Labels can largely influence functional foods consumers' purchase decisions. The aim of the work was to study consumers' attention to functional food labels and to evaluate differences between regular and functional products probiotic milk as case study. Four labels were designed considering two types of product (regular milk vs. probiotic milk) and two label backgrounds. Sixty consumers were asked to look at the labels while their eye movements were recorded using an eye-tracker and to complete a word association task. Then, they had to complete eight flicker change detection tasks, involving four different changes on key aspects of the labels (brand, type of product, type of microorganism and health claim) for each label background. Visual processing of the labels was not largely affected by the type of product and label design. Health claims were not comprehensively processed, probably due to the high information density of this area. Besides, consumers' health-related associations were generated by graphic design and not by the functional aspect of the products, suggesting that graphic design plays a key role in shaping health-related associations. Recommendations for the design of functional food labels are discussed. In the current context of increasing worldwide concern about the prevalence of health problems related to high sodium intake, reducing the sodium content of food products has been identified as a cost-effective strategy to improve public health. The present work was aimed to assess the effect of salt reduction on consumers' perception, using white rice as case study. Particular emphasis was put on exploring individual differences in consumers' reaction towards salt reduction. A preliminary study, using a trained panel, was conducted to determine the difference threshold for salt in rice. The consumer study involved 156 consumers and encompassed three parts. First, consumers were presented with a 150 g portion of cooked rice prepared without added salt and were asked to indicate how much salt they would add to it (without tasting). Then, they were presented with six white rice samples differing in their salt content and were asked to indicate their overall liking using a 9-point hedonic scale, to asses adequacy of saltiness intensity using a 5-point just-about-right scale, and to indicate whether they would add salt to the rice. Finally, consumers completed a short survey about their salt consumption habits, interest in health and socio-demographic profile. As expected, results revealed large heterogeneity in consumers' hedonic reaction towards salt reduction: two consumer segments with different hedonic reaction were identified. Both consumer segments also differed in their hedonic sensitivity and tolerance to salt reduction in rice. Significant differences between consumer segments were found in their salt consumption habits, in particular related to salt addition to food, and also in their interest in reducing salt intake. These results suggest that eating habits might play a major role in shaping our preferences, highlighting the potential of gradual salt reduction as a strategy for reducing sodium intake. Studying and predicting consumers&rsquo; texture perception of milk desserts are important for dairy companies during new product development and the design of positioning, advertising and communication strategies. In this context, the aim of the presentwork was to study the relationship between consumers&rsquo; texture perception of milk desserts and rheological measurements. Six commercial milk desserts were evaluated by a panel of 50 consumers, who were asked to answer a check-all-that-apply question. The rheological behavior of the desserts was evaluated using oscillatory tests,flowcurves and the evaluation of structural breakdown by a-amylase. Multiple factor analysis showed that data from rheological measurements and consumers&rsquo; responses to the check-all-that-apply (CATA) question provided similar information and were able to identify differences in the texture of the evaluated milk desserts. Rheological measurements were able to predict consumers&rsquo; perception of the characteristics responsible for the largest texture differences between the desserts. Consumption of ultra-processed foods has been associated with low diet quality, obesity and other non-communicable diseases. This situation makes it necessary to develop educational campaigns to discourage consumers from substituting meals based on unprocessed or minimally processed foods by ultra-processed foods. In this context, the aim of the present work was to investigate how consumers conceptualize the term ultra-processed foods and to evaluate if the foods they perceive as ultra-processed are in concordance with the products included in the NOVA classification system. An online study was carried out with 2381 participants. They were asked to explain what they understood by ultra-processed foods and to list foods that can be considered ultra-processed. Responses were analysed using inductive coding. The great majority of the participants was able to provide an explanation of what ultra-processed foods are, which was similar to the definition described in the literature. Most of the participants described ultra-processed foods as highly processed products that usually contain additives and other artificial ingredients, stressing that they have low nutritional quality and are unhealthful. The most relevant products for consumers&rsquo; conceptualization of the term were in agreement with the NOVA classification system and included processed meats, soft drinks, snacks, burgers, powdered and packaged soups and noodles. However, some of the participants perceived processed foods, culinary ingredients and even some minimally processed foods as ultra-processed. High quality fruit are demanded by consumers across the globe. The presence of localized small necrotic areas within the flesh, which may or may not be visible at the surface of fruit (e.g., physiological disorders, bruises, rots), can negatively affect perception of fruit quality and consumers&rsquo; willingness to purchase/ consume. Research on how consumers&rsquo; visual attention is drawn to different symptoms is lacking, but offers the potential to understand how defects influence consumers&rsquo; decision-making. In this context, the aim of the present study was to evaluate consumers&rsquo; visual attention to defects in fruit and to evaluate the relationship between visual attention and rejection (i.e., decision not to re-purchase). Using apples as a case study, consumers (n = 123) completed two experimental tasks involving eye-tracking technology. First, consumers completed a free-viewing task, which included apple images with different severities of three defects (internal browning, bruising and cavities). Second, they saw seven apple images with different degrees of bruising and indicated their future purchase intention. In the apple images without defects, consumers mainly fixated their gaze on the core and the seeds of the apple. However, as the degree of symptoms increased, consumers shifted their attention and fixated their gaze on the area affected by bruises or disorders. Consumers&rsquo; visual attention toward the defects, and their future rejection of purchases of apples, increased with the severity of the defects. Using survival analysis, the relative areas of bruising that corresponded to rejection by 25% and 50% of consumers was estimated as 2.3 � 0.5% and 4.8 � 0.7%, respectively. The present work suggests that attentional capture of fruit disorders can predict consumers&rsquo; rejection and contribute to setting quality standards. Such standards effectively guide the fruit industries in consumer-led innovation and development of production systems. The aim of the present study was to get an insight on consumers&rsquo; texture vocabulary in three different Spanish-speaking countries: Argentina, Spain and Uruguay. A free listing task was carried out in each country with 107&ndash;120 consumers. Participants were asked to list all the texture characteristics of food products they knew about. Between 80 and 112 terms were elicited by consumers, comprising mainly words related to texture characteristics of food products. By simultaneously considering frequency of mention and average order of elicited terms, the most familiar texture terms in each country were identified, being the most frequently used texture terms similar. Sobre estos logros, en principio desde un objetivo meramente te&oacute;rico, se incorpora el di&aacute;logo con otros saberes, en particularcon las ciencias antropol&oacute;gicas, la sociolog&iacute;a, el servicio social y el derecho con perspectiva de g&eacute;nero. De este modo se ha transitado desde una formulaci&oacute;n de la problem&aacute;tica y, por tanto, de conocimiento de la realidad, focalizada en los aspectos b&aacute;sico-cl&iacute;nicos, a una perspectiva m&aacute;s amplia, en donde se consideran las circunstancias de vida de estas mujeres y c&oacute;mo en relaci&oacute;n a estas se vive la maternidad, sus v&iacute;nculos afectivos, familiares y con el sistema sanitario. Este libro es el resultado de las investigaciones desarrolladas por el grupo y de los esfuerzos de sus integrantes por lograr una visi&oacute;n m&aacute;s comprensiva de la problem&aacute;tica de estudio. Con respecto al consumo de pasta base de coca&iacute;na existe al momento actual una obra que integre los conocimientos en salud con otros saberes. Organophosphorus insecticides are common pollutants of the citrus oils. Unknown phosphorated compounds, different from organophosphorus pesticides, were detected during GC analyses of citrus oils; the chromatographic profile was similar to a triarylphosphate mixture. Standard mixtures of triarylphosphates were analyzed and mass spectra were obtained; the results showed that the contamination was due to triphenylphosphate and tritolylphosphate isomers essentially. The contaminants were found to probably originate from contact of the oils with plastic materials from which they leached on oil storage.
