    <dcterms:abstract><![CDATA[The present research contributed to a better understanding of how check-all-that apply (CATA) questions work by examining the relationship between likelihood of selecting a term and perceived attribute intensity. Seven consumer studies were con ducted (147&ndash;157 people per study) using within-subjects experimental designs where participants twice evaluated the same set of stimuli on the same set of terms (or attributes), respectively with CATA questions and intensity scaling (7-point cate gory scale; 1 = &ldquo;not at all,&rdquo; 7 = &ldquo;extremely&rdquo;). As a function of perceived intensity, the average CATA citation frequency tended to follow a sigmoidal-like relationship where likelihood of selecting a CATA term increased more slowly at the extreme ends of the intensity scale (1&ndash;2 and 6&ndash;7) and linearly otherwise. This illuminates why for a given term, CATA questions are less suited for discriminating between samples that are of similar &ldquo;low&rdquo; or &ldquo;high&rdquo; intensity.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>Although the sensory characterization of mandarins has usually been performed by trained assessors, in recent years, the methodologies that depict sensory descriptions from the perception of consumers, such as the checkall- that-apply (CATA) questionnaires have become very popular. In this work, an exploratory study was first carried out using a focus group (FG) technique to determine attributes and aspects that influence the decision to purchase mandarins. Secondly, the consumer panel recruited 100 regular mandarin consumers that were randomly divided into two groups. Group &ldquo;A&rdquo; received segments of 15 mandarins. Group &ldquo;B&rdquo;, instead of receiving the same mandarins in segments, they received them as a whole fruit having to peel them by themselves. Both groups evaluated the total acceptability with a 9-point hedonic scale and answered a CATA questionnaire composed of 38 terms for Group &ldquo;A&rdquo; and 52 terms for Group &ldquo;B&rdquo;. Although the consumers in the FG described an "ideal" mandarin as easy-to-peel, no significant difference (p &gt; 0.05) was found in the acceptability<br />between groups &ldquo;A&rdquo; and &ldquo;B&rdquo;. Characteristics such as sweet, very sweet, fresh smell, sweet smell, bright, fruity taste, fresh flavor, typical flavor, balanced taste and nice flavor were strongly and positively correlated with overall consumers&rsquo; acceptance.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>CATA (check-all-that-apply) questions enjoy high popularity for sensory product characterization with consumers. Amidst extensive methodological characterization, the meaning of term citation frequency has received modest attention only,<br />possibly hindering further uptake. The present research performed a more detailed exploration of the relationship between CATA responses and perceived intensity of sensory attributes. In addition, the following question was addressed:<br />How many consumers are necessary to interpret differences in CATA citation proportions as a proxy of differences in perceived intensity? The present research includes new empirical data from four consumer studies conducted in New Zealand and China under central location test conditions and a re-analysis of<br />one consumer study. When dealing with samples with clear differences, the percentage of consumers selecting a sensory term for describing samples tended to be linearly correlated to average intensity ratings. A median of 15 consumers was<br />needed for CATA to show good linear correlations with average intensity ratings, and the minimum number of consumers needed to reach the threshold for a good correlation was generally lower than 30.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[<p>The aim of the present study was to develop a mixed tropical fruit juice of cashew apple, acerola and melon with low added-sugar content considering sensory and nutritional aspects. Five formulations were developed varying the concentration of the different fruits. A total of 172 consumers rated their overall liking using a 9-point hedonic scale and described their sensory characteristics using a Check-all-that-apply question. In addition, the functional properties of the juices were evaluated by analyzing vitamin C, total phenolic compounds and antioxidant capacity. Results showed that the addition of sugar and fruit composition affected the sensory characteristics and consumer liking of the formulations. Samples without added sugar and with higher melon concentration showed lower liking scores (p&lt;0.05). In addition, the highest concentration of acerola had a positive effect on nutritional characteristics. The formulation with 50% of fruit pulp (60% of cashew apple,<br />30% of acerola and 10% of melon), 47% of water, and 3% of added sugar achieved the best results. The effect of aroma on sweetness perception was investigated by adding identical to natural aromas of melon, apple and pineapple to the selected formulation. However, aroma did not significantly modify sweetness perception, evaluated using a rate-all-that-apply question.</p>]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Co-elicitation of hedonic responses and sensory responses is now common. Against<br />this background, this research compared the risk of hedonic bias from sensory checkall-that-apply (CATA) questions and sensory term ratings from unstructured line scales (RQ1) and evaluated if the risk of hedonic bias is independent of the sensory<br />terms of the CATA question (RQ2). Seven studies with 137&ndash;293 participants each were conducted, using different product categories. Between-subjects experimental designs were used and allocated consumers to one experimental condition (EC). For RQ1, these were hedonic, hedonic immediately followed by a CATA question, and<br />hedonic immediately followed by a rating of term applicability (&ldquo;not at all&rdquo; to &ldquo;extremely&rdquo;). In RQ2, both ECs involved hedonic ratings followed by a CATA question, but the sensory terms differed. Results showed a significant effect of EC on<br />hedonic ratings in three of five studies for RQ1, suggesting that hedonic bias may or may not occur. For RQ2, the terms of the CATA question influenced hedonic ratings in two of three studies, and a negative hedonic effect was seen when CATA terms drew attention to particular characteristics of individual samples. Collectively, the results suggest that likelihood of bias depends on interactions between product category, samples, and terms.<br />Practical applications<br />Results from the present work suggest that hedonic bias in sensory co-elicitations<br />using CATA questions and scales may occur depending on the type of sensory attributes<br />considered in the study. The consideration of terms that trigger attention to specific sensory attributes of the samples may lead to changes in hedonic ratings.<br />Rating scales appear more likely to be associated with hedonic bias compared to CATA questions due to their more analytic approach to sample evaluation.

    <dcterms:abstract><![CDATA[CATA questions (check-all-that-apply) are popular for sensory product characterisation tasks with consumers. Lingering uncertainty over the meaning of term citation frequency was addressed in the present research, which directly compared CATA questions with intensity and applicability ratings obtained on 10 cm unstructured line scales. In three studies (n ~ 210 consumers per study), evidence fitting with expectations based on the extant literature was obtained to confirm that citation frequency reflects intensity. The two response types were strongly linearly related, meaning that it is possible to infer significant differences between samples for a given CATA term as representing differences in perceived intensity. This finding emphasises how, despite the simplicity of the CATA task and the fact that individual responses are not measures of intensity, the average citation frequencies do reflect perceived intensity. Therefore, across a group of consumers, there is no information loss relative to rating scales. A systematic difference between citation frequencies and intensity ratings was attenuation of scale use in the latter, which was between 15 and 80 on a 0 to 100 scale. Attenuation was less pronounced in CATA responses which spanned approx. 5 to 85%. In the second part of the research, which included six studies (n ~ 135 to 205 consumers per study) CATA questions were compared with applicability ratings obtained on 10 cm unstructured line scales. The results were highly similar to the comparison between CATA questions and intensity scales and further confirmed that average CATA term citation frequency can be interpreted as representing (but not directly measuring) consumers&rsquo; intensity perceptions. The attenuation in scale range was again observed. Collectively, the results contribute further support for the popularity of CATA questions for sensory characterization by consumers in product testing.

    <dcterms:abstract><![CDATA[Check-all-that-apply (CATA) questions have become one of the most popular methods for sensory characterisation with consumers. Temporal CATA (TCATA) is an extension of the former that takes into account the dynamic nature of sensory perception. The aim of the present work was to expand the methodological comparison of CATA and TCATA questions, considering the characterisation of solid products that undergo substantial oral processing when consumed. Five studies involving a total of 731 consumers were conducted with different product categories: dried apricots, peas, cheese, bread and milk chocolate. A between-subjects experimental design was used to compare the static and dynamic versions of CATA questions. For comparison purposes, TCATA data were analysed as CATA by collapsing the data into four fixed time intervals (quarters). The four quarters of TCATA were compared to results from CATA considering the frequency of use of the terms, sample discrimination, and product configurations. The temporal aspect of TCATA did not largely modify the average citation proportion of terms or the maximum citation proportion for individual terms. Significant differences among samples were established for most of the terms in both CATA and TCATA evaluations, albeit some subtle differences between the two methods were found. These differences were dependent on the product category and the specific sensory characteristics that were relevant for describing the focal samples. The largest differences were found for Study 5 (milk chocolate), for which TCATA identified a few additional insights on the evolution of similarities and differences among samples. However, in most cases general findings were virtually identical for both methodological approaches. In light of these results, the extra effort of using a dynamic sensory characterisation method compared to a static one, may, in many instances, not be warranted.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The check-all-that-apply (CATA) question format and variants hereof have become very popular in sensory and consumer research. In the present study, focus is directed to rate-all-that-apply (RATA) questions where participants in addition to selecting terms that are applicable for describing a focal stimulus must also indicate if this term has an intensity corresponding to &lsquo;low&rsquo;, &lsquo;medium&rsquo; or &lsquo;high&rsquo;. Knowledge of how assessors approach the RATA task is lacking, and this study was dedicated to understanding consumers&rsquo; visual attention to RATA questions. This aim was achieved by tracking participants&rsquo; eye movements when using a 15-term question to evaluate images of apples with different degrees of internal defect (flesh browning). As expected, participants first looked at the terms, then checked the box corresponding to &ldquo;applies&rdquo; and finally selected intensity level, i.e. participants tended to rate attribute intensity immediately after indicating that a term was applicable to describing a focal sample. Commensurate with the two parts to the task, preliminary evidence of more visual attention was suggestive of larger cognitive effort in RATA than CATA questions. Potentially this could be associated with a more &ldquo;analytical&rdquo; frame of mind among participants. More visual attention to the RATA question was associated with higher ability to discriminate among samples, in agreement with previous results for CATA questions. Overall, the research supported consumers&rsquo; ability to use RATA questions as intended, and indirectly to continued methodological uptake.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Temporal Check-All-That-Apply (TCATA), and its variant TCATA Fading, are extensions of Check-All-That-Apply (CATA) questions that can deliver detailed descriptions of the dynamics of the sensory characteristics of samples throughout consumption. This research contributes to establishing guidelines for best practice of TCATA methods and focuses on the number of terms to include in the attribute list. In four consumer studies (n = 492), the influence of list length was assessed by comparing lists containing 9 and 15 terms (&ldquo;short&rdquo; and &ldquo;long&rdquo; lists, respectively). Specifically, results obtained for the 9 sensory attributes common to both lists were compared with respect to: citation proportions, dynamic sensory profiles, sample discrimination, and consumers&rsquo; task perceptions. The key findings pertaining to list length were that: (i) increasing the number of terms was not detrimental in terms of sample discrimination, (ii) consumers were able to use all the 15 terms to discriminate among samples, and (iii) lists of 15 terms provided good data quality in both TCATA and TCATA Fading. The influence of list length on the results was similar for TCATA and TCATA Fading, although there was some evidence pointing to a slight superiority of TCATA Fading over TCATA when long lists of terms are used.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Phenolic compounds play a major role in the intensity and characteristics of wine astringency. However, studies involving commercial wine samples are still scarce. The aim of the present work was to study the relationship between astringency and phenolic composition of commercial Uruguayan Tannat wines using boosted regression trees (BRT), a novel predictive method. Forty commercial Tannat wines were evaluated by a trained sensory panel (9 members), who assessed their total astringency intensity using time-intensity (TI) and described their astringency sub-qualities using a check-all-that-apply (CATA) question composed of sixteen terms. The polyphenolic profiles of the wines were determined by HPLC-MS and conventional oenological parameters were also obtained. Fifty BRT models with different partitions of the data in training and test sets were built for astringency maximum intensity (Imax) and for the frequency of use of the 16 astringency sub-qualities considered in the CATA question. As predictor variables, 84 phenolic compounds and oenological parameters were considered for all BRT models. Both strong and weak predictive models were obtained for each response variable. Predictive accuracy was much higher for astringency intensity than for the frequency of mention of astringency sub-qualities. Still, the BRT models allowed to point out to some compositional variables most likely involved in wine astringency perception. Total tannin concentration (chemically determined) was the most relevant explanatory variable for sensory astringency, while flavan-3-ols were the individual phenolic compounds with the highest contribution to astringency, particularly some dimers, trimers and the sum of non-galloylated tetramers. However, the effect of these predictors differed according to the astringency sub-quality considered as response. As expected, non-linear relationships between phenolic compounds and astringency were found. These results contribute to the understanding of the influence of phenolic composition on wine astringency and stress the potential of BRT models for identifying the compounds responsible for this complex sensory characteristic.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[During the development of a food product, the application of rapid descriptive sensory methodologies is very useful to determine the influence of different variables on the sensory characteristics of the product under development. The Pivot profile (PP) and a variant of the technique that includes check-all-that-apply questions (PP + CATA) were used for the development of a milk drink fermented from demineralised sweet whey. Starting from a base formula of partially demineralised sweet whey and gelatin, nine samples were elaborated, to which various concentrations of commercial sucrose, modified cassava starch, and whole milk powder were added. Differences in sucrose content affected the sample texture and flavour and the modified starch was able to decrease the fluidity and increase the texture of creaminess and firmness, of the samples. The two applied sensory methodologies achieved good discrimination between the samples and very similar results, although the data analysis was clearly simplified in relation to the difficulty and time consumed in the PP + CATA variant.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[A study of the influence of the use of images in a conjoint analysis combined with check-all-that apply (CATA) questions on jams was carried out. The relative importance of flavor and the information presented in the label in the willingness to purchase and the perception of how healthy the product is has been evaluated. Sixty consumers evaluated the stimuli presented only in text format (session 1), and another group of 60 consumers did so by receiving the stimuli in text format along with an image of the product (session 2). In addition, for each stimulus, consumers answered a CATA question consisting of 20 terms related to their involvement with the product. The perception of healthy increased when the texts were accompanied with images and also increased when the text included information. Willingness to purchase was only influenced by the flavor of the jams. The presence of images did not influence the CATA question's choice of terms, which were influenced by the information presented in the text. The use of a check-all-that-apply question in concepts provided an interesting possibility when they were combined with the results from the conjoint analysis, improving the comprehension of consumers' perception. Using CATA questions as an alternative way of evaluating consumer involvement seems to be beneficial and should be evaluated much further.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Individual differences in food-related consumer behaviour are well documented, but lack thorough exploration in relation to product-elicited emotional associations. In this research, focus is directed to product involvement as a factor that modulates emotional associations to tasted products (dried fruit, n = 4) and written descriptions of consumption situations (drinking red wine, cooking dinner using seafood). Emoji questionnaires were used (as check-all-that-apply questions: CATA), and across two studies with consumers in New Zealand (n = 352) and China (n = 450), higher levels of involvement were associated with more positive emotional associations. For example, consumers with higher involvement for dried fruit used emoji with positive meanings (e.g., face savouring delicious food (Image 1), smiling face with heart-shaped eyes (Image 2) and smiling face with smiling eyes (Image 3) more frequently than those with lower levels of involvement. Conversely, emoji with negative or neutral meanings (e.g., confused face (Image 4), confounded face (Image 5), neutral face (Image 6)), were more frequently used by consumers with lower levels of product involvement. The number of significant differences between the samples of dried fruit were lower in the less involved consumer segment, and these consumers, on average, used less emoji to characterise the samples. A similar pattern of results were established for the written stimuli, which were used with Chinese consumers. For example, in the segment with greater involvement with seafood, associations to emoji with positive meanings were higher when responding to the situation &ldquo;cooking dinner using frozen seafood as one of the ingredients.&rdquo; In the case of &ldquo;drinking French red wine,&rdquo; the strategy used to define segments (median vs. triadic split of summed involvement scores) additionally influenced the results, and bigger differences were established when comparing more discrete segments (two extreme groups following triadic split).]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[It is estimated that 2.5 million cats enter animal shelters in the United States every year and as few as 20% leave the shelter alive. Of those adopted, the greatest risk to post-adoption human animal bond is unrealistic expectations set by the adopter. The ASPCA&reg;&rsquo;s Meet Your Match&reg; Feline-ality&trade; adoption program was developed to provide adopters with an accurate assessment of an adult cat&rsquo;s future behavior in the home. However, the original Feline-ality&trade; required a three-day hold time to collect cat behaviors on a data card, which was challenging for some shelters. This research involved creating a survey to determine in-home feline behavior post adoption and explored the predictive ability of the in-shelter assessment without the data card. Our results show that the original Feline-ality&trade; assessment and our modified version were predictive of feline behavior post adoption. Our modified version also decreased hold time for cats to one day. Shelters interested in increasing cat adoptions, decreasing length of stay and improving the adoption experience can now implement the modified version for future feline adoption success.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Questionnaires are popular in product-focused emotion research with consumers. Ease of implementation is paramount in this regard, as is versatility. In the presented studies, focus is directed to scaling variations as an element of methodological versatility, and a comparison is performed of CATA and RATA question formats (check-all-that-apply and rate-all-that-apply, respectively). Five studies, with a range of tasted products and food/beverage names were conducted, involving 908 consumers in New Zealand, China and Korea. Emoji questionnaires, recently established as a methodological variant in product-elicited emotion research, were used. The average percentage of emoji used for describing samples was similar for CATA and RATA questions when used in Central Location Tests with tasted samples, but higher for RATA than CATA questions in online surveys. Discriminative ability of CATA and RATA questions was linked to the characteristics of the focal samples. The recommendation for method choice is to use CATA emoji-questions when samples have distinct emotional associations, whereas RATA seems better able to discriminate between samples with more similar emotional profiles. Neither CATA nor RATA emoji-questions were regarded by consumers as difficult or tedious.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[The aim of the present work was to compare static and dynamic sensory product characterizations based on check-all-that-apply (CATA) questions with consumers. Three studies involving a total of 310 consumers were carried out. In each study, a between-subjects experimental design was used to compare static sensory characterizations obtained using CATA questions with dynamic characterizations over a relatively short time period using temporal CATA (TCATA). Three different product categories were evaluated (orange juice, strawberry yogurt, and vanilla milk desserts) using 6-11 sensory terms. TCATA data were analysed as CATA considering fixed time periods throughout the evaluation. CATA and TCATA were compared in terms of frequency of use of the terms, sample discrimination, and sample and term configurations. Asking consumers to continuously select the attributes that applied to describe a product and to deselect those that no longer applied during the evaluation period did not substantially modify the average citation proportion of terms or the maximum citation proportion for individual terms for liquid and semi-solid products with a relatively fast oral preparatory phase. Although both methodologies provided similar information, additional insights on how similarities and differences among samples evolved during consumption were obtained with TCATA in the case of products that experience large temporal changes or attributes with strong time-dependency. CATA provided similar information as TCATA for sensory attributes that did not change substantially during the evaluation period. Results from the present work suggest that static and dynamic product sensory characterizations using CATA questions with consumers provide complementary information about consumer experiences with food products.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Temporal Check-All-That-Apply (TCATA) has been recently introduced as a method for temporal sensory product characterization. Building on the standard Check-All-That-Apply (CATA) question format, assessors select all the terms they consider applicable for describing the sensations they perceive, and they do so at each moment of the evaluation process. This research further investigates the TCATA method, through its application to products of varying complexity (yogurt, salami, cheese, orange juice, French bread, and marinated mussels) using consumers and trained panellists as assessors. More importantly, to deliver new methodological insights we compare TCATA to Temporal Dominance of Sensations (TDS). This comparison will aid researchers to select the temporal method best suited to their needs. Across three countries, six studies were conducted. Within-subjects experimental designs were used in Studies 1&ndash;3 and involved trained panellists using both TCATA and TDS on the same set of products. In Studies 4&ndash;6, between-subjects experimental designs were used, and the assessors, who were consumers, evaluated samples using either TCATA or TDS. The results confirmed that TCATA is suitable for measuring the temporal sensory characteristics of products. By enabling identification of several sensory characteristics that are concurrently perceived in products, the results from this research also suggest that TCATA may provide a more detailed description of the dynamics of the sensory characteristics of products. The TDS concept of dominance appears to decrease detailed description and discrimination of attributes that are simultaneously perceived, particularly when dealing with multiple sensory modalities.     <dcterms:abstract><![CDATA[Temporal Check-All-That-Apply (TCATA) is a multi-attribute temporal approach that extends CATA questions. It is based on continuous selection of the sensory attributes that are perceived as applicable for describing a focal sample during consumption. Compared to CATA, TCATA is a relatively intense and demanding task for consumers who have to focus their attention on the evolution of the sensory characteristics of samples during consumption. The present work evaluated a short familiarization step (7&ndash;10 min) where participants became acquainted with the list of sensory terms and applied these to a practice sample using a CATA task and also completed a TCATA task using a warm-up sample. All participants, including those who did not take part in the familiarization step, watched a demonstration video that explained how to use the TCATA software and to complete the task. Three consumer studies, each involving &sim;100 participants, were conducted using dried apricots, peanuts, and milk chocolate. The TCATA curves when data were collected with and without the familiarization step were not systematically different. However, a small increase in sample discrimination was established and on this basis familiarization should be considered when using TCATA with consumers. A need to explore other familiarization protocols than the one used here exist in order to develop guidelines for implementation.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[This research contributes new understanding of the role of consumption context. 12 studies involving 1727 consumers were conducted as central location tests (CLT). Using between-subjects experimental designs, the influence of evoked contexts relative to control condition for hedonic responses and sensory product characterization using check-all-that-apply (CATA) questions was evaluated. Contexts were evoked by asking consumers to think of the last time they ate/drank the focal product category or by imagining a specific consumption situation where product consumption would take place (e.g., breakfast on a weekend morning). In half of the studies, consumers were asked to provide a description of the consumption context they imagined. There was no consistent trend in the results regarding the influence of evoked context of hedonic responses. Effects were seen in a minority of studies, but not consistently showing differences in mean scores or changes in sample discrimination. The type of context that was evoked (last time ate/drank vs. specific situation) did not systematically influence the results, although the use of a description phase during context evocation was detrimental to hedonic sample discrimination. In all the studies where participants were asked to describe the context they imagined, hedonic discrimination was inferior to that achieved under no evoked context. Sensory responses to CATA questions were highly similar under evoked and no evoked context and suggested that product characterisations generated by consumers in a typical CLT provide a good proxy for sensory product experience in contextualised consumption situations.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[In line with research in non-Western countries becoming main-stream, the need to validate existing research methods with consumers from these populations increase. The present research contributes hereto by quasi-replicating with Korean and Chinese consumers previous research concerning the risk of hedonic product responses being biased by co-elicitation of CATA/RATA questions for sensory product characterisation. Using consumers in several Western countries it was previously reported that bias could occur, but was unlikely to. Eleven studies involving &sim;1000 East Asian consumers confirmed this conclusion. The studies were conducted with diversified populations and across multiple product categories. Across 7 studies, there were no instances where CATA co-elicitation was found to bias hedonic scores. However, in one of four studies where RATA responses were co-elicited bias did occur, and hedonic scores were, on average, lower when RATA responses were co-elicited. It is recommended that the research be replicated with consumers residing in their home countries and extended to other East and South-East Asian counties.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Sensory and consumer scientists disagree on the practice of concurrently obtaining sensory information in hedonic tests. This is in part due to different mindsets about what consumers are able to do and evidence that such co-elicitation may bias hedonic scores. Check-all-that-apply (CATA) questions have been claimed to have a smaller effect on hedonic scores than other attribute such as just-about-right or intensity scales. In this research, nine studies using consumers as participants examined effects on hedonic product scores when sensory attribute information was co-elicited using CATA questions. The use of CATA concurrently with hedonic was benchmarked against concurrent attribute liking scores, attribute intensity scores and just-about-right scaling. Across a range of product categories (beer, fresh fruit, tea, flavoured water, crackers, savoury dips), only weak and transient evidence of bias of hedonic scores when concurrently using CATA questions was established. This effect was independent on whether samples, on average were moderately liked or moderately disliked, and replicated when samples were assessed partially by the sense of smell only or via full product assessment (appearance, aroma, flavour, taste, aftertaste, mouthfeel). The present research suggests that co-elicitation of hedonic scores and product attribute information using CATA questions may bias the hedonic scores, but not that it certainly will do so. This needs to be recognised, leading to more widespread acceptance that co-elicitation has merit. Investigators should decide on whether or not to co-elicit product attribute information using CATA questions on a case-by-case basis, acknowledging that bias may occur. Further research is needed to understand when/when not bias is likely to occur.<br /><br />]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Methodologies that identify ways products differ from consumers&rsquo; ideal are commonly used to guide innovation. In this research the use of CATA questions for this purpose was compared to JAR scales, which are well established for use in product optimization efforts. Two CATA variants were considered: (i) CATA questions including terms with hedonic-intensity connotations (e.g., not enough sweet, much too sweet), and (ii) CATA questions pertaining to both the tasted and the ideal products. In six consumer studies (n = 939), spanning multiple product categories and consumer populations (Uruguay, New Zealand and USA), it was found that CATA questions and JAR scales provided similar insights regarding the most relevant deviations from ideal. However, several differences were also identified. In particular, CATA questions tended to identify fewer deviations than did JAR scales, especially when terms with hedonic-intensity connotations were used and when differences between samples were small. This difference is likely linked to facets of the two methodologies: only applicable terms are selected when using CATA questions, whereas responses must be provided for each JAR scale included in a study. Besides, the fact that only the extreme anchors of the JAR scale were included in the CATA question could have encouraged consumers not to indicate deviations from the ideal. Penalty analysis, performed using Partial-Least Squares (PLS) regression identified several significant deviations from the ideal. While the two methodologies established the same main differences, JAR scales identified more significant deviations from the ideal than CATA questions. Although results confirmed the potential for the use of CATA questions in product optimization research, careful consideration of purpose of the research and attention to terms included in the CATA questions is recommended.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Temporal Dominance of Sensations (TDS) and Temporal Check-all-that-apply (TCATA) are two multi-attribute methods for dynamic sensory characterization. Previous research has shown that both methodologies provide complementary information. However, it remains an open question which of the two approaches better explains consumers' hedonic perception of products. In this context, the aim of the present work was to compare TDS and TCATA in terms of their ability to identify the influence of the dynamic sensory profile of food products on consumer overall liking scores. Two consumer studies were conducted using two different product categories (French bread and vanilla milk desserts). In each study, a between-subjects design was used to obtain dynamic sensory profiles using TDS and TCATA. After the dynamic sensory characterization tasks consumers rated their liking using a 9-point hedonic scale. Across the two studies, both methodologies provided similar information on the main drivers of liking and disliking, particularly when samples showed clear differences in liking. However, in one of the studies attribute applicability from TCATA provided additional insights on the influence of the dynamics of the sensory characteristics of products on consumers' liking. Results of the present work stress the complementarity between TCATA and TDS and highlight the potentiality of TCATA to provide a more detailed description of the dynamics of sensory perception during consumption.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[In recent years high sodium intake has raised growing concern worldwide. A widespread reduction of salt concentration in processed foods has been claimed as one of the most effective strategies to achieve a short-term impact on global health. However, one of the major challenges in reducing salt in food products is its potential negative impact on consumer perception. For this reason, gradual salt reduction has been recommended. In this context, the aim of the present work was to present a consumer-based approach to salt reduction, using bread as case study. Two consumer studies with a total of 303 consumers were carried out. In the first study, four sequential difference thresholds were determined through paired-comparison tests, starting at a salt concentration of 2%. In the second study, 99 consumers performed a two-bite evaluation of their sensory and hedonic perception of five bread samples: a control bread containing 2% salt and four samples with reduced salt content according to the difference thresholds determined in the first study. Survival analysis was used to determine average difference thresholds, which ranged from 9.4% to 14.3% of the salt concentration of the control bread. Results showed that salt concentration significantly influenced consumer overall liking of the bread samples. However, large heterogeneity was found in consumer hedonic reaction towards salt reduction: two groups of consumers with different preference and hedonic sensitivity to salt reduction were found. Results from the present work confirm that cumulative series of small salt reductions may be a feasible strategy for reducing the sodium content of bread without affecting consumer hedonic perception and stress the importance of considering consumer perception in the design of gradual salt reduction programmes.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Methodological research is needed to support the continued popularity of sensory product characterization by consumers. The present research considers stability and reliability of such product spaces. Using data from 13 studies (n&thinsp;=&thinsp;1332) involving check-all-that-apply questions (CATA) and projective mapping tasks replicated assessments and increasing the sample size are evaluated for their impact on the product spaces derived from a base group of consumers. In each study, a group of consumers (41&ndash;95 participants) completed a sensory characterization task twice under identical conditions (&ldquo;replication&rdquo; condition), and additional consumers (49&ndash;93 participants) completed the task (&ldquo;increased sample size&rdquo; condition). The stability of product spaces was evaluated using a bootstrapping resampling approach. Both experimental conditions had a small but positive impact as evidenced by small increases in average RV coefficients across simulations. Additionally, in studies using projective mapping, the confidence ellipses around sample positions were smaller than those established in product spaces with the base group of consumers. This pointed to increased sample discrimination.]]></dcterms:abstract>
