En un estudio realizado en la Cátedra de Fisicoquímica de la Facultad de Química se investigó el nivel de conocimientos de estudiantes de tercer año relativo a disciplinas básicas de enseñanza secundaria y de la propia Facultad de Química. Si bien los indicadores de UNESCO sitúan al Uruguay dentro de los países con un buen nivel de educación el presente resultado muestra una realidad preocupante. En primer lugar |b el nivel de conocimientos con el cual los estudiantes llegaron a la Facultad fue más bajo que el esperado. En segundo término |b su tránsito por esta Facultad  hasta llegar a tercer año |b no contribuyó a erradicar carencias importantes sobre conocimientos en química |b matemática y física que debieron ser adquiridos en la Enseñanza Secundaria. Oxidative stability of industrial hake liver oil and its improvement by means of antioxidants were studied. For this purpose the induction period (hours) was determined in a Rancimat (70 grC |b air flow 8.3 l/h and 5 g sample). The antioxidants employed were BHT  BHA,TBHQ ascorbyl palmitate and propyl gallate and the commercial products Ronoxan A Tocomix D and Antracine 220. The most efficient antioxidant was TBHQ 0,02 per cent (the induction period was increased 6,5 times with regard to the oil without antioxidant). In the present research the content and composition of oils extracted from fillets (raw and cooked in oven) were studied. The five fishes studied were chosen among those whose consuption is the highest one in Uruguay: hake (Merluccius hubbsi) |b soapfish shark (Galeorhinus vitaminicus) King weakfish (Macrodon ancylodon) weakfish (Cynoscion striatus) and white croaker <Micropogon opercularis). In conclusion these fillets are sources rich in fatty acids from omega-3 family (especially EPA and DHA). However since the fishes are lean |b their total lipidic content is low. Content and composition of the oil were not affected by cooking in oven therefore the values determined in raw fillets can be used as approximate indexes of the prepared food. Generalmente el desarrollo teórico de las ecuaciones que rigen el equilibrio osmótico  parte del concepto de potencial químico aplicado a un sistema formado por una solución separada por una membrana semipermeable del correspondiente solvente puro. Sin embargo  en los textos de Fisicoquímica de nivel universitario es común encontrar errores provenientes de no definir con precisión el sistema en estudio y de no especificar claramente los parámetros involucrados en los potenciales químicos empleados. Este trabajo pretende aclarar mediante dos ejemplos tomados de textos de uso corriente  el origen de los errores más comunes cometidos así como propone dos demostraciones (con diferente grado de refinamiento en las consideraciones) para las ecuaciones que rigen los fenómenos osmóticos. Although the peroxide value is a common measurement of lipid oxidation |b its use is limited to the initial stages of oxidation. Since peroxides are vulnerable to further decomposition |b the complete oxidative history of the oil may not be revealed. The anisidine test a measure of secondary oxidation products |b is considered useful in that it shows the past history of the oil. Effects of accelerated storage test on the anisidine and peroxide values of commercially samples were studied. The results obtained indicate that the anisidine value is a good method to predict storage stability of fats. Some processing steps in producing edible fats and oils were studied. Bleaching clay performs decomposition of oxidation products and this effect alone would reduce the peroxide value. Comparative studies were undertaken to determine the effects of bleaching on the anisidine value. Analysis of damaged oils before and after deodorization showed that little reduction of anisidine value occurred. Properties of mixtures of partially hydrogenated soybean oil and totally hydrogenated coconout oil are also determined. The examples studied show that knowing the changes produced by current modification methods is useful to design fatty products for specific purposes. The solvent crystallization and the urea complexation of the Uruguayan fur seal oil (Arctocephalus australis Zim.) |b in order to obtain enriched omega-3 PUFA's concentrates were studied. The fractionation at -6 grC of fur seal oil or its fatty acids dissolved in ethanol or acetone |b is not suitable to obtain a PUFA's concentrate. Ethanol as a solvent and a two steps process (the second step consists of the addition of urea to the obtained NUCF) is the most useful procedure to obtain a concentrate of high PUFA's content using urea complexation of the free fatty acids from marine oils. When the concentrate is obtained from fur seal fatty acids |b the total PUFA's content is of 90 per cent with an overall yield of 17 per cent. The recovery efficiency of total PUFA's is 78 per cent. The procedure is very simple and relatively cheap. The kinetics of the geometrical isomerization of oleic and palmitoleic acids  both contained in U.S.P. oleic acid  were studied. Sulfur powder was used as a catalyst. The methyl esters of fatty acids were analyzed by GLC with 15 OV-275 columns. The sulfur-catalyzed isomerization at 180 and 225 grC proceeds via two consecutive mechanisms. The position of equilibrium is reached by the second mechanism. For this at any particular initial concentration of sulfur |b the pseudo-first-order rate dependence on substrate for a reversible reaction holds. The full rate has been shown to be proportional to the initial sulfur concentration taken to the 1.2 power. The rate constants at both temperatures and the activation energies were calculated. The relationships among composition, melting point, titer and solid fat index of beef tallow and its respective liquid and solid fractions obtained by industrial dry fractional crystallization are determined. The relationships between composition and titer do not permit one to distinguish beef tallow from the fractionated ones of the same melting range. On the other hand, the relationships between melting point and titer are different: the oleomargarines have melting points lower than their corresponding titers, and those of the beef tallow and oleostearins are higher. The fractionated fats have different contents of oleic and stearic acids compared with the unfractionated ones, but their percentage of palmitic acid does not vary remarkably. The dilatometric curves are displaced in a parallel relationship without important changes in their shape. Title A name given to the resource Flakes of distilled fatty acids from Uruguayan beef tallow  stored at room temperature  are studied. To prevent rancidity different antioxidants are added (BHT  AP and citric acid). Samples with time were taken. The analyses made were: peroxide number and alcoholic alkali color 200 ppm BHT resulted to be the most efficient. A comparative assay of rancidity fastened by temperature |b was developed Abstract A summary of the resource. Although the peroxide value is a common measurement of lipid oxidation, its use is limited to the initial stages of oxidation. Since peroxides are vulnerable to further decomposition, the complete oxidative history of the oil may not be revealed. The anisidine test a measure of secondary oxidation products, is considered useful in that it shows the past history of the oil. Effects of accelerated storage test on the anisidine and peroxide values of commercially samples were studied. The results obtained indicate that the anisidine value is a good method to predict storage stability of fats. Some processing steps in producing edible fats and oils were studied. Bleaching clay performs decomposition of oxidation products and this effect alone would reduce the peroxide value. Comparative studies were undertaken to determine the effects of bleaching on the anisidine value. Analysis of damaged oils before and after deodorization showed that little reduction of anisidine value occurred.
