Se trabajó con modelos animales de ratones CD1 con lesiones causadas por inflamación estéril, infección por Candida albicans y por Aspergillus niger. Los resultados biológicos muestran que ambos complejos presentan buena especificidad en la diferenciación de inflamación y de infección. Las imágenes centellográficas, sin embargo, no logran alcanzar una sensibilidad adecuada para la detección de estos dos procesos. In this work copper, molybdenum and sulfur determinations in grass, used as biomonitor of the soil, were performed during the period 2008-2009 and compared with the levels obtained in 2000-2001 in the same locations with the aim of observing environmental changes after the implementation of a program recommending oral and injected copper supplements in cows and after the use of fertilizers containing molybdenum and sulfur elements that can affect copper bioavailability. Several correlations with meteorological factors were also studied. The results showed that the copper level increased in grass but the concentrations remained below the recommended values. The mean copper concentrations in spring, summer, autumn and winter were 2.44, 3.12, 4.29 and 5.21 mg kg-1 DM, respectively, and for molybdenum were 0.20, 0.16, 0.22 and 0.17 mg kg-1 DM, respectively (DM = dry matter). In many samples, the molybdenum concentration was above the recommended range and consequently a secondary defi ciency can be observed. In addition, a seasonal variation in grass, an inverse correlation between copper and molybdenum concentrations and a direct correlation between copper levels and the relative humidity were observed permitting visualization of the most critical periods of hypocuprosis. Formation of complexes 4 and 5 is accompanied by the metal-assisted solvent addition to one carbonyl group of the L1 ligand with methanol or ethanol leading to the deprotonated mono-hemiacetals L2a and L2b ligands respectively. The trinuclear [NiII 3] compound 5 shows two different bridging units: two L2b units and two benzoato (Bz) ligands. 5 represents the smallest polynuclear compound in the known {NiII(L1-based)}n (n = 5,6) series. The magnetic properties of the five complexes have been investigated. While compounds 1–4 show the expected magnetic behavior for mononuclear species, 5 exhibits intramolecular ferromagnetic interactions between the NiII (S = 1) ions stabilizing an ST = 3 ground state. En consecuencia, resulta imprescindible analizar los alimentos que contienen AGT y sus propiedades térmicas para su posible sustitución. A diferencia de los AGT de origen industrial, se debe valorizar a los ácidos grasos trans "naturales" como el trans-vaccénico (TVA – Trans Vaccenic Acid) y el ácido linoleico conjugado (CLA – Conjugated Linoleic Acid). Ambos son reconocidos por su efecto beneficioso en la salud humana y aparecen en las grasas lácteas y en las carnes de rumiantes que no han sufrido modificación industrial. En el presente trabajo se analizó la composición en ácidos grasos y el comportamiento térmico del material graso extraído de productos de panaderías (panes con grasa y galletas malteadas). El máximo valor de AGT totales encontrado en uno de los materiales grasos para la elaboración de productos de panadería fue 17,3%. The extent of the reaction was explored using a novel parameter, convertibility, which corresponds to the maximum ester content attainable from the feedstock (92.1%). The highest FAME and FAEE contents achieved were 81.7 and 82.2%, respectively. Results show that transesterification of WFO in methanol was more efficient than that in ethanol, the temperature had the strongest influence, and the addition of water considerably improved the ester yield. Adverse health consequences are associated with consumption of so-called trans fatty acids (FAs) generated during chemical hydrogenation processes. Naturally-occurring trans fats, including trans vaccenic acid (TVA) derived from a conjugated isomer of linoleic acid (18:2 cis-9, trans-11), (CLA) in contrast, are recognized as having potentially beneficial effects on human health. These natural trans FAs are found in fat from dairy products and meat of ruminants, and have distinct effects compared with trans FAs industrially produced. The lipid composition of cheeses depends on the milk used. In this work was determined CLA and TVA content in milk fat of sheep and cow to be 1.4% and 3.2%, respectively, and from goat, 0.7% and 1.8%. Also, differences in CLA and TVA content were found in fat extracted from samples of the same cheese type made from cow’s milk from the same company but with different production dates during a year. The levels of CLA and TVA found in Uruguayan cheeses were generally higher than levels reported in previous studies with comparable cheeses produced in other countries. Milk fat is well-known to confer specific properties to foods. This in turn will affect the rheology and sensory attributes as food. For this reason, it is of interest to determine the triglyceride (TAG) composition in milk-derived foods. Results show that there are characteristic differences in the TAG composition of the different cheeses. We found minimal differences between cheeses from goat and sheep but found distinct characteristics for TAGs from cow milk-derived cheese. The aim of this work was to evaluate consumer visual processing of food labels when evaluating the salt content of pan bread labels and to study the influence of label design and nutritional labelling format on consumer attention. A total of 16 pan bread labels, designed according to a full factorial design, were presented to 52 participants, who were asked to decide whether the sodium content of each label was medium or low, while their eye movements were recorded using an eye tracker. Results showed that most participants looked at nutrition labels and the traffic light system to conclude on the salt content of the labels. However, the average percentage of participants who looked at the actual sodium content was much lower. Nutrition information format affected participants’ processing of nutrition information. Among other effects, the inclusion of the traffic light system increased participants’ attention towards some kind of nutrition information and facilitated its processing, but not its understanding. Unlike the case in Mediterranean countries, where olive oil consumption is driven by habit or tradition, in a population where olive oil consumption rates are considerably low, it appears reasonable to suppose that the initial decision to buy a fairly expensive product—as is the case with olive oil in the Uruguayan market—may result from an individual’s overall interest in health-related issues and/or their acquaintance with relevant nutritional properties of the particular product—in this case, olive oil. Consumer subjective and objective knowledge, interest in health-related issues, and demographic variables were studied for their potential relationship (explanatory capacity) with olive oil consumption frequency, using a sample of 256 inhabitants of Montevideo (Uruguay). Several of the studied variables were found to relate to olive oil consumption, such as subjective and objective knowledge, age, education level, marital status, and interest in health-related issues. Subjective knowledge was found to have the highest explanatory capacity. An increase in subjective knowledge is therefore expected to lead to an increase in consumption frequency among regular olive oil consumers, while it may also encourage less frequent or non-consumers to purchase olive oil and become acquainted with the product. The aim of the present work was to evaluate the contribution of eye-tracking techniques to the interpretation of results from conjoint analysis using a case study on consumers’ healthfulness perception of yogurt labels. Sixteen yogurt labels (designed according to a full factorial design with four 2-level factors – label background, fat content, sugar content and traffic light system –) were presented to 51 consumers, who were asked to rate their healthfulness. Participants’ eye movements when evaluating the labels were recorded using an eye tracker. Fat content was the only variable that significantly affected perceived healthfulness. Eye tracking provided an insight on how consumers visually processed the labels and allowed to conclude that consumers visually processed all the information responsible for differences among labels. A sample of 99 habitual consumers sensory-evaluated 2 extra virgin and 2 ordinary olive oils in terms of overall liking and willingness to purchase based on 9-point structured scales and responded to a check-all-that-apply question com-prising a list of 18 positive and negative attributes. In the second session, the same consumers evaluated the same oils also based on their respective commercial specifications and sensory profiles previously prepared by a panel of 9 trained tasters. Two consumer clusters with contrasting behavior were identified. Whereas 52% of respondents gave high overall liking scores to the extra virgin oils and scores below commercially acceptable limits to those of ordinary virgin quality, 48% gave low overall liking scores to the extra virgin oils and high overall liking scores to those oils that were defective. Consumers of neither cluster were influenced by the information made available in Session 2. Although a slight majority of consumers described the oils consistently with the sensory profiles available from the tasting panel, an alarmingly large number of respondents described the two extra virgin oils in terms of defective, bad-tasting, strange-tasting, poor quality and rancid, and those oils that were defective in terms of good quality, tasty, sweet, aro-matic, mild-flavored, delicious and fresh. These results highlight the need for the implementation of relevant consumer sensitization programs in emerging olive-producing countries like Uruguay, where virgin olive oils of varied quality are locally available. In this work, the scope and limitations of Hantzsch, modified Hantzsch and Kelly methodologies for the synthesis of amino acid derived thiazoles are presented. In addition, the syntheses of bisthiazoles as key fragments of natural products and analogs are described. The Kelly’s methodology followed by oxidation provides the desired N-Cbz protected thiazole after purification. According with our results the Fmoc or Boc proctecting groups are not compatible with the conditions used in this methodology. Modifications of the temperature and reagents used in the Hantzsch thiazole synthesis enabled the preparation of chiral thiazole building blocks without racemisation and in good yields. Chiral cis-1,2-dihydrocatechols have been extensively used as starting materials for the synthesis of complex organic molecules. The preparation of these high added value compounds is carried out mainly by enzymatic dihydroxylation of arenes since no other efficient chemical method is known. In this paper we describe a detailed study of the biotechnological production at a preparative scale of cis-3-bromo- 1,2-dihydrocatechol (BDC) from bromobenzene using Escherichia coli JM109 (pDTG601), a recombinant strain that harbors the toluene dioxygenase genes from Pseudomonas putida F1. High cell-density cultures of the microorganism (65 g/L cdw) were achieved in a 5 L bioreactor using fed-batch cultures in aerobic conditions. The influence of the biomass concentration in the volumetric and specific productivity of the system, as well as the kinetics of the biotransformation, was thoroughly studied. The use of liquid paraffin as a second phase to relieve bromobenzene’s toxicity resulted in an increased specific productivity for the bi-phasic protocol, which resulted in higher final BDC concentrations. An improvement of 3.2-fold was obtained for BDC production compared to previous reports using this organism. Furthermore, storage strategies of the biocatalytic system as a reagent for organic synthesis are presented. Cucurbitacins are secondary metabolites that mediate insect plant interactions not only as allomones against generalists but also as kairomones for specialist herbivores. This study was undertaken to identify the potential of cucurbitacin derivatives as insect antifeedant agents. The antifeedant capacity against a Cucurbitaceae specialist [Epilachna paenulata (Coleoptera: Coccinellidae)] and a polyphagous insect [Pseudaletia adultera (Lepidoptera: Noctuidae)] was evaluated in preference tests in which the insects were given a choice between food plants either treated with the cucurbitacin derivatives or treated with the solvent. The activity was found not to be related to the basic cucurbitacin skeleton, as only 15 of the 28 tested cucurbitacin derivatives were active. Only one of the tested compounds was phagostimulant to the specialist insect (the hemissuccinate of 16-oxo-dihydrocucurbitacin B derivative), while all other active derivatives were deterrent against one of the insects (13 compounds) or both of them (3 compounds). Changes in ring A of the cucurbitacins, as well as in the side chain, modified the activity. As a general trend, when chemical modifications of the basic structure produced a change in activity, the response was opposite in both insects used as biodetectors, indicating that a selective variation in the activity may be achieved by chemical modifications of the cucurbitacin skeleton. Prospection for new sources of botanical pesticides has shown a revival in the last decades due not only to the fast development of resistance among different pests around the world but also by the need to use less eco-toxic products to control etiological agents of different pest-related problems found in agro-production. In this work, extracts from members of the families Simaroubaceae (Ailanthus altissima, Castela coccinea and Picrasma crenata) and Picramniaceae (Alvaradoa subovata and Picramnia sellowii) were evaluated for their toxicity against the cattle tick and for their antifeedant activity against insects. At the tested doses, none of the extracts exhibited a good toxicity against larvae of the common cattle tick. On the other hand, antifeedant activity was detected in various extracts. Foliage consumption was completely deterred in adults of the specialist Epilachna paenulata in the cases of the C. coccinea leaf and wood extracts and P. crenata wood extract. For larvae of the generalist Spodoptera frugiperda antifeedant effects were also detected, although in a lesser extent. Phytochemical analyses of the extracts showed the presence of alkaloids in P. crenata (including canthin-6-one) and in C. coccinea. Besides, GC/MS analyses of the wood extract from C. coccinea showed the presence of several steroids (ergot 5-en-3-ol-acetate, stigmastan-3,5 diene and stigmasta-3,5dien-7-one). Anthraquinones (emodin and chrysophanol) as well as chlorogenic acid were detected in the cases of A. subovata and P. sellowii extracts. Beekeeping has experienced a great expansion worldwide. Nowadays, several conventional pesticides, some organic acids, and essential oil components are the main means of chemical control used against Varroa destructor, an ectoparasite that may contribute to the colony collapse disorders. Varroa resistance against conventional pesticides has already been reported; therefore it is imperative to look for alternative control agents to be included in integrated pest management programs. A good alternative seems to be the use of plant essential oils (EOs) which, as natural products, are less toxic and leave fewer residues.Within this context, a bioprospecting program of the local flora searching for botanical pesticides to be used as varroacides was launched. A primary screening (driven by laboratory assays testing for anti-Varroa activity, and safety to bees) led us to select the EOs from Eupatorium buniifolium (Asteraceae) for follow up studies.We have chemical characterized EOs from twigs and leaves collected at different times. The three E. buniifolium EOs tested were active against Varroa in laboratory assays; however, there are differences that might be attributable to chemical differences also found. The foliage EO was selected for a preliminary field trial (on an experimental apiary with 40 hives) that demonstrated acaricidal activity when applied to the hives. Although activity was less than that for oxalic acid (the positive control), this EO was less toxic to bees than the control, encouraging further studies.
