A summary of the resource.
Granulomas are responses to persistent nonliving bodies or pathogens, centrally featuring specialized macrophage forms called epithelioid and multinucleated giant cells. The larval stages of the cestode parasites of the Taeniidae family (Taenia, Echinococcus) develop for years in fixed tissue sites in mammals. In consequence, they are targets of granulomatous responses. The information on tissue responses to larval taeniids is fragmented among host and parasite species and scattered over many decades. We attempt to draw an integrated picture of these responses in solid tissues. The intensity of inflammation around live parasites spans a spectrum from minimal to high, parasite vitality correlating with low inflammation. The low end of the inflammatory spectrum features collagen capsules proximal to the parasites and moderate distal infiltration. The middle of the spectrum is dominated by classical granulomatous responses, whereas the high end features massive eosinophil invasions. Across the range of parasite species, much observational evidence suggests that eosinophils are highly effective at killing larval taeniids in solid tissues, before and during chronic granulomatous responses. The evidence available also suggests that these parasites are adapted to inhibit host granulomatous responses, in part through the exacerbation of host regulatory mechanisms including regulatory T cells and TGF-β.

This chapter reviews the most relevant advancements in consumer science, from a methodological perspective, starting from a historical standpoint and highlighting the main areas of development and discussing the whys. Among the topics reviewed are the shift from standardized sensory description to consumer-based feedback; going beyond hedonics toward more complex, interdisciplinary food choice models that take into account context, situation, consumer attitudes and values; the growing interest in emotional research; and the study of the extended eating experience (food behavior, well-being). Also covered are methodological advancements in qualitative and quantitative consumer research, adapting methods from psychology and behavioral economics, and the use of nondirected and implicit methods, as well as considering heuristics in food choice. The chapter also reviews the importance of planning specific studies and applications with special populations from a socioeconomic perspective and from a cognitive perspective. Based on the recent advancements, the future and remaining challenges in consumer science are discussed as concluding remarks. As this is the introductory chapter, we detail the chapters that look in depth into the different areas of consumer science in the two volumes of the present book.

Sensory characterization is one of the most powerful and widely used tools in sensory science, in both industrial and academic settings. For decades, descriptive analysis with trained assessors has been regarded as the gold standard for describing the sensory characteristics of products. However, the development of several alternative and flexible methods has demonstrated that consumers can provide accurate and reliable information. In this context, the aim of this chapter is to provide a brief description of some of the most popular methodologies for sensory characterization with consumers and to provide recommendations for practitioners on how to implement them.

Reducing the added sugar content of sugar‐sweetened beverages is one of the most cost‐effective strategies to achieve short‐term changes in added sugar intake. The present study aimed at evaluating children and adults' sensory and hedonic perception of added sugar reduction in grape nectar. For this purpose, two studies were carried out. In the first study, five sequential difference thresholds for added sugar in grape nectar were determined with school‐aged children and adults using paired comparisons. In the second study 105 children (6–12 years old) and 100 adults evaluated six samples with different added sugar content. They were asked to rate their overall liking and to answer a check‐all‐that‐apply question. Results confirmed the feasibility of reducing the added sugar concentration of grape nectar without affecting the sensory and hedonic perception of both children and adults. Children were less able to detect changes in the sensory characteristics of the added sugar reduced nectar samples than adults but showed higher hedonic sensitivity to added sugar reduction. Large heterogeneity in hedonic reaction toward added sugar‐reduced nectar samples was found in both age groups.

Astringency is one of the differential characteristics of Tannat wine, the emblematic wine of the Uruguayan wine‐making industry. The aim of this study was twofold: First, to compare wine astringency characterization of experts and trained assessors, and second, to identify which astringency characteristics influence experts' perception of astringency quality. Six commercial Uruguayan Tannat wines were evaluated in triplicate by a trained assessors panel (n = 9). Assessors rated the global astringency intensity using a time‐intensity task, and described astringency subqualities using a check‐all‐that‐apply (CATA) question composed of 16 terms. Samples were also assessed by 30 experts who rated astringency intensity and quality using 9‐point structured scales. In addition, experts described astringency subqualities of samples and of their ideal high‐quality Tannat wine using a CATA question. Significant differences among samples were found in astringency intensity for both panels and expert's perceived quality. Agreement between trained assessors and experts in astringency intensity evaluations was observed, but differences in their description of astringency subqualities were found. Astringency quality as perceived by experts was not related only to astringency global intensity; astringency subqualities complex and velvety were the main drivers of astringency quality, while puckery, sand paper, and irritant significantly lowered quality scores.

New technologies provide the fruit sector opportunities for the development of new products that meet consumer demands for a healthy diet. These technologies have several advantages over conventional thermal processes as they yield more nutritious food, preserving their sensory characteristics. However, these advantages do not assure consumer acceptance, which is the main determinant of the success of new technologies. This chapter aimed at providing an overview of the main determinants of consumer perception of fruit products manufactured using new technologies and to discuss strategies to increase consumer awareness and acceptance of these products. High hydrostatic pressure, pulsed electric fields, and irradiation were discussed under the perspective of the consumer. The results suggest that providing information about new technologies seems to be a key strategy for increasing consumers’ acceptance of fruit products manufactured by means of these technologies. Information and communication campaigns should be performed at the early phases of the introduction of new technologies into the marketplace.

El hambre puede ser definida como la sensación incómoda o dolorosa causada por el consumo insuficiente de alimentos. Es la forma más grave de inseguridad alimentaria, ya que implica que las personas no tienen acceso a suficientes alimentos para satisfacer sus necesidades básicas. A efectos de conocer con qué variables socioeconómicas está correlacionada la inseguridad alimentaria en América Latina se han estimado modelos probit ordenados utilizando los datos de la Encuesta Latinobarómetro del 2017 para 18 países latinoamericanos. En promedio, el 53% de los encuestados indicaron que nunca experimentaron falta de alimentos para satisfacer sus necesidades en los últimos 12 meses. Esto sugiere que el hambre es un problema relevante en América Latina. La heterogeneidad en la región es amplia. Mientras que el porcentaje de personas que a menudo experimentaron falta de alimentos es del 2% para los países del sur de América Latina (Uruguay, Chile, Paraguay y Brasil), alcanza valores superiores al 10% para varios países de Centroamérica (Honduras, República Dominicana, Panamá, Nicaragua y Venezuela). Los resultados de los modelos mostraron que la edad, el nivel educativo, la situación laboral, la raza y la privación de bienes materiales en el hogar son determinantes importantes de la prevalencia del hambre. Los programas dirigidos a mejorar el acceso a los alimentos en América Latina deben tener en cuenta estas variables para identificar a los segmentos más vulnerables de la población.

Contextual factors influence consumers’ food choice and consumption decisions. The measurement of perceived situational appropriateness provides information on these influences and is easily implemented in product test situations, especially when done using the item-by-use (IBU) method. The research presents a methodological characterisation of the IBU approach when implemented as check-all-that-apply (CATA) questions. Across 14 consumer studies (33–206 people per study), four research questions (RQ) were addressed. It was found that: 1) Co-elicitation of IBU responses did not bias hedonic responses, and hedonic responses were not modulated by the type of IBU terms used (descriptive vs. emotive) (RQ1); 2) IBU responses may be modulated by co-elicitation with hedonic responses, but not by sample set composition (RQ2); 3) IBU responses were repeatable following assessments of within- and between-study responses (RQ3); and 4) For sample sizes typical in product testing research with consumers (100+), IBU responses are likely to be stable, and if differences between samples are large, they may be stable when obtained from fewer people (30+) (RQ4). An underpinning assumption of the research, that IBU responses provide product insights beyond hedonic responses (RA1) was also empirically confirmed. In summary, the findings from the present research supports the use of the CATA questions to obtain IBU sample characterisations and enhance product testing.

Check-all-that-apply (CATA) questions have become one of the most popular methods for sensory characterisation with consumers. Temporal CATA (TCATA) is an extension of the former that takes into account the dynamic nature of sensory perception. The aim of the present work was to expand the methodological comparison of CATA and TCATA questions, considering the characterisation of solid products that undergo substantial oral processing when consumed. Five studies involving a total of 731 consumers were conducted with different product categories: dried apricots, peas, cheese, bread and milk chocolate. A between-subjects experimental design was used to compare the static and dynamic versions of CATA questions. For comparison purposes, TCATA data were analysed as CATA by collapsing the data into four fixed time intervals (quarters). The four quarters of TCATA were compared to results from CATA considering the frequency of use of the terms, sample discrimination, and product configurations. The temporal aspect of TCATA did not largely modify the average citation proportion of terms or the maximum citation proportion for individual terms. Significant differences among samples were established for most of the terms in both CATA and TCATA evaluations, albeit some subtle differences between the two methods were found. These differences were dependent on the product category and the specific sensory characteristics that were relevant for describing the focal samples. The largest differences were found for Study 5 (milk chocolate), for which TCATA identified a few additional insights on the evolution of similarities and differences among samples. However, in most cases general findings were virtually identical for both methodological approaches. In light of these results, the extra effort of using a dynamic sensory characterisation method compared to a static one, may, in many instances, not be warranted.

OBJECTIVE: To evaluate the impact of message framing on attitudes towards messages aimed at promoting the use of nutritional warnings, behavioural intention and actual behaviour, evaluated through visual attention to nutritional warnings and the choice of a snack product during a real choice task. DESIGN: Following a between-subjects design, participants were exposed to loss-framed nutrition messages, gain-framed nutrition messages or non-nutrition-related messages (control group). After evaluating the messages, participants were asked to select a snack product as a compensation for their participation. The experiment was conducted using an eye tracker. SETTING: Montevideo (Uruguay). PARTICIPANTS: Convenience sample of 201 people (18-51 years old, 58 % female). RESULTS: The average percentage of participants who fixated their gaze on the nutritional warnings during the choice task was slightly but significantly higher for participants who attended to nutrition messages (regardless of their framing) compared with the control group. Participants who attended to loss-framed messages fixated their gaze on the warnings for the longest period of time. In addition, the healthfulness of the snack choices was higher for participants exposed to nutrition-related messages compared with the control group. CONCLUSIONS: Results from the present work suggest that nutrition messages aimed at increasing awareness of nutritional warnings may increase consumers' visual attention and encourage more heathful choices. The framing of the messages only had a minor effect on their efficacy.

OBJECTIVE: To evaluate the implementation of the Uruguayan healthy snacking initiative in primary and secondary schools in the capital, and to explore the factors underlying compliance from the perspective of school principals. DESIGN: A mixed-method approach was used, which included semi-structured interviews with school principals and a survey of the foods and beverages sold and advertised in the schools. SETTING: Primary and secondary schools in Montevideo (the capital city of Uruguay).ParticipantsSchool principals. RESULTS: The great majority of the schools did not comply with the initiative. Exhibition of non-recommended products was the main cause for non-compliance, followed by advertising of non-recommended products through promotional activities of food and beverage companies. Although school principals were aware of the healthy snack initiative and showed a positive attitude towards it, the majority lacked knowledge about its specific content. Factors underlying compliance with the healthy snacking initiative were related to its characteristics, characteristics of the schools, and external factors such as family habits and advertising. CONCLUSIONS: Results showed that the rationale underlying the selling of products at schools favours the availability of ultra-processed products and constitutes the main barrier for the promotion of healthy dietary habits among children and adolescents. Strategies aimed at facilitating the identification of unhealthy foods and beverages and provision of incentives to canteen managers to modify their offer are recommended.

Abstract
A summary of the resource.
In this work we present the comprehensive design of lithium titanate nanotubes (LiTNT) as semiconductors for DSSC photoanodes. The synthesis and characterization of Li1.82Na0.18Ti3O7.nH2O nanotubes was performed and a prototype of cell using this material was assembled. The cell exhibited a 7.7% efficiency and a relatively high open circuit voltage, Voc = 0.72 V. In comparison with previously obtained hydrogen titanate nanotubes (HTNT), improvements have been achieved, like better charge carriers’ lifetime and lower series resistance. In order to study this system, we carried out previous DFT simulations for this lithium titanate nanotubes through different model's complexity levels which were able to correctly predict its properties. Due to the improvements achieved this system would encourage further studies with the aim to explore its potential for solar cells applications.

Abstract
A summary of the resource.
The scope of this study included the preparation of silver nanoforms with high antimicrobial efficacy, low cost, and ease of application. The term 'silver nanoforms' refers to silver located on the amorphous or crystalline titanium dioxide (TiO2). Silver nanoforms may be used as an alternative to antibiotics in killing bacteria. Pure and silver-incorporated titanium (used as a carrier) was prepared using the sol-gel-modified method. Physical and chemical properties of the samples were described, and the antibacterial activity was indicated using the following strains of bacteria: Staphylococcus aureus, Klebsiella pneumoniae (ESKAPE pathogens), and Escherichia coli. The results have shown that the antibacterial activity of silver nanoforms with amorphous TiO2 is much better than that in the samples based on anatase (crystalline TiO2). The sensitivity of the tested bacteria to silver nanoforms depends on physical and chemical properties of the nanoforms and individual characteristics of the bacteria. For the first time, significant participation of amorphous TiO2 in antibacterial compounds has been described through this study.

A summary of the resource.
Inorganic medicinal chemistry offers the development of bioactive metal compounds as a promising and attractive approach in the search for a pharmacological control of different diseases. This chapter focuses on the most relevant efforts carried out to develop ruthenium compounds as prospective agents for the treatment of not only cancer but also parasitic diseases of high prevalence. Ruthenium could show further potentiality in Medicinal Chemistry for the design of "organic-like" small drugs due to its ability to organize organic ligands in a specific three-dimensional way forming structures with defined shapes that could for instance simulate organic bioactive molecules or biomolecules. The binding of ruthenium antiparasitic compounds to transferrin could be a suitable "trojan horse" way of entrance of ruthenium-based antiparasitic drugs into the parasite. Related to cancer therapy, ruthenium compounds have shown broad diversity, in terms of activity, toxicity, and mechanisms of action.

This manuscript describes the enantioselective synthesis of the aminocyclitol moiety of the antibiotic hygromycin A in eight steps and 39 % overall yield from a non‐chiral starting material. The sequence made use of an initial enzymatic step to transfer chirality to an aromatic ring and was followed by selective organic chemistry transformations (oxidation, protection, azidation, hydrolysis) of the six‐membered ring in order to achieve the target. The approach is also amenable to the synthesis of other related unnatural analogues as exemplified by the synthesis of the C2 epimer of the natural aminocyclitol. All the intermediates were fully characterized, and the absolute stereochemistry assigned by spectrometric methods.

A summary of the resource.
The accurate estimation of the free energy changes in solution for supramolecular complexes is one of the most important challenges for quantum chemistry in this century. In general, there is a good correlation between the association constants determined experimentally and the gas phase binding energies calculated using the most popular density functional methods. However, when the receptors adopt very different structures in the gas and condensed phase, this approach does not work, leading to unreliable predictions. We discuss this problem in detail using three popular fullerene receptors: Aida's dimeric porphyrins, buckycatchers I, and II. We found that it is possible to obtain a reliable order of affinities using gas phase binding energies when a special attention is put on analyzing the structure adopted by the receptor in the gas and condensed phases.

We have employed density functional theory to study the structural, electronic and magnetic properties of the first all-carbon layer grown epitaxially on 6H-SiC(0 0 0 1). Using VDW-DF, M06-L, LSDA, LSDA+U, PBE and PBE-D2 methods we have performed a comparative study of the preferable magnetic configuration of the system. In this work, for the first time, we report a stable antiferromagnetic (AF) ordering in the buffer layer caused by the presence of silicon dangling bonds in the SiC top layer. This state is nearly degenerated with the ferromagnetic state with a magnetic moment equal to the number of silicon dangling bonds. A net magnetic moment of 0.55 µb per Si dangling bond was found for both states. However, only for the ferromagnetic state the carbon atoms of the buffer layer exhibited a magnetic moment. The magnetic configuration is much more stable than the non-polarized one and might explain SQUID results and spin transport experiments with epitaxial graphene. Furthermore, we found that, as previously observed experimentally, the buffer layer is a true semiconductor.

The use of nanostructured materials for enzyme immobilization is an active field of research due to its large surface area and the new emergent properties derived from its size. The present work is focused on the synthesis of magnetic nanoparticles for the adsorption of cysteine-proteolytic enzymes extracted from Bromelia antiacantha Bertol (Bromeliaceae) fruit. The results show that enzyme adsorption is highly dependent on the temperature and pH. The biocatalyst activity increased up to 40 %, once immobilized onto the magnetic nanoparticles. In addition, they can be recovered using a magnet allowing them to be reused up to 5 cycles with a marginal loss (5 %) of the initial activity.

The dissipation of 4 commercial pre-harvest pesticides used in two Citrus species under field conditions is presented. The influence of agroecological region, the Citrus species and weather conditions on abamectin, spinosad, imidacloprid and difenoconazole dissipation rate on fruits were evaluated. A validated ethyl acetate method coupled to liquid chromatography-tandem mass spectrometry allowed the determination of pesticide residues having recoveries of 72–115%, relative standard deviations ≤16% and quantification limits below the international Maximum Residue Levels (MRLs). After 35–40 days from pesticides spraying, all residues were below the international required MRL. For each citrus species, the influence of the agroecological region on the pesticide dissipation was assessed. Film-protected fruits against direct radiation and rain showed higher residue levels of imidacloprid and spinosad than the non-protected ones. Either for orange or mandarin, abamectin residues were detectable only at the first day after application. These findings provide useful information to state safer pre harvest intervals and to ensure food safety and compliance with good agricultural practices.

Uruguay is a country with a population basical- ly of European origin, formed by immigration waves arriving at the turn of the 19th century. During the colonial days, a small number of the native medicinal plants merged with plants of European origin to form the basis of Uruguay’s popular medicine. Other native plants were slowly added to this basic pharmacopoeia, some as the American counterparts of European plants, others by adopting their use from neighbouring countries.

The biotransformation of (4R)-(-)-carvone by Mentha pulegium (pennyroyal) leaves and its endophytic bacteria was performed in order to search for novel biocatalysts with enoate reductase activity. The obtained results clearly indicated that endophytes play an important role in the biotransformation of (4R)-(-)-carvone with pennyroyal plant tissues. The best activity was associated to the endophytic bacteria Pseudomonas proteolytica FM18Mci1 and Bacillus sp. FM18civ1. Enoate reductase activity for the reduction of (4R)-(-)-carvone and (4S)-(+)-carvone as model substrates was evaluated for each strain. Finally, both isolated strains were evaluated for the kinetic resolution of racemic carvone. The two bacteria gave (1R, 4R) or (1R, 4S)-dihydrocarvone as major products. P. proteolytica FM18Mci1 had preference for the 4S-(-)-carvone, reaching a conversion 95% in 24 h. In contrast, Bacillus sp. FM18civ1 had preference for (4R)-(-)-carvone. The results obtained in the kinetic resolution of carvone indicated that the Bacillus strain could be useful for resolving a racemic mixture of carvone.
