Kefir granules are a complex microbial consortia with numerous properties, among which their antifungal action has been reported. This study characterized the antifungal activity of water kefir granules and two microorganisms isolated from them, identified as Saccharomyces cerevisiae and Geotrichum candidum, against aflatoxigenic Aspergillus flavus. Experiments were carried out in vitro and under minisilo conditions designed to simulate the aerobic phase of commercial corn storage. In dual culture plate assays, A. flavus was inhibited in close contact with both antagonists, and mycelial weakening with lower conidia production was observed. Cell-free supernatants of both antagonists inhibited conidial germination by 92% (G. candidum) and 65% (S. cerevisiae). Non-contact assays between A. flavus and antagonists indicated that volatile organic compounds (VOCs) also contributed to inhibition, reducing mycelial growth by 29.1% (G. candidum) and 37.9% (S. cerevisiae). In corn minisilo trials water kefir granules and both antagonists showed strong antifungal activity by day 4, with qPCR of A. flavus DNA and aflatoxin measurements indicating near complete inhibition. As mixed consortia, water-kefir granules inherently include lactic acid bacteria whose rapid acidification and diffusible metabolites complement antifungal compounds produced by other components of the consortia, supporting a multi-mechanistic mode of action. Given the compositional heterogeneity of kefir granules, strain-level identification and verification of safety and regulatory status for the intended use are essential prior to food or feed applications. The demonstrated antifungal efficacy of kefirderived microorganisms in mini-silos underscores their scale-up potential for postharvest protection of corn. The influence of the cooking method on the elemental composition of popcorn, prepared according to the way it is consumed, was evaluated. Arsenic, calcium, cadmium, copper, iron, lead, magnesium, manganese, potassium, selenium, sodium and zinc levels were determined using atomic absorption spectrometry. Results showed that the losses after cooking varied considerably (2.9%–48.3%) depending on the element. A bioaccessibility study of cooked samples was also performed, using an in vitro approach. The most bioaccessible elements were sodium (77.4%–88.5%) and potassium (63.7%–81.8%), while considerably low values were observed for calcium (5.5%–13.7%) probably due to strong interactions with the matrix. The contribution to the Recommended Dietary Allowance was evaluated, finding an important coverage for selenium (36.7%– 50.0%). Positive Pearson correlation coefficients were found for the pairs Cu/Fe, Cu/Mn, Fe/Mn Cu/K, Fe/K, K/Mn which can be explained by natural physiological mechanisms of the plant. The cultivation of genetically modified (GM) Bt maize (Zea mays L.) events MON810 and Bt11 is permitted in Uruguay. Local regulations specify that 10% of the crop should be a non-GM cultivar as refuge area for biodiversity, and the distance from other non-GM maize crops should be more than 250 m in order to avoid crosspollination. However, the degree of cross-fertilization between maize crops in Uruguay is unknown. The level of adventitious presence of GM material in non-GM crops is a relevant issue for organic farming, in situ conservation of genetic resources and seed production. In the research reported here, the occurrence and frequency of cross-fertilization between commercial GM and non-GM maize crops in Uruguay was assessed. The methodology comprised field sampling and detection using DAS-ELISA and PCR. Five field-pair cases where GM maize crops were grown near non-GM maize crops were identified. These cases had the potential to cross-fertilize considering the distance between crops and the similarity of the sowing dates. Adventitious presence of GM material in the offspring of non-GM crops was found in three of the five cases. Adventitious presence of event MON810 or Bt11 in non-GM maize, which were distinguished using specific primers, matched the events in the putative sources of transgenic pollen. Percentages of transgenic seedlings in the offspring of the non-GM crops were estimated as 0.56%, 0.83% and 0.13% for three sampling sites with distances of respectively 40, 100 and 330 m from the GM crops. This is a first indication that adventitious presence of transgenes in non-GM maize crops will occur in Uruguay if isolation by distance and/or time is not provided. These findings contribute to the evaluation of the applicability of the “regulated coexistence policy” in Uruguay.
