Abstract
A summary of the resource.
Precocious sexual maturity, ovarian weight increase and stimulation of the sex accessory organs in impuber female mice, was induced by a partially purified protein fraction obtained from human placenta. The relationship between this biologically active protein and HCG was studied by a comparative immuno-double diffusion technique (Ouchterlony) and two agglutination inhibition tests. Results showed that this protein with gonadotropic activity is neither immunologically related to HCG nor contaminated with this hormone.<br /><br />

Abstract
A summary of the resource.
Las biotransformaciones son modificaciones químicas pr ducidas sobre un sustrato, mediadas por organismos vivos o sus partes. Estas reacciones ocurren generalmente en condiciones suaves, a menudo son ester oselectivas, y muchas veces rinden productos de difícil obtención por síntesis clá ca. Concomitante con esto generan menos residuos tóxicos y subproductos, comparadas con los procesos químicos tradicionales. Por ello son un área de desarrollo dentro de la química verde, y una interesante herramienta a aplicar en un contexto de desarrollo sustentable. En este trabajo se buscó profundizar en aspectos quími os y metodológicos de las biotransformaciones de d-limoneno y 1,8-cineol. Para ello se utilizaron hongos aislados de fuentes naturales: una cepa de Aspergillus niger para biotransformar el limoneno y una de Aspergillus terreus para el cineol. Ambos monoterpenos son subproductos de industrias nacionales. El d-limoneno es el principal componente del aceite esencial de naranja y otros cítricos, sin contribuir en mayor medida a las propiedades organolépticas de la esencia. El 1,8-cineol es el componente mayoritario del aceite esencial de eucalipto, presente en las hojas de estos árboles, las que son un residuo de la creciente industria forestal. Mediante las bioconversiones se buscó obtener productos de mayor valor agregado per se o con potencial actividad biológica. En particular se estudió la potencialidad herbicida de los productos de biotransformacióndel cineol y derivados. La bioconversión de d-limoneno dio lugar a diferentes productos de oxidación, mayoritariamente alcoholes, con porcentajes de bioconv rsión relativamente bajos. Se estudió la recuperación de los productos, lográndose sistematizar el método de extracción del limoneno y sus productos de biotransformación desde el medio de cultivo. Del estudio de la influencia del medio de cultivo y la geometría del sistema de fermentación surgió que la biotransformación está notablemente condicionada por dichos parámetros. Mediante el uso de un inhibidor enzimático se logró una biotransformación regioespecífica del limoneno obtenié e alcohol perílico, un potencial anticancerígeno, como único producto. La biotransformación de 1,8-cineol arrojó cuatro alcoholes secundarios como principales productos, en todas las condiciones ensayadas. La geometría del sistema de fermentación no afectó significativamente el resultado de la biotransformación, pero el medio de cultivo resultó condicionante de la regio y estereoselectividad de la reacción. El principal producto fue el 2-exo-hidroxicineol, obtenido prácticamente como racemato en el medio YMPG y con un exceso enantiomérico del 96 % de su forma dextrógira en el medio CM. Sin embargo el rendimiento global de la bioconversión fue muy bajo (3,3 % en el día 7 de reacción). Los alcoholes obtenidos fueron sometidos a esterificaciones enzimáticas buscando derivados con potencial fitotoxicidad. Se ens ron dos lipasas y cuatro donadores de acilo. La esterificación con acetato de vinilo catalizada por una lipasa de Candida rugosa dio como único producto el (-)- acetato de 2-exohidroxicineol. La hidrólisis de este acetato dio lugar al (-)-2-exo-hidroxicineol con un exceso enantiomérico del 99 %. A summary of the resource.
The present study is concerned with the characterization of archaeological materials of beads and ceramics, from the archaeological sites "Iglesia Colonial" and "Pampa La Cruz" of Huanchaco, respectively. The beads of "Iglesia Colonial" were recorded in funerary contexts of the Chimu Inca Period (1450-1532 A.D.) and Early Colonial Period (1532-1650 A.D.). The importance of studying this site lies in understanding the evolution of human occupation between the Inca transition and the arrival of the Spaniards to the north coast of Peru. In the “Pampa La Cruz” site, tombs containing beads and ceramic vessels prepared with the decorative technique of “the negative" were discovered. In this work fragments of the ceramics of this site were investigated, its mineralogical composition was determined qualitatively and quantitatively. This information would help to identify the possible source of clays used for the preparation of the vessels, which, in turn, could help determine if the vessels came from various places, or if the site's inhabitants themselves processed them.
El presente estudio está referido a la caracterización de materiales arqueológicos de cuentas y cerámicas, provenientes de los sitios arqueológicos “Iglesia Colonial” y “Pampa La Cruz” de Huanchaco, respectivamente. Las cuentas de “Iglesia Colonial” fueron registradas en contextos funerarios del Período Chimu Inca (1450-1532 d.C.) y Colonial Temprano (1532-1650 d.C.). La importancia de estudiar este sitio radica en entender cómo se dio la ocupación humana entre la transición Inca y la llegada de los Españoles a la costa norte del Perú. En el sitio “Pampa La Cruz” fueron descubiertas tumbas conteniendo cuentas y vasijas de cerámica con la técnica decorativa del “negativo”. En este trabajo fragmentos de cerámica de este sitio fueron investigados, su composición mineralógica fue determinada cualitativa y cuantitativamente. Esta información contribuiría a identificar la posible fuente de arcillas utilizadas para la preparación de las vasijas, lo que, a su vez, podría ayudar a determinar si es que las vasijas provenían de varios lugares, o si los mismos pobladores del sitio las procesaban.

Este trabajo se centra en una de las enzimas del metabolismo de aminoácidos azufrados, la cistationina b-sintasa (CBS). La CBS cataliza la reacción de condensación de homocisteína y serina para formar cistationina en la primera reacción de la vía de la transulfuración, que conduce a la formación de cisteína a partir de metionina. Además puede catalizar la producción de sulfuro de hidrógeno, molécula de creciente interés por su capacidad de modular procesos fisiológicos en mamíferos, actuando como neuromodulador y vasodilatador. La elevación en la concentración plasmática de homocisteína, que puede deberse a deficiencias en la CBS, constituye por causas aun desconocidas, un factor independiente de riesgo de enfermedades cardiovasculares. La CBS posee un cofactor piridoxal fosfato esencial para la catálisis y un inusual grupo hemo, hexacoordinado con cisteína e histidina, de función desconocida. En el curso del trabajo de doctorado, nos enfocamos en las propiedades redox del hemo de la CBS recombinante humana. El potencial de reducción fue determinado por titulación potenciométrica como −291 ± 5 mV (pH 7.2). Medianteespectrofotometría de flujo detenido, se estudió la cinética de reacción entre el oxígeno y la CBS previamente reducida, determinando una constante de velocidad de (1.11 ± 0.07) x 105 M-1 s-1 a pH 7.4 y 25 °C. La ausencia de cinética de saturación o de especies intermediarias detectables sugirió un mecanismo de esfera externa. Esta reacción dio lugar a la formación de radical anión superóxido. Así, de existir la CBS reducida in vivo, podría constituir una nueva fuente de generación de superóxido en el compartimento citosólico, proponiendo un mecanismo novedoso de formación de especies reactivas a partir de las vías del metabolismo de la homocisteína. También se caracterizó la cinética de reoxidación del producto de reacción de la CBS con monóxido de carbono, el Fe(II)CO, especie para la que se propuso un rol sensor. El conocimiento de la reducción biológica del hemo en la CBS constituye un punto central a la hora de asignar un rol para este cofactor en la proteína, puesto que en estado férrico el hemo es muy estable y no pierde la coordinación con cisteína ni une ligandos exógenos. El valor del potencial de reducción determinado, aunque es bajo, no lo es tanto como para impedir su posible reducción in vivo. Posibles candidatos para efectuar esta reducción en sistemas biológicos, podrían ser flavoproteínas localizadas, al igual que la CBS, en el compartimento citosólico. Por tanto, en este trabajo se exploró la posible reducción de la enzima por fracciones subcelulares citosólicas, así como con flavino reductasas purificadas, obteniendo evidencia de esta reducción en presencia de la enzima metionina sintasa reductasa. Por último se abordó el estudio de la bioquímica del sulfuro de hidrógeno, caracterizando su reactividad con diversos oxidantes de interés biológico. La constante de velocidad para la reacción directa, por dos electrones, con el peroxinitrito fue determinada como (4.8 ± 1.4) x 103 M-1 s-1 a pH 7.4 y 37 °C. A su vez, a bajas concentracione s de sulfuro de hidrógeno se evidenció un incremento en el consumo de oxígeno, consistente con un mecanismo de oxidación por un electrón que inició una cadena de reacciones radicalares. Estas reacciones fueron además estudiadas en forma complementaria mediante simulaciones asistidas por computadora. Las reacciones de oxidación por peróxido de hidrógeno, hipoclorito y taurina cloramina, presentaron constantes de velocidad de (0.73 ± 0.03), (8 ± 3) x 107 y (303 ± 27) M-1 s-1, respectivamente (pH 7.4, 37 °C). A su vez, se comparó la reactividad del sulfuro de hidrógeno frente a estos oxidantes respecto a la de tioles de bajo peso molecular como cisteína y glutatión.

A summary of the resource.
The structures of [Mn(S2O3)2(C12H8N2)(H2O)2] and [Mn(S4O6)(C10H8N2)2] are presented. The former consists of pairs of polymeric chains formed by manganese polyhedra bridged by bidentate thio­sulfate anions, which are in turn related to each other by a pseudo-twofold screw axis. The latter has crystallographic twofold symmetry and consists of monomers in which manganese displays its typical octahedral coordination provided by the bidentate bites of two bi­pyridine bases and a tetra­thionate anion, which is, to our knowledge, the first chelating tetra­thionate to be reported in the literature.

Antigen B (EgAgB) is the most abundant and immunogenic antigen produced by the larval stage (metacestode) of Echinococcus granulosus. It is a lipoprotein, the structure and function of which have not been completely elucidated. EgAgB apolipoprotein components have been well characterised; they share homology with a group of hydrophobic ligand binding proteins (HLBPs) present exclusively in cestode organisms, and consist of different isoforms of 8-kDa proteins encoded by a polymorphic multigene family comprising five subfamilies (EgAgB1 to EgAgB5). In vitro studies have shown that EgAgB apolipoproteins are capable of binding fatty acids. However, the identity of the native lipid components of EgAgB remains unknown. The present work was aimed at characterising the lipid ligands bound to EgAgB in vivo. EgAgB was purified to homogeneity from hydatid cyst fluid and its lipid fraction was extracted using chloroform:methanol mixtures. This fraction constituted approximately 40–50% of EgAgB total mass. High-performance thin layer chromatography revealed that the native lipid moiety of EgAgB consists of a variety of neutral (mainly triacylglycerides, sterols and sterol esters) and polar (mainly phosphatidylcholine) lipids. Gas-liquid chromatography analysis showed that 16:0, 18:0 and 18:1(n-9) are the most abundant fatty acids in EgAgB. Furthermore, size exclusion chromatography coupled to light scattering demonstrated that EgAgB comprises a population of particles heterogeneous in size, with an average molecular mass of 229 kDa. Our results provide the first direct evidence of the nature of the hydrophobic ligands bound to EgAgB in vivo and indicate that the structure and composition of EgAgB lipoprotein particles are more complex than previously thought, resembling high density plasma lipoproteins. Results are discussed considering what is known on lipid metabolism in cestodes, and taken into account the Echinococcus spp. genomic information regarding both lipid metabolism and the EgAgB gene family.

Peel and leaf oils of three lime populations, belonging to the Citrus limonia Osbeck species were obtained from fruits collected on lime trees submitted to the same pedoclimatic and cultural conditions. Their chemical composition was investigated by capillary gas chromatography (GC), GC–mass spectrometry (GC-MS) and chiral multidimensional 10 GC (MDGC), and the results were submitted to a cluster analysis. Results reported for Rangpur lime from Corsica, named Rangpur Jaune, Rangpur Intermediaire and Rangpur Rouge, were also included for comparison purposes

<p>The first synthesis of two fagopyritol β-analogues (β-d-galactopyranosyl-(1′→1)-conduramine F-4 and β-d-galactopyranosyl-(1′→3)-4-aminodeoxy-l-chiro-inositol) has been accomplished by a chemoenzymatic route in satisfactory yields. The key step of the synthesis is the TMSOTf-promoted glycosylation reaction of a deoxyconduritol derivative. The methodology is amenable to scale-up and expandable to the preparation of other pseudofagopyritols.</p>

Just-about-right (JAR) scales and attribute liking questions are usually used to study consumer perception of the sensory characteristics of food products. The aim of the present work was to compare the performance of attribute liking and JAR scales to evaluate consumers' perceived adequacy of flavor and texture of milk puddings. Two groups of consumers were asked to evaluate eight milk desserts using (1) overall liking followed by attribute liking for texture and flavor and (2) overall liking followed by JAR scales for thickness, creaminess, sweetness and vanilla flavor. Overall liking scores were significantly different when JAR scales or attribute liking questions were considered. Texture, flavor and overall liking scores were highly correlated to each other, providing the same information. JAR scales correlated better with the intensity of sensory attributes evaluated by a trained sensory panel, being JAR percentages a reliable tool to study the adequacy of sensory attributes.

Abstract
A summary of the resource.
A conjoint study was carried out in order to study the influence of two functional ingredients (antioxidants and fiber), the name used to declare the addition of the ingredient (common vs scientific name), and the type of healthclaim (no claim, ‘enhanced function’ and ‘disease reduced risk’ claims) on consumers’ perceived healthiness and willingness to try functional milkdesserts. The use of compounds or scientific names might not be recommended as they could have a negative impact on consumers. If a functional food manufacturer wants to emphasize the use of a novel ingredient, the ingredient could be declared using its scientific name but incorporating a healthclaim on the label, in order to achieve a positive association in consumers’ mind between the ingredient and its health effect. Besides, consumers showed the same attitude towards ‘enhanced function’ or ‘reduced disease risk’ claims. Women and old people seemed to be the most positive groups toward the evaluated functional foods. Women gave more importance than men to the type of name used to declare the addition of the functional ingredient, which could be probably attributed to the fact that women are more familiar with the health effects of fiber and antioxidants than men. Besides, young people emphasized the disease preventing claims, while older people tended to be also interested in claims that focus short term effects on health.
