    <dcterms:abstract><![CDATA[BACKGROUND Rice bran (RB), a by‐product of the rice milling industry, constitutes around 10% of the total weight of rough rice. The interest in the use of RB is centered on its nutritional quality, its low cost, and its extensive worldwide production. As RB is commonly used for oil extraction, the defatted rice bran (DRB) is obtained as a second by‐product. The aim of this work was to obtain a defatted rice bran concentrate (DRBC), enriched in protein and fiber, from defatted rice bran flour (DRBF) and to determine its physicochemical and emulsifying properties. RESULTS To obtain the DRBC, the starch was efficiently hydrolyzed (&gt;&thinsp;98%) with &alpha;‐amylase and amyloglucosidase, with a concomitant increase in the proportions of crude protein (from 154.7 to 274.3 g&thinsp;kg&minus;1) and total dietary fiber (from 276.1 to 492.3 g&thinsp;kg&minus;1). Defatted rice bran concentrate exhibited a loss of protein solubility and increased surface hydrophobicity compared with DRBF. Defatted rice‐bran concentrate dispersions with and without previous ultrasound treatment were prepared. The sonication led to an increase in the apparent viscosity. Emulsions were prepared with dispersions with and without previous ultrasound treatment and showed high stability in quiescent conditions over 28&thinsp;days. However, the emulsions prepared with dispersions treated with ultrasound resulted in lower D4,3 values and higher elastic and viscous moduli. CONCLUSION The rice bran concentrate can be used to obtain stable oil‐in‐water (O/W) emulsions, including both soluble and insoluble fractions, in acidic and neutral conditions.     <dcterms:abstract><![CDATA[Carbon fibers and activated carbon fibers are materials of high industrial interest. When presented as a felt, its use becomes easier and more practical. This work aims to study the conditions for obtaining and characterizing an activated carbon felt, using sheep wool as a precursor. The wool felt was oxidized, carbonized in nitrogen atmosphere and activated in water vapor. The working temperatures were selected through thermogravimetric analysis. The products and intermediates were characterized through thermogravimetric analysis, infrared spectroscopy, scanning electron microscopy, Raman spectroscopy and nitrogen adsorption-desorption. The products were assessed as potential sorbents for methane-carbon dioxide separation by adsorption kinetics measurements at different pressures. Results revealed a high influence of the carbonization temperature on the physicochemical and textural properties of the products. The adsorption kinetics and capacities of the gases showed that selectivities in separation were related to both felt carbonization temperature and gas pressure. This work revealed that activated carbon wool felts are a good alternative to synthetic fibers felt and they can be used for methane/carbon dioxide separation.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[Sensory characteristics play a key role in determining consumers&rsquo; acceptance of functional foods. In thiscontext, the aim of the present work was to apply a combination of sensory and consumer methodologies tothe development of chocolate milk desserts enriched with resistant starch. Chocolate milk desserts containingmodified waxy maize starch were formulated with six different concentrations of two types of resistantstarch (which are part of insoluble dietary fiber). The desserts were evaluated by trained assessors usingQuantitative Descriptive Analysis. Moreover, consumers scored their overall liking and willingness to purchaseand answered an open-ended question. Resistant starch caused significant changes in the sensorycharacteristics of the desserts and a significant decrease in consumers&rsquo; overall liking and willingness topurchase. Consumer data was analyzed applying survival analysis on overall liking scores, considering therisk on consumers liking and willing to purchase the functional products less than their regular counterparts.The proposed methodologies proved to be useful to develop functional foods taking into account consumers&rsquo; perception, which could increase their success in the market.]]></dcterms:abstract>

    <dcterms:abstract><![CDATA[A conjoint study was carried out in order to study the influence of two functional ingredients (antioxidants and fiber), the name used to declare the addition of the ingredient (common vs scientific name), and the type of healthclaim (no claim, &lsquo;enhanced function&rsquo; and &lsquo;disease reduced risk&rsquo; claims) on consumers&rsquo; perceived healthiness and willingness to try functional milkdesserts. The use of compounds or scientific names might not be recommended as they could have a negative impact on consumers. If a functional food manufacturer wants to emphasize the use of a novel ingredient, the ingredient could be declared using its scientific name but incorporating a healthclaim on the label, in order to achieve a positive association in consumers&rsquo; mind between the ingredient and its health effect. Besides, consumers showed the same attitude towards &lsquo;enhanced function&rsquo; or &lsquo;reduced disease risk&rsquo; claims. Women and old people seemed to be the most positive groups toward the evaluated functional foods. Women gave more importance than men to the type of name used to declare the addition of the functional ingredient, which could be probably attributed to the fact that women are more familiar with the health effects of fiber and antioxidants than men. Besides, young people emphasized the disease preventing claims, while older people tended to be also interested in claims that focus short term effects on health.]]></dcterms:abstract>
