Monitoring economic access to food is fundamental to implement strategies to reduce food insecurity and enhance the affordability of healthy diets. The aims of the present study were to develop a healthy food basket (HFB) and analyze its cost from 2011 to 2024, in Uruguay, a highincome Latin American country. The HFB was conceptualized as a set of foods that allows the achievement of the nutritional needs of a person at the lowest possible cost, considering the dietary patterns of the local population. Its construction was based on national and international dietary intake recommendations, local food acquisition patterns, and food prices. The daily cost of the HFB in May 2024 was USD 7.5, considering purchasing power parity (PPP) conversion factors. The cost of the basket was higher than the Cost and Affordability of a Healthy Diet elaborated by FAO for the country and the region and higher than the cost of the official food baskets of the country. The cost of the HFB increased 202.3% from January 2011 to May 2024, while inflation increased by 178.4%. Fruits and vegetables, meat, dairy products, and processed cereals made the largest contribution to the cost of the HFB. Results highlight the need to reassess the country’s poverty estimation criteria and implement strategies to improve the affordability of healthy foods, such as adjusting cash transfer amounts and introducing targeted subsidies. The proposed methodological approach can contribute to the standardization of approaches to measure and monitor the cost of healthy diets in other countries.

A summary of the resource.
Moringa stenopetala is considered a superfood due to the many bioactive compounds that it provides to the diet. However, like all edible plants, it is mandatory to guarantee food safety. Thus it is necessary to develop analytical methods that can rapidly and accurately determine hazardous pollutants, to evaluate compliance with food regulations. In this regard, two multi-component procedures were developed trying to cover some of the main organic and inorganic potential contaminants. A microwave-assisted digestion followed by electrothermal atomic absorption spectrometry was used for arsenic, cadmium, and lead determination, while a modification of the QuEChERS protocol followed by gas chromatographytandem mass spectrometry was employed for the determination of 55 pesticides from different families. Both analytical methods were thoroughly validated according to international guidelines. The analyzed samples obtained from the Uruguayan market showed compliance with both, national and international, food regulations. The holistic approach employed in this research is not commonly presented in the literature, thus constituting a novel way to face food safety.

Existe una creciente preocupación respecto al contenido de cadmio (Cd) en los productos derivados del cacao, como la cocoa en polvo; lo que ha llevado al establecimiento de valores de ingesta máxima tolerable de este metal y a la disminución de los niveles máximos (NM) aceptados. En este sentido, es necesario realizar un control sobre los niveles de Cd en estos alimentos, contando con métodos analíticos confiables y amigables con el medio ambiente. Con ese objetivo se desarrolló y validó un método analítico para la determinación de Cd en cocoas puras y en su preparación con leche, la forma de consumo más popular en nuestro país. El método resultó adecuado para el fin definido y presentó como ventaja un menor consumo de ácidos concentrados que el método de referencia de la AOAC International (2016b). Se aplicó para un sondeo del contenido de Cd en muestras disponibles en el mercado local de Montevideo, Uruguay. Si bien todas las muestras tuvieron concentraciones detectables de Cd, resultaron inferiores al NM establecido.

Food donation has expanded globally and has become a common form of food assistance in emerging countries. However, research on food donation experiences in these settings is still scarce. Purpose In this context, the objectives of the present work were as follows: (i) to explore the views of Uruguayan stakehold ers on food donation as a strategy to reduce food waste, (ii) to identify barriers and enablers for food donation in Uruguay, and (iii) to explore the organizational characteristics of Uruguayan food banks. Methods A qualitative approach based on two data collection strategies was used: documentary content analysis of ofcial governmental documents and in-depth semi-structured interviews with key stakeholders related to food waste and food donations in Uruguay. Results Food donation emerged as a central strategy for food waste reduction in the view of Uruguayan stakeholders, mainly because it was perceived as an efcient strategy to reduce food insecurity. The complexity of food donation was acknowledged by Uruguayan stakeholders and who identifed several barriers for its implementation related to economic considerations, the characteristics of the donated products, legal and commercial considerations, and organizational characteristics of food banks. Conclusion Although most barriers were aligned with results from previous studies conducted in developed countries, some specifcities to the Uruguayan context were also identifed. Clear and detailed legal frameworks to ensure that the donated products reach the target population along with nutritional requirements for the foods to be donated were deemed necessary.

<p>This study on raw ground beef patties evaluated: resistance of STEC strains inoculated at 6 log CFU/g (O157:H7, O26, O45, O103, O111, O121, and O145) subjected to 350, 450 and 600 MPa, for 5 min at 10 ◦C; effectiveness of pressure for initial loads (2, 3 and 4 log CFU/g) of O157:H7; and general impact of high hydrostatic pressure (HHP) on raw patties. For 600 MPa treatments and 6 log CFU/g load of STEC, ~5 log CFU/g reductions were obtained with all strains. For 450 MPa, differences in baroresistance among strains became evident. When inoculating O157:H7 at different loads, counts after 600 MPa fell below quantification limits, though virulence genes were detected for the two highest loads. Additionally, HHP reduced native aerobic microbiota to <1 log CFU/g and slightly affected a* and b* color values. Montecarlo simulation was used to estimate potential initial counts of STEC that allow compliance with existing regulatory limits after applying HHP, showing that absence of STEC studied can be achieved in 65 g of patties provided initial loads are ~2 log CFU/g. Finally, HHP<br />treatments at 600 MPa and mild temperatures can be considered a valid non-thermal processing technology to<br />achieve 5 log CFU/g reductions.</p>
