epilachna paenulata (Coleoptera: Coccinellidae) en bioensayos de opción. Además, inhibió el asentamiento de Myzus persicae y Rhopalosiphum padi (Homoptera: Aphididae). Sin embargo, no mostró toxicidad por contacto contra adultos de Nezara viridula (Hemiptera: Pentatomidae). Dos compuestos nunca antes reportados en esta especie vegetal y tres previamente reportados pero nunca antes testados contra los insectos nombrados fueron aislados de la fracción. En síntesis, una fracción rica en triterpenoides del extracto etanólico de frutos de M. azedarach mostró potencial variable contra las diferentes especies de insectos plaga modelo, enfatizando así la importancia de testar los potenciales agentes biocontroladores contra diferentes insectos blanco

A summary of the resource.
Las experiencias didácticas vividas en formación docente inicial tienen un fuerte impacto en la conformación del perfil profesional del profesor . En estas experiencias se deben ver claramente trabajados los grandes fines en la enseñanza de las ciencias: formar ciudadanos críticos, formar para la participación ciudadana, alfabetizar cientí ficamente. La teniosis por solium, cisticercosis y triquinosis, son parasitosis en los humanos que se adquieren por consumo de carne de cerdo. En la formación inicial de docentes de Biología pa ra la enseñanza media, la s especies causantes de las parasitosis se estudian en la asignatura Zoología. Quebrando con el clásico abordaje de temas programáticos siguiendo la lógica de la disciplin a, se realizaron en la as ignatura trabajos con un enfoque de tipo CTS. Se organizó la conformación de equipos en el grupo clase, uno de los cuales abordó los helmintos parásitos transmitidos al hu mano por el cerdo. El trabajo incluyó la realización de una investigación bibliográfica, re colección de información en industrias locales que crían cerdo, la producción de una monogr afía y la presentación del tema a los demás compañeros de clase. Se vio el vínculo existente en tre la práctica religiosa judía y la ausencia en dicha comunidad de parasitosis por helmintos q ue se transmiten con el consumo de carne suina. Se analizaron cuestiones relacionadas con las costumbres alimenticias de la comunidad religiosa (su filosofía, sus libros sagrados), utilizándose lo s conocimientos de Zoolog ía y Parasitología para dar fundamento científico al vínculo señalado. Con esto se reconocieron diferencias entre preceptos religiosos y construcciones científica s, así como los fundamentos sanitarios de la adecuada tecnología en la cría del cerdo. La experiencia educativa realizada confirma que el tratamiento de temas disciplinares bajo un enfoque CTS es una forma de integrar el conoc imiento, promover la interacción e intercambio disciplinar y humanizar la cien cia. El enfoque apunta a la confluencia de propuestas que promueven la participación de los ciudadanos en los problemas sociales y ambientales. Busca el desarrollo de capacidades y de motivación q ue permitan a la persona una participación responsable y crítica en las decisiones que orientan el desarrollo de la ciencia y la tecnología.

The use of check-all-that-apply (CATA) questions in product-focused consumer research on foods and beverages is now common, and the method is known to provide valid sensory product characterisations. Extensive methodological research has been conducted and has supported uptake, but understanding of how consumers complete CATA questions is incomplete, particularly with regard to their decision to select or not a term to describe the sensory properties of products. The present research was situated within this gap, and using open-ended questions participants (n = 636) were asked to describe how they perceived a pair of samples with regard to an attribute and link this to CATA term selection. The results, obtained for taste (‘sweet’ and ‘sour/acidic’) and flavour (‘cinnamon’ and ‘smoky’) confirmed consumers’ ability to accurately perform sensory characterisation tasks. In particular, it was found that: i) the great majority of the consumers accurately used the CATA terms for describing the sensory characteristics they perceived in a sample, ii) when a term was not selected for describing samples, the majority of the consumers indicated that the corresponding sensory attribute was not perceived, iii) when a term was selected for describing only one of the samples in a pair, consumers reported to have perceived a difference in attribute intensity between the samples. Thus, CATA questions remain a desirable option for sensory product characterisation tasks with consumers, but should be selected with thought as they may not always be able to achieve desired sample discrimination due to the binary nature of the responses.
