El aceite de oliva virgen es el zumo oleoso de las aceitunas que se separa de los demás componentes del fruto. Cuando se obtiene por sistemas de elaboración adecuados y procede de frutos frescos de buena calidad, sin defectos ni alteraciones, y con la adecuada madurez, el aceite posee excepcionales características organolépticas. Es prácticamente el único entre los aceites vegetales que puede consumirse crudo, conservando íntegra su composición en ácidos grasos y el contenido en componentes menores, de elevada importancia saludable-nutricional, destacando el contenido en vitaminas liposolubles y polifenoles (Alba, 2008). Los lípidos son nutrientes necesarios ya que proveen al organismo de energía, de ácidos grasos esenciales (linoleico y linolénico) y esteroides precursores de hormonas, entre otros compuestos de interés, que ayudan a mantener la temperatura corporal y participan en el recambio celular (Valenzuela y Morgado, 2005) En la actualidad Uruguay consume poco aceite de oliva virgen y se pretende aumentarlo, sobretodo el consumo nacional, aunque a nivel mundial existe la tendencia del aumento de dicho consumo. Hay varias causas que justifican dicho aumento, entre las que más se destaca es el deseo de la población por consumir productos saludables. Uruguay quiere caracterizar sus aceites de oliva vírgenes para competir internamente con los aceites extranjeros y para poder exportarlos con perfil propio; algo ya se ha hecho porque se han ganado premios en diferentes concursos a nivel internacional; es por esos postulados que se pretende caracterizar los AOV y ver qué zonas hay que potenciar. La caracterización se realizaría tanto en forma sensorial como química: por estudio del perfil de ácidos grasos y del contenido de antioxidantes. El objetivo general de esta Tesis es el estudio de aceites de oliva vírgenes, variedades Arbequina y Picual, obtenidos a partir de aceitunas provenientes de dos zonas geográficas diferentes del país, con distintos índices de madurez, durante tres cosechas, años 2011, 2012 y 2013 y el estudio de la percepción del consumidor uruguayo sobre el aceite de oliva virgen. 7 Para la escritura de dicha tesis primero se exponen los estudios químicos realizados a los aceites de oliva vírgenes extraídos, luego los estudios sensoriales obtenidos por medio de jueces sensoriales realizados a los mismos aceites y por último los estudios realizados con consumidores de la percepción del consumidor uruguayo sobre el aceite de oliva virgen. Según los resultados de los análisis tanto químicos como sensoriales realizados a todos los aceites de oliva vírgenes estudiados en esta Tesis se concluye que los mismos pertenecen a la categoría aceite de oliva virgen extra ya que cumplieron los requisitos establecidos en la legislación. A new moderately thermophilic proteolytic anaerobe, strain UT, was isolated from mesophilic granular methanogenic sludge. The cells were spore-forming, motile rods that were 0.4 pm wide and 2.4 to 4 pm long and stained gram negative. Electron micrographs of thin sections revealed the presence of an atypical gram-positive cell wall. Optimum growth occurred at 55°C and at pH values between 7.0 and 7.5, with a doubling time of 30 min. The DNA base ratio of guanine plus cytosine was 31 mol%. The bacterium fermented proteins mainly to acetate, hydrogen, formate, and branched-chain fatty acids. Several amino acids, including glutamate, aspartate, arginine, histidine, threonine, methionine, and branched-chain amino acids, were also utilized. El Trypanosoma cruzi es un protozoo hemoflagelado, agente causal de la enfermedad de Chagas 0 Tripanosomiasis Americana, dolencia endemica y cr6nica, que afecta a aproximadamente 18 millones de individuos en America Latina Es un parasito intracelular que convive con su hospedero, por mas de 70 ailos, en un equilibrio del tipo "vivir y dejar vivir". En este contexte son diversos los mecanismos desarrollados por el hospedero para su eliminaci6n y por el parasito para evadirlos, 10 que 10 hace, sin duda, un modelo fascinante para ser estudiado. En los ultimos ailos hemos clonado, secuenciado y expresado el gen de calreticulina de T cruzi (TcCRJ), proteina de 45kDa, electroforeticamente dim6rfica e inmunogenica [1-5]. Esta molecula fue descrita, por primera vez, en 1991 en ellaboratorio donde se desarro1l6 esta Tesis, como Tc45, un antigeno de T cruzi inmunogeneticamente restringido en ratones [6]. Posee 41% de homologia con calreticulina de Leishmania donovani y mas de un 50% con calreticulina hurnana (HuCRn [1]. TcCRT esta presente en la superficie de tripomastigotes, une Clq y MBL, inhibiendo la ruta clasica del sistema del complemento [7]. Su gen se localiza en diversos cromosomas [1]. Calreticulina (CRn de mamiferos es una proteina multifuncional altamente conservada que une calcio, esta presente en todas las ceIulas de los organismos superiores, excepto eritrocitos. Regula mas de 40 funciones daves, entre ellas se incluyen: chaperona del tipo lectina, sefializaci6n y almacenamiento del calcio, modulaci6n de la expresi6n genica, adhesi6n celular, fagocitosis de celulas apopt6ticas por uni6n a Clq, inhibici6n de la angiogenesis y del crecimiento tumoral, inhibici6n de la actividad litica de las perforinas de ceIulas T y NK, e inhibici6n de la activaci6n del complemento dependiente de Clq. Igualmente, calreticulina esta presente en diversos compartimentos subcelulares. EI docurnento de esta Tesis se divide en 9 capitulos, de los cuales el pnmero es una revisi6n bibliograficas y en los capitulos 6, 7 y 8, se incluyen revisiones que hemos publicado, recientemente, sobre el rol de calreticulina de parasitos en su interacci6n con el hospedero vertebrado, en lnmunologia, 2002 [8] Y Molecular lnmunology, 2004 [9], y Trends in Parasitology, 2005[10], respectivamente. En el capitulo 9 se incuye una discusi6n general del docurnento de esta Tesis y en el resto de los capitulos se presentan resultados. Paralelamente al desarrollo de esta Tesis, y de particular interes ha resultado la habilidad de TcCRT para combinarse especificamente con componentes iniciales del Sistema del Complemento (Clq y MBL), 10 que resulta en una importante inhibici6n de la ruta clasica del complemento humano [9]. Es posible, entonces, que T cruzi utilice a TcCRT para modular, en su beneficio, este importante brazo efector de la respuesta inmune. En el capitulo 2 analizamos, en el modelo murino, la capacidad inmunogenica de TcCRT, como proteina recombinante (TcCRTr) y de plasmidios portadores de fragmentos del gen que codifica TcCRT. Tambien, se muestran experimentos preliminares de desafio con tripomastigotes sanguineos de T cruzi, cepa Tulahuen y se analiza la inmunidad pasiva, inducida por anticuerpos policlonales lapinos anti el dominio funcional S, de uni6n a Clq, de TcCRT. Demostramos, en ensayo ELISA, que TcCRTr es inmunogenica en ratones BALB/c y que los anticuerpos generados reconocen la proteina nativa mediante inmunofluorescencia indirecta por microscopia convencional. La inoculaci6n de DNA desnudo con pSec.K2, en ratones BALB/c, genera inmunidad humoral especifica anti TcCRT, analizado en ensayos ELISA. Mediante anaJisis de citometria de flujo, estos anticuerpos reconocen la proteina nativa en el interior y en la superficie de los parasitos, confirmando la expresi6n intracelular y ex.1racelular de esta proteina. Previamente habiamos demostrado que IgG de ratones A.SW (H2') inmunizados con tripomastigotes 0 epimastigotes de T cruzi y suero de pacientes humanos infectados reconocian Tc45 [I, 3, 5]. Ademas, se generaron anticuerpos monoclonales anti TcCRTy tres plasmidios, portadores del gen de TcCRT; pcDNA.KI, pcDNA.K2 y pSec.K2. Dado que TcCRT posee un segmento con 46% de identidad y 60% de positividad con el fragmento funcional descrito con propiedad antiangiogenica de HuCRT (aa 120-180) y que, sorprendentemente, en ratones y ratas infectados con T cruzi se observa una disminuci6n, e incluso desaparici6n, del crecimiento de diversos tumores trasplantables y espontfuleos, en el capitulo 3 analizamos el efecto antiangiogenico de TcCRT, en un ensayo, in vivo, en membrana alantocori6nica de embriones de polio (CAM). Utilizamos proteina nativa y recombinante, la construcci6n plasmidial pSec.K2, que porta el gen de TcCRT, sin sus secuencias lider y de retenci6n en el reticulo endoplasmico (KDEL) y Betametasona, como control positivo. La capacidad productiva del constructo genico fue verificada por citometria de flujo, mostrando que sueros de ratones inmunizados con el plasmidio recombinante reconocen TcCRT en tripomastigotes de T cruzi, fijados y vivos. TcCRT y pSec.K2 indujeron un efecto antiangiogenico altamente significativo en ensayos CAM in vivo. Los resultados mostrados aqui indicarian que TcCRT, como su contraparte humana, tiene propiedades antiangiogenicas. Probablemente, el efecto antiangiogenico de esta sustancia ocurre preferentemente sobre el crecimiento de tej idos neoplasicos, pero no en tumores establecidos; debido a su efecto sobre la formaci6n de nuevos vasos. Estas propiedades, podrian explicar, al menos en parte, la actividad antineoplasica observada en infecciones experimentales con T cruzi. En este Capitulo, se adjunta un trabajo publicado en Molecular and Biochemical Parasitology, 2005[ II], en el cual mostramos estos resultados. Como informaci6n anexa a este documento se agrega la Figura 51, donde se muestra la vasculatura de membranas tratadas 0 no con TcCRTr. En el capitulo 4 se presentan resultados donde se observa que TcCRT es una molecula electroforeticamente dim6rfica, codificada por multiples genes localizados en cromosomas cuyo numero varia en funci6n de la cepa 0 clon parasitario y, aparentemente, en el nUmero de copias de genes que codificaria TcCRT presentes en cada cromosoma. En este sentido, se observan desde dos bandas, entre 1.125 y 2.000 kb, en el cion CL Brener y cepas colombianas 2 y 3, hasta en cuatro diferentes cromosomas en las cepas Tulahuen, 2 e Y Y en el clon DM 28c. Ademas, se analiza, en geles de electroforesis de campo pulsado (pFGE), la presencia del gen de TcCRT en clones de T rangeli. Se observa una senal muy debil, por 10 que podria pensarse que el nillnero de copias del gen por cromosoma es muy bajo y/o la secuencia del gen es 10 suficientemente diferente como para dificultar la hibri daci on. Por otra parte, en geles de poliacrilamida en presencia de SDS (SDSSPAGE), en condiciones reductoras, TcCRT muestra un dimorfismo electroforetico de 43 y 46 kDa, 10 que permitiria clasificar a las cepas en dos grupos definidos. Aful desconocemos el significado funcional y la naturaleza bioquimica de la beterogeneidad cromosomica y del dimorfismo electroforetico de TcCRT. Estos hecbos sugieren que en T cruzi existe una familia de CRTs 0 moleculas bomologas, abriendo la posibilidad de una variedad de funciones, quizas relevantes en la relacion hospedero/parasito. En este Capitulo, se adjunta un trabajo publicado en Am J Trap Med Hyg, 2000, en el cual mostramos, entre otros datos, los primeros resultados en PFGE, describimos el dimorfismo electroforetico de TcCRT y el uso del anticuerpo monoclonal E2G7, generado en el contexto de esta Tesis, para el clonamiento y expresion de TcCRT. Ya fuera del contexto de esta Tesis, sera de interes el verificar si Calreticulina del insecto triatomino, al igual que la de otros hematMogos[12], es secretada via salival y si mantiene la propiedad de ururse a Cl (q, r, s) ylo MBL-MAPS, de diversos hospederos potenciales. De ser aS1, el artropodo se protegeria de posibles mecanismos citotoxicos, mediado por el complemento, sobre la mucosa digestiva. Por ello, incluimos en el capitulo 5 un trabajo, recientemente, publicado en Parasitology Research, 2004 [13], con relacion a los habitos alimenticios de Mepraia spinolai. Este es un vector artropodo silvestre de T. cruzi, agente importante, al menos, en la mantencion del cicIo parasitario. AlIi propusimos un simple ensayo para evaluar la importancia de siete especies vertebradas como fuente de alimentacion de M. spinolai. Conejos fueron inmunizados con proteinas sericas de cada una de las siete especies. Luego de titular, una dilucion consenso de 1/100.000 de 10s sueros inmunes detecta protein as sericas vertebradas en el18.9% de contenido intestinal de 131 insectos probados. La mayor proporcion de muestras negativas es consistente con informaciones previas que indican que estos insectos pueden resistir periodos prolongados de ayuno. Altemativamente, elIos se pudieron baber alimentado con sangre de especies de animales diferentes de aquellos de los cuales se genero e1 an tisuero. En aproximadamente el 70010 de las muestras positivas, se detecto un solo origen vertehrado de las proteinas sericas. Todos los sueros preinmunes dieron senal negativa. En 67% de los vectores positivos, se detectaron inmunoglobulinas de conejo directamente por medio de un anticuerpo de cabra especifico. Asi, los conejos silvestres, podrian jugar un papel en la transmision de T. crozi. Estos resultados son complementarios a los ya publicados en J Med Entomol, 2001 [14]. Sensory scientists have adapted several sensory methods to fit children’s cognitive abilities according to their different developmental stages. Although children have been reported to be able to use sensory methods to describe foods and beverages, published applications are limited to static characterizations. In this context, the objective of the study was to evaluate the feasibility of using two dynamic methods (temporal check-all-thatapply -TCATA- and Temporal dominance of sensations -TDS-) for sensory characterization with children. A video featuring colored circles (varying in size, appearing and disappearing) was used to convey the idea of temporal perception and to familiarize children with the methods. A series of six vanilla milk desserts was used in the tasting session. A total of 102 children (8 to 12 years old) recruited from two Uruguayan schools participated in the study. They were randomly divided in two groups, each of which used one of the methods. Results showed that TCATA and TDS allowed capturing the dynamics in the video. However, TCATA provided a more detailed description of how the colored circles evolved with time than TDS. In the case of the milk desserts samples, both methodologies showed similar results regarding the most relevant sensory characteristics. However, children mostly used them as static methods. In the TDS task, children dithered for long before selecting a new attribute, which points towards difficulties in evaluating dominance. Although several discrimination methods have been reported with children, the A-not-A test has not been studied yet. The aims of this work were to: (i) evaluate the feasibility of using the A-Not-A test with school aged children, and (ii) compare how the framing of the question (overall differences vs. differences in liking) may influence the results. A total of 126 children were involved in the study. They participated in three sessions, each composed of a familiarization task with a visual stimuli and sample tasting with one of three dairy products (vanilla milk desserts, chocolate-flavored milk, and vanillaflavored yogurt). Half of the children evaluated the samples in terms of overall differences and the other half in terms of differences in liking. Results from the familiarization step showed that children correctly identified the visual reference in the A-not-A test regardless of how the question was framed, suggesting that they were able to understand the methodology. In the case of tasting samples, children were significantly more likely to correctly identify the reference in two of the three studied dairy products, when the question was based on liking, as compared to the framing based on overall differences. In projective mapping tasks assessors create an overall representation of the similarities and differences among samples by relying on a process of synthesis for analyzing and processing sensory information. Individual differences in consumers’ information processing and preference patterns could strongly affect which sensory characteristics they consider more relevant for estimating similarities and differences among samples. Therefore, low-dimensional consensus configurations (obtained via MFA or GPA) may not represent the perception of some consumer segments. This could lead to inaccurate conclusions about consumers’ sensory perception of the products or at least to the loss of valuable information about the perception of some consumer groups. In this context, the aims of the present work were to explore consumer segmentation in projective mapping. Datasets from nine studies with 81–102 consumers were analyzed to explore consumers’ segmentation. Through applying hierarchical cluster analysis on consumers’ coordinates in the first four dimensions of the MFA, between 2 and 4 groups of consumers were identified in each study. Sample configurations and consumers’ descriptions strongly differed among the groups, indicating heterogeneity in the relative relevance they gave to the sensory characteristics of the samples for estimating the similarities and differences among samples. In all cases it was observed that the consensus configuration was highly similar to the configuration of one of the groups, which was not necessarily the larger but the one with the highest explained variance by the first dimension of the MFA. These results suggest the need to explore segmentation when analyzing data from projective mapping tasks, and to further study the relationship between consumers’ holistic perception of products and preference patterns. Measurement of consumers’ emotional associations to food/beverage stimuli is one way to obtain product insights that extend beyond hedonic responses. Survey methods are a popular way to obtain direct responses from consumers, but concerns over their ecological validity exist. In this research, a preliminary investigation and assessment of emoji-based questionnaires as a potential method for measuring food-related emotional associations was conducted. Six studies involving 1087 consumers in USA and China were conducted using names of foods and beverages as the stimuli. On average consumers selected 1–2 emoji per stimulus. The elicited data was able to discriminate between stimuli that span the hedonic continuum and generate detailed emotional product profiles. Less discrimination was obtained between hedonically similar stimuli, but meaningful emotional profiles were elicited nonetheless. Repeatability of emoji responses was high and data with good face validity was obtained from American and Chinese consumers. Emoji responses from groups of consumers who liked/disliked a focal stimulus were different (in the expected directions) and frequency of consumption also influenced emoji responses. The preliminary investigations reported here suggest that emoji may have potential as a method for direct measurement of emotional associations to foods and beverages. Additional research is required to further develop this emoji-based approach, including assessment of its pros and cons of and performance relative to existing tools. A total of 492 children (6–12 years old) were randomly divided into three groups, each of which evaluated a series of packages featuring different FOP nutrition labelling schemes: guidelines daily amount (GDA), traffic light system (TLS) and nutritional warnings. For each of the six packages and three unpackaged products, children were asked to select all the emoji from a list that described how they would feel eating the product. Data were analyzed using generalized linear models. FOP nutrition labelling significantly influenced the frequency of use five of the 16 emoji. In general, children who evaluated packages with directive and semi-directive schemes used emoji associated with positive emotions less frequently than those who evaluated packages with the GDA system. The effect of FOP nutrition labelling scheme on emotional associations was moderated by age and type of school. The effect of directive and semi-directive FOP nutritional schemes, in special nutritional warnings, tended to be higher for younger children and children from public schools. These results suggest that FOP nutrition labelling may contribute to discouraging consumption of products with high content of nutrients associated with non-communicable diseases among children. We also show that cellulose can be readily reconstituted from the IL-based wood liquors in fair yields by the addition of a variety of precipitating solvents. DESIGN: Following a between-subjects design, participants completed a simulated weekly food purchase in an online grocery store under one of three experimental conditions: (i) a control condition with no nutrition information, (ii) a traffic-light system and (iii) the Chilean warning system. Information about energy (calories), sugar, saturated fats and salt content was included in the nutrition information schemes. SETTING: Participants were recruited from a consumer database and a Facebook advertisement. SUBJECTS: People from Montevideo (Uruguay), aged 18-77 years (n 437; 75 % female), participated in the study. All participants were in charge of food purchase in the household, at least occasionally. RESULTS: No significant differences between experimental conditions were found in the mean share of ultra-processed foods purchased by participants, both in terms of number of products and expenditure, or in the mean energy, sugar, saturated fat and salt content of the purchased items. However, the Chilean warning system decreased intended purchase of sweets and desserts. CONCLUSIONS: Results from this online simulation provided little evidence to suggest that the traffic-light system or the Chilean warning system in isolation could be effective in reducing purchase of ultra-processed foods or improving the nutritional composition of the purchased products. Several studies have shown that the inclusion of front of pack nutritional warnings is a potentially effective strategy to encourage consumers to avoid products with high content of nutrients associated with non-communicable diseases. In this context, the present work aimed at exploring consumers’ reaction towards sodium reduction in the context of the implementation of warnings in three scenarios: package evaluation, tasting and intention to re-purchase the product after tasting, using white bread as case study. A total of 171 consumers participated in the study that encompassed four parts. Firstly, consumers received two bread samples with different salt content (2.00% and 1.38% salt) under blind conditions and were asked to rate their overall liking and to indicate the one they preferred. Then, they were asked to look at four bread packages differing in graphic design and the presence of warnings. They had to rate their expected liking and to indicate the one they would purchase. Finally, consumers were asked to try the bread they had previously chosen, to assess their overall liking and to indicate their willingness to purchase it again. Salt content significantly affected consumer hedonic reaction towards the breads. Two consumer segments with different preference for the salt content in bread were identified: 58% of consumers preferred the bread with 2.00% salt while 42% preferred breads with 1.38% salt. However, when looking at the packages the majority of consumers in both groups selected bread packages that did not feature warnings. In addition, after having tried the bread, most consumers were willing to buy the bread they had previously chosen again, which is promising in terms of reaching sustainable changes towards lower salt levels. Results from the present work suggest that, in the case of bread, nutritional warnings have potential to shift consumers’ preferences to lower sodium content, even after trying the products. Estudios previos realizados en el Laboratorio de Ecologfa Microbiana-IIBCE demostraron que diferentes bacterias no patogenas de ani males, entre ellas los rizobios, eran capaces de utilizar compuestos hemfnicos (hemina, hemoglobina y leghemoglobina) como fuentes de hierro. EI objetivo general del presente trabajo de tesis fue el de caracterizar los mecanismos de adquisicion de hierro mediados por compuestos hemfnicos presentes en Sinorhizobium meliloti 242. Los objetivos particulares fueron: a) estudiar la funcion de la L-metionina en la adquisicion de hierro a partir de compuestos hemfnicos y b) detectar y purificar las posibles protefnas de membrana externa con capacidad para unirse a hemina, hemoglobina y leghemoglobina. A partir de ensayos de crecimiento bacteriano en medio Ifquido y bioensayos, se determino que es necesario suplementar al medio mfnimo de cultivo, MV, con L-metionina 300I-lM para que la cepa Sm 242 sea capaz de crecer en medios limitados en hierro con el agregado de diferentes fuentes de este metal (compuestos hemfnicos 0 sideroforos). Cuando se utilizo glutamato en lugar de amonio como fuente de nitrogeno y se agrego L-metionina al medio de cultivo, se obtuvo una mayor produccion de sideroforos y mayores rendimientos celulares. A partir de la informacion disponible, una posible interpretacion de los resultados obtenidos es que en condiciones de baja disponibilidad de hierro, la vfa de asimilacion del azufre a partir del sulfato, este afectada probablemente a nivel de la sulfito reductasa. La L-metionina en estas condiciones serfa una mejor fuente de azufre para la cepa Sm 242. Se purifico leghemoglobina a partir de nodulos de soja y se obtuvieron anticuerpos de conejo anti-Ieghemoglobina. Estos anticuerpos se caracterizaron por Western blot comprobondose que no presentan reactividad cruzada con otros compuestos hemfnicos ni con las demos protefnas presentes en el macerado nodular. A su vez, por ELISA, se determino la dilucion de trabajo de los anticuerpos, los cuales seron empleados en experimentos futuros. Por ultimo, mediante anolisis por SDS-PAGE de fracciones enriquecidas en protefnas de membrana externa, se detecto la presencia de 3 protefnas reguladas por hierro de 80, 82 y 90 kDa. De las 3 protefnas identificadas, la de 90 kDa presento la capacidad de unirse a hemina inmovilizada en agarosa. Anolisis por espectrometrfa de masas (EM-MALDI-TOF) determinaron que la protefna de 90 kDa es homologa 0 aun identica a una posible protefna involucrada en el transporte de hierro (Smc02726) deducida a partir del genoma secuenciado de Sm 1021. Anolisis bioinformoticos mostraron que la secuencia aminoaddica de esta protefna presenta dominios altamente conservados con otras protefnas de membrana externa receptoras para la hemina. A partir de los resultados obtenidos podemos concluir que se ha identificado en Sm 242 un receptor de hemina. Sensory and consumer research increasingly aims to gain direct input from children to study their eating behaviour. However, answering self-administered questionnaires can be challenging for children. In this sense, the prediction of basic emotions via facial decoding, generating quantitative observational data, could offer an alternative to questionnaires. The present study aimed to measure children’s implicit and explicit basic emotions elicited by tasting, through the use of facial decoding and compare them to children’s liking ratings in a case study with flavoured chocolate milk samples. Children aged 9–10 participated in the study (n = 48). Six samples based on two design of experiment factors Added sugar (yes / no) and Surprise flavour (peppermint / liquorice/ no added flavour) were tested. The software iMotions with the AFFDEX algorithm was used for facial decoding. For each sample, facial expression was measured immediately after tasting (implicit basic emotions). Then, children were asked to show a facial expression related to their feelings when they tasted the chocolate milk (explicit basic emotions) and rate their liking on a 7-point-scale. Implicit and explicit basic emotion likelihoods from facial decoding were correlated to liking ratings regarding the factor Surprise flavour. As in previous studies, the measurement of implicit basic emotions discriminated samples according to negative emotions (anger and disgust) which had higher likelihoods in disliked samples with Surprise flavour (peppermint and liquorice). Facial decoding of explicit basic emotions was the only measurement discriminating samples also according to the factor Added sugar, an advantage over liking ratings. The positive emotion joy, as well as negative emotions (sadness, fear, anger, disgust and contempt), were significant in the explicit evaluation. The results add to previous literature suggesting that the measurement of implicit emotions via facial decoding can be useful to study negative emotions. Further, explicit basic emotions enhanced the discrimination of liked samples with the involved age group.
