Lam., a regional medicinal plant, from different collection locations in the South of Brazil and Uruguay were examined by GC and GC-MS. Monoterpene and sesquiterpene hydrocarbons were the main fractions of both the oils from Brazil and Uruguay. The oxygenated monoterpenes and sequiterpenes were at much lower percentage in both samples. The Uruguayan samples have 1,8-cineole which is not present in the Brazilian samples and has not been reported in other samples from Brazil. The results indicated a high biodiversity of the native populations of A. satureioides. In thiscontext, the aim of the present work was to apply a combination of sensory and consumer methodologies tothe development of chocolate milk desserts enriched with resistant starch. Chocolate milk desserts containingmodified waxy maize starch were formulated with six different concentrations of two types of resistantstarch (which are part of insoluble dietary fiber). The desserts were evaluated by trained assessors usingQuantitative Descriptive Analysis. Moreover, consumers scored their overall liking and willingness to purchaseand answered an open-ended question. Resistant starch caused significant changes in the sensorycharacteristics of the desserts and a significant decrease in consumers’ overall liking and willingness topurchase. Consumer data was analyzed applying survival analysis on overall liking scores, considering therisk on consumers liking and willing to purchase the functional products less than their regular counterparts.The proposed methodologies proved to be useful to develop functional foods taking into account consumers’ perception, which could increase their success in the market. The effect of the addition of gelatin and starch on the rheological and sensory texture properties of sweetened plain stirred yogurt was studied. Six samples were prepared: two with gelatin (3 and 6 mg/g), three with starch (1, 5 and 10 mg/g) and a control sample without thickener. Rheological measurements were performed and flow curves were modelled according to the Herschel–Bulkley rheological model. Also, sensory evaluation was carried out using a trained panel. The addition of gelatin and starch significantly affected the instrumental texture parameters (Herschel–Bulkley's model parameters and syneresis) and the perceived sensory texture of yogurts. All sensory descriptors were well predicted by the partial least squares regression of the instrumental parameters. The addition of thickeners significantly reduced syneresis. Samples produced with 6 mg/g of gelatin did not show syneresis and showed the highest sensory viscosity, creaminess and mouth-feel. Therefore, the use of 6 mg/g of gelatin could be a reasonable concentration to use in the production of low-fat yogurts. Un capítulo completo se dedica a su calidad sensorial, al entrenamiento de jueces y características de su cata. Otros capítulos incluyen información sobre la refinación del aceite de oliva y sobre la tecnología del aceite de orujo de oliva, de modo que el lector pueda adquirir los conocimientos necesarios para diferenciar todos los tipos de aceites provenientes de las aceitunas que existen en los mercados. The effect of lactose hydrolysis on the sensory profile of dulce de leche and consumer reaction to this process using overall acceptability data and survival analysis calculations was examined. Lactose hydrolysis caused marked changes in the sensory profile of dulce de leche, particularly for flavor and texture, leading to a decrease in consumer overall acceptability and intent to purchase the product. Survival analysis methodology was used to estimate the consumer rejection percentage to purchase dulce de leche as a function of lactose hydrolysis percentage. Using a Weibull distribution, lactose hydrolysis percentage corresponding to a 10% consumer rejection was calculated as 4.6 ± 0.4%, in agreement with calculations from least significant difference in overall acceptability, suggesting that both methodologies might provide similar results. Survival analysis could be used to estimate limits for ingredient replacement or changes in manufacturing processes that cause complex sensory changes in the product, leading to consumer rejection. Projective techniques rely on a stimulus to elicit from respondents projections of their beliefs onto other people or objects, thus reflecting their own perceptions, feelings and motivations. In this work, the job-sorting technique, in combination with Aaker’s personality scale, was applied to the study of cream liqueur brand image in Uruguay and Costa Rica. Eight jobs with different levels of intellectual complexity, salary and physical demands were selected. In each of the two countries, three (two imported and one locally made) liqueurs were presented to 90 consumers with similar socio-demographic characteristics. Respondents were told to select the job, profession or occupation (JPO) that best fitted each brand. After JPO selection, respondents were asked to select from a list of 88 personality traits all the words that they considered applicable to each JPO selected. The JPOs associated with the different brands showed no similarity between Uruguayan and Costa Rican respondents, but the personality traits associated with the two imported brands were similar in both countries, supporting the use of JPOs as metaphors in the study of brand images. The brand image of locally made liqueurs was associated with traits that differed clearly from those of the imported brands. Title A name given to the resource Chemical and sensory profiles of commercial goat cheeses Subject The topic of the resource EVALUACION SENSORIAL QUESOS DE CABRAS BIBLIOGRAFIA NACIONAL QUIMICA 2017 Abstract A summary of the resource. This study characterised the chemical and sensory properties of 15 non-spreadable goat cheeses (eight fresh and seven ripened). The majority of the cheeses had a short ripening period. Hence, low free fatty acid (FFA) contents were detected. The main difference among the cheeses was the short-chain FFA content, which was higher in the ripened cheeses, and responsible for their distinctive odours and flavours. In both types of cheeses (fresh and ripened), lactic acid was the most abundant organic acid (OA), followed by propionic acid. Hierarchical cluster analysis identified three distinct groups of samples with marked differences in their texture and flavour attributes. The percentage of moisture was positively correlated to sensory attributes such as surface film, solubility, moistness and sourness, and negatively correlated to the firmness and saltiness. No significant correlation was found among sensory attributes and total fat percentage or any of the OAs. In recent years methodological research into application of CATA questions has gained momentum. Yet, key questions for this approach remain unaddressed – how to generate the sensory terms that populate CATA questions and how many terms should be used. The second of these questions was addressed in seven consumer studies, involving a total of 735 consumers and five product categories (crackers, cheese, fruit-flavored drinks, chocolate, milk desserts). Sensory product characterizations elicited with ‘‘short’’ and ‘‘long’’ CATA questions (10–17 terms vs. 20–28 terms) were compared on a number of criteria such as frequency of CATA term use, product differences, spatial configurations (samples and terms) and task perceptions. Two strategies for generating ‘‘long’’ lists of CATA terms were examined: adding synonym terms to those already featuring on the ‘‘short’’ list (e.g., ‘hard’ and ‘firm’), and adding antonym terms to those already featuring on the ‘‘short’’ list (e.g., ‘hard’ and ‘not hard’ or ‘natural’ and ‘artificial’). Between-subjects experimental designs were used to compare product characterizations from ‘‘short’’ and ‘‘long’’ CATA questions. Results revealed that ‘‘short’’ and ‘‘long’’ lists of CATA terms generated largely similar results. In general, sample configurations were very similar, as were task perceptions. However, there were, at times, differences in frequency of CATA term use and term configurations, as well as instances where conclusions about sample differences depended on whether ‘‘short’’ or ‘‘long’’ CATA lists were used. Additionally, here was some evidence that CATA questions with ‘‘long’’ lists of synonym or antonym terms may cause a ‘‘dilution’’ effect of the responses. This fits expectations of idiosyncrasy in consumer perception/expression of sensory stimuli, but may be associated with reduced discriminatory ability of the CATA question. Resumen Se estudió la capacidad inhibitoria para tripsina y elastasa de extractos de vegetales autóctonos: flores de Achyrocline satureioidehojas (marcela), hojas de Baccharis trimera (carqueja), frutos de Eugenia uniflora (pitanga) y frutos Schinus molle (anacahuita). Los extractos, que presentaron diferentes propiedades, se obtuvieron utilizando agua o etanol como solventes en distintas condiciones de tiempo y temperatura. La acción inhibitoriapara elastasa fue baja (< 30%) o casi nula en los extractos ensayados. Para la tripsina, todos los extractos presentaron acción inhibitoria, observándose para un mismo material vegetal importantes diferencias según el solvente utilizado, independientemente de la temperatura de extracción. Los extractos de S. molle fueron los de mayor actividad inhibitoria para tripsina. Al extracto acuoso de este vegetal, obtenido a 100 °C, se le determinó IC 50y tipo de inhibición. The inhibitory capacity of trypsin and elastase of extracts prepared from Achyrocline atureioidehojas flowers, Baccharis trimera leaves, Eugenia uniflora fruits and Schinus molle fruits was studied. The extracts showed differences for the same plant material depending on using water or ethanol as solvents, and were obtained under different time and temperature conditions. The elastase inhibitory action was low (< 30%) or almost absent in the extracts tested. For trypsin, all extracts showed inhibitory action and significant differences depending on solvent used, regardless of the extraction temperature. Extracts of S. molle showed the most potent inhibitory activity for trypsin. The aqueous extract of this plant obtained at 100 °C was selected to determine IC 50 and inhibition type. Since in early infancy milk is the fundamental nutritional source, if breast feeding is not possible or sufficient, an hypoallergenic formula is required. Allergenicity control of hypoallergenic formulas is fundamental to ensure a safety product. The objective of thiswork is to develop an immunological method to test residual immunoreactivity of whey hydrolysates during industrial process. Latex agglutination test is rapid, simple and economical, so it is ideal to routine control of whey hydrolysates production. Two latex agglutination test reagents capable of controlling �-La or �-Lg residual immunoreactivity were developed and used. Detection limit of latex reagents was 12 ng/mL for �-La and 24 ng/mL for �-Lg. No cross-reaction between �-La and anti-�-Lg latex was observed. The rate of the aerobic metabolism of pyruvic acid by bakers' yeast cells is determined mainly by the amount of undissociated acid present. As a consequence, the greatest rate of oxidation was observed at pH 2.8. Oxidation, at a slow rate, started at pH 1.08; at pH 9.4 there was no oxidation at all. The anaerobic metabolism, only a fraction of the aerobic, was observed only in acid solutions. There was none at pH values higher than 3. Pyruvic acid in the presence of oxygen was oxidized directly to acetic acid; in the absence of oxygen it was metabolized mainly by dismutation to lactic and acetic acids, and CO2. Acetic acid formation was demonstrated on oxidation of pyruvic acid at pH 1.91, and on addition of fluoroacetic acid. Succinic acid formation was shown by addition of malonic acid. These metabolic pathways in a cell so rich in carboxylase may be explained by the arrangement of enzymes within the cell, so that carboxylase is at the center, while pyruvic acid oxidase is located at the periphery. Succinic and citric acids were oxidized only in acid solutions up to pH 4. Malic and α-ketoglutaric acids were not oxidized, undoubtedly because of lack of penetration. Several oral ivermectin (IVM) formulations for use in sheep are available in the pharmaceutical veterinary market in different countries. All of them are indicated at the same dose rate to treat the gastrointestinal nematodes. However, there is a lack of information on the relative systemic exposure (plasma bioavailability) and clinical efficacy among oral formulations routinely used in sheep. The main goal of the work reported here was to perform a pharmaco-parasitological assessment of three different IVM oral formulations in lambs infected with multiple resistant gastrointestinal nematodes. The comparative drug systemic exposure (IVM plasma concentrations) and nematodicidal efficacies (clinical efficacy) in lambs were determined for a reference (RF) and two different test (T1, T2) IVM oral formulations. One hundred and fifty six (n= 156) healthy Corriedale lambs, naturally infected with multiple resistant gastrointestinal nematodes were allocated into four experimental groups (n=39). Animals in each group received treatment (200 μg/kg) with either the RF, one of the test IVM formulations or were kept as untreated control. Blood samples were collected over 15 days post-treatment (n=8). The IVM plasma concentrations were measured by high performance liquid chromatography with fluorescence detection. The faecal nematode egg count reduction test (FECRT) (n=39) and evaluation of the clinical efficacy were performed at day 14 post-treatment (n=6), where a predominance of IVM highly resistant nematodes was observed. An in vivo study was carried out with 6 healthy volunteers after the administration of an infusion of "mate herb" for a period of 7 days. Plasma Theophilline and Caffeine levels were analysed by high performance liquid chromatography (HLPC) |b revealing the formation of Theophylline as a metabolism product of Caffeine. The analysis of the infusion showed presence of Caffeine and Theobromine |b but not Theophylline. After 7 days of administration the Theophylline concentration oscillated between 0.62 and 1.59 ug/ml for the different individuals; these values can be increased with concomitant intake of other beverages containing xanthines.
